A look back Here is a look back at some of the sports highlights that happened during the 2012-13 school year: August Aug. 15: East Coweta opens the 2012 softball season with a 4-1 victory over Northgate in the Georgia Dugout Club Tournament. The Lady Vikings come into the season fresh off a Class AAAA state title in 2011. Aug. 24: The Newnan Cougars get a jump on the season, kicking off the 2012 campaign a week early than most schools with a 38-29 come-from-behind victory against Marietta. East Coweta and Northgate will play their openers a week later. All three teams featured first-year starting quarterbacks as sophomore Bailey Bryant started for Newnan, junior Bryce Gemmel for East Coweta and senior Josh Harrison for the Vikings. SEPTEMBER Sept. 6: The East Coweta Lady Indians volleyball team end Northgate’s seven-year run as Coweta County champs, winning the title with victories over both the Lady Vikings and the Newnan Lady Cougars. Sept. 6: In the first of three meetings between softball rivals, East Coweta pitcher Megan Chocallo lifts the Lady Indians to a 2-0 victory over Newnan. Sept: 12: The East Coweta Indians became the second-straight victim from Coweta County to lose to Sandy Creek on the football field, falling to the Patriots 31-7. A week earlier, Newnan lost to the Patriots 38-7. Sept. 14: Newnan Cougars put together a fourth-quarter comeback against Troup County to win 21-14 to move their record to 3-1. The Cougars had to rally for all three wins during the first month of the season.

STATE CHAMPS: Northgate’s girls soccer team captured the program’s first state championship in impressive fashion last month, knocking off longtime Fayette rivals McIntosh and Whitewater in consecutive playoff games to finish on top in Class AAAAA.

T

he 2012-13 school year in Coweta County will be remembered for state champions, the end of some long-standing eras, and quiet simply some dramatic moments that helped shape and define the past nine months on the field, in the gym, on the track and in the pool.

There were also plenty of heartaches as teams ended their seasons with sour taste in their mouths after coming up just short of region or state titles. Northgate High School could easily be called the school of state champions thanks to wrestler Tyler Askey winning his fourth state title and finishing with a

194-0 career record. The Lady Vikings soccer team also wove their magic, winning the Class AAAAA state title with a 4-1 victory over top-ranked Whitewater putting an end to Fayette County dominances.

bring friends together around the table Family Features

T

here are no better reasons for outdoor entertaining than good friends, good food and good weather. “I’ve made a lot of friends around the table in my life,” said Rebecca Lang, food writer, television personality and author of such cookbooks as “Around the Southern Table.” Lang’s favorite dishes are those that are easy on the cook and incorporate Southern specialties, such as Vidalia onions. Whether you’re planning for several dozen guests or inviting over a few close friends, impress them with delicious dishes in a comfortable setting.

First- through fourth-graders relax and read during the Reading Safari at Heritage.

Reading program nets great reads for Heritage students Students at the Heritage School recently traveled into the jungles of their media center on a successful safari in search of good books. Jo Dennin, media specialist at the school, created an encompassing Safari theme in the Katie Arnall Freeman Media Center. Dennin and others at Heritage put much energy into hand-making jungle-themed decor throughout the entire library for the event. A three dimensional Jeep – an extension of the mural behind it – was a big hit with students. “It was a great morning of reading activities,” Dennin said. Students entered the media center to discovered its transformation into a jungle and African

Savannah complete with lions and tigers. “Students in first grade through fourth grade brought lots of great books to read. During the morning they also participated in Literature Trivia and listened to teachers read wonderful stories,” Dennin said. A guest for the day was Curtis Richardson, a professional storyteller from the Wren’s Nest in Atlanta. He “entertained students with wonderful stories,” Dennin said. “It was a great morning for everyone.” The Wren’s Nest is the home of author Joel Chandler Harris and is a museum.

OK, it’s better than Ethiopian Time for something a little different. The past three-day weekend gave me a chance to try out a few dishes. First was the necessity of getting another smoker. I say another because, well, I’ve been through a few. So I rocked in a couple of Boston Butts and some pork loins. Dry rub only, thank you very much. And unlike most, I usually use mesquite wood chips for my smoke. I guess it’s the Oklahoma roots in me. Another night it was lamb curry. We are still playing with that one simply because we keep trying different curry seasonings. You’d think curry was curry. But curry is like tomatoes, there are so many different varieties after a while you just say, “I want a red one.” Anyway, that got me looking back over some favorite recipes. Which in turn just made me dang hungry. For those who follow this column, you know that the Little Black Dress and I believe the kitchen is the heart of the home. It’s where we create with the SONs of Thunder. Where we dance. We cook. Over the years we’ve tried out various recipes on friends. Because of their willingness to serve as food tasters, we always name the dish after them. And in our latest book, The Little Black Dress and the SONs of Thunder - Recipes on Life and Food, we also include the story of how we came up with the dish, followed by the actual recipe. So here’s “The Warren’s ‘Okay This Is Better Than Ethiopian Food’ Rosemary and Crab Chicken.” Kelly Warren has been one of the Little Black Dress’s dearest friends for ages. In fact, they met in the woods, but that’s another story. The LBD and I went to see Kelly get hitched to Jeff in New York, and it was at that time Kelly gave me “suggestions” on what type of wedding ring The Dress would like. Amazing how women stick together. Anyway, Jeff and Kelly came down to our wedding and we all planned for them to come down after we got settled. Well, they finally made it and wanted to go have Ethiopian food. For some reason, I don’t see the connection between “food” and “Ethiopia” so I convinced The Dress to convince Kelly and Jeff to come to our house for dinner instead. Now, knowing I had to beat these New Yorkers’ ideas of “great Ethiopian food,” I spent about six hours digging through every cookbook I have. With a hint from that book and an idea from another and

JOHN WINTERS

so on, this is what we came up with. It must have worked, nothing was left.

Rosemary and Crab Chicken 4 chicken breasts, boneless, skinless and pounded to ¼-inch thickness ——— 2 eggs ——— 1 cup bread crumbs ——— ½ cup of rosemary leaves ——— 1 small can of crab, get it fresh if you can ——— 1 tomato, diced Pound the chicken breasts between some saran wrap and a meat tenderizer or some such thing until they are one-quarter inch thick. Pound from the inside and work your way out by pushing it. Mix the eggs up in a bowl. Dredge the chicken in the eggs then let the excess drip off. Put the bread crumbs in a dinner plate. Sprinkle the chicken with the rosemary leaves and then place them one at a time in the bread crumbs. You want to completely cover the chicken with the crumbs. Do that with each one and set aside. Get a large skillet and put a teaspoon or so of vegetable oil in and turn on to medium high heat. Put each of the breasts in and cook about 4 minutes on each side. Don’t let them dry out, if that happens, add a little more vegetable oil. After they are done, put each one on a dinner plate, or whatever you are serving on. Take the crab and put some on top of each breast. (You can heat the crab up in a little butter beforehand if you want). Follow that with the diced tomatoes. Hope you enjoy.

Grilling safety tips

Tacos with Lime Marinated Vidalia Onions and Grilled Italian Sausages

(pictured on front page) Servings: 4 to 6 “Tacos loaded with color and flavor spice up a summertime cookout like nothing else,” Lang said. “Arrange all the ingredients on a platter for tacos that are pretty and easy for guests to put together.”

Servings: 8 (makes 16 sliders) “These little burgers pack a big punch with both caramelized and grilled Vidalia onions,” Lang said. “They’re gloriously dressed up with blue cheese, fancy mayonnaise and pickled okra. Look for slider buns in your local bakery or bread section of larger grocery stores or use small dinner rolls.” 1/2 cup mayonnaise 2 tablespoons freshly squeezed lemon juice 1/8 teaspoon cayenne pepper 1/2 teaspoon paprika 1/2 cup chopped pecans, toasted 2 tablespoons olive oil, divided 2 Vidalia onions, divided 1 pound lean ground beef (7% fat) 1 pound ground chuck (20% fat) 5 ounces crumbled blue cheese (1 1/4 cups) 1/4 teaspoon salt 1/4 teaspoon freshly ground black pepper 16 slider buns or round dinner rolls 24 pickled okra pods, sliced lengthwise in half 2 cups baby arugula Wooden picks, optional Whisk together mayonnaise, lemon juice, cayenne and paprika. Stir in pecans. Cover and refrigerate until serving. Heat 1 tablespoon olive oil in large skillet over medium heat. Cut 1 onion into half-moons. Cook onion 18 to 20 min utes, stirring often, until caramel colored. Cool and chop into 1/2-inch pieces. Preheat grill to medium heat. Slice remaining onion into 1/3-inch-thick slices. Rub with remaining tablespoon olive oil. Grill for 6 to 8 minutes per side, flipping carefully with spatula, or until softened and grill marked. Cut each slice into 3 or 4 wedges. Set aside. Combine lean ground beef, ground chuck, blue cheese, caramelized onion, salt and pepper. Divide beef mixture into 16 equal portions (scant 1/3 cup each); gently shape each portion into 3/4-inch-thick patty. Arrange patties on lightly oiled grill rack; grill 7 to 8 minutes on each side or until desired degree of doneness. Place buns, cut sides down, on grill rack. Grill for 1 minute or until toasted. Spread about 1 teaspoon mayonnaise on bottom half of each bun; top with 1 patty. Top each slider with another teaspoon mayonnaise, grilled onion wedge, pickled okra halves, and about 2 tablespoons arugula. Top with bun tops. Secure with wooden picks, if desired.

Salmon with Mango, Ginger and Vidalia Onions

Servings: 8 “Topping an impressive side of salmon with a refreshing blend of citrus-kissed mangos and Vidalia onions simply screams summertime,” Lang said. “The fish can be served hot or cold, so it makes the rest of the menu a breeze.” 2 mangos 2 Vidalia onions 1/4 cup freshly squeezed lime juice 1 tablespoon freshly squeezed lemon juice 1 tablespoon honey 2 tablespoons olive oil 1/2 teaspoon salt 2 teaspoons Ginger 1 (3-pound) whole side of wild salmon with skin 1 tablespoon olive oil Salt and freshly ground pepper, to taste 3 tablespoons fresh mint, chopped Lime wedges, optional Peel and slice mangos into 1/8-inch-thick slices. Slice onions into 2 x 1/8-inch slices (julienne). Combine in large glass mixing bowl. Whisk lime juice, lemon juice, honey, 2 tablespoons olive oil, 1/2 teaspoon salt, and ginger in a small bowl. Pour over mango mixture. Cover and chill for 1 hour. Preheat grill to medium heat. Rub top of salmon with 1 tablespoon olive oil and season with salt and pepper. Grill fish, skin side down (without flipping), over indirect heat for 16 to 18 minutes, or until easily flakes with fork. Use an extra large spatula or rimless baking sheet to gently lift salmon off the grill, leaving skin on the grill rack. Stir mint into mango mixture. Allow salmon to cool for about 5 minutes. Use slotted spoon to top salmon with mango mixture, arranging down the center of the fish. Garnish with lime wedges, if desired.

Annie Swords of the Heritage School added a individual state title at the GISA Class AAA golf tournament. At least four veteran coaches also stepped aside this year after long and successful careers patrolling the sidelines, including East Coweta girls basketball coach Paula Jones, Northgate boys basketball coach Mack Cain, Northgate wrestling coach Adrian Anderson and Newnan baseball coach Kenny Morris. When it comes to impressive records, Askey’s will be hard to top. Askey dominated his matches, racking up points and waiting for just the right moment to position himself for the pin. Many of the points scored against the University of Virginia-bound wrestler came when he intentionally allowed his opponents to escape, part of his strategy to set up his next move. It was the same story in his final high school match of his career. as he knocked off Ware County’s David Shavers in a dominating 16-6 victory. Shavers hadn’t lost all year until he stepped on the mat with arguably one of the best high school wrestlers this state has ever scene. “He is the best wrestler I have ever coached,” Anderson said. “I have never stopped being amazed how just keeps getting better, Anderson said. Anderson said he didn’t plan to go out just because Askey is graduating, but says the time is right. The long-time wrestling coach finishes his career with more than 300 wins. “It wasn’t planned that Tyler and I would go out together, it just sort of happened that way,” Anderson said. “It’s been a lot of fun and I have had the chance to coach some great kids.” The Lady Vikings helped put Coweta County on the soccer map, ending some some longstanding dominance by teams just across the line in Fayette County en route to their first state title in school history. Northgate really wasn’t given much of a chance to win

A PERFECT ENDING:

Northgate senior Tyler Askey concluded his varsity career with a fourth consecutive state championship and a perfect record, only the third wrestler in Georgia history to achieve the feat.

this year’s state title. With only three seniors on the team, and playing in Area 4-AAAAA, the toughest soccer league in the state, flew under the radar. But after the Lady Vikings secured three straight road playoff wins against Lee County, Lakeside-Evans and Pope to advance to the Final Four, they put together their most impressive and dramatic wins of the year, beating twotime defending state champion McIntosh 2-1 in overtime in Peachtree City to make every one sit up and take notice. Freshman Lily Barron was the hero of the contest, scoring twice including the tying goal with four minutes left in regulation. Then the stage was set — a showdown with top ranked Whitewater in Carrollton that the Lady Vikings completely dominated in the second half. After taking a 1-0 lead at the end of the first half and then allowing Whitewater to score the tying goal just seconds into the second half, the Lady Vikings tallied the final three goals. Seniors Micayla Crenshaw scored twice and Hannah Murray once in the championship game to close out their high school careers. Northgate fans also got a sneak preview of the future with a goal from Barron. Fellow freshman Cara Rhoad also added an assist. “They put in the time, said Northgate head coach Bryan Hicks after the title game. “All those early mornings, all the hard work. Here’s the result.
