Bermuda Ha Ha The Life of a Reporter By Roger Crombie
When I was a reporter in Bermuda, despite being the friendliest guy around, I managed to upset the PR department of every large insurer on the Island, usually without trying. One of the very largest companies was once one of the very smallest. I helped by writing press releases, annual reports, doctors’ prescriptions (just kidding) and so forth. Then they became huge and did a dumb thing, which they had to own up to. The boss told me so that I could tell everyone else. The company’s PR department became enraged that I had done so. “Why can’t you be like (another reporter)?” they asked. “He does exactly what we tell him.” I explained that I was a proper reporter. “Right!” the woman said. “You have to meet with our general counsel”, the top legal man. A friend advised me not to go. “The man is a monster,” my friend said. “He’ll eat you alive.” Excellent, I replied, and what a great story: Man eats reporter. Tragically, the general counsel was a coward and cancelled the interview before it could happen. Some monster. Much the same thing happened with a Government Minister. He said something very dumb, something very, very dumb indeed. Something you’d ground your sevenyear-old for saying, for a year. So I reported it, which was my job. I was hauled in to meet the Minister. The Permanent Secretary explained that the Minister had indeed said the words in public, but hadn’t wanted it reported. “Then he should have been an editor, not a Minister,” I explained. “Either way, you’re going to receive a beating,” the PS said. Excellent, I replied, and what a great story: Minister beats reporter. “Wait here,” the PS said, and that meeting was cancelled too. I once made a mistake. Shocking, I know, but there it is. I said a guy was from somewhere that he wasn’t from. He was a big shot at a reinsurance company. I was banned for years from entering the company or even dreaming about it. Eventually, the company needed something that only I could provide. In I went, and bumped into the dude. I apologised profusely. “No need,” he said. “I wish I were what you said I was.” Eight years in the wilderness for nothing. I could fill this magazine thrice over with such stories, but for some reason they like having lots of articles in it, not just one. So I’ll close with a short tale. One PR guy said he’d land me an interview with the top man, if I would write his reporter wife’s stories for her for a week, so that they could go on vacation. Like a fool, I agreed, but the stories required specialist knowledge of the kind it takes a lifetime to accumulate. I simply couldn’t write them. When they returned from hols, I was banned from the company for life. Ah, the life of a reporter. No matter how badly you’re treated, there’s always a story: Reporter finishes article. 12 This Week in Bermuda | NOVEMBER 2013
VIP Sunshine Award Mr. Jame G. Tweed The Visitor Industry Partnership (VIP), in association with lead sponsor, the Bermuda Tourism Board, is pleased to announce the first winner of the VIP Sunshine Award programme, Mr. Jame G. Tweed, a bus operator, who was nominated by Mrs. JoAnn M. Brown of New York State. This quarterly programme is designed to highlight a Bermuda resident who has gone ‘above and beyond’ to make a Visitor’s stay in Bermuda ‘one to remember’. Visitors are encouraged to nominate a resident using a nomination form that can be found in ‘This Week in Bermuda’ or online at www.vip.bm When Mrs. Brown’s family visited Bermuda, they felt that Mr. Tweed went above and beyond his duty as a public transportation bus driver. She explained, “Our family had the pleasure of being passengers on his bus twice in the 3 days while we were docked in Bermuda. Mr. Tweed greeted all his passengers with a big smile and friendly demeanor. He obviously enjoyed his job and was proud to call Bermuda his home. He didn’t only drive us to our destination, but he also proudly explained the sites and culture of Bermuda. At one point he stopped the bus so the passengers could take a picture of one of the many beautiful beaches of Bermuda. Mr. Tweed represented all the people of Bermuda, very kind and friendly. We have traveled to many islands in the past, and Bermuda is our top pick! We are looking forward to returning to Bermuda someday and we will proudly recommend family and friends to visit Bermuda for vacation”. The Chair of Visitor Industry Partnership, Dr. Barbara O’Shaughnessy is proud to congratulate and thank Mr. Tweed for making the Brown family’s Bermuda holiday such a special memory and for spreading some wonderful Bermuda Sunshine! Mr. Tweed received a VIP Sunshine Award Pin and a congratulatory lunch, compliments of the Island Restaurant Group, with the Minister of Tourism, the Hon. Shawn Crockwell, JP,MP, the Chairman of the Tourism Board, David Dodwell and the Chair of the Visitor Industry Partnership, Dr. Barbara O’Shaughnessy. Chairman Dodwell remarked, “It is absolutely imperative that every man woman and child in Bermuda is gracious and welcoming to each and every one of our valued visitors. Walking the extra mile, doing that little bit extra is in the character and history of Bermudians from all walks of life. This heritage of warmth and caring personality continues to be epitomized by Mr. Tweed. If everyone took a leaf out of his book Bermuda tourism will soon be on the road to recovery.” After hearing about this programme, the General Manager of The Fairmont Southampton, Mr. George Terpilowski awarded Mr. Tweed a complimentary hotel stay with dinner and breakfast. “Everyone in Bermuda is key to our visitors having a positive, memorable, vacation experience: from the child in their smart school uniform giving a smile and a wave; to the shop assistant, bus operator, the waitress and waiter and even the jogger on the railway trail taking their time to say hello with a happy face. These are the positives our guests take away as precious memories. The Fairmont Southampton is thrilled to participate in the Sunshine Award initiative. It is our way of saying thank you to those who make Bermuda so much more and Mr. Tweed is a shining example of going the extra mile.” For more information, please contact Dr. Barbara O’Shaughnessy at info@vip.bm or 441 337 0922

Marshall Goodman American Painter 1916 – 2003 Watercolour sketch of Bermuda c1946. 15 x 24.5 inches The view is of Queen Street looking up from Heyl’s Corner. Heyl’s Drug Store is on the left, Whitter’s Jewelers followed by Cox and Wilson, then the present day Perot Post Office. On the right is the Cigar Store where Goslings is now. No cars of course but bicycles going in every direction and a little Bird Cage with an umbrella. Mr Goodman, a graduate of the Rhode Island School of Design, had painted murals in the US Navy Officer Club at the top of Queen Street during the war. Now immediately post war he had ideas of painting major art works in oils of Bermuda scenes. This sketch was one of his first preliminaries into this field. Price on request

Bermuda Cedar Gifts
bermudacedargifts.com
Alan makes a number of beautiful gifts using old Bermuda Cedar. He has created a special collection of pens, pencils, wine stoppers, men’s razors and shaving sets and even a coffee scoop! Each piece is carefully hand crafted and special orders including engraving by Bermuda Blueprinting can be requested. These hand crafted peices of art make the perfect gift for anyone who appreciates having a little piece of Bermuda. Alan uses reclaimed wood and sometimes a small nail hole appears as he turns the wood on his lathe. It is especially cool to come across these markings as it really makes each and every piece original. Alan’s beautifully hand crafted Bermuda Cedar Gifts can also be found at the Alexandra Mosher Studio in Washington Mall just off Reid Street; on Queen Street at the Island Shop and online at www. luxurygiftsbermuda.com where all purchases are elegantly gift-wrapped and hand delivered same or next day. Alan is happy to talk about custom designs and orders. He also works with coloured acrylic. Roses in Bermuda Revisited
IN THE
Arts
With Lee Davidson & Liesbeth Cooper By Candice Dickinson
Above: Bermuda Mystery Roses Trinity & Frances Earl
“Every time a cutting is rooted, or exchanged with friends, I like to think that we are planting for the future and that in this respect, at least, our generation can leave this island a better place than it might be”. Kate Richardson, Founding Member, Bermuda Rose Society, November 23, 1955
The Bermuda Rose Society’s new book “Roses in Bermuda Revisited” features all new digital photographs and identifies each rose by its bud, the size of its bloom, the shape of its leaf, the height one can expect the rose to grow in a garden and conveniently explains measurement in both inches and centimeters. A new layout features the history of roses, landscape, anatomy, an individual look at each rose, care, preparing for exhibition, arranging and more. In Bermuda’s sub-tropical environment, most roses are in continuous bloom during the months of October through May. Old fashioned roses such as Chinas and Teas bloom off and on all year round. Imported hybrid roses can bloom themselves to death because they require a frost or a cool winter in order to go dormant. They are also grafted on rootstock that is not ideal for growing in Bermuda’s soil. Bermuda Mystery Roses and roses from the Bermuda Rose Society are grown on their own roots, ideal for planting and growing in Bermuda all year round. Gardeners all over the world plant Bermuda Mystery Roses. From Japan, Australia and New Zealand to all across the U.S. In New York City the Heritage Rose Foundation has created a heritage rose trail in Harlem. Local rose nurseries and students alike have come together and learned how to take slips from the roses and replant them. Urban gardens are becoming really popular and are transforming some desolate spaces into beautiful rose gardens for people to enjoy. Roses in Bermuda Revisited was very much a group effort and Photographic editors Sally Madden and Susan Swift dropped everything when a perfect day presented itself for photographing each rose in its ideal stages of bloom. The entire group played a critical roll in reviewing all of the content and studying photographs, then choosing content to be featured. “Registered roses are highlighted with single quotes and mystery roses have double quotes.”

Art Matters Charlotte Anna Lefroy Botanicals from the Bermuda National Trust Collection By Lisa Howie, Director, Bermuda National Gallery
B E R M U D A
A few years ago I had the pleasure of touring the National Archives, located in the Government Building, Parliament Street, with specific attention to the historical botanicals by Charlotte Anna Lefroy. It’s always a remarkable surprise to come across dated artwork in pristine condition and, in this case, beautifully rendered with vibrant colours and precise detail. Such is the Bermuda National Trust’s Collection of Lefroy artwork, some of which was recently on display in and sponsored by the ACE Gallery, curated by David Mitchell. The exhibition of 24 botanical illustrations deserved an extension, thus we offered to host it here at the BNG, opening to the public September 13 and running to November 23, 2013.
N A T I O N A L
Historically, botanical illustration dates back nearly four thousand years to Mesopotamia and Egypt, where agricultural civilizations created motifs of plants on the walls of their temples and tombs. Later, in the 1st Century B.C, botanical art documented plants that were used as herbals for medicinal and religious reasons. During the Renaissance, inventions such as the microscope in 1590 gave access to the scientific structure of plants. The 17th and 18th centuries are referred to as the Golden Age of botanical art with voyagers classifying and exporting plants to wealthy private collectors. In 19th century England and America, the art of botanical illustration became a desirable pastime with the ‘How to’ or ‘Copy Books’, as they were known; perhaps Lefroy was inspired by these publications. G A L L E R Y
Born in Scotland in 1824, Charlotte Anna Lefroy arrived in Bermuda with her husband General John Henry Lefroy, who was positioned as Governor of Bermuda from 1871 to 1877. Both were keen botanists and when moving to Bermuda Governor Lefroy organized for a gardener from the Royal Botanic Garden, Kew Gardens, England, to select plants suitable for the Island’s climate. During Lefroy’s time in Bermuda she combined her interest in science, naturalism and art, creating a collection of paintings on local Bermuda fish and an album of 83 botanical illustrations, from which comes this exhibition. Come soon to enjoy what the BNG has to offer. When in St. George’s, please visit the BNG East. Admission is free. Take away a memento of your experience with the BNG’s Impressions of Bermuda art book for $25. Tours each Thursday at 10:30 am at the BNG. Group tours can be arranged by contacting: education@bng.bm Call ahead to confirm: 441-295-9428. See www.bng.bm for more details. In The Arts The Chewstick Foundation By Ariana C. Francis
If you’ve found yourself travelling through the back of town on a Sunday night, you’ve most likely heard rumblings of rapping, poets reciting and guitar strumming emanating from the Chewstick headquarters. Their colourful and inviting space, located on the corner of Elliot and Court Street, is home to many artists and poets who gather to support one another and share their talents. But one does not need to be an experienced musician or poet to perform. Spoken Word, one of Chewstick’s many creative outlets, gives artists; aspiring or amateur, the opportunity to express themselves. Deidra-Lee Bean, the administrator of the Chewstick foundation explains, “Spoken Word is an art form closely related to poetry. People don’t necessarily use music or any other music representation to express themselves. Chewstick is about story telling and spoken word is an awesome medium to get people started if they feel like they’re not creative.” Bean is no stranger to the mic. She regularly perfomes at Open Mic night. “When I first started performing my poetry at Chewstick, I didn’t write any differently to get up there and perform it, but there were pieces that lent themselves better to performing. When you’re up there on stage, people aren’t just experiencing your word. They are not seeing it on the page; they are seeing you and the mic. It’s not just the poet getting up and reading, but being conscious of the fact that they are now taking on a role.” Founders and long-time friends Najib ‘Tanzaoui’ Chentouf and Executive Director Gavin ‘Djata’ Smith have been on Bermuda’s performance scene for over two decades. “Chewstick has been in existence since late 2002,” Chentouf reflects, “We’ve been around spoken word since we were teenagers.” Their experience has led to the creation of multiple artistic outlets such as Beachfest, Chewslam and Spoken Word. “We recognized that there was a need for more than just spoken word poetry,” says Smith. “We put spoken word and 46 This Week in Bermuda | NOVEMBER 2013

The Masterworks Museum of Bermuda Art is home to an impressive collection of over 1,200 pieces of Bermuda inspired art; some by such famous names as Georgia O’Keeffe, Winslow Homer and Albert Gleizes. The museum shop sells prints and original local art, a perfect keepsake to take home! To learn about Bermuda’s culture and history there is no better stop on your vacation itinerary.

poetry front and centre alongside all the other mediums of expression and on every stage from our small ones to our big ones, such as Beachfest, which is unprecedented in Bermuda because usually spoken word would only be in small audience events.” Spoken Word is ideal for anyone with a voice that wants it to be heard, or if someone simply wants to find that voice deep within themselves. Open mic nights on Sundays at Chewstick are a comfortable, judgmentfree zone to do so. Smith proclaims, “A lot of poets have that similar experience of not feeling comfortable sharing their poetry and open mic nights is a great opportunity to both hear and share spoken word.”

Golf Across The Island “Leveraging the November to March Golf Season” with Kim Swan, J.P. Teaching Professional
With another PGA Grand Slam under our belt the Bermuda golf season is in full swing. Truth be told, fall is the start of the real Golf Season in Bermuda - a time when our temperatures and seasonal weather is ideal for a challenging game of golf. In addition, November through to March is the season which offers our country the greatest opportunity to maximise our low bed occupancy levels. The challenge because of our low hotel rates packaged as a discount room rate, together with unsold tee times, provide Bermuda with a product to sell to our golfing friends in North America, UK and Europe who are experiencing the brunt of winter. • Leveraging our PGA of America Relationship:Bermuda enjoys an unique relationship with the PGA of America through the staging of their PGA Grand Slam for seven years which affords us an opportunity to get our message disseminated to every Club Professional in the United States of America. I envisage Bermuda sponsoring and hosting US PGA Club Professional to play and bring their members to Bermuda events in the fall and the winter. The Goslings Invitational, Mid Ocean Invitational and the Goodwill Tournaments are a template we can follow. • Promote Local Tournaments Overseas:The hospitable manner of our Bermudian people is one of our greatest assets - it behoves us to be inviting to our visitors - promoting local events overseas is a way to allow our visitors to mingle and feel the real warmth of our island home. • Port Royal Golf Development Program:Our golf coaching program is reaching out to visitors to help make their vacation more enjoyable by improving their golf game while on island. Golf Coaching for all levels together with tournament play that is both competitive and social are a way for us to encourage visitors to our shores and provide those already committed to a Bermuda vacation a way to connect with Bermuda. We encourage golfers to become a part of the Port Royal Golf Course experience by playing this world class golf course, which has played host to numerous major golf champions. Membership packages make this fine public golf facility more affordable and our golf development program encourages new golfers into the game. To those persons who want to see if golf is the game for them - we invite you to contact us at: Kim Swan, J.P. Teaching Professional (c) (441) 533-8321 . Heritage Matters “Bamboo Billy” Goes To Statia By Dr. Edward Harris, MBE JP
In the 1770s, the West Indies island of St. Eustatius became the place where the American rebels of the ‘Revolutionary War’ could obtain goods, especially war materiel, that were denied them in other places. The Dutch at ‘Statia’, with their many Bermudian business compatriots, were only too happy to oblige and many a fortune over some five years of trading.
For a period, St. Eustatius was one of the richest places in the West Indies, with many warehouses lining the shore: Admiral Rodney destroyed the entrepot that when he took the island in 1781.
Unfortunately for the merchants of war, Admiral Rodney destroyed the mercantile centre at Statia in 1781, as he advanced through the West Indies putting paid to the French and other allies of the American rebels. Subsequently, the great naval man returned to England due to illness: it is said that had he remained on the West Indies and America station that he might have prevented the losses at the Chesapeake and Yorktown, perhaps delaying or negating the Independence of the United States. Two generations after the destruction, a famous Bermudian seaman, nicknamed ‘Bamboo Billy’, aka Captain William Hubbard Peniston (1828–1917), paid a visit to Statia in 1853 and left an interesting account, later published in the Bermuda Historical Quarterly. One hundred and twenty years later, the venerable Bermudian antiquarian and artist, Hereward Watlington also alighted on the island, but that time from a small, eight-seat aeroplane, rather than a twelve-gun Bermuda sloop.

HERITAGE
Matters The ruins of one of the St. Eustatius warehouses of its glory years of the 1770s; Bermudians had considerable financial interests in that West Indies island in that period (courtesy of Marius Popma).
Captain Peniston was one of the most respected sea masters of his day and often plied the ocean from Bermuda into the West Indies, bringing back sweet potatoes, among other southern goodies. At Statia in 1857, he observed that he ‘found many descendants of old Bermuda families who vied with each other in extending hospitality to me’. When Hereward Watlington visited over a century later, there were but a few such descendants left, noting that his ‘ancestress, Christina Love’ was born on Statia in 1739. In place of the living, Watlington brought home a list of the dead from the graveyard, including familiar names like Jennings, Hill, Godet, Packwood and Peniston. When I visited St. Eustatius in 1994, there was but one family of a Bermudian name, the Godets, possibly descendants of slaves of an owner of that surname. Bamboo Bill was greeted at Government House and remarked on its fine marble floors and the inability of its inhabitant, unlike the rest of Statia, to speak the Queen’s English. Upon the refusal to surrender the island in 1781, it was through the front door of the House that Rodney sent his first shot, which had the desired effect of capitulation. The Admiral and his marines ransacked the island, including digging up recently graves, in which bullion had been buried to keep it out of British hands. However, some Bermudian ladies sewed such precious items into the cushions of Bermuda cedar chairs, which items of furniture they were allowed to take with them when ejected from Statia by the Admiral. Statia never recovered from the sacking by Rodney and Bermudian warehouses yet lie in ruin on the sea shore. When Hereward Watlington saw Government House in 1979, it had become a ruin in yellow brick. It was owned in the early nineteenth century by one Colonel De Veere. He refused to deviate when ‘his daughter suggested to him that he should consider marriage again, he would reply [of his late wife]: “I cannot replace her”…However his bed was not unoccupied’! Do You Know … About Bermuda’s Caves, Admiral Sir David Milne and a 600,000-year-old Stalagmite? By HORST AUGUSTinovic
As Bermuda emerged upward from the ocean during these interglacial periods, the downward drag of water in dunes and depressions found weak pockets of limestone between the lower rocks, and these were eventually flushed out. The lowering water level then allowed air into these newly formed caves, causing the formation of drip-rock and in time, the formation of stalagmites and stalactites.
Britannia Royal Naval College
Bermuda probably has more caves per square mile than anywhere else in the world. These caves are located in the older rocks close to the current sea level, and were formed during periods of low water levels during glaciation cycles of the current ice age. These cycles occur on 40,000 to 100,000-year time scales and we are now in an interglacial period following the end of the last ice age some 10,000 years ago.
Admiral Sir David Milne
Made of calcium carbonate, Spelothems grow as long as there is dripping water in an air-filled cave and become Stalagmites if growing from the floor and Stalactites if growing down from the ceiling. When they join, they become columns or pillars. Many caves that are now completely filled with water also contain Spelothems, indicating that they were once above sea level. A major group of caves is located to the east of Harrington Sound, the largest being Crystal Cave. Admiral’s Cave, another large cave, is located between Blue Hole Hill and Grotto Bay and almost entirely above sea level. It is called Admiral’s Cave after Admiral Sir David Milne, who in 1819 removed a massive stalagmite from the cave and presented it to his friend Professor Robert Jameson of the University of Edinburgh for the College Museum. The remaining stump of the Stalagmite removed by Admiral Sir David Milne is just over 2 feet in diameter. It shows that 16 holes were drilled into the Stalagmite before it was cut.

DO You
Know The 1888 Bermuda Pocket Almanack contains the following report: “A splendid stalagmite cut from the Walsingham Caves is now in the Museum, Edinburgh, and has attached to it the following description: ‘Stalagmite of Carbonate of Lime Sawn from the Floor of a Cave in the Island of Bermuda’. The stalagmite was 11 feet 3 inches tall and weighed 3-1/2 tons. In1863 – 44 years after his father had removed the stalagmite – the Admiral’s son, Admiral Sir Alexander Milne, visited the cave where he had witnessed the removal as a boy, and found that 5 drips had formed small knobs of new matter on the stump of the stalagmite. He calculated that the new matter amounted to about 5 cubic inches and, as the stalagmite consisted of approximately 44 cubic feet – or 76,000 cubic inches – concluded that it would have taken 600,000 years to form the stalagmite that his father had removed from the cave. This calculation assumed that the deposits occurred at exactly the same rate as in the previous 44 years, something that is highly unlikely. When HMS Challenger surveyed Bermuda in 1873, Sir C.W. Thomson had the stump of the stalagmite removed and also sent to the University of Edinburgh. According to David Summers, President of Crystal Caves, tragedy befell the Bermuda stalagmite in 1973 when the museum was being altered. Rather than remove the stalagmite from an upper floor, it was allowed to fall through several floors and was smashed to pieces.
The lower part of Admiral’s Cave is now under water. The fact that there are Stalagmites in the water proves that the cave was once totally dry when sea levels were much lower during an ice age.
Another view of Admiral’s Cave shows calcite mineral deposits that are known as flowstone draperies and wall rock. Mineral impurities in the calcite cause the range of colour.

Angelo D’Amato, La Trattoria By Ariana C. Francis
Tucked into Washington Lane in the center of Hamilton is La Trattoria, one of Bermuda’s best and reasonably priced Italian restaurants. La Trattoria is conveniently located for locals and visitors during shopping excursions and relaxing lunch dates. Their wood burning pizza oven is the centerpiece of the restaurant and lays claim to the islands only oven of its kind. Chef Angelo D’Amato has been with the restaurant for more than twenty years. When he first arrived to the island in 1978, he was stationed in Little Venice, a sister restaurant of La Trattoria also known for its fine Italian food and service. While growing up in Southern Italy on the Amalfi Coast, being a chef was always a goal for D’Amato. He attended a cooking school in Italy for three years and worked as a chef in Northern Italy before settling in Bermuda.

Table
Of the restaurant’s wood burning oven, D’Amato says that their pizza is made with the original Italian pizza in mind. Over fifteen kinds of pizza are offered on the menu, including the Vegetali Con Aglio pizza pictured below, which is low in cholesterol. For those who don’t speak Italian, that’s “Vegetables with Garlic” which includes assorted roasted vegetables, extra virgin olive oil, mozzarella, tomato sauce and pesto sauce.
A popular dish among regulars is the Lasagna Trattoria, layered with sheets of pasta, meat, cheese sauce and oven baked. “We cater to everyone, and aim to give a good product with good service at a fair price,” says D’Amato.
A red wine with strong aromas of cherry and black plum. Complex aromas and flavours from prolonged aging in barrels, giving notes of vanilla, toast, a smoky edge, and traces of fruits such as raspberry and plum; great body and length, balanced acidity, and pleasant, rounded tannins.

Celebrate The Rugby Classic at Robin Hood with Natasha

by Ariana C. Francis
Meet: Natasha Marshall Job Title: Manager at Robin Hood, Bermuda’s
finest pub and restaurant offering pub-style food and live sports with a great menu at a great price.
Years at Robin Hood: I started working at Robin Hood part time in 2002. After graduating in 2009 I returned to the pub and become a manager.
Her favourite part about the job? “My customers,” she says “and I also enjoy the challenges to make this business a success.” I also love that Robin Hood is a family oriented business. What’s happening at Robin Hood this month? The 26th World Rugby Classic is upon
us, and this year marks Bermuda’s 25th year of involvement. “People typically stop by for drinks on their way to the games. We offer discounts on food and drinks to those who have rugby tickets, as well as discounts for the rugby players.”
2013 Rugby Players: This year the eight teams competing will be from Australia, Italy, France, USA, South Africa, Canada, Argentina and the Classic Lions team, which is a combination of different players. “It will run from November 9th to the 16th, except there will be no games on the Tuesday or the Friday. Tuesday is reserved for the Classic Golf Tournament for the rugby teams to participate in.” While enjoying the games, grab a thirst quenching cider or beer and a delicious hearty meal!
The Jhingha Masala is a great meal to have before heading to the National Stadium. You can order this Robin Hood favourite served with black tiger shrimp in a coconut curry sauce and basmati rice on the side. Excellent with a pint of Boddingtons Pub Ale

Chefs Don’t Feel Pain by Jonny Roberts, Owner and Head Chef at Bolero Brasserie, is a beautiful coffee table style cookbook packed with exciting images and recipes. It makes a perfect Christmas gift and is available at book stores island wide as well as at Bolero Brasserie on Front Street. Both recipes featured here are from the book.
DIRECTIONS
Mix the red wine and vegetable stock together and bring to a simmer. In a heavy bottomed pan melt the butter and sweat the garlic and onion until soft. Add the rice and bay leaf and mix well with the onions and garlic until the rice is evenly heated. Turn the heat down low. Ladle the liquid in gradually, stirring the rice until most of the liquid is absorbed. Continue this process until the rice is just cooked or ‘al dente’. Season the tuna and sear in a hot pan with a little olive oil. While the tuna is searing, stir the Parmesan and butter into the rice to make a rich, creamy consistency. Add the walnuts, spinach, and Roquefort. Season the risotto with salt and pepper. Serve the tuna on top of the risotto. Enjoy with Louis Latour Pinot Noir.
This Pinot Noir reveals an intense red color, with flecks of ruby color. The nose offers a pleasant bouquet of flavors: red fruit notes release, enriched by fine blackcurrant and blueberry aromas. Ample and powerful on tasting, this wine expresses an interesting aromatic complexity, coated in soft tannins. Blueberry and coffee aromas still linger and offer an elegant and enjoyable finish Pairing COURTESY OF: APRIL GOSLING NAUDE Available at Gosling’s Stores

makes 8 small puddings in 7-8 ounce bowls
DIRECTIONS
Put the dates in a pan and cover with water and bring to a boil. Simmer until soft. Drain off the water and blend until smooth. Allow to cool. Cream together the butter and sugar until light and fluffy. Slowly add the eggs, then the flour, spices and baking powder. Add the cooked dates and mix well. Grease your pudding moulds and dollop the mix into each bowl, just over half full. Put the bowls on a deep ovenproof baking dish. Pour water in the dish so that it comes halfway up the side of the bowls. Cover tightly with tin foil and bake in the oven on 350°F for about 1½ - 2 hours. The cooked mix should be light and fluffy. Make the sauce in a thick bottomed saucepan by adding all the sauce ingredients and slowly bring to a gentle simmer. Slowly cook the sauce until it thickens and turns a deep golden colour. Serve the puddings and sauce while they are hot. Remove the puddings from the bowls and coat generously with the toffee sauce. Enjoy with Dow’s 10 Year Old Tawny Port
“10 Year” indicates and average age – this Aged Tawny Port is a blend of older wines, which offer complexity and younger wines, which bring fresh fruit flavors and vibrancy. During their long maturing period in oak casks, Aged Tawnies undergo subtle color changes: the deep red hue which characterizes Port’s youth gradually gives way to a paler reddish amber color. Dow’s is known for its characteristically drier house style. This 10 Year has a full, nutty bouquet with citrus and vanilla accents on the palate and a soft lingering finish.
