BY AMELIA ADAMS On my grandparents’ farm in Pleasant Valley, the strawberry patch beckoned to me as I watched the smallish fruit ripen. The berries were not incredibly sweet, so sugar appeared to enhance them. My grandmother yielded to the small, dimpled sponge cakes offered in grocery stores, unusual for her since “made from scratch” was her daily practice. In my reading, I have discovered that many bases for strawberries resembled the biscuits she made each day. Biscuits used for strawber r ies ca n be traced to mid-16th century England. Shakespeare had a character in “The Merry Wives of Windsor,” A lice Shortcake. What the English call biscuits, we know as cookies; therefore, their appearance and taste would be much crisper. Two c ent u r ie s l at er, A mer ic a n c o okbooks began “shortcakes” as the design of the baked good containing more shortening, hence the term “short,” as well as sugar. My mother and I always preferred biscuits “shorter” as we liked them split and toasted for even greater crispness. Beloved, be vigilant to cling to and find life in Father God, His love, and His eternal kingdom. Two advances changed strawberry shortcakes: the invention of leavening and railroad efficacy. The effect of soda allowed rising and a different texture for biscuits. The railroad allowed strawberries as well as other ingredients to come in from the West. In the early 20th century, sponge cakes began to hold sway as containers for the berries. Previously, a blend of powdered sugar and milk gave a glaze to shortcakes. Then whipped cream moved to ta ke its place. Unchanging, the strawberry held its own; however, with our access to fruit year-round brings in blueberries, raspberries, even cherries to anchor the cream and cake. Recently, I read a favorite blog concerning various recipes for shortcake; the winner was one of my favorite cooks, James Beard. His ingredients included a great surprise: hard boiled egg yolks. Out came my food processor and favorite heart-shaped cutter for the trial. The ladies I host for lunch a couple of times a month found them delectable. I hope Shakespeare enjoyed shortcake, as that dessert would bring us even closer than just his delightful words and wisdom.

James Beard’s Shortcakes INGREDIENTS

2 cups White Lily flour 1 tablespoon plus ½ teaspoon baking powder ¼ cup plus 1 tablespoon sugar, divided 1/8 teaspoon Kosher salt 6 tablespoons very cold unsalted butter, cut into cubes
• Place the dry ingredients in a processor and blend. • Add the butter and process until small clumps appear. • Add crumbled egg yolks and blend until the mixture resembles very coarse sand. • Add the cream very slowly until absorbed and forms a loose ball (if you do not have a processor, sift the dry ingredients; add the butter and blend with a pastry tool or your fingertips; add grated egg yolks, then the cream). • Roll out on the counter using more flour if needed. Pat until one inch thick. • The recipe should make 6-8 shortcakes, depending on the size the cook desires. • Cut and place on a greased cookie sheet. Refrigerate for an hour. • Preheat the oven to 450 F. Before baking, brush with butter and the reserved sugar (I like to use sanding or turbinado sugar but unnecessary). • Bake for about 15 minutes. Slice the cakes in half. • Place sweetened berries that have macerated a few hours on the bottom half and top with sweetened whipped cream. Place the top half on top of the cream to finish.

Rotary urges walking to Drake Stadium for fireworks on 4th BY CLAY NEELY

With fireworks set to return to Drake Stadium this July 4, organizers are working to ensure the event goes smoothly despite some changes. The annual event will host hundreds at the Newnan High School campus, but the majority of parking availability on campus will be extremely limited due to ongoing construction. As a result, attendees are urged to park nearby and walk to the campus. Nearby Unity Baptist Church will also offer overflow parking on their property. Entry to the event will be on Armory Road and doors open at 5 p.m. upon the conclusion of the Fourth of July parade in downtown Newnan. “With the Fourth of July parade at 4 p.m., this year, it opens a great opportu-

nity for people to move directly to the high school, so we’re looking forward to a great crowd,” said Newnan Rotary President-elect Jay Boren. Seating will be allowed inside Drake Stadium, but limited to the home stands. No one will be allowed on the track or football field. The baseball and lower field will be open for families to gather and watch the show. Concessions will be available on campus. Dale Arrowood of Banning Mills will also showcase a flyover by a rescued bald eagle named Lady Liberty. Musical entertainment will be provided by Doug Kees prior to the fireworks ceremony, which will begin at dark. The Newnan Rotary Club has hosted the Fourth of July fireworks for more than 30 years.
