FAREWELL george FAREWELL george

After just 5 1/2 years, Bolero Brasserie’s ‘George’ will be leaving us and heading back to Greece. If you have been to Bolero, you know George. His kind nature and warm welcoming smile at the top of the stairs never goes unnoticed and often sets the standard for the rest of your Bolero experience. He will still be around for most of the month of December so stop by, say farewell and wish him luck in his future journeys. If you haven’t been to Bolero, it is a must for lunch, dinner or even a quiet dessert accompanied by a glass of port on the patio over-looking Front Street. George Athanasiadis, originally from Macedonia, (The Greek Macedonia) has been here at Bolero from the very beginning. The restaurant was formally called Tuscany’s. When Jonny Roberts took over he asked George and Nicholas to stay on board. Bolero was born and both are still here with Jonny today. A few questions for George… Tell us about your most memorable times here at Bolero. The Christmas parties, the ones that companies and people have here. It’s always so much fun, everyone is so nice, we have a DJ, sometimes we dance with them. In general when we see people leaving happy after such a good time, it is a great moment. Do you recommend a dish? Foie gras with George’s Jam or another favorite is surf and turf with Guinea Chicks. For dessert I recommend Sticky Toffee pudding with Vanilla Ice Cream. What do you enjoy most about Bermuda? The water, swimming, snorkeling, friends, boats, it’s such a nice quiet life. What are your plans when you go back home? I am going to be an organic farmer. I used to do this job for 6 months; a friend of mine already has a business. I am going to help him expand the business and we will see from there! You never know, I might be back to Bermuda fast.

BA HUMBUG by Roger Crombie Christmas is upon us. Don’t panic: it’s still a few weeks away. The best advice I can offer is to book three weeks in the Seychelles, starting on December 15. Failing that, ask your doctor to prescribe something that will put you in a coma for about the same length of time. I’m not a fan of Christmas, although businesses enjoy the added economic activity that the period of good will induces. Some businesses make or break their year with December’s widespread open walletry. The last Christmas in which I participated in the elevation of the consumer economy was seven years ago. I had become engaged to a young American filly, and was invited to her family’s Christmas Day festivities in Virginia. When I explained my reservations, I was assured it would all be very low-key. The family was her Dad, two sisters and a brother-in-law. I’d known them all, on and off, for 30 years, but had never spent Christmas with them. As a guest, I wanted to bring gifts for everyone who’d be there. I undertook what was, for me, an extensive shopping expedition. I find even buying groceries can be a burden, since I lack the shopping gene. I was able to find, nevertheless, something interesting, pleasant and significant for everyone in my soon-to-be family. For my moll, a range of subsidiary items had been purchased for a later, more personal Christmas Day festivity back at her pad. I spent about $100 a head on each of the others, an amount vastly greater than I’d ever spend on myself. It seemed like enough at the time. Little did I know. We gathered at her Dad’s house on the Big Day and I added my gifts to an alarmingly large pile. It wasn’t that there were so many presents under the tree, although there were dozens; it was that several of them were of an extraordinary size and shape. In that house, Christmas was a time for spending real money: not just folding money or plastic, but industrial amounts of moolah delivered by truck or perhaps bus. My presents were opened first. What an honour, I thought. My brotherand sisters-in-law-to-be were all grateful for their boxed CD or DVD sets. My prospective father-in-law opened the enormous book I’d bought him, said “How nice,” and then added: “Now can we open the real presents?” I’d have been offended, but it became immediately apparent that $100 a head had missed the mark by a mile. Among my loot, for example, was a sorcerer’s pipe engraved with the timeless phrase ‘Cromdalf the Grey’. Someone received a hand-carved wooden giraffe, seven feet tall, from Africa. Round upon round of gifts were opened, each more wildly imagined and expensive than the one before. I went from being embarrassed to thunderstruck, to deeply worried that I was marrying into a branch of the Addams Family. My gal threw me over within the year, and I haven’t done Xmas since. Talk about your happy endings.

Welcome to the City of Hamilton It is my honor, as the Mayor, to welcome you to the City of Hamilton, one of the smallest cities in the world, rich in history, culture and heritage. The original Town of Hamilton was incorporated by an Act of the Bermuda Legislature in 1793. Located in a sheltered harbour in the central and largest parish, Pembroke, it was named in honour of the then Governor, Captain Henry Hamilton. The town quickly became the capital of Bermuda when the seat of Government was transferred from St. George’s in 1815. Following the completion of the Cathedral of the Most Holy Trinity, situated some 400 yards east of the present City Hall, the status of City was conferred upon the Town of Hamilton in 1897 to commemorate the Diamond Jubilee of Her Majesty Queen Victoria. The City of Hamilton has a resident population of about 1,100 and an estimated daytime population of approximately 13,340 (40% of Bermuda’s working population). This number increases significantly when tourists are added to the equation. In addition to the excellent cuisine that can be found in the city’s many varied restaurants, the shopping is easy and the historic sites are a must see. I can attest to the fact that Hamilton is a delightful capital to get around on foot. Measuring about a quarter square mile, the entire area can be walked in about 30 minutes however, exploring, discovering and enjoying the sites, both historic and new, can take hours, maybe even days. Anyone wishing to explore the City in depth can participate in the Walkway of History tour that was created as part of Bermuda’s 400th Anniversary, in 2009. Plaques have been installed in the sidewalk at various points along the route to identify important sites of architectural, social, cultural or historical significance in the City. This self-guided tour starts and ends on Church Street in front of the City Hall, and enables the pedestrian to learn about the history of the city and may be taken as a whole or in parts. Some of the sights to discover include: City Hall Opened in 1960, the building is of traditional Bermuda architecture with a Scandinavian influence in respect of the tower. Last year we celebrated the building’s 50th anniversary by reproducing a number of activities that took place at the opening, including inviting some of the workers who helped with the construction. City Hall’s amenities include a theatre, two galleries housing the Bermuda National Gallery and the Bermuda Society of Arts, the Mayor’s Parlour, and the administrative offices of the City of Hamilton. Victoria Park Bandstand Painstakingly dismantled, refurbished and reassembled in 2009 the Victorian Bandstand was originally shipped to Bermuda in 1888 to commemorate Queen Victoria’s Golden Jubilee in June 1887. Wesley Square A purpose built recreational area officially opened in July 2009 to commemorate the men and women who in 1959, with bravery, tenacity and a vision for a better Bermuda staged a peaceful theatre boycott and protested for equality, freedom and the end to segregation. City Parks There are four large public parks within the City of Hamilton that are open to the general public between 8am to sunset every day. They are: Fort Hamilton, Barr’s Bay Park, Par-la-Ville Park and my favorite Victoria Park. Again, welcome to Hamilton, Bermuda at it best. For more information visit www.cityofhamilton.bm.

Lexy CorrEia Please tell us about your art show on during the month of December. The show is called The Elements. It is a collection in acrylics featuring air, earth, fire and water with an esoteric theme. I have painted Stonehenge, the Moai of Easter Island, crop circles, and constellations for this show. It opens on December 8th at the Art Centre in Dockyard and runs until January 2012. There will be aprox 23 pieces. Tell us about the commissions you do that donate partial proceeds to the S.P.C.A. You were in this year’s Charman Show. Tell us a little more about that painting, where the idea came from, etc. I was inspired by the song released last year, “Proud to be Bermudian”. The painting features two inter-racial children smiling and waving a Bermuda flag. I plan to have bags, t-shirts, etc. created with the image and all proceeds go towards the art programs in public schools. We can’t

25 depend on the government to do everything. They have had to drop a lot of things because of the way the economy is going. I feel the arts are too important to cut back on so I want to do my part to help. Once I find some sponsors to get this going, it will be implemented.

What do you see for the future in arts here in Bermuda? I think Bermuda could be an art destination and I’m even working on an annual artists’ retreat to start in 2013. I belong to a group, BARU and we have talked about doing a big show and having a set price for everything, such as $100 for any piece in the show. It’s a chance for lesser known artists to get their name out there. It would create an opportunity for the average person to start their art collecting and really get a feel for what they like. Do you have anything special planned for the future? I have wanted to move into oils but was looking for a technique that suited the direction my work is going in, which is in the Surreal

I discovered Mische, which is a slow and complex painting technique that gives better effects of depth, transparency and a smoothness of colours and contours not seen in other painting techniques. Illusionistic effects are enhanced by the many glazing layers that alternate between oil and egg tempura emulsion. Mische was lost and then revived by years of research by Prof. Ernst Fuchs who mentored Prof. Phil Jacobson, who is now my mentor. I will study under him early next year and I am tremendously excited about this! You and your husband have a few exciting companies, please tell us a little about them and what kind of services you offer. We own DNA Group which includes my husband’s graphic design and marketing Company, Fusion. We also recently launched an online-only art supplies store called DNA Creative Shoppe which will eventually expand into craft and scrapbooking supplies. Bermuda’s Floating Docks At the end of the first decade of the 1800s, all the families on Ireland Island were removed from homes they had occupied for nigh on two hundred years for the creation of a ‘dockyard’ for the Fleet of the Royal Navy in the western North Atlantic. A dockyard is so named because it has an industrial ‘yard’ with workshops and a ‘dock’ for repairing ships and thus a drydock, a basin in the land, was needed. The local rock was inappropriate for a normal drydock and so the British invented an iron ‘floating dry-dock’ in the 1860s. The first such ‘Floating Dock’, Bermuda, was the largest piece of ironmongery ever made and it could accommodate any ship then afloat. It was designed specifically to give the Bermuda Dockyard a drydock at long last. Over a hundred years, the Bermuda Dockyardard had five floating docks: HM Floating Dock Bermuda (1869–1908); Admiralty Floating Dock 1 (1902–1946); AFD 28 (1941–1946); AFD 5 (1946–1951) and AFD 48 (1946–1972). AFDs 28 and 48 were small, while the other three were all the largest in world. After launching in September 1868, Bermuda was towed across the Atlantic via the Azores in 33 days. The lead ship from the Azores was HMS Warrior, appropriately the world’s first iron-hulled warship towing the first

29 iron dry-dock. Bermuda was sold for scrap and ‘towed out of Camber by the Stm. Tug Gladesfin, Stm. Tug Powerful behind on Monday the 9th March 1908 at 2.30 p.m.—to Spanish Point to complete breaking up’. Her bones and the two end caissons lie in that bay to this very day. AFD 1 was the replacement for the Bermuda. Shortly after arrival in 1902, the dock successfully raised HMS Dominion, which at 17,500 tons was several thousand tons over the capacity. After lifting 100 ships in 1945 alone, AFD 1 was sold to Regusci y Voulminot Ingenieros at Montevideo, Uruguay, one of the largest and most important harbours in South America. The dock left Bermuda in December 1946, after half a century of sterling duty. AFD 5 arrived in Bermuda in 1946, but had to be moored in Port Royal Bay, for berthing arrangements in the South Basin were not yet completed, including two 80 ft. booms, ‘the largest welding job ever done in Bermuda’. The dock had twice the lifting capacity of AFD 1, which it replaced. On 25 August 1948, it was towed from Port Royal by the tugs Justice and Eminent to the wharf in the South Basin, there to work for a mere three years. In 1951, AFD 5 was taken to Falmouth, England, where it served until 1966, when it was bound for the United States, but broke in half and sank 800 miles into the Atlantic. Its last job was to dock a floating dock acquired from Germany after the war. AFD 28 was the first of two small docks that were at the Dockyard and it had been sent from the United States for the duration of the Second World War. Arriving in late December 1941, it left the island in the summer of 1946, but sank on the passage home. AFD 48 replaced AFD 28 at the North Basin wharf in late 1946 and was there employed for the next 26 years. It was sunk to the west of Dockyard in August 1972, ending its life, as did the first dock, Bermuda, as a shipwreck.

The only known copy of the Royal Gazette published on January 8th, 1828

… About the Beginnings of the Royal Gazette? The strained relations between Governor John Hodgson and Charles Rollin Beach, publisher of Bermuda’s first newspaper The Bermuda Gazette at the time, led to Mr. Beach leaving Bermuda in 1924. His departure left Bermuda without a newspaper. In fact Governor Hodgson was so displeased with Mr. Beach that as early as 1809 he brought Edmund Ward to Bermuda to start a rival newspaper to The Bermuda Gazette. This was to become the first Royal Gazette. Unfortunately Edmund Ward run afoul of the next Governor, Sir James Cockburn, who removed his commission as ‘King’s Printer’ in 1816 and forced Mr. Ward to return to Halifax where he continued to publish a newspaper. This brought an end to Bermuda’s first Royal Gazette and it

Donald McRhee Lee who published the Royal Gazette for 55 years

would be another twelve years before the present Royal Gazette started publication in 1828. It was the next Governor, Sir William Lumley, who authorized a onetime payment of £500 to bring Donald McPhee Lee as “Printer to the King’s Most Excellent Majesty” to Bermuda. Donald McPhee Lee was born in Charlottetown, Prince Edward Island, in 1804. Robert Lee, his father, was Commissary General with the military and stationed in Bermuda. It seems that he successfully put forward his son’s name as ‘King’s Printer’ following the turbulent period of Sir William Lumley. Having embarked at Halifax on October 29th, 1827 in the Bermuda schooner Sally Ann, his eleven-week voyage to Bermuda was a harrowing experience to say the least. The Captain of the Sally Ann became blind, the mate was illiterate and could not navigate, and the Sally Ann was painted in a colour used by pirates, with the result that passing ships refused any help. Captain W.E. Meyer tells the story of this trip in some detail in his book ‘Wrecked on the Bermudas’. With Donald McPhee Lee missing for months and presumed dead, his brother David Ross Lee produced the first two issues of the Royal Gazette on January 8th and 15th, 1828. Once Donald McPhee Lee arrived, he produced the third issue on January 22, in a larger four-page format, using the new type he had brought from Halifax. He continued to publish the Royal Gazette for the next 55 years, until just two weeks before his death in 1883. It is interesting that the very first issue of the Royal Gazette included the following promise that ‘The pages of the Royal Gazette will never be profaned by the scandals of private malice or the bitterness of party contention; but will be devoted to extracts from the most approved literature of the day and to the best original compositions that can be obtained within the Colony’.

Making the Game More Fun? The USA golf market lost 1 million golfers between 2009 and 2010. While there are an estimated 27 million golfers remaining in the game, the PGA of America and other industry allies hope to grow this number to 40 million by 2020. The National Golf Foundation has offered a list of suggestions for taking the pressure off of golfers to make the game more fun. I am all about fun, but some of these might make Old Tom Morris roll over in his grave.

Not keep score. (I can live with this one – new golfers shouldn’t worry about their score.) • Play from the shortest tees or start from the 150-yard marker. (I’m ok with this one too!) • Give yourself a better lie by rolling the ball around a little. (My foursome plays this rule every weekend.) • Tee the ball up anywhere. (Another one of my foursomes favorites – make sure you park the cart between your ball and your fellow competitor to get the most out of this idea!) • Only count swings when you actually make contact with the ball. (Wait a minute. Was the NGF Representative playing with my group when he came up with these?) • Throw the ball out of a bunker after one try. (Yep, he absolutely was playing with my group) • Forget about a ball that may be lost or out of bounds. (That’s right! As long as I have more ammo in the bag, just reload and fire away!) • Drop a ball where you think it might be … or where you wanted it to be. (Wow – this one may be taking fun to the extreme!) • Just chip and putt on a hole when you feel like it. (I would add a good throw if you like!) • Pick up in the middle of the hole and enjoy the scenery of the great outdoors. (Don’t forget to load the cooler and picnic basket!) • Skip a hole, eat your lunch, have a cool drink, or just relax if you need a break. (Forget the previous comment. This one has it covered.) • Play any number of holes and call it a round of golf: three, six, nine, and twelve. (Not a terrible idea, but maybe we should include only playing the even or odd holes.) • Move your ball away from trees, rocks or very hilly lies. (Best one yet! Give me a clear shot with no chance of breaking a club and I am golden!) • Play golf in your sneakers. Be comfortable! (Bring along a lounge chair and your MP3 Player!) • Get enthusiastic! High fives, fist pumps and big smiles are encouraged. (Nothing needs to be said on this one!) • Play golf just for fun! (They could have skipped the previous 15 ideas and this one would have covered it all!) Take a friend to the course! Have fun and remember it’s just a game!

Envisioned as a strategic British military outpost that would make Bermuda the “Gibraltar of the West,” the Royal Naval Dockyard was built by slave and convict labour. The Dockyard locked its gates in 1951. Since then, the seventy-five acre site has been painstakingly renovated to accommodate museums, a movie theatre, restaurants, The Arts Centre and the Bermuda Craft Market. NATIONAL MUSEUM OF BERMUDA Ireland Island, Sandys Located in the Keep of the Royal Naval Dockyard, this museum has become one of the island’s most frequently visited destinations since being opened by HM Queen Elizabeth II in 1975. Its popularity has increased even more with the recent restoration and opening of Commissioner’s House. Elsewhere on the complex, exhibits chronicle both Bermuda’s association with the Royal Navy and its own interesting maritime history. In addition to a collection of Bermuda-made boats, there are relics from the Sea Venture, maps, the famous Tucker Treasure—collected from the sixteenth-century Spanish galleon the San Pedro—and many more artifacts. COMMISSIONER’S HOUSE National Museum of Bermuda, Royal Naval Dockyard Located within the confines of the National Museum of Bermuda, Commissioner’s House dominates this complex and entire surroundings from its elevated position. Largely constructed between 1823 and 1828, this commanding Georgian ‘house’ epitomizes British imperial style, power and engineering wherewithal during the nineteenth century. An experimental building in several regards, Commissioner’s House may have been the first domestic project anywhere to use cast iron to support its floors and roof. Rescued from near dereliction through a protracted, award-winning restoration, the building—one of the most important on the island—now houses

A great way to see Bermuda and all its attractions Regularly scheduled buses operate at frequent intervals to most of the destinations throughout Bermuda which visitors may find of interest. Bus stops are indentified by pink and blue poles. Poles that are pink indicate service inbound to the City of Hamilton. Poles that are blue indicate service outbound from the City of Hamilton. Admission is free but donations are welcomed. 295-2487 THE PEROT POST OFFICE Par-la-Ville Park, Queen Street, Hamilton The quaint little edifice at the bustling junction of Queen and Reid Streets has historical significance that belies its unassuming size. Nineteenth century Hamilton Postmaster and Assemblyman William B. Perot erected the building on the edge of his property, Par-la-Ville, in 1842 and ran it as a post office for 20 years. In 1848 he created his famous ‘Postmaster Stamps’ of which only a handful have survived. FORT HAMILTON Happy Valley Road in Pembroke on the outskirts of Hamilton A sentinel that has been protectively overseeing Hamilton Harbour since 1889, Fort Hamilton with its moat gardens, green lawns, musty dungeons and never-tried artillery is worth a visit. With spectacular views of Hamiton Harbour and the Great Sound beyond it, it is a great place to pause and have a picnic. Open daily 9am-5pm. Admission is free. GOVERNMENT HOUSE Langton Hill, Pembroke This imposing structure is the official residence of Bermuda’s governor, who represents H.M. Queen Elizabeth II. Completed in 1892, Government House was designed by Scottish architect William Hay, whose best-known legacy to Bermuda is the Anglican cathedral in Hamilton. BERMUDA UNDERWATER EXPLORATION INSTITUTE (BUEI) 40 Crow Lane, Pembroke Bermuda Underwater Exploration Institute (BUEI) is just outside Hamilton on East Broadway, 40 Crow Lane. See the ocean like you have never seen it before! What lies in Bermuda’s depths? BUEI is designed to amaze, excite and inform every visitor about the ocean. Highlights include a simulated deep-sea submersible; taking visitors for a dive 12,000 feet and survive an attack in a shark cage. Other exhibits not to be missed are the Jack Lightbourn Shell Collection, shipwreck artefacts discovered by diver and explorer Teddy Tucker and marine exhibits including a dive bell, a bathysphere and the space-like Exosuit, an atmospheric diving suit. ST. GEORGE’S AND EASTERN PARISHES St. George’s — a UNESCO World Heritage Site — is where it all began, when in July 1609 the Sea Venture — en route from England to the new colony of Jamestown Virginia — encountered a violent storm and was shipwrecked on Bermuda’s reefs less than a mile off what is now St. Catherine’s Point. 66 THE DELIVERANCE Ordnance Island, St. George’s A full-scale replica of the Deliverance, one of the two vessels that transported Sea Venture survivors on to Virginia in 1610, is located on Ordnance Island across from King’s Square. The St. George’s Foundation have restored the Deliverance and it is now open Monday – Saturday, 10 am – 4 pm. Admission is $3.00 (adults), $2.00 (children/ students). KING’S SQUARE Town of St. George The official, ceremonial centre of St. George’s, King’s Square acquired its name in 1818 when it was named in honour of King George III. Every Monday, Tuesday, Thursday and Saturday until November 30, 2011, the town crier, colorfully decked out in tunic, breeches and tricorn hat, rings his bell and shouts “Oyez! Oyez!” (Hear Ye!). This is to convene his `tribunal,’ which will mete seventeenth-century justice to a nagging wench at the ducking stool nearby. By all means try out the stocks for yourself. This is a fun photo opportunity. TUCKER HOUSE Water Street The only museum in St. George’s furnished as a period residence, Tucker House offers a glimpse into the lifestyle of a prosperous eighteenth-century Bermudian merchant. Built around 1752, Tucker family treasures are in evidence throughout the house, including fine family portraits by Joseph Blackburn. A Bermuda National Trust property, Tucker House is open Tues - Friday, 10:00am - 2:00pm Admission $5. 2970545 NATIONAL TRUST MUSEUM AT THE GLOBE HOTEL Globe Hotel, King’s Square Across the street from St. Peter’s Church, this distinctive dwelling was built in 1700 by Governor Samuel Day. During the American Civil War its upper floor was occupied by a Confederate Shipping Agent from where he organized the shipment of arms, uniforms and war supplies through the Union blockade to the South. It now houses the Confederate Museum and hosts the “Rogues and Runners” exhibit, highlighting Bermuda’s participation in the American Civil War. Open Mon. - Sat. 10am-4pm. PETER’S CHURCH Duke of York Street Situated in appropriate loftiness above the main street of St. George’s, St. Peter’s Church is one of the island’s most beloved landmarks and is the oldest Anglican church continuously occupied in the New World. The first church on the site was constructed in 1612 of native cedar and a thatched roof. This original edifice was replaced seven years later by a more permanent structure that lasted almost a hundred years, until the hurricane of 1712. THE OLD RECTORY Broad Alley, St. George’s, behind St. Peter’s Church Built in 1699, this charming cottage on one of the numerous picturesque back streets in St. George’s is one of Bermuda’s oldest houses. Acquired in 1700 by Captain George Dew, an unsuccessful privateer who became a St. George’s assemblyman, The Old Rectory acquired its current name when it became the residence of the Rev. Alexander Richardson in the last quarter of the eighteenth century. Outisde viewing only. ST. GEORGE’S HISTORICAL SOCIETY MUSEUM Duke of Kent Street and Featherbed Alley Built around 1734 as a private residence, Mitchell House is a fine example of eighteenth-century Bermudian domestic architecture and has been home to the St. George’s Historical Society since 1920. Open Mon, Tues, Wed, Thurs, Sat. Adults $5, Children under 12 $2 BERMUDIAN HERITAGE ASSOCIATION Samaritan’s Lodge, Intersection of York and Water Streets St. George’s newest museum was formed in 1994 to preserve and document the history of black culture and achievement in Bermuda. Displays include a fascinating assortment of memorabilia relating to the many areas in which blacks have made a contribution since first arriving on the island in 1616: shipbuilding, piloting, construction, nursing, music, sports and politics, to name a few. Open Tues-Sat 10am3pm. Admission $4. 297-4126. TOWN HALL AND THE STATE HOUSE Town of St. George Town Hall, the handsome building commanding King’s Square and bearing the town crest was begun in 1802, a few years after the Corporation of St. George’s was founded in 1797. The State House, located up a gentle elevation behind Town Hall, is one of the island’s oldest, most historically important buildings. Erected around 1620 by Governor Nathaniel Butler, the State House is open to the public 10am-4pm on Wednesdays only. THE UNFINISHED CHURCH Duke of Kent Street, St. George’s The impressive Gothic vestige that looms over the town of St. George’s was begun in 1870 as a replacement for St. Peter’s, which had fallen into a state of serious disrepair. Designed by William Hay, the Scottish-born architect who later drew the plans for Hamilton’s cathedral, the St. George’s church was abandoned in 1899 when near completion.

FORT ST. CATHERINE St. Catherine’s Point, St. George’s Fort St. Catherine stands on the site of one of the four towers that Governor Richard Moore erected along Bermuda’s coast around 1613. None of these original towers, the first English forts in the New World, survive. The present, completely restored structure, dates from the mid-nineteenth century and is home to fascinating exhibits including military guns and weapons. Open Mon-Fri 10:00am-4:00pm. CARTER HOUSE Southside Road, St. David’s Carter House was probably built in the 1720s by John Hayward and his wife Martha, reputedly a descendant of Christopher Carter, one of the two Sea Venture survivors who stayed behind when the vessel’s other passengers continued on to Virginia in 1610. Acquired by the St. David’s Historical Society, this small house with its unusual ‘welcoming arm’ stairs has been converted into a museum that commemorates the pre-war agrarian traditions of St. David’s. Open Saturday 10:00am-4:00pm. ST. DAVID’S LIGHTHOUSE Mount Hill, St. David’s Constructed of Bermuda stone, this 55-foot structure is one of two local lighthouses. Lit for the first time in 1879, its fixed white light enabled navigators to take cross bearings with the flashing beacon emitted by Gibbs Hill lighthouse way up the coast in Southampton. Open 9-4, Mon-Fri from Nov - Mar. Admission is free. CRYSTAL CAVES & FANTASY CAVES Wilkinson Avenue, Bailey’s Bay Two young boys discovered this magical underground world comprising stalactites, stalagmites and a clear, fifty-five foot deep lake by accident in 1905. Subsequently it has become a leading attraction for visitors who can now also visit a nearby sister site, Fantasy Cave. A café and a gift shop are also located on the premises. Crystal Caves, which is on the bus route between Hamilton and St. George’s, is open seven days a week except on public holidays that occur during the winter months. Open 9am - 5pm. Last tour for Crystal Caves 4:30pm, last tour for Fantasy Caves 4:00pm. Admission – One Cave Adults $20.00, Children $8.00. Both Caves Adults $27.00, Children $10.00. I love to eat at Christmas time. All of my favorite foods are on the table, piping hot, ready to be eaten. Family and Friends are gathered around, ready to dig into the ”Bermudaliciousness” that awaits. With everything going on in the world: war, protests, unemployment, taxation, debt crisis, housing problems, unemployment, and poverty, just to name a few, let’s make this Holiday season a period of escapism. Let’s leave it all behind us and celebrate the great things we have going on in our lives. Let’s work to make this Holiday season your best ever! Here are couple of my favorite recipes to bring your celebration from ordinary to astonishing! I hope you enjoy. Christmas Dinner Stuffed Bermuda Rockfish

12 ounces dry stuffing mix 2 tablespoons Goslings Black Seal Rum 1 cup loose-pack frozen corn kernels 2 pounds whole rockfish, cleaned and 1/2 cup golden raisins   gutted 1/2 cup chopped walnuts 2 onion, peeled and sliced 1/2 cup white wine 2 orange, sliced

Combine stuffing mix, corn, raisins, walnuts, wine and rum in a bowl; mix well. Let stand for 1 hour. Rinse fish and pat dry; place on a large sheet of aluminum foil. Spoon stuffing into cavity of fish. Layer half the onion and orange over stuffing; close fish and secure with skewers. Arrange remaining onion and orange over fish. Seal aluminum foil and make a slit to vent. Heat grill. Cook fish over hot coals for 45 minutes or until fish flakes easily with a fork. Serve hot. Or Bake in a 350 degree oven for 45 minutes. Makes 8 servings. SUGGESTED WINE

88 Christmas Morning Bermuda French Toast 1 each 1½ pound Bermuda lobster 8 ounces softened cream cheese 1 pinch granulated garlic 1/8 cup Bermuda onion, minced ½ teaspoon hot sauce… your choice salt and pepper to taste ½ cup marinara sauce 1¼ cup Alfredo sauce-recipe follows 8 slices white bread 4 eggs ½ cup milk ½ teaspoon vanilla 1 dash cinnamon 1 dash nutmeg fresh basil for garnish Cook lobster, remove all meat, and chop coarsely. Set aside small amount for garnish. Mix cream cheese, garlic, onion, hot sauce, salt, and pepper. Add lobster. Set aside. Beat eggs, milk, vanilla, cinnamon, and nutmeg in a separate bowl. Set aside. Take one slice of bread and spread lobster and cream cheese mixture over it. Top with another slice of bread. Repeat with remaining bread and spread. Dip each “sandwich” in egg mixture and place in heated frying pan that has been sprayed with Pam. Cook until golden brown. Flip over and cook other side. Let French toast cool while preparing sauce topping. Add marinara and Alfredo sauce to a pan and heat on stove (or in microwave). Top your French toast with the sauce. Garnish with reserved lobster meat and fresh basil. Enjoy. Alfredo Sauce 1 cup light cream 4 ounces evaporated milk ½ stick margarine 1 cup shredded mozzarella ½ teaspoon granulated garlic Salt and pepper to taste ¼ - ½ cup grated Parmesan cheese Mix all ingredients and heat until smooth over low heat stirring constantly so the bottom won’t burn. SUGGESTED WINE
