As anyone who has arrived in Bermuda knows, Customs officials are the least humorous people in existence. They seem to work on the principle that everyone’s a lying crook and rooting around in their suitcases in a surly manner will reveal the extent of their criminal activities. People do under-declare, of course. But there’s always room for humour, I say. I was therefore especially taken by a report this week of G.K. Chesterton, a newspaper columnist and ideas man of long ago, entering the US. One of the questions he was asked was whether he intended on his visit to overthrow the U.S. Government. Now that’s a silly question. Would a terrorist bent on terrorising admit it to Customs officials? I rather think not. Chesterton was not one to suffer fools gladly, so in answer to the question about whether he had travelled to overthrow the Government, he wrote: “Sole purpose of visit”. Droll, eh? It’s like answering “Yes, please” in the box marked “Sex”. It’s schoolboy-ish, but it’s humour, and in my book humour trumps all. Not so in the U.S. Government’s book. Chesterton was arrested. That reminded me of an occasion on which my Auntie Sheila attempted to introduce a spot of humour into a seemingly unending passage through Customs. Now 93, Sheila, my mother’s sister, has always been something of a wag. Arriving back in England from a trip to France, many years ago, she was asked to fill out the standard form. Under “Occupation”, she wrote: “Smuggler”. Again, it’s funny. Smugglers don’t admit to being smugglers. Customs didn’t get the joke. They locked Sheila in a little darkened room somewhere and left her there for 12 hours. No food, no bathroom, no nothing. Customs obviously hadn’t heard about the punishment fitting the crime. When they released her, an official asked if she would make jokes at Customs ever again. What an opportunity to poke fun at the pompous, self-inflated Revenue officers. Sheila took the more diplomatic route, said “No” and went home. Wise woman. Her response was an inadvertent theft from Groucho Marx. His replies on a customs inspection form included: “Born: Yes. Hair: Not much. Occupation: Smuggler. List items purchased out of the United States: Wouldn’t you like to know?” After Customs officials had inspected his trunk, Groucho turned to his wife. “What did you do with the opium?” he asked loudly. “Do you still have it on you?” Oscar Wilde also had a crack at some Customs humour. Asked on arrival in New York, in 1881 or 1882, if he had anything to declare, he may have replied: “I have nothing to declare but my genius”. Customs probably didn’t stick him in a darkened room for 12 hours, with him being famous and so forth, but he was later sentenced to two years’ hard labour for something else. The moral of the story is not to make fun of Customs officials if you want to get where you’re going any time soon.

Designing captivating handcrafted jewellery comes naturally to artist Alexandra Mosher, the creative force behind her namesake jewellery line. At a recent visit to Alexandra’s studio in the Washington Mall we discovered rough cut aquamarine necklaces glimmering softly under spotlights, a London blue topaz dangling effortlessly below an artfully sculpted silver floral spray, and a hand-wrought oxidised butterfly perched atop three strands of peacock pearls. In each of these pieces, the composition has been carefully considered to adorn the wearer and bring art into everyday life.
Further to explorations in metal, Alexandra enjoys developing concepts for her store’s window installations. She aims to give passers-by a movie-set style which echoes the tiny nuances of her pieces on a grander scale. “When you’re trying to convey a message to the public, you have to be both succinct and intriguing. Creating a ‘scene’ gives me the freedom to work in soft materials and influences my metalwork,” she says of her current Alice in Wonderland themed table display. Alexandra is perhaps best known for her pink Bermuda sand jewellery collections. Drawing further inspiration from Bermuda’s natural beauty, this holiday season she will be revealing two styles of ornaments inspired by the sea. Cast in Sterling silver offset with pink sand, the first style of ornament depicts the beauty of the Bermuda sand dollar. Giving this heartfelt gift to your friends and loved ones is perfect expression of Bermuda’s joie de vivre. The second style is a limited edition Sterling silver sea fan ornament with delicate lattice work and pink sand branches. With an impressive 4” span, this stunning piece will include a signed and numbered card. “There will only be 25 ever made!” she gleefully explains. “When I first discovered I could move metal into sculptural forms I was enthralled!” Years later, Alexandra has developed her talent for sculpting expressive organic pieces in wax which is then cast in metal. A focus on texture is evident in her Melt and Caviar collections. “I like to create pieces people don’t see everyday, pieces that start conversations,” she explains.

Each year we host a student art competition, which revolves around a theme that is central to an exhibition. This year, the theme is inspired by the exhibition entitled Eyes on the World, a series of local and global photo-stories on social issues such as food access, child brides, international adoption, to name a few. It is a heady exhibition that pulls at the heartstrings. In partnership with The Alexia Foundation, the exhibition encourages audiences to be aware of the social services that exist in parallel to the photostories and to participate by becoming active supporters of these services. Students this year have been asked to reflect on My Bermuda: My Community, and to provide a visual response in poster form to the question, When I think about Bermuda, what do I see? With student entries from primary 3 to senior school, the Annual Student Art Competition always proves to be an eclectic and honest presentation that gives insight to the perspectives and talents of our youth. At our satellite location in St. George’s, BNG East, we feature the work of five Bermudian artists working in sculpture: William Collieson, Peter Lapsley, Christina Hutchings, Antoine A. R. Hunt, and Michael Walsh. Set inside 17th century Bridge House, each artist’s contemporary expression is very much in dialogue with the historic architecture of the space and yet can be interpreted independently.

Local artist Antoine Hunt wears many hats and has cultivated many of his talents for the past 20 years. To many, Hunt is known as an avid photographer and videographer, but his skills also extend to sculpting and writing poetry to name a few. This multi-talented maven has based most of his works around photography which are evident in his cyanotypes, plant studies and Polaroid pieces. At the moment, Hunt has his documentarian hat on and is focusing on his first television project. During the fall of 2012, Hunt, along with his business partner Peter Backeberg were filming endlessly on a television series on wine making in Napa. The documentary follows the ins and outs, the trials and tribulations of successfully running a winery in California. This 6 part series, titled “Vintage”, will air on PBS in January of 2014. Apart from his television debut, Hunt has been working on a short motion picture film with his wife Juliz Ritchie, which was featured in the Guanajuato Film Festival in Mexico of 2012. He has also worked on an experimental time lapse film shot in Bermuda (screened in the Trinidad and Tobago film festival last month) called “Islet” and was filmed using only the moon as the source of light. This short film, explains Hunt, “explores the notion that spirits cannot cross water” and that spirits are confined to whatever body of land they have expired on.

Entitled A Sense of Place, BNG curator Sophie Cressall says of the exhibition: “Each work in this exhibition has been selected because it engages in the dialogue of place, belonging and identity, and offers new perspectives using a contemporary visual vocabulary. Some site-specific works are a direct response to the physical historic space of Bridge House, while others are focused on the more ephemeral notions of belonging, community and identity.”

Hunt prefers clinging to his roots when he proclaims, “My work applies to more than the ‘rock’, it applies to how we see things, historically and culturally. All of my work comes from a base of being Bermudian,” says Hunt, “whether it is environmental or social commentary.” Despite his progression in film, the artist has not abandoned his fine art photography passion for which he has collected awards such as “Best in Bermuda: Photographer of the year” twice in a row. Hunt continues to travel, experiment and create pieces using original development processes such as Vandyke printing and using pinhole aperture to “express his views of the world.” And with plans to expand on his latest project titled “Nature’s Children”, involving photography, sculpture and film, we can expect to see a lot more of his views of the world. www.antoinehunt.com

Letters from the salt islands, leaves that turn us into the Past, in this instance the Turks Islands of the early 1800’s, where one John Lightbourn was dispatched to conduct the family business in the salt trade and from whence he carried out a correspondence with his nephew in Bermuda, William Astwood. Shipwrecks, like the ‘Frenchman’, are world heritage and we have a responsibility to other nations to preserve the remains of their cultures that have inadvertently ended up in our watery backyard. They are also a poignant reminder of our fragile place in the universe as the second most isolated spot on the ocean seas. The shipwreck also reminds us that we are entirely dependent for our livelihood on the French and all other nations that continue to supply us with visitors and other businesses that keep our vessel afloat in an uncertain and turbulent international world, n’est-ce pas?
In the 1830s, the temperature in the lands that then comprised Mexico was heating up, not due to the addition of chili peppers to the kitchen pot, but militarily in the fight against a Texas that had declared itself independent of its southern master. The Mexicans at the time were also taking action against French commercial interests in their country, so the Marine Nationale had to be sent out to do some negotiations, by force in what would be called the ‘Pastry War’ because one of the offended French citizens ran a pastry shop in Mexico. One of the ships in that mission in 1838 was L’Herminie, a vessel that later came off second best in a battle with the Bermuda reefs, striking that immovable enemy on 3 December 1838. From this advertisement, it may be assumed that some Bermudians were up to tricks in helping themselves to objects and material from the wreck of L’Herminie.

Anthony Pettit L’Herminie was one of eight frigates of the La Surveillante class built to carry 30 French 30-pounder cannon and 30 other guns, including carronades. The vessel was launched at L’Orient in Brittany in 1824, so the ship was but 14 years old when it happened upon the island in a storm and struck the reefs and settled on the bottom, although it remained intact. Once the weather cleared, boats from the Royal Naval Dockyard and Somerset Island came to the rescue and brought ashore 495 officers and crewmembers. No sooner was the humanitarian issue dealt with than people began to salvage what they could from L’Herminie. As often happened, the Bermudians were not averse to helping themselves, in the absence of officials, to whatever they could ‘appropriate’ from the doomed warship. An advertisement demanded that such material be handed to the ship’s agent at Ely’s Harbour: it is unlikely, given local proclivities, that any goods were there received. Over time, L’Herminie broke up and her bones sank to the bottom until a French diver discovered them in1956. One of the most scenic cultural exhibits on the Bermuda reef, the remains of L’Herminie are spread over a wide area of the sea floor, with some two dozen cannon evident, in one or another pose of death by drowning. Objects that have been found on the wreck are similar to some that were advertised for sale in The Royal Gazette soon after the sinking, such as ‘copper hinges, blocks, hooks, thimbles, a wheel, mast hoops, iron belaying pins, iron rails, iron stanchions, mess tubs, lead, lead pipes, copper pumps, jack screws, crockery, and a marble slab’ and other portable items.

Bermuda Fine Art, Antique Maps, Books, Prints and Ephemera
A scarce and important map of Bermuda issued in 1868 by Alexander Findlay. This large chart (32.5 x 25 inches) was based on the model laid down by C. Lempriere and Robert Sayer in 1775. It details the island of Bermuda and its surrounding reefs. Laurie acquired Sayer’s stock in 1794 and subsequently began reissuing the map in various updated formats. The present fully re-engraved map is vastly more sophisticated than the original 1775 chart due to later surveys by Captains T. Hurd, E.Barnett, and J. Evans. The reefs in particular are detailed with extraordinary care. Two large inserts are included , one in the upper right focusing on the ‘Bar and Harbour of St. George’ and another in the lower right detailing the ‘Narrows and Murray Anchorage’. Findlay has also added a dramatic view in the lower right quadrant illustrating the area around St Georges. There are also considerable advances with regard to island topography, countless additional soundings, and navigational annotations. ‘In its day, this was the finest and most sophisticated nautical chart of Bermuda available and would have been invaluable to anyone involved in the transatlantic trade with England’. Do You Know ...About the ‘Match King’ and the establishment of Bermuda as an International Business Centre? By HORST AUGUSTinovic
Liquidating International Match took almost several years and resulted in capital appreciation of several hundred million dollars for the creditors of the company. So what is Ivar Kreuger’s legacy? As we know from Enron and Bernard Madoff, new chapters in the history of financial fraud are written almost every year, however, few have rivaled Ivar Kreuger who pioneered many of the complex financial instruments used by today’s financial scam artists.
Born in Sweden in 1880, Ivar Kreuger was known as ‘The Sneak’ in school. Classmates remembered his ingenious ways of cheating on tests, including stealing the exam questions from the headmaster’s office and selling them to other students. Although trained as a civil engineer, he joined the family match business in 1911. With match businesses struggling, Ivar Kreuger bought other match companies and, with the economies of scale, soon controlled all of Sweden’s match production.

Raising money through stocks and bonds, Ivar Kreuger expanded his match empire around the world, receiving national monopolies by bribing government officials and issuing loans to governments. While appearing as a ruthless tycoon, his company began drowning in debt and to distract attention from his balance sheet, he paid high dividends to investors. Like other scam artists, he needed to pay out more and more money in order to get money in and ended up not just raiding his own companies, but forging $150 million in Italian bonds which he added to his Ivar Kreuger on the cover of Time Magazine company’s assets.

Following the 1929 stock market crash which left Kreuger unable to roll over his debts into new loans, he continued paying dividends of up to 24%, with some on Wall Street calling him ‘the miracle of the investment world’. On March 12th 1932 it was all over, however, when Ivar Kreuger shot himself in his Paris apartment. For fear that his death would send stock markets into a death spiral, the Paris police kept the news of his death quiet for five hours until the New York Stock Exchange closed. Irving Trust was confident the debentures would increase in value and to avoid a major capital gains tax, they tried to find a way to eliminate any tax burden. The solution was to set up ‘The International Match Resolution Company Limited’ in 1936 through Conyers Dill & Pearman in Bermuda. Once established, the company bought the debentures for five cents on the dollar and, following a nine-fold increase in value, liquidated the assets a few years later, resulting in a $38 million tax-free profit.

Although Conyers Dill & Pearman had set up a smaller exempt company in 1935, Roger Crombie wrote in ‘Conyers Dill & Pearman – A History’: ‘International Match was aptly-named: it lit the fire of international business in Bermuda’. The incorporation caused quite a stir in New York, with the New York Times accusing Bermuda of tax-dodging. This in turn caused a serious disagreement between the Bank of Butterfield which declared that it would ‘spurn tax-dodging funds’ and the Bank of Bermuda which had loaned International Match $1 million, virtually all the bank’s capital.

Golf across the island Putting: Positive Attitude is Everything

Good putting is a key component to enjoying a great round of golf &/or success in a golf tournament. When a golfer sinks a putt, the elation can magically negate a bad shot previously played. It is an accepted rule of thumb, that good putters are usually confident people, who do not allow themselves or others to unduly influence them to be negative.

It is important for golfers to work arduously at developing positive attitudes - irrespective of disappointing results - the example of great putters portrays a person who is confident at all cost. I vividly recall advise from my celebrated Golf Coach Mike Griffin of Troy State University (also of Auburn University), when he stressed to me:“Putting is about attitude and you control that between your ears with a positive approach ....” Based on that advise I was encouraged to hang out with Billy ‘Bozo’ Meyers (#1 Putter on the team) and the two of us helped each other by sharing our knowledge of the game. That was great advice as Coach Griffin conveyed the theory of a good putting mindset and by practising with Billy - a great putter with a bubbly personality, inspite of his erratic ball striking - allowed me to better understand the mental approach of a golfer who couldn’t wait to get on the green and wave his magic putter and make the ball disappear in the hole. Instead of sad stories about poor putting performances being regurgitated - which only serves to reinforce your failures and increases the chance of repeating those mistakes - practising putting with Billy was fun as he exuded confidence. We traded knowledge and were both beneficiaries of the sound advice from our golf coach. In Bermuda, having a world class golf course in Port Royal Golf Course with its superb greens, provides a good test for the discerning golfer and an excellent opportunity for the novice golfer to learn on the most challenging golf course available to the public on island. The severe undulations are initially intimidating but with proper coaching the golfer can become competent at negotiating the smooth fast pace greens like those at Port Royal Golf Course. At the Port Royal Golf Developmental Program we also focus on putting, where maintaining a positive attitude is critical to enjoy success on the greens. We provide players of all skill levels with drills to make their practice more meaningful and work to improve their game. It is our duty to advise all golfers, to seek out a qualified PGA Golf Professional and have them share the techniques that will help you improve your golf game. Ultimately, it is up to you the golfer to practice, practice and practice some more on a regular basis. Jerky Turkey at The Bermuda Gas Showroom

By day, retail showroom. By night, showcase kitchen. Cool, I get it, now what’s this about Jerky Turkey? Last week’s Bermuda Gas Showroom open house welcomed over 70 foodies, event planners and curious onlookers where pertinent questions such as these were answered. So off we went to check it out. Firstly, loads of free parking space, big plus, my wife’s monster Chevy Spark was spoiled for choice. On entry the Bermuda Gas Showroom team greeted guests with directions to all the goodies, including complimentary Grace beverages from Pitt & Company, new wines from BGA, appliance raffles and bounce back discount cards. The main course, hosted by Marketing Manager Cynthia Wright featured demonstrations of “turkey two ways” by upcoming Chef Antonio Belvedere and seasoned Chef (sorry) Charles Henry. Taking full advantage of their impressive indoor kitchen with full audio visual capabilities and outdoor mancave fantasy level BBQ, complete with toasty fireplace, the two chefs demonstrated cooking techniques, provided once secret recipes
and most importantly handed out tasty samples of both traditional and jerk turkey dishes. Yum. With many of my questions answered, this reviewer had his creative juices flowing and is staying tuned for the next foodie showcase. A Love For Golf, A Good Education & The Rewards of Being A Restaurateur BY CANDICE DICKINSON WITH Chris Garland, OWNER & GM OF FLANAGAN’S IRISH PUB & RESTAURANT
Chris Garland is a familiar face and always offers a friendly smile when spotted at Bermuda’s favourite Irish Pub & Restaurant. For many locals he is also a good friend and an even better golf buddy. Chris grew up in Bermuda and during his younger years he spent much of his time at Port Royal Primary School and then Saltus Grammar School. He shared his views on education and stressed the importance of getting one no matter where you start out in life. Chris didn’t particularly like school but he did love golf and that dedication and determination awarded him a Golf scholarship at Columbus State University in Georgia, U.S. After graduating University, Chris returned to Bermuda with a business degree and minor in marketing. Not quite sure what to do with it, he took a job with Ernst & Young. After eighteen months Chris realized that Golf was still his true passion and he changed his career path taking an assistant golf pro position at Mid Ocean Club. Just four years later, Chris and a group of friends who he met while working a summer job would take over Flanagan’s and redesign the popular establishment into one of Bermuda’s best and most successful restaurants. What is most rewarding about being a successful restaurateur in Bermuda? One of the biggest rewards was successfully changing the perception of Flanagan’s from Bermuda’s #1 bar to one of the best restaurants on Front Street. Flanagan’s has always been a popular spot with locals and Bermudians alike but it was more of a drinking hole than anything. Today I can proudly say that it is a family restaurant with room for improvement and growth. I am also extremely proud of the Bermudians employed at Flanagan’s. We have been through many staff over the years but today Flanagan’s has a great team and it wouldn’t be the successful place that it is without our hardworking and dedicated staff. What advice can you offer Bermudians who would like to work in the food and beverage industry? Bermudians must want to be in the industry and must be prepared to put in the time needed to achieve success. Owners and managers of local establishments must be careful not to set their employees up for failure. At Flanagan’s we respect our own because we are Bermudian owned. We recognize that our locals have families to support and lives to live. If we schedule a local on split shifts or six, seven days a week they are likely to fail. This is a twelve-month out of the year job for them, not a six-month hit and run. At the end of the day the success of Flanagan’s is only measured by the support we get from our Patrons and the hard work and dedication of our staff. In the New Year we will be launching a new edition to the Flanagan’s family. Stay tuned...

The Chef’s Table Jonny Roberts, Bolero Brasserie By Candice Dickinson
Jonny Roberts always dreamed of his own restaurant. He didn’t quite know what kind of restaurant he would open but imagined quality food and good service. Over the years a number of opportunities presented but nothing quite panned out until 95 Reid Street opened its doors in 2007. Getting the restaurant ready for opening was one of the biggest challenges Jonny had ever encountered. His wife Fiona had just one year prior opened the Kaleidoscope Arts Foundation (KAF) and had headaches of her own but they always supported each others endeavors so while Jonny painted the entire restaurant Fiona and her sister reupholstered all of the furniture. They had very little money but worked on everything themselves and their hours of dedication proved rewarding. Bolero was a hit from day one.
Jonny learned quickly that it was really important to surround himself with positive people, which was not the case most of the time for the first few years. He really struggled with many aspects of the business. Six years later he is proud to say that he has the hardest working and most trustworthy dedicated team he could have ever imagined. His team is passionate about what they do and they always go that extra mile. Everyone works on the menu together at Bolero and that’s what makes it so successful. Basically it’s a pigs foot, all the trimmings are removed, pressed into a block and cooked. The final dish is juicy and succulent, crispy on the outside. Another must try at Bolero is the Quebec Sugar Pie. It is a recipe from one of Bolero’s other chefs also named Jonny who is from Quebec. His grandmother passed it onto him and mums the word on this one as it is a secret! You will have to stop by and try it for yourself. new recipes, they all live and breath the same thing, food. The menu at Bolero changes every few months. Jonny feels that it keeps the clientele interested and excited while the chefs stay creative. Using the daily specials menu as a tool to try out new dishes while gathering feedback from clientele is fun and exciting. Lately Bolero has been serving cuts of meat that you wouldn’t normally see on a menu and they add value by using special ingredients to really compliment. Lamb tongues, pig trotters and pork cheek are just a few of the new items popping up on the daily specials menu. When the staff first tried the lamb tongues they were pleasantly surprised and their general reaction was explaining how the meat literally melted in their mouths. If you like pork you will love the pig trotters.

Internationally acclaimed architect Jason Jones designed this Hamilton hot spot with sensibility and taste in mind, featuring high ceilings, wood finishing, gorgeous fabrics and plenty of white space. Jones brought in classic and elegant French doors from Belgium and 60-year-old vintage fans from New Orleans. The fans are original Burton Burton Casablanca Fans and still run off one motor and one belt. RED staff explained that sometimes at the end of the night the old fans need a swift tap from a broom to turn off and another tap in the morning to start up again. The historic bar was shipped in one piece from the U.S. and rumor has it that American Gangster Al Capone once owned it. Apparently there is still a bullet hole in the old wood but it is yet to be found. RED draws an eclectic crowd including suits, socialites and small groups who lounge and chatter amongst themselves nestled inside on oversized comfy chairs or on the patio enjoying harbour views. Locals escape from the same old, enjoying menus that change regularly and visitors are excited to discover a proper steak house offering five cuts of Certified Angus Beef (CAB). Gosling’s carefully selected wines by Stefan Gitschner will surely please vino lovers and a special custom built wine fridge keeps a selection of high end bottles sealed with argon gas allowing for 1 oz, 3 oz and 5 oz tastings. RED celebrated their one-year anniversary this past November. Stop by and say hello. With the holiday season upon us there is much to celebrate. On Friday nights the fun doesn’t stop. After dinner RED becomes one of the most happening places to be on Front Street featuring a DJ until the wee hours. Eat & Drink Li Brothers Take Grotto Bay By Storm

Sealed in airtight plastic bags in a water bath for longer than normal cooking times, days in some cases, the meats and seafood are cooked evenly, keeping the food juicy and consistent. They explained that this is the healthiest way to cook meats and seafood.

Chefs Didier and Dominique Li have taken Grotto Bay Beach Resort by storm. Originally from the island Mauritius in the Indian Ocean, The Li brothers share years of experience, talent and creativity with their team of 15 Chefs at Grotto Bay Beach Resort. Didier and Dominique have spent hours in the kitchen with award winning international chefs at resorts such as the luxurious Constance Resorts & Hotels, in Mauritius and the Hotel Le Lemuria Resort of Praslin in Seychelles, both located in the Indian Ocean. Locally Didier worked at The Reefs where he prepared everything from outstanding brunches and buffets for hundreds, to creative dishes meant to impress just one special guest. Dominique worked at a five star Hotel in the island of Mauritius, wining several international culinary awards including the famous August Escoffier disciple. He went on to further his career by working under 3 stars Michelin chef Guy Martin and Master Pastry Chef Thierry Thuries. Swizzle has been around since the 18th Century. In the early days the popular cocktail was basically watered down rum, served one part rum and six parts water. With time, swizzle sticks were introduced serving as a primitive blender. At about six inches long with several little spikes at the bottom these handy accessories came from a tree called Quararibea Turbinate also referred to as The Swizzlestick Tree. Some things never change. Many sources claim that the world’s first cocktail party was held in London England, circa 1924 and that Swizzle was the drink of choice. Other sources say that the first cocktail party actually occurred at the home of Mrs. Julius S. Walshe Jr. of St. Loius, Missouri in May 1917. The first cocktail recorded at this time was also rum base but included ice and fruit juice. Swizzle Inn, Swagger Out! In 1932 Bermuda’s famous pub The Swizzle Inn opened and served the first Rum Swizzle in Bermuda’s history. Since that date hundreds of thousands of business cards and graffiti have been pasted all over the walls, making the old pub a hub of history leaving memories of visitors from around the world. Today, Swizzle Inn has two locations with their newest addition on South Shore Road.

So what’s in a Rum Swizzle? The famous drink is usually created with Gosling’s Black Seal Rum, Gosling’s Gold Rum, orange juice, pineapple juice, Angostura bitters and Bermuda falernum, a mix of almond, lime, ginger and clove. The cocktail is mixed with crushed ice, shaken vigorously until a frothing head appears and strained into a cocktail glass then garnished with a slice of orange or a cherry. Many bartenders use Grenadine to give the popular drink a rich orange colour and sweeter taste and some also use Apricot Brandy or Cointreau. Taste testers might find that different bartenders across the island and around the world for that matter make their own versions but most stick to the basic guidelines of “lots a rum and juice to taste”. Some make swizzle well in advance of events and gathers, letting the flavours get to know each other! Barrels & Barrels of Gosling’s Rum In the beginning, Swizzle Inn would make their swizzle with bottles of Gosling’s Black Seal Rum and Gosling’s Barbados Rum. Today the popular drink features Gosling’s Gold rather than the Barbados Rum and shipments of rum arrive in barrels from Gosling’s rather than bottles. That’s a lot of rum! Gosling’s also makes gallons of rum for use in rum cakes and cruising rum for the tour boats who make rum swizzle. Conveniently all that is required to complete the tasty cocktail using these mixes, orange juice, pineapple juice, grenadine and bitters! The Queen of Bermuda Famous for making rum swizzle in a washing machine, the late Sheila Gosling born in 1916 to the West family married into the Gosling family in the 40’s. Always an entertainer and centre of the party Sheila was the type of lady that would do the splits in the middle of the dance floor and would often be the last one standing when the sun came up. #1 in Bermuda for tennis and golf, Sheila was also a mother of 3 and devoted grandmother. In the 60’s Sheila was hosting a party after a big tennis competition at her house on Radner Road in Shelly Bay. She was expecting about 300 people and didn’t have anything to serve her Rum Swizzle in. Fortunately she had just purchased a brand new Hoover washing machine and it was delivered that afternoon so

she decided to use it for the swizzle. It was such a hit that she later purchased a separate washing machine to make her swizzle for all of her future parties. Holding about 16 gallons, the Hoover washing machine became a popular party accessory. Sheila attracted guests from all over the world including the famous Orpheus group who traveled to Bermuda and played at her parties. She once took the washing machine on a cruise and mixed swizzle while crossing the Atlantic. Sheila grew up in a segregated time but every walk of life was welcome at her house Westholme in Shelly Bay, from Dolly Pitcher, Sir John Swan, Dame Lois Brown Evans and many others from across the island. When Sheila turned 80, she held another popular party but this time she rented 300 tea cups and everyone pranced about drinking swizzle from their tea cup. In 2011 when Sheila was 94 she passed on, her family and friends enjoyed the most amazing celebration of her life. Today The tradition continues W e s t o n Hatfield, grandson of Sheila, is often spotted at big events across the island, serving up rum swizzle made in his Grandmothers washing machine. From the PGA Grand Slam of Golf to weddings, the washing machine is always a big hit. Once upon a time there was actually a pump that poured the swizzle directly into ones mouth. Just this past summer Weston brought the old washing machine to a wedding and set up jugs of swizzle on all of the dinner tables. Guests were quite pleased with themselves as Weston kept the big jugs replenshied through out the night. The legacy lives on and if you haven’t had the pleasure maybe one day you will taste swizzle mixed in the old washing machine and have a chance to say cheers to Sheila.

ITALIAN BRUSCHETTA Ingredients 8 plum tomatoes, diced ½-in. 1/3 cup chopped fresh basil 2 garlic cloves, minced 1 tbsp balsamic vinegar 1 tsp extra-virgin olive oil ¼ tsp kosher salt ¼ tsp freshly ground black pepper 1 loaf focaccia bread Directions 1. In a bowl, toss the tomatoes, basil, and garlic together. 2. Mix in the balsamic vinegar, olive oil, kosher salt, and pepper. 3. Cut the focaccia into ½-in. slices. If possible, grill the slices, or crisp them in the oven. 4. Top the focaccia with plenty of the delicious tomato mix, and pair with a nice glass of Chianti amongst good friends. Serves 4 ITALIAN ANTIPASTO Ingredients 16 thin slices prosciutto di Parma 1 cup marinated olives 2 roasted red peppers 2 egg-size fresh mozzarella, cut ¼-in. thick 8 oz aged Parmigiano Reggiano cheese or Padano cheese Extra-virgin olive oil Modena balsamic vinegar 1 tbsp basil oil (optional) Freshly ground black pepper Directions 1. Arrange the prosciutto artistically on a nice assiette dinner plate with olives, roasted red peppers, 3 slices of mozzarella, and the Parmigiano Reggiano or Padano broken into ½-in. cubes and placed around the edges. 2. Drizzle with olive oil and a splash of balsamic vinegar, and if desired drizzle a little basil oil as well. Season with freshly ground black pepper. Serves 4

LIVIO’S FAMOUS TAPENADE Ingredients 1 large tin No.10 Ambrosia black olives 8 anchovy fillets 3 tbsp capers 4 garlic cloves 550 grams soybean oil Directions In a blender, combine all the ingredients.When storing, ensure that the entire olive paste is covered with oil. The tapenade can be used as a spread on slices of bread, croutons, with pasta, and even in sauces. Serves 4
For the zabaglione 1/3 cup sugar 1 tsp lemon zest, plus more 2 cups ice ¼ gallon of water 4 egg yolks ¾ cup sparkling wine, such as Prosecco ½ cup Marsala wine ¼ cup Bristol Cream Directions 1. If strawberries are being used, remove the stems and cut in half, lengthwise, and if large, cut into quarters. 2. Place all the berries into a bowl and toss with a little lemon juice and 3 tbsp of sugar. 3. Cover and refrigerate until chilled, for approximately 30 minutes.
ASSORTED FRESH BERRIES with WITH HOMEMADE ZABAGLIONE Ingredients 6 cups assorted ripe fresh berries (any combination of strawberries, raspberries, blackberries, and blueberries) 1 lemon, juiced 3 tbsp sugar Cocoa powder, for dusting (optional) Fresh mint leaves, for garnish (optional) Biscotti (optional—see page 252 for recipe)
For the zabaglione 1. Hold the lemon over a saucer and finely grate the zest, yielding approximately 1 tsp, and set aside. 2. In a large bowl, add the ice cubes into the water. 3. In a heatproof bowl, combine the egg yolks and 1/3 cup of sugar. Beat the egg yolks with a whisk until light in color and creamy, approximately 2 to 3 minutes. 4. Add the sparkling wine, Marsala, Bristol Cream, and lemon zest, and whisk until well blended. 5. Hold the bowl over a saucepan of simmering water to lightly warm it, whisking continuously, scraping the bottom and sides of the bowl until the mixture has tripled in volume. It should be thick and creamy, and be able to stand in soft folds. This process will take 10 to 15 minutes, but be careful that the mixture does not get too hot, or it will curdle. 6. Spoon the berries into bowls and top generously with the zabaglione. 7. If desired, dust the top with a little cocoa powder, garnish with mint leaves, and serve with biscotti which is wonderful dipped in zabaglione. Serves 4
