Dear Friends,

Sharing morning coffee on the waterfront terrace of A+O at the Resort with member Ron Salisbury, we discussed one of our nation’s serious challenges – teaching our kids values to prepare them for their best possible life. Before I explain the inspiration realized over bagels by the bay, permit me to encourage all reading this note to consider morning coffee on the A+O terrace. I can promise with a degree of certainty that a great day will follow.

Ron Salisbury, known to just about every living soul in Southern California who has ever eaten an El Cholo taco or enchilada, presides with the definition of all-American grit, integrity and passion over a familyfounded, 100-year-old restaurant business. In Newport, in addition to El Cholo on Coast Highway in Corona del Mar, Salisbury welcomes guests at The Cannery and Louie’s By The Bay, two of the most successful dining rooms on the coast. Given his wide range of daily responsibility, Salisbury takes considerable time to mentor young men and women entering the work force in his business, along with supporting long-term staff building careers in the field.

Getting into the weeds with Salisbury over the struggles facing much of the younger generation seeking higher education and navigating the electronic landscape of uber-heightened competition in the workplace, I asked the man who has mentored some four generations coming of age, what in particular might be a roadblock today for American kids finding a positive course in life.

He didn’t take a beat, and replied, “Recently, I met with some young people coming out of school seeking employment. Asking them about their backgrounds, education and interests, I proposed the age-old question, “What would you like to be when you grow up?” Salisbury looked at me and asked me to guess what they said. Hesitating, I answered what came to mind, given our current worldview of the power of tech, and replied, “Computer programming”. He shook his head; wrong answer. In my head the game show loser buzzer was sounding off.

Taking a sip of his morning latte, again looking at me he continued, “The kids told me that they wanted to grow up and be rich and famous.” Going further, in his gentlemanly manner, Salisbury prodded for explanation from the potential job seekers. He asked, “Do you understand what it takes to reach that level of success in life? More direct questions followed. “What are your goals? Is there a job or profession path that inspires you?”

Most kids dream, at some point, of fame and fortune, they always have.

In America, that dream does come true. But kids should be dreaming of becoming doctors, lawyers, and candlestick makers, pilots, engineers, teachers, shop owners, first responders, social workers, restauranteurs, and yes, even the President of the United States.

How does society get back to personal value-based ambition? It’s complicated, Salisbury and I agree on that. Despite all the factors, principally inhibiting success including economic inequity, obsessive media influence, and our schools too often serving as holding tanks rather than learning centers, it comes down to societal values, and more directly, parental values.

There is a bold new generation of kids belonging to the families of BBC and NBCC members coming of age participating in Club life. Will they be the ones to cure cancer, colonize Mars, solve environmental needs such as turning plastic waste into safe recyclable compounds rather than banning bags in grocery stores? Or will they not realize their God-given potential given irresponsible social media influence that determines life is most rewarding only if one becomes “rich and famous?”

Club members would agree, a rich life is a life that has earned privilege through great dedication and sacrifice. And in America, with such privilege comes responsibility to uplift deserving others when possible.

To that point, our fall October issue covers such noble responsibility. Please visit pages 22-25 with a feature on our annual Gentlemen’s Smoker, raising significant funds benefitting college grants to deserving Newport-Mesa high school graduates heading off to seek their dream goals through education. Both NBCC and BBC have been stalwart advocates of supporting value-based progress for youth for many decades. The resolve to do even more to prepare our kids for a strong and bold future grows exponentially year over year. Millions of dollars have been raised and granted through the Gentlemen’s Smoker, and also through the BBC 1221 Ladies’ auxiliary, and programs at NBCC with additional youth outreach in the planning stages to be revealed as 2024 comes to its end.

Ron Salisbury and I left the table at A+O realizing that we had solved nothing, but we felt darn good about the conversation.

Values matter more than ever. Mentoring our kids matters. Adapting the prophetic words of Ghandi, “To realize change for the better in life, we all must be the change we seek.”

Just a thought to ponder as October dawns on the coast. Enjoy the magazine, and best wishes always,

Bruce

Poseidon Smiles

“HOST OF THE COAST” IS LAUNCHED FROM THE BALBOA BAY CLUB AND RESORT MARINA

Since its inception more than 75 years ago, the Balboa Bay Club established its reputation as the ‘Host of the Coast’ for unrivaled amenities, hospitality and its prime location on Newport Harbor. Now, the Host of the Coast is going afloat.

All BBC members and guests, plus patrons of the Balboa Bay Resort, can enjoy a bit of the boating life. Club management recently purchased a 40-foot Sea Ray Sport model XLR yacht for communal use – an added dimension of the sporting & social life members thrive upon. The ship was named Host of the Coast in honor of, and as an extension of the BBC’s rich legacy.

“If you’re not near the sea, you’re not where you need to be,” quipped Daniel Yanni, a member of the BBC Board of Governors and avid boater. “Now everybody here has a chance to be a yacht owner and

can have that time on the water with their friends and family.”

Dr. Yanni was among a group of dignitaries who turned out at the BBC Marina for the renaming of the previously-owned ship (the three-year-old Sea Ray Sport was built in 2021). The ceremony is much more involved than a typical landlubber would ever guess. Simply smashing a bottle of champaign on the bow is just not how it’s done.

In case you ever wondered… it’s rather interesting. The formal re-naming of a boat first requires a complete scrubbing of the vessel’s previous identity. The former name must be erased from every aspect of the ship; the most visible display on the hull, all pieces of equipment and coverings, even the ship’s keyring, records, and ledgers.

From there, the former name is written in water soluble ink on a small metal tag and returned to the sea to appease Poseidon, the Greek god of the sea. The ink dissolves in the water and the previous ship ceases to be an entity in the underwater kingdom. In tribute to Poseidon, the un-naming is completed with a swish of preferred libation overboard in an east to west direction. Whatever’s left in the bottle, those attending the ceremony are invited to finish off.

The re-naming follows with more homage to Poseidon and the other directional deities men of the sea must respect; Boreas, ruler of the North wind, Zephyrus, the West wind, Eurus, the East, and Notes, ruler of the South wind. Facing each direction in turn, the celebrants recite a scripted tribute before tossing a bit of bubbly from their glasses toward each of the winds.

“It’s to pay homage to the gods of the sea for mercy, grace, endurance, calm winds, calm seas and protection of the crew,” explains District Captain Wayne Palmer, the presiding official of the recent dockside ceremony at the BBC. “It’s a ritual to protect the ship, wherever it goes.”

The re-named Host of the Coast is now moored at the BBC dock when it’s not out serving its purpose of enjoyment on the water. Director of Marina Operations Troy Heidemann says it’s already a popular amenity for club members and their guests. The luxury powerboat is always operated by a certified captain, one of two or three the BBC has on call. The craft can carry up to 12 passengers including the pilot, and the schedule is filling fast.

Charters are reserved for 2-3 hours per launch, as passengers can cruise the Newport

Harbor, the Back Bay, and out to the Pacific Ocean. In time, Heidemann says, there could be some longer voyages – perhaps to Catalina Island or up & down the coast. The Host’s maiden cruise featured several select guests on the afternoon of September 5th.

Already one of the finest private marinas on the West Coast, the Balboa Bay Club features 130 boat slips that members and guests have enjoyed for decades. Heidemann says it’s impossible to keep up with the demand for spaces in this aquatic community, where the waiting list for a spot on the dock is years-long. So, for those who’ve been yearning to get out on the water, the solution is the Club’s own ship.

One of the beauties of boat ownership is the aspect of entertaining friends on a pleasure craft. But it’s an awful lot of work, too. Maintaining a boat takes a lot of time and effort away from the pleasure of cruising on the water. Some say the best way to go out is on a friend’s boat. Now every BBC member and resort guest has a friend with a yacht. And they don’t have to wait to be invited.

“Our members are like family,” Dr. Yanni, a neurosurgeon and lifelong seaman says. “Everybody helps each other and enjoys the seas together. This is truly one of the best yachting communities at a private club.”

Somewhere beneath the depths, Poseidon is very pleased.

26th Annual Gentlemen’s Smoker at Balboa Bay Resort and Club

EXCEPTIONAL CUISINE, FINE WINES, PREMIUM CIGARS, AND PHILANTHROPY THURSDAY, SEPTEMBER 12, 2024

The 26th Annual Gentlemen's Smoker, hosted at Balboa Bay Resort and Club, delivered a spectacular evening of luxury, camaraderie, and philanthropy. The picturesque setting on the Members Lawn, with the stunning harbor backdrop and perfect coastal breeze, set the tone for an evening where the finer things in life were celebrated.

Governor John Wortmann kicked off the night by addressing the crowd with sincere gratitude and toasted to a magnificent night with great company. Then, Executive Chef Prabeen Prathapan impressed attendees with a multi-course meal featuring Kona Kampachi Crudo, a Steakhouse Style Wedge Salad, and

Greater Omaha Bone-In Prime Filet Mignon, each thoughtfully paired with decadent wines. Exclusive spirits and wines from partners including Ketel One Vodka, Don Julio, Woodford Reserve, Garrison Brothers, and DAOU, among others, were stationed on the lawn to offer exclusive sips of their beverages. Guests brought their favorite bottles of wine and cherished cigars, eager to participate in the evening's friendly competition, where the best wine and cigar were awarded special recognition. The true stars of the night, however, were the attendees who contributed to the Balboa Bay Club Scholarship Fund.

The highlight of the evening was the luxury

auction, featuring extraordinary items and experiences in Newport Beach, Laguna Beach, and Las Vegas, which saw spirited bidding from guests. Thanks to their generosity, we are thrilled to announce that the event raised over $120,000. The contributions will go toward supporting deserving local students in their pursuit of higher education.

The event was a perfect blend of indulgence and giving back, allowing attendees to savor exceptional food, drink, and cigars while making a lasting impact on the community. As the night concluded, the shared sense of purpose and joy of giving was felt by all, leaving guests looking forward to next year’s gathering.

Chef-Inspired Cuisine

CHEF CHAD OF MEMBERS GRILL INTRODUCES NEW MENU CREATIONS

There’s new thrill on the Members Grill menu! From a classic Shrimp Cocktail to a Manhattan Cut Filet Mignon, to the mighty Chilean Sea Bass, there’s new inspiration that’s guaranteed to please your palate.

A great private club is characterized by so many factors that contribute to its success, and an elevated culinary experience that satisfies is at the top of the list. Chef Chad Zbikowski is at the helm of the Members Grill as the Chef de Cuisine. He hails from Pelican Hill and Silver Trumpet and he’s adding his touches to elevate the menu with new flavors and ingredients.

On a September day when I visit with Chef Chad at a table on the patio, he brings his artisan mindset to the table. The tradition of good meals served with harbor views and BBC hospitality continues on with Chad’s influence on the lunch and dinner menus. Dining’s a breeze out on the veranda and as

the sun sets, you can delight in the reflection on the water and the blessings of being a part of a community that fosters friendships and nurtures families.

Chef’s love for Southeast Asian cuisine is expressed in the restaurant’s best seller, the popular Chilean Sea Bass nestled in a Lemongrass Coconut Beurre Blanc. His favorite flavor pairings, fennel and orange, show up on the menu in the Pork Belly Taco, braised with fennel and served with a delicious Orange Chimichurri. On the lunch menu, his scrumptious Spanish Filet Bowl with a Chipotle Crema is craveable and the Chicken Basil Sandwich with a Roasted Tomato Aioli and Balsamic Glaze is a real standout. Don’t miss ordering the BLTA at lunch, my favorite sandwich slathered with Garlic Aioli, layered with Balsamic Glazed Tomatoes and complete with thick slabs of Applewood Smoked Bacon goodness.

For dinner, delight in the Steakhouse Style Specialties with three cuts to choose from, an Idaho Certified Angus Beef Filet, Prime Black Angus Rib Eye and a succulent Australian Rack of Lamb – all are luscious. Along with a side of Béarnaise Sauce and a glass of Justin Cab, your night is made.

Chef Chad is sharing a variety of flavors on Taco Tuesday and an eclectic mix of comfort food classics like the Fried Chicken on Sundays, which starts the week off just right. On the sweet side, order any of the divine desserts with 2 forks to share and pair with a beautiful sunset. And, football season is here, so do order Wings, Sliders, Coconut Shrimp and a good bottle of tequila, and it will be a day to remember.

The Member’s Grill is a full dining experience with craft cocktails, great beers and excellent wines. It’s good to be at the BBC~

Halloween Family Fun

COSTUMES, CANDY, AND CARVING PUMPKINS FOR ALL

October brings with it a month of ghosts and goblins – the spooky season is definitely upon us. One of our family’s favorite places this time of year is at the Bay Club. There are two events that we circle on the calendar and register for as soon as they are announced – one of the pumpkin carving sessions, and the kids Halloween party.

I love to carve a pumpkin. It is fully against my normal trends in that it is messy, artistic, and incredibly imprecise, but since I was a kid, I’ve been obsessed with the activity. One year, before having kids of my own, I made an Elmo pumpkin for our niece. One year I did a portrait of our pug on the side of the pumpkin. Every year, I try to find something new to carve into the surface of a pumpkin.

Then, when we moved back to Orange County and joined the Bay Club, I discovered the pumpkin carving nights at the Bay Club. These nights had everything – pumpkins (of course), stencils for the kids, markers, carving tools, and a big bowl to put the pumpkin innards into. And, the pièce de résistance … I

didn’t have to deal with cleaning up my house afterward – just dump the bucket of pumpkin guts into the trash cans laid out for us and bring the newly created jack-o-lantern home. These nights book up quickly every year, so make sure to call and reserve your spot the minute you see them announced.

While carving pumpkins is far and away my favorite part of the season, for everyone else in my family, it’s costumes and parties. The family Halloween party at the Bay Club is always a highlight for everyone. The events team truly puts on a fantastic evening every single year. My son loves the pumpkin patch and typically sprints there from the car to get the biggest pumpkin that he can carry. My wife always likes to see how the props are laid out to get the best possible family photo to go in the long line of happy Bay Club traditions.

Every year, as we walk out toward the Member’s Lawn and see what the team has put together, we are amazed by the creativity and fun for all ages that awaits us. The Bay Club truly provides us members with a chance to celebrate Halloween as a community in a safe way before the actual night of Halloween, when every kid needs to be with their own friends, and there’s always the one parent who just wants to stay home and hand out candy (which if the World Series has a game that night, is usually me) which makes getting the kids to all of these places even harder. Think of this as the Halloween version of Friendsgiving – celebrating a cherished holiday with your chosen family before you deal with the reality of the holiday itself.

However you choose to celebrate Halloween this year, I hope that you and your family have a safe and joyful experience, with just as much scariness as your family wants – no more, no less.

INSIDE THE RARIFIED WORLD OF NEWPORT BEACH COUNTRY CLUB

Newport Beach Country Club

Dear NBCC Members,

In 2009, Apple began a marketing campaign—“There’s an app for that”—to promote the apps available on the iOS operating system through its App Store.

This phrase was designed in ads to highlight the variety of applications available for iOS devices, but it was also an attempt to not just differentiate these apps from competitors, but as an attempt to show superiority to the competition. Today, the App Store has more than 1,800,000—two million apps!

Starbucks, the largest coffeehouse chain and one of the most recognizable brands in the world, has 34 million users, reporting that 31% of total transactions at company-operated stores in the U.S. were made via the app.

Alternatively, at Newport Beach Country Club, approximately 1% of our total transactions are made via the NBCC app.

In addition to signing up for member events and viewing the club calendar, the app can be used when it comes to the following services:

• Booking at fitness class

• Ordering from The Wedge or Seahorse Grille

• Making a dinner reservation

• Scheduling a golf lesson

• Requesting a car from valet

• Setting up a bag on a golf cart/push cart/range

• Live tournament scoring

• Requesting a guest locker

Did you know, for the entire list above, there’s an app for that—and that app is the NBCC app?

Throughout the month of October, all non-alcoholic bottled and canned drinks at The Wedge will be BOGO (buy one, get one free!) when ordered through the NBCC app.

Preparing for Putting

CARLO BORUNDA, DIRECTOR OF INSTRUCTION AT NEWPORT BEACH COUNTRY CLUB, REVEALS HOW MASTERING THE FUNDAMENTALS OF THE PUTT CAN CHANGE YOUR GOLF GAME.

Whether you’re on a championship course, a putting green or even playing miniature golf, one swing that is absolutely crucial is the putt. These soft hits close to the hole aren’t easy to master: Too hard and you’ll overshoot it, but too gentle and you may not get close enough. When it comes to putting, master the fundamentals: posture, grip, aim, speed control, stroke type, club face control and reading the undulations of the putting green. “Mastering each will increase your chances of making more putts during the round, lowering your overall score,” says Carlo Borunda, the director of instruction at Newport Beach Country Club. Read on to discover what else Borunda reveals can help golfers perfect their putting.

BAY WINDOW: How can improving your putting technique impact your game?

CARLO BORUNDA: We all admire the skill of professional golfers when they compete in tournaments. On the putting green, their goals are identical to those of the common golfer: make as many putts as possible while avoiding the dreaded threeputt. The best way to accomplish this is to work on improving your putting technique.

BW: How should golfers approach it mentally?

CB: Each year, the PGA TOUR provides the average make percentage across various distances. In 2023, the average TOUR player made roughly 70% of their putts from 4-8 feet, 50% from 9-12 feet and 25% from 17-20 feet. These statistics demonstrate how difficult it is

to make a putt the farther your golf ball is from the hole. Missing your first putt may result in frustration, which must be overcome before moving onto the next putt. The ideal mental approach is to focus on getting your first putt as close to the hole as possible, resulting in a twoputt average per green.

BW: Any tips to use prior to playing a round?

CB: Your warmup session should focus on developing a feel for your swing tempo, the putting green’s speed, club face contact and the accuracy of your start line. Make several putts from 3 to 5 feet with your eyes open and then with them closed. Next, place a few tees or ball markers in the green and putt several golf balls to this location from 10, 15 and 25 feet, attempting to group them

Left: An effective technique is to maintain your posture and eye position until the ball has either found its way into the hole or for a minimum of two seconds after contact. Right: The ideal putter delivery should result in an immediate roll of the golf ball. Too much or too little loft at contact will result in a golf ball that bounces early, increasing the risk that it will roll offline or fall short of its target.

together as close as possible. Place a small ball marker just in front of your golf ball and practice rolling your ball over the marker. Wrap up your warmup session by two-putting from different distances from the hole.

BW: What can be detrimental to putting?

CB: The most damaging mistake made by golfers is attempting to hole a putt when a simple two-putt would have sufficed. This aggressive approach often results in three or more strokes and higher scores. With the proper preparation, your putting stroke should feel fluid and athletic. Avoid the impulse to focus on negative thoughts.

BW: What things should golfers keep in mind while putting?

CB: Your feet are the most accurate indicator of how the slope of the green will affect your putt. As you walk on the putting surface, notice how the slope affects your equilibrium. The more severe the slope, the more you must aim away from the putt’s straight path. You will also need to modify the speed of your stroke to account for an up or downhill putt. AimPoint and Vector Green Reading are two highly effective putting strategies that use these concepts to teach golfers how to read the undulations of putting greens. Putting green surfaces are imperfect for a variety of reasons, so your swing must deliver enough energy to keep the ball rolling on the intended line. If your golf ball does not go in, the ideal pace will leave it 6 to 12 inches beyond the hole. Maintain your posture and head position for at least two seconds following contact to ensure a more consistent impact position. Eventually, allow your eyes to follow the golf ball for longer putts to learn how the slope will affect your next putt. This is valuable information that can mean the difference between good or bad putting performance.

BW: What drills can you use to improve your putting?

CB: Regardless of skill level, the vast majority of golfers will mishit some of their putts during a round of golf. The “gate drill” is an excellent way to correct this error. You can practice this on the putting green by placing two tees on the green or two sleeves of golf balls on the ground that are slightly wider than your putter head. The goal is to make a putting stroke between these two objects, rolling the golf ball toward the hole without touching them. The “heads up” putting drill will help you get a better feel

for your swing speed. The basic concept is to take a few practice strokes that correspond to your feel for the distance of your putt, set up to your golf ball, focus your eyes on the hole and make your stroke without ever looking at the golf ball. This will allow you to fully concentrate on the feel for speed without becoming distracted by mechanical motions.

BW: Which practice items do you recommend to use to help improve your putting stroke?

CB: The Blast Golf [Swing & Stroke Analyzer] continues to be my favorite piece of technology for training golfers on how to improve their putting stroke. This device evaluates seven different metrics that affect speed control, including tempo, backstroke time, loft change and [more]. It also helps you to practice four metrics that influence your direction control. There are several low-cost tools you can use in your practice putting sessions to help improve your alignment and clubface control. A yardstick can be used to improve your alignment to the hole by placing it on the ground next to your feet, parallel to your putting path. Place the yardstick behind your golf ball to help measure and modify the length of your backswing to match the distance of your putt. You may also use it to square up the club face of your putter by aligning the leading edge with the straight edge. Place two skinny tent stakes in the ground 10 to 15 feet apart and stretch a string down the line of a straight putt. Use this line to hone the squareness of your club face at impact. A putting mirror is another great tool to improve your shoulder alignment at address as well as your eye line to the ball.

BW: How has technology improved the putter design over the last decade?

CB: Putter designs from earlier generations placed greater emphasis on the clubhead’s aesthetics. Manufacturers eventually used higher-quality materials to construct putters, which enhanced the feel of contact and improved how the golf ball rolled. Odyssey [Golf] employs AI technology to create innovative putters that are visually attractive, feel great at impact and produce up to 21% more consistent distance control across the face. This can significantly improve any golfer’s score by reducing the likelihood of a threeputt. Other putter manufacturers, including TaylorMade Golf, Titleist, and PING, have launched putters with technology upgrades that will help players make more putts.

To improve your setup and get a feel for distance, swing path and club face control, use simple tools such as string, a putting mirror, yardsticks or other comparable training equipment.

The gate drill is an efficient drill for improving the center of contact with the golf ball. Make several putting strokes through the objects, avoiding contact.

The Kitchen Brigade

LEARN A LITTLE BIT ABOUT PROFESSIONAL KITCHEN HIERARCHY, NEWPORT BEACH COUNTRY CLUB’S CULINARY STATIONS AND THE WORKER’S RESPONSIBILITIES.

Originally fashioned after a military hierarchy, the French kitchen brigade system was adapted by chef Georges Auguste Escoffier to help culinary professionals maximize their efficiency. The result? A restaurant that is better able to provide highquality service to its diners.

Escoffier took this managerial approach, based on the commands and communications constructed by the French military during their Revolutionary War, and translated to the kitchen in the 19th century.

“Having systems such as this in place is important, because there are so many

moving parts in a professional kitchen, no matter what size,” says Diego Velasco, Chef de Cuisine at Newport Beach Country Club. “Structure is required when managing and executing at all levels in order to ensure the proper products are always on hand, preventing spoilage and loss, and, above all, a consistent experience for the guests or members.”

This organizational method is still prevalent in kitchens around the world today, ensuring that everything runs smoothly and the cuisine is crafted in a timely manner. It also focuses on the importance of teamwork, connecting chefs with their colleagues, and

provides each person with specialized tasks to complete so they each have a purpose—a part of a whole.

“These systems ensure a line of command under which each team member has specific areas or tasks to be responsible for,” Velasco says. “Roles, responsibilities and tasks are streamlined to prevent redundancies, therefore making the kitchen more efficient.”

MEMBERS OF THE BRIGADE

At the top of the hierarchy is the Executive Chef, whose primary role is to manage the workers and oversee the many dining venues. The next level is the Chef de Cuisine, typically known as the head of the kitchen. And while his or her job does involve managing the kitchen, it also includes handling the costs, inventories and ordering as well as writing the menus. Then there is the Sous Chef, who acts as a liaison between the Chef de Cuisine and the Chefs de Partie.

“The Chef de Cuisine is assisted by the sous chef, a deputy chef who acts as a liaison between the Chef de Cuisine and the Chefs

Grillardin/Broiler

de Partie. He or she also assists with ordering and menu development,” Velasco adds. “… NBCC also has an executive sous chef, further assisting the executive chef while acting as another set of eyes on the kitchen and the system as a whole.”

The aforementioned Chefs de Partie, sometimes referred to as line cooks, are in charge of the individual stations, responsible for preparing the components of each menu item that their station creates. Some of these include the garde manger chef, in charge of pantry items or cold food production; saute, or sauce, chef; the friturier, or fry chef; grillardin, the grill/broiler chef; the rotisseur, or roast chef; entremetier, in charge of vegetable prep; poissonnier for seafood and boucher, a butcher; and the chef tournant, a relief cook.

“The bigger the kitchen, the more these positions are filled by a single chef and the smaller the kitchen, one chef may perform multiple roles,” he explains.

After the station chefs, comes the commis, or junior chefs, who are still learning and perfecting their craft as well as the scullery, or dishwashers, and kitchen porters, or assistants. “All of these roles are extremely important to the kitchen as they help maintain a clean, safe and sanitary environment, … allocate the mountains of product received on a daily basis, assist with basic prep duties [and more],” Velasco says.

Overall, he notes that this system allows for a direct line of communication from the top down—and vice versa—ensuring a smooth running operation. “Just as in setting up a station for success, … [with] everything in its place, we set up the entire kitchen for success with everyone in their place. It also creates accountability, so team members are responsible for each other and assist one another when needed.”

WHY IT WORKS

This brigade system is in place in many

kitchens around the world, including right here at NBCC—where it is crucial given the number of dining venues and specialty events that the food and beverage department touches at the club.

“NBCC excels in this model because we have many departments and … outlets, from banquets and events to holidays and member experiences—and, of course, the breakfast, lunch, dinner and snack outlets,” Velasco says.

But, he adds, even though each person has his or her own tasks, they still rely on one another to accomplish their goals each day.

“We are one kitchen,” he explains. “This ensures that all positions know what the other departments are working on. This is where the communication aspect is key, so that when help is needed, members of other departments can pitch in and assist.”

Altogether, this system helps the NBCC food and beverage team create the dishes that our members love to enjoy day in and day out.

Genuine Connections

FOR CROSBY GRIGSBY, A GOLF SHOP ASSOCIATE AT NEWPORT BEACH COUNTRY CLUB, BRIGHTENING THE MEMBERS’ DAY WITH A SMILE IS ALWAYS THE MAIN GOAL.

Crosby Grigsby started her Newport Beach Country Club career off with a bang. It was March when she first began working in the golf shop—the week of the annual Hoag Classic, a PGA TOUR event and the club’s biggest tournament of the year. But she didn’t let the excitement and energy of the contest overwhelm her.

“I honestly felt led to NBCC and was praying about where the Lord wanted me,” she explains. “When Craig [Ackermann, an assistant golf professional at the club,] informed me about the position, it was very

grace and hasn’t encountered any challenges worth noting. She says that the best thing about her job is getting to form connections and meet people, whether it’s the members or her co-workers in the golf shop.

“I most enjoy seeing members and getting to be a light and hav[ing] … the opportunity to brighten somebody’s day, … and getting to know and support my co-workers, not just at work but in life,” she adds. “It is beautiful to see coworkers become genuine friends.”

Before starting this new role, Grigsby attended Oceans College—an affiliate of Portland Bible College in Oregon and part of Oceans Church in Irvine—worked for sports equipment company TaylorMade Golf.

confirming.”

As a golf shop associate, Grigsby wears a number of hats. While her main job duties include helping golfers and retail customers in the pro shop, which sells everything from golf balls and clubs to athletic apparel that is perfect for on-the-course exploits, she has also taken on additional tasks, like assisting Corinne Flynn, NBCC’s buyer, with ordering and receiving merchandise and taking special orders.

Although it’s been just over half a year since Grigsby started working at the club, she has handled everything thrown at her with

Outside of work, some of her hobbies include working out, going on walks at the beach and cooking healthy recipes as well as spending time with her family. “I live in San Clemente and I have to say, my parents are my best friends,” Grigsby says. “We truly have an unbreakable bond that I am so thankful to God for. I also have the cutest dog ever—a teacup poodle named Kona.”

Grigsby is unsure what the future holds for her. She says she would love to travel the world to meet new people and share God’s love with them, or to be a critic reviewing high-end resorts and restaurants. “But I would want to be undercover,” she says. “My goal in life is that my smile would change the world and people would know how loved they are by God.”

In the sitting area, Butera’s signature style is evident with light blue linen chairs, their soft hues evoking the nearby ocean. Thoughtfully arranged, the club chairs capture breathtaking ocean views and sit in harmony with the space’s expansive windows, flooding the room with natural light and coastal charm. At the heart of this home is the bespoke chef’s kitchen, an awe-inspiring space that reflects Butera’s mastery of blending utility with high-end design. The kitchen features a dramatic barrel ceiling, providing architectural interest. A waterfall island, crafted from luxurious stone, stands at the center, offering both function and beauty. High-end appliances and

custom cabinetry complete the space, making it both a dream for culinary enthusiasts and a stylish gathering place.

The light-filled primary bedroom is a true haven, with floor to ceiling windows bathing the room in soft, natural light at all times of the day. The calming color palette features soft neutrals enhancing the tranquil vibe, while plush bedding and tailored furnishings offer a sophisticated, restful retreat. The spa-like primary bathroom is a sanctuary of relaxation featuring sleek marble floors and crisp white walls. Sculptural mirrors are a focal point, while a glass-enclosed walk-in shower and double sink vanities add a modern edge to the design. Barclay Butera’s thoughtful attention to detail ensures that every element, from the textures to the layout, enhances the serene design of this luxurious coastal home.
