This Holiday Season, we here at The Osider want to share one of our favorite food items—the Tamale! Grace Saco from Z-Market has been kind enough to share her family recipe on how to make your own tamales at home during the Holidays. HOW TO MAKE TAMALES Lard

INGREDIENTS: 8 cups Maseca gluten-free Instant Corn Masa (4.4 lb. bag) 1 tablespoon baking soda 2 tablespoons Baking Powder 1 tablespoon salt 1 lb. lard (no Crisco or vegetable lard) 8 cups of chicken broth PREPARATION METHOD: 1. Mix all dry ingredients first, then add the lard (not all of it at once) in two batches. 2. Mix well until it’s fully incorporated into the flour mix. You can use a mixer with a paddle attachment. It’s easier than using your hands and it works great! Especially, for making large batches. 3. After it’s fully mixed, add four cups of chicken broth and mix together. 4. Keep adding the rest of the broth slowly until it’s fully incorporated and the Masa is nice and soft. It’ll take about five minutes 5. Let the Masa rest for about 30 minutes.

CHICKEN AND PORK TAMALE FILLING: SAUCE: 2 lbs. of Tomatillo 3 large onions (white; cut in fourths) ½ cup fresh garlic (peeled) 2 fresh cilantros (cut in thirds) 6 Chile Serranos (add more if you want it spicy) 3 cups of water 2 tablespoons Salt 1 tablespoon ground Cumin

1. Boil the green tomatoes with the chilies first until soft 2. Add your onions and garlic on a skillet with a little oil and sauté them until they become caramelized. 3. Add everything to the blender including your cilantro and all your dry ingredients (plus the sautéed vegetables).

PORK/CHICKEN: You can use any part of the chicken, whatever’s preferable to you. 1. Boil it with garlic, onions (white), bay leaves, and salt. 2. Shred your chicken, and make sure not to leave any chunks/bones, etc. 3. Mix this with your sauce, and cook it together for about ten minutes. 4. Let the filling cool until it isn’t steaming/warm. It works best prepared the day before.

It’s the duty of lifeguard David Wilson to save lives. A demanding day this past summer put Wilson to the test, and resulted in him being recognized with the state Public Safety Officer Medal of Valor. On July 17, Wilson began his shift teaching boys and girls in the Junior Lifeguard Program. He then joined a fellow lifeguard for patrol duty at Harbor Beach tower 14. “It was a pretty busy day,” Wilson said. Large beach crowds kept Wilson and his senior partner busy. They responded to several incidents including freeing a child from a sweltering locked car. That afternoon an emergency distress call came in about a crashed jet ski. Wilson responded and was quickly at the harbor jetty where the accident occurred. With a buoy and fins in hand, he made his way to the end of the jetty and located a man wedged between the rocks. The trapped man was semiconscious, and submerged by waves as they rolled in. Sets of three-to-five foot waves continued to pound the injured man as Wilson began the rescue. Wilson was knocked down and thrown onto the sharp rocks several times as surf pounded the jetty every fifteen seconds. A harbor police officer joined in rescue efforts. Together they aided the man between sets of waves, and called to brace for impact. To free the man, Wilson dove underwater and dislodged the man’s legs from the rocks. The intense rescue efforts made time stand still. “It seemed to take forever, we were getting beat up pretty well,” Wilson said. By the time they freed the trapped man, additional lifeguards and firefighters were on scene. The team lifted the man from the rocks and across the jetty as relentless waves continued. He   25

was safely carried to shore and transported to a local hospital. Wilson suffered major scrapes and bruises, but continued to respond to additional rescues that afternoon. Once the man was in transport, Wilson showered off and rejoined his partner to respond to a code five call, which summoned all guards on duty to rescue swimmers from dangerous water conditions. “It’s one of the crazier situations I’ve been in, we pulled in over twenty people,” explained Wilson. He put in overtime until the situation was stable. The next day he returned to work bright and early to teach Junior Lifeguards. Wilson summed up the demanding day as a “good day with a positive outcome.” Wilson, an El Camino High graduate, has served as a seasonal lifeguard since 2012. He completed Emergency Medical Technician certification in 2014. He said he’s drawn to lifeguard service because of the unpredictability of the job, rewards of helping others, and inspiring rescues of lifeguards before him. “There aren’t a lot of people in this profession who get recognized for their amazing feats,” Wilson said. “It’s an honor to be a lifeguard. I’m beyond blessed being able to do this.” In recognition of his heroic efforts, Wilson was awarded the prestigious governor’s Medal of Valor this past September. Recently, Wilson completed studies in criminal justice. He said he’d continue to serve as a seasonal guard, and pursue a career as a State Park Peace Officer. The community of Oceanside is very fortunate to have first responders like David Wilson on call to keep us safe, and for that reason, he’s one of Oside’s Finest! THEOSIDER.COM

CLOTHE+ARROW ALL YE CITIZENS & CRAFT+FOSTER WORDS: ALICIA STONE  PHOTOS: PRISCILLA LEZZI The collective space at 1817 South Coast Highway houses three individual companies, each complimenting and encouraging the other’s endeavors while sharing the responsibilities and costs that come with operating a storefront. In a time when all kinds of businesses are popping up around Oceanside, this spot is pretty unique. Clothe and Arrow is owned by Brandy Bailey and is a clothing boutique. “My husband is active duty military and while being stationed all over the country, I gained a diverse knowledge of fashion,” said Brandy. After pairing down her own closet and quickly selling the gently worn pieces, she realized she could bring those brands from all over the country and make them available here. “I launched my online shop in 2016, and did pop-ups at various events. I learned I was better catering to my clientele in person, so when this opportunity arrived, I knew it would be a more fulfilling experience,” explained Brandy. “I purposely carry brands that most locals have never heard of and other stores don’t offer.” Clothe and Arrow carries edgy and bohemian clothing and accessories, and Brandy is in the process of designing her own line, including swimwear. All Ye Citizens offers handmade and unique goods from over 60 makers and is the brainchild of Oceanside resident, Dani Luecht. Said Dani: “It’s essentially an everyday maker’s market. It’s truly all of my favorite things, an extension of my THEOSIDER.COM

heart, and that’s what sets it apart!” Dani, a former lifestyle blogger, began her business after finding her love for featuring small shops in her blog. “When I spoke with Brandy about combining our businesses under one roof, I immediately knew I could pair my passion and support for those small shops with my love of retail. I feature all handmade items, home décor, apothecary, art, and baby/children’s items.” Craft and Foster is a curated gift and candle boutique that started with a DIY candlekit given to owners Melissa and Chad Burgess. “Melissa fell in love with the candle-making process and began pouring them for friends and family,” said Chad. After signing up for local maker’s markets, she gained the attention of local retailers. “We’ve been pouring candles for two years and are known for unique fragrances, strong throws, and muted packaging, which allow our scents to speak for themselves. We became friends with Dani after All Ye Citizens began carrying our candles. When shop space opened up, we jumped right in!” Craft and Foster feature brand-aligned home goods, clean beauty/wellness products, barware, and children’s items. “We want our customer’s experience to feel relational not transactional, so we put a couch where most would place a POS system,” Chad added. All four owners praise the encouragement from surrounding businesses. “We were welcomed 26

with open arms and I want to continue to bring forth positive change while respecting the beauty that already exists in Oceanside. This city has been able to keep its charm throughout all this change. I couldn’t see raising my two kids anywhere else,” said Dani. Brandy added, “When we came here in 2013, we saw artistic potential in a sleepy beach community. When we returned in 2015, I told my husband, ‘This place is going somewhere,’ and we knew it was time to invest.” Melissa and Chad, parents to four kids under six, run their business together. “We’ve called Oceanside home for many years and love the transformation taking place. We’re all about the creative and entrepreneurial movement in South O.”

The number-one wish mankind has is to fly, and now you literally can fly here in Oceanside! iFLY Oceanside is just minutes down the 78 Freeway and offers one of the most amazing gifts anyone could receive—the gift of flight. iFLY started in 1998 and created modern indoor skydiving in a comfortable safe environment and now has built one of their state-of- the-art facilities minutes from the beach. From the moment you walk in the door the excitement begins. The staff is incredibly helpful and our instructor Becca was nothing less than amazing. After you sign in, you have to take a quick class, which consists of a short video that goes over some hand signals to keep you safe when you’re in the wind tunnel. The tunnel itself has winds that reach well over a 100-miles an hour, so hand signals really help because it’s nearly impossible to hear anything in there. Once you’re fitted into your flight suit and you’ve got your helmet and safety goggles on—you’re ready to go. Once inside the wind tunnel, the instructors help guide you to keep you stable, and before you know it—you’re floating! The exhilaration is unbelievable and your family and friends can watch you just feet from the vertical wind tunnel. The age requirement is only three years old, so your whole family can enjoy this amazing adventure. THEOSIDER.COM

Owner Rob Blomsness, a navy veteran, and wife Melissa have definitely made this facility extremely family friendly, and they even offer educational and interactive classes for children. It’s a great way for them to learn and get exercise. “We want the community to experience this magnificent place. Come watch and see what the excitement is all about,” said iFLY sales director Christy Loiacono. They also have a beautiful meeting room where you can hold private parties, business meetings, or birthday parties. This is truly an incredible place—it can really bring people together. I’m not sure if I’ve ever been somewhere with more smiles and laughter. It’s an experience you’ll never forget, and once you check it out you’ll be hooked! Whether you’ve lived in Oceanside your whole life or if you’re just visiting, it’d be a shame to miss out on this truly one-of-a-kind experience. The adrenaline is amazing, and the great staff makes it less intimidating than you might think. Do yourself a favor and go fly like a bird!

MAYOR DICK LYON One word could best describe Dick Lyon: Determination. His steadfast resolve and focus helped him to accomplish many things in his life that included athletic titles, an esteemed military career, and two terms as Mayor of Oceanside in the 90s. Born in Pasadena, California on July 14, 1923, Richard S. Lyon was the second of four boys born to parents Norman and Ruth Lyon. In a family of boys growing up during the Depression era, Dick learned at an early age to be resourceful. When he was just ten years old, he and his brothers set up a stand near the Rose Bowl every year and made “a fortune” selling hotdogs to hungry football fans. Learning to adapt was an early lesson as they raised their prices from fifteen cents to 25 cents so they wouldn’t have to make change, while increasing their profit margin.

Dick and his brothers were natural athletes and excellent swimmers. At age twelve, Dick and his brother Norman (age fourteen) began training—determined to make it into the 1940 Olympics. They gained the attention of local sportswriter from the Los Angeles Times in 1938 after Dick took first-place in the 100-yard Freestyle Swim at 57.5 seconds, and Norman in second place with 59.2. The sportswriter added: “Don’t

forget those names.” While attending high school at Muir Tech, Dick won numerous meets and broke several records. He was the 1939 National Interscholastic Freestyle Swimming Champion.

Dick’s determination and ability earned him a spot on the United States Olympic Swim Team in 1940, but it wasn’t meant to be when the games were canceled because of the outbreak of World War II.

Undeterred by setbacks, Dick attended and graduated from Yale University in 1944. He attended Columbia University Midshipmen’s School and received his commission in the U.S. Navy that year. Lyon’s naval career would become the stuff of legends when he combined his expert 34

swimming skills with his military training. He served as a Navy Scout and Raider—predecessor to the elite Navy Seals team during World War II. He commissioned the “Underwater Demolition Team FIVE” in 1951, and served in the Korean War. His career included both active and reserve duty, and he’d become the first SEAL officer to attain the rank of two-star Admiral in 1974.

After serving over 40 years in the Navy, Dick retired from military service. But he didn’t stop there; he just refocused and became active in community affairs. He went on to become the founder and president of Children’s Hospital, Orange County. Despite his tough exterior, Lyon had a soft spot for children. He loved to visit them and took a vested interest in their wellbeing.

Dick and his wife Cindy moved to Oceanside in 1981. His political career started off rather humbly as President of PTA at Reynolds Elementary School, then the Oceanside School

Appointed to Oceanside’s Planning Commission in 1985, Dick dove headfirst into politics when in 1992 he ran for and was elected as Oceanside’s Mayor, serving two terms. Wife Cindy said that Dick walked every day, meeting voters in every district or neighborhood. His determination paid off when he won in every precinct. She said she’s proud that her husband served as Mayor as he did in the military, with great integrity, stating that Dick was not a “politician” but a “statesman.”

His military background may have groomed him for the position by giving Dick the thick skin that’s usually needed in the political arena. He didn’t take criticism personally, just considered that it all came with the territory. If he could dodge bullets, he could certainly dodge a political insult or attack. Among his accomplishments during his tenure as Mayor was the establishment of a new police station and the Mission Branch Library; hiring Jane McVey, the city’s first economic development director; a notable drop in crime statistics; the completion of the seventeen-acre Martin Luther King Jr. Park; and the $20 million OceanPlace Entertainment Center in downtown, which houses retail stores and the Regal Cinema.

Lyon left the Mayor’s office after two terms and left the political realm, even though he was encouraged by others in the community to stay active politically. His military training taught him to step down with “a change of command,” and he did so respectfully. He did, however, stay active in civic and military organizations, as well as his church.

Dick enjoyed his retirement while living in a home on The Strand that he and Cindy purchased in 1997. The love of the Navy never left him—he continued to mentor young men in SEAL training, and was determined to attend nearly every Navy SEAL graduation possible. When Dick passed away this year on February 3rd, his funeral services were attended by military personnel—those he’d served with, and also those he’d mentored, encouraged, and inspired. Among those who paid their respects, none loved him more than his wife, children, grandchildren, and great-grandchildren.

Picturesque coastal communities with a harbor like Oceanside often have a yacht club. But when it comes to Oceanside, the Oceanside Yacht Club (OYC) does things The Osider way. The atmosphere is casual and the members are as authentic as the city they live in; they are bonded by a love of the sea, and a penchant for fun. Members say their yacht club is “the friendliest place in North County.” Formed in 1963, the Oceanside Yacht Club is touted as “The Jewel of the North.” It’s a private, members only club, but owning boat is not required to be a member because membership fees include access to the club’s sailboats for non-boat owners. Members can enjoy a variety of events throughout the year in a casual, welcoming atmosphere. The club is private, but the public is invited to take a tour and experience the camaraderie with a perfect view of Oceanside Harbor and the Pacific Ocean. Oceanside Yacht Club offers a variety of programs throughout the year for non-members. Upcoming is the OYC Swap Meet on Saturday, December 2, 2017 from 7am- 12pm in Parking Lot #2, 1950 Harbor Drive North. One of their proudest non-member programs is hosting 4050 marines from Amphibious Assault School for Thanksgiving dinner, catered by Stone Brewing. Sailing, dinner, and the spirit of the holidays is a great outreach for the young men and women who are new to Camp Pendleton. THEOSIDER.COM

One of the most popular events organized by OYC is the Holiday of Lights Parade each December, where decorated boats parade around the harbor to the delight of the public. It’s a fun, family-friendly event that showcases the harbor with lights glimmering on the nighttime waters. This year, it’s held on Saturday, December 9, 2017, beginning at 7pm. The Yankee Doodle 38

Dinghy Parade is also a family favorite daytime event every 4th of July. Participating boats are decked out in red, white, and blue to celebrate America’s Independence Day. The Learn To Sail Program (LTS) is one of OYC’s most successful services offered to the public. It’s an effective program for potential sailors to learn from ASA certified instructors.

"The friendliest place in North County" Students will learn proper boatmanship both in the classroom, and on the water. LTS is offered for both adults and kids. The adult LTS is a twoday course. The Junior LTS is offered in summer for kids seven to seventeen-years old. For the Level 1 Sailing Course, no previous sailing experience is required, but all students will be required to pass a swim test on the first day. OYC keeps an active racing calendar, especially in spring and summer, and members love the opportunity to connect and hone their sailing skills. Part of the racing series are two charity regattas hosted by Oceanside Yacht Club that raise funds for Elizabeth Hospice Organization and Women’s Resource Center. Newly incorporated, as of September 20,

2017, OYC is proud to announce its 501 (c)3, the Oceanside Yacht Club Youth Foundation. The goal is to provide community outreach and build sailing as an entity in Oceanside. The foundation will reach out to local schools and encourage youth to sail, even create a sailing team for schools like Oceanside High School to compete. Commodore Adam Johnson believes “it really is a game changer for sailing in Oceanside.”   41

Feed my People Ministry

The holidays are a time for joy and celebration, and also a time to take care of one another. A purposeful way to remember the true meaning of the season is to give back. Oceanside is home to hundreds of amazing nonprofits that’d benefit greatly by donations of time or money. Please take an opportunity to reach out and be of service because everyone can benefit from extra kindness around the holidays—and every day! Listed below are three Oceanside nonprofits that make a special bid each year to share in the spirit of the holiday season: Spirit of Sharing (SOS) is an Oceanside-based nonprofit that’s 100% volunteer-driven, and is comprised of veterans, military spouses, and caring members of the community. SOS provides emergency-based assistance to military families in need throughout the year, including an onsite food bank. The biggest program is the holiday adoption program where SOS collects donations to ensure our local military families have a blessed and memorable holiday season. SOS is requesting the community’s support through a variety of ways: nonperishable food items, grocery or commissary gift cards, gas cards, and new toys for all ages. As Christmas nears, SOS needs volunteers to help receive, sort and wrap gifts. One hundredpercent of EVERY donation supports and assists military families. Bread of Life Rescue Mission serves the poor, hungry, and homeless in North San Diego County by providing food, clothing, personal care items, and referral services to 10,000-plus individuals per month. Bread of Life is a designated City of Oceanside cold-weather overnight winter shelter that goes from November 1st to March 31st. It changes lives, helps families stay together, and facilitates new beginnings with spiritual encouragement. Feed My People Ministry began in summer 2015 to fill a need in downtown Oceanside and provide food for the homeless, and struggling families in the St. Mary’s parish. Currently, Feed My People prepares 35 lunch sacks every day, and has 40 registered families that receive monthly “grocery bags” full of healthy food. On Thanksgiving Day, St. Mary Star of the Sea parish and Feed My People Ministry hosts a free Thanksgiving dinner after 9am mass at approximately 10am that invites the community to share a good meal and good company—everyone is welcome! A true labor of love, the parish serves over 400 meals and utilizes more than 60 volunteers. Donations are accepted throughout the year to fill the pantry for those in need.

WORDS: ELIZABETH SCHWARTZE “For twelve years, the people behind Kinane Events that have encouraged thousands to ‘Move Your Feet Before You Eat’ are at it again this Thanksgiving!” The Oceanside Turkey Trot—sponsored by Pacific Marine Credit Union (PMCU)—is back in Oceanside on Thanksgiving Day, Thursday, November 23, 2017, encouraging trotters to take part in a fun, family-friendly, community event. This year, the popular foam turkey hats are back! People from 46 states and 460 cities come to beautiful Oceanside to take part in this beloved holiday tradition, so get your shoes laced and ready to move your feet before you eat, Turkey Trotters! Online registration is now open! There’s a race for every family member and participants can choose between 5k, 10k, 5k/10k combo, and Kids 1 mile and quarter-mile race. The course covers the scenic downtown Oceanside landscape, beginning at the Oceanside Civic Center and ending along The Strand under the pier. As in year’s past, the Costume Contest is an entertaining element to the Turkey Trot festivities. costumes. Not only is the costume contest fun, but it can be lucrative, as well. There’s $600 awarded the day of the contest with $300 for first place, $200 for second place, and $100 for third place. Returning in 2017 is the Instagram post contest. Use the hashtag #oceansideturkeytrot on your photo for a chance to win cash prizes for first, second, and third place. Even more prizes are awarded for the top ten largest teams. This year, $100 gift certificates to 333 Pacific go to the top ten largest teams. The Oceanside Turkey Trot benefits the community in more ways than one. Since it started twelve years ago, it has raised over $270,000 for local non-profits. At registration, participants can designate $5 of their entry fee for one of the listed non-profits. Entry fees differ depending on the specific race. The PMCU O’side Turkey Trot also includes a two-day Healthy and Fitness Expo at the Junior Seau Beach Community Center on Tuesday, November 21st, and Wednesday, November 22nd. Registered participants can pick up race packets and hopeful participants can register onsite. The expo is also a great place to buy some cool running gear from one of the many vendors. The “Move Your Feet Before You Eat” Foundation helps the community every day of the year. The foundation currently funds Mileage Club materials to start run clubs in Oceanside schools. Conor (Shano) Shanahan’s was born and raised in Oceanside, attending McAuliffe Elementary and graduating from El Camino High School. His first daycare and memories were on his dad’s boat, “The Game Fish.” Family is everything to him: “I owe it all to my father. Everything I am today is because of him and my mother’s support.” Conor works on a long-range boat named “Shoga” and his brother, Kane, is also a fisherman, and works out of Oceanside Harbor. Conor loves the local restaurant scene, especially Wrench & Rodent. He also says Ken’s Tackle in Oceanside Harbor is a great place to share fishing stories and get supplies. His love of fishing has permeated his entire life. Growing up in a family of fishermen, he knew his path would lead him to the ocean. Conor always possessed artistic abilities, but he never pursued it: “I’m a fisherman, that’s

what I am. I always just wanted to be on the boats.” Fortunately, Conor found a way to combine his love of fishing and utilize his artistic talents by picking up an ancient art that started on whaling boats called “Scrimshaw.” During his down time on the boat, Conor used a readily available byproduct, swordfish bills, and started to scrimshaw. Conor uses

“I’m a fisherman, that’s what I am. I always just wanted to be on the boats” traditional tools that includes a scribe with a metal pen and dipping the pen “nib” in ink. As an adroit artist, he also creates amazing wood pieces. “Woodwork is my real passion, but no electrical machines—they take the soul out of

the piece, ” explained Shanahan. Conor created his first scrimshaw art and gave them away as presents. When he sold his first piece for $65, he knew he was creating things that people appreciated. With the potential to make a living with his art, Conor could never imagine life without fishing: “Ultimately, I’d love to captain a boat and do art in my down time. I can build and carve anything you want.” Clients usually give Conor an idea of what they want and he takes it from there. Most of his pieces take time and clients know in advance that it won’t be a quick process, but well worth the wait!

When it comes to traditional team sports, Oceanside has always been known for producing world-class athletes, but we also have a very rich skateboarding and music lineage as well. Take Adrian Demain, for instance. Many of you’d never guess by meeting him, but Adrian was a major part of the legendary Powell Peralta Skateboards team in the 80s, as well as also being an established musician. Raised in Oceanside in the deep valley, Adrian was a shy young Filipino kid who was more known in high school for his academic prowess than his skills on the board. But behind his shy demeanor, Adrian was constantly honing his skills. His first grind was right in front of Libby School. Once he felt that feeling of the trucks scratching the hard concrete, the fuse was lit and skateboarding took over. THEOSIDER.COM

Eventually, Adrian convinced his parents to drop him off every other week at the legendary Del Mar Skate Ranch. There he met and befriended Tony Hawk and Billy Ruff—two amazing young skaters who went onto become household names in skateboarding. After a few years of hanging with these guys, Adrian starting doing contests and did quite well. Although Adrian had already gotten sponsored, Tony was secretly plotting to get him onto Powell Peralta’s team. Adrian still remembers being at Tony’s house with the team before he got on and Rodney Mullen was on the phone listening to Tony and Stacy Peralta talk about him. After Rodney hung up, he coyly walked by Adrian and whispered, “I think you’re going to ride for Powell.” Adrian didn’t think much of it, but when he arrived home, his mother said, 52

“Someone named Stacy called and wants you to call back.” Adrian couldn’t believe it. He called right back, and Stacy Peralta offered him a spot on the team. From there, Adrian was thrust onto the skate scene traveling with the legendary Bones Brigade. It was also at this time that Adrian found music. Another skater named Neil Blender basically lived at the Skate Ranch and would hang in the parking lot between sessions playing guitar. Neil was a big influence on Adrian, which led him to start playing guitar as well. Adrian would eventually play guitar in many well-known touring bands including Billy Bacon and The Forbidden Pigs, Lee Rocker, and my personal favorite—The Cheap Lei’s. If weren’t for Frank and Gerry Demain moving here in the 80s after serving 30 years as a Marine, Oceanside would not to be able to call Adrian Demain our own. He still lives here in Oceanside with his beautiful wife Toby Schwartz Demain, skates Prince Park weekly, and still plays a ton of music locally, and wouldn’t have it any other way. O’side loves you too, Adrian.

Within minutes of seeing that the building on the corner of Morse Street and South Coast Highway had a lease sign on it, Sea Hive co-owner Brandon Vega (along with his business partners Todd Stephenson and Rob Murray) had completed the phone calls and handshakes needed to make his “crush on the building” a reality. Sea Hive Marketplace opened in August 2017 to a welcoming reception of people intrigued by the new store and what the 13,000 square-foot building held. And the crowds weren’t disappointed! Inside, over 100-plus vendors weave together offbeat and unique items. From vintage to hard-to-find, to new and unusual—Sea Hive houses it all under one (giant) roof. Make sure to carve out some time when you visit, because the building is packed from floor-to-ceiling with amazing items seeking a new home. With the business plans set in place, Jen Zoutendyk (originally from Antique Warehouse in Solana Beach) was brought on board as manager. Some of the vendors at Sea Hive are long-time local business owners like Vintage Sanctuary. Some well-known brands like Brave Arrow, Mason Dyer, and HOME have also found the perfect vending space at Sea Hive. THEOSIDER.COM

“We’re thrilled that something like this is happening in our own backyard. We walked in, excited about the possibilities, and picked our own space,” said, Tracy Fulop, vendor of Boarding House Broads. There are new artifacts, but for the most part, the items are vintage—too good to be abandoned. Purchases at Sea Hive are supporting small business owners and rehoming some awesome merchandise. It’s a feelgood store, for sure. Sea Hive is aptly named because it’s a hive of activity near the ocean. Even on a Tuesday, the building was abuzz with activity from vendors and customers fluttering about. The public is invited on Saturday, December 2nd, and Sunday, December 3rd, when Sea Hive hosts a Curated Makers & Vintage Market for local artisans and vendors. There’ll be live music, food trucks, and plenty of options to find the perfect Christmas present. Sea Hive’s long-term plans include food vendors and transforming the outdoor space into a food and beverage courtyard by converting shipping containers—the ultimate in upcycling. “Because I live in the neighborhood, I really wanted to add something. My goal is to literally to have something for everybody,” smiled Vega. 54

Located on Mission Avenue, PANELS Coffee and Comics is a unique business that caters to lovers of quality coffee and comic books. Officially opened this past August, owners Aris and Tio Lavranos are two brothers who originally lived in Oceanside in the early 90s, and then moved to Athens, Greece in 1993. After moving back in 1997, the brothers relocated to Dana Point and have been there ever since. Both Aris and Tio have been reading comic books for over twenty years. They had a vision to open a new style of coffee shop that was a little different from the norm, so they followed their dreams and PANELS Comic Book Coffee Bar was born. “Basically, our idea was to create a space where we could bring together two things that we love, which is the coffee shop vibe and comics. And by ‘comics,’ we mean great art, great stories, and things that generate conversations for THEOSIDER.COM

people who are casual readers, and people who have been fans of comics for a long time,” said Tio. “The name “PANELS” refers to the ‘panels’ of a comic book. It’s a subtle nod towards comic book readers.” Upon first entering PANELS, you’ll notice a colorful array of comic books, trade paperbacks, and graphic novels by Marvel, DC, Dark Horse, Image, and other independent publishers all neatly positioned on multi-level shelves on the main walls. There’s plenty of breathing room inside and they’ve got comic books for all ages with plenty of volumes and genres to choose from. PANELS receive new releases every Wednesday, and customers can special order whatever they need. “We primarily sell new comic books. Our goal is to push the newer stuff because we feel it’s a better way to get new readers on board because it’s current, it’s 56

exciting, and it’s what people are talking about,” said Tio. On the coffee side of things, their Greek Frappe is amazing and is very popular. It’s coffee imported from Greece that’s made in the style they make it overseas. They’ve got the classics like Americano, Café Latte, Café Misto, Cappuccino, Dopio Espresso, Cold Brew, and their specialty menu ranges from White and Caramel Mochas to non-coffee items like Iced Teas, Chai Tea Lattes, and Hot Cocoa. Pastries include Blackbird Pies, Doughside Donuts (every Tuesday), Faye’s cookies, and a wide variety of delicious muffins that include Honey Bran, Cranberry Orange, Apple Cinnamon, and Gluten-free Raspberry. “We’re planning more weekly events. We’ll be working with Level Up Gaming to get some tabletop events here like card games and board games,” said Tio, regarding PANELS’ next steps. “Every Thursday night we do a Drink & Draw, where people can bring their own beverages, hang out, and make art. And on Sunday nights, we’ve partnered up with a high school Super Smash Brothers Club.” Overall, PANELS offers a great, relaxed atmosphere that’s perfectly suited for reading comics, enjoying a nice cup of coffee, or just hanging out.

Located on Coast Highway in downtown Oceanside, Jalisco Cantina opened for business this past September and is owned by Dave Pike, who also owns and operates all the Barrel Republic locations in San Diego. Named after the famous epicenter of Tequila production in Mexico, Jalisco Cantina is a craft cocktail bar that serves only the finest in agave spirits and upscale Mexican cuisine. Its smallish dining area (1,250-square-foot) is perfectly quaint enough for a date night, family get together, or a business meeting. The roll-up garage-style doors accentuate the space perfectly and it also provides a wide-open yet intimatestyle of setting. “When we started out, the idea was to build a craft cocktail bar with a tequila focus,” said Executive Chef Michael C. Brown. “The reason for that was that there’s not too many niches left, so we just thought that a higher end Mexican style food with a tequila and mescal focus would set us apart.” Jalisco’s streamlined menu features some tasty Mexican dishes that’ll surely satisfy your cravings. Jalisco uses the Sous-vide technique on all their chicken and carnitas. That means it’s cooked in a vacuum-sealed bag for the ultimate in tenderness. With a main focus on agave spirits, Jalisco Cantina is the only place in town where you can order both tequila and Mezcal flights. And sampling each flavor to find your favorite just got a whole lot easier. It’s all about Margarita’s at Jalisco and some local favorites include the Jalisco, Cilantro Smash, Pineapple Jalapeno, and the CaliFuego. Specialty cocktails include the Black Betty, Jalisco Sunrise, Elote Frappe, Key Lime Pie, and Whiskey Peach Iced Tea. There’s also a full bar with a complete wine menu, beers, vodkas, gins, and bourbons, as well. “We’ve been well received by Oceanside and we’re happy to be here, said Chef Michael C. “So far business has been good.” And we can see why. Tucked away in the Mid Valley’s Marketplace Del Rio shopping center, we’ve been secretly waiting for what seems like forever for this little gem to open its doors! The telltale cute cow sign was up for about a year barely giving us a glimpse of what was yet to come. Finally, this past July, brothers Min and Andy Son quietly opened Maru Izakaya Sake Bar and BBQ, and Oceanside residents have rejoiced! I was able to sit down with general manager Min and his wife, Chihiro Shinoda, who shared why they chose Oceanside to open their new restaurant. Min began his culinary career over fifteen years ago as a sushi chef, but it was Min’s brother Andy that through a coworker, learned about the opportunity to purchase the location in Oceanside almost two years ago. When asked why not their hometown of LA, Chihiro shared that the brothers took a drive down the coast to check out the location and immediately knew that things were different in Oceanside. “They came down saw the area, the people here, and they thought, ‘We can do something really cool in Oceanside.’” They’ve definitely done something cool starting with the curiously named Izakaya bar, which means “small portions” or Japanese “tapasstyle” portions. You can order tasty Korean and Japanese fusion dishes—anything from spicy garlic Edemame to a Bulgogi quesadilla. Their rice and noodle dishes vary from hot stone Bibimbap, a mixed vegetable and Bulgogi meat over steamed rice in a hot stone pot making the rice extra crispy on the bottom. It’s delicious, give it a try—you won’t regret it. They also have your traditional Japanese dishes like teriyaki bowls, chicken katsu, and tempura Udon soup. Maru is a sake bar, so be sure to try some of their amazing selection of imported sakes—they’re spectacular. 62

Now, for those of us who love and crave Korean BBQ trust that this place is a step above the rest. Beautifully redesigned, the space is invitingly clean and modern. The menu is thoughtfully crafted and features many staples connoisseurs will recognize, but everything is kicked up and fancy. Brothers Andy and Min strive for the highest quality food service and chose not to feature all-you-caneat menu items to keep the quality of meat high. You can immediately taste the difference in their meat—the succulence of the Kalbi short ribs, and how it melts in your mouth are amazing. Another delicious specialty dish they feature is Shabu Shabu. For those unfamiliar, it’s an overall fabulous make-your-own soup experience. You can pick two base broths from Original House, Spicy, and Japanese Miso, then you choose from an array of thinly sliced meats that you’ll boil in a special divided hot pot placed directly on the grill. That’s when you can start dropping in fresh vegetables, Udon noodles, and chicken, beef or pork in the bubbling broth right at your table! Frankly, the myriad of flavors created in the handmade broths for the Shabu Shabu is the best I’ve ever had—don’t miss out! Maru’s service is attentive and on point, the food is deliciously traditional Japanese and Korean BBQ served with a modern flare. It truly is a great find. If you’re feeling adventurous, be sure to stop by Maru for a distinctly different experience—you’ll enjoy it!
