Walk-On’s Bistreaux and Bar Lake Charles Focuses on Louisiana Comfort Food. It can be hard to come by a decent meal at a sports bar. Most focus on beer and big screens, and while Walk-On’s Bistreaux and Bar in Lake Charles has both in spades, it also boasts a menu that gets fans cheering for more than just the game. Assembly Center. During their time on the team, Jack and Brandon had amazing opportunities to travel and visit cities across the SEC and around the world. In the course of their travel, they visited the best of the best in restaurants and sports bars. While they were lucky enough to be living one dream of playing LSU basketball, they were also beginning to create a new dream. In 2012, Walk-On’s Bistreaux & Bar was named the #1 Sports Bar in America by ESPN. In 2001, on a plane ride home from a game at the University of Tennessee, the floor plan for Walk-On’s Bistreaux & Bar became a reality on the back of a napkin. Jack and Brandon submitted their business plan for Walk-On’s to one of their professors for a class project. The professor gave them a C, saying their idea needed some work, which only motivated Jack and Brandon even more. After six banks denied them a loan for Walk-On’s, the seventh bank finally agreed to help turn their dream into reality. Throughout the process of opening Walk-On’s, they discovered their ultimate nonnegotiable they still abide by today: never stop trying! During their years on the bench, Jack and Brandon learned that being a walk-on was a privilege, and even though they didn’t play much, they were just as important to the team

as the star players. Legendary Coach Dale Brown taught them that everyone on a TEAM has one common goal: To Win! Celebrating 60 Years Years Serving Lake Charles When Nic Hunter was 13 years old, he started working in his grandparents’ restaurant, busing tables and washing dishes. “My grandmother made me start at the bottom of the ladder,” says Hunter. “At the time, I didn’t know why. But now that I’m older and wiser, I do know why. By starting at the bottom and working my way up, I learned all facets of the restaurant business. That was a really good experience. She taught and instilled in me from a very young age things like work ethic and responsibility.” Mr. And Mrs. Edward E. Hunter opened Harlequin Steaks and Seafood in 1956.

“My grandparents started with a nickel in their pocket and a hope that they could achieve the American Dream,” says Hunter. “They succeeded. As a resident of Southwest Louisiana, why should you care about the health of small businesses? Local business owners are primary contributors to community events. From sponsoring the kids’ soccer games to providing prizes for a fundraiser, you can count on the entrepreneurs in your town. Local businesses employ local people, pay local taxes, and buy utilities right in your hometown. Continuing the Family Tradition of Serving Lake Charles —One Customer, One Meal at a Time Fallon Witherwax manages Nina P’s Café along with her mother and Café owner Paulina Siebarth. Paulina came to America from France as a baby in 1965 after her parents, Tim and Pat Evans, married while Tim served in the military there. They settled in Lake Charles and for 40 years, they owned numerous popular restaurants and establishments in the lake area, such as LaNormandie and Dave’s Oyster House Bar and Grill. Tim lost his battle with cancer in 1997, but his business sense had been instilled in Pat, their children and grandchildren. Paulina worked with her brother and sister for years in various establishments before branching out on her own. In 2000, she opened Nina P’s Café. The restaurant provided a means to support herself and her three daughters – Fallon, Nikki Pruitt, and Tiffany Ashley. Paulina loves to feed friends, with a smile on her face! Her three girls worked at the restaurant during high school and while they earned their college degrees at McNeese State University. “Mom created a great place for us to work and prepare for life after high school and college,” says Fallon. These sisters were born and raised in southwest Louisiana and possess a fierce devotion to the community. “We truly love Lake Charles and southwest Louisiana,” Fallon adds. “Through good and bad times, our community stands strong and stands together.” At Nina P’s, customers are treated like family. They specialize in home style cooking and friendly southern hospitality. In 2013, a fire severely damaged much of the restaurant. But Paulina and Fallon were determined to recover from the setback. They were overwhelmed by the outpouring of care and concern from the community. “Through this community we were able to find work for most of our employees. The community helped us to re-open.” After two years of repairs, Nina P’s Café re-opened with an expanded dining room and the same menu regular customers had grown to know and appreciate. “We felt the love when we saw the lines coming out the door for our grand opening,” says Fallon.

SEED Center:
Home & Fertile Ground
The Southwest Louisiana Entrepreneurial and Economic Development (SEED) Center was born of a collaborative effort between McNeese State University, The City of Lake Charles, the Calcasieu Parish Police Jury, and the Southwest Louisiana Economic Development Alliance. Its first floor is dedicated to the twin missions of developing inventive McNeese graduates through the University’s Innovation Classroom and Lab, and the diversification of our regional economy with the SEED Center Business Incubator—a full, scale incubator designed to nurture businesses of all types and sizes. The Small Business Development Center is also on the first floor. The second floor is comprised of the Willis Noland Resource Center, which provides meeting space for regional businesses to host meetings, lectures, workshops and luncheons. On any given day, there are two to three events being held at the SEED Center—all for the purpose of connecting and developing our regional business community. The third floor houses the staff offices of the Alliance, IMCAL (the

regional planning commission), and the regional offices for SCORE and PTAC. The goal of building a one-stop regional development location has been fully realized. The scope of the projects, events, and programs which has stemmed from the SEED Center is extraordinary. Any business coming to the SEED Center is provided with free consulting, a venue to host training and/or economic development events, and—if they are a fledgling business—a place to grow and develop within the Business Incubator. The SEED Center Business Incubator offers business training, startup office space, and access to business equipment and services which are usually too expensive for a new business. Clients receive coaching, counseling, managerial and technical services, along with the opportunity to network with other emerging businesses. To date, the incubator is at 50 percent occupancy. That means there are 19 businesses within the SEED Center working through their critical first years under the supervision and guidance of professionally trained counselors. In a few years, they will move out and make room for another wave of entrepreneurs.

After Hurricane Rita’s run through Southwest Louisiana in 2005, the number-one message from the Chamber Southwest was that we were open for business and that it would take more than a big storm to knock us out. Rita banded our communities together stronger than we were before, and our regional leaders worked together to restore, reinvigorate and reimagine what Southwest Louisiana could be. From those days, we gained two major economic drivers for our region. First, the Chamber Southwest and its foundation merged with the Southwest Louisiana Partnership for Economic Development to form the Southwest Louisiana Economic Development Alliance. It wasn’t just a name change. It was a sign that the business community and public entities— parish and municipal governments—would work together in an unprecedented fashion to drive development. The other positive outcome from Rita recovery was the SEED Center. When our leaders really considered what was needed to drive economic development, it was unanimously decided that our region needed a one-stop business development center. The land was donated by McNeese State University. The building was fully funded through recovery funds by Calcasieu Parish, the City of Lake Charles, and the Alliance. It opened its doors in August 2013 to an eager audience.

Sean Corcoran practices Family Law at his office at 4216 Lake Street. His practice is focused solely on this area of law, which covers divorce, child custody, child support, spousal support, and division of property. Sean is a graduate of McNeese State University, and while attending law school at LSU, he actively avoided family law classes and after law school actively avoided family law cases. But when referrals started coming from other members of his church (Our Lady Queen of Heaven), he began to have a change of heart. “I was hesitant to turn them away. During that time, I started getting the sense that this is what God was calling

They owned various businesses through the years but were best known for their flower shop on Kirkman St. In 1989, they expanded their business to include Pronia’s Deli. This venture was so successful, they sold the flower shop so they could focus on the popular eatery. From the beginning, Pronia’s made their own homemade breads for sandwiches, says manager Bryan Bergeron, whose official title is simply “just the son-in-law.” Deli sandwiches stand out with the homemade bread, Cajun sauce, sweet pickles, and olive mix. “We try to incorporate our own signature flavors as much as possible to make our products unique to us,” says Bergeron. The family later added cookies, king cakes, and under Bergeron’s leadership, cakes and cupcakes to their ovens. Bergeron says they use an old-fashioned homemade baking style “the way MawMaw baked.” Bergeron was inspired as a baker by his MawMaw, who made him a homemade carrot cake every year for his birthday. “That is why I’m in the bakery business today.” Carrot cake was one of their original cake flavors, but they are continually experimenting and adding new flavors of cake to the menu. Champagne is one of their most popular flavors and they recently added RumChata. Three generations of the Pronia family currently work on the premises. Leroy and Annette still come in every day and help. Several of their children and grandchildren also work at the Deli. Pronia’s Bakery will host their annual Taste and See event on August 6. Healthy Image isTHRIVING Fourteen years ago, Kristy Armand and Christine Fisher were cheering alone in a parking lot. They had just landed their first client as a marketing agency. They didn’t have a business plan or start-up money. What they did have was a shared vision, experience and two computers. In 2007 they were joined by a third partner, graphic designer Barbara VanGossen. The three had worked together for years on various projects. “We didn’t have a defined goal or list of expectations when we started,” Armand said. “We just knew we would work hard.” And they did. Since then, Healthy Image has continued to grow. The team now includes 12 members and offers a full range of marketing services, including strategic planning, advertising, public relations, graphic design, corporate communication, videography, photography, social media management, website development, event planning and more – basically anything a client needs that falls under the marketing or image-management umbrella. “We’re communicators, not just advertisers. We want to tell a client’s story to the people who need to hear it, and there are many different ways to do that. It’s our job to find the most effective way,” says Fisher. Construction has begun on a larger office located at 4845 Ihles Road, where they will continue to provide services to their more than 100 local, regional and national clients. small quarterly publication focused on topics for better living; with VanGossen’s help it matured to a full-color, high-quality, awardwinning monthly magazine distributed throughout SWLA and Southeast Texas. At the end of the last decade, in the middle of a recession and the fallout of the financial market meltdown, one bank in the nation defied the odds and was granted a new charter by banking regulators. FOR OVER 60 YEARS The Safety Council of Southwest Louisiana has been a vital part of our community for over 60 years, providing safety training and services for local industrial and contractor businesses and offering a wide variety of educational programs for the community. Over the years, the Safety Council’s community service projects have grown and a broad assortment of programs have been added to support local area industrial growth. In the early 1990’s the Safety Council began providing orientation and training for local area contractor employees with the prime objective of containing costs and providing quality programs. Fifty years ago, surgery to treat cataract – a clouding of the crystalline lens of the eye – required a twoweek hospital stay, a large incision and temporary immobilization of the head. Today, patients get more medicine when they have a tooth pulled. “Today, cataract surgery is the most performed surgical procedure in the United States, and thanks to advances in premium lens replacement options, most patients are able to see clearly with no glasses at all after the outpatient surgical procedure,” said Dr. Virgil Murray, IV, ophthalmologist with The Eye Clinic. The rapid evolution and improvement in cataract surgery is just one of many that The Eye Clinic has witnessed and participated in for almost 60 years. The Eye Clinic team has seen first-hand how eye care has become more sophisticated and informed – and they’ve brought these advances to their patients in Southwest Louisiana. A few examples of “firsts” in eye care delivered by The Eye Clinic include being the first to offer modern cataract surgery with phaco emulsification, launching the first ophthalmic laser program between New Orleans and Houston, the first laser vision correction procedure, the first to use nerve fiber analysis for the diagnosis of glaucoma and the first implant of a multifocal

lens for cataract surgery, among many others. Ophthalmologist Dr. D. Dale Archer founded The Eye Clinic as a small, one-man office with two exam rooms in 1959. He chose to locate the clinic in Lake Charles because “the people in Lake Charles deserve the same care available in New Orleans, California, New York, or anywhere else.” The group, now with 11 doctors and five (soon to be six) offices across Southwest Louisiana, still honors that commitment. “It’s our mission to make life-long eye care available for local residents,” says Dr. Murray. “We take pride in offering complete family eye care, including specialized services for infants and sub-specialty services for more serious eye conditions.” Staying true to that commitment involves more than just seeking out the latest technology. The group also places great emphasis on seeking out well-trained, board certified, equally committed doctors to join their staff. It’s a process that has proven successful for their growth and success.
As The Eye Clinic looks toward the future, continued advancements – both within the group and the ophthalmology field –are a certainty. The Sulphur office is moving to a bigger office on Cypress Street, across from West Calcasieu Cameron Hospital in August. The group’s new main office in the Imperial Pointe development on Nelson Road in Lake Charles is well underway, with an expected move-in date of January, 2017. When that move occurs, a new satellite office in east Lake Charles will also open to serve the growing community. On the technology horizon, continued improvements to lens implants and developments in biotech medications are not far away. “It’s a very exciting time in medical technology – anything is possible, and we’ll continue to make advances easily accessible to our patients,” says Dr. Murray.

Preserving History, Promoting Culture: Empire of the Seed Properties Rick and Donna Richard, both graduates of Lake Charles High School, have had a huge impact on the architecture of downtown Lake Charles. They have spent the last several years renovating historic properties, with the goal of preserving the area for future generations. Returning home after living away for nearly two decades, the Richards formed Empire of the Seed, a preservation and conservation company designed to live up to the old Boy Scout motto “Always leave your campsite better than you found it.” The company’s distinctive logo, which includes a buffalo, long leaf pine, switch grass and a quail under a Gothic cathedral window, pays homage to both the coastal plain heritage and historic architecture of the region. “Our mission is in our name,” says Donna. “Our work is planting seeds
to nurture growth.” Rick adds, “Downtown Lake Charles is like a garden of flowers. Some of the flowers are in full bloom – older than others, yes, but at their peak of beauty. Now that our soil is tilled, we have room for more seeds. We need to develop and grow as a city, and with the economic growth taking place in the region, there’s never been a better time. The flower of tomorrow is a seed today.” Empire of the Seeds’ preservation footprint in downtown Lake Charles is a large one. They have restored the Historic Calcasieu Marine National Bank building and the Cash & Carry building as event centers. Preservation was also at the forefront of the design process for the new Phoenix Building. Their “newest” rehabilitation project is the Noble Building on Pujo Street which will be completed by the end of 2016.

Historic Calcasieu Marine National Bank (event center, professional offices) 844 Ryan Street, Lake Charles
The Calcasieu Marine National Bank, built in 1928, was designed by the noted New Orleans architectural firm of Favrot and Livaudais, who designed several other notable buildings in Lake Charles after the fire of 1910. Once home to the largest bank in the region, the Calcasieu Marine National Bank is listed on the National Register of Historic Places and today functions as one of the most impressive event settings in the region. The grand, neo-classic exterior is anchored by imposing columns and archways that frame bronze double doors ornamented with lion-head pulls. The detailed frieze incorporates historic details, including medallions depicting the various settlers of the parish. A shaped parapet sits atop the entrance, crowned with a prominent eagle, the symbol of Calcasieu Parish. The graceful foyer sets the tone for the elegance within the grand banking hall which features walls of variegated zenitherm blocks in coral pink, buff and grey, four chandeliers, 14 sconces and 22 colossal order Corinthian pillars that highlight an eagle on each elevation. The elaborate coffered ceiling is enriched with bold moldings. The clock at the Calcasieu Marine National Bank rests at the center of the main hall as a focal point upon entry. Beneath the clock rests the bank vaults. The high ceilings and dramatic windows of the rotunda provide a spacious and open feeling, with views of the courtyard, which is framed by a wrought iron fence, a red brick courtyard in ornate patterns, towering lamp posts, and beautifully landscaped beds. The courtyard provides a unique setting for an outdoor event, or can add the perfect outdoor complement to any event held at the bank.

Historic Cash & Carry Building (event center) 801 Enterprise Boulevard, Lake Charles
The “Cash Grocery & Sales” building as it was once known, is a faithfully restored, 9,600 square-foot warehouse. Constructed in the 1930s to house what has been described as an early precursor to a “Sam’s Club”, the company sold wholesale goods. Designed by Dunn & Quinn, well known architects of the era, the original plans called for a sturdy, utilitarian building featuring a clerestory (skylight) for light and ventilation. The building was closed in 1992 and was put on the Eleven Most Endangered Sites List by the Calcasieu Historical Preservation Society. Empire of the Seed purchased the property in 2007, and converted it into an event center with historic character. Two years courtesy of Daniel Edwards later, the Louisiana Trust for Historical Preservation bestowed the 2009 Honor Award as a special award for its preservation. The story of the Phoenix Building cannot be told without first knowing about the infamous fire that destroyed much of downtown Lake Charles. In April of 1910, a raging fire the width of two blocks and a half-mile long consumed 109 buildings, resulting in tremendous loss. In 2010, 100 years after that historic fire, Empire of the Seed began construction of the Phoenix Building on a site right in the middle of the area the fire destroyed. The inherent symbolism in the name and location seemed appropriate. The building’s design is a testament to a city rising from devastation at a time when downtown development in Lake Charles was gaining momentum. Aiming to create a focal point for downtown Lake Charles, the aesthetics of the building’s design were in keeping with surrounding buildings and incorporated regional historic architectural elements. The flags flying from the wrought iron balconies are an homage to the Place de Arms Hotel in New Orleans and other old buildings found around the state. The Phoenix Building is home to multiple businesses, including 1910, an aptly-named restaurant on the first floor of this grand addition to downtown Lake Charles.
The Noble Building (dining, apartments) 324 Pujo Street, Lake Charles
With its ties to Noble Oil Company and one of the area’s first city engineers, Elmer Shutts, who holds a place in our region’s history as one of the visionary founders of the Port of Lake Charles, the historic Noble Building was a perfect fit for Empire of the Seed’s mission. C.O. Noble played an integral role in drilling the first oil well in Louisiana as cited in the book, Early Louisiana and Arkansas Oil: A Photographic History – 1901 – 1946. Noble Oil Company’s offices remained in the Noble Building from the early to mid-1930s. Elmer E. Shutts, in his position as the first engineer of the Port of Lake Charles, can be credited with establishing this vital part of the region’s economy. In the article, “Port of Lake Charles: A Vision for the Future,” it is reported that by the time Shutts resigned in 1967, the Port had grown from two transit sheds and wharves to six transit sheds and wharves.” His daughter is cited in the article as saying, “The most important thing he did in connection to the Port? He built it.” Construction and restoration are expected to be complete on the two-story (with mezzanine) Noble Building by the end of this year. The building will be home to The Villa restaurant and apartments.

During its colorful 70-year history, the nearly 10,000-square foot warehouse of the Calcasieu Marine National Bank building has been used as a parking garage, a file storage area, an office and cubicle space, a commercial kitchen and more. Growing up in Bunkie, Louisiana, Ronnie Johns learned a very important lesson from his parents that has guided him throughout his life. “We didn’t have a lot, but my parents taught me that there was always someone else with less, and it was our obligation to try to help them. They instilled a sense of responsibility to give back.” After working as a licensed pharmacist for several years, Johns decided to make a change, and he opened his State Farm Insurance Agency in Sulphur in 1982. Johns’ agency grew quickly learning both loyal customers and numerous awards. “We serve customers from across the five-parish area, often multiple generations from the same family. We get to know our customers; they become our friends,” says Johns. Although the job is a rewarding one, Johns says at times it can be heartbreaking. “We often see people at the very lowest point in their life – after an accident
or a tragedy, sometimes when they have lost everything. That’s tough. But we are here to help them recover and put the pieces back together.” After first responding to the call to public service at the city and parish level, Johns was elected Louisiana State Representative in 1995, an office he held for four consecutive terms, the maximum allowed in the state. In 2011, he was asked to return to public office and ran for his district’s open seat in the state senate. He ran without opposition, and was elected to a second four-year term last fall. Johns credits his staff agency team for allowing him to be able to do the work he needs to do for the citizens he serves. “I know when I’m working in Baton Rouge that my State Farm clients are being taken care of, just as if I were there. I have complete confidence in my team and appreciate all that they do for our customers in Southwest Louisiana.”

TheArt of Dining When world famous works of art provide the backdrop for the dining room, you might expect the food to be overshadowed, but not at Blue Dog Café. The creative menu of award-winning Cajun cuisine is a work of art, worthy of its namesake, the iconic Blue Doc created by the late Louisiana artist George Rodrigue. The dog with the vivid blue coat and yellow eyes is definitely the most famous resident of downtown Lake Charles. The opening of the Blue Dog Café in Lake Charles nine months ago marked the first expansion in the 17-year history of the original, extremely popular Blue Dog Café in Lafayette.
WHY LAKE CHARLES? Owners Jacques and André Rodrigue, along with Steve Santillo, say the location was chosen very carefully. The family has a long and positive history with the city. “Lake Charles has always been a great friend of Dad and his art work, holding a special place in his heart,” says Jacques. “We have many friends here and have closely followed the economic development taking place in the region. We’re committed to being a vital part of this community.” Steve adds that the commitment to downtown development taking place, along with the opening of the new I-10 exit at Ryan Street were other key factors they considered. “There’s an energy and sense of the community in downtown Lake Charles that felt right to us. It was the right location at the right time.” The owners leased and combined an entire historic building in the 600 block of Ryan Street to create three large dining spaces. These include a spacious main dining room, beautiful bar dining area with a stage, and a banquet room to host special events. The historical elements of the building were restored, including high ceilings and brickwork. “We wanted a very authentic, yet progressive, atmosphere that welcomes people and allows them to enjoy the gallery of Blue Dog artwork on display,” Jacques says. Steve is particularly excited about the special events room which gives them the capability to host events for 25 to 200 people, from group meetings to wedding receptions, as well as other special events and celebrations. “You won’t find a more unique environment for any occasion, and our managers are committed to handling all the details to ensure your event is a success.” Blue Dog Café’s signature dishes, including crawfish enchiladas, seafood wontons, smoked duck quesadillas and corn & crab bisque, have become customer favorites here in Lake Charles, as they are in Lafayette. The extensive menu includes steaks, gumbo and bisque, grilled and fried seafood, along with chef’s specials. The Sunday brunch, which has been voted the “Best Sunday Brunch in Acadiana” 15 years in a row, is also very popular. Live music adds to the atmosphere on Thursday thru Saturday evenings and during Sunday brunch.
