Entertaining Tips n

Prep the Night Before — save time by chopping vegetables or prepping glazes the day before. For example, prepare the spread for Goat Cheese Bruschetta with Berry-thyme spread the night before. the day of the party, toast baguette slices 10 minutes before guests arrive, and the delicious appetizer will come together in minutes.

Allow for Creativity — Allow guests to put their own finish ing touches on their dishes by setting out a variety of toppings. Waffles provide a base for your friends and family to get creative.

Make It a Group Effort — ask guests to bring their favorite holiday side dishes or desserts to complement the main course to encourage a wide variety. if you’re making red tart Cherry Glazed Ham as the centerpiece of the meal, let guests know so they can plan accordingly.

Don’t Forget the Holiday Fare. Just like parties are a staple of the holiday season, so, too, are certain foods and types of music. Few people indulge in some eggnog outside of the holiday season, so make sure there’s plenty of eggnog on hand. and don’t forget the gingerbread cookies, either. as people enjoy holiday goodies, make sure they do so with holiday music playing in the background. Choose songs that guests know and to which they can sing along.

Host a holiday giveaway. though it can be fun to do a secret santa, chances are guests already have enough gifts to buy. But hosts can spice things up with a holiday giveaway that rewards guests. Host a holiday-themed round of trivial Pursuit or a holiday movie trivia game that encourages guests to compete for prizes. Prizes can be small and inexpensive, but guests will be sure to enjoy some friendly competition for holiday-themed prizes. Consider issues such as small children - do you need to make sure your house is child-friendly and/or do you to have put away delicate items? and do you have things available that might entertain them? if very small children are coming, then make sure plugs are protected and stairs can be blocked. if you don’t have any children, use your local library or visit a few book stores to stock up on kids’ books and films before they arrive. at the other end of the scale if you have elderly relatives coming, check out if there are rugs or obstacles they could trip over. Will they have trouble getting in and out of the bathroom?

With mil lions of packages moving across the country every day, knowing how to pack and when to ship your gifts can save you time and money, taking the hassle out of holiday shipping. new, sturdy boxes with the flaps intact, and do not reuse boxes. Select a box that is large enough to accom modate the proper thickness of cush ioning material.

Christmas travel, make every effort to purchase tickets early.

Go off-peak. Weekend travel, which often includes Fridays and Mondays, is almost always more expensive than travel during the week. If possible, schedule both departing and returning flights for Tuesday, Wednesday and Thursday.

Timing is everything.

Typically, there is less demand for the first and last flights of the day, which means less competition for seats and the possibility of lower fares. Prep time: 20 minutes Cook time: 20 minutes Yields: 10 servings 1 pound Savory Sage Sausage OR 1 pound Italian Sausage Roll 1/2 box frozen chopped spinach, thawed and well drained (10 ounces) 1/2 cup Italian bread crumbs 1/4 cup shredded Italian three cheese blend, divided 50 cleaned mushroom caps Preheat oven to 375°F. In large skillet, cook and crumble sausage until brown. Remove and place in large mixing bowl. Squeeze liquid out of spinach. Mix into the sausage mixture: spinach, bread crumbs, and half of the cheese, blend well. Lightly spray baking sheet with cooking spray. Form balls with about a tablespoon of sausage mixture, and place in cleaned mushroom caps. Top stuffed mushrooms with remaining cheese blend. Place mushroom caps on baking sheet. Bake for 15 to 20 minutes, or until mushrooms are tender.

Make ahead and freeze, then pull out and bake when unexpected guests pop in. Prep time: 15 minutes Cook time: 15 minutes Yields: 36 servings 1 pound Original Recipe Sausage Roll, at room temperature 1 can crescent roll dough (8 ounces) Remove crescent roll dough from can. Do not separate rolls. On top of a piece of plastic wrap or aluminum foil, pinch triangles together, and then pinch the rectangles together to form a long rectangle that is about 18 x 14 inches, gently pulling dough as needed. Carefully spread sausage in an even layer over dough. Roll dough lengthwise to form a long roll. Wrap in the plastic wrap or foil. Freeze for 15 minutes. Preheat oven to 350°F. Using a serrated knife, cut dough into 1/2-inch-thick slices. Place on ungreased baking sheet. Bake 15 to 20 minutes, or until sausage is cooked through. Drain off any juices. Serve hot. Refrigerate leftovers. Serving suggestion: This recipe may be doubled. Pinwheels may be frozen after slicing. When ready to serve, thaw slices in refrigerator for 30 to 60 minutes and bake.

1/2 package (12 ounces) Mashed Sweet Potatoes 1/4 cup mini marshmallows 1/4 cup honey roasted pecans 1/4 cup cooked bacon, crumbled 1/4 cup maple syrup, warm Prepare sweet potatoes by following the recommended microwave instructions on package. Place about 1/3 cup mashed potatoes in bottom of each martini glass. Layer about 1/3 cup (1/8 package) sweet potatoes over mashed potatoes. HOW TO CHOOSE THE

Right Tree

hoosing the family Christmas tree can be a seasonal highlight or headache. Everyone has an opinion, and generally, bigger and fuller is seen as better.

Types of Trees

The first decision is what type of tree to go for. There are basically three choices: Artificial trees, Pre-Cut Trees, Live, Potted or Balled and Burlaped trees.

Artificial Trees

These do have their advantages particularly if you have young children or pets as they don’t shed needles and can be packed away every year once you have finished with them. This option can save money in the long run as you won’t be buying a new tree each year.

Pre-Cut Trees

The obvious advantage of a precut tree is convenience. There are always hundreds to choose from. The retailer will make a clean cut on the trunk for you and they will usually wrap the tree in plastic mesh, making it easier to get into the house and to set up in the stand. The down side to pre-cut trees is that they were probably cut weeks before they appear at nurseries in your area, which is often weeks before Christmas. You are also usually limited as to variety of tree, the bulk of pre-cut trees being some type of balsam. If you are set on a particular variety of evergreen, such as a Douglas Fir, you may have to pay a high price. Finally, the drawback to both pre-cut and cut your own trees is that they are dead and so they are slowing drying out and dropping needles all over your floor and your presents.

Live Trees

The final Christmas tree choice is a live tree. You may need to pre-order a live tree or even buy

it during the growing season as many can be cut and shipped well before the season. Live trees will, of course, be the freshest choice. If your tree is potted and small enough to move, you can re-use it for several years. But if your objective is to use the tree for the holidays and then plant it in your landscape, there are several more factors to consider, like mature height and width and when are you going to get it into the ground.

What to Look For When Choosing a Live Tree

White Fir or Concolor Fir - This fir is relatively new as a Christmas tree and becoming increasingly popular. The blue-green needles are 1/2 to 1-1/2 inches long with both a nice aroma and good needle retention. A very attractive tree.

Needles - Basically there are short-needled spruces and firs and long-needled pines. Of greater concern than needle length is their needle-holding ability. Something like a hemlock is totally unsuitable because the needles start dropping as soon as the tree is cut. Spruces will lose their needles more readily than pines, when drying out. Freshness - A fresh tree will look healthy and green, with few browning needles. The needles will feel pliable and when broken and squeezed, they will exude pitch. A simple test for freshness is rubbing your hand along a branch to see if needles fall off.

Norway Spruce - Pretty tree with poor needle retention. Scotch Pine - This is one of the most popular Christmas trees. The branches are stiff with ridged, dark green needles that hold for four weeks and don’t drop when dry. As a bonus, Scotch Pine has a nice, lasting aroma.

White Pine - White Pines are having a difficult time right now. When healthy, they will retain their blue green needles throughout the holiday season. They make a very full Christmas tree. Because they have little to no fragrance they are a good choice for people who have allergic reaction to the spicier trees.

Shape - Most evergreens don’t grow into perfect conical Christmas trees. Growers shear the trees each year to maintain a nice shape and to encourage the branches to fill out. A full tree is beautiful on its own, but if you have a lot of ornaments, a tree with shorter branches might be a better fit. Ornaments get lost in lush trees, like the firs. Also keep in mind the sturdiness of the branches. Many pines make tempting choices because of their long needles, but the branches will bend under the weight of even smaller ornaments. Here’s a breakdown of popular evergreens suitable for use as cut Christmas trees:
