Billy Elliot the Musical IT IS LIKE ELECTRICITY The Book and lyrics written by Lee Hall, musical directed by Stephen Daldry and music created by the legendary Elton John.
There are fifteen musical numbers, split up into the two acts. There are eight in the first and seven in the second. The story starts off as a young boy, Billy Elliot a motherless British boy was sent out to try boxing but he felt no connection or joy from it. Whilst looking around in the gym he stumbles upon a ballet class and joins in. He becomes absolutely enamoured with ballet. At the same time his father Jackie and elder brother Tony are involved with the miners’ strike.
Created by Lee Hall from his original play Dancer, the musical is set in Durham, England in 1984-85 miners’ strike. It is based on the film of the same name created in the year 2000. In Australia is has been confirmed out of the hundreds of auditions there will be four boys playing Billy Elliot. These include Omar Abiad, Wade Neilsen, Jamie Rogers and River Mardesic. All of them are from different states of Australia.

Clean Up Australia Day BE READY TO TAKE PART IN THE CLEANING OF OUR COUNTRY
area. By the end of the day feel a sense of accomplishment as you helped the country. Getting rid of the rubbish won’t only help the environment around us such as the animals and plants but much more. It helps promote our cities reputation as they will look much better than before. It is also better for the health of everyone if they are not surrounded by rubbish all day. So this is a worthy cause and it isn’t hard to help.
Take part in Australia’s annual clean-up day. Help not only our communities but also all of the nature around. It is a day to pick up any of the rubbish laying around in the streets and gardens. Every pair of hands helping counts in this cause. It won’t only be the Townsville City Council who is organising this event. Even places like Mac Donald’s are participating in this wonderful event. The official Council clean-up site will be at the northern end of Soroptimist Park, ROWES BAY, from 8 to 10:30am. After the clean-up there is done there will be a free BBQ for all participants. There is more to gain from this event than there is to lose. So why not help save our country even just a little. Farewell Sir Elton John Last International Tour
Some have suggested the “Goodbye Yellow Brick Road” song is about: - a want to be able to live the simpler life - a shift from all the fame, glitz and glamour - a want to go back to a simpler existence , away from urban life. The stars naming of the tour has various supposed meanings behind it. What we do know is this will be the music legends last international tour. Elton John who is a notable singer, songwriter, pianist, composer and who was knighted by the Queen of England (as he contributed significantly to Aids charity work through his music by raising funds) is set to grace us in North Queensland. This is not his first official visit to Townsville. This legend last played at the old North Queensland Stadium and will be the first major performance to be hosted at the newly constructed Queensland Country Bank Stadium. Elton John’s current trip down under is for his Farewell Yellow Brick Road tour.

5 Tips and Tricks to Feel Healthier This Month HEALTH AND FITNESS
Are you worried about your health? Do you want an easy way to start looking and feeling much healthier but you don’t know where to start? Well I have a few tips and tricks to help turn you into the best version of yourself.
1. LIIT (Low, Intensity, Interval, Training) Exercise in intervals. People tend to believe you need to spend hours working out, but all you need is to spend 15 minutes at a time at least 3 times a day of Low Intensity Interval Training approx. 45mins. Calisthenics is a great way to keep in shape and to build amazing strength. It requires no weights and does not require any fancy gym, so you can do it anywhere e.g. Beach, park or even in your own backyard
2. Sleep Yes, sleep is important in maintaining a healthy body and mind. It is important to make sure you are getting a comfortable sleep, so if you are waking up feeling tired it may be time to try a few things, it could mean you need to get to bed a little earlier and try sleeping for a maximum of 7 hours a night. You could also try having a stretch and fresh piece of fruit in the morning.

Diet Don’t worry, it isn’t as scary as you think. All you need to do is watch your food intake, as long as you are getting enough sleep and doing moderate exercise you don’t have to worry too much about what you are eating. Just as long as you are eating the right amount 3 meals and 2 snacks in between and drink plenty of water. You will start noticing you are hungry less often and you will also start feeling a lot more active.

Go for a walk Walking is an important part of maintaining a healthy lifestyle. 20 minutes is all you need to enjoy this activity, but it is safe to walk all day as well. You can do this literally anywhere you are and it is as easy as breathing. You can enjoy this exercise more if you are with friends or even your pet. If you are looking to test yourself, you could try walking up Castle Hill and enjoy a nice view of Townsville or you could walk from the strand to Pallarenda if you prefer the ocean view.

Rest Rest is just as important as exercise, this gives your muscles a chance to heal. You end up doing more damage than good if you do not give your body a chance to heal, same is true for your mind so give yourself a break when you are feeling burnt out. There are plenty of ways to unwind in Townsville. You could go to The Strand for a swim, or you could try heading to the Billabong Sanctuary to get a look at the beautiful wildlife.

The Strand
Castle Hill
One of the most well-known parts of Townsville is The Strand. It is lined with palm trees, stalls, BBQ spots, tables, showers, drink fountains and art. There are also parks for exercise and playing. This includes a water park as well. Aside from all of that you can take a dip in the cool ocean water for a swim.
Take to the higher ground and march up castle hill. There are fifteen official trails to choose from, that you can take all the way up to the top. There is also a road so you can drive up just to enjoy the view.
Paluma Palmetum Park Go for a walk looking at the entire collection of different flora from the tropics in one place. There are Savannah, Lagoon, Xerophyte and Rainforest areas to check out there.
Go have a trip in Paluma where there are cool crystal creeks to take a dip in and rainforest walks to trek.
Wallaman Falls
Saunders, Balgal and Toomulla beaches Take a trip further out of the core of Townsville to these beaches. Take a walk and explore around then later do some fishing and cook it up. Stay the night in a tent like a classic camping trip.

It is Australia’s highest permanent single drop waterfall. The falls are surrounded by rainforest and mist. There are also two walking tracks there to take. It isn’t recommended that you swim near the waterfall so use caution there. Other than that it will be a great view.

Full Throttle Theatre Company offers an Actor Training program over four, 6 week blocks from February to December for ages 5 to Adult. The objective of the program is to provide local actors and performers with a grass roots start in theatre training and ongoing skills and development training for those who chose to stay in the region to work in a professional capacity. Our theatre program consists of up to 5 Mainstage shows and 2 youth shows under our Props Youth Theatre arm. Subconscious Art STANLEY WANY ‘INWARDS’
Stanley Wany is a multi-disciplined artist whose focus is writing and drawing graphic novels. His practice also includes experimenting with painting, pen and ink, as well as digital collage. He combines figurative drawings with surreal collages featuring imagery drawn from symbolic and mythological sources. He holds a Baccalaureate on arts and design (bande dessinée) from the Université du Québec en Outaouais. In 2016, his first graphic novel, Agalma, received nominations for the Doug Wright Award (Toronto Comics and Arts Festival) for best alternative comic. The same year, he was invited to join the Quebecois delegation at the Festival de bande dessinée de Colomiers, in France. Past trips include the Helsinki Comics Festival and the Festival de bande dessinée d’Angoulême. In 2017, he participated in an exhibition on
journalism in graphic novels, at Amadora BD: International Comics Festival in Portugal. He spent a month at the Arteles Creative Centre as an artist in residence in May 2018 and in the latter part of the same year, He was awarded a creation grant from the Canada Council for the Arts for the production of his next graphic novel. Now he has decided to grace Townsville with his Australian debut show. Inwards refers in part to Wany’s method of working, which leans into the subconscious as both a source of ideas and a method of structuring the work. World Wildlife Day CELEBRATE AND RAISE AWARENESS OF THE WORLD’S WILD ANIMALS AND PLANTS
Historically, we have depended on the constant interplay between all elements of the biosphere for all our needs: the air we breathe, the food we eat, the energy we use, and the materials we need. However, unsustainable human activities and overexploitation of the species and natural resources that make up the habitats and ecosystems of all wildlife are endangering the world’s biodiversity.
What is World Wildlife Day 2020? On 20 December 2013, at its 68th session, the United Nations General Assembly proclaimed 3 March as UN World Wildlife Day to celebrate and raise awareness of the world’s wild animals and plants. World Wildlife Day has now become the most important global annual event dedicated to wildlife.
Nearly a quarter of all species are presently at risk of going extinct in the coming decades, and their demise would only speed up the disappearance of countless others, putting us in danger as well.
World Wildlife Day will be celebrated in 2020 under the theme "Sustaining all Life on Earth", encompassing all wild animal and plant species as key components of the world's biodiversity. Earth is home to numerous species of fauna and flora. This rich diversity, and the billions of years during which its myriad elements have interacted, are precisely what has made our planet inhabitable for all living creatures, including humans.

Set a goal to live your daily life with the smallest negative impact on the environment, wildlife or the planet’s biodiversity.
What you can do this March 3
Get to know your local animal and plant species under threat. Find out what can be done to preserve them.
Raise awareness about wildlife protection and engage with people through conversation, billboards and street parades.
Inform authorities if you have information on illegal logging, fishing and wildlife trafficking.
Visit your local zoo, wildlife park, museum or national park.
Collect signatures for a ‘say no to illegal wildlife products’ campaign.
Show your appreciation for rangers and those who are on the frontlines fighting to conserve wildlife.
Launch a new campaign linked to World Wildlife Day for local issues or species.
If you cannot donate any money then volunteer your time to your local conservation projects.
Encourage local schools, clubs, governments and businesses to discuss wildlife conservation and the ways to help the community.
Share your knowledge, passion and questions about wildlife conservation with your friends, family and community.

The Russian Ballet Returns Down-Under MOSCOW BALLET ‘LA CLASSIQUE’
The Legendary Russian Ballet returns to the Townsville Civic Theatre. Following 2018’s, Sell-Out performance of The Nutcracker, La Classique decided to return to perform Ballet’s ‘Most Loved’ fairy tale, Sleeping Beauty. Sleeping Beauty first premiered in 1890, at the Mariinsky theatre in Moscow, written by Ivan Vsevolozhky and Marius Petipa. It also features music composed by the one and only P. Tchaikovsky. La Classique Ballet was founded in 1990 by Elik Melikov and has since performed in cities around the world such as; Paris, Rome and Zurich. St Patrick’s Day 2020 CELEBRATE ALL THINGS IRISH ON MARCH 17
History St Patrick’s Day is a cultural and religious holiday held annually on March 17. Named after the patron saint of Ireland, St Patrick, the day proudly celebrates Irish heritage with food, parades, drinks, Irish lore and an assortment of green-coloured things. Today the holiday is celebrated around the world, with much of the modern traditions inspired by Irish expatriates in the United States. The first St Patrick’s Day parade was held in St Augustine, Florida in 1601. Who was St Patrick? Maewyn Succat was born in Britain in AD 390 and was kidnapped by raiders and sent to Ireland to become a slave. Legend has it, that during this period he began hearing voices that told him to return to Britain and then back to Ireland to spread Christianity.

As a missionary, progress was tough in a mostly pagan Ireland and he suffered beatings and imprisonment by both royalty and pagan chiefs. The “Lacroix Look” became quite popular during the late 80’s and early 90’s a defined luxurious look that relies on bright colours, bejewelled jackets and flamboyant skirts and dresses. Last month at London’s Fashion week. London based vintage designer Rixo showed off the reinvented look with great success. Therefore, the question is, will it last? Rixo’s reputation as an “It Brit” brand will no doubt introduce the look to a young, social media-savvy generation, and is likely to cement its resurgence over the coming season. Lacroix is one of, if not the greatest couturiers of the 21st century even competing with other popular fashion designer Chanel. This follows a high-profile outing for a creation from the house’s original designer, Monsieur Lacroix. Earlier this month, actress Florence Pugh, nominated in the best supporting actress category for her role in Little Women, attended the Bafta awards ceremony wearing a hot pink ruffled gown from the Dries Van Noten x Christian Lacroix collection, which launched last September. Take your dog on a trip to Maggie Island. Dogs are allowed on the ferry as long as they are muzzled. They are also permitted inside cars on the barge operated through Magnetic Island ferries. While it has plenty of different pathways to walk, be sure to stay away from the National Park which encompasses 54% of the island. Townsville, A Gaming City? TOWNSVILLES OWN GAME DESIGN COMP. (THINK BIG, PLAY BIG)
Townsville City Council has sparked controversy after announcing it will be the host to a brand new game design competition.
This exciting opportunity will allow individuals or groups to develop an original video game that will be played by more than 50,000 locals and visitors each year.
The announcement includes a mention of a mega games console, a new generation gaming console, which is said to be unique, as well as the first Australian owned and designed gaming console.
The winning game will be displayed on a large digital billboard in Flinders Square for a minimum of 12 months and be played on a mega games console. The console is the first of its kind in Australia and will be an exciting addition to the CBD.
The competition will be free to enter and could possibly introduce the next generation of gaming developers. Can the Australian Console prove competition for Sony and Microsoft as they also prepare to launch their respective consoles? There are currently no reports of any major game developing companies launching for the new platform, so the question is will the console have anything to offer that could allow it to compete with other franchises when it is released Competition details will be released in early 2020 outlining the full terms and conditions, incredible prizes and judging process. MAR10 Day CELEBRATING THE WELLKNOWN MARIO FRANCHISE. It all started in 1981 with the game Donkey Kong, starring Jump Man. The name of Jump Man changed to Mario when the landlord Nintendo’s warehouses showed up asking for his rent. His name was the name of the soon to be star, Mario. The massive world of Mario revolves around the main character Mario and later all of his friends too. First off the name of this fun holiday originates from the date March 10th. When abbreviated it becomes Mar 10 or MAR10, which looks like the name Mario. The Mario Franchise is a massive collection of games, merchandise, toys, television series and even a movie.
Mario moved on from his career in climbing ladders and jumping over barrels in 1983. This was the year that Mario became separate from Donkey Kong and became a plumber with his newly added brother Luigi. Also, for almost every single game platform in existence there will almost certainly be a Mario game for it. Everyone can take their pick from the classic 2D, multiplayer Mario party games to the 3D adventure. Ranging from old systems like Super Nintendo Entertainment System, GameCube, and Gameboy. Newer game platforms include Wii U, DS and Switch.
There is even something for the chefs. They can decorate all the food to be inspired by the gigantic, colourful and wondrous Mario world. The more hard-core and outgoing fans can throw entire events and parties to celebrate.
In previous years on MAR10 day Nintendo has done amazing things for the fans. In 2016 they put out a video of a person dressed up as Mario walking through an office turning objects into Nintendo 3DS consoles.
But that is not all you can do. People also play the many fun and unique board games.
In 2017 they gave away free Mario themed frames on Facebook. Additionally, they placed multiple games on discount on Amazon.
When all of the games are prepared the many fans get out their favourite Mario character’s outfit to dress up in.
In 2018 Nintendo and Google worked together to add Mario into Google maps. The users can drive around as Mario. In 2019 the company put up a bonus promotion system with each game bought the customer would get points. There was another sale for the Mario games. So come along this March and join in the celebrations. Have some fun with friends and family. QLD’s Urban Legends CREATURES OF URBAN MYTHS pursuers. Altogether, they describe it as a hideous monster of an unearthly character and ape-like appearance.
Kilcoy Yowie The yowie is Australia's big foot standing upright at between 2.1 and 3.6 m. The yowie's feet are described as much larger than a human's, but alleged yowie tracks are inconsistent in shape and toe number, and the descriptions of yowie foot and footprints provided by yowie witnesses are even more varied than those of bigfoot. The yowie's nose is as wide and flat. Behaviourally, some report the yowie as timid or shy, while others describe the yowie as sometimes violent or aggressive. The Aborigines believe in the yahoo. This being they describe as resembling a man of nearly the same height as the yowie, with long white hair hanging down from the head over its features. The arms are as extraordinarily long, furnished at the extremities with great talons. Kilcoy is a small town west of Caboolture QLD, the first settler in the region was Sir Evan Mackenzie who arrived in 1841 and named his landholding 'Kilcoy' after his family estate in Scotland. It is the yowie capital of Australia, and to prove it, it has a 3m statue sitting in the Apex club’s Yowie Park in honour of the creature. The legend of the yowie goes back generations and even further with Aboriginal accounts. Early timber cutters and farmers claim to have seen it in the hills surrounding the town since pioneering times where it lives today. A well-known account is two teenagers who saw a 3 m tall yowie in October 1979. The boys shot at the creature and it ran away leaving a sulphurous smell behind. The two boys tracked the creature for some time until they realized that it had doubled back and was tracking them. The teenagers told their schoolteacher who visited the location where the boys had their encounter and made plaster casts of the footprints that measured 50cm long and 15 cm wide. The last reported yowie sighting in Kilcoy was in May 2007 by University of Queensland student Daniel Raaen.

Bunyips, according to Aborigines, can swim swiftly with fins or flippers, have a loud, roaring call, and feed on crayfish, though some legends portray them as bloodthirsty predators of humans and livestock, particularly of women, children, and cattle that inch too close to the edge of the water in the darkness of the night.
Mulgildie Bunyip The bunyip is a large mythical creature from Aboriginal mythology. Legend says that a man named Bunyip once broke the Rainbow Serpent’s greatest law by eating his totem animal. After that, he was banished and transformed into an evil spirit that lures tribesmen and their animals into the water to feast. The bunyip is said to have supernatural powers. It can alter the water level, cripple victims with its roar, and hypnotize humans to act as its slave. Descriptions vary widely. The earliest one is that it looks like an enormous sea star with countless eyes, while others claim it has one large eye on its head and a mouth on its stomach. The bunyips presumably seen by witnesses, according to their descriptions, most commonly fit one of two categories: 60% of sightings resemble seals or swimming dogs, and 20% of sightings are of long-necked creatures with small heads; the remaining descriptions are ambiguous beyond categorization. The seal-dog variety is most often described as being between 1.22 and 1.83 m long with a shaggy black or brown coat. According to reports, these bunyips have round heads resembling a bulldog, prominent ears, no tail, and whiskers like a seal. The long-necked variety is allegedly between 1.52 and 4.57 m long, and is said to have black or brown fur, large ears, small tusks, and a head like a horse or emu, an elongated, maned neck about 0.92 m long with many folds of skin, and a horse-like tail. Bunyips have been described by aboriginals as amphibious, nocturnal, and inhabiting swamps, billabongs, and waterholes. JWAG 25/02/2020 Copyright
The first written description of the bunyip came in 1845. It claimed the creature laid massive pale blue eggs in platypus nests, had long sharp deadly claws (though it prefers to kill its victims by hugging them to death), a brightly coloured chest, and an emu-like head. This is why some people believe the Bunyip was only a southern cassowary or an Australasian bittern, which is sometimes referred to as the Bunyip bird. In 1851, a newspaper called The Australasian published a report about a bunyip being speared after killing an Aboriginal man. The creature was 8.38 m long and 3.05 m in width. Aboriginal people used to visit the sight of the creature every year and outline its form, but those outlines have been lost over time. Bunyip Hole in Mulgildie is a scene of mystery. Tales of a creature lurking the depths of a watering hole in the Three Moon Creek system have a long and ancient history. Legend has it that both livestock and people have disappeared in its waters never to be seen again. Theses disappearances at the hole have locals concerned about what is below the surface of the water. Tales have developed over the years of strange sightings, frightening noises, and eerie situations at the hole, created by a dangerous monster. Upon knowing of the strange occurrences, Aboriginal tribes avoided camping near the hole in fear of experiencing the same fate as the cattle. Some Aboriginal elders believe Bunyip Hole is connected to an ancient volcano with a vast network of underground caverns (or magma tubes) passing through Tellebang Mountain and stretching as far as Ban Ban Springs. Some elderly locals recall the water hole bubbling each time the mountain rumbled. Bunyip Hole is located about 12km from the town’s centre.

Black Panthers in Nanango
Kingaroy Cave Monster There is a cave monster in Booie that was reported back in June the 3d 1954, 10 miles north-east of Kingaroy, remains a mystery to the people of the town, despite searches by armed bushmen. A fortnight ago three local teenage youths were walking on the property of a grazier, Mr J. Perrett. According to him, the local boys came across a cave about five miles north of his house. They told him they heard a strange growling from inside. They said that something as tall as a man with two hairy legs and a tail reaching to the ground and came out of the cave. It was covered with hair or fur of a dull, grey colour. Mr Perrett said the youths explained that it appeared to have an apron hanging in front. The youths made off smartly with the monster following for a short while. Search parties have discovered dingo and kangaroo tracks in the vicinity of the cave. Cynical bushmen believe the youths saw an angered old kangaroo, which could be taller than a man and which emits growling noises when disturbed. There are some people, who believe that the cave monster is in fact the yowie. The Gympie MP Tony Perrett in particular believes so, the same man whose property the three teenagers witnessed the creature near. Mostly because of the foul smelling scent it gives of, eye shine, towering height, hairy figure, and grotesque grow. The story is remembered by the locals to this very day.

Years ago, a Cooran resident saw something bent over in a bushy off-leash dog park at Pomona that could only be described as a big cat. Walking her two Maltese terriers on a sunny Saturday morning, Ms Martin caught site of a black creature, crouching in vegetation about 30m away. She said that it was dark and as big as a medium-sized dog. But there was nothing about it that was a dog. She said it had been at least five times the size of a domestic cat. South Burnett residents are adamant they have witnessed a black panther walking around Nanango, or possibly Blackbutt. Stan Dennis told the South Burnett Times in 2009 one of his fondest memories was of the panther. Stan said that the cattle and dogs were being attacked by the panther. The panther gave Stan and his friend John Neal, the perfect excuse to play a practical joke on the town. A friend of theirs had a big black great dane and a little pup. They took photos with the big dog lying down next to the little cub. The photo showed Stan and John supposedly darting and tranquilising the famous panther. The caption underneath said the pair released the panther back into the wild as a tourist attraction for the future. When the story and photo appeared in the South Burnett Times people stopped seeing the panther and the cattle were not being attacked anymore. Former councillor Barry Green said sightings of a panther in Blackbutt dated back to the 1980s, but he had only ever encountered feral cats.

The Yarri (Queensland tiger) The Queensland tiger is a cryptid reported to live in the Queensland area in eastern Australia. Also known by its native name, the yarri, it is described as being a dog-sized feline with stripes and a long tail, prominent front teeth and a savage temperament. It has been hypothesized to be a survivor or descendant of the large predatory marsupial Thylacoleo, officially considered to be extinct, or possibly a large feral cat variant. The earliest documented witness reports of the Queensland marsupial tiger date from 1871, with indigenous traditions of the yarri preceding these. Reports indicate that it is fast and agile. Thylacoleo, an animal of similar size and predatory habits, did live in Australia as recently as the late Pleistocene period, perhaps coexisting with the aborigines. However, scientists estimate that Thylacoleo became extinct 30,000 years ago. Modern sightings of an animal described as remarkably like Thylacoleo have led some researchers to speculate that a small relict population has somehow survived in remote areas. Cryptozoologists who promote the theory of survival of the Tasmanian tiger or thylacine Thylacinus cynocephalus, a Thylacinid, and also currently accepted as extinct, favour proposed survival of the Queensland tiger. The fundamental difference between the two cases, however, is that the last Tasmanian tiger in captivity died in 1936, and the species was not officially declared as extinct until 1986. This makes the prospect of species survival of the thylacine more likely than that of Thylacoleo.

Megalania The creature in question went by the name of Megalania prisca, a huge, vicious monitor lizard that roamed Australia at least as late as 40,000 years ago. It got its name thanks to one Richard Owen, a palaeontologist of the 1800s. He was the man who has gone down in history as coining the term “Dinosauria,” or, “terrible reptile.” As for Megalania prisca, it very appropriately translates to “ancient giant butcher,” and/or “ancient great roamer.” It was in late 1968 that Steve, serving in the Australian military at the time, was taking part in an exercise in Queensland, specifically on what was termed the Normanby Range. One part of the exercise required Steve’s unit to negotiate a particularly treacherous and dense swampy area. As the team did so, they came upon something highly disturbing: the viciously ripped to pieces body of a cow. Not only that, something had dragged the cow for a considerable time, before savagely eating huge chunks out of the unfortunate animal. More significant, lizard-like prints were found in the muddy ground – all of which were close to two feet in length.

METHOD Step 1. Preheat oven to 180c/160c fanforced. Line a 12-hole (1/3-cup-capacity) muffin pan with paper cases.
INGREDIENTS 2 x 23g Packets mini Oreo cookies 1 1/3 cups self-rising flour 1/3 cup Dutch-processed cocoa powder 1/2 cup brown sugar 2 x 120g tubs apple puree 1/3 cups vegetable oil 1 teaspoon vanilla extract 1/3 cup soy milk 1 teaspoon bicarbonate soda 1 tablespoon apple cider vinegar 250g Nuttelex original dairy free spread 1 teaspoon vanilla extract 2 2/3 cups icing sugar mixture
Step 2. Reserve 14 Oreo cookies. Roughly chop remaining cookies. Sift flour and cocoa into a large bowl. Make a well in centre. Add apple puree, oil and vanilla to well, without stirring. Place milk in a jug. Add bicarbonate soda, then vinegar. Lightly whisk with fork until frothy. Add to well. Stir until mixture is combined Step 3. Divide mixture evenly among prepared pan holes. Bake for 15-17 mins or until cakes spring back when lightly touched. Stand in pan for 5 mins. Transfer to wire rack to cool completely. Step 4. Make chocolate frosting. Using electric mixer, beat Nuttelex, vanilla, icing sugar mixture and cocoa until light and fluffy. Spoon chocolate into a piping bag fitted with 1.5cm fluted nozzle. Step 5. Remove and discard icing from 2 of the reserved cookies. Finely chop to coarse crumbs. Pipe frosting onto cupcakes. Top with remaining reserve cookies. Sprinkle with cookie crumbs. Serve!

Colcannon A TRADITIONAL IRISH SIDE DISH FOR ST PATRICK’S DAY
PREP: 15 MINS SERVES: 6
METHOD 1. Steam the potatoes in their skins for 30 mins. Peel them using a knife and fork. Chop with a knife before mashing. Mash thoroughly to remove all the lumps. Add 1 stick of butter in pieces. Gradually, add hot milk, stirring all the time. Season with some black pepper. 2. Boil the cabbage in unsalted water until it turns a darker colour. Add two tablespoons of butter to tenderize it. Cover with lid for 2 minutes. Drain thoroughly before returning it to the pan. Chop into small pieces.
INGREDIENTS
1 1/2 kg potatoes, scrubbed
2 sticks butter
1 ¼ cups hot milk
Freshly ground black pepper
1 cabbage, cored and finely shredded
½ kg ham or bacon, chopped
4 spring onions, finely chopped

Chocolate Crackle Peanut Caramel Slice CRUNCHY, CARAMEL, CHOCOLATE SALTY HEAVEN!
PREP: 16 mins SERVES: 16
METHOD 1. Grease and line a 20 X 30cm lamington pan with baking paper, allowing the long sides to overhang. 2. Sift the cocoa powder and icing sugar together in a large bowl. Add the rice bubbles and peanuts and toss to combine. Add the copha and stir to combine. Spoon into the prepared pan. Use the back of a spoon to press evenly. Place in the fridge for 1 hour or until firm.
INGREDIENTS
½ cup cocoa powder
1 ½ cups icing sugar mixture
5 cups rice bubbles
1/3 cup roasted salted peanuts, chopped
250g Copha, melted
2 x 380g caramel top ‘n’ fill
2/3 cups smooth peanut butter
150g milk chocolate, melted
3. Combine the caramel filling and peanut butter in a medium saucepan over medium heat. Cook, stirring constantly, for 5 minutes or until mixture boils and thickens. Remove from heat. Spread mixture evenly over the prepared base. Place in the fridge for 2 hours to set. 4. Place the chocolate in a heatproof bowl over a saucepan of simmering water. Stir with a metal spoon until chocolate melts. Pour over the caramel mixture and spread to coat. Place in the fridge for 1 hour or until set. Cut into squares to serve.

METHOD Step 1. Preheat oven to 180c/160c fan forced Step 2. Line twelve 80ml (1/3) cup muffin pans with paper muffin cases Step 3. Place ice-cream and flour into a large bowl. Stir until well combined.

250g Chopped fresh strawberry’s to serve (optional)
Step 4. Spoon mixture evenly into the 12 muffin pans Step 5. Bake for 12-15 minutes or until a skewer inserted into the centres comes out clean. Step 6. Transfer each muffin to a wire rack to cool completely. Step 7. Top each muffin with a scoop of ice-cream, strawberry’s and sprinkles, if using. Step 8. Eat!

Malted Milk Chocolate Chip Cookies ADD AN EXTRA LAYER OF DECADENCE TO A CLASSIC RECIPE
PREP: 15 mins SERVES: 36 cookies
INGREDIENTS
2 sticks unsalted butter, softened
¾ cup brown sugar
¾ cup granulated sugar
2 eggs
2 teaspoons vanilla extract
½ cup (rounded)malted milk powder
2 cups plain flour
1 ¼ teaspoon baking soda
1 ¼ teaspoon salt
1 bag milk chocolate chips
the malted milk powder and beat until combined. 3. In a separate bowl, sift together the flour, baking soda and salt. Add to the butter mixture, beating gently until just combined. Add the chocolate chips and stir in gently. 4. Drop the mixture by teaspoonful on an ungreased baking sheet, leaving plenty of space between the cookies (they spread out quite a bit). Bake for 9 to 11 minutes. The cookies will be very flat and very chewy. Allow to cool slightly before removing from pan.

Moroccan Lamb ON COUSCOUS
METHOD Step 1. Place stock in a frypan over a high heat. Bring to the boil. Remove from heat. Add couscous. Cover and set aside for 5 mins. Step 2. Meanwhile make Moroccan lamb: Place seasoning mix and coriander on a board. Mix together. Drizzle lamb with 2 teaspoons of oil. Roll in the spice mixture to coat evenly Ingredients 3/4 Cup Massel chicken style liquid stock 3/4 Cup couscous 2 Tomatoes, roughly chopped 1 red onion, diced 400g canned chickpeas, drained, rinsed 1/2 Cup coriander leaves, roughly chopped, plus extra to serve 1/2 Half a bunch of spinach, shredded 2 Teaspoons finely grated lemon rind 1 Tablespoon extra-virgin olive oil Lemon wedges to serve 2 Tablespoons Moroccan seasoning mix 2 Tablespoons fresh coriander leaves, finely chopped 2 x 200g lamb back straps (eye of loin)
Step 3. Heat 1 tablespoon of oil in a frying pan over a high heat. Add lamb. Cook for 1 minute 30 seconds on each side and 20 seconds on each end. Transfer to a plate. Cover loosely with foil. Set aside for 4 minutes to rest. Step 4. Meanwhile fluff the couscous with a fork. Place tomato, onion, chickpeas, coriander, Spinach and lemon rind in a bowl. Add couscous. Toss. Season. Drizzle with oil. Step 5. Slice lamb. Place couscous on a serving plate. Top with lamb and drizzle with resting juices. Sprinkle with extra coriander and serve with yoghurt and lemon wedges. Step 6. Enjoy!

10 lemon myrtle leaves
pierced with a skewer. Remove the quince from the syrup and set aside to cool completely. Continue to simmer the syrup for another 30 minutes or until reduced to about 600 ml. Pour into a jug and set aside to cool. Cut each quince wedge into 3 slices. Preheat oven to 170°C (150°C fan-forced). Grease a 22 cm spring form tin with melted butter and line the base with non-stick baking paper. Place the flour, sugar, butter, eggs and cooled poaching syrup in the bowl of an electric mixer and beat on low speed until combined. Increase the speed to high and beat for 3 minutes or until the mixture is very pale and creamy.
