To answer your first question- Christie Brinkley is a glorious 65 years young. She has been featured on over 500 magazine covers worldwide, served as a spokeswoman for CoverGirl, performed on Broadway, in television and film and succeeded as an entrepreneur in multiple industries. Also, Ms. Brinkley has worked as an illustrator, photographer, writer, designer, and activist for human and animal rights and the environment. She is one busy woman. Like many of us, we grew up being wowed by the “Uptown Girl” and her many memorable Sports Illustrated Swimsuit Editions. She was indeed one of the original “Super Models.” All of us at TOPS are thrilled that Ms. Brinkley is partnering with our magazines and social media outlets in both Louisville and Lexington to help launch her new prosecco, Bellissima, here in Kentucky. Some of the toughest critics I know are on the staff here at TOPS, and they all say it’s truly delicious. It is a dream come true to have one of the biggest stars in the world on our cover. Ms. Brinkley helps remind us that while good genes play a part in our health and appearance, having a plan to nurture our bodies with the right nutrition and exercise is one of the best investments we can make in ourselves. We have a terrific Q and A with Ms. Brinkley. I hope you enjoy reading it as much as we enjoyed interviewing her. Christie Brinkley, model, actress and entrepreneur, is known across the globe for her legendary beauty. But her passion for helping others and the planet is what makes her beautiful to us. Her involvement in multiple nonprofit organizations has earned her awards and honors from The American Heart Association, Make-A-Wish Foundation, March of Dimes and many others. While she has been the face behind some of the world’s top brands, Brinkley launched very own prosecco brand, Bellissima, last year. The 100% organic line offers 3 varieties: a D.O.C. brut, a zero sugar sparkling wine and a sparkling rosé. Creating Bellissima made perfect sense for this health-conscious lifelong vegetarian and environmental rights activist. She advocates that eating organic is better for our bodies and for our planet, and her brand ensures that it’s easy to do. At 65-years-young, Brinkley is busier (and more beautiful!) than ever. In addition to Bellissima, this multi-hyphenate also has a skincare line, hair extension line and eyewear line. This past fall, she had a tough break – literally. Just a few days before she was to hit the stage on Dancing with the Stars, Brinkley fell during rehearsal and broke her arm. (Her daughter Sailor was able to step in to replace her for the season.) Despite the injury, Brinkley barely missed a beat, bringing Bellissima to store shelves across the nation. While she has graced the cover of over 500 magazines in her career, we think Brinkley looks the best on TOPS. Keep reading to learn about her new line, her top health and beauty tips, and her New Year’s resolutions. TOPS: Tell us about Bellissima. Christie Brinkley: I have a lot to brag about with Bellissima. I am super proud that I can offer organic, vegan, gluten free, cruelty free, all natural wines, including one that is zero sugar. We are the only zero sugar prosecco on the market. I also have a sparkling rosé that is crisp, and fresh, with just a hint of sweetness and a brut D.O.C which is dry, with a hint of green apples and distant notes of freshly baked bread. All my wines are delicious!

What inspired you to create the line? I have always been passionate about champagne and prosecco but I always thought that all wines should be made organically. Grapes are always showing up on the “dirty dozen” list of fruits and vegetables with the most chemicals on them. In a world already inundated with chemicals – in everything from frying pans to carpets, in the clothing we wear, on our lawns – we need to try and limit our exposure in every way that we can. In choosing drinks that are organic, you are making a much healthier choice for your body as well as for the planet. What is your favorite Bellissima cocktail recipe? I have two that are neck and neck for first place! My Bella Sprizz is for sure one of them. A Bella Sprizz is so delicious! It is mixing Bellissima prosecco with my Bella Sprizz aperitivo, which tastes like the popular Aperol Spritz… only I can offer my Bella Sprizz at half the price. When you make it with my zero sugar sparkling wine, it is less guilty of a pleasure! My other favorite cocktail is one of the endless ways to make frosé using Bellissima. This summer at my home, we were always freezing grapefruit juice into ice cubes and putting them in the blender with the sparkling rosé, chunks of fresh watermelon, sometimes a dash of vegan, organic, sorbet and blending it all to perfection. It is delicious! Have any resolutions for 2020? My New Year’s resolution is to make sure I take time from work to relax and squeeze in hopefully a little more travel. And learn a new language! And of course, I want to physically get out and do more work for the environment: plant trees, pick up plastic, do what I can as much as I can to help our planet in crisis. •

TIPS FROM CHRISTIE! A longtime heath, beauty and fitness guru, Brinkley wrote and illustrated Christie Brinkley’s Outdoor Beauty and Fitness Book in 1983. Her 2015 New York Times Best Selling book Timeless Beauty offers guidance on what to eat, how to apply makeup and what to wear to look and feel fabulous. We asked Christie to share some of her favorite health, beauty and wellness tips with TOPS readers. Here’s what she had to say:

As with alcohol, moderation and balance are key to a healthy life. Good nutrition, regular exercise and getting enough sleep are all the foundation to a healthy, beautiful life. Never underestimate the power of laughter and smiling! I believe it releases powerful hormones that are so good for us. It is the most fun beauty secret I know! A smile will brighten up any face and light up any room. A happy attitude is both beautiful and youthful, so make sure you take time to relax and enjoy! Literally and figuratively, lift your spirits! Eat organic when you can. It is better for your body and the earth!

Wine pairing is something of an art form, so we turned to an expert: Barry Manning, director of wine sales at Kentucky Eagle, Inc. Manning selected dishes to pair perfectly with Christie Brinkley’s Bellissima wines. Your dinner guests will love the bright, fresh ingredients!

BELLISSIMA SPARKLING ROSÉ WINE Tasting notes: Made from 100% organic Pinot Grigio grapes, this is an elegant, bright rosé, with hints of strawberry and grapefruit, and a soft, persistent foam. Pair with: Sea Bass Crudo Salad! Zippy lime and cilantro crudo of succulent sea bass, atop fresh torn mixed greens and garnished with a chopped marcona almonds, ginger and dried cranberries.

BELLISSIMA PROSECCO D.O.C. BRUT Tasting notes: Brut is the driest (i.e. least sugary) version of Prosecco, and Bellissima’s is aromatic and elegant, with delicate scents of green apple and freshly baked bread. Pair with: Stuffed “Pear” Croustade! Pear shaped bowl of puff pastry stuffed with sliced cinnamon and/or cardamom poached pear (poached in the Prosecco is great) topped with tangy crumbled goat cheese, crowned with candied walnuts and shaved coconut, drizzled with just a little white balsamic vinaigrette, and a dash of cardamom and lemon zest to finish.

Lucy Wilmot Smith was born in Lexington on November 16, 1861. She was educated as a youth by her mother, Margaret Smith, and she went on to study in the teacher preparatory division at Kentucky Normal and Theological Institute in Louisville. She graduated in 1877. Together with Mary V. Cook (later Parrish) of Louisville, Smith organized the Baptist Women’s Education Convention of Kentucky which launched in 1883. She became a professor at State Normal School for Colored Persons (now Kentucky State University) in Frankfort and served as the historian at the American National Baptist Convention (ANBC). In 1886 she spoke before the ANBC on “The Future Colored Girl” emphasizing that young women should become entrepreneurs and start their own businesses. Even while a missionary and writing in Baptist journals, Smith was outspoken about suffrage – writing in one of her articles the following statement: It is said by many that women do not want the ballot. We are not sure that the 15,000,000 women of voting age would say this, and if they did majorities do not always establish the right of a thing. Our position is that women should have the ballot, not as a matter of expediency, but as a matter of pure justice. Smith died on December 1, 1890, at the age of twenty-nine after a terrible illness. THE HOPE CENTER by Lauren Rogers | photos courtesy of the Hope Center & Ron Morrow The New Year brings a time for reecting on the year behind and planning for the year ahead. For some, however, the winter is less a time for enjoyment and more of a continued search for help and refuge, if only for a night. More than half a million people are homeless in the United States. According to the U.S. Department of Housing and Urban Development (HUD), "As of January 2018, Kentucky had an estimated 3,688 experiencing homelessness on any given day. Of that total, 286 were family households, 369 were Veterans, 193 were unaccompanied young adults (aged 18-24), and 369 were individuals experiencing chronic homelessness." With the mission of caring "for homeless and at-risk persons by providing life-sustaining and life-rebuilding services that are comprehensive and address underlying causes," the Hope Center of Lexington has been providing homes and hope for those in need since 1995. Every night, they serve and house around 650 individuals with their Emergency Shelter alone housing between about 180 and 250 people each night. They also offer programs to help each of their clients, including recovery for

men and women, mental health, health clinic services, veterans' program, street outreach and safe and affordable housing. The Hope Center is a beacon of light in the darkness and a yearround reminder to show appreciation for what you have and to be of service to those who have not. Executive Director Cecil Dunn shares, "What we hear the most from our clients is that 'You saved my life' or 'You loved me until I could love myself.' That is what the Hope Center means. It means we are here for those who are feeling lost or hopeless, and we help to give them a second chance at life through a hand up, recovery, a new job or a new place to live. Each client is unique and has their own story, so each solution is unique, and our amazing staff is here to help ďŹ gure that out with them." Linda Ball, a member of the Hope Center's Board of Directors, adds, "When I think of the Hope Center, I think of all the good that has been done here and that continues each and every day. It is truly a remarkable place ďŹ lled with hope and also love. It is an honor to be a part of this wonderful organization in our community."

TOPS: What has it been like to see your vision come to fruition in Lexington? CECIL DUNN, EXECUTIVE DIRECTOR FOR 25 YEARS: It has been a slowly evolving marvel. But the gratifying part is what has come about because of the work that goes on in these buildings. Lives have been saved, and lives have been transformed. One thing I will always remember and cherish is the working relationship I had with Don Ball as the Hope Center transformed itself into what it is today.

TOPS: Do you have a favorite moment that resonates with you and captures your mission? DR. GORDI HYDE, LONG-TIME BOARD MEMBER: While it has been an extremely enjoyable experience to watch the recovery and restoration of our client’s lives, my favorite moment was traveling to the Healing Place in Louisville with Cecil Dunn in July 1995. On that day we visualized the Hope Center Recovery Program that we have here in Lexington and have continued to develop it ever since.

TOPS: What does the Hope Center mean to you? CATHY JACOBS, HOPE CENTER BOARD CHAIRPERSON AND IMPORTANT SUPPORTER: Watching my own niece struggle with addiction to the point of jail and near death, has been unbelievably powerful. The Hope Center Recovery Program for Women saved her life. It has been a full circle for me to be witness to her recovery, and to see the amazing work at the most personal level. There are miracles here every day. •

How to Help Their Mission: Readers are encouraged to come out to serve meals, attend the Hope Center’s two fundraising events (Ball Homes Night of Hope and Central Bank Hoops for Hope) and hold needs drives. Monetary donations are crucial and if you have a special skill or your business can offer help, we welcome our community to jump in and take action. Kentucky Bank to open a branch in Hamburg

City workforce grants support job training, certifications and licensure The City is now accepting applications for workforce grants designed to support businesses and agencies operating in Fayette County that offer job training, certifications, and licensure to promote economic development activity. “This grant opportunity will help our citizens get the training they need to compete for good jobs,” said Kevin Atkins, the City’s Chief Development Officer. “A well-trained workforce helps Lexington attract jobs in today’s economy. It’s a competitive advantage.” The City is investing $200,000. Successful applicants are required to measure job placement or certificate/ licensure attainment related to the training they offer. Successful applicants will have a positive impact on economic or workforce development through: employment entry / re-entry, certifications or licensure. Applicants may request up to $50,000 per grant year. Only one application per grant category per agency is allowed. Complete applications must be received electronically by 4pm EDT, January 13, 2020. Barbasol Championship delivers holiday cheer to Caddie127 charity partners Barbasol Championship Tournament Director Bryan Pettigrew and Barbasol Championship Advisory Board Member Lauren Vernon delivered early Christmas presents to the tournament’s charity partners as part of Caddie127. Through the 2019 Barbasol Championship, $50,000 was raised for Caddie127 and will be divided by each of the Kentucky nonprofit organizations. Just as caddies and their players support one another, so does Caddie127 support philanthropic organizations that benefit and empower women and children. Caddie127’s official 2019 partners are All God’s Children, Kentucky Children’s Hospital (UK HealthCare), Make-A-Wish Foundation of Kentucky, Refuge for Women, and the Woodhill Community Center. “We were thrilled to be able to make this type of impact through Caddie127’s first year efforts by supporting these five amazing charitable organizations,” said Pettigrew. “These charities are making a profound difference in the lives of others right here in the Commonwealth,” he added. “Each of these organizations aligns with Caddie127’s mission to serve and care for marginalized women and children in their time of distress. Caddie127 is a Kentucky organization that believes women and children should never walk alone.” Pettigrew also announced each of Caddie127’s charity partners

With the support of more than 100,000 volunteers annually, and most of its tournaments structured as non-profits, the PGA TOUR generates $200 million annually which assists approximately 3,000 charities. The PGA TOUR gives more charitable resources back to the community each year than the four largest sports leagues combined. The 2020 Barbasol Championship will be played at Champions at Keene Trace July 16 – 19. The Inaugural Barbasol Junior Championship, for golfers 15 to 18 years of age, will be played at Keene Run June 29 – July 2, 2020. irls, there is something that I just need to get off my chest. I’ve been wearing the wrong bra. Consider this an intervention for my fellow “well endowed, cup runneth over” friends. Even if you do not fall under that category, help a sister out and let this serve as a PSA to all of your busty buddies.

I have been overly blessed in the bosom department which will make half of you roll your eyes. The other half of you will sympathize with me, knowing that if given the chance, there are plenty of days I would like to deflate these puppies. Want to wear that low-cut blouse to work? Can’t - it’s just too much. Want to wear that cute button up? Nope - the buttons will gape open and potentially shoot someone’s eye out. Then there is the added bonus of the permanent indentations that I get on my shoulders from lugging these jugs around all day. Recently, a Bra Goddess entered my life at Dillards and everything changed. First, I was fitted. Let me clarify. I was fitted properly - and not for a universal bra that lifts and pads and shapes - but for one that actually makes me look better. Want to lose 10lbs? Eat the cookie but wear the right bra. For us big chested gals, that is a minimizer. Minimizers are designed to make your breasts appear smaller using two different techniques: lifting and redistributing your breast tissue. Minimizers come in different levels that promise reduce your size from one to three inches. And thankfully in 2020, they are pretty cute! Don’t get me wrong, they are not Hooters girl cute but they are tolerable. Wearing a minimizer makes biggest difference in my shape and the way my clothes fit. With the right bra, I can wear a size medium button up shirt instead of a large. Experts say you need new bras every year. You may need to try on a few sizes to find your perfect fit but it’s out there. And when all else fails, keep in mind that the perfect solution to a bad hair day is a low- cut blouse. 1

WOW Wedding LIFESTYLE story by lauren rogers The best things in life come when you’re not looking. “Life has a funny way of bringing people together when they least expect it,” laughs Ashley Barker. “Zack and I didn’t know each other when we both took our first job out of college at Fidelity Investments, eager to pursue careers in the finance industry. Despite both of us having graduated from the University of Kentucky just a few months prior, we had yet to cross paths. She smiles and continues, “We had mutual connections but somehow didn’t know one another; we were complete strangers that always seemed to make eye contact when we passed one another in the hallway.” Weeks passed and Ashley and Zack had yet to introduce themselves but as fate would have it, a training class forced them to share their backgrounds over an icebreaker exercise. A team outing led to drinks back at Zack’s afterwards with work colleagues and the couple’s first, innocent kiss. Fast forward and the pair were planning for a breathtaking fall wedding held at the Apiary in Lexington on September 28 of 2019. “Lexington is a very special place for Zack and me,” says Ashley. “The Apiary also happens to be just a few steps away from where we had our first date. I vividly remember how alluring the gardens were as we walked past the venue. Once we were engaged, we decided to take a tour of the venue and we knew immediately it was where we wanted to celebrate our big day.” With an elegant southern wedding theme selected, the couple chose warm ambers and emerald greens to highlight an autumnal background. “One of the many reasons we fell in love with the venue is due to our love for nature. We felt the gardens allowed us to immerse our guests in a setting where we feel most at home,” the couple adds. Contrasting black elements were incorporated throughout their decor scheme from their invitation suite to the black velvet tablecloths and candles creating a perfectly balanced moody, yet classic atmosphere. In retrospect, the Barkers agree that the most memorable aspect of their wedding was the band. They share, “Everyone still raves about them and they played all of our favorite music. They were incredible!” While we’ve all heard the phrase “don’t sweat the small stuff,” Ashley and Zack disagree. “For us, those small details made the day a reflection of who we were as a couple and how we view our love.” For example, one of their favorite details of the wedding featured Hudson, their 2-year-old black lab. Ashley explains, “He is such a huge part of our lives and we wanted to make sure we incorporated him throughout our reception. To do this we show cased ‘The Hudson,’ an old-fashioned signature drink and used his picture on ivory and gold cocktail napkins that were a huge hit with our guests!” When looking back on the day, Ashley encourages others to “follow your heart in what you feel you need to do to make that day all you ever wanted it to be.” She continues, “Have fun and remember to take it all in and enjoy every second of it!”

WOW Wedding LIFESTYLE story by lauren rogers For Olivia and James Wang, everything about their wedding day was a dream come true. Olivia said, “I had a blast getting ready with my bridal party, which included all four of my younger sisters and my four best friends. Walking down the aisle to James was incredible, and seeing his smile gave me butterflies. It was perfect!” James also enjoyed his time getting prepared for the ceremony, saying, “I had a great time being with my boys; just waiting for the moment I would see Olivia walk down the aisle to me. I knew she would look absolutely amazing and she was all that and more. I felt like time was standing still while we were up there making our vows to each other.” A special moment for both Olivia and James was honoring their parents with a traditional Chinese Tea Ceremony. It was an elegant and symbolic way of unifying their two cultures, and a big hit with everyone! Though neither were born in Kentucky, the bride and groom called Lexington home from a young age. James, an avid UK fan, graduated from Henry Clay High School and the University of Kentucky, while Olivia graduated from Bryan Station High School and Kentucky State University before working on her Master’s degree at the University of Kentucky. Olivia shares, “We first met at a week-long entrepreneurship camp when we were high school juniors in 2009. Though we didn’t talk much then, we ended up becoming friends on Facebook.” Years passed with hardly any interaction, and as James began his career as an accountant, Olivia embarked on a summer of travel in Europe before beginning her graduate studies. She invited her Facebook friends to follow her adventures on Snapchat; James saw this status and decided to do just that, remembering Olivia as the very cute girl from all those summers ago. After returning home from Europe, Olivia reached out to a new friend request from someone named “Juiceman”, who turned out to be James. “After a week of catching up via novel-length text messages, we had our first date at Baskin Robbins on Tates Creek, where we talked for hours over ice cream,” Olivia explained. “We dated for two and a half years, and in November 2018, James proposed at the same Baskin Robbins where we had our first date!” On October 4th, 2019, the pair said “I do” to forever at The Galerie in Versailles, Kentucky. “Our florist did an amazing job with the flowers for our ceremony and reception. We also had the greatest wedding favor of 2019: a mixtape CD (with custom album cover) of songs that brought us together. Everyone loved it!” they shared. When asked about the advice they would pass along to others planning their own wedding, the couple suggests affectionately, “Plan it together, and have fun with it! Also, make an excel sheet to keep track of everything. Oh, and on the big day, eat lots of cake!”

WOW Wedding LIFESTYLE story by lauren rogers Jeremy Rice and Jeremy Cheek first met on September 23 of 2000. Nearly 18 years later, they were joined in matrimony. “The wedding was filled with laughter from the very beginning; from the vows to the cake shoving and dancing, everyone seemed to really enjoy being there with us. Seeing all the people who love and support us in one place at the same time was really spectacular,” shares Jeremy (Cheek). While the pair were born and raised in different small towns in Kentucky, they both attended college in central Kentucky and were always drawn to Lexington. “In many ways, it is like a big ‘small town’ and we love the scenery and personality that it offers,” the couple says. This shared love of the Bluegrass made Lexington an easy choice for their wedding ceremony and reception, both held at The Livery downtown. “We didn’t want to risk having an outdoor ceremony so The Livery offered a great place to have both while offering history, character and a canvas you can make your own.” Upon their arrival, guests were greeted by an open bar, a “selfie wall” made from magnolias and white hydrangeas and a photo timeline of the Jeremys through the years. Pillar candles and a 7’ brass circle decorated with magnolia leaves, white hydrangeas, white roses and pheasant feathers served as the backdrop for the ceremony in which they wore matching rainbow heart socks from TietheKnot. org. They share, “We wanted to celebrate the equality of marriage and the opportunity to make it official after all these years.” They continue, “Writing our own vows led to some very candid moments during the ceremony because we chose to not share them with anyone, including each other, until we said them aloud. That kept it personal and very special.” The reception embraced a classy, masculine feel with uplights along the perimeter to keep the vibe fun yet elegant. The focal point was the centered head table with the capacity to seat 24 of the pair’s nearest and dearest. When they look back on their wedding, Jeremy and Jeremy agree that “It was very much a celebration and a way to show our appreciation to so many people.” This appreciation was reflected back to them in one of their favorite moments from their wedding celebration: the wedding brunch held the day after the reception, and a tradition they advise all couples to embrace. “It gave us a little extra time to spend with our loved ones who travelled great distances to celebrate with us when we weren’t wedding focused and everyone will remember it forever.” In closing, the happily married couple share sage advice that is not only relevant to those planning weddings, but also a pertinent reminder about life: “All the preparation in the world doesn’t mean any wedding, or any plan for that matter, will go exactly as you had imagined so just embrace that and enjoy the moment.”

This kitchen offers ample room for convenient cooking and elegant entertaining, and boasts several extraordinary features. A large island with Mon Blanc quartzite countertops from Su Casa Tile & Granite and a wrap around, diningheight table in a sueded, Absolute Black granite finish provides a place for prep and comfortable seating for six. Open shelving throughout is both stylish and utilitarian. A bar along one wall contains a split fridge and shelving to display a collection of gorgeous glassware. Even the GE Café appliances were customized to match the rose gold hardware that graces the cabinetry. However, the most extraordinary element is the cluster of handblown globes that hang above the island. According to designer, stuart hurt, “the lighting fixtures above the island are pivotal to the kitchen. The owner stumbled across Epiphany Studios, a glass blowing studio, on a business trip, and knew we had to incorporate it. They set the tone and mood and are the talk of any cocktail conversation.” Each globe differs in size, shape and texture, and was meticulously crafted by world-renowned master glass blower, April Wagner.

In this open kitchen, the homeowners wanted to capture the sleek, streamlined feel of Miami Beach. To accomplish this, they installed stainless steel appliances and glossy custom cabinetry. European-style cabinets were designed and installed, which reach from oor to ceiling to maximize storage. Chrome and glass display cabinets add opulence, while Miele appliances add the latest in cooking technology. The homeowners discovered the Miele brand at the retail destination, PIRCH, and were immediately sold on the revolutionary line. Their kitchen contains Miele’s high-tech coffee station, induction range, microwave/fast oven, and both a large and small combi-steam oven. The central kitchen island is topped by marble, which was purchased as a single slab and then fabricated by Ronnie Elkins of Laurel River Stoneworks. An exquisite, modern high table by Mike Angel of Red Dog & Company of London provides in-kitchen dining. For additional dining space, the home also boasts an attached breakfast room and formal dining room.

This kitchen is a perfect balance of form and function. Linda Bratton, who has been an interior designer for over 25 years, wanted the final effect to be “sleek and sophisticated,” but also welcoming and able to accommodate crowds during get togethers. She says, “We didn’t want it to feel like a sport’s bar.” Flat panel cabinetry in an alder finish hide Sub-Zero and Wolf appliances, including a refrigerator, freezer, dishwasher, steam oven, refrigerated beverage drawers and ice maker. In contrast, a silver metallic subway tile backsplash from Louisville Tile and stainless-steel stove and range hood add an industrial edge. The countertops, by Quality Stone Countertops, are of a leathered granite surface with rough and smooth comingling. In addition to the kitchen peninsula, the homeowner wanted a spot for more formal dining, but didn’t want to just plunk down a table. They found the solution in a table fabricated by Burton Made from a slice of ash wood and fitted it around the peninsula. The table brings a unique, rustic component to the otherwise modern area and lends itself to a more intimate eating experience, while still being open to the rest of the room.

inding grace amidst the chaos of day-to-day trials is a challenge, but January’s Super Mom, Amanda Nighbert, encourages others that it can be done. “Our children are growing up in a much different time than we did, and it is hard to fully understand what they are going through,” she says. “Give yourself grace and recognize that no one is perfect. Sometimes I let my busy work schedule get in the way of family time. Finding a better balance is a huge goal for me in 2020 because it’s my greatest challenge, but I try to have a few constants in our daily routine to carve out specific time for my family, such as eating dinner as a family at least 4-5 times a week, enjoying a family outing twice a month and being present whenever we are together!” As a registered dietitian and fitness enthusiast, Amanda’s passion and purpose centers around empowering others to take control of their health by providing each of her clients the most current nutritional techniques that get results and are actually achievable. “Over the past 18 years, I have gained knowledge and experience that has helped me to guide others in their weight loss and wellness journeys. Her greatest joy, however, is unequivocally her family. Her husband, Hunter Nighbert is a financial advisor. They have two children: Tyler (14), and Molly-Hunter, (11). As active as their parents are, it is no surprise that Tyler enjoys baseball, basketball and golf while Molly-Hunter has interests in dance, theatre and soccer. Together, the Nighberts love to ride bikes, bowl, travel and cook. Amanda shares, “Seeing my family smile and hearing them laugh is the most rewarding thing in the world. Pre-teens and teenagers are rough, though! So anytime that we are all together laughing and having fun makes my heart happy.” She pauses for a moment and continues, “Honestly, I am just trying to be a good mom. I want my kids to have a good childhood. I want them to feel loved and safe. I want them to trust me and know that I will always be there for them. My biggest goal is to keep a very open dialogue with my children and let them know that it is safe to tell me anything.” Amanda credits her husband Hunter as the secret weapon to her success as a mom and as a business owner. She says, “Hunter is really the unsung hero and if there is anyone in this family that is super, it is him! When my work schedule significantly changed three years ago, he really picked up the slack when it came to the family and I am forever grateful. He cleans, he does the laundry, he shuttles kids to and from activities, he honestly makes me look like a super mom!”

Adding extra vegetables to your meal will help you fill up and stay full longer without adding a ton of extra calories or macros. This is the quickest way to elevate your health and nutrition.

Make daily activity a priority by tracking your steps. Regardless if you are crushing it in the gym or not, getting 10,000 steps a day should be your primary goal. Many people workout hard but then sit all day long. Aiming for 10,000 steps a day will force you to get up and move every hour!

Get the whole family involved with meal planning and cooking. Many people complain that it is hard to get their families to eat healthy. When you include the whole family in the meal planning process and even the cooking, they are more likely to give your healthy options a go!

So you brought home a warm ball of fluff and puppy breath this holiday season. Congratulations! Or maybe you’re still dreaming of the day you will adopt your next furry friend. Either way, it’s important to commit yourself to starting your puppy’s life with you off on the right paw! Here are some tips for avoiding the most impactful mistake people make in the first few months with their new puppy. When you bring your puppy home around the tender age of 8 weeks, they are already halfway through the most formative time of their life - the socialization period. This is the developmental phase when your puppy’s brain is most open to making positive associations with the world around them. This window closes between 12-16 weeks of age. It is the position of the American Veterinary Society of Animal Behavior that puppies should be exposed to “as many new people, animals, stimuli and environments as can be achieved safely… before they are fully vaccinated.” Unfortunately, many people believe that it is recommended to keep puppies home until they finish vaccines. Or they falsely believe that because their puppy is outgoing (all normal puppies are at this age), that this will continue throughout their adult life. The reality is that undersocialized teenage puppies and adult dogs are more likely to react with fear or even aggression towards unfamiliar children or people of unique appearances, or towards types of animals they have not encountered during the socialization window.

Pairing new experiences with positive reinforcement such as treats is an effective way to prevent future fear, avoidance behaviors or aggression. Having friends over for the holidays? Have them give your puppy treats while they pet or hold them. Be sure that your puppy is not mobbed, manhandled or overwhelmed endlessly by guests, as this can backfire. Lastly, a well-run puppy socialization class can offer a safe, structured environment to strategically expose your puppy to invaluable new experiences. Investing in proper socialization from day one will lead to many years of enjoying a social and behaviorally stable adult dog.

Farm to Table It's January and you are committed to eating right. How does local food fit in to a healthy lifestyle? It provides more nutrients, for starters. Wintertime in Kentucky means the availability of acorn squash, butternut squash and other winter squashes, along with kale, lettuce, microgreens and mushrooms.

story by Kathie Stamps “Cooking more and eating with the seasons is great way to stay compliant with your New Year’s resolutions,” said Ashton Potter Wright, director of Local Food & Agricultural Development, an office within the mayor’s office in Lexington. “Locally-grown, seasonal whole foods can be great additions to a healthy, well-balanced diet,” she said. “We are lucky that Kentucky farmers can grow a wide variety of produce and raise virtually every species of protein on fertile bluegrass pasture.” Wright’s working definition of “local” means food and foodrelated products grown or raised in the state of Kentucky. Local food is good for you to eat and it’s also good for the environment because it’s being driven much shorter distances from a farm to reach your table. Farm to table is a concept, a movement and an entire initiative within Lexington-Fayette Urban County Government, thanks to Bluegrass Farm to Table. Wright is spearheading this effort with two dozen partners, including the Kentucky Department of Agriculture and its Kentucky Proud program. “Bluegrass Farm to Table has worked with over 80 buyers, over 80 farmers in over 30 counties to generate at least $4 million in sales,” Wright said, and that’s a conservative monetary estimate.

Bluegrass Farm to Table’s website has a list of CSAs with lots of details, including farms like Elmwood Stock Farm in Scott County, Greenhouse 17 in Lexington, North Farm in NoLi, Butler Farms and Triple S Farm in Paris, Teal Tractor CSA at Walnut Lawn Farm in Fayette County, and Triple J Farm in Scott County. “Individuals can sign up for CSA on their own but we are also working to recruit more employers to participate in the Kentucky Farm Share Coalition, a workplace wellness CSA program where employers incentivize their employees to participate in CSA,” Wright said. “Our partners at UK have found that employers who offer the CSA subsidy to employees see statistically significant decreases in medical and pharmaceutical expenditures, which is of particular importance to self-insured employers.” Large employers like the University of Kentucky and the Lexington Fayette Urban County Government have offered this program to their employees for the past several years with great success. Wright practices at home what she preaches at work. “During the winter we love eating greens, sweet potatoes, locally raised meat and eggs,” she said. “Many farms also process and preserve tomatoes and other vegetables that can be enjoyed year-round. Certain varieties of local apples, particularly the Goldrush variety, can be purchased in bulk in the fall and kept in the refrigerator in airtight containers and can be enjoyed throughout the winter.” Local food is good for the economic health of the area, because shoppers are supporting farm families in the community. Wright was hired by the Mayor’s Office within economic development in 2014 as the local food coordinator and yes, her job is as unique as it is fun. Not many other cities in the United States have a position in city government focused on agricultural economic development. In five years, she helped get the salad bar program at UK off the ground; she worked with the Lexington Convention Center board of directors to include local purchasing benchmarks in their new contract with food vendor Levy; and she’s working with Transylvania University and its food vendor, Bon Appétit, on their local sourcing program. People who love local food have three favorite initials: CSA. Community supported agriculture. Farmers do the growing and you reap their rewards with a weekly drop-off (or pick-up) of produce. January is the time when farms start their CSA signups for the peak growing season, which is typically May to October,

“If you want to make a difference in local food movement, put your money where your mouth is,” she said. “If every family in Kentucky spent 10% of their annual food budget on Kentucky farm products, it would keep over $1 billion in our local economy. I think I enjoy what we call “the grind.” I love working with my hands, I thrive on what I refer to as controlled chaos. I have to be learning something at all times. I enjoy working on things around the house. I also enjoy visiting local breweries and eateries. Deep sea fishing is also what I plan on doing if and when I ever put my chef knives down for good.

Epping's has a variety: every Monday, we offer a special $8 burger, Tuesdays are half-off all wine (glass and bottle), plus our menus are always changing with new ingredients or ideas from our chefs. What is your favorite dish on the menu? People always laugh at this, but I'm a burger and fries guy. As a chef and business owner, I'm rarely sitting down to a quiet meal. A great burger (like the Kobe beef burger at Coles) with local, fresh ingredients always hits the spot. What do you love most about the restaurant industry? I originally got into the industry because I love to eat, and cooking was just a good way to enjoy amazing food. Once I got into restaurants, it was the fast pace and high pressure that I enjoyed!

CHICKEN WINGS Prep Time: 10 minutes | Cook Time: 20-25 minutes

Ingredients: 3½ to 4 pounds chicken wings, cut in half at the joint ½ cup Frank’s RedHot Original Sauce 1 tablespoon white vinegar ¼ teaspoon oregano ½ teaspoon paprika ½ teaspoon garlic powder Salt, to taste Black pepper, to taste

Preparation: If the wings are whole, you need to split them at the joint to separate the drumette from the wing (or the “flat”) to make 12 pieces. Cut the piece that looks like a mini drumstick away from the middle part, cutting through the joint. Preheat the oven broiler. If there are low and high settings, choose low. Line a rimmed baking sheet with foil and place a cooling rack on top of that. Generously spray the cooling rack with nonstick cooking spray to help with cleanup. Place the wings in a large pot and cover them by 2 inches with water. Bring to a boil, cook for 10 minutes, and then drain in a colander. Run cold water over the wings to cool them down quickly. Then using your hands, gently peel the skin off of the wings, being careful not to pull the meat off of the bones. Use a paper towel to get a better grip. In a medium mixing bowl, mix all of the sauce ingredients together, reserving half of it. Toss the boiled wings in half of the sauce. Place the sauced wings on the prepared baking sheet and broil for 4-5 minutes on each side, until cooked through. Carefully toss the wings again in the remaining sauce and then place back under the broiler for an additional minute to heat the sauce and crisp the wings. Prep Time: 15 minutes Cook Time: 25 minutes

Ingredients: 1 pound boneless, skinless chicken breasts

1 teaspoon paprika

2 cups matchstick carrots

2 cups low-sodium chicken broth

1 teaspoon onion powder

4 cups kale, chopped into bite sized pieces

1 cup dry quinoa, rinsed

salt, to taste

2 (14.5-ounce) cans ďŹ re-roasted tomatoes

juice of 1 lemon (about 2 tablespoons)

black pepper, to taste

12 tablespoons pesto

1 teaspoon garlic powder

1 teaspoon extra virgin olive oil

Preparation: Chicken grilling instructions: Heat an indoor grill or grill pan over medium-high heat. Coat it with nonstick cooking spray, and grill the chicken on each side for 7-9 minutes, or until done. Heat a medium saucepan over high heat, and add the chicken broth and the quinoa. Bring to a boil, then reduce the heat to low. Cover and cook for 13-15 minutes until quinoa is cooked. Remove the quinoa from the heat and let stand for 5 minutes; uncover and uff with a fork. Stir the lemon, garlic powder, paprika, onion powder, salt, and black pepper into the cooked quinoa, then set aside. Heat a large pot over medium-low and add the oil and carrots, cooking until the carrots begin to get soft. Add the kale and cook until wilted. Season with additional salt and pepper to taste if desired. Reduce the heat to low and add the tomatoes, cooked quinoa, and pesto. Cook for an additional 3-5 minutes. Serve hot with the chicken sliced on top. Preparation: Heat a large stock pot over medium heat and add the oil, onion, sweet potato, and red bell pepper. Cook for 8-10 minutes, or until the potatoes soften and take on color. Add the water, chicken broth, lentils, cumin, salt and black pepper and bring to a boil, then reduce to low for 20-25 minutes or until the potatoes and lentils are tender. Add the cabbage and beans and continue simmering for 4-6 minutes. Add the kale and red pepper flakes, taste for seasoning, and simmer for 3-5 minutes, or until the kale is wilted. Keion Brooks Jr. says long before he was being recruited by the University of Kentucky he knew former Wildcat P.J. Washington, who is now having a fabulous rookie season with the Charlotte Hornets. The UK freshman said Washington’s success at UK had a “good influence” on his decision to sign with the Wildcats. “I saw what he was able to do coming here and the success he had,” Brooks Jr. said. “I also got some pointers and little nuances of how to be successful here from him, and that has been good for me.” Brooks said Washington told him about the Kentucky fan support but he quickly learned just how admired UK basketball players are and become role models for young fans across the state. “It’s nothing I necessarily asked for, but I know that comes with it. I have to carry myself in a way — I know little kids and other people are looking at me, so I have to carry myself in a way that’s being a good citizen, being a good person and always doing things the right way,” Brooks said. He learned that from his father, Keion Brooks Sr. who played basketball at Wright State and then professionally. “My dad being a Division I player and turning professional for a couple of years and then he gave up his dream of being a professional player to raise me and put me where I am today. He has had a great impact on my life,” Brooks Jr. said. “Every time I step on the court I try to make sure I am doing him justice and being a good representation of him on the court. “He knows I am in college now and have a lot of my plate, so he tries to back off a little bit. He still calls me and asks me about stuff but he knows I have a lot going on so he doesn’t want to add any pressure that’s not needed. But never doubt that he’s been a huge impact on my life and basketball.”

SNOWBIRD DRESSAGE January 11, 2020 Kentucky Horse Park - Covered Arena Snowbird Dressage is a Kentucky Dressage Association sanctioned Dressage show. The series will include USEA classes with the February and March shows, offering more excitement for competitors and spectators alike.

The perfect outing for those interested in Keeneland history or horseracing in general, this outdoor guided walking tour takes guests through the Keeneland Paddock and Grandstand, around the grounds, into the renowned Sales Pavilion (when available) and trackside. January 13–17 Keeneland Sales Pavilion Keeneland's January Horses of All Ages Sale is noted for highquality broodmare prospects and short yearlings (horses born the previous year) and for being among the final opportunities for breeders to obtain stock as breeding season nears. Spectators are welcome to attend the sale and can walk the grounds, take a seat around the auction arena or enjoy food and beverages in the Limestone Café or Pavilion Bar.

February 8, 2020 Kentucky Horse Park - Covered Arena For one night only, come out to the rodeo to watch some of the rankest bulls and bull riders in the Southeast, as well as some of the fastest equine to ever go around a 3 barrel pattern. Guests will also enjoy food, drinks and live music by Whitney Morgan and The Wooks. Tickets start at $30 for adults and $12 for kids.
