olitaire, crazy eights, gin rummy, hearts, Texas hold ‘em—your favorite card games are more entertaining and educational with your own deck of Kentucky to the World playing cards. KTW released a limited edition of 1,000 decks in May 2021, the first deck in an ongoing series. All 52 cards are “face cards,” featuring the faces of extraordinary people with Kentucky roots, from actors and musicians to authors and industry leaders. Each portrait was illustrated by Louisville artist August Northcut, who is also a KTW team member.
Kentucky to the World is a nonprofit organization based in Louisville that boosts awareness of Kentucky’s positive impact across the United States and around the world by sharing the stories of contemporary individuals that have strong ties to Kentucky. Founded in 2012, KTW shares Kentucky’s impact with the world by way of blogs and video content, interactive exhibits and live speaker events, and through programs on Kentucky
Educational Television. KET is broadcasting Kentucky to the World shows on 16 stations and streaming on their website. KET also reaches into parts of seven other states. “This partnership is truly a game-changer for Kentucky to the World, and we’re proud to be able to help provide KET with important programming that promotes the best our state has to offer,” says Shelly Zegart, president and CEO of Kentucky to the World. Aim to get the colors of the rainbow, (great antioxidants) fruits and vegetables for snacks. Lunch and dinner should consist of a protein and a green. An example is bean soup and a salad. Stay hydrated and drink water. Exercise everyday for 30 minutes. Stay active!

SLEEP DEPRIVATION
The primary signs include excessive daytime sleepiness and daytime impairment such as reduced concentration, slower thinking, and mood changes. Keeping the mind and body active during the day with positive activities can help the body fall asleep faster at bedtime. If you struggle, try falling asleep or tricking your body and lying down in a spot that you normally do not sleep in. Try reading to relax or have the television on in the background at a low volume with a relaxing show such as Planet Earth. Listening to sound wave music, lavender scents and warm baths help the body relax before bedtime as well. Wind down and keep a set routine every night.

Osteopenia is a condition where the body does not make new bone as quickly as it reabsorbs old bone. Osteoporosis is a condition where the bones become weak and brittle. New bone creation does not keep up with old bone removal. Weight bearing exercise can help prevent bone loss or strengthen already weak bones. Women, in particular (primarily small boned, 65 or older, and who are postmenopausal) are most at risk. Aim to consume calcium and vitamin D. Get a Bone Mineral Density test at your doctor to stay on top of your bone health.
BALANCE
Incorporate balance exercises into your daily routine to prevent falls, improve coordination, and prevent injury. Simple exercises such as balancing on one leg everyday for 30 seconds can improve your balance coordination. As we age, many may experience vertigo, a sensation of feeling off balance. Dizzy spells can occur. By practicing balance exercises, we are more apt to recover or catch ourselves from falling. Balance boards and Bosu balls are great pieces of equipment to test your skills. hen you think of “collagen,” the first place your mind goes is probably a Kardashian. Or maybe a Real Housewife. But collagen is more than just a lip or fine line filler injectable. he first location opened on Taylorsville Road in 2013 and single-handedly raised the burger game for the Louisville restaurant scene. In October 2015, the second location opened on 7th Street near Museum Row in downtown Louisville. Bluegrass Restaurant Holdings, established in 2017, acquired both sites in 2018. Bluegrass Restaurant Holdings Director of Operations and lifelong Louisvillian Nathan Eiden started his career with Mussel & Burger Bar as a server in early 2014. He was promoted to management the following year. Nathan was General Manager of the downtown location until 2018, when the new ownership tapped him to manage both restaurants. “We deliver quality ingredients through a chef-inspired menu in an approachable, familiar way.” New Executive Chef Michael Strickland comes to Louisville from Naples, Florida. He owned and operated three restaurants there before accepting the opportunity to helm the Mussel & Burger Bar kitchens. Michael has family in Louisville and is a classically-trained chef, giving him some local background and multicultural perspectives.

At Mussel & Burger Bar, it is not uncommon to see a family dining next to a power lunch next to a couple on a first date. “Our goal is to deliver as much good food to as many people as we can,” says Nathan. “You don’t need to break the bank to experience great food.” Dishes are made from scratch with local ingredients whenever possible, along with other elements from around the world to add some international flavor. Mussel & Burger Bar is not about shortcuts. The mussels are always fresh, and the accompanying grilled slices of local bakery artisan bread are delivered daily. Many would argue that dipping the crusty bread in the flavorful broths of the mussels is the highlight of the experience. Moules Basquaise are served with Spanish chorizo, olive oil, seafood sofrito broth, piquillo peppers, mild chili flakes, garlic, and onions. The secret to the Curry Cream mussels is a yellow Korean-style curry picked up weekly from an undisclosed local market. Red onions, lemongrass, garlic, and lemon zest balance the curry and make it sing. Chefs prepare the grind for Food Network-famous burgers in-house daily with a mix of sirloin and brisket, adding browned butter to enhance the flavors of the quality beef. Courtney Rada featured the Argentinian Burger on their shows. The Argentinian adds a patty of chorizo Argentino to the beef burger smothered with thick-cut provolone cheese, caramelized onions, and chimichurri sauce topped with mixed greens and Italian marinated oven-roasted tomatoes. The pommes frites are the perfect accompaniment. Also highlighted on Carnivorous, the decadent Southern Bell burger is piled high “with fried green tomatoes, rémoulade sauce, and pimento cheese on a pretzel bun.” Sweet potato fries with smoked pineapple dipping sauce are the side of choice for this and the Bacon Breakfast Burger. The B.B.B. is the ultimate brunch burger “with caramelized onions, aged white cheddar cheese, maple syrup aioli, thick-cut maple syrup glazed pork belly, and a fried farm egg.”

ouisville Joe Coffee Company is a coffee bar inside Dox Fox Clothing and Culture boutique at 1567 Bardstown Road in the Bonnycastle neighborhood of the Highlands. Dot Fox/ Louisville Joe Owner Sally Bird says Louisville Joe has been “nestled here in our hearts” ever since she drew up her original business plan twenty years ago. It is “a natural evolution” out of the boutique’s location. The coffee bar has been open for a year now, offering organic,
fair-trade coffee and tea and “the most magical espresso shots” from the vintage 1970s Victoria Arduino espresso machine. Sally is a “born and bred Louisville kid” who always wanted to “invest time and energy in business” here. She works with local dairy suppliers, features pastries from local bakeries, and sources coffee from Bean roastery on Goss Avenue and Safai Coffee headquartered on E. Kentucky St. Louisville Joe is “such an asset to the boutique,” says Sally, as folks are “meandering down Bardstown Road” they can get a boost of energy to power through the day or hot chocolate to keep the kids happy while they shop. Sally’s favorite coffee drink is a Dot Fox Latte made with oat milk, almond, and caramel. She also recommends the Green Tea or
Jasmine Tea Latte. This summer, try an Italian soda, iced Rose Hip Tea, or Mint Tea with pomegranate, fresh mint, and fresh thyme. “We also make a mean chai,” inspired by a chai Sally had on a visit to Taos, New Mexico. “It’s pretty spicy but still sweet.” Louisville Joe currently serves pastries from Smør Nordic Bakeri and Breadworks scones, including the cinnamon scone that Sally can’t resist. Louisville Joe Coffee Company is all take away service with just one table out front for now. But there are plans to expand with a kitchen and more seating for a more traditional café setting. Louisville Joe is open 9 am - 8 pm Monday through Saturday, and 9 am - 6 pm on Sunday. Sally is looking forward to hosting events such as poetry slams, open mike nights, and psychic fairs. wned by a group of friends and family members, Day’s Espresso & Coffee is “a Highlands institution” in its 27th year of operation. One of the owner’s friends opened the first coffee cart on Bainbridge Island across Elliott Bay from downtown Seattle. Day’s Espresso & Coffee opened on December 13, 1994, serving “superior product” from a fourth-generation San Francisco roaster. Co-Owner/General Manager Chris Roy was Day’s fourth paid employee and co-owned and designed the Downtown Louisville location open from 1998 to 2005. “Managing Day’s Espresso & Coffee has never felt like work,” says Chris. “I love doing it, and it feels effortless most of the time.” He takes great pride in helping build the business over all these years. Serving the “most consistent product” is the goal. “We focus on the nuance of each drink. I train my people that they are not just completing a task. I instill taking ownership of what you’re doing. The skill to construct espresso beverages is something they can take with them anywhere.” Luckily, Louisville is “a city rich with local coffee shops.” Chris suggests starting with drip coffee (in a range of 33 different roasts that “never taste burnt”) or a classic espresso drink. “We have the best Cappuccino in the city, and I would gladly host a drink-off to prove it.” He also recommends the Espresso, Cortado, and Con Panna. Day’s offers over thirty flavors for the Cafe Latte, along with a wide selection of alternative dairies. Beat the heat this summer with a Big Train blended frappe available in a dozen flavors. The shop also serves Lotsa Pasta paninis and baked goods from Payne Street Bakehouse and Kizito Cookies. Day’s Espresso & Coffee has benefited from the “pandemic reset,” receiving small business financial relief and improved parking and traffic flow due to permanent traffic pattern changes on Bardstown Road. fter successfully navigating the business disruptions of the COVID-19 pandemic, Please & Thank You celebrated its tenth anniversary on May 17, 2021. The woman-owned cafés located in Clifton, East Market District, and Prospect are famous for their coffee program - and chocolate chip cookies! Founder/Owner/Operator Brooke Vaughn was born and raised in Indianapolis, Indiana. From age 8, she spent every other weekend in Louisville at her father’s Daily Grind Coffee Shop on Frankfort Avenue. Brooke has worked in coffee since age 15, and she hasn’t stopped since. Working in a coffee shop next door to a record store in Indianapolis, Brooke met her husband. They eventually decided to take a shot at opening a café in Louisville. Since its inception, Please & Thank You has distinguished itself from other Louisville coffee shops. “We don’t do decaf or non-fat,” says Brooke. “This is a place where people come to treat themselves, not unlike visiting an ice cream parlor. It’s a nostalgic experience.” The most popular coffee drinks at Please & Thank You are the Iced Coffee and Cold Brew from their proprietary blend by Good Folks roastery in Louisville. Brooke spent 2½ years developing her chocolate chip cookie recipe. In the early days of Please & Thank You, she put out just a half-dozen cookies every morning, and they sold out by noon. he history of Safai Coffee Shop begins in 1998 with a 72 square-foot drive-through kiosk originally called Java Brewing Company. Just before opening Safai Coffee Shop in the Highlands in 2011, a trip to France inspired Mike and Medora Safai to serve crepes at the new location. “They had no idea how popular the crepes would be,” says General Manager Allison Tipton. “We have come to be known for our crepes.” Both sweet and savory crepes are available, including the Poppa Lava featuring “spicy cream cheese, bacon, smoked gouda, pickled red onions, grilled red peppers, and a generous drizzle of hot sauce.”

She “began taking on more responsibilities as opportunities arose. “I have been the General Manager for eight years now, and it is an immensely rewarding job.” Safai’s “welcoming atmosphere and community engagement” make it “a safe space for people of all identities and backgrounds.” Safai has held events and fundraisers to benefit local community organizations such as Dreams with Wings, Kentucky Health Justice Network, and Change Today, Change Tomorrow. Safai Coffee Shop’s drip coffee solely using the pour-over method also sets it apart from other local coffee shops. “Pour-overs are made by slowly pouring hot water over ground coffee through a cone-shaped dripper. The benefit of a pour-over is that the coffee is freshly ground when ordered, and you can taste all of
the distinct flavors more clearly.” The Ethiopia Yirgacheffe dark roast “has a rich dark chocolate flavor and hints of blueberry.” Safai’s most popular specialty coffee drink is the Black Magic latte with white mocha sauce and blackberry syrup. The new signature 24K Gold Latte with vanilla, turmeric, nutmeg, clove, and cardamom can also be served hot or iced. n May 11, Brew & Sip Coffee Bar celebrated the grand opening of its newly expanded shop at 3800 Shepherdsville Road in West Buechel. amp Hendon® is “so much more than just a summer camp,” says Executive Director Megan Cooper. The 501(c)3 nonprofit organization provides a monthly support group for parents and caregivers, family weekends, and various other programs to support Type 1 diabetic youth through different ages and phases of the chronic condition. Kentucky’s first endocrinologist, Dr. James Robert Hendon, and his associate Gladys Powell developed a camp program for Kentucky children with diabetes in 1965. The American Diabetes Association® sponsored the organization through 2010 when the ADA exited the program in Kentucky. The camp was maintained and supported by volunteers until Camp Hendon® hired Operations Manager Lori O’Bryant as the first paid employee in January 2015. 2021 marks Camp Hendon®’s tenth summer, returning post-COVID-quarantine at 75% capacity with physical distancing measures and some masking. Megan and the staff are hoping for more updated guidance by the time summer camps occur. “We are the only program of our kind in the state dedicated to Type 1 diabetes.” Megan, who has an MBA with a concentration in Entrepreneurship, joined the team in January 2017 after her husband (a Camp Hendon® donor) and a friend on the board encouraged her to apply. “Camp Hendon® is about community and strong relationships,” says Fund Development Manager Wendy Williams. Wendy moved to Louisville in January from San Antonio, where she served as development director in the nonprofit world for four years. “When the kids are fighting tough battles and have anxiety, there is always someone there.” Wendy knows all about it, having been diagnosed herself at just 13 months old. She attended Camp Hendon® since the age of seven and credits them with helping her become independent in managing her condition. Megan points out

Wendy explains that as a 501(c)3 fully supported by grants and individual financial and in-kind donations, Camp Hendon® is an independent organization not affiliated with any other diabetes charities. The summer camp fee is $550, but the actual cost of the camp is $1700 per camper. Funding covers the $1250 gap and “camperships” for families
In addition to the summer camps, Camp Hendon® supports parents through the virtual support group held the second Tuesday of every month with specific topics and special expert guests. Camp Hendon® will host a teen retreat weekend September 10-12 at Camp Horsin’ Around, “specifically set up for medical populations” in Perryville, Kentucky. On Saturday, October 2, Camp Hendon® will sponsor a free day camp in Lexington for 1st through 8th graders.

ope Scarves was founded in 2012 by Lara MacGregor, cancer survivor and the leader of this nonprofit that collects scarves and stories from people who have gone through cancer treatment and want to pass on their messages of hope and encouragement to others. More than 17,000 Hope Scarves have been sent to people facing over 90 types of cancer in every state and 26 countries, and $700,000 has been raised for metastatic breast cancer (MBC) research. Hope Scarves held a virtual “outLIVING Cancer” fundraiser worldwide May 22-23 and at Seneca Park in Louisville, as an international day of joyful activities, including biking, soccer, tennis, yoga, playing cornhole and more. In light of Lara’s stage 4 breast cancer progression and start of IV chemotherapy, outLIVING Cancer gives all individuals the chance to live life over cancer, no matter their abilities, age and location. The goal for the event was to raise $75,000, which was almost doubled thanks to 35 teams, 266 participants and 1,332 donors from 33 states who contributed $131,200 to Hope Scarves and MBC research. “I’m continuing to hold both joy and fear in the same hand at the same time. As I adjust to concerning health changes, outLIVING Cancer was a beautiful example of the enthusiasm of our community,” Lara
said. "We were blown away by the amount of support we received and so excited to see all of the great activities that individuals and teams participated in throughout the weekend. Taylor Ryan founded Change Today, Change Tomorrow, Inc. (CTCT) with the help of Nannie Grace Croney and an all-female executive board. Through three pillars of food justice, education and public health, the mission of CTCT is to appeal to the needs of the Black community through a variety of initiatives and engagement opportunities in ways that “redirect material resources directly into the hands of Black people and other marginalized folks,” she said.
The most popular food justice program is Feed the West (FTW). “It is a free grocery delivery program born out of the twin 2020 pandemics of Covid-19 and the increased awareness on anti-Black state-sanctioned and state-based violence,” Taylor said. CTCT partners with more than 20 local businesses through the Feed the West program, delivering fresh produce and other healthful groceries, as well as toiletries and other resources around the city. “Food apartheids are a very prominent fixture in Black communities around Louisville, specifically the west end of Louisville where historically racist policies have had long-lasting effects on the resources available in those areas,” she said. “We seek to address all of the barriers associated with access to healthy food and sustainable meals for all residents. Everyone deserves to have barrier free access to quality, healthy food no matter their socioeconomic status.” In addition to Feed the West, CTCT’s food justice pillar includes a food pantry project and community garden development. The organization also conducts virtual cooking classes and hosts a monthly pick-up program for Black-owned fresh produce, herbal tea, organic supplements, alkaline water and cold-pressed juice. “We are always sure to add storing resources and recipes in our food giveaways to avoid food waste and ensure maximized impact.” On East Broadway, CTCT’s Change Education Hub offers in-person and online mentoring, tutoring and classes. Workshops for youth range from coding to science to an ongoing “30 for 12” mentoring program with local Black experts who design and teach their own youth workshops. During the school year, Change Today, Change Tomorrow partners with Watch Us Grow to provide free tutoring for students in grades 1-12. In collaboration with the Louisville Free Public Library, CTCT provides free virtual literacy programming every month via the Western Library. “Our education pillar focuses on all BIPOC youth ages 5-24,” Taylor said. “In one year’s time, we hope to be able to open a homeschool cooperative in our ideal community space.” Public health is another pillar for CTCT, in which “we are trailblazing Black-led research by way of community assessment and focusing on Black folks’ experiences with our local health care system,” she said. Outside of the research itself, CTCT is committed to breaking the stigma of being tested and living with HIV/AIDS, by hosting a community event for each HIV/AIDS
“awareness day” of the year. Each event offers collaborative resources, free food and testing to the public. This past year, CTCT has incorporated free COVID testing at each HIV/AIDS testing site. The first Friday of each month, CTCT distributes period products to individuals and community organizations who need them, offering tampons, pads, pantyliners, period panties and DivaCup products. Every other month, CTCT hosts a community baby shower that serves an average of 40 babies. The list of offerings and programs is constant and consistent. “We offer caregivers the top three most needed items regardless of the price,” Taylor said. “We also go out to the streets each Thursday evening to serve the unhoused community at three different sites in downtown Louisville. We partner with organizations that bring Narcan, mobile showers and quick medical assistance to unhoused individuals. We have a goal by the end of the year to house at least five people.” Pocket Change is one of the newest initiatives by Change Today, Change Tomorrow. Located at 1753 Bardstown Road, this storefront for Black-owned businesses is open 7 days a week, 2-9 p.m. The building is also a business hub with co-working space and rental space for events, and small biz classes are offered the third Thursday evening of each month. “We hope to continue to find and support new local Black businesses to put into our storefront,” Taylor said. “Supporting local black owned businesses not only supports that business, but often a whole community is uplifted by dollars spent and support given.” Metaphorically and literally, making change and spending change today will change tomorrow. USA Cares:
Stability for Families in Crisis Once a regional resource for veterans, USA Cares has grown into a national veterans support organization assisting thousands of post 9/11 military families in crisis. BY HEATHER FRENCH HENRY COURTESY PHOTOS

e provide housing and emergency financial assistance. We can also help a combat injured veteran transition into a career, but what we really focus on are the major factors that contribute to veterans suicide,” states Trace Chesser, President & CEO of USA Cares and combat veteran. “I dealt with that after my service. I really struggled with a loss sense of purpose and dealt with some pretty severe depression, PTSD myself. The services we provide at USA Cares are helping to reduce factors that can actually contribute to veterans suicide.” With suicide rates alarmingly high among veterans, the pandemic created even more hardships in unprecedented numbers. Organizations like USA Cares had to shift quickly to the growing needs within the military community. In 2020, USA Cares began to feel the strain on their resources as many organizations began referring veterans to them in record numbers. According to Chesser, “It really hit our team hard because it was just so much more than we expected. When all this happened, we had a fundraising event
scheduled but immediately had to shut everything down. However, the needs kept coming in. We saw a 60 percent increase in requests asking for help.” Now, as the restrictions have lifted, USA Cares is hitting the ground running with two major events back-to-back with a Valhalla golf event on July 19th and the popular USA Cares Gala on August 7th at the Marriott Downtown. Chesser is hopeful that these efforts will see a resurgence in support. ”We've not sold out yet, but we've had a huge response. With the golf event, our goal is to raise over two hundred thousand dollars to help our military families that are in crisis.” While the mission for USA Cares has remained focused on crisis assistance since 2003, they are now offering comprehensive programming with financial literacy through a partnership with Abound Credit Union (formerly Fort Knox Federal Credit Union). “They provide us a lot of resources and funds to help veterans and their families. We also have a career transition and training program online to help coach and train service members on how to get employed or get a better job. Maybe they're highly skilled and did some great things in the military but they don’t know how to translate or explain it. They also may be in a job below their skill set and could be doing something greater.”
