Kate Huffman knew at the ripe-old age of four that she wanted to be an actress, but by the age of ten there was a plot twist written into her script. The result could have changed the trajectory of her life, until one day she realized she had the power to pick up her pen and write a new script.
Kate’s introduction to acting came by way of her mom’s first musical. As a director, she needed a young child to open the show - a bit part that helped Kate find her passion, earn an award and start working on her craft early.
desperation to lose weight and desire to find acceptance with her peers would eventually consume an otherwise healthy young girl. The pain of her peers’ rejection caused her to become overly focused on losing weight, and the results shocked her.
By the time she was just ten years old, Kate was shamed and bullied for being a little overweight. The self loathing,
“It was like a Hollywood movie - fat kid, no friends, skinny kid, lots of friends,” Kate says.

The sudden popularity sent a clear message that her self worth was tied inextricably to her weight. She developed an eating disorder that would plague her for nearly two decades while she pursued her dream of becoming an actress. After graduating from Cathedral High School in Indianapolis, Kate attended the University of Miami. She has worked in film, television and theatre, earning many prestigious awards in the process. Kate got her first big break doing a television episode of “Untold Stories in the E.R.”. She also appeared on a show called “$#*! My Dad Says” starring William Shatner, whom she credits with helping to earn her acting union card and teaching her valuable lessons. She also earned roles in “Fresh Off the Boat” and “Castle” in 2015. On the outside Kate appeared to be living her dream, but inside her eating disorder - which she nicknamed Eadi - consumed her on every level. In addition, there was chronic pain she attributed to years of excessive exercise and poor eating that impacted her career, friendships and love life. She began to question her life decisions, including her acting career. Kate then realized she had to share her story, in the form of a one-woman play. “I always came back to the idea that you can be of service through art,” she says. By January of 2016 Kate had devoted two years toward writing her story, and decided her birthday in April that year would be her deadline to finish. Her reward was a solo summer trip to Ireland, which she says was incredible. “I have never experienced the feeling of belonging like I did from the minute I arrived in Ireland,” she says. “I felt like I was home, and I even thought about chucking my life in L.A. to find a way to live there permanently.” The process of sharing her one-woman play with her friends in Los Angeles led to a second performance, with additional friends and some strangers present. owned a local theater outside of the city, and soon Kate was performing the first stage production of her play, “I’m Too Fat For This Show”.

The play takes a comedic, positive approach to talking about mental health. Kate has performed it coast to coast in the U.S. and even in her beloved Ireland, winning several awards in the process. Kate discovered that bringing her private pain onto the stage was liberating. While initially concerned about how the show would be perceived, Kate saw how much it affected people positively, and allowed them to tell their own stories. Kate’s mission is to change the way mental health is perceived at any age. “My goal is to stop little kids from being taught such damaging messages at such a young age, and change the stigma so they can get help before it goes too far,” she says. “It is important to use comedy to help them let their guard down, and expose them to just how tricky this disease can be when no one else is around. In my play, I don’t beat the eating disorder because that was never the victory. The weeks after Winter Break can drag on and on, especially during an exceptionally cold and dreary winter. A little Spring Break planning can be just the thing to get you out of the winter doldrums and looking forward to some time away. Whether you stay close or travel far, here are some tips for planning your Spring Break trip. 1. BOOK EARLY Lots of people travel during Spring Break so booking early assures you can get better flights, hotel rooms and attraction tickets. Schools typically release their yearly calendars at the beginning of the school year, giving you plenty of heads up to book Spring Break early. When you book early, you have a better
chance of getting a better deal and making sure you book just the right flight or hotel for your family. The longer you wait to book flights, for example, the less likely you are to get seats together or even be on the same flight. 2. SET A BUDGET Lay out a travel budget for your Spring Break trip and stick to it. Making family memories on a vacation may be priceless, but taking a trip you can’t afford isn’t worth going into debt. Just like it’s beneficial to book early, it also helps to save early for your Spring Break trip. Spring Break doesn’t fall too far after Christmas, another expensive time for your family budget, so planning ahead allows you to spend money on both. 3. DIAL INTO DEAL Travel deals abound, you just have to do a little digging to find them. Not just for massages and Thai food deals, Groupon and LivingSocial both have travel sections full of deals. Groupon has a special Spring Break page that offers lots of great ideas and travel deals including Smoky Mountain cabins, indoor water parks and beach getaways. Online travel agencies like Expedia, Travelocity and Kayak allow you to search for travel deals all around the world. Many even have special Spring Break pages, providing trip suggestions for flights, hotels and activities. If you’ll be traveling by air, some travel experts suggest the best time to purchase airline tickets is on a Tuesday, as prices tend to drop that day each week. Sign up for airline and hotel emails to unlock other deals.
4. UTILIZE APPS Tons of apps exist to help take the stress out of Spring Break travel planning. Hopper is an excellent tool for finding the best flights, as the app lets you set up alerts for different itineraries and even allows you to book right from your phone. TripIt helps you keep all your reservations and itineraries organized, putting everything (flights, hotel reservations, car rentals, etc.) right at your fingertips.
Just like out-of-town visitors, locals can take advantage of special deals and discounts through organizations like the visitor’s bureau. They often have coupons on their websites and at their offices for attractions, restaurants and hotels. Regardless of where you go or how you get there, with a little planning you can have the Spring Break trip your family will remember for years. Happy planning!

THINK OUTSIDE THE BOX Florida, Mexico, Disney. These might be great Spring Break destinations, but they’re also some of the most popular and most crowded and most expensive. Avoid the crowds and consider an alternative Spring Break destination. Washington D.C. is affordable and offers something for the whole family, from museums to monuments. Sedona, Arizona offers an escape from the cold and amazing outdoor activities like hiking and mountain biking. If your passport is up-to-date, consider running for the Northern border and visiting one of Canada’s great cities. Montreal is an eclectic mix of French colonial architecture, Bohemian attitude and modern-day sites. Calgary’s natural beauty and small-town feel makes it a great choice for the outdoorsy type and Niagara Falls has fun for the whole family. 6. LOOK LOCAL Don’t overlook a Spring Break trip to a local destination or a staycation in your own city. Staying local helps cut down on travel costs and gives you an opportunity to see your town through different eyes. Visit that local museum you’ve never been to, try a new restaurant or cheer on the hometown sports team. Libby Wyatt loves Fortville. After moving there two years ago in order to be close to her retail business, she immersed herself in the community spirit. When she saw that the town had a need for an ice cream shop, she jumped into action to fill the void. The result is Libby’s Ice Cream and Gifts, located at 11 South Main Street. Wyatt explains how her ice cream and gift shop came to be. “After being a professional organizer and working from home, I opened Storehouse in 2016,” she says. “It was filled with a mix of furniture, gifts and décor. I choose Fortville as the site for the business because I just loved its small-town feel. “Indulge Ice Cream shop was right across the street and when it closed in September 2018, I watched families getting out of cars and trying to open the door,” Wyatt says. “I could see their disappointment. As they left, I thought, ‘They won’t come back to Fortville.’ I told my husband, ‘We have to add ice cream.’” After closing down for a month last May, Storehouse reopened in June as Libby’s Ice Cream and Gifts. Modifications included making the inside brighter by installing recessed lighting and removing Storehouse’s trademark dividing wall of windows and doors. And while it’s still a great place to pick up a gift or décor item, there are plenty of places to sit and enjoy ice cream such as the bar spanning the front window and several tables. Also new is a colorful mural painted by Sheri Jones of Studio 309. It’s perfect for selfie-taking. “When it came time to choose an ice cream brand, I wanted to go local, not outside the state,” Wyatt says. “I needed someone close by who could hold my hand. One cold, rainy day last spring, we went to Sundae’s Homemade Ice Cream in Indianapolis and people were packed in there. They do wholesale and we reached out to them to supply our ice cream.”

The ice cream selections are constantly rotated but the typical standards of vanilla, strawberry and chocolate are always available among the other innovative flavors. Thanks to a new culinary concept launched in Fishers, up-and-coming chefs now have a unique place to hone their craft, and local residents have the chance to come try their various creations. The co-founders of Fishers Test Kitchen, which opened on February 1 at The Yard at Fishers District, describe the facility as a restaurant accelerator that includes three separate food stands and a 350-seat food hall shared with Sun King Brewing Company. Back in 2016, co-founders John Wechsler and Jolene Ketzenberger began formulating
the Test Kitchen model, realizing there could be a high level of interest from chefs wanting to try out unique food concepts and widen their reach into the northside.

“I’ve had some exposure with Rook down in Fountain Square, and I thought the timing was good to get into the northside. Opening day was just insane - there were so many people asking about what was going on here and how it works.” Wechsler says the original idea for the Fishers Test Kitchen came when he noticed a lack of local, legacy eateries in the Fishers area. “When I first moved here in the mid-80s, there were about 3,500 people here,” says Wechsler, who also co-founded the coworking space Launch Fishers. “Today there are 98,000. With all that growth, one thing that we lack significantly is legacy restaurant space. In older cities and towns all over the country, they grow at a more linear pace and the restaurants keep up with the community. Here there tend to be a lot of national chains. There’s a dearth of local, original concepts.”

Wechsler adds that the growth in Fishers of tech and innovation companies has led to an increased demand for fresh, quality food establishments. “The kind of people that those companies attract demand more from their restaurant scene than the standard chain store experience,” he says. “So we felt like - quite literally - feeding the innovation economy was a priority and that by investing in space to de-risk the decision for someone to open a restaurant in Fishers, we would ultimately see some growth in the community. That was the driver behind this.” MARCH 2020

The Test Kitchen co-founders plan to keep their first group of chefs at the facility for approximately 20 months, after which they will evaluate which chefs are ready to head out and perhaps open their own establishments. “At that year-and-a-half mark, the plan is to maybe take one chef out and bring a new one in, and then start to rotate every four to six months so we don’t have all of our chefs out at the same time,” Wechsler says. The dining hall’s hours of operation match Sun King’s hours, so customers have the option to experience both establishments if desired. “We are the exclusive food service in the facility, so when people come in for a Sun King beer, we’re the only place they can get food,” Wechsler says. Wechsler adds that, from the start, local leaders and residents alike have supported the Fishers Test Kitchen mission. “The city itself is financially investing in this project so they’re our backers, and having the mayor and the council behind it gives it a great start to begin with,” he says. “The broader community has been unbelievably supportive of this idea, as well as Launch Fishers. When first elected to the Fishers City Council in 2015, Cecilia Coble approached Mayor Scott Fadness about her passion for disability awareness. “Disability is near and dear to my heart,” says Coble, who is now the Fishers City Council president and co-chair of the Fishers Advisory Committee on Disability (FACD). “I have a daughter in high school, and she has autism and cognitive delays. My mother-in-law had a stroke and is now in a wheelchair. She has a disability and is unable to use half of her body.” Given her own experiences, Coble wants to ensure that other Fishers families dealing with disabilities have a support network.

We’ll also have artwork in City Hall for the month of March and at surrounding businesses.” Coffee Talk: Looking at Employment Differently

Contractor with LIGHTsource, landed the lighting deal for the Fishers District and couldn’t be happier with how the project has turned out. “I have a prior relationship with Thompson Thrift on other projects, so once the Fishers District development went to bid, I reached out to them to put our LED lighting package together,”
Burkhart says. “It has been a very exciting project to work on. We were involved early on with the concept and design phases and combined that with LIGHTsource’s ability to use locally manufactured products from the Acuity Brand Lighting. The Fishers District concept is so unique, and there really aren’t any other projects around Indianapolis like this.”

LIGHTsource was founded in 1991 by Greg Conger, who serves today as CEO & President of the company. Conger, who is also a Geist resident, started the Indianapolis-based business with the goal of becoming the premier lighting and controls agency in Indiana. Nearly 30 years later, the company has been a part of major lighting projects throughout Indianapolis, including many of the major auto dealerships and even Lucas Oil Stadium. When the opportunity arose for the Fishers District project it was a nobrainer to put in a bid. “We are celebrating our 29th year in business and have built a reputation of putting the customer first,” Conger says. “The Yard at Fishers District was a target project for LIGHTsource. Thompson Thrift nailed the theme of the city by offering Fishers an upscale space for the entire public to enjoy.” Burkhart, a CPA by trade, started out in public accounting with a focus in construction consulting. When Conger, a friend of Burkart’s, asked her to join him on the sales side, she knew Conger was on to something special and that the partnership would be mutually beneficial. “I was so intrigued with the LED lighting and continued to learn about it,” she says. “It just married well with what I was doing. I act as a development professional and energy sales consultant.” Burkhart has served as a project manager and supervisor of sorts over the Fishers District project, offering input early on for the design stages. Throughout the project, she has been on site two to three times a week to oversee the development. MARCH 2020
With much of the outside lighting done, Burkhart’s focus has shifted to several of the tenants at the Fishers District. LIGHTsource is also providing the lighting and design for several restaurants on the property, including the recently opened Sangiovese Ristorante and soon-tocome Sangrita Saloon. There are also plans to add colorchanging LED lights throughout the exterior of the Fishers District, bringing an added flare to the ambiance of the property during holidays and certain seasons. “It has been very hands-on for me,” Burkhart says. “With Sangiovese, we did the lighting design for the restaurant. So I have also been on that job site making sure, for example, that decorative fixtures are installed correctly. The fixtures and LED technology throughout the Fishers District look awesome. It has been really fun to see everything come together. It is a project that we have looked at on paper over and over for more than a year now, tweaking the design and getting it just right. It is great to see it all lit up now.”

Therefore, the city will offer activities all month to educate the public and celebrate the success of those with disabilities. There will be an art reception at Connor Prairie, a series of short films related to disabilities at the JiEun Lee Music Academy, and workshops and support groups at Hamilton East Public Library. In addition, there will be a workshop at Connor Prairie for employers in the community to learn more about hiring people with disabilities.
Things kick off on March 2 at Fishers City Hall Auditorium from 8:30 a.m. to 10 a.m., as area caregivers will share stories about their lives and the lives of their loved ones with disabilities. Coble is co-chair of the Fishers Advisory Committee on Disability, along with Kelly Hartman. The committee holds quarterly meetings with sub-committees that work on issues such as housing, accommodations, accessibility and employment. On March 3 the public is invited to attend a meeting at the Fishers
City Hall Auditorium from 5:30 p.m. to 7:30 p.m., where a discussion will center on how to handle caregiver stress and fatigue. The committee will also share information on how the Fishers Fire Department is helping first responders with innovative programs to help families dealing with stress. Every year stakeholders and the Advisory Committee on Disability meet with the mayor to discuss issues affecting people with disabilities. “That’s very powerful because we bring in city leaders, elected officials, educators, and the disability community talking in panel discussions about some of their greatest challenges and greatest successes they have had here in Fishers,” Coble says. “Their input helps us determine how we can work together to resolve those challenges.” On March 28 people with disabilities will put on a talent show at the Ji-Eun Lee Music Academy. During the show, awards will be presented to individuals who have gone above and beyond to become champions of inclusion in the Fishers community.
“Every day I grow as a person,” she says. “I love to meet new people and hear about the issues facing our residents.” In the past five years, Fishers leaders have made significant gains that include becoming a city, building an economic tax base, and bringing in amenities for citizens to enjoy. For instance, the new Fishers District offers a wide variety of culinary experiences. “This is something the city and its residents have been waiting patiently for,” says Coble, adding that the Fishers Test Kitchen, located at The Yard at Fishers District, is a unique opportunity for aspiring chefs to create dishes and for people to experience something different.

Zedrick first tried his hand at teaching golf lessons at the age of 16 as part of some service hours he needed to complete for Confirmation. “Every year since then, I’ve either been involved in junior golf or instruction,” he says. “So basically, for the last 30 years, I’ve been teaching in one form or another.” Zedrick is known for the many unique ways that he teaches his students. With junior high through adult students, for example, he utilizes the golf simulators at Gray Eagle to help sharpen their skills. “We have three simulators at Gray Eagle, so every week we’ll play nine holes on the simulator,” he says. “They keep a very detailed scorecard that’s filled with lots of
stats, and the following week we pick the lowest hanging fruit to work on.” With students junior high and younger, Zedrick uses another innovative technique associated with Discover Golf to keep things engaging. “You know the culture of today’s younger people — most of them are gamers of some sort,” he says. “Every game we play is ‘golf-ish,’ but every game has an element of chance and an element of randomness built into the game.” These games help Zedrick keep students interested even if they’re brand new to golf.
“Every game is going to cater towards the kid that’s very good but also the kid who has never played golf and maybe doesn’t even want to be there,” Zedrick says. “There are going to be three to five unique choices that will need to be made throughout the game strategy-wise, kind of like playing Monopoly. The Cinderella stories. The upsets. The bracketology. Whether you’re an avid college basketball fan or just enjoy picking your bracket based on the mascots, March Madness is an exciting time. This year, share that excitement by hosting your own watch party for your family and friends with this winning starting line-up. Here are 5 helpful tips for making your March Madness party a slam dunk.
1. CHOW DOWN ON GAME DAY CLASSICS
of creativity for drinks. If a local team is in the dance, keep a cooler full of beer from area breweries. You could also choose local favorites from other teams in the tourney. Keep cocktails simple so that you don’t have to spend your whole party tending the bar. Try premixed drinks like margaritas, sangria and mojitos that you can mix up before the party and let people serve themselves. For the 21-and-under crowd, have bottles of Gatorade (bonus points for orange flavor to tie into the basketball theme!) and bottled water on hand.
2. DON’T SKIMP ON THE TV
Food for your March Madness party should be simple and easy to eat with your fingers. Chicken wings, jalapeño poppers, pizza and nachos are classic game day go-tos. Take your finger food game to the next round by choosing foods that correspond with some teams in the tournament. For example, serve mini hot brown sandwiches in honor of Kentucky or pulled pork sandwiches for Kansas. For dessert, decorate cupcakes in your favorite team’s colors or use orange and black icing to create mini basketballs. It’s not a party without libations, and March Madness allows for lots
The bulk of the party will be watching the games, so you’ll want to have a nice-sized TV. If you can swing it, set up several TVs to watch multiple games at once, especially during the first rounds. Put your TV(s) in a spot where everyone can comfortably view it, providing spots for people to sit and watch if they want to. Think creatively for extra seating, repurpose poufs and stools as seating. Before the party, check your cable connection to be sure no one has to experience an expected blackout.

3. U P YOUR BRACKETOLOGY GAME One of the best parts of March Madness is picking your teams and watching them advance along your bracket. Some people spend hours pouring over game notes and expert tips to pick their bracket, while others choose teams based on school colors, mascots or friends who attended that school. No matter how you choose, elevate your bracket game at your party with fun games and contests. For each game that you watch, award prizes to the guests who choose the winning team on their bracket. You can also pass out prizes for guests who correctly guess the total final score, how many players foul out of the game or the winning team’s field goal percentage. Be sure to have extra brackets on hand for guests who haven’t had a chance to fill one out yet.
4. ENTERTAIN GUESTS WITH OTHER GAMES TO PLAY While the basketball games are the main attraction, have other games for guests to play during halftime or in between rounds. Break out the PlayStation or Xbox for a round of NBA Live or NBA2K. Head outside for a real game of hoops, horse or knockout. Let your guests show off their skills. You could also put up small basketball hoops around the house for trick shots and alley-oops.
5. IT’S ALL ABOUT THE AMBIANCE Tie it all together with a fun ambiance. Have all your guests wear their favorite basketball jersey or other collegiate team wear. If your guests are willing to go all out, ask everyone to wear their best face paint and offer a prize for the coolest design. Join the fun too, donning a referee shirt and whistle to call any party fouls and award points for participation. Make the party atmosphere extra fun by playing Jock Jams songs in the background. Most party stores sell basketballthemed decorations. You also can’t go wrong with simple black and orange streamers and balloons. No matter how you party, just remember to be safe and have fun! For the past two years, Mudsock Youth Athletics (formerly S.P.O.R.T.S.) has hosted a community-wide kickball tournament bringing students, families and community groups together to play and raise funds for youth sport programs in our city. This spring, the organization will carry out its flagship event under a new format, encouraging area businesses to join them at Billericay Park for the KICK Corporate Challenge. “We know that positive team building translates into happier, more productive employees and that a company’s work culture goes a long way in retaining great people,” says Beth Lawrence, Assistant Director with Mudsock Youth Athletics.
“This event caters to all levels, and you don’t need to be an expert to play. NEW CITY-WIDE INITIATIVE SEEKS TO ELIMINATE STIGMA SURROUNDING MENTAL ILLNESS Writer / Jon Shoulders Photographer / Eli Beaverson
Five years ago, Fishers Mayor Scott Fadness and City Council Member Todd Zimmerman had an important discussion about the stigma surrounding mental health issues. They realized that a city-wide initiative, now known as the StigmaFreeFishers campaign, directed toward combating such stigmas, would be well worth the effort on a city-wide scale. One major component of that campaign is Fishers Cares, the city’s latest structured effort to combat mental and emotional problems, and the stigma that can surround them.
“We wanted to get faith-based groups, nonfaith groups, nonprofits and other businesses in our community together for Fishers Cares,” Zimmerman explains. “We’re trying to cross denominations and get people of all walks of life to come together and talk about the stigma of things like mental illness, anxiety and depression. We need to get people to somehow start talking about their experiences so they realize they’re not alone.” During a preliminary Fishers Cares brainstorming session Zimmerman held to discuss ideas on how to structure a program to directly help those in need, representatives from more than 40 local organizations and nonprofits showed up. last October and provides anyone in the community with an opportunity to schedule an appointment on the official StigmaFreeFishers website and meet at one of several Fishers locations with a trained volunteer for 30 minutes to one hour. “You can sign up online, or do a walk-in at one of the places like the churches we have listed,” Zimmerman says. “You can just meet someone and get away from whatever your situation is - basically anything that’s not a 9-1-1 situation, or a situation where you need licensed therapy,” Zimmerman says. “It’s a first line of defense. You’ll have someone to be a listening ear and allow you to talk about what’s bothering you or stressing you out.”
Anyone interested in participating can simply provide their name and basic contact information on the Fishers Cares website, such as an email address, to schedule an appointment. No personal information is collected or filed with the city.

“This is really the first step in a broader approach of trying to get the community to rally around each other and trust each other, so we don’t see as many tragedies if we can avoid one suicide or one home situation that gets out of control from stress, that’s what this is designed for,” Zimmerman adds. Every Fishers Cares volunteer undergoes a basic training program known as Mental Health First Aid, and Zimmerman says that while volunteers aren’t offering professional help, they can be a simple sounding board for those who need to discuss issues, problems or stressful situations.

“If someone has cancer that doesn’t generally ostracize that person, but if someone has a mental health crisis, then sometimes the tendency is to keep that person at an arm’s length,” Zimmerman says. “Every human being has some sort of anxiety, so at that ground level we should be able to have conversations without ostracizing people.” Zimmerman stresses that all local entities are welcome to participate in Fishers Cares, including faith-based and nonfaith organizations alike. he Yard at Fishers District is quickly becoming a Fishers staple as more restaurants, bakeries, shops and other businesses continue to open at the popular venue. The buzz surrounding the Fishers District only grew when Sun King opened its brand new Tap Room & Brewery on Feb. 1. The two-story, 13,000-square-foot tap room is one of the largest facilities at the Fishers District. The entire facility is family-friendly, save the bar areas on the first and second floors. The new location replaces the former 96th Street Sun King Tap Room in Fishers, and it is a spot that drew interest very early on with Sun King higher-ups. “In 2015, when we made our first foray into Fishers, our original plans were to build out a spot and increase our production,” says Clay Robinson, Sun King Co-Founder & CEO. “There were some state laws and other things that caused issues. So, we pivoted and opened the 96th street small-batch brewery and had been there for the last five years. We always knew we wanted to do something more. Fishers has developed so much over these last five years. “When The Yard at Fishers District was announced, we reached out to Thompson Thrift, having had a previous relationship with them, and decided to jump in. It’s great to be here. Fishers District has done a great job of curating the types of businesses that are here. There is a nice balance of food, wellness and shopping. That made it an attractive location for us.” Those who have been to Sun King Spirits in Carmel will see a similar concept at the new Fishers location. Probably the most unique aspect of the new location is the partnership with the Fishers Test Kitchen. The test kitchen, located inside Sun King Fishers in its own section of the brewery, houses three accelerator chefs who will be the exclusive food provider for Sun King. can then go back to their table anywhere in the tap room and enjoy a Sun King beverage while waiting on their food buzzer to go off letting them know their order is ready. The Fishers Test Kitchen chefs will rotate out every 18 to 20 months with new chefs and new menus. The first round of chefs includes Chef Carlos Salazar with Lil Dumplings, brothers Jung Gyu Kim, “Chef John,” and Jung Min Kim, “Chef Kim,” with Korave Korean BBQ, and Chefs Adam and Alicia Sweet with Natural State Provisions. “This is a really great concept,” Robinson says. “When the idea came up, we were very excited. The hope is that the test kitchen brings new restaurants into existence, and that idea fits really well with our core values and concepts at Sun King, being entrepreneurial-minded. It will give these chefs an opportunity to break out into the food industry. The nice thing about the test kitchen is that it is kind of its own space and even has its own entrance. There is a nice variety of menu options, and all of the food tastes fantastic.” The new Sun King Fishers Tap Room and Brewery seats around 300 guests, with more than 200 of that being family-friendly seating. The second level of the brewery includes a 3,000-square-foot rooftop patio with garage doors that will open up when the warmer weather rolls in. Additional seating will be added later to the main floor outside patio area as well as a beer garden for guests to enjoy. Much like Sun King Spirits in Carmel, the new Fishers location will also be serving its popular seasonal and specialty beers along with the new cocktails and spirits first introduced at the Carmel location. “We will have the full selection of Sun King spirits that come out of our Carmel distillery,” Robinson says. “You will see our signature and seasonal cocktails, including our Pachangarita slushy made with Sun King agave spirit and our Pachanga Mexican Lager.” 46 / GEIST MAGAZINE / MARCH 2020 / atGeist.com

“We try to make our space bright, open and a comfortable environment for people to come into,” Robinson says. “The second floor with its indoor, outdoor capability gives it a cool feel. The family-friendly restaurant specializes in a variety of seafood cooked with a southern twist. “I never thought I’d be in the restaurant business - it just happened,” says Lam, who co-owns Nola Seafood Boil with Nam Ho. “I was looking for something to invest in when I met Nam. He owns Mad Crab, a similar concept, in the St. Louis area. I visited the restaurant and it was packed with people. I found that the food was great. Nam and I shook hands, and off it went from there.”
When customers walk into the restaurant, they have several choices to make. Besides the seafood boils, they can select from several starters such as raw oysters or beerbattered shrimp. Also on the menu are fried seafood baskets, po’ boy sandwiches and combo plates. Sides include rice, bread, fries, and of course hush puppies. Traditional New Orleans beignets and gooey butter cake are offered for dessert. Beverages include beers and soft drinks. The seafood boil option is a build-yourown experience. First, the seafood is chosen. Patrons can opt for shrimp, crab and even live, whole lobster. Next, extras like sausage, potatoes and corn on the cob are added. A typical seafood boil ranges from about $20 to $45. Po’ boy sandwiches start at $11 and most fried seafood baskets are $12 to $14. For those that don’t care for seafood, chicken tenders and chicken wings are available. There are also menu options for children.

“Right now the most popular menu item is the seafood boil,” Lam says. “A lot of people have been choosing the snow crab legs and the deveined shrimp. The spices used make it very flavorful. It’s hard to describe unless you try it.” Restaurant leaders held an official ribbon-cutting ceremony on January 10. Members of the Greater Lawrence Chamber of Commerce and Lawrence Mayor Steve Collier were on hand. Since then, Collier has been seen eating lunch at Nola Seafood Boil more than once. “Mayor Collier was just in eating lunch,” says Lam. “He helped cut the ribbon during our ribbon-cutting ceremony. I can’t thank the Chamber of Commerce enough for all they have done to promote the business.” Lam adds that the eatery’s seafood boils have a Vietnamese twist. “People have to try it to see how good it is,” he says. “I brought Nola Seafood Boil to Lawrence because it didn’t have another restaurant like it, and I thought it would be the perfect place to be.” Nola Seafood Boil is located at 11135 Pendleton Pike, Suite 400 in Lawrence. For Steve Gilbert, limits are illusions — nothing more than hindrances we place on ourselves. One glimpse into Gilbert’s physical accomplishments over the past decade, and it becomes apparent that such an optimistic personal philosophy has been shaped by plenty of adversity and a tireless work ethic. A few years after being diagnosed with Parkinson’s Disease in 2004, Gilbert spotted a story in the newspaper about Rock Steady Boxing, a nonprofit that offers non-contact, boxing-inspired workouts for those with Parkinson’s. Never much of an athlete (he describes himself through junior high and
high school years as “the kid in math club, not the kid on the ball field”), he was a bit intimidated but intrigued enough to try it out. After one class, he was hooked. “It was hard work, and they kept telling me I could do things that I didn’t think I could do,” says Gilbert, a 73-year-old Indy native and Fishers resident. “It’s meant for people with movement difficulties, and I thought it sounded like fun. I reached a new level of fitness that I never had before. It transformed my life emotionally and spiritually.” In 2010, Gilbert’s younger brother Bruce, a Kansas resident and a runner since junior high who has completed eight Boston Marathons starting in 1969, came to Indy for the Geist Half Marathon. and unexpected success in his physical development thanks to regular workouts at Rock Steady, Gilbert figured it was time for an additional challenge and decided to join Bruce for the race. “It was so empowering to finish that half marathon, thinking back on all the progress I’d made and dealing with Parkinson’s,” Gilbert says. “I guess I got the running bug, and I did the Geist Half and the Indianapolis Monumental Marathon the next year. I’ve been running pretty much nonstop ever since.” And the fitness opportunities keep coming. This spring, Gilbert was contacted by Blake Boldon, director of the Drake Relays, one of the top track and field events in the country held in Des Moines, Iowa. Boldon
knew Gilbert from his days directing the Monumental Marathon and formally invited Gilbert to compete in the 40-yearsand-older Masters 800-meter race on April 26 at the 110th Drake Relays. “(Boldon) wanted me to come as an example of maintaining fitness and fighting back against the challenges that I’ve faced,” Gilbert explains. “It was an honor to be able to do it.” Since the age of 65, Gilbert has become a veritable race veteran, having finished two full marathons, 12 half marathons and more than 40 other races of various distances — never letting his physical limitations get in the way. His current schedule includes Rock Steady workouts twice per week and runs three times per week, often with local fitness groups Fishers Running Club and Indy Runners. He gives credit for his physical progress to his trainers and fitness partners, family, friends and colleagues at Cyntheanne Christian Church in Fishers, as well as the city of Fishers itself. “With all the trails and sidewalks, Fishers is an inviting place for a runner,” Gilbert says. “Construction on a lot more of the sidewalks is underway, and I’m excited to see that. To have a lot of the trails and sidewalks connected is good for a runner because you want to stay in your rhythm without having to stop at gaps and streets.” Gilbert recently competed in the Indianapolis Monumental Mile race in June and plans to compete in the Monumental Marathon in the fall. As he continues dealing with physical challenges of Parkinson’s, he stands as proof that anyone of any age can work to improve their health and outlook on life. “Your biggest obstacle is you,” he says. “You can do more than you think you can and more than other people think you can. I feel healthier than I ever thought I could be, given my age and challenges. I think you have to celebrate your small victories and don’t get discouraged.
