ROAST LEG OF LAMB WITH ANCHOVY Deliciously comforting, and the

leftovers make great sandwich fillers. PREP TIME: MORE THAN 2 HOURS SERVES: 6 INGREDIENTS • 2 kilograms leg of lamb • 4 garlic cloves, thinly sliced • 3 sprigs rosemary, snipped into 2cm lengths • 1 pinch rosemary and olive seasoning, or season to taste • 1 can anchovy fillets in oil • (50g) 23 ml brown gravy powder • 2 tbsp olive oil • 1 dash sherry, or squeeze lemon juice (optional) DIRECTIONS 1. Stuff lamb with garlic and rosemary by making holes in meat with the point of a chef’s knife and inserting a sliver of garlic and a tiny piece of fresh rosemary into each hole. Season with rosemary and olive seasoning. 2. Mash anchovies in their own oil with a little extra olive oil to form a paste. Rub all over meat. Refrigerate for a couple of hours or overnight. Bring meat to room

temperature before roasting. Preheat oven to 200oC. Place lamb on a rack over a roasting pan. Add 2 cups (500ml) water to pan.Roast meat uncovered for 30 minutes. Reduce heat to 180 C ̇ and roast fo ranother 1-1½ hours (uncovered) or until cooked to your liking (on a meat thermometer, medium done reads 71 C ̇ ). Remove lamb from oven and allow to rest for 10 minutes covered with foil before carving. Add 2 cups (500ml) water to pan juices and thicken with Ina Paarman’s brown gravy powder, mixed with a little water. Season to taste. Add sherry or lemon juice for extra flavour. STEP-BY-STEP CARVING Wrap a clean cloth around exposed shank bone. Position leg on its side and, using a very sharp chef’s or carving knife, carve into neat, thin slices. Finally cut along long bones to loosen slices and arrange on a warmed meat platter. Turn leg over and carve other side the same way, until you end up with completely clean bones.

TIP Ensure the butcher doesn’t cut the shank (leg) bone because when carving it serves as a ‘handle’. However, ask them to fillet out the pelvic bone, which can get in the way when carving.

LIME-GLAZED BABY CARROTS The citrus adds a yummy zing to this side dish.

INGREDIENTS • 2 bunches baby carrots, or coloured carrots,

• • •

blanched 30 ml butter 45 ml honey 2 limes, juiced (40ml) and zest

DIRECTIONS 1. Sauté carrots with butter, honey and the lime juice and zest until honey caramelises, about 5 minutes. 2. Serve immediately.

CHOCOLATE FRUIT CAKE CASSATA A luxurious cold dessert for a summer Christmas.

Pour mixture into mould lined with ice cream. 5. Place cling wrap on top and set in the freezer for 3 hours or overnight. 6. FRUIT MINCE PIES Don’t want to stress you out or

anything but Christmas is now merely weeks away - get ahead by making these mince pies now and putting them in the freezer. INGREDIENTS • 2 tablespoons brown sugar • 2 tablespoons brandy • 1 small Granny Smith apple, peeled, cored, coarsely grated • 85g raisins, coarsely chopped • 85g currants • 85g sultanas • 60g glace cherries, coarsely chopped • 115g (⅓ cup) breakfast marmalade • 1/4 teaspoon mixed spice • 600g (4 cups) plain flour • 80g (½ cup) icing sugar mixture • 300g chilled butter, chopped • 2 egg yolks • 4-5 tablespoons water

• •

White sugar, to sprinkle Icing sugar, to dust

DIRECTIONS 1. Combine the brown sugar, brandy, apple, raisins, currants, sultanas, cherries, marmalade and mixed spice in a bowl. Set aside, covered, stirring occasionally, for 1-2 days to macerate. 2. Place the flour, icing sugar and butter in the bowl of a food processor and process until it resembles fine breadcrumbs. Add the egg yolks and water, and process until the dough just comes together. 3. Turn the dough onto a lightly floured surface and knead until smooth. 4. Preheat oven to 180°C. Roll out the pastry between 2 sheets of non-stick baking paper until 3mm thick. Use a round 6.5cm-diameter pastry cutter to cut 40 discs from the pastry. Line forty 30ml (1 ½-tablespoon) capacity patty pans with the discs. Use a fork to prick the bases. 5. Re-roll leftover pastry between 2 sheets of non-stick baking paper until 3mm thick. Use a round 5cm-diameter pastry cutter to cut 40 discs from the pastry. Spoon 1 heaped teaspoon of fruit mixture into each pastry case. Top with pastry discs. Press edges to seal. Sprinkle with white sugar. Bake for 30-35 minutes. Set aside for 15 minutes to cool before transferring to a wire rack to cool completely. Dust the pies with icing sugar to serve.

CREAMY CHRISTMAS EGG NOG INGREDIENTS • 4 egg yolks • 1 tin sweetened condensed milk
 • 1 tablespoon white sugar • 1 teaspoon vanilla extract • 4 1/2 cups milk
 • 4 egg whites
 • 2/3 cup of rum
 • 1/4 teaspoon ground nutmeg DIRECTIONS 1. In a large mixing bowl, beat egg yolks until they are thickened and light. 2. Gradually stir in condensed milk, sugar, vanilla and milk. 3. Beat the egg whites until stiff, then add them to the milk mixture. 4. Stir rum into the mixture (to taste). 5. Garnish with nutmeg. Source: http://allrecipes.com This recipe contains raw eggs. HEALTH

Stay healthy this silly season

Keep your body feeling great with these top 10 tips for smart partying. The warmer weather is well and truly here and Christmas is fast approaching. You can feel the party vibe in the air. At this time of year our healthy diets and lifestyles can easily go out the window as we overindulge in rich food and alcohol. With a little planning, though, you can stay in good health while still enjoying summer and all its festivities. Some pre-party preparation and a few tweaks to the diet can minimise the potentially unhealthy effects of partygoing. Of course it is always best for your health to limit yourself to a couple of drinks when you go out. However, if you’re one of those people who gets swept up in the moment and finds it hard to stick to two or three, follow these simple steps to look after your health and help ease those dreaded next day symptoms. HERE ARE OUR TOP 10 WAYS TO PROTECT YOUR HEALTH. 1. Eat before you drink Never drink alcohol on an empty stomach. Always eat something nutritious before you head out. This will slow down the absorption of alcohol into your bloodstream. When drinking, avoid snacking on high-fat foods such as hot chips and pizza and instead go for healthier snacks such as dips with crackers and breads, olives, nuts and grilled seafood. 2. Drink slowly Play it safe and stick to no

more than one alcoholic drink an hour. This will give your liver time to process the alcohol properly and prevent a build-up of alcohol in your blood. Try ordering a nip in a schooner glass of soda water so it lasts longer, or drink a glass of water or a nonalcoholic drink between alcoholic ones. 3. Avoid dehydration Alcohol is one of the major causes of dehydration. We lose fluid and important electrolytes such as magnesium and potassium when our body processes alcohol. Many common hangover symptoms – including headache, dry mouth and thirst – are at least partly caused by dehydration. The best way to combat dehydration is to drink plenty of water when you are out and have an electrolyte drink before you go to bed. 4. Up your antioxidants Drinking alcohol leads to an increase in free radical production, resulting in damage to cells in the body. Increasing your antioxidant intake is the best way to combat this. Vitamin C, found in oranges and other citrus fruits, berries, guava, rose hip tea and parsley, is a powerful antioxidant. Other rich sources of antioxidants include berries such as acai berries and blueberries, green and white tea, tomatoes and other red and orange fruits and vegetables. 5. Take a multivitamin Alcohol depletes the body of important nutrients such as vitamin C, magnesium and zinc, and our

eating may be less balanced during the festive season. Taking a good-quality multivitamin daily is a good way to help replenish your body’s stocks of these essential vitamins and minerals and to protect your general health.

• Dr Janine Niegaardt • Dr Ian Heyns • Dr Sureta Wiese • Adri van Zyl (Oral Hygienist)

6. Eat garlic Garlic contains an amino acid called S-allyl-cysteine, which neutralises acetaldehyde, a highly reactive by-product of alcohol metabolism. You could also take a garlic supplement. 7. Eat probiotic yoghurt Eating probiotic-rich foods such as yoghurt and miso and taking a probiotic supplement daily will help boost good intestinal bacteria, which can be disrupted when you drink too much alcohol or eat lots of rich food. Natural hangover helpers Coconut water: Naturally rich in electrolytes, coconut water is good for rehydration. Ginger: It’s soothing for the digestive tract and helps relieve nausea. Try chilled ginger tea with lemon or add fresh ginger to a vegie juice. Nux vomica: The Nux vomica tree seeds are a homeopathic remedy for hangover symptoms. Available as tablets or liquid from chemists.
