Welcome to the City of Hamilton It is my honor, as the Mayor, to welcome you to the City of Hamilton, one of the smallest cities in the world, rich in history, culture and heritage. The original Town of Hamilton was incorporated by an Act of the Bermuda Legislature in 1793. Located in a sheltered harbour in the central and largest parish, Pembroke, it was named in honour of the then Governor, Captain Henry Hamilton. The town quickly became the capital of Bermuda when the seat of Government was transferred from St. George’s in 1815. Following the completion of the Cathedral of the Most Holy Trinity, situated some 400 yards east of the present City Hall, the status of City was conferred upon the Town of Hamilton in 1897 to commemorate the Diamond Jubilee of Her Majesty Queen Victoria. The City of Hamilton has a resident population of about 1,100 and an estimated daytime population of approximately 13,340 (40% of Bermuda’s working population). This number increases significantly when tourists are added to the equation. In addition to the excellent cuisine that can be found in the city’s many varied restaurants, the shopping is easy and the historic sites are a must see. I can attest to the fact that Hamilton is a delightful capital to get around on foot. Measuring about a quarter square mile, the entire area can be walked in about 30 minutes however, exploring, discovering and enjoying the sites, both historic and new, can take hours, maybe even days. Anyone wishing to explore the City in depth can participate in the Walkway of History tour that was created as part of Bermuda’s 400th Anniversary, in 2009. Plaques have been installed in the sidewalk at various points along the route to identify important sites of architectural, social, cultural or historical significance in the City. This self-guided tour starts and ends on Church Street in front of the City Hall, and enables the pedestrian to learn about the history of the city and may be taken as a whole or in parts. Some of the sights to discover include: City Hall Opened in 1960, the building is of traditional Bermuda architecture with a Scandinavian influence in respect of the tower. Last year we celebrated the building’s 50th anniversary by reproducing a number of activities that took place at the opening, including inviting some of the workers who helped with the construction. City Hall’s amenities include a theatre, two galleries housing the Bermuda National Gallery and the Bermuda Society of Arts, the Mayor’s Parlour, and the administrative offices of the City of Hamilton. Victoria Park Bandstand Painstakingly dismantled, refurbished and reassembled in 2009 the Victorian Bandstand was originally shipped to Bermuda in 1888 to commemorate Queen Victoria’s Golden Jubilee in June 1887. Wesley Square A purpose built recreational area officially opened in July 2009 to commemorate the men and women who in 1959, with bravery, tenacity and a vision for a better Bermuda staged a peaceful theatre boycott and protested for equality, freedom and the end to segregation. City Parks There are four large public parks within the City of Hamilton that are open to the general public between 8am to sunset every day. 14 Heritage Nights Thursdays, Royal Naval Dockyard Each Thursday night commencing on May 26th and running for 18 weeks will be a wonderful celebration of Bermudian Heritage in the Victualling Yard in Dockyard. This event intends to showcase Bermuda’s rich heritage and will be demonstrating everything from cricket to croquet, kite making to crown and anchor and much more. The house, situated on the site of the former US military base, was constructed circa 1640 by the descendants of Christopher Carter. He was one of two crew members of Sir George Somers’ shipwrecked Sea Venture who remained in Bermuda when the survivors left Bermuda for Virginia in 1610. Although most 17th century Bermuda dwellings were constructed from wood, Carter House is built of stone. It is a typical example of early Bermudian vernacular architecture. The upper living level rests above a lower basement and is reached by an outside staircase. The gable ends are supported by large chimneys and the whole building is set into a hillside to protect against wind. During the time of the US military, Carter House was used as a beauty parlour. These days it accommodates the St David’s Island Historical Society Museum and hosts exhibitions of whaling, farming and other aspects of Bermuda’s history. 15 BUEI Glow Worm Cruise August 15, 16, Bermuda Underwater Exploration Institute Bermuda’s fireworm or glow worm produces bioluminescent displays during its mating activities. Through the months of May, June, July, August, September, October and November, between two and three nights after a full moon, this illuminated mating ritual can be witnessed just after sunset. In calm inlets, bioluminescent fireworms swarm to the surface of the sea and engage in sensuous dances and as they do, they give off a luminescent glow that lights up the water. Lasting only a few minutes, the dance is repeated the following month. The Glow Worm Cruise leaves from the BUEI Dock and heads to a calm area to witness this monthly ritual. Tour groups explore the laboratories and meet some of our scientists and students. When the R/V Bank of Bermuda Atlantic Explorer is at dock, groups may get the chance to see this 168-foot ocean research vessel. Guides begin the tour with a summary of BIOS’s history in Bermuda and an overview of ongoing research and education projects at BIOS. The tour lasts approximately 90 minutes. Struss first visited Bermuda in 1912. Enchanted with the island, he returned in the fall of 1913 to take more photographs. This led to his appointment in 1914 by the Bermuda Trade Development Board to take photographs for the Island’s 1915-16 official tourists’ guide, Bermuda: Nature’s Fairyland. His next visit to Bermuda was more than 40 years later in the late 1950s when he came with his wife Ethel. His photographs from that trip, exhibited in the ACE Gallery, show Bermuda on the cusp of social and economic change. The original transparencies were taken with Ektachrome colour film on a stereo camera. The modern prints are made from those original transparencies and represent hundreds of hours of digitalization and retouching. Elizabeth Mulderig Scott sits down with Elizabeth Tiny the Tree Frog. What a great children’s book. What was it that inspired you to write this book? Now in it’s 5th printing, did you ever think you would have this kind of success? Please elaborate.

I was inspired to write ‘ Tiny the Tree Frog Tours Bermuda’ when I realized that children seem to be fascinated by tree frogs. I never dreamed the book would be so successful. The fact that it has gone into fifth edition, even with an eight-year break in between printings, is amazing. You have been in three BNG Bacardi Biennials and also three Masterworks Charman exhibitions. Your exhibition work utilizes a pointillism style and focuses on Alice in Wonderland. Why have you chosen this style when you are working in a surreal arena?

I used to do needlepoint, but a girl can only make so many pillows! Then I realized that pointillism was a good replacement. The build up of color using small dots creates a strong luminosity. In these paintings I am honoring the memories of my idyllic childhood in Bermuda. I am paying homage to my favorite childhood story, ‘Alice in Wonderland’ and to the person who helped bring the story to life for me, my mamma Ruthy. Once more you have created a legacy. Today, only a very few individuals are still plaiting palmetto. It is practically a dead art, but Ronnie Chameau in particular, is busy trying to revive it. She not only teaches the art to adult, she also is teaching it to school children and every Thursday afternoon she demonstrates her craft at the Bermuda Craft Market at Dockyard. This is certainly worth seeing. In terms of durability, the fiber arts may not be in the same league as furniture, silver and architecture, nevertheless some examples have been pasted down through the generations and Bermuda made textiles as well as palmetto baskets and hats can be seen in such museums as; St. George’s Historical Society, Carter House, St. David’s, Natural History Museum, Bermuda Aquarium in Flatts Village and the Bermuda Historical Society Museum at Par-la-Ville park in Hamilton.

Based on the popularity of Tiny in Bermuda, I have been inspired to do a series in Europe using a dinosaur named Toppy instead of a tree frog. The first book, which is in the process of being produced, takes place on the Jurassic coast. “ Toppy Tours the Dinosaurs” has already been pre-ordered by Daunt’s bookstore in London. Also, I have just produced a book entitled: Leo the Lizard Tours Capri. It’s been selling so well that we have gotten orders from other places on the Amalfi coast. The schools in Capri might be using the book as a learning tool as it is written in both English and Italian. This is perhaps the greatest thrill for me as the point of writing the books in the first place is to encourage children to love reading.

Gallery owner Colin (Dusty) Hind has developed an extraordinarily close relationship with the artists, many of who now work exclusively on commissions for the Gallery. Lost in the Northern Atlantic The recent events have put in the limelight the Islands of Bermuda, situated a thousand kilometers off the coast of the eastern U.S…Those isles are in fact a coral atoll…lost in the northern Atlantic. Thus the Editor of the French magazine Géographia in July 1953 opens an article on the then new world order at Bermuda. In the essay, retired Rear Admiral Adolphe-Auguste Lepotier, a visitor to Bermuda in 1943, gave his views on “this tropical paradise that got lost north of the Tropic of Cancer”. Due to its geological structure and geographical position, the island was becoming “in the current state of world political and economic affairs an important strategic base and also the ‘Riviera’ for New Yorkers”. Bermuda was familiar with the Free French navy, which had some 50 ships and almost 4,000 men serving with the Royal Navy. The most Cover of 1953 issue of the famous of the fleet to visit the island was the magazine Géographia mega-submarine Surcouf, which had its own ensign with the initials “C G”, in honour of the Free French leader. On 12 February 1942, the submarine left Bermuda for the Pacific theatre, via the Panama Canal but was never seen again. The massive French submarine Surcouf

37 The following year, Captain Lepotier arrived at Bermuda in command of a warship flotilla of the Free French Navy, for refitting and supply. He was captain of the Tempete, in the company of the Simoun, both Bourrasque Class destroyers. Other ships in the group included Elan Class minesweepers Gazelle, Commandant Bory and Commandant Delage. The officers and crew had a very pleasant stay on the island, as attested by letters of thanks written to the Bermuda Ladies League, according to information at www.Bermuda-online.org. Lepotier’s article reminds us of the unique position of Bermuda as the northernmost coral atoll, bathed by the warm Gulf Stream, the largest “river” in the world. Ensigns of Free “That trans-Atlantic ‘central heating system’ starts French Navy straight out of the Florida Channel, then curves eastward as if to serve Bermuda as its first and favorite client, snubbing the American Coastline which is subject to the icy Labrador Current.” He mentions the importation of African slaves, who acquired “excellent reputations as able seamen and fishermen, helping in the design of a special type of rig called Bermuda sails”. He then discusses the building of the American bases, as “I was stationed on the island in the spring of 1943 while the group of escort ships I was in command of was renovated at the Ireland Island Arsenal and Base. I witnessed then those rapid developments and transformations of the local geography that were necessitated by strategic considerations” of the war. After reviewing its charms for tourists, Lepotier concludes: this “oasis” that some caprice of geography positioned amid abyssal depths in this predestined point hides beneath its poetic charm some hydrographic realities that make it one of the major strategic bases of the modern world. To underscore the hydrographic realities, Lepotier’s chart emphasize the channels and anchorages of vital naval importance, the lands of Bermuda almost a faded backdrop: “the ‘Honeymoon Islands’ are beaded around those ‘strategic points’.”

Do You Know… … About the first U.S. Military Base in Bermuda? In October 1917, after the United States entered the First World War, the first of many convoys of American Submarine Chasers anchored in Hamilton Harbour on their way to France. In March 1918 White’s Island in Hamilton Harbour was leased to the United States Government as a stores depot and a number of buildings were built as warehouses. Officially this was the U.S. Navy’s Naval Base No. 24.

The only letter mailed at the Isle of White Navy Base that is known to have survived. It was marked ‘Sailors Mail Foreign Service’ and mailed on March 22, 1919.

Sent by an officer stationed on USS Tallahassee, this postcard was mailed in Bermuda on March 16, 1919.

A postcard sent by a sailor on USS Leonidas on May 8, 1919. It is interesting that ‘BERMUDA’ and ‘B.W.I.’ is part of the ship’s postmark. In the early days of Naval Base No. 24, the USS Prometheus – the U.S. Navy’s largest repair ship – was stationed in Bermuda to service the many ships crossing the Atlantic for France. She was first replaced by USS Alert, and later USS Tallahassee, a submarine tender. Another US Navy vessel that came to Bermuda regularly was the USS Leonidas, a tender capable of supplying two squadrons of submarine chasers. After the war she escorted convoys of homeward bound submarine chasers from the Mediterranean via the Azores and Bermuda back to New York. To meet the needs of the hundreds of US sailors who were in Bermuda regularly, a group of about twenty American ladies living in Bermuda formed ‘The American Navy Club’ in December 1917. Rooms were loaned free of charge by the Bermuda Drug Company and opened on Christmas Day with Bermuda’s Governor Sir James Willcocks as guest of honour. Countless US sailors were entertained at ‘The American Navy Club’. There was always a well-cooked meal being served; there were weekly dances held; and there was a writing room well-stocked with Bermuda postcards for those wanting to write home. With the end of World War I and most of the ships having returned to the US, the American flag was lowered on White’s Island in May 1919 and Naval Base No. 24 ceased to exist. – Email comments to: netlink@cwbda.bm

Golf… Never Give Up During the US Open held at Congressional Country Club, the United States Golf Association asked Ken Venturi to present the US Open Trophy to the 2011 Champion. Venturi agreed and made his way to Washington D.C. Prior to the tournament, he walked the course and reflected on his US Open victory that happened at this same golf course back in 1964. In those days the final 36 holes were played on the same day. On that Saturday, temperatures soared above 100 degrees. Venturi had finished the first 18 holes and lay lifeless on the floor of the Congressional locker room. His core body temperature had reached an incredibly high 106 degrees…105 degrees can cause damage to the human brain. The doctors looking over Venturi suggested that it was suicidal to attempt the final 18 holes. Venturi remarked that it would be better to give it a shot than stay in the position he was in. With that, Dr. Everett escorted Venturi to the first tee. Venturi explained that he couldn’t remember anything about the front nine except his own putt on #9 before finally gathering himself on the back nine. He played with Raymond Floyd and when the round was completed, Venturi had won the Open. He handed Floyd his scorecard and had failed to record any of his competitors’ scores. The heat had almost certainly beaten him, but his will to win prevailed. If there is a moral to this story it may be to keep yourself hydrated when playing in high temperatures with high humidity. But I like to think that the moral is one about courage, determination and the desire to give it your all. We have had days on the links that challenge our ability. We have had moments when we find it easier to quit than keep going. And just when you think that the game has tortured you beyond wits end, look over your shoulder and know that there are those who have bigger challenges they overcome everyday. One of basketball’s great coaches Jim Valvano announced to an arena full of fans knowing that he was dying of cancer, “Never Give Up”!

Business… Expatriate Puzzle Expatriates who are offered work in Bermuda must solve an impossible puzzle before they are allowed to work on the Island. Star Trek fans will be familiar with the concept of the Kobiyashi Maru. It was an examination which there was no way to win, a test of how a man might act in the face of certain death. Captain Kirk didn’t believe in no-win situations. He reprogrammed the simulator running the test, and won. So it is with the expatriate exam. It’s a perfect catch-22. There is no solution; one must change the rules of the game in the face of certain career death. The Bermuda test shows up in the most innocent of packages. Foreigners hired to work in Bermuda must submit a chest x-ray along with all their other documents. Doesn’t sound like much, does it? That’s what I thought, back in the day, when I booked an appointment at a hospital for my chest x-ray. It was a chilly morning at the start of winter. I stood around without my shirt on for about an hour in an unheated room while waiting my turn for the x-ray. Then I was squeezed between two giant glass plates. Everyone left the room (except me) while the deadly x-ray machine did its work. Then they all came back in and I was sent off to wait for the results. Eventually, the nurse appeared to tell me I had a great chest. (No, I didn’t make the obvious comment.) She asked why I had come in, since no doctor had referred me. I explained about Bermuda’s x-ray specs, and asked if I might now have the x-ray. “Oooh, no,” the nurse said, “it’s hospital property. It has to stay in the hospital. It’s ours. You can’t have it.” “Can I buy it?” I asked? “Ooh no, what would you do with it?” I explained again about Bermuda. “No, dear,” she said, “the public can’t have their medical records. Wouldn’t do. Ooh, no.” So now what? No x-ray, no job. This was the Kobiyashi Bermuda. It was time to change the rules. I waited until the nurse left the room and stole the x-ray. Borrowed it, I mean. It went under my coat and I went through the door. It was a shameful act that would hurt no one and lead to me spending 35 years on the Rock. I was laughing. Fate laughs at those who laugh. The Post Office — that great British institution that has never really grasped that it is supposed to deliver the mail, not throw it away — refused point-blank to accept an envelope as large as the x-ray when I tried to post it to Bermuda. It was the Kobiyashi Post Office. Time to change the rules. I went out to Heathrow, from which flights to Bermuda originated back then, and paid a guy best part of $100 to hand-deliver the envelope to Immigration when he arrived on the Island. Jim Kirk has nothin’ on me.

The Dockyard locked its gates in 1951. Since then, the seventy-five acre site has been painstakingly renovated to accommodate museums, a movie theatre, restaurants, The Arts Centre and the Bermuda Craft Market. NATIONAL MUSEUM OF BERMUDA Ireland Island, Sandys Located in the Keep of the Royal Naval Dockyard, this museum has become one of the island’s most frequently visited destinations since being opened by HM Queen Elizabeth II in 1975. Its popularity has increased even more with the recent restoration and opening of Commissioner’s House, a monolith that crowns the site and is used for both exhibiting and entertainment purposes. Elsewhere on the complex, exhibits chronicle both Bermuda’s association with the Royal Naval and its own interesting maritime history. In addition to a collection of Bermuda-made boats, there are relics from the Sea Venture, maps, the famous Tucker Treasure—collected from the sixteenth-century Spanish galleon the San Pedro—and many more artifacts. Nineteenth century Hamilton Postmaster and Assemblyman William B. Perot erected the building on the edge of his property, Par-la-Ville, in 1842 and ran it as a post office for 20 years. FORT HAMILTON Happy Valley Road in Pembroke on the outskirts of Hamilton A sentinel that has been protectively overseeing Hamilton Harbour since 1889, Fort Hamilton with its moat gardens, green lawns, musty dungeons and never-tried artillery is worth a visit. TUCKER HOUSE Water Street The only museum in St. George’s furnished as a period residence, Tucker House offers a glimpse into the lifestyle of a prosperous eighteenthcentury Bermudian merchant. Built around 1752, Tucker family treasures are in evidence throughout the house, including fine family portraits by Joseph Blackburn. A Bermuda National Trust property, Tucker House is open Tues Friday, 10:00am - 2:00pm Admission $5. 441 297-0545 NATIONAL TRUST MUSEUM AT THE GLOBE HOTEL Globe Hotel, King’s Square Across the street from St. Peter’s Church, this distinctive dwelling was built in 1700 by Governor Samuel Day. During the American Civil War its upper floor was occupied by a Confederate Shipping Agent from where he organized the shipment of arms, uniforms and war supplies through the Union blockade to the South. It now houses the Confederate Museum and hosts the “Rogues and Runners” exhibit, highlighting Bermuda’s participation in the American Civil War. Open Monay - Sat. 10am-4pm. PETER’S CHURCH Duke of York Street Situated in appropriate loftiness above the main street of St. George’s, St. Peter’s Church is one of the island’s most beloved landmarks and is the oldest anglican church continuously occupied in the New World. The first church on the site was constructed in 1612 of native cedar and a thatched roof. This original edifice was replaced seven years later by a more permanent structure that lasted almost a hundred years, until the hurricane of 1712. Following this disaster, the church was again rebuilt. Open Mon. to Sat. 10am-4pm. Anglican service 11:15am Sundays. THE OLD RECTORY Broad Alley, St. George’s, behind St. Peter’s Church Built in 1699, this charming cottage on one of the numerous picturesque back streets in St. George’s is one of Bermuda’s oldest houses. Acquired in 1700 by Captain George Dew, an unsuccessful privateer who became a St. George’s assemblyman, The Old Rectory acquired its current name when it became the residence of the Rev. Alexander Richardson in the last quarter of the eighteenth century. Outisde viewing only. ST. GEORGE’S HISTORICAL SOCIETY MUSEUM Duke of Kent Street and Featherbed Alley Built around 1734 as a private residence, Mitchell House is a fine example of eighteenth-century Bermudian domestic architecture and has been home to the St. George’s Historical Society since 1920. Adults $5, Children under 12 $2 BERMUDIAN HERITAGE ASSOCIATION Samaritan’s Lodge, Intersection of York and Water Streets St. George’s newest museum was formed in 1994 to preserve and document the history of black culture and achievement in Bermuda. Displays include a fascinating assortment of memorabilia relating to the many areas in which blacks have made a contribution since first arriving on the island in 1616: shipbuilding, piloting, construction, nursing, music, sports and politics, to name a few. TOWN HALL AND THE STATE HOUSE Town of St. George Town Hall, the handsome building commanding King’s Square and bearing the town crest was begun in 1802, a few years after the Corporation of St. George’s was founded in 1797. The State House, located up a gentle elevation behind Town Hall, is one of the island’s oldest, most historically

72 important buildings. Erected around 1620 by Governor Nathaniel Butler, the State House is open to the public 10am-4pm on Wednesdays only. THE UNFINISHED CHURCH Duke of Kent Street, St. George’s The impressive Gothic vestige that looms over the town of St. George’s was begun in 1870 as a replacement for St. Peter’s, which had fallen into a state of serious disrepair. Designed by William Hay, the Scottish-born architect who later drew the plans for Hamilton’s cathedral, the St. George’s church was abandoned in 1899 when near completion. FORT ST. CATHERINE St. Catherine’s Point, St. George’s Fort St. Catherine stands on the site of one of the four towers that Governor Richard Moore erected along Bermuda’s coast around 1613. None of these original towers, the first English forts in the New World, survive. The present, completely restored structure dates from the mid-nineteenth century and is home to fascinating exhibits including military guns and weapons. Open Mon-Fri 10:00am-4:00pm. CARTER HOUSE Southside Road, St. David’s Carter House was probably built in the 1720s by John Hayward and his wife Martha, reputedly a descendant of Christopher Carter, one of the two Sea Venture survivors who stayed behind when the vessel’s other passengers continued on to Virginia in 1610. Acquired by the St. David’s Historical Society, this small house with its unusual ‘welcoming arm’ stairs has been converted into a museum that commemorates the pre-war agrarian traditions of St. David’s. Open Saturday 10:00am-4:00pm. ST. DAVID’S LIGHTHOUSE Mount Hill, St. David’s Constructed of Bermuda stone, this 55-foot structure is one of two local lighthouses. Lit for the first time in 1879, its fixed white light enabled navigators to take cross bearings with the flashing beacon emitted by Gibbs Hill lighthouse way up the coast in Southampton. Open 9-4, Mon-Fri from Nov - Mar. Admission is free. CRYSTAL CAVES & FANTASY CAVES Wilkinson Avenue, Bailey’s Bay Two young boys discovered this magical underground world comprising stalactites, stalagmites and a clear, fifty-five foot deep lake by accident in 1905. Subsequently it has become a leading attraction for visitors who can now also visit a nearby sister site, Fantasy Cave. A café and a gift shop are also located on the premises. Crystal Caves, which is on the bus route between Hamilton and St. George’s, is open seven days a week except on public holidays that occur during the winter months. Open 9am - 5pm. PASTA E FAGIOLI BEAN AND PASTA SOUP Ingredients

2 15-oz cans of white beans, drained and rinsed 2 cups canned, peeled tomatoes in sauce 2 cups water 1-quart (4 cups) chicken stock 2 tsp salt 1 tsp freshly ground black pepper 1 1/2 cups ditalini pasta 2/16/10 3:55 PM

For the oil bath: Ingredients 1 cup extra-virgin olive oil 4 garlic cloves 2 1/2 bunches of rosemary

4 sage leaves 1 tsp black peppercorn 2 thyme leaves

Directions Pour the olive oil into a large stockpot over medium heat. Add the pancetta and cook until it’s lightly browned. Add the bay leaves, and stir in the oregano and thyme. Add the onion, carrots, and celery, sautéing for approximately 6 minutes. Add the garlic and cook for one more minute. Stir in the potatoes, beans, tomatoes, water, and chicken stock. Add salt and pepper, to taste. Bring the mixture to a boil. Once the potatoes are cooked, remove them, and puree them slightly with a food processor or mixer. Add

77 them to the soup gradually, until the stock is nice and thick. Bring to a boil again, and then stir in the pasta. Turn the heat down to medium, cooking for approximately 8 minutes or until the pasta is al dente. In a different sautĂŠ pan, combine all the ingredients for the oil bath. Bring to a boil over medium heat, until the garlic darkens. Remove the garlic cloves, splash the oil onto the soup, and stir. Lastly, remove the bay leaves from the soup and serve immediately. Leftover pasta e fagioli can be stored in the refrigerator for up to one week. Chef Livio: My Mamma was the best at making this soup, which has a wonderful flavor! Recommend Wine: Banfi Cabernet/Sangiovese Col-Di-Sasso LASAGNA ALLA BOLOGNESE MEAT LASAGNA, BOLOGNA STYLE Servings: 6 Ingredients for the Ragu Bolognese 5 tbsp extra-virgin olive oil 3 tbsp butter 1 carrot, finely diced 1 medium onion, diced 1 stalk celery, finely diced 1 clove garlic, sliced 1 lb beef, ground 1 lb pork, ground 1/4 lb sausage, ground 1/2 small can tomato paste 1 tin of peeled tomatoes 1 bunch of rosemary and 1 bunch of sage (wrapped in string) 2 tbsp flour 1 cup dry red wine (Merlot or Cabernet) Kosher salt and freshly ground black pepper Parmigiano Reggiano cheese, grated Directions In a saucepan, heat the olive oil and butter over medium heat. Add the carrots, onions, celery, garlic, and string-wrapped rosemary and sage. Sweat over medium heat for 10 to 15 minutes, until the vegetables are translucent and soft, but not brown. Add the beef, pork, and sausage over high heat, and stir into the vegetables. Sprinkle in the flour, add the wine, and let it evaporate for 2 minutes. Add the tomato paste and peeled tomatoes, then simmer over medium to low heat for approximately 2 hours. Season with salt and pepper to taste, and remove from the heat. Top with Parmigiano Reggiano cheese. Recommend Wine: Terlato Vineyards Russian River Pinot Grigio
