Create Delicious, Trendy Champagne Cocktails by Emily Alford
What’s better than a bottle of bubbly? A bottle of bubbly and a bottle of spirits! champagne cocktails date back to the nineteenth century, when a champagne and brandy concoction won a New York mixing competition in 1889. These days, champagne cocktails are still crowd pleasers and prove just as festive in a trendy bar as at a backyard barbeque, according to Joseph Stacker, Beverage Director at Golden Nugget Lake Charles. “It’s festive, it’s refreshing, and champagne is for celebrating! Or it can just give you a reason to celebrate,” Stacker says. Here are a few tips for making great champagne cocktails at home.

Don’t forget the cocktail Despite what modern menus would have you believe, mimosas are not “cocktails.” A true champagne cocktail must contain sparkling white wine and some form of spirit. The good news is, just about every alcohol pairs well with champagne. Decide whether you’re feeling more vodka, gin, (or both!) and go from there. Don’t water it down Don’t trust any recipe that asks you to put ice in your champagne. Instead chill your bubbly in an ice bucket until you’re ready to pour and shake your other ingredients with ice in a stainless steel shaker. Pour the contents of the shaker into serving glasses and carefully add your champagne.
Don’t go too dry This is actually one instance where the cheaper option is better. The driest (or least sweet) champagnes are called Brut, and they’re often more expensive than their sweeter counterparts. But for cocktails, it’s better to go for a sweeter champagne to balance the flavor of the spirits. Whether you crave fruity concoctions or more earthy drinks, there’s a champagne cocktail out there for just about every palate. Rouge et Blanc kicks off the week of events with a Champagne Brunch at the Chart House Seafood and Steakhouse at Golden Nugget Casino, Oct. 1. St Germain 1 part sour mix Prepare in martini shaker and serve in a champagne glass. Top with champagne and an edible orchid garnish.

The ladies at Acadian Coffee Roasters return to Rouge et Blanc for their third year. Nancy Holmes and Nancy Kirby will offer samples of both hot and cold varieties of their organic coffees, including their popular Nitro Cold Brew (NCB). NCB first came onto the coffee house scene in 2015. Word spread quickly and in March 2016, Holmes and Kirby discovered the sensation at a Coffee Fest in Atlanta. They knew immediately they had to bring the concept home. “We are the first to introduce Nitro Cold Brew Coffee to Lake Charles and the surrounding area. Boy, do people love it!” says Holmes. NCB is a cold brew coffee charged with nitrogen that provides a rich creamy head,

similar to a draft beer such as Guinness. The elimination of hot water in the brewing process reduces the amount of acid in the beverage, creating a whole different flavor. NCB is stored in kegs, connected to equipment that blends nitrogen into the coffee, and is then dispensed like a draft beer. The added nitrogen affects both taste and texture – it’s crisper and slightly sweeter. Fans can find Acadian Coffee Roasters and their NCB at the Tuesday Cash and Carry Farmers’ Market. While not yet available every day, Holmes and Kirby hint there may be something new brewing for the Lake Area. Stay tuned!

The Leaf and the Vine CIGAR CLUB HAND-ROLLS AT ROUGE ET BLANC by Jody Taylor
Cigars and wine are a natural pairing, often enhancing each other’s flavors and improving the overall experience. Brand new to Rouge et Blanc this year, the Cigar Club will offer hand-rolling demonstrations at the Banners Series’ immensely popular fine wine and food fundraiser. “You’ll get to see the process and talk to the rollers,” said Justin Morris, PR and Marketing Director at The Cigar Club. “Rouge et Blanc wanted to create a cigar space, so our staff will be there throughout the day to answer any questions, cut and light cigars, and bring a true level of experience and education.” Hand-rolling demonstrations at Rouge et Blanc are the next step in connecting the Lake Area’s wine and cigar communities. Off-season collaborative events such as “Tobacco Et Terroir” featured pairing presentations on-location at The Cigar Club lounge, complete with two premium cigars, a wine flight, and truffles.

“There’s a great deal of crossover,” Morris said. “If you know how to critically taste wine, we show you how to apply what you already know to tasting cigars and breaking down those flavor profiles.” To the experts at The Cigar Club, “it’s more than just a smoke.” In September, Morris travels to Central America to visit the fields and factories that supply award-winning cigar manufacturer Rocky Patel, a frequent visitor at The Cigar Club. “After 20 years of smoking premium cigars, I’m getting the opportunity to see the whole process from seed-to-stick,” Morris said. “It is the craft, the artisanship, the legacies . . . a tradition down through generations, enjoying tobacco as it’s intended.” The Cigar Club is a destination spot for aficionados all over the country, offering the rare combination of a large humidor, a plush and comfortable smoking lounge, and a fullystocked bar. Oak Crossing Offers Unique New Event Venues

That would be the simplest way to describe the soon-to-be completed TreeHouse at Oak Crossing, but the cliché doesn’t do justice to the stunning new event center and the scenic, panoramic view it offers of Oak Crossing’s namesake 100-yearold oak trees. Dub Henning, owner of Oak Crossing, said he decided to add the TreeHouse and the recently completed Gazebo outdoor venue, in direct response to requests he had been receiving for quite some time. “From the time we first opened, we have had people frequently asking to use our central square area for different types of events. As our commercial space filled with tenants, they also had needs for on-site event space. It’s tough to find the right type of event space, especially in this part of the city, and it’s getting more challenging as the population continues to grow. There is obviously a need to be met. So we started thinking about how we could add this to our complex, in a way that was unique to us. With the Gazebo and TreeHouse, I think we’ve done that.” 10 www.thriveswla.com
The TreeHouse spans an entire second floor – 4200 square feet – and overlooks the beautiful central square of the 20-acre Oak Crossing business park development. The hall can be divided into two distinct sections, allowing it to accommodate multiple events of varying sizes, from large weddings, receptions, banquets and seminars, to private parties, showers, dinners and more. The facility is event-ready, with a catering prep area, chairs, tables and audiovisual equipment. The Gazebo outdoor venue in the heart of Oak Crossing is centered under the shade of beautiful, majestic oak trees. Ideally suited for intimate
outdoor weddings, the 16 x 20-foot hand-crafted structure is equipped with lighting, making it perfect for any type of celebration. “Once we decided to build these event venues, we realized if we were going to do this right, we needed to have someone on-site to coordinate the details,” said Henning. “We’ve hired a Special Events Coordinator, Jordan Craft, to ensure every event is a success.” Weddings will be a big focus at Oak Crossing. An elegant bridal suite on the first floor of the TreeHouse building, just across from the Gazebo, offers a convenient, private retreat for the bride and bridal party, whether its an indoor or

outdoor wedding. There are a variety of wedding package options for indoor, outdoor or combination venues. Construction on the TreeHouse will be completed in October, just in time for its first event on October 4, a Riedel stemware and tasting that is part of the Rouge et Blanc week-long activities. Fall and Winter: Full-bodied red wines are popular in fall and winter because they pair perfectly with heartier dishes, and sparkling wines help us celebrate the holidays and ring in the New Year. During the cooler months, try one of these wines. • Malbec: Try the Trapiche Medalla Malbec, which has a beautiful aroma of black cherry, plum, spice, and a touch of smoked meat. The Velvet Pig
Specializing in Organic Vegan, Thai and Cajun Cuisine by Angie Kay Dilmore
New this year, Nicole Butler brings her business, The Velvet Pig, to a Rouge et Blanc sampling booth. Specializing in vegan, Cajun, and Thai cooking, she plans to offer a savory stuffed puff pastry. Butler grew up with a love of cooking. Both her parents were good cooks. “I learned a lot from them,” she says. “We always cooked meals at home. My dad kept a garden. He also hunted and fished. So local food makes sense to me.” Her first job was in a restaurant as a waitress and hostess. Butler quickly moved into a management role and worked the kitchen line when needed. From there, she attended culinary school in Austin and interned at an organic Thai restaurant. For that business, she worked their farmers’ market and ultimately became their sous-chef. It was there she learned about local organic cooking and Thai cuisine. She moved back to Lake Charles to be closer to family and brought her culinary knowledge with her. Butler opened The Velvet Pig in 2014. She offers monthly cooking classes at Walnut Grove and sells prepared foods at the Tuesday Cash and Carry Farmers’ Market. Some of her most popular dishes include a homemade green curry, egg rolls, and veggie burger patties. Her business has recently expanded to include a food truck and catering. She also offers private cooking classes as an alternative to dinner parties. Wine Tasting Event Etiquette

An afternoon of wine tasting, paired with delicious food, music and great friends – sounds like the perfect way to spend an early fall afternoon, right? That’s exactly what Rouge et Blanc’s grand tasting offers. Long-time attendees have developed their tried-andtrue routines for strolling through the various vendor booths. As the event has evolved over the years, and as Southwest Louisiana’s population has grown, there are more and more people attending Rouge et Blanc for the first time. If you’ve never been to a tasting event, it can be overwhelming. Where to go? What to do? Wine tasting etiquette goes beyond social rules. These guidelines can help you get the most out of the tasting experience.
It’s a Taste
The wine poured is a tastingsize pour, which is about one ounce. That’s what the servers, who are volunteers, are trained to serve. So, don’t expect to receive a full glass of wine. It’s poor etiquette to ask for more than you are served, or to quickly drink your tasting serving and request a refill. If you want a second taste of a wine you enjoyed, you can return to that vendor later.
Drink Water
Alcohol dehydrates the body, so sip water between wines to cleanse your palate and stay hydrated. Water is provided at several locations throughout the event.

Eat
There’s delicious food along with the wine for a reason. Alcohol enters the bloodstream quickly. When your stomach is empty, you’ll feel the effects much quicker, which means you’ll be able to handle less wine than you would on a full stomach.
Move Aside
Show consideration by stepping up to get a sample, and then stepping away or to the end of the next line to enjoy it. This will be appreciated by not only participants, but also by the vendors who are showcasing their wines. If the vendor is sampling more than one wine, either step to the side between pours or return later.

Pour out (or spit out) wine after you have had a sufficient taste if it’s one you don’t want to finish. Your pourer will not be offended and will recognize that you are ready for the next taste. Drinking too much wine will make it difficult to taste the differences after a while, which defeats the whole purpose of a wine tasting. Buckets are available at all wine booths, along with water to rinse out your glass. Rinsing is especially important if you are going back and forth between reds and whites.

Designating a driver or planning ahead for a taxi or Lyft ride is the responsible thing to do. We strongly encourage you – if you’ve been enjoying the wine all afternoon -- please don’t drive yourself home. There are plenty of other options. • Have a designated driver in your group. • Arrange to have a friend or family member drop you off at the event and pick you up when it is over. • Hire a chauffeur. ouge et Blanc is the premier food and wine event held annually in Lake Charles. It is an event unlike any other in the region and attracts thousands of food and wine lovers who gather under the stately live oaks of McNeese State University to enjoy the best the region has to offer. The main event is a four-hour tasting extravaganza at which visitors meander through displays and booths set against the backdrop of McNeese State University. Over the years Rouge et Blanc has grown considerably to include numerous wine dinners and seminars during the week preceding the main event.
