We are very fortunate to live in an area that is blessed with an abundance of pecans and peanuts. This recipe suggests pecans but the mixture tastes wonderful and works well with peanuts too.
Spiced Pecans 1 T. sugar ½ t. pumpkin pie spice ¼ t. salt ¼ t. ground ginger 1 T. water 1 T. honey 1 t. extra virgin olive oil 2 ½ cups halved pecans Combine the sugar, pie spice, salt and ginger and set aside. In a Dutch oven, bring the water, honey and olive oil to a boil. Add pecans. Cook and stir until all the liquid is evaporated (about 1 minute). Immediately sprinkle with reserved sugar mixture, tossing to coat. Transfer to an ungreased baking sheet. Bake at 325° F for 15 to 20 minutes, or until browned, stirring twice. Cool on a wire rack. Store in an airtight container. Makes 10 servings.
