It’s Valentine’s Day—let’s talk relationships. One of the most important relationships you can have is with your finances, so we brought in the financial experts: Beth Prewitt and Caroline French of Bank of the Bluegrass.

Q: What’s important when it comes to a financial relationship with a partner? Caroline (C): It requires being open & honest during all the stages of planning and budgeting as a couple. It requires a lot of trust, communication, & willingness to take on responsibilities together. Beth (B): Being completely transparent regarding your financial situation as a couple. It can be one of the hardest conversations that you can have, but it’s probably the most important one in your relationship. Money is an emotional topic for most people. We tend to be very private about our feelings about finances.

Q: What have you seen as couples navigate their finances together? C: Opposites attract! Savers and spenders, practical buyers and lavish gift givers. B: I’ve seen a lot of people end up in specific roles when they don’t necessarily

need to. One person might take on the responsibility of managing money and paying bills—but it can be a lot easier if both partners collaborate and communicate. Ask each other about spending habits, financial goals, and debt!

B: Exactly! Take “retail therapy” for example. It can make us temporarily feel better, but it’s common to slip into buyer’s remorse when we see how it has affected our budgets. It’s easy to trick ourselves into doing these things to get what we think we want in the moment, at the expense of our long-term goals. C: It’s not that different from mindful eating. Think of your budget as mindful spending—is it a good balance of quality and quantity? Does it bring you joy, or solve a need? And, ultimately, is what you’re purchasing worth the money, both now and in the future? B: When you have goals you’re working toward together, it helps. How much does this dream cost? What are we going to cut out or cut back on to make it happen? And then once you achieve it, it’s so much more meaningful—because you did it together.

Q: How can couples foster stronger financial relationships? B: It starts with being honest about your finances. But it also comes from shared goals— do you want to go on a vacation together every year? Major purchases coming up? Retire early together? Figure out your dream life, then start building it together. C: A business coach I admire introduced me to this exercise years ago, and I’ve found it applies to a wide variety of situations. Start by jotting down as many lofty financial ambitions you can imagine—as individuals, and then as a couple. Weed these down to a top ten list, and then to your top three. Write a mission statement for your financial lives that combines these three main goals, and weigh each important financial choice against your stated mission for alignment with your identity together.

Jayme and Mark met 5 years ago when he became a client/ advertiser with TOPS magazine as the owner of Carson’s restaurant. They instantly struck up a friendship and enjoyed each other’s quick-witted banter. Their connection grew over time, and, fast-forward 4 years later they were planning a future together while deciding to take the next step and get married. They debated having a wedding at their age, as it was not a first marriage for either of them. Ultimately they wanted to throw a great party for family and friends and hopefully walk away with a nice photo or two to frame. As former President of TOPS Marketing, Jayme knew of several possible venues, but they knew they wanted a “nontraditional” feel, and decided that since they met at Carson’s, that was where they wanted the wedding to be. They knew the food would be great, and they wanted the entire Carson’s team to be a part of their day. They closed the restaurant on a Tuesday and transformed the entire place into a vision of southern elegance. “Anyone who knows me knows I love all things southern. My personal philosophy is that you can never have enough chinoiserie ginger jars, urns, wicker, or cabbage plates.” Jayme stated. She took the cabbage plates to the next level by requesting vegetables as her mainstay for flowers. She wanted a combination of her southern style and Mark’s culinary love. Florist Alexandra Pallos never hesitated to design the arrangements utilizing sweet pea and ivy, cabbages, artichokes, peppers, carrots and radishes supplied by Lindi Biles. Also making the day special was their friend Judge Lindsay Thurston officiating the wedding, as Lindsay’s calming spirit comforted them on the big day. “Lindsay ties a knot that can not be untied!” they said. Haley Michele Designs was chosen as the wedding planner, and after working side by side with Haley they knew entrusting her with the execution was the perfect choice. If there’s one tip Jayme would give to any bride no matter the budget, it would be to hire a wedding planner for their guidance and a stress-free ceremony so that you can enjoy your day!

Brooke and Jed first met in their 8th grade year at Lexington Christian Academy and spent nine years dating before getting married this past fall. They have cherished getting to watch each other grow up and sharing all of their biggest milestones with one another. Both being born and raised in Lexington, the couple has loved sharing such deep connections with their Lexington and Phillipine heritage. When meeting with their wedding planner and brainstorming the details of their big day, Brooke and Jed were stunned by the beauty of the Kentucky Castle and the different spaces they had to offer. They note that the most important reason they chose the venue was the staff they were able to work with! Both of Brooke’s parents helped bring the space to life with a handmade wooden cross at the altar and floral centerpieces at their reception. Having such personal touches truly made a world of a difference! After getting ready with their favorite people, the couple shared a private touch and shared vows with one another. They remember how calming it was to have time together alone before the big ceremony. During the ceremony, the couple was able to include the cultures that made them so unique by having Brooke’s grandfather read the scripture in English and Jed’s grandfather read the same passage in Ilocano. To couples planning their own weddings, Brooke and Jed recommend living in the moment and keep yourself from becoming too wrapped up in the stress of planning. They note how special the time is with your soon-to-be spouse and assure that everything will fall into place with the right team!

Beyond the “Four Cs” What Else You Need to Know About Selecting Your Perfect Diamond...

Everyone is familiar with the “four Cs” of diamonds: Color, Cut, Clarity and Carat. While the carat weight of diamonds is perhaps the most famous – and most obvious – it’s the other three that confuse customers the most. All four of the “Cs” affect a diamond’s value and price. The diamond industry grades every diamond in each of these four categories based on guidelines set by the Gemological Institute of America (GIA). So what should you know about these four diamond qualities?

(Lack of) Color

Diamonds are meant to be colorless (with the exception of fancy, vibrantly-hued diamonds, such as a canary diamond.) A structurally perfect diamond has perfect absence of any hue. The GIA’s D-to-Z diamond color grading system measures a diamond’s degree of colorlessness. Any tinge to the diamond’s color affects the overall vibrancy and sparkle.

A Cut Above

People often use “cut” interchangeably with “shape” when referring to diamonds. Generally, when considering the value of the diamond, its shape – round, oval, pear, emerald or princess, for example – factors in less than its cut. The cut in this case refers specifically to the way a master craftsman has cut and polished the diamond to maximize its sparkle. Each unique shape has a recommended number of facets, and that plays a role in determining whether the cut is ideal or not. But in grading the cut, experts also take a look at factors such as the depth, table size, symmetry, polish and facet length. A poorlycut diamond will usually have much less sparkle and brightness than one that is rated as Very Good or Excellent. 66

I Can See Clearly Now

As a naturally-occurring stone, almost every diamond contains some small imperfections, which are referred to as inclusions. The number and visibility of these inclusions determine how the clarity of a diamond is graded.

How Do They Play Together?

Diamond artisans typically look at a rough stone and allow that to determine how it will be cut. An Ideal cut might be altered to mask some inclusions or to change the way light flows through a stone with a less-than-perfect color grade. They do all of this while creating a stone that yields the largest, most valuable diamond possible. When purchasing a diamond, your jeweler will work with your budget to find the perfect balance of the Four Cs. Your jeweler may recommend, for example, sacrificing a little color in order to get a cut that offers more fire. Or they may suggest a ring with slightly lower clarity in order to get the carat weight you desire in a more ideal cut. It’s all a balancing act!

Does the Setting Matter?

Aside from the aesthetics of the ring, the setting can greatly alter the appearance of your diamond! Solitare settings are the most traditional; they’re classic for a reason! This timeless look works for everyone, and it can be dressed up or down with wedding or anniversary bands. A three-stone setting – often representing your past, present

and future together – can enhance the center stone’s brilliance or even make it appear to have a more unusual shape. A halo setting will make your center stone appear larger or help fancy colored diamond center stones “pop.” Rings that set the diamonds up high can appear more sparkly and visually impactful while rings that set the stone lower can be more comfortable to wear and do more to protect the stone’s edges. White gold or platinum can “cool” down a warm diamond while yellow or rose gold gives the entire ring a warmer look. The band size even comes into play. A thin band will make a smaller center stone appear larger. A thicker band, however, will add gravitas to the entire ring; it brings its own sparkle to the party!

No matter how much you educate yourself on the Four Cs, it’s still important to speak to a jewelry expert when selecting your diamond. The differences in each grade may sound minor in theory, but it’s vital to see the stones in-person to get a sense of what the grades truly mean for your diamond. When Allie’s family moved to Kentucky from upstate New York during her 3rd grade year, she quickly began falling in love with the south. It wasn’t until a Super Bowl party years later that she would begin to fall in love with longtime classmate Nick. Since officially meeting, the couple has grown to cherish Kentucky and southern hospitality, fall in the Bluegrass, Keeneland meets, bourbon trails, and an abundance of other things that make this state unique and wonderful! When Allie and Scott first began planning their wedding, they decided to plan their ceremony’s decor around a custom-made wooden cross with draping florals and a huge floral chandelier by Drury Florals. With those things in mind, the Apiary made perfect sense as their venue with its unique atmosphere, absolutely stunning outdoor gardens, high attention to detail, and quality of food. That being said, they wish they would have started the ceremony a bit earlier in the day so they could have avoided the extra butterflies that came with anticipating the ceremony and reception that awaited them. One of the couple’s most cherished moments was their choice to have a private dinner right after the ceremony in a separate space from the rest of the party. Having a moment to be present and soak in the moment together made the day much more intimate, while still allowing them to spend time with their closest friends and family! Allie also notes that having an incredible live band, like Honeychild, is incredibly important for getting guests up dancing and singing along and keeping everyone’s energy high all night long. To other couples planning their own weddings, the couple recommends “to truly be present and take it all in!” and cannot recommend enough to have a day-of coordinator to make sure everything stays organized and keep stress off of the couple’s closest family members and friends.

Four years after Nicholasville couple Bailee and Liam started dating, he popped the question by her grandparents’ pond, bringing one of her childhood dreams to life. The duo— longtime friends from high school—was brought back together during the pandemic and quickly became inseparable. They love to spend their time going to Boyd’s Orchard in the fall, cheering on the Cats at Kroger Field, and watching the races at Keeneland. The couple even chose to take pre-ceremony photos on the Keeneland grounds to commemorate one of their favorite places! When it came time to plan their wedding, the couple knew they wanted to incorporate huge pine trees and lots of candles to bring the magic of winter in Kentucky indoors. In order to save guests from traveling between their ceremony and reception, the couple opted for local venue The Grand Reserve. “When we first walked into the Grand Reserve, it really gave us that ‘Aha!’ moment that you want to feel for your special day!” remembers Bailee. Between having their first look in private to getting to spend an entire day with their closest friends and family members, Bailee and Liam say there isn’t a single thing they would change about their wedding day! One special touch they included was a table featuring photos of family members that had passed. They say that being able to honor and remember those people gave them extra peace in knowing they were being looked out for on their special day. The couple notes that their wedding wouldn’t have been nearly as much of a success without such incredible and reliable vendors. Having a group of people that communicate well with every party made things much smoother and stress-free. To couples planning their own weddings, they recommend hiring a team that has experience and a planner to help you manage day-of details!

L.V. Harkness Enters a New Generation of Beautiful Memories L.V. Harkness has been a Lexington mainstay for nearly 24 years since Meg Jewett founded the fine gift store named after her great-grandfather, Lamon Vanderburg Harkness. She grew up in the house he built, surrounded by interesting and unique items he would collect from his travels overseas. He ventured around the world on his yacht, the Wakiva, and would often buy amazing things from the different places he visited and bring them to his home in Lexington.

Meg’s offer was the perfect opportunity, and it’s been a whirlwind ever since.

His collections sparked within Meg a love of fine china, crystal, sculptures, and beautiful things handmade by artisans around the globe. She wanted to create a space where she could showcase all of these exquisite items and share her love for them, along with the beauty she found in them.

“People can sometimes think that a luxury and fine gift store isn’t for them, but we truly aim to have something for everyone,” Jennifer says.

Meg’s son, Harky Jewett, along with his wife Jennifer and their two sons, moved to Lexington from Los Angeles in September of 2023. They knew that one day they would move back here so that Harky could take over the family’s horse farm operations, but the plan was to wait until their boys were older. A recent health scare for Meg prompted them to make the move earlier than expected, and they’ve loved calling Lexington their home ever since. Meg Jewett is healthy now but decided it was time for her to step away from the day-to-day operations at the store; she asked Jennifer if she would be interested in taking over. Jennifer is no stranger to owning a business, as she was successful in her own right in Los Angeles as a chef and the owner of a school lunch delivery company specializing in wholesome to-go meals for breakfast, lunch, and dinner. When they decided to move to Lexington, she was uncertain as to what she would do;

Jennifer is continuing to build on the great relationships her mother-in-law started years ago, allowing her to bring a variety of amazing brands that no one else carries. She’s also using her own experience to introduce many new and fun brands to the store to enhance the shopping experience. L.V. Harkness will soon become a one-stop location for all things home and personal.

Jennifer’s inspiration comes not only from Meg but also from her dear friend Kevin Luzande, a chef she worked with in L.A. who motivated his team on a daily basis. “In the professional kitchen world, we always want to ‘work clean’ and have our ‘mise en place on point.’ This means that you want to be well organized and have all of your tools and ingredients prepared and in place. It’s a philosophy I carry with me to all professional areas,” Jennifer explains. “At the store, being prepared and wellorganized just makes the experience for our customers that much better. I am definitely bringing this philosophy to our showroom as well, so our customers do not feel overwhelmed and can more easily take in the space and the beautiful items we carry.” Jennifer is deeply devoted to her two sons and wants to ensure they are acclimating well to their new surroundings while soaking up culture – and fun. Lexington has become a place she and her family love, from their first true “fall” weather to UK football and basketball games. the latest design trend: to use what you love... no matter what.

In recent years, design trends have favored a “use everything you like” approach, mixing styles to achieve an overall look that is entirely unique. While this has taken many forms – from “grandmillennial” style to maximalist mayhem – designers are referring to this approach simply as “dopamine décor.” Dopamine is a chemical messenger that tells your brain that you feel good. How on earth would that relate to decorating your home? Pretty directly, actually! by Amanda Harper

Your home’s style and all the things in it should, ideally, inspire good vibes. But getting stuck in a certain interior design lane can sometimes mean you’re bringing in furniture, fabrics or accessories that fit the overall look, but which you might not exactly love. How many times have you found yourself looking for a lamp (for example), only to settle on something that works for the space or “matches.” That lamp you ended up getting probably wasn’t the most exciting one you saw during your search. You probably saw several that virtually made you light up inside, but they were the “wrong” color, size or style. Dopamine décor would tell you: those are the lamps you really should’ve bought! The dopamine décor creed is that you should furnish your home in ways that make you feel good… regardless of what’s on trend, or what conventional style would dictate. We admit that, at least for people who don’t have a very narrow aesthetic, subscribing fully to the dopamine décor method would probably result in visual chaos. But letting yourself be steered by this kind of joy generally creates an atmosphere of playfulness where whimsy can breathe.

Keep it Personal

No one else can tell you how you want to feel in your home. While the dopamine décor method’s name suggests feeling good, only you know exactly what that means to you. Maybe you want to feel calm and cozy… or perhaps you want to feel like a kid in a candy store! Keep that exact feeling in mind as you select each element of your space.

Decide on a Color Scheme While this method encourages you to be playful, you still have to start with a visual theme. Begin with a neutral and a bold hue you love, along with a pattern that incorporates both colors but offers you a jumping-off point for incorporating more hues. This gives you a firm design foundation.

Shop Your Home Like Marie Kondo, we suggest evaluating your belongings one by one to see if they give you the feeling that you are after. If a piece doesn’t quite fit, that doesn’t mean it must go; instead, reevaluate it in context once you’ve made changes to see if it works. If it’s still not working for you, try it in another room. A side table that feels out of place in your dopaminedecorated living room might find new life in your guest room, for instance.

Preheat oven to 400F. Grease a 10” ovenproof skillet. Pour salsa into the skillet. Press the back of a spoon gently into the salsa to create a wide indentation, then crack an egg into that indentation (this helps keep the eggs separated); repeat for remaining three eggs. Season to taste with salt and pepper.

1/2 loaf sliced white bread, cubed 1 lb. bulk pork sausage 10 oz. sharp Cheddar, grated 2 c. half-and-half 1 tsp. dry mustard 1 tsp. salt 1/2 tsp. pepper 5 large eggs, lightly beaten

Grease the inside of a 9x13” casserole dish. Spread the cubed white bread in the bottom. In a medium skillet, brown the sausage until fully cooked, separating as you stir. Remove the sausage with a slotted spoon, allowing to drain. Spread over bread. Top with shredded cheese.

Bake about 12 minutes, or until egg whites are no longer transparent; cook longer if you desire egg yolks that are more set.

In a bowl, whisk together half-and-half, dry mustard, salt, pepper and eggs. Pour mixture over cheese.

Sprinkle cotija over the eggs. Top with cilantro and radishes. Serve with tortillas and lime wedges on the side. (adapted from The Modern Proper)

Notes: This works just as well with traditional red salsa, though we think salsa verde agrees with our tummies a bit more early in the morning. If you’d like to add a protein, sautée mushrooms or brown crumbled chorizo until fully cooked and add them hot at the end. This is also great topped with drained, cooked chickpeas or piping hot, crispy home fries.

Cheesy Hashbrown Skillet 4 1/2 T butter, divided 2 T olive oil 3 c. frozen, shredded potatoes 1/2 c. white cheddar, shredded 3 large eggs 1 T chopped chives

Preheat oven to 375˚F. Warm a cast iron skillet in the oven for 10 minutes. Remove skillet and add 2 T butter and the oil, moving the skillet to coat the entire surface. Add shredded potatoes in an even layer. Season to taste with salt and pepper. Use the back of a spoon to create 3 indentations into the potatoes. Chop 1 1/2 T butter and sprinkle over the surface of the potatoes. Place skillet in oven and bake for 15 minutes. Remove skillet. Add roughly 1 tsp. butter to each indentation. Sprinkle surface of potatoes with shredded cheese, avoiding the indentations if possible. Crack an egg into each indentation. Return to oven. Bake until egg whites are set and yolks are creamy, but potatoes are golden, around 9 minutes. Sprinkle with chives. Serve with toasted bread. (adapted from Spoon Fork Bacon)

Chicken Sausage Frittata 4 large eggs 4 egg whites 1/2 c. milk 1/2 tsp. salt 1/4 tsp. pepper 3/4 c. white cheddar, shredded 1 T olive oil 1/2 c. yellow onion, chopped 1 c. bell pepper, chopped 2 cloves garlic 6 oz. cooked chicken sausage, sliced fresh arugula

Preheat oven to 375°F. In a medium bowl, whisk together eggs, egg whites, milk, salt and pepper. Whisk in cheese. In a 10-12” skillet, heat olive oil over medium heat. Add onion, bell pepper and garlic; cook 5 minutes, until onion and pepper begin to soften. Add sausage and cook for 3 minutes, stirring occasionally. Pour the egg mixture over the vegetables. Let cook 5 minutes undisturbed until edges bubble and set. Carefully transfer skillet to oven and bake for around 23 minutes or until center is puffed and no longer wobbly. FILLING 1/2 c. toasted almond flour 3/4 c. powdered sugar 1 tsp. espresso powder 1 tsp. King Arthur Instant ClearJel 2 T milk 1/2 tsp. almond extract

PREPARE FILLING: Whisk together almond flour, powdered sugar, espresso powder and Instant ClearJel. Add the milk and almond extract, and stir until smooth. Set aside and allow to thicken.

DOUGH 2 1/4 c. all-purpose flour 1/3 c. sugar 2 tsp. baking powder 1/2 tsp. salt 6 T butter, cold and sliced 1/2 c. milk 1 large egg 1 tsp. vanilla extract 1/2 tsp. almond extract

Line an 8” round cake pan with plastic wrap. Divide dough in half. Press half the dough into an even layer in the cake pan. Spread filling evenly over dough.

GLAZE 3/4 c. powdered sugar, sifted 1/4 tsp. vanilla extract 2-3 T heavy cream colored sugars, for sprinkling

PREPARE DOUGH: Whisk together flour, sugar, baking powder and salt. Cut in the butter until crumbly mixture forms. In a small bowl, whisk together milk, egg, vanilla and almond extract. Pour over dry ingredients and mix until just evenly moistened.

Roll remaining dough into an 8” round. Place on top of filling, pressing down gently. Place in freezer while you preheat oven to 375°F. Gently flip dough onto parchment paper. Remove cake pan and plastic wrap. Divide into eight equal wedges and separate wedges slightly. Transfer parchment paper to baking sheet. Bake 30-33 minutes, or until golden broken. Remove to a wire rack and allow to cool for 10 minutes while you prepare glaze. PREPARE GLAZE: Stir together powdered sugar, vanilla and enough heavy cream to make a glaze that’s thin enough to brush onto the tops of the warm scones. While the glaze is still tacky, sprinkle with color sugars (purple, green and yellow/gold are traditional.) (adapted from King Arthur Baking/Susan Reid)

1 tsp. salt 2 tsp. baking powder 1 tsp. baking soda 2 c. all-purpose flour 2 T sugar 2 eggs, separated (see notes) 2 c. buttermilk 1/2 tsp. vanilla extract 2 T butter, melted and slightly cooled (plus more for cooking) In a large bowl, whisk salt, baking powder, baking soda, flour and sugar until combined. In a medium bowl, add egg yolks, buttermilk, vanilla and butter; mix until combined. Add wet ingredients to dry ingredients. In a small bowl, beat the egg whites until soft peaks form. Fold in egg whites until just combined. Let sit for around 10 minutes while you heat skillet over medium heat (or heat non-stick griddle to 300°F). If using a skillet, add around 1T butter to skillet before each pancake, and allow to melt completely. Scoop around 1/3 c. batter into skillet or onto griddle. Cook until bubbles form around the perimeter and a few appear in middle, around 3 minutes; flip and cook 2-3 minutes more, or until done. (adapted from Salt & Baker) Notes: When we tested this recipe, we found that the pancakes were plenty fluffy if you skipped beating the egg whites, though they took a bit longer to cook; if you go this route, lightly beat the eggs and add them with the wet ingredients as you did the egg yolks. But beating the egg whites resulted in some of the fluffiest pancakes we’ve ever eaten, so it’s worth the effort!

CAVIAR DREAMS Caviar is having something of a revival. While this delicacy has long been available at high-end grocers, it’s increasingly accessible online. Rather than being a stuffy nibble at posh parties, caviar is becoming a “treat yourself” weekday snack. You probably know caviar is made up of salt-cured roe – or fish eggs, to the layperson. You probably also know it’s pretty pricy. But what else should you know about this wonderful little luxury? Technically speaking, true caviar refers to sturgeon roe, though “caviar” is now harvested from other fish species. You’ve probably had salmon roe on sushi. The cost of caviar can vary wildly. Premium caviar comes from select fish; the price goes up and down based on the rarity of the fish, the amount of caviar each fish can produce and the taste of the caviar itself. The labor required to extract and grade the caviar is also a factor in cost. The declining population of sturgeon species has greatly contributed to the price of caviar in recent years. Overharvesting of sturgeon roe means fewer sturgeons

are hatched; unsustainable fishing practices have also caused a decline in their numbers. It’s essential to understand how your caviar was produced. What does caviar taste like? Almost all varieties maintain a taste of seawater, but it shouldn’t taste fishy at all; good caviar offers an unexpected nutty butteriness. As you expect, the roe slips and slides around in your mouth and bursts with flavor. Never eat caviar directly from a metal spoon, as it can alter your perception of the taste (though it’s fine to use metal or silver for spreading). Instead, eat caviar from spoons made of wood, bone or plastic. Better yet, sample your caviar on blinis or crackers! It pairs well with other fresh seafood and brut champagne – perfect for a romantic date night. Caviar is delicate and highly perishable. Store it in the coldest area of your refrigerator, typically in the back and near the bottom. Unopened caviar generally lasts up to 3 weeks; once opened, caviar is best when consumed within 24 hours. • by Amanda Harper

Make no mistake: no onions are being harvested outdoors anywhere close to us in the month of February. So why are they considered “in season” this time of year? Onions are fine when just harvested. But you may have noticed that the skin is soft and not at all papery like the onions you get at the grocery store. That’s because onions have to be stored a while to develop an exterior that makes them more fit for transport. This process is known as “curing.” A side-effect of the curing process is that the flavors deepen, losing some of the sweetness that a garden-fresh onion offers. So, in February, you’ll want to cook your onions to temper some of that pungent flavor.

1/2 c. unsalted butter 2 T olive oil 4 c. yellow onions, sliced 5 c. beef broth 2 T dry sherry 1 tsp. thyme 4 slices French bread 4 slices provolone cheese 2 slices Swiss cheese, halved 1/4 c. Parmesan cheese, grated

2 1/2 lb. sweet onions, sliced 1/4” thick crosswise 1 tsp. thyme 1 tsp. parsley 1 tsp. garlic salt 1/2 tsp. oregano 1/2 tsp. dry mustard 1/4 tsp. cayenne pepper 1/4 c. salted butter, cubed 4 oz. mild Cheddar, shredded 4 oz. smoked Gouda, shredded

In an 8-quart stockpot over medium heat, melt together butter and olive oil. Add onions and cook until tender and translucent, stirring continually.

Preheat oven to 350°F. Coat a 13x9” baking dish with cooking spray. Set aside.

Add beef broth, sherry and thyme. Season with salt and pepper to taste. Let simmer 30 minutes. Preheat the oven’s broiler. Ladle soup into 4 oven-safe bowls set on a baking sheet. Top each with a slice of bread; layer each slice with one slice of provolone, one half slice of Swiss and 1 T Parmesan. Broil until cheese is slightly browned and bubbling, 2-3 minutes. Serve hot. Pastry crust, unbaked 1 c. Gruyere, shredded 1 1/2 tsp. fresh thyme 2 tsp. fresh chives, minced 1 1/4 lbs. sweet onions, thinly sliced 1 T heavy cream 2 T unsalted butter, diced 1 tsp. salt

5 T butter, divided 6 shallots, halved and trimmed 10 oz. cipollini onions, halved and trimmed 2 tsp. garlic, chopped 2 T dry sherry 1 15oz. pkg. frozen pearl onions, thawed and patted dry 1/3 c. sherry vinegar 1/3 c. white wine vinegar 1/4 c. honey 1 T thyme 1 1/2 tsp. salt 1/2 c. pitted prunes, quartered

Preheat oven to 400°F. Line a sheet pan with parchment paper. If necessary, roll the pastry dough between two sheets of lightly flour waxed paper. Form into a roughly 10x14” rectangle, trimming the edges as needed. Place the dough onto the prepared sheet pan and refrigerate for 20 minutes. Working right to the edges, sprinkle the dough with the cheese, thyme and chives. Top with onions, creating a pattern, if desired (see notes). Brush onions with heavy cream. Evenly sprinkle with butter and salt. Bake for 40 minutes, or until tart is golden brown. Cut into squares and serve. (adapted from What Should I Make For) Notes: If desired, cut the onions into half moons, keeping the slices together. Place the little half moons in diagonal lines, just overlapping.

In a large skillet over medium heat, melt 2 T butter. Add shallots and cipollini onions. Cook without stirring until bottoms begin to brown, about 3 minutes. Shake pan to loosen onions, then cook until fork-tender, about 4 additional minutes. Add garlic and cook about 30 seconds, stirring constantly, until fragrant. Remove from heat. Add sherry to skillet. Scrape bottom to loosen any browned bits. Add pearl onions to skillet along with vinegars, honey, thyme, salt and 3 T butter. Bring to a boil over high heat. Reduce heat to medium-high. Simmer for about 4 minutes, stirring frequently. Add prunes and simmer 2 minutes, or until onions are lightly glazed. (adapted from Food & Wine) •

Remembering Music Legend

Les McCann (September 23, 1935 – December 29, 2023), was an American jazz pianist and vocalist. Les was born and brought up in Lexington, the son of James McCann, a water company engineer and his wife Anna who was a homemaker. He and grew up in a musical family and all four of his younger brothers and his sister sang in the Shiloh Baptist Church choir. “Everybody was in a position of doing the best they could with whatever,” he recalled in a 2015 interview with Red Bull Music Academy. “We never thought of ourselves as being poor.” Les started to play the piano as a three-year old. He explained that with limited resources and apart from some piano lessons he received for only a few weeks as a six-yearold before his teacher (who charged 35 cents a lesson) died, he was almost entirely self-taught. While attending Dunbar High School he played drums and sousaphone in the marching band, and at age 17 left to enlist in the U.S. Navy. He would tell the story about hearing Erroll Garner’s recording of “Lullaby of Birdland” during his service, and having the sudden realization that the piano was his calling. McCann first gained some fame while he was stationed in the San Francisco Bay Area in 1956 when he won a talent contest in the Navy as a vocalist. A success that resulted in an appearance on The Ed Sullivan Show that same year.

After his discharge he formed a piano trio and found work backing Gene McDaniels at the Purple Onion Jazz Club in San Francisco and then going on tour with them. After this he moved to Los Angeles where he studied music and journalism at Los Angeles City college and hosted a Monday night jam session at the Hillcrest Club. It was while Les was performing in one of the LA clubs that a representative of Pacific Jazz Records heard him and asked if he had a record contract. When Les told him no, the representative pulled one from his pocket and offered it to him. McCann went on to record more than a dozen albums for this label from 1960-1964 and gained some fame with his albums Les McCann Plays the Truth and The Shout. Although McCann was a skilled modern jazz pianist, brought up in the bebop era, the defining character of his music was his love of the blues and the gospel music he had absorbed during his childhood in the Baptist church, a subgenre that went on to become known as gospel jazz or soul jazz.

“The president, he’s got his war / Folks just don’t know what it’s for / Nobody gives us rhyme or reason / Have one doubt, they call it treason.” The song was released as a single and would peak at No.35 on the Billboard R&B Chart. Swiss Movement was nominated for a Grammy Award and went on to sell a half-million copies. Lexington’s Chester Grundy, who for many years ran the Spotlight Jazz Series, and knew Les, booking him several times as an act at The Lyric Theatre, said of this song, “It just resonated with people, it became like an anthem, a critique of social and political conditions at the time.” The song remained a calling card for McCann the rest of his musical career. He went on to produce many more successful albums.

His breakthrough moment came in 1969 at the Montreux Jazz Festival in Switzerland. Already by then a recording veteran, with albums on Pacific Jazz, Limelight and more recently the Atlantic label, McCann was nevertheless appearing at the festival for the first time. He gave a semi-impromptu performance co-leading a quintet with the saxophonist Eddie Harris and trumpeter Benny Bailey joining halfway through the set. Neither had performed with McCann before and there had been no time for rehearsal. By happenstance the performance was recorded and filmed on the fly by the event’s sound engineers.

In 2008 McCann was inducted into the Kentucky Music Hall of Fame.

In 1975 Les McCann became the first artist in residence at Harvard University’s Learning from Performers program. He was also known to be a painter and photographer of jazz and black history. His work was collected in 2015 in the book Invitation to Openness: The and Soul Photography of Les McCann 1960-1980.
