Look out as Tidbits presents a few facts about the tools necessary for a good golf game. • The ancient Romans played a game similar to golf as we know it, but the modern game of golf was developed in Scotland in the 1400s. The first written record is that of a ban of the sport by King James II in 1457, calling golf a distraction to learning archery, which was necessary for national defense. • The official rules of golf state that a golfer’s bag may contain 14 clubs. A typical player will carry a driver, two woods, seven irons, three wedges, and a putter. The putter has earned the nickname “the money club” because it is the one used to tap the ball into the hole. The first clubs were made entirely of wood, followed by wood shafts with iron heads. In the 1920s, steel-shafted clubs came into play. Shafts made of fiber-reinforced composite materials were introduced in the early 1970s. • The earliest golf balls were probably made of wood. Golf balls in the early 1800s consisted of thin leather pieces stuffed with feathers. Those that were very tightly packed flew the farthest. More than 5,000 patents have been granted for various forms of golf balls since 1900. Those little indentations on the ball are called dimples and were first used about 100 years ago. Players discovered that damaged balls flew farther than new ones, so companies began manufacturing balls in different shapes trying to increase the distances. One ingenious fellow studied the ball’s path, and came up with the current dimpled idea. Today’s regulation golf ball has 336 dimples. • An official golf ball should not weigh more than 1.62 oz., and must be at least 1.68 inches in diameter. • There are about 32,000 golf courses worldwide, with close to 20,000 of those in the United States. The country of Singapore has one course every 10 square miles, giving it the record for the highest per population density. England has one course every 27 square miles, and Scotland every 56. Yet some of the most populated areas of the world have no golf at all, for example, the Ukraine, whose population exceeds 47 million with nary a course in sight! • During a 1971 tournament in England, a 26-year-old golf pro named John Hudson achieved two consecutive holes-in-one at the 11th and 12th holes. Don’t expect to tie his record – the chances of repeating this are one in 67 million. • If you’d like to golf on the world’s longest course, you’ll have to travel to Australia. Some of the tees are 50 miles (80.5 km) apart on the 850-mile-long (1368 km) Nullarbor Links course that spans two Australian states. Don’t be surprised if you encounter the occasional wild camel or wombat. Be sure to notch out enough time for your game – somewhere between three and four days! The cost seems reasonable, however at $46.

During the summer, many people enjoy cookouts with family and friends. Grilling outdoors is particularly popular in my home state of Texas. While cooking outdoors is a wonderful way to prepare tasty, delicious dishes from meats to vegetables to desserts, it can be hazardous to your health if certain safety guidelines aren’t followed. Here are some tips for safe grilling: Preparing Meats for the Grill: --Buy ground meat and poultry no more than one to two days in advance. If it is going to be longer, freeze them. Larger cuts of meat, like steaks, should be grilled or frozen within four days of purchase. --Thaw frozen meat in the refrigerator or microwave before grilling. Meat thawed in the microwave must be cooked immediately. Food should never be thawed on the counter. --Marinate meat and poultry in the refrigerator. During grilling, avoid brushing the food with marinade that touched the raw meat. --Wash your hands before and after handling raw meat and poultry. --Hamburger patties should be made about 1/2-inch thick and 4 inches in diameter to help them cook fully and evenly. Transporting: --Transport meat and poultry in a cooler with ice, and pack the cooler just before leaving. Open the cooler as little as possible. --In order to prevent cross-contamination, raw meat and poultry should be kept separate from cooked foods and foods eaten raw, like fruits and vegetables. Pack drinks in a separate cooler. --The cooler should stay in an air-conditioned car during transportation and in a shaded spot once you’ve arrived. Only take out the amount of food you can grill at one time.

145 degrees F for steaks, roasts and fish 160 F for ground beef and pork 165 F for whole poultry, chicken pieces or ground patties --Do not flip steaks with a fork; it can puncture the meat and cause bacteria to get inside. --Remove food from the grill with clean utensils, and put it on a clean serving dish to prevent cross-contamination. --Discard any food, cooked or uncooked, left out of refrigeration for more than two hours, or one hour if the temperature is above 90 F. Try my recipe for Spicy Herb Butter as a topping for your grilled meats, grilled seafood and vegetables. It makes an 8-inch-long tube of herb butter that will keep for up to a month in the freezer. SPICY HERB BUTTER 1/2 pound unsalted butter, softened 1 tablespoon olive oil 1 tablespoon plus 2 teaspoons finely minced green onions, whites and green parts 1 tablespoon plus 1 teaspoon freshly squeezed lemon juice 1 tablespoon minced flat-leaf parsley leaves 1 tablespoon minced oregano leaves 1 teaspoon kosher salt 1 teaspoon freshly ground black pepper 1/2 teaspoon cayenne pepper 1. In a large bowl, mix the butter, oil and all other ingredients with a rubber spatula until evenly combined. Lay about a foot long section of plastic wrap on a work surface. Put the herb butter on the bottom center of the plastic wrap, and form into a mound about 8 inches long. 2. Fold the bottom edge of the plastic wrap over the butter and roll the enclosed butter forward until completely wrapped, forming a tube of butter about 1-1/2 inches in diameter. Twist the ends together like a party favor. Refrigerate until firm, or freeze for up to 1 month. Sliced as needed and serve atop grilled meat, seafood or vegetables as desired.
Grilling: --To kill microorganisms, scrape and heat the grill before putting on the meat or poultry. --Grilled foods brown on the outside quickly, so the only way to correctly determine doneness is to check the internal temperature with a thermometer. Place the thermometer in the thickest part of the meat -- away from bone, fat or gristle -- near the end of the cooking time. Wash the thermometer between testing different meats and before and after each use. Recommended safe minimum internal temperatures are as follows:

Life in the Spirit Read: Romans 8:1-8 Those who live according to the Spirit set their minds on the things of the Spirit. (v. 5) The word “spirit” is used no less than twenty-two times in Romans 8, though not always in the same sense. We can distinguish three different spirits here: the Spirit of God, the human spirit, and the spirit (or attitude) that resists God’s Spirit. In verse 5 it’s clear which spirit Paul means when he urges us to “set [our] minds on the things of the Spirit.” In a world where bombs explode, poverty exists, oppression happens, injustice occurs, and sin in its multifarious expressions shows up in every life, Christians are urged to focus on the things of the Spirit. The things of the Spirit are: “love, joy, peace, patience, kindness, goodness, faithfulness, gentleness, self control” (Gal. 5:23-23).

How about Dairy Month? Well, it makes perfect sense, as the kick-off to summer should include plenty of ice cream, frozen yogurt and milkshakes. June is the month to recognize National Adopt-a-Cat Month (which is perfectly logical due to the number of kittens born this time of year), National Fruits and Vegetables Month (which is a no-brainer as so many of us love fresh fruits and vegetables that are abundant and deliciously in-season), National Rose Month (who can’t appreciate the beauty and fragrance of a rose?), National Iced Tea Month (sweet, please!) and National Tennis Month which is very self-explanatory. There are two June observances however, that left me a bit puzzled. First is Turkey Lover’s Month. Now, are we speaking of those who cherish and care for turkeys or are we referring to those who like to eat and can’t get enough of turkey? If it’s the latter I find it hard to believe this isn’t observed in November. The final June observance that made me raise an eyebrow is Potty Training Awareness Month. Speaking from experience, I know this is an extremely important duty (no pun intended), but is there true cause for an observance here? When I think back to the days of potty training my two, June is just warm enough to go diaperless in order to provide a toddler fast access to the potty chair. PICKS OF THE WEEK “The Incredible Burt Wonderstone” (PG-13) -- Steve Carell dives into the titular Burt -- a Las Vegas magician as flamboyant as he is arrogant. Spray-tans, glittery outfits, fake teeth and pretentious talk are all part of the persona. Burt starts having trouble selling tickets, and his friendship with his partner, Anton (Steve Buscemi), starts to deteriorate. Younger, edgier magicians like Steve Gray (Jim Carrey, unleashed as a parody of David Blaine and Chris Angel) are stealing the spotlight. Don’t expect to be too dazzled. There are plenty of gags and giggles, plus the fun of seeing funny people playing funny characters. However, it’s not for everyone. It pushes the edges of PG-13. And the story is as predictable as a card trick. “The Call” (R) -- Halle Berry plays a Los Angeles 911 operator who is pulled into an unbelievable plot. A young girl (Abigail Breslin) has been abducted by a maniac Berry has dealt with before (Michael Eklund.) The movie has the look of a slick thriller, talent and commitment from the performers, and a race-against-time story -- and somehow it all just falls apart. It’s a wonderful balance of fun and awful. It’s fun because
of the scares that will make you jump in your seat. It’s awful because the movie is 30 minutes too long and uses up every suspense cliche in the box. It’s a heart-pounding ride through a ridiculous world where people start running intently -- in no particular direction -- at any hint of tension. “No” (R) -- It’s Chile, 1988, and a young advertising whiz is called upon to bring down a brutal ruler -- with a catchy jingle. With violence in the streets and intense abuse of power on the rise, President Augosto Pinochet agreed to a vote; if a majority of Chile’s citizens vote “Yes,” he stays in power. If enough people vote “No,” then the country will have democratic elections. Rene Saavedra (Gael Garcia Bernal) has to make “No” sound appealing and hopeful. This based-on-a-true-story tale is funny, gritty, dramatic and thought-provoking. It’s a Spanish-language film, but “No” crosses the language barrier. “Upside Down” (PG) -- Two separate planets orbit each other so closely, that if you stand on high ground on one planet, you can wave to the people above as they stand on their planet. Adam (Jim Sturgess) lives on the bottom planet, a polluted impoverished dystopian nightmare. He falls in love with Eden (Kirsten Dunst), a citizen of Up Top, the high-society planet hovering just above the Adam’s slums. I had high hopes for this one: It promised to be a high-concept, visually spectacular, romantic,
science-fiction thriller. That’s a hard promise to keep. The struggle of the young lovers has to wrestle with the movie’s pseudoscience and underdeveloped characters.
