ocal restaurant owners Peter and Annie Hong don’t just want to introduce Cowetans to authentic Vietnamese foodthey want to turn local diners into chefs. After the success of their Peachtree City location, which opened in September of 2015, the Hong family chose Newnan as their second, larger location because their customer base repeatedly asked them to bring the food closer to them. Hong said now is the perfect time to expand, as Vietnamese food has recently become trendy due to the popularity of Pho.
“Pho is a noodle soup made of oxtail and beef-bone or vegetable broth,” Hong says. “From there, we add different kinds of aromatic herbs, and serve it with bean sprouts, basil, lime, and jalapeno. You can then choose your toppings— flank steak, beef-meatball, tendon, tripe, brisket, oxtail, seafood, chicken, or vegetables. It’s very customizable depending on what you like or what your dietary needs require. “ Hong emphasizes that Pho isn’t the only allergy-friendly, customizable dish on the restaurant’s menu: “Vietnam’s

This makes the majority of our menu items perfect for people who have a gluten sensitivity or allergy.” If you are new to Vietnamese food and sensitive to gluten, Hong says his staff is more than happy to make recommendations depending on your tastes, but also heartily recommends the spring rolls as a fun way to experiment with Vietnamese cuisine: “A first timer would definitely enjoy it— and the wrap is made from rice paper." No matter what you order, Viet’s Cuisine stresses that their food can be heavily customized without changing the restaurant’s signature taste. “We make everything from scratch. Our menu is fantastic for people with food allergies, vegetarians, and anyone who has dietary restrictions of any kind. We don’t use MSG, and can customize every single dish, because we have a fully-staffed kitchen. Every order is made fast, fresh, and to the individual customer’s specifications.” For those looking for something a little more indulgent, Hong recommends another menu item that is trending both in the family’s restaurants and across the U.S.: its flavorful, drip-brewed coffee. Vietnam is famous for its French-brew inspired coffee. Each cup is brewed individually, sweetened with condensed milk, and can be served hot, or over ice. “It’s very strong and very sweet. It will definitely keep you buzzing all day,” Hong says. Located on 30 Bullsboro Drive, in the old Mega Mattress Building, Viet’s Cuisine’s space has been completely transformed. Buildout was a challenge, Hong said, noting that, among other things, the family had to completely redesign the parking lot. “In Peachtree City, we started in a pre-existing restaurant space,” said Hong, “but being able to remodel this large building to our specifications gave us room to grow- and based on just the first few days of business, I think we’re going to need to expand.” Peter and Annie have been happily surprised by the success of both locations. “We expected the first few weeks here in Newnan to be slow, or that this new location would draw customers away from Peachtree City, but that hasn’t been the case. Word of mouth took over once the sign went up, and we have been busy since the doors opened.” Peter goes on to explain, “We expected to struggle. We didn’t get into the restaurant business until we were older- most people start young, but not us. Annie just loves to cook- it’s

After a few years, Annie’s friends begged her to start a restaurant. I encouraged it, but we never dreamed it would be so successful.” “We’ve been so busy that she finally asked me to quit my job to help run the place, and here we are.” Annie’s cooking isn’t just famous here in Georgia. She grew up helping in her parents’ restaurant in Vietnam. The family even had their own cooking show, “but it’s been off the air for years,” Hong said. However, their family’s culinary signature is still very much a part of the new restaurant’s success. “We make our fish sauce fresh daily- the recipe is from the Southern part of Vietnam. What’s fascinating about it is that you don’t notice it’s made from fish. It adds a savory flavor to your food without being fishy at all. ” Every time a customer orders a rice-based dish, I always encourage them to try it with a bit of our sauce. It’s just not the same without it. It’s our signature. Without the sauce, you’re kind of getting a generic Veitnamese experience,” Hong explains. While each meal is made to order, the couple insists that there is a common ingredient in each dish: attention to detail. “We are striving for absolute consistency between both locations. Annie goes back and forth between the two restaurants to oversee everything. We are a locally based, family-run operation— except for our three kids, who are all in school. You’re going to find the same staff rotating between locations so that the food quality stays consistent.” “We’re so grateful to Coweta County, and want to offer them the freshest, most authentic dining experience possible.” Hong said. “They’ve been supportive for years- from our first day in Peachtree City, through the long construction and renovation process, to showing up to our grand opening here in Newnan. We want them to know that we are doing the work for them, but by choosing their own ingredients, they are the real chefs here.”

Team Hungry continues work at Nicaraguan school BY REBECCA LEFTWICH becky@newnan.com
I
n what has become an annual tradition for Coweta high school students, Team Hungry visited a school in Nicaragua over winter break. Team Hungry is a faith-based service club that encourages young people to find their gifts and talents and use them to make a difference, according to faculty sponsor Jeff Flavin of East Coweta High School. The group of 17 locals included nine students from East Coweta High School. It is the seventh year Team Hungry has visited the school it supports at Las Parcelas, west of Managua. “Our main purpose this year was to continue reinforcing our relationships with the children and the parents in the community,” Flavin said. This year, Team Hungry purchased a year’s worth of school supplies for each student and packed them into 45 brand new backpacks. Participants then spent a day with the students at Ruby Ranch, a 500-acre adventure camp for children. Work projects included adding another piece of playground equipment and helping finish a new bathhouse at the Ruby Ranch compound. Becky Lanham, a fifth grade teacher at Poplar Road Elementary, presented an interactive science project with the Nicaraguan students. She talked about which animals create slime and the purpose of the substance. She then helped students make slime in their classroom. It was Lanham’s second visit to the school. After losing her husband in September of 2018, Lanham said she was in a “very dark place,” feeling hopeless and angry at God as she boarded the plane for the 2019 trip. “When I say that God ‘showed up,’ it is an understatement,” Lanham said. “Landing in Nicaragua was the start

of a change I would never have expected, especially so soon in this journey.” She said the people of Nicaragua are “amazing” and happy despite living in a country where circumstances are far more difficult than most Americans have ever experienced. “The children are a walking example of God’s love,” she said. “School in a tiny, one-room, cinder block school and very little to call their own does not wipe the constant grins from their faces. The spirit these children carry with them is contagious and it was impossible to not see Jesus everywhere. God showed me that our hope is in Him, no matter our circumstances and if we will allow Him to, He will lead us out of the darkness.” Several of the student participants from ECHS also spoke about how they were affected by serving in Nicaragua. Tory McClain: “This was my second year going to Nicaragua with Team Hungry and I can honestly say Nicaragua never disappoints. This trip never fails to amaze me. I am astonished by the love that these kids contain in their tiny hearts and never fail to show it to us and to one another. Nicaragua will always hold a special place in my heart. You go expecting this mission trip where you won’t get to focus on you, but this trip isn’t just about building a home or some kind of building. It’s about the love. It’s about the stillness and the ability to just sit and enjoy the peace of Nicaragua and the peace in God that is hard to find in our everyday lives at home sometimes.” Makaley Hurd: “This was my first year going to Nicaragua and I am beyond words about this trip. It truly transformed me in the way that I was able to see a new culture, experience the joy of the kids there, and to see life a whole different way. God impacted me in a way that I will never forget and I will cherish those precious moments for the rest of my life.” Evelyn Gamble: “There wasn’t a moment in Nicaragua that birds weren’t chirping, kids weren’t laughing, or a peaceful presence wasn’t within our hearts. Not even a language barrier could keep us from showing God's great love to those precious kids. Those priceless moments each day were documented in my journal to reflect on until I
to spread the love of his heart.” Sarah Whitehead: “I immediately fell in love with Nicaraga and all of the people there on my trip last year so I was beyond excited to be able to go back again. I love that we (Team Hungry) prioritize building relationships and investing in people more than just completing service projects. In Nicaragua, we spend most of our time on Ruby Ranch. With the prevalent poverty in Nicaragua, kids are frequently forced to grow up fast and don’t get to spend much time just being kids. When they come to Ruby Ranch, they get to play and just be loved on with nothing being asked of them in return. It touched my heart to see how excited the kids were over things that would seem trivial to us. I have very little knowledge of Spanish, but the children proved to me that a language barrier isn’t a friendship barrier. They reminded me of the unconditional love of Christ as they only offered me grace as I stumbled to make a sentence. These kids reminded me of what it means to have a childlike faith and find joy in the Lord despite our circumstances. I will be forever impacted by my trip to Nicaraga and the people I met there.” Sabrina Antrim: “Nicaragua was an incredible trip that really showed me how to find joy in the little things. I loved playing with all the children and seeing the huge smiles on their faces every time they saw us. Nicaragua really helped me tune in and listen to what God was trying to show me. I felt that this trip has shown me a new perspective of what showing the love of Jesus really is.” Lily Jones: “Nicaragua was a life-changing experience. Going there and experiencing the people and the culture was such an amazing thing. I felt that I had something heavy on my heart and Nicaragua helped to lift that weight off my shoulders. So many amazing memories and connections were made because of this trip and I am so grateful for it. Nicaragua is such a beautiful country and I will never forget it.” In addition to Team Hungry’s work in the community, the organization also is selling coffee from Nicaragua that uses the business model of keeping all of the work in the community. “Our goal is to one day open a coffee house in the East Coweta community,” Flavin said.

aren DeFelix was recently selected by the Newnan Coweta Art Association as the featured Artist of the Month for February. DeFelix’s art will be featured at City Hall until March 31, 2020. DeFelix started out creating in stain glass over 30 years ago. After seeing a Tiffany exhibit in Florida, she developed a longing to learn how to manipulate the glass so that she was not solely dependent on what she could purchase from glass manufacturers. She has taken many fused glass classes and is still excited when she sees glass “melt.” It was during one of these classes that she asked the demonstrator how he came up with his creative ideas. He told her about Betty Edwards’ book “Drawing on the Right Side of the Brain.”
READ ROMANS 8:5 She highly endorses the book, which she says changed her life. She went from drawing “bad stick figures” to drawing her self-portrait. From there, it was only a small leap to watercolor pencils and then watercolor painting. Although watercolor is her favorite medium, she has also worked in acrylic and mixed mediums. Ms. DeFelix moved from Florida to Georgia, nine years ago and is enjoying having four seasons. She especially loves the blooming trees in the spring, and aptly named her painting of dogwoods in bloom- “Spring: Why I Love Georgia.” Karen is a former member of the Florida Watercolor Association and the Clayton County Art Association – Arts Clayton and is presently a member of the Newnan-Coweta Art Association
(NCAA). She has had many paintings and three of her glass creations juried into the annual NCAA Juried Art Show at the Center for Performing and Visual Arts. One glass sculpture, “Awakening,” was in the Top Ten. Her paintings have also been in art shows in Clearwater and Sarasota, Florida, displayed in many venues around Newnan and are in private collections up and down the east coast. Each month, local artists are named Artist of the Month. The city has collaborated with the Newnan-Coweta Art Association and some local art galleries on this project. It gives local artists the opportunity to display their work in City Hall and a chance for the city to support the arts.

iedmont Newnan Hospital honored Jonathan Holt, Rodger “Buddy” Hamby and Cornell Rollins of the Newnan Fire Department as its March First Friday He-
roes. Vicki Kaiser, executive director of Oncology and Community Affairs for PNH, said they each displayed heroism and went above and beyond during a recent emergency call. The Newnan Fire Department’s Station No. 3 was called out to an infant in dis-
tress call Oct. 28, 2019. A premature baby wasn’t breathing. Holt, Hamby and Rollins performed CPR on the baby and were able to get him breathing and immediately took the baby to the emergency room at Piedmont Newnan. “Our NICU team was so thankful at how quickly the station responded and
how hard they worked to save the life of the newborn, and for the quick actions taken by Holt, Hamby and Rollins that day,” Kaiser said. Piedmont Newnan started the First Friday Hero award last April to honor those that go above and beyond the call of duty.
