LETTER FROM THE MAYOR OF HAMILTON THE WOR. MR. CHARLES GOSLING Welcome to the City of Hamilton It is my honor, as the Mayor, to welcome you to the City of Hamilton, one of the smallest cities in the world, rich in history, culture and heritage. The original Town of Hamilton was incorporated by an Act of the Bermuda Legislature in 1793. Located in a sheltered harbour in the central and largest parish, Pembroke, it was named in honour of the then Governor, Captain Henry Hamilton. The town quickly became the capital of Bermuda when the seat of Government was transferred from St. George’s in 1815. Following the completion of the Cathedral of the Most Holy Trinity, situated some 400 yards east of the present City Hall, the status of City was conferred upon the Town of Hamilton in 1897 to commemorate the Diamond Jubilee of Her Majesty Queen Victoria. The City of Hamilton has a resident population of about 1,100 and an estimated daytime population of approximately 13,340 (40% of Bermuda’s working population). This number increases significantly when tourists are added to the equation. In addition to the excellent cuisine that can be found in the city’s many varied restaurants, the shopping is easy and the historic sites are a must see. I can attest to the fact that Hamilton is a delightful capital to get around on foot. Measuring about a quarter square mile, the entire area can be walked in about 30 minutes however, exploring, discovering and enjoying the sites, both historic and new, can take hours, maybe even days. Anyone wishing to explore the City in depth can participate in the Walkway of History tour that was created as part of Bermuda’s 400th Anniversary, in 2009. Plaques have been installed in the sidewalk at various points along the route to identify important sites of architectural, social, cultural or historical significance in the City. This self-guided tour starts and ends on Church Street in front of the City Hall, and enables the pedestrian to learn about the history of the city and may be taken as a whole or in parts. Some of the sights to discover include:

City Hall

Opened in 1960, the building is of traditional Bermuda architecture with a Scandinavian influence in respect of the tower. In 2010 we celebrated the building’s 50th anniversary by reproducing a number of activities that took place at the opening, including inviting some of the workers who helped with the construction. City Hall’s amenities include a theatre, two galleries housing the Bermuda National Gallery and the Bermuda Society of Arts, the Mayor’s Parlour, and the administrative offices of the City of Hamilton.

Victoria Park Bandstand

Painstakingly dismantled, refurbished and reassembled in 2009, the Victorian Bandstand was originally shipped to Bermuda in 1888 to commemorate Queen Victoria’s Golden Jubilee in June 1887.

Wesley Square

A purpose built recreational area officially opened in July 2009 to commemorate the men and women who in 1959, with bravery, tenacity and a vision for a better Bermuda, staged a peaceful theatre boycott and protested for equality, freedom and the end to segregation.

City Parks

There are four large public parks within the City of Hamilton that are open to the general public between 8am to sunset every day. They are: Fort Hamilton, Barr’s Bay Park, Par-la-Ville Park and my favorite, Victoria Park. Again, welcome to Hamilton, Bermuda at it best. For more information visit www.cityofhamilton.bm.

BERMUDA haha BERMUDA ha By haRoger Crombie Love is in the air This being February, love is in the air, like radio waves. Finding love is easy enough; I’ve done it a hundred times. Only once was it the full-on, have-anew-and-manic-personality tidal wave that totally ruins your life. I lost about 40 pounds while the thing was happening, and then lost the will to live when she moved on. Some fun, eh? Love is all around. It finds you, but if you look for it, it is nowhere to be found. Look we must, though. Without love, where would we be right now? Survival is the most basic of human desires, yet when love comes along, we imperil our survival without a second thought. If a loved one asks us to jump under a truck, we do so gleefully. When friends point out how stupid that is, we find new friends. Love is chemically indistinguishable from madness. If you’ve been in love, hopelessly lost in love, you didn’t need me to tell you that. Shakespeare was right: it is better to have loved and lost than never to have loved at all, but it can take years before you really understand how that works. Groucho Marx knew. Love wounds all heels, he said. He also reported: “I’ve been in love, and I’ve been in business. I was in love once, and she gave me the business.” I’m drifting because, in trying to write this, I have concluded that I know nothing of love. It sounded like the easiest assignment in journalistic history, but it’s been the hardest. Sometimes, when I’ve told people that I love them, they have left town without a forwarding address. At other times, when I have been told the same thing, I stuck around until the cops arrived and tasered me. What’s wrong with this picture? I might as well face it: I have no idea how or where to find love. I’ve looked everywhere, man. I see others in love, but I ain’t one of them. Oh, wait. I sort of am. There’s this woman. Let’s just say that the next time we meet, it is entirely possible that we’ll run off to Bali and live in a hut for the rest of our lives. It’s equally possible, of course, that she’ll puncture me repeatedly with a sharp instrument. You just can’t tell with love. Love is always surprising. This particular apple of my eye is not exactly a Granny Smith, but she is a woman of a certain age. I’ve known her for some years, but the moment was never right. Unfortunately, I seem capable of operating the chase — usually the best part, for me — only in the same way I always have. Age has lent nothing to my style or approach. Why must I be a teenager in love? Love is all, but in tennis, love means nothing. Being in love is everything — and nothing, usually in that order. I’m beginning to understand why I’ve been single all my life. Who needs the aggravation? Happy Valentine’s Day.

Out & Bad Ebony G. PATTERSon | ARTIST Out & BAd

January 20 – May Jamaican born Ebony G. Patterson is currently exhibiting at the Bermuda National Gallery. He show is an absolute must see. The exhibition is titled “Out & Bad”, and reflects young black men and the strong influences of the Jamaican Dancehall Culture. The images shown in this article were taken during her installation. You can see the visually appealing use of a number of things that bring her characters to life each to tell a story as you pass them by. Ebony graduated from the Edna Manley College of the Visual and Performing Arts in 2004 receiving an Honors Diploma in Painting. From the Sam Fox College of Art and Design at Washington University in St. Louis during 2006 Ebony graduated with a Masters in Fine Arts in Printmaking and Drawing. WhEn dId IT All bEGIn, WhAT InSPIREd you And Who SuPPoRTEd you AlonG ThE WAy? I drew a cockroach when I was 3 and it was inevitable that I would end up in a creative field. Both of my parents were very supportive of my creative interests. They were business people but my father took the time to teach me how to draw birds and my mother would teach me to draw people. My mother was the first of 9 children growing up and worked after school to help the family. She helped pay for her brothers and sisters to go to school. She was always creative and wanted to do art theatre but there were other obligations. Today she participates in plays through church and school. Someone once told my mom… “Support your child in what ever she is interested in. That is what she will excel in.” No matter what, I always stayed true to what I was really interested in. I did ballet for 10 years and thought I wanted to be an artist and part time singer and at one point I decided I was going to become an actress or part time schoolteacher. Not many people in my life knew about my artistic capabilities but they knew about my talent in performance. Everything I won performing, I used towards art materials.

My mother was a little concerned about the unsustainable nature of being an artist. She would tell me to study law just in case. Then she read a story about lawyers not being able to find jobs after school and her friend told her if I became an artist it might be easier for me to make a name for myself without having to depend on working underneath someone or an organization. In 3rd year at Edna I went though a weird period. I was trying to figure out what to create and final was approaching. At the time I was exploring the female body. Patron Saint of the “Narrows”

For reasons now obscure, Bermuda’s first town and a nearby island were named for two saints, George and David, although the town (est. 1612) for a short while was apparently called “New London”. While the early town bristled with fortifications, St. David’s Island was a backwater until it awoke in the early 1900s with the construction of the largest gun emplacements ever made at Bermuda, being at Great Head, fronting the “Narrows” channel. A far larger incursion took place in 1941, when a portion of St. David’s was reduced to rubble for the construction of an airfield for the American Army. While of social and financial damage to St. David’s Islanders, “Kindley Field”, named for Capt. Field Kindley, a US air-ace in World War One, ushered a generation of unprecedented prosperity for the rest of Bermuda with the advent of airplane tourism. St. David’s Battery was built in the first decade of the twentieth century and by 1907, “the works at St. David’s are now ready for their armament; the pedestals are ready in their places, and the works can be handed over at once.” It was an entirely new “fort”, incorporating the latest gunnery. At the same time Forts Cunningham and Victoria, Alexandra and Whale Bay Batteries and the Keep at Dockyard were upgraded with the same technology of steel,

Bermuda Military Artillery manning the 6-inch guns in the 1930s. wire-wound, breech-loading rifles. St. David’s Battery was the largest of the new emplacements and unique in the British Empire, as it comprised two pairs of such guns at one site. To the north were two 6-inch BL guns; while to the south were two 9.2-inch weapons, which were the biggest in Bermuda, along with one at Fort Victoria. The 6-inch weapons were the only operational guns at Bermuda at the start of the Second World War on 3 September 1939. The purpose of St. David’s Battery was to be the patron saint of the Narrows, the only channel through which ships could enter the harbours at Murray’s Anchorage, Grassy Bay at Dockyard, the Great Sound and Hamilton. Its guns were emplaced to stop enemy vessels from gaining access to the Narrows and that remained its function for half a century until the end of coastal defence in 1956. The guardian angels at the Battery were the men of the Bermuda Militia Artillery, who manned the site as an auxiliary of the Royal Artillery, the “Gunners” of the British Army, as opposed to infantry soldiers, represented at St. David’s Camp by the Bermuda Volunteer Rifle Corps and later the Bermuda Militia Infantry. A corps of black Bermudians with white officers, the Bermuda Militia Artillery of the Royal Garrison Artillery served with distinction on the Somme in World War One, where a number lost their lives. All local forces were amalgamated into the Bermuda Regiment in 1963. St. David’s Battery is now part of Bermuda’s National Parks system and in the last few years, the Parks Department has been actively guarding that World Heritage monument. Invasive trees and encroaching vegetation have been removed and the guns have been cleaned and painted. In these heritage days, it is we who must guard this military site, a reversal of its original intention.

…Bermuda issues first Commemorative Stamps – 18 of them! On August 1st, 1620, the Legislative Assembly of Bermuda met for the first time. With the exception of the British Parliament, Bermuda’s Legislative Assembly is the oldest representative institution within the British Commonwealth. To celebrate the 300th Anniversary, it was proposed to issue a set of Commemorative postage stamps – a first in Bermuda’s history and also one of the first such Commemorative issues by a British colony. In early March 1920, the following notice was published in local newspapers: “The local Government has under consideration the issue of special postage stamps in two values, one penny and two pence halfpenny, to commemorate the Tercentenary of the Establishment of Parliamentary Institutions in Bermuda, which is to be celebrated in August next. “Suggestions are invited for the appropriate design for the proposed stamps. Suggestions may be either accompanied by a rough sketch or design or may indicate in general terms the form which it is proposed the design should take. What is required is not a design but a suggestion which can be worked up into a design. “As time for the preparation of the stamps is short, it is particularly requested that any suggestions forwarded may reach the Colonial Secretary on or before Saturday the 13th instant.”

With the approval of the Executive Council, the Governor, General Sir James Willcocks, forwarded his own suggestion for a design to the Crown Agents, with the request that the printers proceed with the printing of the stamps. An essay was submitted by De La Rue & Co. on May 18th. Unaware that the Governor had already taken this action, the Legislative Assembly informed the Governor on June 9th that they had decided to commemorate the Tercentenary by an issue of nine stamps from 1/4d to 1/-. With this turn of events, Governor Willcocks informed the Assembly of what had already been done and submitted the De La Rue essay. The Assembly was not happy with the design and felt that it should include emblems appropriate to the Tercentenary – the Sword of State, the Speaker’s Gavel, the Coat of Arms and the ‘Sea Venture’ – and hired local architect H.J. Dale to prepare a new design. It would have been simple to proceed with the new design, however, as time was running short and the new design would not have been ready until the following year, the Assembly now decided that two series should be printed – one of each design in nine denominations each. Thus Bermuda’s first Commemorative Stamp issue ended up being 18 stamps! In total 3,531,240 stamps were printed, with both sets remaining on sale until the end of 1924. Remainders were destroyed in 1925 – in some cases more than two-thirds of the entire printing of certain values. The apparent lack of interest in this first Commemorative Stamp issue of Bermuda, and the fact that all remainders were destroyed, makes these stamps very collectable today.

Slow Motion – The Answer to Developing Your Swing? Ben Hogan once stated, “Whenever I am working on something I always do it in slow motion.” Hogan mentioned that one of his practice methods included swinging a club in front of a mirror without a ball to properly shape his swing. It wasn’t until recently that a video of Hogan swinging in slow motion was presented on You Tube raising the thought process on this unique training method. Interestingly enough, persons in the martial arts have used this form of training for centuries. I have also discovered that many musicians have used the slow motion technique as well. It seems that in order to develop proper sequential motions, slow motion training may be the best way to embed those motions in our golf swing. Depending on whether you have had a golf lesson or not, one can’t argue the point that the golf swing at speed is often times confusing, difficult and uncomfortable. One wonders how your mind believes it is doing one thing while your hands, arms or legs are doing another and the result is disastrous. Providing amateur golfers with hundreds of lessons over my 23 plus years as a PGA member, I can think of only a handful of cases where I suggested a golfer perform a motion and they actually demonstrated the motion at full speed. So many times I would take the students hands or club and through movement and positioning explain what I wanted them to feel and what I wanted them to perform in the golf swing. I believe that if I had asked them to perform the move in slow motion, both of us would have moved closer to the outcome we were looking for. If you are interested in using this method to improve your golf swing, here is what you need to do. Take a short club, 8 iron or less to begin. Stand in front of a mirror and set up as if you were hitting a shot. Slowly move through your positions so that you can recognize your weight shift, turn, impact position and follow through. You will notice at first, some elements will seem out of sync and honestly they probably are. You should watch your hands on the backswing to check positioning and through the impact position so you have an understanding of where your hands, arms and club are in respect to the swing. LPGA star Ai Miyazato uses this practice method and has posted her You Tube video swinging on the practice range. You can watch and see how slow you must swing to have an impact on your actual swing. Hogan felt that one swing in slow motion was equal to 10 full swings in practice. If you spend 30 minutes practicing slow motion swings, those swings would be equal to five hours of practice under normal circumstances. I have found that by practicing in slow motion, most of my students have developed a better tempo on their “at speed” swings and much better ball striking attributes. The winter months are the perfect time to practice this method. Here’s an idea. Ask your PGA Professional to video your swing before you begin working on the slow motion drills. After a few weeks, go back and have them compare the two swings. I feel confident that your swing will improve and so will your scores.

Getting Engaged How Exciting and now the fun begins! Once upon a time, no one is sure exactly when, a ring became a token of marriage. Who thought of it first or where the custom originated may never fully be known. The tradition was under way in ancient Rome, where many brides wore a simple band of iron. People believed the circle of the ring symbolized eternal love. The concept of two rings – an engagement ring and a wedding band – came into vogue in the eighteenth century in England and has never gone out of style. You have done your homework, you know the four C’s and purchased your ring. Now you have to think about how you are going to propose…. There are many ways to do this – you can go out to dinner and give the ring to the waiter and then order champagne and have him drop the ring into the glass of champagne and as she drinks it she will finally see the ring and that’s when he finally drops to his knees and proposes – takes a lot of guts for a guy in a restaurant – but heck if he is willing to do that – say YES! That probably means he would do anything for you. Yeah well that is soooo traditional or you can think out of the box and put a little different twist on it. He can take you to where you first met, take you to the beach and write it in the sand or whatever or you can have fun too, read this story... How about he tells you that you are going to dinner, and he'll meet you at home after work so the two of you can get ready together to go out. You arrive home and he is nowhere to be found but what you do find is a table set up with pictures of the two of you, champagne and a rose and a box. Inside of the box is a note that says ‘Will…..you go to your mother’s house’, once you get to your mothers, you see another rose and over a glass of wine she tells you how he has been to see them and she presents you with another box that he has left for you - you open it and another message is inside of the box and says ‘You….go to your grandmother’s house! You then proceed to your grandmother’s house and are greeted by all of the special people in your life, to you who have also been left with roses, and over another glass of wine your grandmother presents you with a box and once again there is another message that says, ‘Marry… meet me at Harbour Front Restaurant at 8:00pm don’t be late’. You arrive there looking your best and are greeted at the door by him and led to your table. You are seated and after a glass of champagne and chatting about the nights exciting events, he starts to tell you about how amazing you are and how he wants you to be a part of his life forever. He pulls the final box out of his pocket and gets down on one knee and in front of everyone in the restaurant he asks you to marry him. Inside of the box is the last piece of the puzzle, the final note that says ‘Me!!!’ and a beautiful engagement ring! The restaurant erupts into applause and cheers! – now how romantic is that! That was a true story! So you see you can have a lot of fun getting engaged, just use your imagination…that is the only limit!

Dockyard and Western Parishes Dockyard Visitor Information Center Royal Naval Dockyard At The Dockyard Visitor Information Center (VIC) you will find everything you need to have a “Bermudaful” day. Telephone 441 238-4842 THE ROYAL NAVAL DOCKYARD Ireland Island, Sandys Work began on this massive complex in 1809, not long after the conclusion of the Napoleonic Wars and just before the War of 1812. Envisioned as a strategic British military outpost that would make Bermuda the “Gibraltar of the West,” the Royal Naval Dockyard was built by slave and convict labour. The Dockyard locked its gates in 1951. Since then, the seventy-five acre site has been painstakingly renovated to accommodate museums, a movie theatre, restaurants, The Arts Centre and the Bermuda Craft Market. NATIONAL MUSEUM OF BERMUDA Ireland Island, Sandys Located in the Keep of the Royal Naval Dockyard, this museum has become one of the island’s most frequently visited destinations since being opened by HM Queen Elizabeth II in 1975. Its popularity has increased even more with the recent restoration and opening of Commissioner’s House. Elsewhere on the complex, exhibits chronicle both Bermuda’s association with the Royal Navy and its own interesting maritime history. In addition to a collection of Bermuda-made boats, there are relics from the Sea Venture, maps, the famous Tucker Treasure—collected from the sixteenth-century Spanish galleon the San Pedro—and many more artifacts. COMMISSIONER’S HOUSE National Museum of Bermuda, Royal Naval Dockyard Located within the confines of the National Museum of Bermuda, Commissioner’s House dominates this complex and entire surroundings from its elevated position. Largely constructed between 1823 and 1828, this commanding Georgian ‘house’ epitomizes British imperial style, power and engineering wherewithal during the nineteenth century. An experimental building in several regards, Commissioner’s House may have been the first domestic project anywhere to use cast iron to support its floors and roof. Nineteenth century Hamilton Postmaster and Assemblyman William B. Perot erected the building on the edge of his property, Par-la-Ville, in 1842 and ran it as a post office for 20 years. In 1848 he created his famous ‘Postmaster Stamps’ of which only a handful have survived. FORT HAMILTON Happy Valley Road in Pembroke on the outskirts of Hamilton A sentinel that has been protectively overseeing Hamilton Harbour since 1889, Fort Hamilton with its moat gardens, green lawns, musty dungeons and never-tried artillery is worth a visit. With spectacular views of Hamiton Harbour and the Great Sound beyond it, it is a great place to pause and have a picnic. Open daily 9am-5pm. Admission is free. GOVERNMENT HOUSE Langton Hill, Pembroke This imposing structure is the official residence of Bermuda’s governor, who represents H.M. Queen Elizabeth II. BERMUDA UNDERWATER EXPLORATION INSTITUTE (BUEI) 40 Crow Lane, Pembroke Bermuda Underwater Exploration Institute (BUEI) is just outside Hamilton on East Broadway, 40 Crow Lane. See the ocean like you have never seen it before! What lies in Bermuda’s depths? BUEI is designed to amaze, excite and inform every visitor about the ocean. ST. GEORGE’S AND EASTERN PARISHES St. George’s — a UNESCO World Heritage Site — is where it all began, when in July 1609 the Sea Venture — en route from England to the new colony of Jamestown Virginia — encountered a violent storm and was shipwrecked on Bermuda’s reefs less than a mile off what is now St. Catherine’s Point. World Heritage Centre Town of St. George Located in the Town of St. George’s, the World Heritage Centre is a key orientation and resource point for visitors of all ages. Celebrating the mission of The St. George’s Foundation, the World Heritage Centre is central to the promotion of the Town and Parish of St. George’s. Lively, interactive histories are told through state-of-the art technology, participatory talks, historical re-enactments, and an (ongoing programme of dramatic presentations, cultural activities and special events). The St. George’s Foundation have restored the Deliverance and it is now open Monday – Saturday, 10 am – 4 pm. Admission is $3.00 (adults), $2.00 (children/ students). KING’S SQUARE Town of St. George The official, ceremonial centre of St. George’s, King’s Square acquired its name in 1818 when it was named in honour of King George III. Every Monday, Tuesday, Wednesday, Thursday and Saturday until November 30, 2011, the town crier, colorfully decked out in tunic, breeches and tricorn hat, rings his bell and shouts “Oyez! Oyez!” (Hear Ye!). This is to convene his `tribunal,’ which will mete seventeenth-century justice to a nagging wench at the ducking stool nearby. By all means try out the stocks for yourself. This is a fun photo opportunity. TUCKER HOUSE Water Street The only museum in St. George’s furnished as a period residence, Tucker House offers a glimpse into the lifestyle of a prosperous eighteenth-century Bermudian merchant. Built around 1752, Tucker family treasures are in evidence throughout the house, including fine family portraits by Joseph Blackburn. A Bermuda National Trust property, Tucker House is open Wednesdays & Saturdays, 10:00am - 2:00pm Admission $5. 297-0545 NATIONAL TRUST MUSEUM AT THE GLOBE HOTEL Globe Hotel, King’s Square Across the street from St. Peter’s Church, this distinctive dwelling was built in 1700 by Governor Samuel Day. During the American Civil War its upper floor was occupied by a Confederate Shipping Agent from where he organized the shipment of arms, uniforms and war supplies through the Union blockade to the South. It now houses the Confederate Museum and hosts the “Rogues and Runners” exhibit, highlighting Bermuda’s participation in the American Civil War. Open Mon. - Sat. 10am-4pm. PETER’S CHURCH Duke of York Street Situated in appropriate loftiness above the main street of St. George’s, St. Peter’s Church is one of the island’s most beloved landmarks and is the oldest Anglican church continuously occupied in the New World. The first church on the site was constructed in 1612 of native cedar and a thatched roof. This original edifice was replaced seven years later by a more permanent structure that lasted almost a hundred years, until the hurricane of 1712. Following this disaster, the church was again rebuilt. Open Mon. Sat. 10am-4pm. Anglican service 11:15am Sundays. THE OLD RECTORY Broad Alley, St. George’s, behind St. Peter’s Church Built in 1699, this charming cottage on one of the numerous picturesque back streets in St. George’s is one of Bermuda’s oldest houses. Acquired in 1700 by Captain George Dew, an unsuccessful privateer who became a St. George’s assemblyman, The Old Rectory acquired its current name when it became the residence of the Rev. Alexander Richardson in the last quarter of the eighteenth century. Outisde viewing only. ST. GEORGE’S HISTORICAL SOCIETY MUSEUM Duke of Kent Street and Featherbed Alley Built around 1734 as a private residence, Mitchell House is a fine example of eighteenth-century Bermudian domestic architecture and has been home to the St. George’s Historical Society since 1920. Adults $5, Children under 12 $2 BERMUDIAN HERITAGE ASSOCIATION Samaritan’s Lodge, Intersection of York and Water Streets St. George’s newest museum was formed in 1994 to preserve and document the history of black culture and achievement in Bermuda. Displays include a fascinating assortment of memorabilia relating to the many areas in which blacks have made a contribution since first arriving on the island in 1616: shipbuilding, piloting, construction, nursing, music, sports and politics, to name a few. TOWN HALL AND THE STATE HOUSE Town of St. George Town Hall, the handsome building commanding King’s Square and bearing the town crest was begun in 1802, a few years after the Corporation of St. George’s was founded in 1797. The State House, located up a gentle elevation behind Town Hall, is one of the island’s oldest, most historically important buildings. Erected around 1620 by Governor Nathaniel Butler, the State House is open to the public 10am-4pm on Wednesdays only. (10 - 2 May 1 - Oct 31) THE UNFINISHED CHURCH Duke of Kent Street, St. George’s The impressive Gothic vestige that looms over the town of St. George’s was

begun in 1870 as a replacement for St. Peter’s, which had fallen into a state of serious disrepair. Designed by William Hay, the Scottish-born architect who later drew the plans for Hamilton’s cathedral, the St. George’s church was abandoned in 1899 when near completion. FORT ST. CATHERINE St. Catherine’s Point, St. George’s Fort St. Catherine stands on the site of one of the four towers that Governor Richard Moore erected along Bermuda’s coast around 1613. None of these original towers, the first English forts in the New World, survive. The present, completely restored structure, dates from the mid-nineteenth century and is home to fascinating exhibits including military guns and weapons. Open Mon-Fri 10:00am-4:00pm. CARTER HOUSE Southside Road, St. David’s Carter House was probably built in the 1720s by John Hayward and his wife Martha, reputedly a descendant of Christopher Carter, one of the two Sea Venture survivors who stayed behind when the vessel’s other passengers continued on to Virginia in 1610. Acquired by the St. David’s Historical Society, this small house with its unusual ‘welcoming arm’ stairs has been converted into a museum that commemorates the pre-war agrarian traditions of St. David’s. Open Saturday 10:00am-4:00pm. ST. DAVID’S LIGHTHOUSE Mount Hill, St. David’s Constructed of Bermuda stone, this 55-foot structure is one of two local lighthouses. Lit for the first time in 1879, its fixed white light enabled navigators to take cross bearings with the flashing beacon emitted by Gibbs Hill lighthouse way up the coast in Southampton. Open 9-4, Mon-Fri from Nov - Mar. Admission is free. CRYSTAL CAVES & FANTASY CAVES Wilkinson Avenue, Bailey’s Bay Two young boys discovered this magical underground world comprising stalactites, stalagmites and a clear, fifty-five foot deep lake by accident in 1905. Subsequently it has become a leading attraction for visitors who can now also visit a nearby sister site, Fantasy Cave. A café and a gift shop are also located on the premises. Crystal Caves, which is on the bus route between Hamilton and St. George’s, is open seven days a week except on public holidays that occur during the winter months. Open 9am - 5pm. I started out in accounting, but didn’t like the figures and numbers. My whole family is in accounting so it was just the place to start. I moved onto Hotel Management and it was there that I started working as a cook. While training in the kitchen, which was part of my program, the Chef picked me up half way through and offered me a job. hAve You ever hAD A DIsAster IN the kItcheN? Yes, we had a big event, close to 500, a sit down dinner. The dessert was being transported to the location and the whole trolley collapsed with all of the desserts inside, on the road. We had no choice but to redo all 500 desserts, which originally took about 3 days to create. I called in friends and colleagues to help and together we re did the entire order within a few hours. For Veal chop: Season with salt and pepper , pre heat grill, grill on chargrill for about 4 minutes each side. For wilted spinach: Heat sautée pan with olive oil , add sliced garlic, sautée till translucent and add clean spinach, sautée for 10-15 seconds add salt and pepper for taste. Serve immediately. Served with ½ lemon. SUGGESTED WINE BY APRIL GOSLING NAUDE: Banfi - Tavernelle 05 This 100% Cabernet Sauvignon. Gorgeous aromas of violets, cassis and berries with an underlying mineral note. Place it on the grill, depending on how you would like your steak done. If rare or medium rare then place on the hottest part of the grill, usually the center of the grill. If you prefer your steak on the medium well or well done, then place your steaks on the edge of the top grill. Rare 110°F Medium 130°F Medium rare 120°F Well done 165°F Medium well 150°F During the last minute of grilling, you can baste the steak with homemade steak sauce and a little olive oil to “flare up the flames” before finishing cooking. Steak sauce 1 clove Garlic 0.5 cup molasses 250 oz shallot 0.5 cup tomato paste 2 oz orange juice 0.5 cup master gravy 0.5 cup red wine 0.5 cup mustard 2 cups water 1 tbsp Tabasco 1 cup vinegar 3 tbsp season salt Method: Mince garlic, shallot sauté then add orange juice and tomato paste. Deglaze with red wine, add water and bring to a boil. Thicken with corn flour. Blend till smooth. L’orIeNtAL | huNAN orANge Duck Orange duck sauce. 100ml Orange concentrated 600 ml Plum sauce 150ml Hoisin Marinate 1 duck whole 50 gr Ginger 10 gr 5 Spice powder 10 gr Salt Stir fry 100 gr string beans 1 tsp Jullience ginger

1 no Orange zest 100 ml Tomato ketchup 3 tbsp Hoisin sauce 100 gr Scallion 1 tsp Mince Garlic 2 tbsp cooking soya oil

Add the orange concentrated, plum sauce, hoisin, orange zest and ketchup in a pot and heat till all ingredients are incorperated. Remove from heat and let the sauce cool down. Clean the whole duck, inside and outside. In a bowl, mix the 5 spice powder, salt, hoisin sauce, scallion and ginger slice. Insert the mixed ingredients in the duck and let it marinate in the chiller for 6 hours uncover. Set the oven at 300°F. Sprinkle sea salt on the duck and place in the oven for 2 hours, remove from oven and let the duck cool down. Heat the wok or pan, add 2 tbsp oil, add the ginger and mince garlic. Stir fry till it sweats, add the string beans. Stir fry for a minute and add the Orange Duck sauce. Remove the cavities in the duck, and cut in pieces. Pour the string bean orange duck sauce and serve warm with white rice. SUGGESTED WINE BY APRIL GOSLING NAUDE: Banfi - Centine Rose Demurely perfumed with floral aromas, carnation-pink Centine Rosé is sophisticatedly dry with wild berry flavors and a crisp clean finish. What could be more romantic than sinking deep into an oversized cushioned chair, sipping a glass of red wine and gazing out onto Bermuda’s beautiful Elbow Beach as the ocean waves crash against the shore line.

sigh... With floor to ceiling windows, you won’t miss a second of ocean activity while dining at Lido. The ambiance is extraordinary at all times, during the day, in the evening, during a storm and of coarse during a full moon hovering over a perfect calm. Lido is renowned for its diverse and sophisticated menu offering a number of delicious feasting options, an extensive wine list, savory desserts and gentle nightcaps. Chef Guido Brambilla comes to us from Milan, Italy. He has quite the history behind him, has cooked all over the world and he owned his own restaurant in Milan. Chef Guido’s passion for cooking came to life when he spoke about each entrée he had carefully created for Lido. I cringed at the thought of eating snails, octopus and even lamb in the past. After listening to his passionate words explaining how he mixed each ingredient together to compliment each item, I sat back and waited patiently for our recommended dishes to arrive. I was scared, anxious and excited to taste the words I had just heard. I thought about every time I have gone out to dinner and how I always choose the same sort of thing. Tonight things would change. First the Escargot “Manicotti” arrived in front of us. The presentation was beautiful, delicious and I couldn’t wait to take a bite, but first I got out my camera with excitement to capture the moment, then my mouth watered as Chef Guido explained again how he created this dish. Braised Snails, filled in Pasta Tubes, then fried, complimented with a Garlic, Lemon Puree and Parsley, Tarragon Coulis. Next we tried the Roasted Octopus. Again the presentation was fabulous. Very rich featuring a variety of beautiful bright colours, resembling a centerpiece sitting quietly on a dining room table. Crispy Atlantic Octopus Tentacle, Russet Potatoes, Frisée Leaves accented with Sun Dried Tomato Pesto. Divine. Next came the Lamb Shank “En Croute’. I had only ever tried lamb once before and found it had a heavy flavor that lingered too long. I decided it wasn’t for me and never had it again, until now. There is only one way to describe Chef Guido’s Braised, deboned and baked in Bread Crust Lamb Shank with roasted Artichokes, Spiced Lentils, Rosemary and Garlic. It is to die for. I closed my eyes and just deeply breathed in the aroma. Our waiter pulled the bone out from the Bread bowl and poured gravy inside. The warmth and presentation was like nothing I had ever seen before on a plate. We were obviously still sitting ocean side watching the crashing

waves, sipping our delicious red Austrian wine, but a warmth came over us, almost like we were home in front of a fire and there was a stew brewing on the stove in the background. A dish we will never forget. After every meal comes dessert and the “Orange Bavarois with Honey poached Loquats, Champagne Sabayon and Orange Reduction” melted in my mouth with every bite. A perfect end to a perfect meal. After this dining experience I look at food in a whole new light. I have started cooking from recipes, experimenting at home with ingredients and ordering various items when out for dinner at some of my favorite restaurants. Rather than scanning the menu for the basics, I am scanning for different ingredients, curious to find out what they taste like when put together in my mouth. The complete Lido experience was phenomenal, Chef Guido’s passion truly changed the way I look at food and I must say, I am inspired. Valentine Surprise!

Love is in the air and I’m going to share some of my romantic secrets in the kitchen. Set the stage of your romantic dinner by making sure the two of you will be alone. If you have children, arrange for babysitting at someone else’s home. Plan your romantic dinner on an evening of a week that you are sure your spouse won’t have other time commitments already scheduled. Do you want the romantic dinner to be a surprise or not? If it is a surprise, light candles in the entrance of your home to surprise your spouse. If the dinner won’t be a surprise, consider giving your spouse an invitation that you write yourself. Send the invitation by mail, leave it on your mate’s pillow, send it with a bouquet of flowers, leave it on the dash of your spouse’s car, etc. Your invitation needs to be specific as to when the romantic dinner is planned. Be creative! This is a meal to be enjoyed with all of your senses - and there will be plenty of time for that because the dishes are just so simple and easy to prepare!

Clams Oreganata

Ingredients 1/2 cup plain dry bread crumbs 2 tablespoons chopped fresh oregano 1 tablespoon chopped fresh parsley 1 tablespoon chopped fresh mint 1/2 cup extra-virgin olive oil, plus extra for drizzling Kosher salt and freshly ground black pepper 12 shucked Manilla clams, shells reserved Coarse salt, for lining baking sheet Directions Preheat oven to broil. In a large bowl gently toss bread crumbs, herbs, olive oil, salt and pepper. Be careful not to overwork the mixture. Set aside. Line a baking sheet with salt and arrange 12 clam shells. Put 1 clam in each shell and top with 2 tablespoons of the bread crumb mixture. Drizzle with olive oil. Broil 2 to 3 minutes SUGGESTED WINE BY APRIL GOSLING NAUDE: Wine: Banfi Chardonnay Fontanelle Notes: Fontanelle is straw yellow with golden reflections, Fontanelle's bouquet is intensely fruity with notes of apple and apricot.


88 Spinach and Mushroom Ravioli

Ingredients 1/2 cup extra-virgin olive oil, 2 tablespoons for boiling water 6 ounces button mushrooms, sliced 1 (10-ounce) package frozen chopped spinach, thawed and   squeezed dry 1/4 cup mascarpone 1/3 cup grated Parmesan, plus extra for garnishing 6 egg roll wrappers (6 1/2 by 6 1/2-inch squares) 2 large eggs, beaten with 1 teaspoon water 1/2 cup mushroom (cremini, shiitake, button), finely chopped 2 cups tomato sauce, recipe follows Salt and freshly ground black pepper Directions In a large saute pan heat 1/4 cup of the olive oil. When almost smoking, add the mushrooms and season with salt and pepper. Cook until all the liquid has evaporated from the mushrooms, about 6 minutes. Add spinach and cook for 2 minutes. Remove from heat and place mixture into the bowl of a food processor. Pulse until you get a coarse texture. Place in bowl and stir in mascarpone and Parmesan cheese. Check for seasoning and set aside. Line up 3 wrappers on a cutting board. Brush with the egg and water mixture. Using a tablespoon, arrange 4 dollops of the filling on each wrapper – 2 on the first row and 2 on the second – 1-inch apart. Place another wrapper directly on top, pressing around the filling and sealing the edges. Using a fluted ravioli cutter, cut out squares of ravioli. Each filled wrapper will yield 4 raviolis, giving you a total of 12 ravioli. Place ravioli onto a floured baking sheet and keep covered with a linen towel. In a large pot, bring to a boil 4 quarts of salted and oiled water. Carefully add small batches of ravioli, about 3 to 4 at a time. This will prevent them from crowding in the pot and sticking together. Cook for 2 to 3 minutes. Using a spider strainer, carefully remove the ravioli and place on the plate. Tent with foil to keep warm and continue cooking remaining ravioli. In a saute pan, heat remaining 1/4 cup olive oil. When almost smoking, add chopped mushrooms and saute until soft and most of the liquid has evaporated, about 8 minutes. Carefully pour in tomato sauce and simmer for 5 minutes. Divide ravioli between 2 serving plates. Top with mushroom tomato sauce and sprinkle with Parmesan. SUGGESTED WINE BY APRIL GOSLING NAUDE: Banfi Cabernet/Sangiovese Col di Sasso NOTES: Col di Sasso is a blend of Cabernet Sauvignon and Sangiovese grapes cultivated on the most rocky and impervious slopes of the Banfi estate in Montalcino, Tuscany.

Simple Tomato Sauce

1/2 cup extra-virgin olive oil 1 small onion, chopped 2 cloves garlic, chopped 1 stalk celery, chopped 1 carrot, chopped Sea salt and freshly ground black pepper 2 (32-ounce) cans crushed tomatoes 2 dried bay leaves 4 tablespoons unsalted butter, optional In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 5 to 10 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 to 10 minutes. Add tomatoes and bay leaves and simmer uncovered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors. Add 1/2 the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce
