If you’re an Amazon Prime subscriber, you automatically have access to many titles for free, but you can add on a subscription to Kindle Unlimited for a small fee, allowing you to access many more titles. Libby offers access to free ebooks and audiobooks with your Lexington Public Library card. Apps like Everand, Epic and Audible offer subscription-based access to books.
KEEP TRACK
Goodreads is a platform that lets you keep track of books you’re reading (or have already read) and browse reviews and recommendations from thousands of users; it can connect to Kindle to update progress in real-time. It also allows you to set a reading challenge for the year, which can help you stay accountable. Storygraph, Bookly, Bookwyrm, LibraryThing and ReadingList are alternatives that offer unique social and tracking opportunities. Find what works for you!
MAKE TIME
Reading does take time, which seems to be the biggest roadblock for many who feel they don’t read often enough. Make reading a part of your daily (or weekly) ritual. For many, it’s easiest to set aside an hour or so for reading in bed before falling asleep. But for others, reading earlier in the day might feel right. For those with truly harried schedules, it may be easiest to set aside a little time on the weekend for getting bookish. If you’re going on vacation this summer, consider putting a little reading time in your itinerary. Nothing beats a good beach read!
LISTEN UP
If you struggle to make time for reading – or your eyes struggle to keep up – consider giving audiobooks a chance. Listening to a book during your commute or while you do household chores can make the experience more enjoyable while giving you some time with new literature.
CHALLENGE YOURSELF
One way to get yourself to read more is to make the entire process more fun. If you love a good challenge, set a reading goal. If you struggle with constraints, instead try reading more of a category, be it nonfiction, classics, cookbooks or romance novels!

From Lexington to Paris, Meet Gold Medalist Fencer
Lee Kiefer
Lexington’s Lee Kiefer became the first American to take an Olympic gold medal in individual foil fencing after her victory in Tokyo in 2021 at age 27, and did it while in medical school at the University of Kentucky.
Now, Kiefer is hoping for a similar result when she heads to Paris in July to compete in her fourth Olympics.
Kiefer is a 5’4”, right-handed fencer, while the majority of fencers are tall and left-handed. However, she has a nonstop competitive drive, boundless energy and a love for her sport that continues to grow.
“I have been fencing for over 20 years now, but the longer I fence, the more I love it,” said Kiefer. “When I was in college [at Notre Dame], I thought I would either have to give up fencing or not go to med school. A lot of supportive people encouraged me to do both, and I started in the [UK] College of Medicine in 2017.”
It was not easy to do the classroom work and stay in Olympic shape, but Kiefer prevailed.
“Then came the pandemic, and I didn’t know if there would be an Olympics. I continued my medical education and then the Olympics were back on. During all that chaos, I actually had more time to hone my fencing skills. A lot of things made the stars align at the right time for me in Tokyo,” she said.
“I thought that maybe it would be my swan song, and I was ready to step down. However, I thought I could still get better, and med school permitted me to take more time off so I could pursue competing in Paris.”
Not only will she be at the Olympics in Paris this year, but Kiefer happens to be ranked No. 1 in the world in her competition. Family and friends will also be there to support her, something they could not do in Tokyo due to the pandemic.
Her husband, fellow fencer Gerek Meinhardt, will also be competing in his fourth Olympics and has won an Olympic medal, as well.

Kiefer’s father, Lexington surgeon Dr. Steve Kiefer, is a former college fencer who started Lee in the sport at age five. Her brother and sister both developed into collegiate fencers. On top of that, Keifer’s parents and siblings are all in the medical field, and her husband is in med school at UK with her.
Kiefer is obviously the veteran member of the US team going to Paris but says her talented teammates will have “fun figuring out their own experiences.” Her one bit of advice for them would be: “If this is your first Olympics, just go for it, because you are living your best life.”
Opening ceremonies are July 26th in Paris, and she will compete on July 28th to pursue a second straight individual gold medal. She will also participate in the team competition in Paris.
“I have done really well this season. I want to be at my best on that one day. There are a lot of ups and downs. You know to expect adversity and to feel uncomfortable at times. That’s just part of the journey,” Kiefer said.
Her successful journey has impacted many others, especially at Bluegrass Fencers Club in Lexington. Kiefer, now 29, has seen young fencers with big dreams like she had years ago before those dreams became a reality. Her coach since 2004 has been Amgad Kahzbak of Bluegrass Fencers Club, and he has students from several states and others from outside the United States.
Kiefer, a Paul Laurence Dunbar High School graduate, says there are more female fencers now and that her club has a “strong base of youth fencers,” which increased after her Olympic success.
She’s appreciative of the opportunity she has ahead of her in Paris and knows a strong performance again could help her sport.
“I know I can do it, and it’s going to be hard. I want to freaking go for it!”
“Success breeds success, so hopefully, I can do well and encourage more youngsters to try fencing,” she explained.
After Paris, Kiefer knows both she and her husband will need some time off before restarting their third year with the UK College of Medicine.
“Your last two years are in the hospital. We plan to re-matriculate in June of 2025 when the semester starts after we have had some time to re-study,” the Olympic gold medalist said. “We know it won’t be easy, but that’s what we plan to do.”
Kiefer and Meinhardt have been featured by NBC-TV in promotions for the Paris games, where Kiefer has a chance to become only the second US fencer to win multiple Olympic gold medals in any individual event. If she medals, the Lexington resident would be the third US fencer to win individual medals at multiple Olympics.
“I have the belief and skills to do it [win gold]. I am not going to put pressure on myself, but I will admit I wear my heart on my sleeve more than when I was younger,” she explained “I know I can do it, and it’s going to be hard. I want to freaking go for it!”
She added, “When I was more of an underdog, it was like, ‘I can beat anyone.’ And now that I’m the old one, I am still like, ‘I can beat anyone, but I also know anyone can beat me.’ I’m not scared of it, but it’s just a reminder to not get comfortable.” •

Who doesn’t like a little more cha-ching? According to the Harvard Business Review, people with stronger business networks are led to higher salaries and promotion opportunities. It makes sense; the more people you are connected with, in and out of your current organization, at various job levels, the better chance you have of taking on an exciting opportunity when it arises.
Insight:
As you talk with people in a wide range of roles, you can gain valuable information on how to improve your current role, not just new opportunities; how to become a better leader, receive insight into a position you didn’t know about, or how to improve office communication. Just because you’re content in your current role, doesn’t mean networking is inapplicable to you.
Aiding Others:
Networking doesn’t have to mean small talk, schmoozing or attending lots of events. Just as you seek information from others, they can receive helpful insight from you! You could present someone with their next best opportunity from the value you bring to the workforce or a contact you have.
Where to Start:
“Dormant Ties”:
Instead of starting from scratch, what if you started your network with people you already know? Reach out to old professors, teachers, or bosses. It’s proven these types of ties lead to more productive advice than to ones you’ve never interacted with. LinkedIn is a great tool to reconnect you with dormant ties.
Don’t be vague:
Be clear in your intentions when reaching out to a contact. Vague messages like, “I would love to chat with you sometime!” are less likely to generate a response than a succinct paragraph that pinpoints how this person’s career peaks your interest.
Take initiative:
Be confident, and shake the feeling you’re bothering someone. People love to talk about themselves! If they’re unavailable to meet in person, request a 15 minute zoom call at a time convenient for them.

Do You Take Your Tea?”
CUISINE
The easiest way to start a ght in a Southern town...
People have been sipping tea in one form or another since ancient times. While the first iterations of the drink were hot, sweet tea grew in popularity because it was seen as an extravagant luxury; tea, ice and sugar were all pricy ingredients once upon a time.
It may shock you to learn that the first known recipe for sweet tea wasn’t published until 1878. But hang onto your pearls, because the real kicker is that the recipe in question called for green tea. At the time, green tea was by far more popular than black tea. So your romantic visions of Southern belles sipping tall glasses of iced sweet tea probably looked very different in reality.
This changed during World War II with the Japanese occupation of many tea-producing areas. Black tea from British India quickly became America’s favorite, and it has remained so ever since.
While we certainly don’t scoff at folks who enjoy a cup of hot tea, it’s undeniable that iced tea is the sip of choice in these parts.
Sweet or Unsweet?
It’s an old joke that traditional Southern sweet iced tea could probably be used as a substitute for hummingbird food in a pinch. Indeed, researchers have found that some sweet teas contain twice as much sugar as CocaCola – yikes! But most people prefer a sweetness level that falls somewhere a little more reasonable; sweet, but not saccharine, cloying or syrupy.
Unpredictable (or over-enthusiastic) sugar content means many people prefer to order their iced tea unsweet. Some folks add an artificial sweetener themselves, but others enjoy it just as it comes. If you want your tea sorta-sweet, try ordering it “half-and-half.”
How Strong?
It’s important that a batch of sweet tea be fairly strong so that it doesn’t get too watered down by the melting ice. It’s also important to only use tea that was specifically blended with the intention of creating iced tea; many tea varieties are simply too delicate while others will lead to a confusing flavor profile. (Most of the sweet tea you’ve had was brewed using orange pekoe black tea, essentially a blend of various varieties of black tea.)
That said, some folks prefer their iced tea be so strong it’ll “put hair on your chest” (so to speak) while others prefer a more refreshing, lighter sip.
Lemon?
Lemon is a traditional garnish for tea – both iced and hot – as it enhances the taste. It’s not required, of course, and many people prefer adding a little flavor in other ways; mint, peaches, raspberries and limes are all great options. Adding lemonade to your sweet tea, however, is generally considered a bridge too far; that’s techinically an Arnold Palmer, and it’s considered a different drink entirely. by Amanda Harper
Sweet Iced Tea
2 family-size iced tea bags (rought 7oz. each)
1/4 tsp. baking soda
4 c. filtered water, divided Ice
Simple syrup
Place tea bags and baking soda in a large heatproof glass jar or pitcher.
Bring water to a rolling boil. Pour over tea bags, ensuring they remain submerged. Steep for 15 minutes. Squeeze tea bags, and discard.
The traditional method for making iced tea is to boil water, steep the tea, then refrigerate the tea until cold before pouring over ice. Be sure to steep the tea for around 15 minutes to ensure that you get the most out of your leaves. However, you can cold-brew iced tea and the result will be less tannic. Combine your tea and water, then refrigerate for around 8 hours; if you aren’t using tea bags, strain before serving.
The Magic Ingredient
Add a pinch of baking soda to your tea once the sugar has dissolved. Why? It combats bitterness while preventing the tea from becoming cloudy once cold. If you mention this hack, it’s likely to get your laughed right off of your mamaw’s porch, so we recommend keeping this trick to yourself.
Sugar vs. Simple Syrup
Sugar can be a problem with iced tea. If you add it before you cool the brew down, then you’re stuck with the level of sweetness you set forth – if it’s too much, you have to water your tea down or add a lot of lemon. On the flip side, adding sugar after it’s chilled or iced means it may not dissolve properly, leaving your last few sips pretty gritty and gross. Simple syrup is your sweet tea savior. Boiling water and sugar together ensures that all of the sugar is dissolved. You can add a little simple syrup to your pitcher of tea, then provide the rest for your guests to add to taste. Even better? You can use simple syrup for so much more than just sweet tea!
Refrigerate until chilled. Serve over a glass full of ice; serve alongside simple syrup for guests to sweeten their glass to taste. Optionally, add a slice

Storage Solutions
Iced tea aficionados recommend storing brewed tea for no more than two days. After that point, it begins to taste stale. (It can safely be consumed within 3-5 days of making, but you’ll be sacrificing a whole lot of flavor.)
Add sugar and water to a small saucepan. Bring to a boil, stirring until sugar is completely dissolved. Pour into a heat-proof jar, cover and refrigerate
While pitchers are a beautiful way to serve tea, they’re often not the best way to store it. Instead, pour your sweet tea into a tightly-sealed container to refrigerate. Most people prefer glass, as some plastic containers can impart “off” flavors; you also don’t want to pour hot tea into a plastic container, as it may not be safe to do so.
Don’t refrigerate your sweet tea with any garnishes (or ice) in the container. Instead, add those to the pitcher just prior to serving or directly to each individual glass.
The Newspaper Trick
Not sure if you’re brewing your tea strong enough for sweet tea? Try holding a newspaper (or this magazine) behind your pitcher; it should be dark enough before adding ice that you can’t read the words through the brew. This is a time-honored tradition in Southern housholds, and one that seems to result in pretty great iced tea!
Four easy ways to make your iced tea even sweeter...
Pucker Up
A slice or wedge of lemon is an age-old tea companion. Lemon with tea is a flavor profile we all know and adore; this is definitely a case of “if it ain’t broke, don’t fix it.” But if you’re looking to take that sip to the next level, there are lots of ways to make your lemon pop!
Cocktail enthusiasts would first encourage you to try making a twist with lemon peel, as it will add the most flavor to your beverage. Squeeze the flesh over your empty glass, then add in the twist before pouring.
Candied lemons or lemon peel will add both tang and sweetness to your tea. You could also add lemon juice to your simple syrup to ensure you’re always adding a bit of bite with the sweetness.
And, yes, you can always make a good ol’ Arnold Palmer. Fill a glass full of ice halfway with lemonade, then top with sweet tea. (If you’re spiking it, we recommend lemon-flavored vodka.)
Nice Ice
As ice melts, it tends to water down your beverage. While proper brewing ensures this isn’t a problem for you, it actually presents an interesting opportunity.
Adding fruit, herbs or juice means that as it melts, the ice will actually end up infusing flavor into your tea. Add some blueberries, mint, lemon wedges, lemon juice, raspberries or cubed peaches to your ice tray, then top with water. Freeze completely, then add to your glass.
If you find that your sweet tea tends to come out a bit weak, use an old iced coffee trick: freeze the remains of your last batch of iced tea in your ice tray. That way, as the ice melts, you’re adding more tea to your glass rather than plain water!
Test Out Teas
Remember earlier when we said most iced tea blends start with orange pekoe? It’s not a particular variety of tea, but instead a grading system. The difference you taste between brands lies in their proprietary blend of teas.
Ceylon, Assam and Darjeeling are all popular varieties for this purpose. Earl Grey will add a citrus punch while Oolong offers a natural sweetness. Most pros agree that iced tea isn’t where you want to use up your priciest teas; save the good stuff for your hot cuppa!

For the most traditional glass of iced tea, you could always try out a green tea. Most experts suggest steeping green tea for a shorter time, around 5-10 minutes. What about herbal or specialty tea blends? It’s always worth experimenting with new flavors! Start with varieties specially blended for iced tea, but feel free to branch out to others once you learn what works for you.

Summer means grilling season. While you’ve probably got the burgers, sausages, chicken and pork covered, your grill has the power to do so much more. Rather than just churning out the old cookout standbys, why not experiment a little this season? When you fully harness the power of the grill, your summer meals can be truly extraordinary.
ill power how to: grilling fruit
Fruits that stay on the firmer side can almost all be grilled. The heat brings out the sweetness within while adding a little carmalized depth to every bite.
Stone fruits, tropical fruits and any which have a thick skin can be grilled. Peaches, plums, watermelon, cantaloupe, pineapple, mangoes, lemons, bananas, figs and avocados are all great contenders.
To begin with, cut your fruit into large pieces. This not only helps prevent the fruit from falling between the grates, but it also helps it stay sturdy as the heat makes the fruit soften. Pit stone fruits. If you prefer your fruits without the skin, consider waiting until after they’re grilled to peel; it will not only help them hold up to the heat, but it’ll be easier to do once they’re softened!
Ensure that your grill has been heated to medium-high for at least 10 minutes; scrape and lightly oil the grates with a neutral oil before you grill any fruit. Often, it’s easiest to grill fruit while your main proteins are resting.
If your fruit will be utilized in a savory application, lightly oiling the surface fruit will guarantee no unwanted sticking will occur. But if you’ll be using them in a cocktail or dessert, consider skipping this step; oiling the grates should be sufficient.
Keep your fruit on the heat until grill marks appear on the fruit, it’s warmed through and it reaches your desired texture. This depends on the individual fruit, but that can generally be 3-5 minutes per side. Dense fruits like pineapple will naturally take longer. Either way, resist the urge to fiddle with them; turn once, and you’re done.
Want to grill smaller fruits, like berries. You totally can! Strawberries can easily be skewered to keep them from falling into the flames. Blueberries, blackberries and raspberries can be heated on the grill in a bowl fashioned out of tin foil.
What about citrus? Grilling lemons, limes, oranges and grapefruits can be delish! Dip the cut side in a little sugar first, which will create incredible caramelization. For these fruits, be sure you keep an eye on them; burning can happen quickly!
How can you use your lovely, grilled fruit? It’s a wonderful addition to just about any summer salad. Shake on a little Tajin (see this month’s Kitchen Culture) or salt, then chow down. Grilled fruit is a wonderful garnish for your favorite cocktails. Cook up a little salted caramel and it’s a dessert just waiting to happen; drizzle the fruit and serve with vanilla ice cream or grilled pound cake.

Preheat your grill to medium-high heat.
Drizzle vegetables with olive oil, and season with salt and pepper, to taste. Grill eggplant until tender, about 4 minutes per side. Grill asparagus 3-4 minutes, turning occasionally, until tender. Cut asparagus in half, crosswise. In a small bowl, mix together ricotta, basil, Pecorino Romano, lemon zest and lemon juice until smooth. Season with salt and pepper, to taste.
Place 4 slices of eggplant onto a grill-safe baking sheet. Spread each with 2-3 T of ricotta mixture. Place 4 pieces of asparagus on top. Top with another slice of eggplant. Place baking sheet on grill, and grill until warmed through. (adapted from Food Network)

Preheat your grill to medium-high heat.

Boil gnocchi according to package instructions; drain and set aside. Brush eggplant, zucchini, squash, corn and onion with 2 T oil. Grill vegetables, turning occasionally, until charred and tender, about 7 minutes total. Transfer to a cutting board. Remove corn kernels from cob; cut other vegetables into bite-sized pieces.
Whisk together 2 T oil, vinegar, basil, garlic, pepper and salt in a large bowl. Add gnocchi and vegetables; toss to coat. Sprinkle with feta and serve. (adapted from Eating Well)

Love the taste, but find eating street corn just a bit too messy? You can also cut the kernels off the cob and serve it casserole-style, or cut the ears into “ribs.” For either preparation, consider adding just a bit more cotija, spice and cilantro.

Preheat your grill to medium-high heat. Set grill basket on a baking sheet. In a small bowl, mix together cumin, oregano, paprika, cayenne pepper and salt. Set aside.
Add steak to a large bowl and drizzle with 1 T. olive oil. Sprinkle with a third of the spice mix and toss to coat. Transfer to one side of grill basket. Repeat process with peppers and onion, then again with chicken, arranging each into the empty portion of the grill basket; close and secure.
Place grill basket on the grill and let cook, flipping once, until everything is browned and caramelized. The thickest part of chicken should reach 165°F internal temperature.
Remove from grill and place on a clean baking sheet to rest for 10 minutes.
Grill tortillas until they char slightly, around 30 seconds per side.

Add red peppers, almond butter, vinegar, 4 T oli and 1/2 tsp. salt to a blender; process until smooth, scraping down sides as needed.
Preheat grill to medium-high heat.
Cut cauliflower lengthwise into 4 steaks, around 3/4” thickness, leaving stem intact. Brush with 2 T oil; season with black pepper and remaining salt. Grill covered, turning occasionally, until stem is tender when pierced with a knife, about 13 minutes.
Toss together chickpeas, arugula, radishes, lemon juice and remaining oil in a bowl.

Tajin Magic Pineapple Margaritas
2 oz. tequila blanco
1 T lime juice
1.5 oz. pineapple juice
3/4 oz. triple sec Tajin
Add tequila, lime juice, pineapple juice and triple sec to a cocktail shaker; shake to combine.
Run lime over the rim of your glass and dip into a shallow plate of Tajin to rim the glass.
Strain mixture over your glass. Dip the tip of a wedge of pineapple (or lime) into Tajin and garnish. (adapted from Healthy Little Peach)
Notes: If desired, add 1 tsp. of juice from a jar of pickled jalapeños before shaking for a spicier sip. For something sweeter, add 1 tsp. honey or agave sweetner before shaking.
Tajín Clásico is a Mexican spice mix that has near-cult status. The mixture is primarily lime, chili peppers and salt, creating a tangy kick. Fans put it on just about everything, from seasoning entrees to spicing up fresh fruit.
Technically, “Tajin” is a name brand originally manufactured by Empresas Tajin. However, you can find versions from many other spice manufacturers. It can be made at home by combining ground chiles de arbol, guajillo chiles, pasilla chiles, sea salt and dehydrated lime.
How can you make flavor magic with Tajin? Here are some ideas:
Fruit: Sprinkle a little Tajin on fresh-cut fruit to enhance its natural sweetness while adding just a little spark to the taste. Mango, watermelon, pineapple, and apples are all deliciously enhanced by a sprinkle or two. Don’t forget about avocados!
Snacks: Shake some Tajin onto popcorn, potato chips, hummus, fries, roasted nuts, roasted chickpeas or beef jerky. The tangy taste will make snack time a flavor blast.
Cocktails: Micheladas were practically made for Tajin, whether you add it to the cup or around the rim. Tajin is also a fun way to change up your margarita!
Frozen Treats: Make popsicles, froyo, shaved ice, sorbet, sherbet, chamoyadas or ice cream truly pop with a little bit of Tajin.
Veggies: Corn, cucumbers, carrots, cauliflower, chickpeas, potatoes and more take very well to Tajin. We love elotes with Tajin! •
Tomatoes
There are those who feel it’s a crime to do much more to a ripe tomato than to cut it and sprinkle on a little bit of salt. While we concede that eating a perfect summer tomato out of hand is its own kind of Heaven, there’s just too much potential in these lovely red (or yellow, green, pink, purple or orange) globes to ignore.
You’ve probably heard the old debate, wondering whether tomatoes are a fruit or a vegetable: science leans toward classifying them as fruits while taste leans toward calling them vegetables. If you want to get entirely technical – or maybe just win a team trivia night – the tomato is actually a berry!
The wild ancestors of the modern tomato are native to western South America and only grew to around the size of a pea. Mesoamerican peoples domesticated the plant and Spanish colonizers introduced the plants to Europe, thus making them an essential ingredient in Spanish cuisine.
Early botanists knew from sight that the plant was a member of the nightshade family, known for growing deadly poisonous berries and leaves. These suspicions were only heightened when people unknowingly served these acidic berries on pewter plates, accidentally causing
lead poisoning. And it’s technically true; the leaves and fruit do contain an alkaloid that is toxic when ingested in large quantities, though ripe fruit contains far less of this compound.
Slowly, European countries learned what the Aztecs and Pueblo people already knew: that tomatoes were a delicious, versatile ingredient that was perfectly safe for consumption.
The earliest we know of tomatoes being grown in British North America is in the very early 1700s. While they were grown on Carolina and southeastern plantations, widespread adoption took a long time; people still believed them to be poisonous up until the 1900s! Farming pioneer Alexander W. Livingston receives much of the credit for developing many of the varieties we have today and spreading the good word about this wonderful fruit.
Today, it’s unthinkable to imagine a southern garden without tomatoes. And even harder to imagine life without pico de gallo, marinara, caprese, the BLT, tomato soup or, of course, a fresh-cut slice of a tomato you just plucked from the garden – with or without a little shake of salt. by Amanda Harper
Caprese Stuffed Portobello Mushrooms
4 portobello mushroom caps
3 T olive oil, divided
1 clove garlic, minced
1/2 tsp. salt, divided
1/2 tsp. pepper, divided
1 c. cherry tomatoes, halved
1/2 c. mozzarella pearls
1/2 c. fresh basil, thinly sliced
2 tsp. balsamic vinegar
Preheat oven to 400°F. Using a spoon, gently remove the gills from the underside of the caps; set aside.
In a small bowl, whisk together 2 T oil, 1/4 tsp. salt and 1/4 tsp. pepper; gently coat mushrooms all over. Place top side down on a large, rimmed baking sheet; bake until mostly soft, about 10 minutes.
Stir tomatoes, mozzarella, basil and remaining salt and pepper together. Remove mushrooms from the oven and fill with tomato mixture. Return to oven until cheese is fully melted and tomatoes have wilted, about 15 minutes.
Drizzle each mushroom with about 1/2 tsp. balsamic vinegar each; serve hot. (adapted from Eating Well)
Notes: If you get whole mushrooms, gently twist off the stems to remove. These bruise and wilt more quickly than the caps, so use them quickly. If you don’t have any plans for them, just dice them, then sautée with a little butter and garlic; spread this on crostini with freshly chopped basil to go alongside your stuffed mushrooms.
2 c. cherry or grape tomatoes
1 T fresh thyme
1/2 tsp. salt
1/4 tsp. pepper
2 sticks butter, room temperature
1 small red onion, thinly sliced
1 1/2 lbs. tomatoes
1/4 c. fresh herbs, chopped
2 T olive oil
1 T red wine vinegar
1/2 tsp. salt
1/4 tsp. pepper
Tomato Butter
Arrange the top oven rack about 4 inches from the broiler element; heat oven to broil. Spread tomatoes on a rimmed baking sheet; broil until skins begin to brown and release their juices, about 7 minutes. Let cool to room temperature.
Once cool, combine tomatoes, thyme, salt and pepper in the work bowl of a food processor fitted with the blade attachment; plus about 10 times, until tomatoes are finely chopped.
Cut butter into 1” cubes; add to the food processor. Process until butter is completely combined, about 30 seconds; stop and scrape down the sides, as needed.
Place in a covered dish; refrigerate for at least 2 hours before using. Can be refrigerated for up to a week or frozen for up to 3 months. (adapted from The Kitchn)
Summer Tomato Salad
Place onion in a small bowl and cover with cold water; set aside for at least 10 minutes.
Core tomatoes and slice into 1/2”-thick wedges. Place in a large bowl, and add the herbs, oil, vinegar, salt and pepper.
Drain the onions and add to the bowl. Toss to combine and let stand for around 10 minutes before serving; salt and pepper to taste. (adapted from The Kitchn)
Notes: This is a great way to use heirloom tomatoes from the Farmers Market; a mix of varieties will make this salad a beautiful crowd-pleaser. Use a mix of the fresh herbs you prefer; this is how you personalize this salad. Basil, dill, cilantro, parsley and/or oregano would be lovely choices; next time you make this salad, tweak the herb combo you use for a different experience!
2 1/2 lbs. tomatoes, cubed
1 tsp. salt
3/4 lb. ciabatta, cubed
10 T olive oil, divided
1 shallot, minced
2 cloves garlic, minced
1/2 tsp. Dijon mustard
2 T red wine vinegar
1/2 c. basil leaves, chopped
Classic Panzanella Salad
Place tomatoes in a colander set over a bowl; season with salt and toss to coat. Set aside at room temperature to drain for at least 20 minutes, tossing occasionally.
Preheat oven to 350°F. Adjust rack to center position.
In a large bowl, toss bread with 2 T olive oil. Transfer to a rimmed baking sheet; bake 15 minutes, until crisp but not browned. Let cool.
Remove colander of tomatoes and set aside.
Add shallot, garlic, mustard and vinegar to bowl of tomato juice; whisking constantly, add in 1/2 c. olive oil. Season to taste with salt and pepper.
Add bread, tomatoes and basil leaves to dressing; toss to coat. Let rest for 30 minutes before serving, tossing occasionally until dressing is absorbed by bread. (adapted from Serious Eats)
Notes: It’s best to choose a mix of tomatoes, as this will not only make your salad truly stunning, but will also make every bite a surprise. If using kosher salt, double the amount you put on the tomatoes; salting them is essential to getting the most juice from them for the dressing.
TOPtip: Panzanella is a cold salad, perfect for summer dining!
8 oz. puff pastry, thawed
12 oz. tomatoes, cut into rounds
2 T Dijon mustard
4 oz. Brie, sliced 1/4” thick
1 T capers, drained
1 tsp. fresh thyme
1 T olive oil
Tomato and Brie Tart
Preheat oven to 400°F.
1 shallot, thinly sliced
3 T red wine vinegar
2 large tomatoes
2 medium peaches
3 T olive oil
1 tsp. honey
1/4 tsp. salt
1/4 tsp. pepper
1/2 English cucumber, thinly sliced
1 c. fresh herbs, chopped
4 oz. feta, crumbled
Roll puff pastry out into a roughly 9x12” rectangle on a lightly floured sheet of parchment paper; trim edges to straight. Refrigerate on a baking sheet for 10 minutes.
Sprinkle tomatoes with salt. Arrange on a layer of paper towels; top with more paper towels to absorb liquid, and set aside.
Score edges of pastry to create a 1/2” border. Spread mustard inside the border; top with Brie. Spread the tomatoes out, overlapping slightly, side the border; top with capers and theme. Drizzle with oil then season with salt and pepper to taste.
Bake 15 minutes. Reduce oven temperature to 375°F; continue baking until edges are golden brown and cooked through, about 30 minutes. (adapted from Martha Stewart)
Tomato and Peach Salad
Place shallot in a large bowl; add vinegar and toss to coat. Side aside for 10 minutes. Core and cut tomatoes into 1” thick wedges. Halve and pit peaches, then cut into 1” thick wedges.
Add olive oil, honey, salt and pepper to shallot; stir to combine. Add tomatoes, peaches and cucumber; toss to coat. Add herbs and feta; gently toss to combine. Season to taste. (adapted from The Kitchn)
Notes: Choose peaches that are ripe, but still firm. Select whatever tender herbs you prefer; mint, basil, parsley and/or cilantro would be great choices.
Caprese Grilled Chicken Sandwiches
2 boneless, skinless chicken breasts
2 T olive oil
2 tsp. Italian seasoning
1/2 tsp. salt
1/4 tsp. pepper
4 ciabatta rolls
1/4 c. pesto
8 oz. fresh mozzarella, sliced
2 tomatoes, sliced basil leaves
balsamic vinegar (optional)
Cut the chicken breasts in half lengthwise to create four filets. Place each slice between two pieces of parchment paper and pound to 1/4” thickness.
In a shallow dish, whisk together olive oil, Italian seasoning, salt and pepper. Place chicken in dish, then turn to coat; cover and marinate for at least 30 minutes but up to overnight.
Preheat grill to medium-high and lightly oil grates.
Grill chicken for 3 minutes on each side; once internal temperature reaches 165°F, transfer to a plate and rest for 5 minutes. Place rolls cut-side down on grill and toast lightly.
Assemble your sandwiches. Spread pesto on bottom layer of each roll, add a layer of mozzarella then tomatoes. Place a piece of grilled chicken onto each. Finish with a few basil leaves and, if desired, a drizzle of balsamic vinegar. Add top bun. (adapted from Simply Recipes)

If you’re looking to understand our city government a little bit better, and network with folks who want the same, Lexington Forum provides the space to explore those vital conversations that impact our community.
Who They Are:
Each month, the passionate members of Lexington Forum gather to discuss relevant topics with a bipartisan approach, ensuring every view and avenue is explored. Local leaders are invited for panelstyled discussions to keep us updated on what’s up in Lexington.
How it Began:
Lexington Forum has put action behind their conversations since beginning as a project idea out of the 1983-1984 class of Leadership Lexington. This class became a huge drive to legalize liquor on Sundays in Fayette County, a topic that gained significant traction due to their efforts. This inspired founders Larry Smith and Ralph Coldiron to develop a group of the younger business community who were willing to lean into issues affecting Kentucky.
A Lasting Mission:
It didn’t take long for the group to gain traction. They hosted well-known politicians like Mitch McConnell and Dee Huddleston when they were fi rst running for Senate. In recent years, Lexington Forum hosted discussions with Athletic Director Mitch Barnhart, Congressman Andy Barr, Mayor Linda Gorton, local health officials, police chiefs, and other prominent local leaders. The group continues to build an impactful environment that promotes local influence, to not only better Lexington, but the entire state and nation.

ArtsConnect Art Walk

The Arts Connect Art Walk was originally conceived back in 2018 - the route mapped out and rack cards printed. But it wasn’t until 2023 that Kate Savage, Executive Director of the nonprofit Arts Connect, found the time to fully develop this idea, put a script together and recruit a couple of people with a passion for the arts and an interest in being tour guides. But by then the rack cards were outdated and had to be revised with current photographs – one of the murals featured had been painted overprices had changed, and part of the route needed to be altered to keep the walk more arts-centric as well as realistic timewise.
“It’s easy to get excited about what Lexington has to offer and want to share it all,” said Kate. “What was meant to be a two-hour leisurely walk taking in arts features, had turned into a more than three-hour endurance challenge that covered too much ground and included every topic imaginable.”
The initial tour, launched in August 2023, that runs every Tuesday, Thursday and Saturday from 11am to 1pm was designed to be straightforward. It would start at 21c Museum Hotel, wind its way across the center of downtown taking in murals, sculptures, galleries and other arts features, and fi nish up at Artists’ Attic with some much-appreciated refreshments. However it quickly became obvious that there was interest in an alternative
tour that would appeal to food and art lovers alike and so the Arts and Apps Tour, every Thursday from 4pm to 6pm was created. “Most arts afficionados are foodies too,” said Kate, “so this was a natural no-brainer combination.”
Buffy Lawson, one of the guides who typically takes the Arts and Apps groups, says; “I feel I really know and appreciate my city more than before as I had to spend so much time studying and learning everything in anticipation of any question that might get asked.” What gives her thrills is when folks who’ve lived their whole life in Lexington, remark how much they’ve learned and how they had absolutely no idea how arts-rich the city was.
Another guide, Zach Hall, who is himself an artist, gets great enjoyment from being able to have extended conversations about art. “For me, as an artists and previous art student, these conversation don’t typically

come about organically, at least not in my day-today life, whereas on these walks, well it’s sort of what you’re meant to be talking about,” he said.
Several reviewers on the booking site have mentioned how the walk was so much more than they expected, how impressed they were with what Lexington has to offer, what fun they had, how knowledgeable the guides were, and then raved about the hors d’oeuvres on the Arts and Apps Tour. One enthusiast headed her review “A Shot of Adrenaline for Your Artistic Soul”!
“We each have our favorite talking pieces,” Kate said. “I happen to be very fond of the Zero Mile Marker on the corner of Main and Lime. It’s so refreshing to talk about a camel in a horse-overload city –nothing against horses, of course!”
Being able to visit a wide variety of venues has been very important. “It’s vital to the mission of Arts Connect that we help to shine a light and lift up the arts community,” said Kate. Frankie York, owner of New Editions Gallery, one of the stops along the way, said “these art walks bring visitors to our city in the door and expose them to exhibits and history they never would have known about.”
“People always love to know the backstory,” said Kate, “and as an art lover, it’s wonderful to dig into more complex contemporary art such as the work at 21c Museum Hotel and then help others gain intellectual access. Lots of ‘ah-ha’ moments as the penny drops,” she said smiling.
All art is relevant, and there’s something for everyone on these walks, from murals to wrapped electrical boxes, from blue horses to bronze camels, from ultra contemporary artwork to the more traditional kind.

Social Media
Q: Is it acceptable to make a post on social media or send a text in lieu of sending a card for major life events?
It’s such a different world from when Miss Manners published her first column (1978, for anyone wondering). Back then, her default advice in any situation was “send a card.” How we miss that simplicity!
Miss Manners herself had this to say on the topic of changing modes of expressing our sentiments: “The most formal situations still require something written. The least-formal are easily taken care of with texting or email, which is terrific. The idea that it has to be all one or all the other and that one method is totally out of date...”
First, consider how close you are to the recipient. For casual acquaintances, a social media interaction is probably more than sufficient. With friends and family members, however, paper is still king. Can you both send a card and a little social media love? Absolutely!
Second, consider the event itself. Major life events are often relative to the person involved, so use your best judgment. A wedding always deserves a card, whereas a text, comment or DM is probably adequate congratulations for a new job.
In the case of sad news, like the death of a loved one, comment on a related post (if they make one) and/or send your sympathy via DM, then send a card.
Q: Why doesn’t everyone love it when I share my opinions all over social media?!
Your mama raised you knowing that there’s certain topics you don’t bring up at the (proverbial) dinner table. Why does everyone think that social media is an exception to that concept?
It’s one thing to calmly debate an idea with others who are open to debate, but it’s quite another to foist your opinion on the masses and expect unmitigated adulation. Ain’t gonna happen. Consider whether you’re actually bringing attention to an issue... or whether you’re using an issue to get attention. If you’re honest with yourself, you’ll probably feel less inclined to post.
Q: Can I share photos of my newborn nephew?
We get your excitement to show everyone those chubby cheeks. But you gotta hold off until you’ve got the permission of the parents.
The best rule of thumb for social media “breaking news” is to only post what’s yours to share. If you don’t have the permission of those involved to share the story, then don’t do it. Make it your personal policy to always preemptively ask, “May I post this?”
Most likely, the parents want to be the first to share their bundle of joy with the world. They’ve more than earned that right.
But don’t think that once they’ve posted, that it’s open season on posting that kiddo. They may want to limit how much the world sees the tyke, and that’s their right, too.
Q: My parents keep sharing AI deepfakes. How do I talk to them?
Oh, the age we live in! It’s so easy for faked images to get passed around on social media. And when friends we trust share them, it’s easy to hit “repost” without a single thought.
If your folks are the level-headed, open-to-discussion type, sit down with them and show them examples of deepfakes. They may not be familiar with just how insidious AI technology can get. Then show them ways they can fact-check a post before they share it out again.
But if they’re a stubborn sort? Well, this might be one you simply can’t win. Debunk especially egregious posts in the comments, but maybe let the rest lie. •
