Dining— Artisan Waterfront Restaurant & Tavern, our award-winning restaurant, offers a unique and innovative dining experience with magnificent views of Lake Michigan. Our Great Lakes-inspired, New American cuisine has an emphasis on farm fresh fare from local and regional farms, celebrating the theme of sustainability and agriculture in an artful setting. Artisan is under the direction of our Corporate Chef, Frederic Kieffer, who comes to Traverse City via Paris, New York City and Southport. Having grown up in the countryside west of Paris, Frederic Kieffer discovered a true passion for cooking working summers in local restaurants. His career began in the kitchen of Tentation Caterers in New York City and running the culinary arm of The Museum of Natural History in Manhattan. As Chef Kieffer’s culinary reputation grew, he was invited to re-open Windows of the World, one of the most iconic venues in history, with famed restaurateur Joseph Baum of the Rainbow Room. After working in New York City’s Water’s Edge and Man Ray Restaurant, Chef Kieffer opened l’escale restaurant at Delamar Greenwich Harbor and Gaia restaurant, also in Greenwich. Under his guidance, both restaurants received an “Excellent” rating from the New York Times. In 2011, Chef Kieffer became Executive Chef and Partner of Artisan, a true farm-to-table concept of dining, where he promotes sustainable agriculture with seasonally inspired menus. Artisan received a “Don’t Miss” rating in January 2012 by the New York Times and Three Stars from Connecticut Magazine. In Traverse City, Chef Kieffer has reciprocal relationships with local farms and specialty purveyors, giving guests an opportunity to savor his signature seasonal style. With our garden patio just steps away, it is easy to infuse the freshest ingredients into his carefully crafted plates.

Nicklaus’ signature design features Scottish terraced fairways, tiered greens, deep grassy roughs, moguls and mounds and deep pot bunkers. Designer Dick Nugent developed the course with developer and owner Mike Keiser, now famous for his masterpieces Bandon Dunes, in Oregon, and Sand Valley, in Wisconsin.
