Grilled Yellow Potato Planks

Prep Time: 15 minutes | Grill Time: 20 minutes Servings: 4 3 tablespoons olive oil 1 clove garlic, minced 2 teaspoons finely chopped fresh rosemary leaves 1/2 teaspoon salt 1 1/2 pounds (about 4) unpeeled yellow potatoes, cut into 1/2-inch-thick slices Preheat grill. Combine oil, garlic, rosemary and salt in dish. Add potato slices and turn until well coated. Grill potatoes for 8 minutes or until soft. Turn and continue grilling 10 minutes longer or until cooked through. Remove from grill and serve. After spending 12 or more years attending school, graduation can be a momentous event for students who are about to enter the “real world.” A graduation party gives students a chance to celebrate the friendships they’ve made, the memories of the last several years and the opportunities to come. The choices for graduation parties are virtually endless. One significant consideration is the date of the party. If you want your party to take place on your actual graduation date, then expect to be competing with other students — some of whom may be your close friends. Unless you want few guests or you prefer to spend the entire day hopping from one party to another, it’s best to come up with a date that will be yours and yours alone. Therefore, select a date that is one or two weeks after the big day so more friends will be able to attend. When it comes to planning the party itself, there are many ways to set your event apart from others. Here are some ideas you can consider. ■ Make it a red-carpet event. Think like Hollywood movie premieres and set up a red carpet in your yard or at the party venue, complete with a backdrop of photos, school logos, mascot pictures, and anything else that represents your school. As guests arrive, have them walk the red carpet while others snap photos of them for later use in scrapbooks. ■ Recreate a movie-inspired graduation scene. Think about those classic teen movies that you love, and borrow ideas for your party theme from them. For example, if the carnival graduation party scene from “Grease” is your all-time favorite, plan a carnival-themed graduation party. There are many

vendors who will rent inflatable moon bounces, amusement park rides and the like. Serve fair food, like corn dogs and funnel cakes. ■ Host a club party. It’s hard not to have fun at a party that focuses on dancing and snacking. Check with neighborhood dance clubs if they are open to off-hours private parties. Sometimes nontraditional party venues rent their spaces if they’re guaranteed a certain amount of revenue. Find out whether they have a DJ on staff or you’ll have to find someone to take care of the music and emcee the event. ■ Do a classic beach party. While this party is dependent on the weather, there is something special about a beach party that stretches into the evening. Whether you choose to serve barbecue or seafood treats that seem like they were caught that day, a picturesque seaside location is all you need to create the right ambiance. Try to select a beach that has access to changing rooms so that guests can switch out of swimsuits later on if they desire. If you want to create a beach bonfire, be sure to check local ordinances to see if it’s legal. ■ Plan activities all guests will enjoy. If the party will include a mix of family and friends, select games that can appeal to different age groups. A variation on the newlywed game, in which guests have to answer questions about the grad to see how well they know him or her, can be a fun game. ■ Select a meeting place and just have an easy pot luck party with fellow grads. Meet at a theme park, pool club, club, movie theater, or restaurant and employ a pay-your-way party concept. This way everyone will be together, and the party won’t involve a lot of elaborate planning or expensive budget busting.

Though these plants can be appealing and make a property stand out, if the plants are not native to the region, they could be doing more harm than good. Instead of upgrading your property with exotic plants from a far away land, consider the following benefits of choosing native plants before addressing your landscape. ❚ Native plants benefit local wildlife. Keep a Pet Safe in the Car

Benefits to Pet Adoption

People love their pets. They dress them up, organize their birthday parties and often bring their cats or dogs along on errands and road trips. But a well-meaning pet parent could be putting their companion at risk.

Adopting a pet can be both beneficial to the animal and to the family

1. Riding in the driver’s seat: Many pet parents place their pooches on their laps when going for a car ride. A pet in a driver’s lap could inadvertently hit the gear shift, distract the driver, end up under the accelerator or brake, or attempt to lunge out of an open window.

More than 11 years ago — ready to become a pet parent — I stepped into the local animal shelter and perused the cages to find a new companion animal. The shelter was filled to capacity, mostly with pit bulls and other large, abandoned dogs. In one cage I saw a mound of mismatched fur and realized I had found “the one.” It was difficult to describe the dog's appearance. He looked like a cross between an Ewok and Gizmo the gremlin. He was around 3 months old and had been found wandering the streets alone. His cage was marked "terrier mix," so there was no way to fully know the breed or how large the puppy would get. Despite the way he started his early life, the dog wagged his tail and was very affectionate to me. I decided to take the plunge and adopt him. Eleven years later, my dog Happy is still a part of my family. I can say I've never met a more laid-back, well-behaved and relatively trouble-free dog — and that comes with a history of many pet dogs growing up and my father even having owned a pet shop at one point. If I ever choose to welcome another dog into my home, I'm certain I'd go the adoption route.

Pets in Shelters According to the ASPCA, many of the shelters operating nationwide are independent organizations, and there is no reliable means of tabulating just how many dogs enter their shelters every year. It is estimated that anywhere between 5 to 7 million companion animals enter a shelter every year. Approximately 3 to 4 million are euthanized, and only 15 to 20 percent are returned to their owners due to microchip or tag identification. The National Council on Pet Population Study and Policy says

There may be no better incentive to pet adoption than knowing you are saving a life. most of the pets are destroyed simply because there is no one available to adopt them. There are a number of reasons that dogs end up in shelters. Many times, a family moves and may not be allowed to have pets in their next residence. Sometimes older people can no longer take care of a dog, especially if they're moving into a nursing home. Some individuals simply misjudge the size or the responsibilities of  having a dog and surrender the animal.

Dog Adoption

Despite the vast number of available pets in shelters, there are many people who continue to think a better dog is one that comes from a pet store or private breeder, especially if a pure breed is desired. Keep in mind that 25 percent of dogs who enter local shelters are purebred, according to the NCPPSP.

Save a life. There may be no better incentive to adoption than knowing you are saving the life of a dog that would probably be on its way to being destroyed. You are also saving the life of another animal that can then fit into the shelter and get a chance for a forever home. Even pets that are in no-kill shelters may not have the quality of life that they deserve. Often they are kept in cages, and some actually develop personality ticks due to the lack of exercise and confinement. Save money. Purchasing a pet can cost a substantial amount of money. Depending on the breed, some dogs can cost hundreds of dollars, or even thousands of dollars for designer breeds. When adopting a pet, fees help shelters mitigate the cost of feeding, housing and providing healthcare for shelter animals. Your adoption fee, in part, helps all of the animals in the shelter. Furthermore, the shelter often vaccinates and neuters the animals prior to adoption, helping to save you the cost of these procedures. Get a healthy dog. Some dogs at shelters do have special care requirements, but the majority of them are healthy pets. The shelter will have a veterinarian examine and treat

the dogs, helping to ensure you start out your life together on a healthy note. This is not always the case with dogs purchased from a breeder. Some pet stores get their dogs from high-turnout puppy mill breeders, where overbreeding may result in genetic problems with puppies or illness from overcrowding. Get a dog that's already trained. Shelters house animals of all age groups; therefore, if a housetrained pet is desired, or one that has learned some commands, you may be in luck. Older dogs may not need the same amount of preliminary training that can make puppies frustrating. Older dogs may have outgrown boisterous behaviors, making them ideal for quiet households. Get a pet that is already socialized. Having spent some time in a shelter interacting with other animals and people may offer a measure of socialization to the pets. It may be easier to acclimate the dog to a new environment. He or she also may be very grateful for having been adopted and be especially devoted. There are many advantages to adopting a pet from an animal shelter. To find area shelters, look in the classified section of your local newspaper. National Web sites, such as PetFinder.org, can also help men and women narrow down the list of available pets.

2. Driving without a seat belt: Just as people should buckle up, so should pets. The safest manner of travel is to have the pet in a carrier that is secured in the car. For larger dogs, a harness that keeps the dog seated in the backseat is ideal. 3. Riding in the truck bed: Pickup truck drivers may think it’s fine to have their pooch ride in the open air of the truck bed. However, a dog may chase after an animal on the side of the road, attempting to leap out while the vehicle is in motion. A leashed dog may end up becoming hanged or dragged behind the truck. Always keep pets inside the vehicle when traveling. 4. Riding with face out the window: All it takes is one small stone or some other debris to end up in a pet’s face to blind him or her. Plus, rushing wind can damage a pet’s sensitive ear drums. Although many dogs can’t resist the temptation of putting their heads out of a car window, it is safer to keep them inside. 5. Making dogs jump in and out of the car: As pets get older, they, too can succumb to some of the side effects of old age. Larger dogs may experience arthritis or hip discomfort. It can be uncomfortable to jump in and out of a vehicle, particularly a truck or SUV. Dog ramps are a safer option, and one that keeps a pet’s comfort in mind. 6. Failure to use ID: A microchip and a collar with personal information is essential for the pet that travels with his or her human companion. In the event the pet becomes lost, these methods of identification will help the pet be reunited with its owner much more quickly.

Grilled Potato Kabobs with Lemon Herb Drizzle

Prep Time: 20 minutes | Grill Time: 10 minutes Servings: 6 Lemon-Herb Drizzle 1/4 cup extra virgin olive oil 3 cloves garlic, minced 2 tablespoons chopped fresh herbs (such as basil, rosemary, marjoram and sage) 1/2 teaspoon sea salt, or to taste Juice of 1 fresh lemon Freshly ground black pepper to taste Potato Kabobs 1 pound russet potatoes, scrubbed 1 (12 ounce) package precooked chicken sausage, sliced 1/4-inch-thick on the diagonal 2 ears fresh corn, cut into 1-inch pieces 1 zucchini, sliced 1/4-inch-thick on the diagonal Heat olive oil in small saucepan until very hot; remove from heat and stir in garlic. Let cool, then stir in herbs, salt, lemon juice and pepper; set aside. Place potatoes in medium microwave-safe bowl and cover with lid or plastic wrap. If using plastic wrap, make sure plastic wrap is not touching any ingredients and poke one small hole in cover to vent. Microwave on high for 10 to 12 minutes or until potatoes are tender (cooking time may vary depending on micro­wave). Use oven mitts to carefully remove from microwave. When cool enough to handle, cut into large chunks. Thread potatoes, sausage and vegetables on skewers. Grill over medium-high heat for about 10 minutes, turning frequently and brushing with a little of herb mixture during the last few minutes of cooking. Remove from grill and place on platter; drizzle with remaining herb mixture. cups graham cracker crumbs cup butter, melted teaspoon Ground Ginger packages (8 ounces each) cream cheese, softened cup sugar cup milk tablespoons flour teaspoons Pure Lemon Extract teaspoon Pure Vanilla Extract eggs

1. Preheat oven to 350°F. Mix graham cracker crumbs, butter and ginger. Press firmly onto bottom of foil-lined 13 x 9-inch baking pan. Refrigerate until ready to use. 2. Beat cream cheese and sugar in large bowl with electric mixer on medium speed until well blended. Add milk, flour and extracts; mix well. Add eggs, 1 at a time, beating on low speed after each addition, just until blended. Pour over crust. 3. Bake 40 to 45 minutes or until center is almost set. Cool completely on wire rack. 4. Refrigerate 4 hours or overnight. Lift out of pan onto cutting board. Cut into bars. Garnish as desired. Store leftover bars in refrigerator.

Prep Time: 30 minutes | Grill Time: 60 minutes Servings: 8 Non-stick cooking spray 1 medium onion, halved and thinly sliced 1 1/2 pounds Yukon gold potatoes, very thinly sliced 1 1/3 cups shredded low-fat sharp cheddar cheese 1/3 cup real bacon bits 1/3 cup chopped bell pepper (any color) 1/2 teaspoon garlic salt Spray 9 x 9 x 2-inch foil pan liberally with nonstick cooking spray. Place half the onions, potatoes, cheese, bacon bits, bell pepper and garlic salt in pan. Repeat layers. Cover tightly with foil; grill over medium heat for 1 hour, rotating pan occasionally to avoid hot spots.
