Revolutionary Same Day Tooth Replacement!

When studying maps, whether with an atlas, a fold out map or internet mapping site like Google Maps, some names just kind of jump out at you. Many strange and funny names dot maps around the globe! Tidbits will direct you to a few. • Toponymy is “the study of place names.” Many places were named for historical events, persons or naturally occurring landmarks. Some have strange names that seem to have come from joking comedians or drunken sailors! • To start off with a laugh, a funny dot on maps of Quebec is Baie des Ha! Ha! This is a hamlet near the Ha! Ha! River, which has five dams, all named Ha! Ha! (numbered 1-5). There is also a Pointe des Ha! Ha!, Bridge Lake Ha! Ha!, Park Ha! Ha!, and more! The areas are all interesting and beautiful spots in Quebec. Remember that Canada has both English and French as their national languages. The French meaning of “haha” is “an unexpected obstacle on the path.” Sort of explains where the names must come from. • Another interesting place in eastern Canada is Blow Me Down Provincial Park near Deer Lake, Newfoundland. The wind does blow across and over the Blow Me Down Mountains but the park actually has lots of trees to shield visitors from the wind. (turn the page for more!)

“The Splendour Falls” by Susanna Kearsley (Sourcebooks Landmark, $16.99) by Ealish Waddell

Even though it was his idea to have a holiday in France in the first place, Emily isn’t surprised when her cousin isn’t there to meet her at the train station. Henry has a reputation for being easily distracted, and she assumes he’s off chasing the trail of his latest academic theory. In the meantime, she has plenty to do exploring the picturesque town of Chinon, from the imposing edifice of its namesake castle to the winding streets and charming plazas of the village below. She’s often in the company of the motley crew staying at her hotel, a bohemian jumble of artists and tourists that includes a seriously sexy British violinist who sets off all her warning bells. Emily can’t help but have romance on her mind, surrounded by the stories of the two tragic Isabelles of Chignon. Though

separated by centuries -- one a medieval royal besieged by political enemies, the other a chambermaid during the Nazi occupation -- both women fell victim to lost loves and sad fates, and both are rumored to have hidden priceless treasures somewhere in the town. But as days go by with no word from Henry, Emily becomes more and more uneasy, especially once she finds a cryptic clue that she believes to be a message from him. Then events take a tragic turn, and she realizes she’s unknowingly stumbled into a tangle of presentday passions that may have already put her in deadly danger. Originally published in England, this pleasantly atmospheric tale is being reissued in the States just in time for some serious curling-upunder-a-blanket winter escapism. Visions of sunlit ruins will enchant armchair travelers, and layers of ancient intrigue thrill history buffs; romantics will enjoy watching a cynic open her heart to love, and there’s even a tinge of ghostly doings for fans of the gothic.

ODD DOTS ON THE MAP (continued): • When the town of Deer Lake was named in the late 1800s, it was named for the many “deer” who often crossed the local lake. Those deer were actually caribou. • A whistle on the roof of the Deer Lake Power Plant was placed there during construction in the early 1920s. An air raid siren that was brought to Newfoundland from England, it is still used today. Local residents listen for the whistle to know whether they are on time for work, ready for lunch, or ready to end their work day. It is sounded Monday to Saturday but silent on Sunday. The whistle also is blown in honor of several Canadian holidays. • If you do happen to visit Blow Me Down Park and Deer Lake in Newfoundland you should also head southwest and see Jerry’s Nose. Why? Because a place with a name like that should be interesting! • Heading way south, actually to the southern hemisphere, there is a lone rock hill in Queensland, Australia that is named Bang Bang Jump Up! This may make you wonder if a hunter found a large kangaroo years ago! • Hat Head National Park in New South Wales Australia boasts sand dunes, wetlands, the clear waters of the Tasman Sea and beautiful beaches. As opposed to “bed head,” which means bad hair, this is a place where a hat is needed for protection from the sunshine. It is about seven hours south of the Sunshine Coast of Queensland, Australia. • There are many odd place names in all countries, including the United States. The state claiming New York City, one of the most fashion forward, sophisticated cities in the world, is also where Hoosick and Owl’s Head are located. However, there is also an Owl’s Head, Maine. Additionally, Maine has Bald Head and Suckerville on the map. (Continues on PG. 8) 1. Name Bruce Channel’s 1962 million-seller hit. 2. Which male singer released “The More I See You” and “Time

Smelly Tonsil Stones Common in Young Adults DEAR DR. DONOHUE: What is the best way to get rid of tonsil stones, besides sticking my finger down my throat as far as I can and trying to dislodge the smelly things? More importantly, what is the way to prevent tonsil stones? I never had them until a year or so ago. -- S.M.

ANSWER: Tonsil stones, or tonsilloliths, are the not uncommon

(one study reported them in 7 percent of young adults) but seldom discussed clusters of calcified material that lodge in the tonsils. Your tonsils, those oval-shaped swellings on the sides of the back of your throat, are important for the cells of the immune system. Tonsilloliths form in the crypts (deep valleys) of the tonsil, and sometimes are visible as white or yellow spots when looking in the mirror. They become bothersome if they are large enough to cause discomfort or difficulty swallowing, but often they are noticed because of their unpleasant odor. Tonsilloliths often spontaneously come out of the tonsils; they usually are described as waxy

Wiseau. The film, panned by critics, had a limited run but became a cult classic of sorts. Franco probably will star with his brother Dave. Dave is currently in “The Lego Movie,” which also features Channing Tatum voicing Superman. Then, Dave’s got “Neighbors” with Seth Rogan and Zac Efron (out May 8), and “Business Trip” with Vince Vaughn, Sienna Miller and James Marsden (Oct. 24). Channing has “22 Jump Street” with Jonah Hill, Dave Franco and Nick Offerman (of “Parks and Recreation”), and cameos from Brad Pitt and original TV “Jump Street” star Richard Greico. His “Jupiter Ascending” with Mila Kunis, Sean Bean, Eddie Redmayne and Douglas Booth will be out July 13. Get the feeling that all these actors are hiring each other to work in their films? No wonder nobody’s asked me to do a film lately! (c) 2014 King Features Synd., Inc.

or hard, with a peculiar odor. I don’t recommend sticking your finger in the back of your throat. The gag reflex can be very strong, and the tonsils have a very good blood supply, so damaging them can be very bloody. Some authorities recommend removal using the tongue attachment of a Waterpik (or similar device), but I have had general success with saltwater gargles. Very large or recurrent tonsilloliths are an indication for a visit to the ENT doctor. *** DEAR DR. DONOHUE: My blood count showed that my hemoglobin is too high. Everything else is normal. My doctor says the hemoglobin is high because I smoke. The doctor is on me, every time I see him, to stop smoking. I want to, but I haven’t been able to. Is he putting me on with another scare tactic? -- S.C.

Groceries and food shopping can eat up a tremendous portion of your budget if you arenÕt careful. The best and most serious moneysaving tip for home economists is to ALWAYS use a list. It really does make a difference to have a plan. Here are some more tips to save money while feeding your family. -- JoAnn “One of the most expensive portions of your meal is probably meats. You can look for larger packages that you can break down, but you also can plan a couple of meat-free meals each week. Also, meals like stew and casseroles use less meat per person but are still satisfying.” -- W.I. in Arkansas Most stores list the unit price on the shelf tag. Use it to compare the cost of different sizes and brands of the same item. Just because a package is bigger doesnÕt necessarily mean it has the best price per unit.

ANSWER: Hemoglobin is the stuff inside red blood cells that grabs onto oxygen as the blood cells pass through the lungs. Determining a person’s hemoglobin is a surrogate for determining the number of red blood cells. The carbon monoxide in cigarette smoke prevents the attachment of oxygen to the red blood cell. The body senses an oxygen deficit. It ups the production of red blood cells to compensate. The hemoglobin count rises. Your doctor is telling you the truth. Now you’ve got two doctors harping on you. *** DEAR DR. DONOHUE: I am writing to see if the medicine I get in the United States is the same that I get from India. I took Evista by Eli Lilly, who says there is no generic; however, my supplier from India says there is a generic. -- A.O.

Remember that typically, the higher shelves and the lower shelves house the better deals. Compare the items on the aisle ends to the same items on their regular shelf. Sometimes, what looks like a sale is not a sale price at all, especially when compared to a store brand thatÕs just as good. “A secret of busy moms: Cook once, eat twice (or three times, if you plan well)! When you prepare favorite recipes that will freeze well, or even just elements of those recipes, make a double or triple batch. Then a few nights of the month, you can just pop something in the oven easily. I cook taco meat once for the month, and we have tacos every week. I just freeze three portions of the meat, and the rest is easy to assemble.” -- K.S. in Florida Send your tips to Now Here’s a Tip, c/o King Features Weekly Service, P.O. ANSWER: India has no patent protection of medications, so many Indian companies make versions of U.S. pharmacologic drugs at greatly reduced cost. Some of the companies are exceedingly reputable, and the drugs are identical. However, you don’t have the guarantee of purity that comes with government regulation of pharmaceuticals in the United States and Canada. While I understand wanting to save money on an expensive medication, you’re taking a risk. I have always dreamed big about my life, even during the tough times. There have many many individuals and many books that helped me through those times. One book in particular has had a large impact on me and I would like to share a chapter of this book with my thoughts on it. The book is “Unlimited Power” by Tony Robbins and the chapter is ” The Seven Lies of Success” Tony Robbins calls these seven concepts lies because if you want to believe they have no bearing on your success then, to you, they are lies. But to those of us who choose to believe them, your live can be changed forever. Here you go: Number One – Everything happens for a reason and a purpose and it serves us. When I was born, I was born with a congenital hip. This caused me to walk with severe limp until I was 45 years old and had my first hip replacement. As a child I went through what you can imagine any child in the 1950′s might go through that was different. I was picked on and called names; now I’m not telling you this so you can feel sorry for me. You don’t need to, I live an incredible life. I tell you this for this reason, I believe that how I was born was one of the greatest blessings in my life it help me to become the person that I am today. It helps me to develop my personality, my work ethic and my attitude. Everything happens for a reason and a purpose and it serves us. Number Two – There is no such thing as failure We don’t fail at things in life; we simply decide that

Q: Can you tell me if Army Wives will be back on Lifetime? I loved that show. -Cheryl, Boise, Idaho A: “Army Wives” was not renewed after seven successful and record-breaking seasons on Lifetime. For all of us who need some sort of closure, Lifetime has come through with a two-hour special, “Army Wives: A Final Salute,” which premieres Sunday, March 16, at 9 p.m. ET/PT. The retrospective provides a look back at the program with members of the cast and production team as they come together for a final, heartfelt goodbye to “Army Wives.” The special features interviews with original cast members, including Wendy Davis, Kim Delaney, Sally Pressman, Brigid Brannagh, Sterling K. Brown, Brian McNamara, Terry Serpico, Drew Fuller and Jeremy Davidson, who reunite to offer exclusive insight into the show and their characters. *** Q: Can you tell me what happened to “Golden Boy”? I never saw a finale episode for it. Is it gone for good? -Diane B., via email

whatever we are trying to do is not worth the time and hardships we must go through to get it. If you think about your life you probably have everything you ever really wanted in life, you decided it wasn’t worth what you had to go through to get it or you are still working on it. There is no such thing as failure. Number Three –Whatever happens, take responsibility The day that we accept responsibility for the things that happen in our lives is the day we become free. We certainly can’t control everything that happens to us but we can control how we act and feel about those things. Whatever happens take responsibility? Number Four – It’s not necessary to understand everything to be able to use everything. There are so many things that you could learn in our business. Different markets, products, companies, riders, underwriting. If we try to become an expert on every possible option that is out there we would never do anything. It’s not necessary to understand everything to be able to use everything. Number Five – People are your greatest resource. We are in the people business. Do you truly care about people and I mean all people or do you only care about those that you can make money on? I believe if we are truly in the people business then we need to care about all people, our clients but also the person who waits on us at the dinner or serves us the coffee at the coffee shop. People are your greatest resource. Number Six – Work is play Mark Twain said, ” to make your vocation your vacation is success”. Love what you do if not look for your passion and follow it. Work is play. Number Seven – There’s no abiding success without commitment. We are committed to something or we are committed to nothing. Absolute commitment can give use the passion to never give up. There’s no abiding success without commitment. Thank you Tony! Good Selling, Bob

ARIES (March 21 to April 19) Your efforts in behalf of a colleague do not go unnoticed, let alone unappreciated. Meanwhile, arrange to spend more time investigating that troubling fact you recently uncovered. TAURUS (April 20 to May 20) Devoting a lot of time to a current career move means having less time for those in your private life. But once you explain the circumstances, they should understand and be supportive. GEMINI (May 21 to June 20) Organizing your many duties in order of importance should help you get through them pretty quickly. Additional information puts that still-to-be-made decision in a new light. CANCER (June 21 to July 22) Lingering bad feelings over a recent misunderstanding should fade as reconciliation efforts continue. Meanwhile, vacation plans might need to be revised because of new developments. LEO (July 23 to August 22) Love dominates the Lion’s heart this week, with Cupid shooting arrows at single Leos and Leonas looking for romance. Partnered pairs also enjoy strengthened relationships. VIRGO (August 23 to September 22) “Getting to Know You” should be the single Virgo’s theme song as you and that special person discover more about one another. That workplace situation needs looking into. LIBRA (September 23 to October 22) You might be upset at having your objectivity questioned in the handling of a dispute.

But it would be wise to re-examine your feelings to make sure you’re being fair with both sides. SCORPIO (October 23 to November 21) A family dispute creates mixed feelings about how you hope it will be ultimately resolved. Best advice: Stay out of it and let the involved parties work it through by themselves. SAGITTARIUS (November 22 to December 21) Making an effort to smooth over even the smallest obstacles now will go a long way to assuring that things run smoothly once you’re set to move on with your plans. CAPRICORN (December 22 to January 19) A challenge to your authority can be upsetting, but your longtime supporters want you to defend your position so you can win over even your most adamant detractors. AQUARIUS (January 20 to February 18) Being unable to get involved in a friend’s problem calls for an honest approach. Provide explanations, not excuses. Another friend might be able to offer support for your decision. PISCES (February 19 to March 20) You find yourself swimming in circles, looking for some way to get back on a straight course. But things get easier once you’re able to refocus your energies. BORN THIS WEEK: You’re known for your charm and your wisdom, and there’s no one who wouldn’t want you to be part of his or her life.

Education Benefits: New Tool for Vets Whether you’re a veteran or a family member using GI Bill benefits or the DoD Military Tuition Assistance Program, if things go wrong, it’s hard to know where to turn. The Department of Veterans Affairs has launched a new complaint system online, in partnership with the Departments of Defense, Education and Justice, as well as the Federal Trade Commission and the Consumer Financial Protection Bureau -- big guns all of them.

This reporting system will help in three ways: Veterans can report negative experiences with a school; the government can identify unfair or misleading practices; quality academic support will be available. The range of complaint topics is broad and includes problems with credit transfers, changes in degree requirements and unfair recruiting practices, all covered by the Principles of Excellence that schools must follow if they receive government money for veterans programs.

Exercise Pays Off Have you noticed that your muscles seem to get weaker as you get older? It’s thought that starting at age 40, we lose about 1 percent of muscle mass each year. Multiple studies have questioned whether that muscle loss is true aging or whether it’s from disuse. One particular study compared “master athletes” (recreational athletes who seriously exercised four to five times a week) who were 40 to 80 years old. Researchers measured leg strength, mus-

The reporting program can be reached on the GI Bill and DoD websites. Once a complaint is received, the agencies will contact the school and work at a resolution. cle mass and fat content of their muscles. They even took MRI scans of cross sections of the muscles of those at various ages who exercised versus those who didn’t. They discovered that the loss of muscle mass and strength was not due to aging alone. Senior athletes had almost as much leg muscle as the younger athletes. There was little fat in the muscles of senior athletes. There was little loss of strength. Which means there’s hope for the rest of us. Here’s my theory, after viewing the photos: We might not get back all the muscles and strength we had when we were very active and younger, but we can get back some of it, even if we’ve been sedentary for years. At the very least we can maintain what we have and avoid further

On March 15, 1820, as part of the Missouri Compromise between the North and the South, Maine is admitted into the Union as the 23rd state. The entrance of Maine as a free state was agreed to by Southern senators in exchange for the entrance of Missouri as a slave state. On March 12, 1888, the most severe winter storm ever to hit the New York City region reaches blizzard proportions. ALTERNATIVES TO LOW-T MEDICATION BY MICHAEL ROIZEN, M.D., AND MEHMET OZ, M.D. Q: My 16-year-old daughter is vaping. Have you heard of this?! How can I persuade her it’s not a good idea? -Gretchen F., Lexington, Ky. A: We confess, we had to do some research on this one! But after smoking out the info, we hope we can help you persuade your teen that using electronic cigarettes can have consequences. For those of you who need a quick course on vaping: It’s a hipster version of smoking tobacco. Retail vaporiums sell flavored vapor cartridges -- with or without nicotine. Placed in high-tech gadgets with names like EGO and iTaste, the cartridges are battery-activated to produce a smokeless cloud when you inhale. The vaping liquids are sometimes made with propylene glycol (other bases are used, but not all companies say what they are). While the Food and Drug Administration says propylene glycol generally is safe in personal-care products and plastics, animal research indicates that inhaling the chemical may affect fertility and the health of offspring. You also can tell your daughter that one study found five minutes of vaping lowers lung function as much as smoking a conventional cigarette. In its favor, this cloud of vapor doesn’t contain the 60 known carcinogens found in tobacco smoke, and it may be a way to kick tobacco (it works for some folks). But as a general rule, putting anything besides relatively clean air into your lungs can lead to a roster of complications, depending on what’s inhaled. If your daughter wants to feel hip, suggest nonpermanent, vegetable-based hair color (try red! blue!); you can live with that, and so can she, right? And for stress relief, suggest joining an afterschool athletic program or doing yoga together. She’ll learn how important it is to inhale without extra chemicals in every breath -- and appreciate how much you want to help.

Q: I’m 48 and just got a prescription for testosterone therapy because I’m tired all the time and am having trouble with my sex life. Now I hear it may be bad for my heart. Can I raise my testosterone levels without taking my low-T medication? -- Steve G., Stonybrook, N.Y. A: Although we don’t know your medical history, there’s a good chance you can elevate your total and free testosterone levels and improve your sex life without your prescription. First, you may not have clinically significant low testosterone. More than 25 percent of low-T prescriptions handed out in the past few years were dispensed without a blood test, which is the only way to know for sure. (When you get a blood test, your free testosterone level is what’s in your bloodstream and is the important number, but many labs report only total T.) Even if you had a blood test, minor illnesses, lack of recent exercise, the time of day, stress or even your favorite team losing a game can cause a temporary drop in free testosterone. So get another (or your first) blood test. If your free testosterone level is below 200 nanograms per deciliter, that qualifies as a deficiency. (Below 300? Repeat the test.) Also, high blood pressure, elevated LDL cholesterol, diabetes or obesity can cause low-T levels. Improve those conditions by eliminating the Five Food Felons and eating nine servings of produce daily, plus increasing physical activity (aim for 10,000 steps a day). That will give every aspect of your life a boost, including your sex life. Using do-it-yourself Tboosters also helps you dodge potential health risks from testosterone supplements. A new study shows low-T therapy doubles the risk of heart attack for men over 65 and almost triples the risk for those younger, if they have a history of heart disease. So, to recap: The smart steps to increase your T level and improve your sex life include improving your diet and increasing physical activity, plus limiting alcoholic drinks to two a day, reducing stress using meditation, stopping smoking if you smoke and increasing cuddle time with your honey. *** Mehmet Oz, M.D. is host of “The Dr. Oz Show,” and Mike Roizen, M.D. is Chief Wellness Officer and Chair of Wellness Institute at Cleveland Clinic. Tidbits® of The Upstate ● Read Online www.UpstateTidbits.com ODD DOTS ON THE MAP (continued): • Speaking of suckers, if you’ve driven across the U.S. on Interstate 40 you’ve probably noticed signs for Toad Suck of Greenville Park, near Conway, Arkansas. Years ago, Toad Suck was a steamboat stop on the Arkansas River. The legend is that riverboat crews would visit a local tavern and “suck whiskey until they swelled up like toads!” The name is still used today for a U.S. Corps of Engineers Lock and Dam, a bridge, and the popular “Toad Suck Daze” festival held in Conway each May. • By the way, most Americans say the name of the Arkansas River using the same pronunciation used for the state: Ar-can-saw. People in the state of Kansas call it the Ar-Kansas, with emphasis on their state name! • Kansas has a small unincorporated town named Canada. David Christie, Speaker of the Canadian Senate from 1874-1878, sent his sons to purchase land in Kansas and other Canadians followed. • Some places have names that have no known reason for their origin. Maybe the answer to those origin questions should be submitted to Why, Arizona! Why is a community about thirty miles north of the Mexican border near Organ Pipe Cactus National Monument. The town name originated from the Y intersection of State Routes 85 and 86. Arizona law required all city names to have at least three letters – or it would have simply been “Y.” By the way, the intersection has since been changed to a T intersection. • If you are looking for Grit, Noodle or Cut and Shoot, you need to go to the state of Texas. Grit was so-named after the texture of the soil. Noodle was named after Noodle Creek, which according to old folk tradition meant “nothing,” meaning the creek bed was dry. (Continues on PG. 11)

When they find evidence of mice in the house -- droppings, gnawed food containers or disturbed attic insulation -- many homeowners will contact a pest-control professional. This is a wise choice if they can’t locate where mice are entering the house or where they’re nesting, because exterminators can help pinpoint those locations. From there on things get decidedly DIY, even with a pest-control service. First, you’ll need to decide on the type of trap to deploy. Most are lethal or injurious to the mouse -- if you’re opposed to killing, few options are available other than to live trap and relocate the mouse. The exterminator may recommend a number of options, including the familiar “snap” trap, open glue traps or an enclosed glue trap, in combination with a rodent poison. He or she may recommend a slower-acting poison that mice bring back to the nest with bait or on their paws or fur -- the poison levels build up until the mouse dies, along with any other mice that have eaten the bait or licked the affected mouse. What to use depends on different factors. Traps and poisons cannot be put into areas of the house where pets or small children can access them. Enclosed traps (sort of like larger roach motels,

where the mouse sneaks inside and gets stuck on a glue pad) are somewhat safer but don’t always work well. The traps need to be placed near suspected nesting areas, but not too close, as mice will figure out the game quickly. And their location and bait need to be changed frequently, about once per week. Place traps or poison in out-of-reach areas where you have found evidence of mice infestation, such as the tops of kitchen cabinets, well inside or behind lower cabinets, and attics or crawlspaces that cannot be accessed by pets. Try different baits in different locations, such as peanut butter, pieces of bread or yeast rolls, or meat. If the mouse doesn’t take the first bait, look at the food packages the mouse has gnawed into and use a bit of that food as bait. Meantime, remove any accessible sources of food. Throw away any packages that have been gnawed open. Undamaged food products that are packaged in cardboard or paper should be repackaged in sturdy plastic or metal containers. Thoroughly clean the cabinets, pantry and other storage areas to remove spilled food, crumbs and mouse droppings. This will allow you to see any new droppings so you can figure out where the mice most often roam. The lack of food also will drive the mice toward the bait and traps. Once a mouse is caught, remove it immediately and clean the spot with an ammonia-based cleaner, like Windex, to remove much of the mouse’s scent and prevent alarming other mice. Bait and place a new trap a few feet away from the old location. HOME TIP: When using a snap trap, try putting the bait inside a small piece of pantyhose before attaching to the trap: the mouse may catch its teeth in the nylon, delaying it long enough for the trap to snap.

Greek Pastitsio Makes a Hearty Family Meal Food and family. So far, 2014 has been filled with both. A highlight was being present around the dinner table when my 89-year-old mother met her 11-month-old greatgrandson, Leonidas (Leo) Nicholas. Four generations were represented, and what a feast it was. Leo’s mom, 29-year-old Stefanie Anduri, is firstgeneration Greek. “I love to cook dishes from my mom’s village, Zevgolatio, in the Peloponnesian peninsula,” said Stefanie, while stirring the sauce for Pastitsio, a hearty pasta dish. “Preparing food with family is as important as eating the meal. Now I want to pass the traditions on to our son.” Spin the globe with your kids and land on Greece. Talk about the Acropolis, the Olympics, yogurt and anything else that is Greek to you. Then prepare Pastitsio and salad. Kali orexi! (Bon appetit!) GREEK PASTITSIO

the onion and garlic until the onion is soft, about 4 minutes. Add ground beef and cook until brown, crumbling with a spoon as it cooks. Add tomato sauce, cinnamon, allspice, nutmeg, salt and pepper. Cover and simmer 15 minutes. Set aside. 3. Meanwhile, cook the pasta until al dente. Drain. 4. For the sauce, in a medium saucepan on medium heat, melt the butter. Add the flour and stir until smooth. Cook for a few minutes. Add the milk 1 cup at a time and bring to a boil, whisking continuously until smooth and thick. Season with salt. 5. Now it’s time to put it all together. Spoon half of the cooked pasta into a 9-by-13-inch baking dish. Cover evenly with half of the sauce, followed by the meat mixture and the remaining pasta. Drizzle remaining sauce evenly over the pasta. Top with cheese. 6. Cover with foil and bake 40 minutes. Remove foil and bake an additional 10 minutes, until lightly browned and bubbly. Let stand a few minutes and cut into squares. Serves 6-8. Serve with Horiatiki Salata, a Greek salad. Simply combine grape tomatoes, cucumbers cut into chunk shapes, chopped green onions, Kalamata olives and feta cheese. Douse with olive oil, fresh lemon juice, and salt and pepper. *** Donna Erickson’s award-winning series “Donna’s Day” is airing on public television nationwide. Roast Up a Feast of Flavors Roasting meats and vegetables is one of the oldest cooking techniques in human history. The earliest form of cooking was probably the direct heat method -- placing raw meat into an open fire. Roasting via indirect heat was probably an accident. Raw meat was left near the fire, cooking the side closest to the heat. Eventually, somebody thought of putting the meat on a stick, and turning it so that all of the sides cooked evenly -- and spitroasting was born. The earliest ovens were made of earth and clay and were found in Central Europe. An earth oven is one of the key indicators of human civilization. It is one of the most common artifacts archaeologist look for at an anthropological dig. Typically, a pit was dug into the ground and then heated, usually by rocks or smoldering debris. The food was wrapped in leaves and set on top of the heat source, then covered with earth. Cooking times are usually long, as the food is cooked by slow roasting. This type of earth oven has been used by many cultures. In pre-dynastic Egypt, each mud-brick house had an oven. The ceramic oven is built of clay or another ceramic material, and takes different forms depending on the culture. It is one of the earliest forms of our modern ovens. In India, it is referred to as a “tandoor.” Ovens were used to cook food and to make bricks. Brick is another ceramic material and was used to make ovens popular in Italy. With no need for spits or constantly turning the food over a fire, oven roasting was born. High-heat roasting concentrates the flavor of meats and vegetables and brings out their natural sweetness.

Best of all, it can be done year-round -on the grill in good weather and in the oven during cold weather. There’s no c o m p a r i son between roasted and steamed vegetables. Roasted veggies have browning, carmelization and crisp edges and texture, which adds to their flavor. Roasted vegetables also add wonderful flavors to dishes without a lot of fat and calories. Roasting garlic, potatoes and carrots can work wonders as fat substitutes in recipes for mashed vegetables, sauces, cream soups and casseroles. You can spread six cloves of roasted garlic over a slice of bread as you would butter. This recipe for Oven Roasted Vegetable Hash is the perfect way to roast up a feast of flavors using your favorite seasonal vegetables!

OVEN ROASTED VEGETABLE HASH You can prepare all the vegetables up to 4 hours ahead, except the onions, which will become bitter. Don’t overcrowd the pan or the food will steam, not roast. 3 to 3-1/2 pounds root vegetables, in any combination* 2 cups broccoli or cauliflower florets 2 medium yellow onions, peeled 3 tablespoons extra-virgin olive oil, rendered bacon or pancetta fat or brown butter, or a mixture of the oils 1 tablespoon poultry seasoning 1 teaspoon ground black pepper 1 teaspoon honey or sugar 1 tablespoon salt 4 ounces aged goat cheese

thick slices. Cut the onions into eights through the root ends, leaving the wedges intact. 3. Line a heavy-rimmed baking pan with foil or parchment paper. Place the oil into a large bowl. Mix the oil with the poultry seasoning, pepper, sugar and 1/2 tablespoon of the salt. Place the onions into the oil and toss to coat. Lay the onion wedges cut-side down in one corner of the pan. 4. Place the rest of the vegetables into the bowl and mix with remaining oil until wellcoated. Scatter the root vegetables over the rest of the pan. Sprinkle the vegetables with the remaining 1/2 tablespoon of the salt. 5. Roast, turning the vegetables every 15 minutes or so with a spatula, until tender and golden, about 45 minutes. The cooked hash can be stored, covered, in the refrigerator for up to 3 days. Warm in a nonstick skillet over moderate heat before serving. To Prep Ahead: Mix the vegetables with the seasoned oil, and cover the bowl tightly with plastic wrap. Set aside at room temperature. Proceed with the instructions for roasting the vegetables. Makes 4 to 6 servings. *Root vegetables include parsnips, carrots, celery root, parsley root, turnips, white or sweet potatoes, acorn or butternut squash, Brussels sprouts, asparagus, green beans and garlic.
