The Piedmont Biofuel’s Pump House, located next to the Co-op, was honored for outstanding stewardship during the Lower Cape Fear Stewardship Development Coalition’s annual awards banquet in February. The Pump House converts oil that has been recycled from restaurant fryers into biodiesel fuel for diesel vehicles.

Change is in the Air

I

realized many years ago that one of the benefits of living in Wilmington is that we enjoy mild winters which quickly transform into glorious springs. My wife describes it as, “kapow!” when our little corner of the world is suddenly sprouting, blooming, and lush.

It is fitting that during this season of new beginnings, Tidal Creek has decided to update our newsletter so it too can shine in all its glory. We have chosen to work with local sources to design, print and mail the newsletter. The goal of the redesign is to give a clean, fresh, look and also to make our newsletter available online.

The new 8x10 size will make it easy to read on our website and on your smart phones. And in the near future we will be offering e-mail as a delivery option for the newsletter in addition to regular mail.

In the next few months we will also be unveiling an updated, more user-friendly website for Tidal Creek. These are very exciting changes that you have been asking for and we are glad to deliver them.

Board Note Dear Tidal Creek Owners, In section 1.6.3 of our guiding policies, the owners of Tidal Creek have stated the following: Concern for the Environment: The Co-op will promote conservation of resources and wise stewardship of the planet’s natural systems in its operations and product selections. We will encourage the use of alternate transportation and renewable energy whenever possible.

It has long been part of our culture at the Co-op to make decisions based on supporting good stewardship of our environment. From the clean and sustainably produced product choices we offer, to the biodiesel and electric car charging stations at our location, we strive to lead by example both locally and regionally as a more environmentally conscious economic model.

Although we strive to stay out of political issues, recently Tidal Creek has been brought into the Titan Cement debate in a way that we could not ignore. Due to the near universal concern of our local farmers and other vendors that pollution and water use by the proposed plant will severely negatively impact our local food shed, we have added our voice to those in opposition to the plant. Our guiding principles set forth in our governing documents clearly compel us to take this position in support of the health of our community.

It is the physical embodiment of a set of ideals set forth by the thousands of owners of our Co-op, past and present, to meet a specific set of needs in our community for clean, healthy food and environmentally and socially conscious product choices, all in a locally owned business whose concerns and allegiances lie not in some far off corporate office, but right here where we live.

Progressive Gardens showcases its new aquaponics demo garden

ocated just a short stroll down Oleander Drive, Progressive Gardens is your local source for gardening supplies and education. Since their inception in 2002, store owner Evan Folds has promoted an environment that encourages Wilmington residents to learn more about their food and even try growing their own.

The relationship between Tidal Creek and Progressive Gardens has always come naturally. The conference room at the Co-op served as a place for Folds to reach Co-op owners eager to learn more about how to grow their own produce. The staff at Progressive Gardens continues to be a source of information for owners interested in easy, environmentally-friendly methods for home gardening, including using hydroponics and fresh compost as

Over the past few years, the business relationship between Progressive Gardens and Tidal Creek has evolved into a daily coordinated effort to bring locally-grown, freshly-juiced wheatgrass to Co-op shoppers.

Over the month of February, Progressive Gardens underwent a renovation to expand their store and increase their offerings.

The renovation brought a new Aquaponics demo garden that includes wheatgrass cultivation and allows them to expand their sprout production.

The Progressive Gardens expansion includes plans to add more classes and workshops. Folds has been working with GRUB owner Ryanna Battiste to develop

class schedules. He hopes to “get people on the right track growing nutrient dense food and healthy lives.” Specific class times will be available soon and Folds invites everyone to sign up for their newsletter at www.ProgressiveGardens.com for info on upcoming workshops and events.

Bulk is really at the roots of Tidal Creek’s existence and it provides our owners the opportunity to customize how much they get. As spring approaches, Tidal Creek Kitchen is focused on renewing our commitment to our customers. We wish to continue to be an essential partner with them in bringing wellness to our community. We approach this task by concentrating on creating an opportunity for mindful eating.

Mindful eating is making healthy, personal food choices for yourself and your planet.

Whatever your dietary choices or requirements might be, there are plenty of ways for mindful eating at Tidal Creek. You choose your own combinations and portions from our food bars.

We try to make sure there are lots of nutrient dense choices provided for you. If you feel like a light lunch, order an organic smoothie from our juice bar or indulge in a fresh raw organic salad. If you are doing a wellness cleanse, we offer 100% organic juices and locally grown wheatgrass. For many of our customers, a fresh juice every morning is the first step toward a stress free routine. If you prefer a coffee or latte to start the day, rest assured that we have brewed organic fair trade coffee for your enjoyment.

One of the department’s frustrations is trying to cook for everyone when many of

our customers have allergies and/or very diet specific needs. We try to take a middle road approach to allow the most options for the most people. If you are looking for an organic diet, all our produce is organic and at least 90% of our other foods are as well. If you are vegan we have only a couple of exceptions to that on the salad bar. We also support Meatless Monday by offering only plant-centered proteins on the Hot Bar every Monday. This is a national program launched by Johns Hopkins Hospital to encourage at least one day of the week people go with out meat… for their health. Please ask our staff any questions that need answers.

Every other day except Mondays, we always have a plant-based protein option as well as a meat centered one. When faced with the decision of how to season our food, we always choose plant based options. Although I am from a long line of southerners, you won’t find a ham hock in your collards at Tidal Creek.

Instead you will find quick cooked organic greens seasoned with olive oil, roasted garlic, and sea salt. We try to keep our food accessible to all, lightly seasoned and mindfully prepared with the health of our customer and our planet at the center of the process.

Our hot bar menus are built around ethnic flavor profiles. For some, Tuesday’s Asian inspired foods might be a good choice. For others, Wednesday’s TexMex day might better suit your preferences. On Saturday, we build the menu around locally made Samosas and

more Indian inspired foods. On Thursday it’s down home day with ‘southern fried’ chicken and macaroni and cheese. The macaroni is embedded with broccoli and the pan fried chicken is coated with cornmeal, coconut and sorghum flours, and nutritional yeast for a delicious, gluten-free, nutrient dense crust.

On Mondays, the meals are built around an Italian theme. And don’t forget, Tidal Creek also serves dinner Monday through Friday and breakfast on Saturday and Sunday. And don’t forget, you are welcome seven days a week. Mindful eating is what Tidal Creek is all about. We hope to provide the food and the atmosphere that allows each of us to make healthy choices in our diets. We hope to create a space and environment in which that experience is fostered. We hope we are the place where a community comes together to share that experience with each other. Thank you all for your investment in that goal.

Getting A Second Chance with LINC Meeting the immediate needs of ex-offenders — such as shelter, food, clothing and employment.

E

stablished in 2000, Leading Into New Communities, Inc. (LINC, Inc.) is a 501(c)3 non-profit organization with the mission to educate and motivate youth to make positive life choices while empowering men and women returning from incarceration to be productive members of our community. LINC, Inc. achieves this mission through two programs. LINC’s Initiative to Educate, the LITE Manhood Program, provides a culturally sensitive youth development program, serving African American young men ages 16-21 with education, employment and life skill development services. LINC, Inc.’s recently expanded Marvin E. Roberts Transitional Living Facility provides transitional housing in a structured and supportive environment for men and women returning from prison who would otherwise be homeless.

In 2012, a total of 23,496 persons were released from the 66 North Carolina prisons, 601 of which were released into New Hanover County. As of 12/31/2012, a total of 37,383 persons were incarcerated, the cost of which is approximately $78 per day, per person or more than $28,000 per person for one year. LINC, Inc. has served approximately 1500 adult individuals since 2000. Among 2011 program graduates, 92% have remained crime-free and out of prison, compared with the statewide average of 60% re-offending and returning to prison.

Formerly incarcerated men and women reentering the community bring with them extensive and diverse skill sets that when supported and strengthened have the potential to contribute to the strengthening of our local economy.

Marvin E. Roberts Transitional Living Facility and the LINC Urban Farm

Through the M.E. Roberts Transitional Living Facility, LINC, Inc. provides a safe, structured environment specifically designed to increase vocational skills, prevent relapse and to overcome the many barriers to formerly incarcerated persons’ reentry to the community. The 40-bed facility serves up to 20 men and 20 women with a typical stay of 6 months to 1 year.

Residents of the facility participate in regularly scheduled, cognitive-behavioral

programming and receive case management services that increase their access to educational and employment opportunities, health and medical services, and substance abuse and mental health treatment. A major component of the facility programming includes vocational training, work experience and life skill development.

develop entrepreneurial opportunities for individuals returning from incarceration; to increase, in New Hanover County, access to healthy, high quality, safe and affordable food; and to generate sustainable income for LINC, Inc. and program participants through education and training in urban, community farming systems. LINC Urban Farm is in the beginning stages with preparing the property for infrastructure, including composting bins, hoop houses, and raised beds. Once the property is adequately cleared and prepared for cultivation, the farm will raise vegetables, fruits, herbs, fish, and mushrooms for feeding the facility residents and for distribution in local markets and restaurants. The farm is operated by residents of the M.E. Roberts Transitional Living Facility, providing hands-on work upon resident arrival with skill development in various areas that can be directly transferred into entrepreneurial opportunities.

The LINC Urban Farm’s sustainable and organic food system will consist of composting and vermiculture, yearround produce production, mycocscaping, aquaponics, and animal husbandry. All residents of the M.E. Roberts Transitional Living Facility will include vocational

training and work experience in each farm function plus hoop house construction, marketing and distribution. The vision of the LINC Urban Farm is that New Hanover County will be a safer, healthier, and more economically stable community as a result of strengthened community involvement in the education, training and outreach of equitable and ecologically sound community food systems. www.tidalcreek.coop 9

BM: I am involved with Restoring Agricultural Science’s (RAS) Community Garden and I am starting to get involved with Leading Into New Communities’ (LINC) Urban Farm project. I also have my own garden at home with a rain barrel irrigation system and worm composting, and I am working on mushroom cultivation. I also enjoy motorcycling, kayaking, fishing, going to see live music, traveling and growing my hair for the last 11 years!

CO-OP SCOOPS Biofuel Pump House Wins Award

The Piedmont Biofuel’s Pump House, located next to the Co-op, was honored for outstanding stewardship during the Lower Cape Fear Stewardship Development Coalition’s annual awards banquet in February. The pump house converts oil that has been recycled from restaurant fryers into biodiesel fuel for diesel vehicles. Ninety percent of the framing materials used in the construction of the pump house came from the New Hanover County landfill. It features stained paneling harvested from used cable spools donated by Time Warner Cable and insulation made from recycled newspapers. The roof of the building, built on a slight gradient, provides drainage for a roof garden. The garden contains eight inches of soil in which indigenous plants grow. Congrats to Eric Jabaley, the pump house’s architect, for being honored for his innovative, functional and earth friendly design!

The internal environment of our body is just as important as the external environment we live in. Two areas vital to our health are the pH balance of our tissues and the balance of friendly bacteria in our intestinal tract.

Balancing pH involves the acidity or alkalinity of our tissues. When we eat fruits and vegetables, our digestive process produces an alkaline residue of useful minerals that our body can utilize to neutralize any acid conditions that arise. Eating meats, grains, or dairy produces an acid residue that must be neutralized by our mineral reserve in order to prevent organ and tissue damage.

Further, the number one acid producer in the body is STRESS! Fortunately, we have many innate backup systems to keep the internal

body terrain functioning in balance. To maintain a healthy pH balance, our diet should be about 75% fruits and vegetables and 25% meats, grains, and dairy products.

Friendly bacteria, also known as probiotics (for life) are essential to a many body functions. They are part of a healthy immune system helping white blood cells fight foreign invaders. Probiotics assist in digestion and support healthy bowel elimination. They manufacture important B vitamins and are the most abundant source of B-12.
