VIP Excellence Awards
Daniela D’Amato
“Young person with the most promise - nominee” Recently you were honored as a nominee at the Visitor Industry Partnership (VIP) Awards Ceremony. What is it that sets you apart from the average person and how do you feel this contributes to your success? I believe my maturity, my organizational skills and my ambition set me apart from the average person and most definitely contribute to my success. On top of working a full time job, I am a full time mother and a part time student but I aim to be successful in everything I do. When you wear so many hats, you must master time management, maintain your professionalism and still have fun doing it! What advice can you offer those who would like to be a part of the hospitality industry and those who have not considered it before now? The hospitality industry takes a great deal of dedication and sacrifice. You’ve got to be committed, organized and ready to give 110% at all times. But at the same time, the industry is so rewarding. You become so passionate and proud to be Bermudian. There are so many opportunities for growth and this is one industry where the only true requirements are a smile and a great attitude and that can take you very far. If you haven’t considered the hospitality industry, I encourage you to challenge yourself and join the industry. I promise you will fall in love with the industry. It is an incredible feeling to be so proud of where you come from and to be able to share it with our visitors.

Beer of the month
Fragrance
Appearance Will appear cloudy because it’s unfiltered for more depth of flavor. Aroma You’ll notice a zesty orange fruitiness with a light spicy wheat aroma. Taste The flavor starts crisp and tangy and ends with a coriander and orange spiciness. The Valencia orange peel gives a subtle sweetness to the beer.
Garnish with an Orange Slice Available Island-wide. Distributed by Burrows & Lightbourn.
Mouthfeel The oats give the beer a nice creamy body, so it’s not too thin. Finish Our Belgian White* has a slow finish of coriander and orange spiciness.

Health & beauty There is no sense getting your hair done if your brows haven’t been shaped!
Fire & Ice
with Hanifah Smith, Lush Makeup Lash & Brow Bar
By Willi Lawrence, R.N.
Hollywood Treatment Now in Bermuda
By Candice Dickinson
If your not walking around with beautiful full arches, your look just won’t be complete! Great eyebrows are an instant confidence booster. When properly shaped, eyebrows frame the face naturally complementing facial features. If your brows are bushy and over grown your face will appear disheveled regardless of daily beautifying efforts. Brow shaping can take anywhere from fifteen minutes to a half hour depending on the condition of your current brows. At Lush, Hanifah Smith starts by assessing your current shape, looking at the amount of hair you have, and mapping out your perfect arch while accessing how far your brow tail must go to properly frame your face. Hanifah looked at my brows and immediately told me to stop tweezing! She explained that the more I tweeze, the more I will stunt my hair growth. She also explained that I have dark hair, dark eyes and dark lashes so not having properly groomed eyebrows is like a missing feature. It turns out that my arch was in the wrong place creating an overly expressive look. My husband called it years ago and has been shouting, “blue steel” when he catches me looking in the mirror. Hanifah waxed only where she wanted to remove hair and left space encouraging growth where needed. In three to six weeks I will return and she will assess my brow growth and continue to create my ideal shape. Hanifah is the only trained and certified Brow Artist in Bermuda. She trained at Billion Dollar Brows in Beverly Hills, the only cosmetic company exclusively dedicated to eyebrows. When clients have difficulty growing hair where they have been plucking for years, Hanifah recommends a product available exclusively at Lush called Brow Boost made by Billion Dollar Brows. It is a deep conditioning treatment designed to help strengthen & condition thin, over-tweezed brows. Clients started to recognize brows done by Hanifah and would tell her that she has her own signature look. It only made sense to brand her signature beauty service. Hanifah thought about all of the different products she was using from various cosmetic lines, pencils from one brand, brushes and powders from another. She figured that a complementing line of eyebrow cosmetics would be ideal! She began the research and soon after, the development of her custom made cosmetics was in fruition. There is just one small problem… Hanifah needs a name for her new line!!!

I recently returned from a skin care conference in New York and was able to experience the Hollywood famous, Fire & Ice Facial. Immediately when I looked in the mirror I knew I had to share the secret that actresses and actors use to keep their skin rosy and glowing. Now we can all be red carpet ready with the same beauty weapon that they use in Hollywood. Fire & Ice is a favorite among celebrities like Halley Berry and Gwyneth Paltrow. InStyle Magazine voted it the best celebrity facial of the year. This is a medical grade treatment that can be used on all skin types but cannot be performed if using retinols, RetinA, accutane or if you are pregnant. The Fire & Ice Facial consists of two parts… • An intensive resurfacing masque that consists of unbuffered glycolic acid, lactic acid, citric acid, retinol, vitamin B3 and malic acid. • A potent antioxidant that includes green tea extract, Vitamins A and B and retinol to help stimulate collagen. The masque is left on for no more than three to five minutes before it is neutralized and has the pleasant aroma of cinnamon. The rejuvenating and intensely hydrating masque has the scent of peppermint leaving your skin feeling cool and soothed. It contains hyaluronic acid (plumps up the skin) aloe vera gel, Japanese green tea extract, grape and licorice seeds and rosemary extract and leaves your skin instantly brighter, tighter and smooth. The cost of this facial is $150, a bargain considering Hollywood prices. The treatment can be done monthly. Come and experience the Fire and Ice Facial and have your skin red carpet ready.

What is Port Royal Developmental Program? In this regard, we endeavour to make our program go beyond the mechanics of the swing but venture into the socialising our students into the game of golf and teach them how to become comfortable within themself on a golf course in the midst of a tournament atmosphere around scores of other persons at the same time. Who are a part of the Port Royal Golf Developmental Program? Our program is attracting persons from all walks of life, from 3 years of age in our junior coaching sessions to the retiree are joining in our weekly golf coaching programs that are scheduled weekdays, weekends and on demand. What is the difference between joining the Port Royal Golf Developmental Program and taking a private golf lesson? First, our group sessions are very cost effective and they encourage our students work with us on a consistent basis. Our aim is to see our students transition in a positive manner by monitoring their development on a regular basis through regular sessions which causes our students to work on their games applying drills best suited to improve their golf game. Often times persons take private lessons, go away on their own and regress into the same or other bad habits. We aim to keep our students focused on habitually applying proper fundamentals. What are the fundamentals that you focus on at the Port Royal Golf Developmental Program ? The fundamentals we concentrate on are: Aim, Grip, Posture (which includes ball position and stance), Proper Motion (which includes rhythm and balance) and a Proper Mental Approach Why should we allow you to coach us at Port Royal Golf Developmental Program ? Our experience allows us to share with our students the knowledge gleaned at every level the game is played locally and internationally. tactical decisions as well as steering and the crew doing most of the sail control. Both of the crew are equipped with their own trapeze and sailing is handled while “flying”. The 29er is for sailors with a little more experience! The J24 holds 4-adult crew, 4-novice crew and one coach! The J24 was created to fulfill the diverse needs of recreational sailors such as cruising, one design racing, day sailing, and handicap racing. About the Club Founded in 1882 the RHADC was granted it’s Royal Charter just one year later by H.R.H Princess Louise. Over the years the “Royal” was dropped. In 1953 the club gained back its Royal title from H.M Queen Elizabeth and today it remains the Royal Hamilton Amateur Dinghy Club. The RHADC remains the only “Royal” Dinghy Club in the world. The original ensign (flag) remains on the club premises. The RHADC is an active sailing club not only offering sailing lessons and coaching but heavily involved with competition and race management running a variety of regatta programs and acting as an organizing authority for a number of other races.
”Some years ago, never mind how long precisely, having little or no money in my purse, and nothing particular to interest me on shore, I thought I would sail about a little and see the watery part of the world.” Herman Melville Whether you are an avid sailor or you have never been on the open water, the RHADC is the place to be this summer. Head on down and meet the sailors and coaching staff. You will be warmly embraced and encouraged to take on this magnificent water sport. With instruction from US Sailing qualified coaches who are trained in CPR and First Aid, you will be well taken care of and will advance your sailing skills fast, gaining true confidence out on the open blue! This 2013 marks the twelfth year of the RHADC’s very successful Summer Sailing Program. From July 1 – August 30 the RHADC will be offering the US Sailing curriculum with a full team of certified US Sailing Instructors. Sailing lessons are available for children as young as 5 years old and adults as old as, well, as old as one wants to sail! The RHADC boasts a variety of vessels offering something for everyone no matter what their level! Lessons are available daily, just stop by, call or check out the RHADC online. Through June, and after the summer, RHADC offers also after school sailing.
Join the RHADC Family The RHADC is a family club and club members have it all with breathtaking views of Hamilton Harbour, a number of great perks and enough sailing throughout the year to satisfy any water lover. The finest food is served and available catered for special occasions. For boat owners a membership offers special privileges including a year round sailing programme, marina use and marina services. Members are welcome to bring guests when enjoying the facilities and special events are put on all year long so that members and their families can celebrate in style! On Friday nights during the summer, the RHADC puts on a great set for their members catering especially to the kids with bouncy castles, popcorn machines and kids finger foods all while the adults enjoy a little mingling of their own in the Club House. For more info on becoming a member simple contact the RHADC! A Sight to See The popular Bermuda Fitted Dinghy Races are a must see this summer happening on various days in the afternoons. Details are available in our Calendar of Events. This quintessential Bermuda sport revolves around four clubs, including the Royal Hamilton Amateur Dinghy Club (RHADC), the Royal Bermuda Yacht Club (RBYC), the St. George’s Dinghy and Sports Club (SGDSC) and Sandy’s Boat Club. The dinghies sail windward leeward courses in multiple legs, finishing to windward. The boats start with six crewmembers who are master sailors. They race hard and try to keep the boat floating. The skipper can order any of them to jump off the boat in an attempt to gain speed. While the boats do move fast, they often get swamped and sink. Talented seamanship and a small amount of luck finally make a boat win. It is a competitive, enjoyable and very theatrical event on the water.
ROYAL HAMILTON AMATEUR DINGHY CLUB

Poverty In Paradise: The Price We Pay with Lucinda Spurling Filmmaker and Nicola Feldman Executive Director, Coalition for the Protection of Children
Imagine lying awake each night, drenched in fear and worry, wondering where your child’s next meal will come from or how much longer you can possibly cope with the daily challenges that wake you with each passing day. The Coalition for the Protection of Children and Bermuda’s award winning filmmaker Lucinda Spurling worked diligently with 15 Bermudian women living in poverty, creating the documentary, Poverty in Paradise. A fifteenminute version of the sixty-minute film is currently exhibiting at the Bermuda National Gallery. The film explores the struggles and challenges that families face when simply trying to provide basic necessities for themselves and their loved ones. The rapidly growing gap between Bermuda’s wealthy and poor and the once quiet streets that have been taken over by gangs and violence plays a disheartening role.
Everything In, On & Under the Water
What inspired the making of Poverty in Paradise and how did it all come together? Nicola: At the Coalition, we try to advocate on a regular bases the struggles that families face and why. It is our goal to change some of the judgments that the broader community might be making about these families. We had been discussing ways to get our clients stories out to a public audience and contacted local filmmaker Lucinda Spurling about working together on a documentary film.

DO YOU KNOW…
On her return to Bermuda on December 10th following her ‘Miss World’ title win, Government proclaimed ‘Gina Swainson Day’. She was met at the airport by the Premier and taken to St. George’s where the Mayor of her home town made her an ‘Honorary Freeman for Life’. A large parade was then held in Hamilton where thousands lined the streets to see Bermuda’s own ‘Miss World’.
… About Margaret Hill and Gina Swainson – Bermuda’s Beauty Queens of the 1970s? By Horst Augustinovic
On May 8th 1980 the Bermuda Post Office issued a set of four stamps to celebrate Gina Swainson’s success. It was the first time that a living person other than a member of the Royal Family has appeared on a Bermuda stamp. In fact, it was the first time ever that a Bermudian has appeared on a Bermuda stamp.
Margaret Hill, ‘Miss Bermuda’ in 1970, captivated beauty contest audiences and judges not just in Bermuda, but internationally as well. Winning ‘Miss Photogenic’ and ‘Miss Tourism International’ titles, she quickly became known as ‘Miss Everything’.
So far Gina Swainson is the only Bermudian to win a major international pageant and the most successful at both the ‘Miss Universe’ and ‘Miss World’ contests.

Having won the ‘Miss Bermuda’ title, 21-year-old Margaret represented Bermuda in the Miss Universe contest in Miami in 1970, where she won the ‘Miss Photogenic’ title. As ‘Miss Photogenic’ she was invited to join ‘Miss World’ and ‘Miss Young International’ on a trip to Australia and Japan. On her return home, in Hollywood, she was named ‘Miss Tourism International’ for promoting tourism and Bermuda through her travels. Gina Swainson, ‘Miss Bermuda’ in 1979, was crowned ‘Miss World’ at the Royal Albert Hall in London on November 15th 1979. It climaxed a remarkably short beauty contest career that began only eight months earlier in March when Gina was elected ‘Miss St. George’s’. One month later she was crowned ‘Miss Bermuda’, which earned the 21-year-old a trip to Australia to compete at the ‘Miss Universe’ pageant where she finished as the first runner-up! A set of four stamps was issued on May 8th 1980, opening day of the ‘London 1980 Philatelic Exhibition’ where Gina Swainson represented Bermuda and signed Official First Day Covers.

Your Fifth Sense
Taste One Four One
with Chef John Lema, Chef Stephen McCarthy & Manager Kia Wolffe By Candice Dickinson
Blessed with five major senses we often forget to enjoy them. We are too busy trying to get somewhere fast and ignore surrounding sounds. Blinded by tunnel vision rarely noticing nature in bloom, we can’t remember the last time we stopped to smell a flower and we are far too busy punching keypads keeping up with multiple conversations on our smart phones to even think about touch. At Taste, Chef John and Chef Stephen simply will not allow you to ignore your fifth sense. You will Taste, and we are pretty certain that you will like.
www.thisweek.bm Egg’s Benedict Taste Style
A toasted English muffin with Canadian bacon, sautéed spinach, two poached eggs topped with Taste’s homemade hollandaise sauce, served with Chef John’s homemade breakfast potatoes and always complimented with a fresh fruit selection. Frosted Flake French Toast Breaded with crushed Frosted Flake Cereal, Taste’s Frosted Flake French toast is an absolute delicacy. Layered with fresh pastry, whipped cream and strawberries, dusted with powdered sugar, drizzled with our Taste’s own Carmel sauce and garnished with orange segments and berries with side syrup, you will be in foodie heaven before you can blink. the CHEF’s table Portofino
By Candice Dickinson
Meet Filippo Vianello, living and working in Bermuda all the way from Este, a small town in Padua province, about 25 miles west of Venice, Italy. Filippo started working at Portofino approximately ten years ago as a Chef de Partie, also known as a station chef or line cook, he then became a Sous Chef working directly under the Head Chef and today Filippo himself is Portofino’s Head Chef. Many Chefs talk about bringing passion into the kitchen and using it to create each and every dish that is served, please tell us what you are passionate about what we might expect when dining at Portofino. I concentrate on creating traditional Italian Cuisine at every opportunity, fresh homemade pasta, Gnocchi, Ravioli, Tortellini, Pizza, etc. We work with fresh local fish and produce when available and change our specials each week keeping both our lunch specials menu and dinner specials exciting and delicious. I feature a different risotto and ravioli each week, homemade from scratch right here in our kitchen. Do you mind showing us how you make fresh homemade Tortelloni? 1. Create your pasta dough; mix of semolino and all purpose flour with eggs. Let it set for about thirty minutes. 2. Create your filling; today I am using ricotta cheese, spinach and Parmesan. 3. Roll your dough about 1 to 2 millimeters, using a pasta machine or a rolling pin if you do not have a machine. 4. Using a large pasta cutter cut as many squares as possible. 5. Put a small amount of filling in the centre of each square. 6. Fold in half sealing tightly then pull sides together and pinch ends. 7. Cook the pasta in boiling water and be sure to add a little salt.
Chef Filippo shared a dinner from his evolving specials menu! Involtini Di Mozzarella • Cream cheese, radicchio. Parma ham, buffalo mozzarella • Brie cheese, speck, grilled Portobello mushrooms, Arugula, truffle oil • Taleggio cheese, grilled zucchini, pancetta and Bermuda tomatoes Paired with Zardetto Prosecco Brut N/V Home Made Tortellini Asparagus tips and fresh cherry tomatoes over a cream of asparagus sauce Paired with Livon Sauvignon del Collio Tiramisu Ladyfingers dipped in coffee, layered with a whipped mixture of egg yolks and mascarpone cheese flavored with liquors and topped with cocoa powder.
