Foshan City Townsville’s sister city
Foshan is a prefecture level city located in Guangong province China with a population of more than 7 million people. Foshan is made up 5 districts: Chancheng, Gaoming, Nanhai, Sanshui and Shunde. Foshan has been a famous producer of ceramics for hundreds of years, more recently though it is also producer of furniture, machinery, beverages, biotechnology, automobiles and is responsible for producing more than half of the worlds air conditoners and refrigerators. Foshan is considered the home of Cantonese versions of chinese opera, kungfu and lion dance. Foshan has a thriving tourism industry with many lush picturesque maountains lakes and valleys, and is home to some of China’s most famous martial artists. Some famous sights to see in Foshan include: Mount Xiqiao Mount Xiqiao is an extinct volcano that has been designated as a national forest park and national geological park covering an area of 14 square kilometres. Featuring 10 scenic areas consisting of 72 peaks hundreds of natural springs and over 40 natural caves. Some sights include the 66m statue of the goddess Guanyin, Baofeng temple and the Xiqiao Cloud waterfall (dashing torrent waterfall) listed as one of the 8 sceneries of Guangzhou since the 1800’s. Bruce Lee Ancestral House and Bruce Lee Paradise The Bruce Lee ancestral home and ancestor hall were built by Bruce Lee’s grandfather. Bruce Lee only lived here for a short time in his youth. The humble house is composed of a bedroom, hall, kitchen and dooryard (garden by the front door) covering an area of 51m2 and furnished simply.The interior now holds wall hangings with a brief introduction to Lee’s life experiences and several still taken from his movies. Bruce Lee Paradise is a sparwling scenic area conisting of mountains, lakes, pavillions, a much larger commerative museum to Bruce Lee and the worlds largest statue of Bruce Lee Author: LC 29/05/19
Foshan Ancestral Temple Foshan ancestral temple now the Foshan municipal musuem consists of the original taoist temple established in the 11th century dedicated to the northern God Beidi. The main hall (Zheng Dian) where you can see stunning traditional architectural decoration made from many form; pottery,wood carving, brick carving and plaster carvin. The most famous ancient theatre stage in southern china where you can see traditional lion dances. The Confucian temple built in 1911 for people to admire the ancient educator Confucius. The Huang Feihong Memorial hall and Ip Man hall to commemorate two Foshan born martial artists Huang Feihong (Hung Ga style) and Ip Man (Wing Chun Style) where you can learn about their lives and importance to the area and also see martial arts shows. Ancient Nanfeng Kiln The Ancient Nanfeng Kiln is China’s oldest survivng kiln that still is used to produce stonewares to this day. Built in the Ming Zhende peroid (1506-1521) this Dragon Kiln (built following the slope of a hill making it resemble the shape of a flying dragon) has been producing Shiwan ware pottery for over 500 years. Visitors can watch skilled workers produce pottery or even try their hands at making their own and having it fired in the ancient kiln. Sanshui Lotus World The largest ecological theme park dedicated to lotuses in the world. Featuring more than 500 species of lotus including the rare species space lotus, king lotus and ancient lotus. Scenic walks and gardens and atheartre where the poetic song and dance drama of the lotus fairy is performed daily
Trending issue close to home Micro plastics and the Great Barrier Reef
Buzz word ‘micro plastics’ so what are they? Plastics are essentially a non-biodegradable and indigestible man made material. Once produced plastics are impossible to get rid of. Micro plastics are tiny pieces of plastic less than 5mm in size that are classified as either primary or secondary. Primary sources are produced and meant for external human use. And, secondary sources arise as a result of the breakdown of larger plastic debris. Primary sources start out already small and examples of these micro plastics include micro beads found in cosmetics such as toothpastes, skin cleansers and body exfoliates, also glitter and synthetic fibre from clothing and items such as the yellow fibre on the outside of a tennis ball. Other sources of micro plastics that start out as larger plastics include milk bottle lids, plastic cutlery, fishing gear and plastic bags. In the environment plastics are broken down by sunlight and degrade by the mechanical impacts of waves and ocean currents. Both primary and secondary sources of micro plastics once they have entered out ocean waterways they have been found to affect both plants and animals.
How is our local natural wonder the Great Barrier Reef fairing up? The Great Barrier Reef is one of the seven wonders of the natural world and can be described as the world’s largest coral reef. The Great Barrier Reef contains an abundance of marine life including corals, marine plants, and fish and spans the coast line of Queensland, Australia. Global warming and coral bleaching have been raised as threats to our local natural wonder. More recently the impact of micro plastics has been prominently featured in the news. Coupled with the changes to legislation for the banning of single use plastic bags and the popping up of recycle depots under the containers for change scheme,

here in Australia, micro plastics as a trending issue are again brought into the spotlight. Locally we have the presence of the Australian Institute Marine Science and the Great Barrier Reef Marine Park Authority which are agencies dedicated to research and preserving our local natural wonder. Using science backed by government agencies, research institutions and universities this will afford research, monitoring and reporting to ensure preservation of our local natural wonder. AIMS conduct research on micro plastics in the marine environment by utilising techniques and equipment focussed on analysing water samples.
(https://www.aims.gov.au/wa ter-quality/plastics) Research and analysis is most valuable as it is helping to set a baseline for future reporting to determine values of variance in levels of micro plastics.
Local National Global Original sources of the micro plastics found in the Great Barrier Reef cannot be confirmed but plastics that have entered the ocean could come from sources such as littering, as storm water waste and from shipping activities. Once plastics have entered in to the ocean they can be transported around the world by currents. Micro plastics have been recorded as being present in bite sediment, sand, inside marine animals due to ingestion and entangled around animals, and, as a part of coral as the growth occurs around where the plastic is lodged.
As individuals we can employ reduce reuse and recycle in our daily lives to reduce the foot print of mankind on our natural environment. Locally in our community we can band together to support the recycling of plastics to assist in preventing them ending up in our oceans and impacting the Great Barrier Reef. We can also play our part in collecting plastic debris from the beach when the ocean tides return it to land. Such an activity is leading by example as using initiative to instil the idea of positive role modelling of practices for our future generations. Nationally we can all participate in schemes that support the banning of single use plastic items to reduce consumption and manufacturing also, by being conscious and actively participating in recycling through the containers for change scheme and appropriate disposal of plastic waste. Or why not sign up for the next National Clean Up Australia Day to help reduce land based waste entering out oceans. Global contribution is required to protect specialised eco systems such as the Great Barrier Reef long term. This requires support of changes to legislation and promoting micro plastics as a real issue that requires a global response to action necessary change. It is not known if the current micro plastics ‘human footprint’ will remain unchanged. However, reducing the footprint may assist and prolong the long term effects of micro plastics on the Great Barrier Reef.
Micro plastic contamination occurs worldwide and they pose a serious threat to humans as well as we are at the end of the food chain. Human consumption and food safety concerns have become a part of the debate on micro plastics. Initially this was sparked from the findings of plastic leaching into bottled water but with findings where contamination to marine animals such fish as it has been dubbed a ‘threat’ to harvesting food from a natural environment. Awareness is key to taking action at individual, local, national and global levels.

Palm Creek Folk Festival Annual Camping Weekend Event
A Brief History Summary
What You Will Need
Palm Creek Folk Festival is a community based, not for profit, family friendly annual camping and music festival.
For the Palm Creek Festival, you will need to prepare for a variety of situations regarding the weather. It is recommended that you pack the following:
First established in 1991, the Palm Creek Folk Festival quickly grew to be one of the biggest festivals in the North Queensland region. The festival found it’s home at the Mountain View Eco Park in 1995 and has been run by the Townsville Folk and Acoustic Music Club since 2000.
2010 saw the Palm Creek Folk Festival win the Townsville City Council’s Arts Award for Event of the Year. Since then, the venue holding the festival has been selling out to full capacity!
Your Weekend Away Palm Creek Folk Festival will be hosted at the aforementioned Mountain View Lake Eco Park located 40 kilometres south of Townsville. To get there, take the second right after the small Palm Creek bridge. The festival offers a variety of music and performances across 5 stages and 3 days. The camp grounds near the festival are laid out by street names to help you navigate. Campers are welcome to stay before and after the festival, however you will not have access to any extra facilities provided and additional charges will apply.

Cassowary Conservation They need help displaying signs promoting the campaign and sometimes holding special events. Local Aboriginal elders are also trying to help with the situation, a lot of them are very upset with the dwindling numbers. Indigenous rangers are helping to track the cassowaries movements and help to preserve their habitats.
The Australian Southern Cassowary is in danger, its numbers are estimated to be around 1000 in the wild. Human expansion into their habitats and tropical cyclones destroying their food have caused their numbers to drop. Cassowaries are a keystone species, meaning they play a vital role in the ecosystem and without them the ecosystem would dramaticly change or would cease to exist. Cassowaries are Australia’s rainforest keystone animal, they eat fruit from the local plants and in doing so spreads the seeds from the fruit, some of these seeds can only grow if they have been in the stomach of a cassowary first, without them the rainforests would be in serious trouble.
Rainforest Rescue has started the Save the Cassowary campaign in north Queensland with the help of local governments and councils, Zoos and Aboriginal Corporations. Proposals to lower the speed limit and build cassowary crossings under the roads around cassowary hot spots have been considered by the Queensland Government. Zoos particpating in the campaign are

It is the third largest bird in the world, following the Emu and the Ostrich.

Adani mining An important debate For the moment, Adani mining is breaking news. People are talking about Adani everytime, it seems like it’s a big issue for the community as well as the government. When I look at Adani mining company, it is a large, successfull company and can offer jobs to many people especially for the local s and can pay big taxes to the government, this is good for the development but on the other hand can be dangerous for the environment. There are two groups behind the scene, one group supports Adani and other one doesn’t, so we can ask ourselves which one is right and which isn’t. But if we look at some evendence about mining, from there we can get some idea if it is bad or good for us also by doing some research. According to the statistics, mining is the most dangerous job causing more deaths and is also bad for our environment. Most of time, mining areas face landslides because of the way the miners maltreat the land and then when it is rain season, landslides can happen anytime and people who live nearby can loose their lives. I think this is not just bad for people but also for the environment because when they work, they dig many many holes as you can see on the image and then after work they leaves some toxic water which will be harmful and can be dangerous for people, animals and even for the plants in the future, this is so bad. Everybody wishes to live a good life, little by little people will know about it and choose which side is the best, either support or not support Adani. To be honest, as a writter of this, I don’t support Adani.

Townsville Show A family-friendly annual event
One of the biggest events the citizens of Townsville always look forward to every year is the Townsville show. Each year at the end of June – early July, The Townsville Show is hosted at the Townsville Showgrounds located at 72-104 Ingham Rd, West End. Over a 4-day period, the Townsville Show provides nonstop entertainment including many colourful and adrenaline-pumping rides, competitions including arts and crafts, caged birds, wood chopping, photography and many more. There are many historical and educational displays and exhibitions (those of which are subject to change every year). Last year, there was a World War II exhibition with dummies and people dressed up alike in a room simulating a war bunker and the weapons used by soldiers during the war. Throughout the evening, scheduled events including a demolition derby, the Dome of Death which displays motorcyclists in a spherical mesh dome and a fireworks display occur. Countless themed showbags are also available for sale for both kids and adults alike to provide many novelties based on your interests, also including toys and lollies.

Reduce Reuse Recycle Some Basics
Common items found in homes include clothing, furniture, small appliances, tools, cooking equipment, white goods and items used for travel such as scooters and bikes. All of these items have a certain „life expectancy‟as man made products. Some are vital , some make life easier through their use and some fill a want or alternative need. Such items no matter what purpose they serve end up as waste at some point. Most of these such items can be reused and repurposed to extend the length of time they are used before being discarded as waste. Rethinking your needs and wants ensures a conscious approach to limiting the impact on the environment. Conscious decision making can lead to lifelong changes being made at an individual level but it can also allow you as an ethical decision maker and being proenvironment to pass on your skills onto those around you. You can encourage and teach others how to take advantage of reducing waste to benefit the bank balance and the environment.
The 3 R’s - the basics Reduce – think before you consume and carefully consider the purchase of new items before committing to buying them Reuse – invest in reusable items, repurpose belongings or consider purchasing preloved items Recycle – separate waste so refuse can be disposed of responsibly, take advantage of recycle centres or donate items to be reused as opposed to dumping them

Reduce Consider purchases carefully – Is the item a want or a need? What is the life expectancy of the product? Do I have the same or similar item that I can repair for use? Do I have an item that can be repurposed to suit the need or want? Can I borrow or loan the item? Waste reduction can come from reducing the purchase of manufactured items. Swap or borrow are concepts of good examples of reducing waste. If you are interested in swapping items check out newspaper classifieds, Gumtree or Facebook for advertisements. People often post items to trade in exchange for something else. This is a good opportunity to employ the 3 R‟s and may save you money. Places to borrow in our community include the local library and Toy library. You can gain access to a variety of books, magazines, DVDs and equipment for school with a membership. There are 3 main locations to access the library and access to a mobile library in the Townsville community. Reuse Have you heard of that saying “One person‟s trash may become another‟s treasure” it certainly rings true for thrift shoppers. The humble charity store is an excellent go to source for engaging in reuse either as a person donating or a person seeking preloved items to reuse. There are many charity stores around Townsville including St Vinnie‟s, Endeavour, Lifeline and Red Cross. You will often find donation bins at the retail outlets, be sure to contact the store direct to find out where larger items can be taken to be donated. It‟s also a good idea to consider what items are unsuitable for donation. Items for reuse can also be found at Reuse Centres which are commonly located at the local refuse site. These centres are not for profit and your reusable household items are welcome to be dropped off at these sites instead of dumping them as landfill. Two sites are available in Townsville so check your Local Council website for details. Also on the website is information for the current scheme Kerbside Collection. This benefits those who are unable to take their items directly to the refuse sites.
One can also consider the concept of repurposing. Repurposing is the art of reusing an item for a new purpose. You may be inspired to be creative and or practical. Consider reusing damaged clothing for rags or turning an old wheelbarrow into a pot plant container. You may even like to get in contact with your local public school or community youth group. These organisations may accept donations of items to use in activities such as magazines to create story boards or old toys in creative play. You can also look to the internet or in books for repurposing ideas. Recycle Take advantage of the recycle bin provided at your home. It‟s a great start in making a conscious effort to ensure refuse is disposed of responsibly. Items from our household recycle bins ends up at a recycle depot and is then sorted and processed. Learn more about what recyclable materials can be placed into your bins at home by visiting the Townsville City Council website www.townsville.qld.gov.au Some items that are recycled at these larger depots are used to create new products. For example old tyres can be broken down into material that is then recycled for use as manmade surface covering at local parks. If you are keen to earn a few dollars for recycling consider getting on board with recycling by taking advantage of the Containers for Change scheme. Eligible containers can be exchanged for 10c per piece. These centres employ sustainable practices for recycling the items exchanged here. Some of the plastics can be broken down and remade into new items such as park benches. Recycling waste responsibly also means that we reduce waste ending up in our water ways and recreational areas. When out and about look for recycle bins to dispose of your rubbish responsibly, these waste disposal systems are readily accessed at the Strand and the River way complex. Rethink waste to support sustainable living and to reduce your human footprint.

Robert Towns And the Founders of Townsville
Robert Towns born 10 November 1794 in Long Horsley, Northumberland in England. He was a merchant and entrepreneur and the founder of Townsville. Married to Sophia Wentworth half sister of William Charles Wentworth who was an Australian explorer, journalist, politician, author and one of the leading figures of early colonial New South Wales.
In 1843 Towns was given charge of the Sydney agency of Robert Brooks’s company Robert Brooks & Co. Late in 1843 Towns established his own company Robert Towns & Co. but kept a good business relationship with Robert Brooks which helped in his future success. His first investment was an old ship called the Elizabeth, built in 1816. Older ships became a preferance for his shipowning.
He was apprenticed at a young age to the master of a collier (a ship that carries coal). At night he studied navigation to try and improve his position in life. By the age of 17 he had become a mate and two years later he became the master of a brig in the Mediterranean sea trade.
In 1844 he sent the Elizabeth to New Hebrides (Vanuatu now) to collect sandalwood to transport and sell in China which was the start of his sandalwood trade operations. He later bought a wharf at Millar’s Point, Sydney and named it Town’s Wharf. He sent the rest of ships to New Caledonia and New Hebrides to continue his Sandelwood trade.
In 1827 he made his first ever voyage to Australia in the Bona Vista arriving in Sydney and becoming a regular trader to Australia.
In 1850 had set up depots at New Caledonia, the Isles of Pines near New Caledonia, and Aneityum to prepare and store sandelwood, beche-de-mer (smoked sea cucumber) and coconut oil for transport to China, the ships would then sometimes bring back tea, rice and sugar from ports in Asia. Some of these were highly profitable, especially during the gold rush.
In 1838 he started captaining a ship called the Royal Saxon for a london merchant, banker, shipowner and member of parliament Robert Brooks. The Royal Saxon was inovled in starting the battle of Chuenpi and accidentally starting the First Opium War by breaking the blockade of Canton and taking aboard a cargo of tea.
By1850-55 Towns had so much going on, his buisness had expanded to Europe, the east and India and he was one of the largest land owners, he was struggling to keep up with

everything so he took (Sir) Alexander Stuart as a buisness partner. Sometime in the mid 18th century Towns decided to get into the whaling Buisness In 1860s Towns expanded into Queensland buying land in the Darling Downs and more in North Queensland. By 1867 he alone held 42 pastoral runs that were around 2000 sq. miles in the North and South Kennedy district. 94 runs around 1200 sq. miles he owned with Alexander Stuart in the Burke District and 60 runs around 400 sq. miles he owned with Stuart and Charles Cowper in the Warrego District. During the American Civil War there was a world shortage of cotton because of blockades at Confederate ports. So the Queensland government encouraged the cultivation of cotton and Towns jumped at the opportunity and started a cotton plantation called Townsvale (Now Veresdale) near Brisbane 1863. There had been a lot of attempts to grow cotton in Australia before then but Towns was the first to do it on a large scale. At some point in 1863 Robert Towns had pastoral interests in Fanning Station, Woodstock, Inkerman, Jarvisfield and other stations in the burdekin area, it was found that hauling goods from Bowen to these stations became troublesome when they suspected that there was a coast twenty miles away, Robert Towns and his partner in this venture, John Melton Black sent Andrew Ball and Mark Watt Reid to explore the area and discovered Ross Creek and Cleveland Bay in 1864. They then started the forming of the settlement now known as Townsville. In 1865 they had built a wharf, a woolstore and a boiling-down works.
where he made money as a carrier. In 1855 he opened up a theater in melbourne, the Theatre Royal. The cost of the construction for the theatre ended up bankrupting him. In 1861 he formed a group to go North in Queensland to take up pastoral land. On the 18th of April they made it to Bowen and founded Fanning Station and later taking another large area of land, which is known as Woodstock. Harsh conditions of North Queensland forced a lot of land owners to surrender their lands to the banks. He later became a general manager for Robert Towns pastoral interests including Fanning Station and Woodstock Station. The headquarters for it were set up at Woodstock but hauling cargo to and from Bowen became troublesome which led to them discovering Townsville. Black erected the first wharf and built the first house and supervised the construction of the first buildings. He was a merchant, stockman, surveyor, newspaper editor and pioneer of the meat industry in Townsville. He became the first mayor of Townsville and served two terms. Andrew Ball – Ball was working for Robert Towns by managing Woodstock station, when Towns and Black asked him to explore north to find a port in the Cleveland bay area. He was accompanied by Mark Watt Reid, they eventually found the mouth of the Ross River and ball selected a part of Ross Creek to build a wharf. It was below Castle hill which reminded him of Castletown the capital of the Isle of Man, so he called the place Castletown until the name was officially made Townsville. Mark Watt Reid – He accompanied Andrew Ball in the search for a Port on Cleveland bay. Not much information on Reid but Reid River was named after him.

Back in 1863 Towns friends and family urged him to retire but he refused, but in 1865 he finally decided to take it easy a little, and moved to Cranbrook house in Rose Bay, Sydney but still continued to work his ships instead of concentrating on his pastoral endeavors. In 1870 Towns suffered a stroke eventually he recovered but on 7 April 1873 he suffered another stroke and died 4 days later. He was buried in the Balmain Cemetery. In 1912 the Cemetery was closed and his memorial stone was moved to the top of Castle Hill. Robert Towns wasn’t the only one to help discover and establish Townsville, he had help from John Melton Black, Andrew Ball and Mark Watt Reid as previously mentioned. John Melton Black – Born in 1830 in Edinburgh, Scotland. Black started off as a merchant in london where he heard about the Australian goldfields. He moved to Melbourne

Townsville Barbecue Battle Low and Slow Cooked food
On the 22nd of June Townsville will be holding a Low and Slow-cooked barbecue battle where teams battle each other to see who barbecues the best they are making an event out of it. Anyone can enter if you think you have what it takes to endure five rounds of intense cooking over twentyfour hours. If so get ready to be crowned Townsville’s very first barbecue champion if you win that is. You will have twenty-four hours, 20 teams and a cash prize of $7,500 and prizes and trophies to win. Sponsored by Townsville city council and Mike Carney Toyota Mayor Jenny Hill has said the Barbecue battle was a welcome new entry to the calendar of events. We are sure that North Queenslanders will love this battle which will showcase some of the finest Barbecue professionals and products our region produces. They will be competing in the preparing of chicken, pork, lamb and the low and slow staple-brisket. Teaching children how to knit Holiday fun
Teaching children to knit can be very rewarding, but your child needs to be prepared. Children can learn to knit as young as five years old. Children who show interest when they see you knitting are the most ready to teach to knit. Teach your child finger knitting first. This method can be worked on just a couple of fingers or all four fingers at once. Next teach children to knit using a knitting knobby. A knitting knobby is a tool used for making cord that has a few hooks or pegs and is worked with a pick of a crochet hook. A chrochet hook is also called a Nancy. You can make your own knitting spool which is fun for kids too. Wool is the best for children to use because it is forgiving and easy to work with. It also feels nice on hands. Use a good quality wool. The first project you should work on with children is a simple garter stich or swatch. Cast on for your children so they can focas on forming the knit stiches. A garter stich is a great first project. Once children have learnt the knit stich you can add purling and ribbing, casting on and binding off. Make knitting fun for children. Teach children rhymes and songs to help remember the steps. Talk about the projects they would like to make while they are learning about set goals. To celebrate their success. Let children choose the colours of the wool they would like to use for their projects. Put childrens knitting in their own storage containers.

How to teach children to finger knit. 1.Tie a simple knot into the end of the wool and slide it onto your finger. 2.Wiggle the knot to about where your first knuckle is. 3.Loop the yarn over your forefinger next to and on the finger tip side of the slip knot. 4.Take the first loop the slipknot look at this stage and pull it over the second loop and off your forefinger so that only one loop remains on your finger. 5.Pull the tail so that the stich tightens. The Watpac Townsville 400 will be here between the 5th and 7th of July there are three races over the three days. There will be loads of drivers they Thursday before the races are usually when the convoy of trucks drive down Ingham road, down to Ross River road all the way to Ried park. They come past all the children and adults and beep their horns and wave. There will be a number of food outlets to choose from around the event, patrons may bring limited about of food but alcohol can’t be brought in but they will be pop up bars there that they can go to, spectators aren’t allowed to bring glass in to the event. Public track crossings will be available throughtout the days, this will allow people to cross the track without using the pedestrian bridges the crossings will occur next to pedestrian bridges 1 and 4 they times will be posted next to the pedestrian crossing location. There is a Paddock pass you can get that allows you to get behind the scenes and meet and grab autographs from the racers and get closer to the teams working in the garages so make sure to grab a Paddock pass you won’t miss out it will be a well-spent $30 ($35 at the gate. The Saturday night concert will be on and Australian Rock legends ICEHOUSE and Killing Heidi, it is on the Saturday the 6th of July and the tickets are included in the same day event ticket they will be under the Watpac super top behind the supercars paddock

If your not competing then feel free to have fun and watch the competition from the fences near the grounds believe it or not you can get up close and personal with the drivers while they are in their parking bays you can get a good look at the different cars that are participating even the car in the photo they attend just about every year with that car its always a good car to watch and the owner always has a lot of energy. Head on down to the Go Kart Track, Flinders Highway Charters Towers Qld 4820. I suggest heading there just after 12:00 pm when the competitors have started practicing because with the smoke they are producing is usually a good indicator that you are reaching the turn as the turn into the event is a little hidden. while the skids are happening there is a bar and music playing and little market stalls that you can get toys from for the kids and the bar sells stubby coolers.
The gates for the event open at 12:00 pm on Saturday and practice for the competitors start at 12:00 pm and the competition starts at 6:00 pm food and drinks are available but make sure you prepare for a big wait or get in there early you are able to bring your own food as there is always a long wait. They do have a bar service there so if people want to drink they can buy them some but there is no BYO For the competitor’s gates are open from 8:00 am they have Nomination fees for pros it is $100.00 this includes gate entry if pre nominate all other classes are $50.00 includes gate entry if pre nominate. The classes competing are Pros,8’s and 4’s there will be prize money for first and second place in each class. All competitors and passengers will be required to be a member of a CAMS affiliated club. Drivers are required to hold a valid CAMS level 2NS license or a CAMS license of higher status. Apple Crumble An easy and delicious dessert to make heading into winter!

METHOD
INGREDIENTS
1.
¾ Cup Plain Flour ½ Cup Rolled Oats ¼ Cup Shredded Coconut 100g unsulted butter 2 Tablespoons sultanas 2 Tablespoons white sugar 1 400g tin Apples ¼ teaspoon cinamon or mixed spice
Serve with double thick cream or vanilla ice cream
Place dry ingredients (flour, oats, coconut, sugar, cinnamon/mixed spice) into a mixing bowl and stir until combined 2. In a pot melt the butter over low heat on the stove 3. Take melted butter off the heat, set aside 4. Add the melted butter to the dry ingredients in the bowl 5. Mix all ingredients in the bowl and stir until well combined, set aside 6. Place the tinned apple in a pie dish or enamel baking dish 7. Sprinkle sultanas over the top of the apple 8. Evenly spoon the crumble mixture from the bowl over the apple 9. Bake in a moderate oven at 180c for 20 minutes or until cumble starts to brown 10. Remove from oven and allow to cool slightly before serving

Mixed apple and berry sponge pudding This fruity winter pudding is perfect for cooler evenings
READY IN: Prep 20 mins Cook 42 mins SERVES: 6 INGREDIENTS 3 granny smith apples, Peeled, chopped 2 tablespoons lemon juice, plus 2 teaspoons grated lemon zest 1 ½ cups (330g) caster sugar 500g frozen mixed berries 2 eggs ½ cup (125ml) milk 2 tablespoons whisky 1 teaspoon vanilla extract 1 cup (150g) plain flour, sifted 1 teaspoon baking powder, sifted Icing sugar, to dust Thick cream mixed with 1 teaspoon ground cinnamon, to serve
METHOD 1.
Preheat oven to 160C. Place the apple, juice and 1 cup (220g) sugar in a small pan and cook over low heat, stirring, for 3 minutes or until the sugar dissolves. Cook for a further 3-4 minutes, stirring occasionally, until apple softens slightly. Cool, then stir through berries. Transfer to a 1.25 litre baking dish. Set aside. Add mince and cook until brown mince.

Whisk eggs, milk, whisky, lemon zest and vanilla in a bowl until combined. Set aside. Place fl our, baking powder and remaining sugar in a bowl. Pour egg mixture into dry ingredients, whisking well to form a smooth batter. Pour over fruit, then bake for 30-35 minutes until golden and firm to the touch.

Dust with icing sugar and serve warm with cinnamon cream.

Spaghetti Carbonara Quick, Easy and Delicious
READY IN: Prep 10 mins Cook 15 mins SERVES: 4 INGREDIENTS 375g Garofalo spaghetti 1 Tablespoon olive oil 200g Short cut bacon, Cut into 1cm pieces 2 Garlic cloves, crushed 2 teaspoons chopped flat-leaf parsley ½ cup light thickened cream 2 eggs 1 egg yolk ½ cup finely grated parmesan Mixed salad leaves, to serve

METHOD 1. Cook spaghetti in a large saucepan of boiling salted water until al dente. Drain. 2.
Meanwhile, heat oil in a deep frying pan over high heat. Cook bacon for 4-5 mins or until golden and crisp. Add garlic and cook, stirring for 1 min. Add parsley and remove from heat.

Whisk cream, eggs and yolk together in a jug. Add half of the parmesan and season with pepper. Return pasta to pan with cream mixture and toss to combine.

Divide the spaghetti mixture among bowls. Top with remaining parmesan. Season with pepper and serve with salad.

Mushroom pork READY IN: 10 hours SERVES: 12-15
Rice pudding
INGREDIENTS 1 Shoulder of pork rolled roast 2 can cream of mushroom doup 500g of mushrooms 1-2 onions 3 goves of garlic METHOD 1. 2. 3.
Slice onions, and mushrooms. Mince or grate garlic. Remove pork roast from packaging and remove the string. 4. On the bottom of the slow cooker place a layer of mushroom onion and garlic, then place the roast on top of that. 5. Add remaining mushroom onion and garlic on to and pour the cream of mushroom soup on top. 6. Cook on high for 5 hours. 7. Then switch to low for the remaining 5 hours. 8. Pull the meat out of the slow cooker and shred. 9. Sauce may not be thick enough so put into a saucepan and reduce. 10. Put the shredded meat back into the sauce serve with vegetables and mash or even rice.
READY IN: 2 ½ -3hr SERVES: 6 INGREDIENTS ¾ cup long grain rice 3 cups milk ½ cup granulated sugar ¼ teaspoon ground cinnamon 1 pinch of salt 2 tables spoons of butter diced METHOD 1. In a colander rinse rice thoroughly in cold water. 2. Put into lightly greased slow cooker. 3. Add all other ingredients except butter. 4. Sprinkle butter on top. 5. Cover and cook on high for 2 ½ - 3 hours until rice has absorbed everything 6. Serve warm
