HOW TO MAKE FRIED SNAPPER WITH CHEF RYAN COSTANZA OF DIJA MARA PHOTOS: ZACH CORDNER


“I picked this dish because it contains so much of what we’re about—a tremendous amount of work involved and a lot of layering of flavors to put out something seemingly very simple. Something like a fried fish can go in so many directions, where ours is technique-driven with a batter we’ve been working on for a while to perfect. The bright and acidic flavors of shrimp salad balance the heavier fry, but work well with the clean flavors of the beautiful fresh Tai snapper. The Tamarind Caramel sauce underneath the salad really takes it to another level of depth.” BATTER INGREDIENTS 1/3 cup all purpose flour 1 cup sweet rice flour 1 lager (we use Bintang or Tiger to keep it Indo) 2 tablespoons turmeric 2 teaspoons galangal powder 1 teaspoon Szechuan peppercorn PREPARATION 1. Mix dry 2. Slowly add beer while whisking until it resembles very loose pancake batter FISH Tai Snapper (New Zealand Sea Bream) PREPARATION 1. Scale and gut 2. Before battering, slice incisions on the filet 3. Twenty minutes before cooking, season with the juice of two limes and one-teaspoon kosher salt GRILLED BAY SHRIMP SAMBAL INGREDIENTS 1/4 cup bay shrimp cooked and cleaned 1/4 cup fermented fresh peanuts 3 heirloom cherry tomatoes 2 tablespoons shredded cabbage 4 tablespoons fermented vegetables (use what you have, for us we used picked cauliflower and shallot) 1 Thai chili 1 lime 2 tablespoons coconut oil 1 teaspoon sea salt PREPARATION 1. Lightly grill shrimp and peanuts to add smokiness 2. Rough chop everything and mix 3. Season with lime and sea salt

TAMARIND CARAMEL INGREDIENTS 4 tablespoons tamarind paste 2 teaspoons palm sugar 1 cup water 2 teaspoons fish sauce (red boat) 1 teaspoon galangal fresh micro planed 1 teaspoon ginger fresh micro planed PREPARATION 1. Press and strain tamarind in one cup of hot water 2. Save water by pressing tamarind pull 3. Add palm sugar, galangal, ginger, and shallot 4. Cook for twenty minutes until it resembles maple syrup

FRYING THE FISH: PREPARATION 1. Heat rice bean or soy bean oil to 370 degrees 2. Pour batter over seasoned fish 3. Gently add the fish to the hot oil, and set a timer for 4 minutes 4. After four minutes, flip the fish in the oil and set the timer for another four minutes 5. Pull and let drain on a towel 6. Plate the fish and season with sea salt 7. Add caramel sauce and add the shrimp Sambal 8. Garnish with sliced limes, Thai basil, and cilantro. We use Rau Ram (Vietnamese coriander) instead of cilantro Always serve with steamed jasmine rice and lime wedges. We suggest pairing a natural/ biodynamic acidic white wine with it like Les Vins Pirouettes Alsace Glou Glou Sylvaner or with a cheap ice-cold beer. THEOSIDER.COM

TAKE ACTION TO CREATE A STRAW-FREE CALIFORNIA AND OCEANSIDE In an effort to stop plastic pollution, the State of California recently passed State Assembly Bill 1884 (AB 1884) which requires sit down restaurants to forgo the automatic distribution of straws in every drink, and instead only provide a straw when it is requested by the customer. So, what does this mean for restaurants and diners in Oceanside? Diners take action in 2019 • Pledge to go straw-less • Pack your reusable straw • Sometimes you still need a straw, just ask! Restaurants take action in 2019 • Pledge to reduce your straw impact • Purchase paper straws and provide only when requested • Provide branded reusable straws for purchase, to showcase your efforts! AB 1884 isn’t a ban on straws, but rather an effort to significantly cut single-use plastics from our daily use and our environment. In Oceanside, this effort might help us all pause and think about alternatives for a zero waste Oceanside community.

When I told people I was writing this article about Bruce, the mysteriously intriguing "Trench Coat Guy," I kept hearing more and more crazy stories about him. Are they all true? Are none of them true? It’s a bit of fun to hold the key that unlocks all the rumors on the street. I’d love to tell you that he’s a modern-day Poseidon floating in the seas of time and change, and to some extent, he certainly is. However, the coolest thing about local legend Bruce, otherwise known as the Trench Coat Guy, is that he’s another lovely human just like the rest of us. He’s a man, a brother, a son— he’s just a person who lives and loves to be in the ocean. Bruce also enjoys photography, classic cars, walks on the beach, and is a self-proclaimed history buff. He collects coins, still meets with his high school classmates twice a year, and is well versed in all the recent technology; proudly sharing all his gadgets that range from his Go Pro and his tablet, to his waterproof cell phone case. How else could he possibly capture all his cool ocean adventures to share with us? Quite a few years back, Bruce decided to return to college in his 50s to CSUSM to earn a bachelors degree in business. Bruce believes in hard work and being a good person, and he exemplifies those values with the way he lives his

life. I mean, how many of you want to go back to college at 50? Certainly, not me. In the hopes that a college degree would improve opportunities for work, Bruce currently finds himself working a graveyard shift job. Most would think the 70s are a time for retirement, but in order to keep up with the rising cost of living and inflation, Bruce has to compensate for retirement benefits that do not simultaneously increase.

“He’s a man, a brother, a son—he’s just a person who lives and loves to be in the ocean” None of this however, keeps him from smiling. A beach creature, a slave to the sea, the ocean is what makes him shine. Almost daily you can spot Bruce wandering beachside, salty and happy. We met on a gray misty morning at Tower 7 at the end of the Strand. He’d just finished up a coffee at Froggy’s (his favorite family run donut shop in Vista), and then continued his regular post-graveyard shift routine to wet his gills in the ocean waves. He doesn’t love working all night, but has been facing age discrimination and hasn’t been given a chance at a better job.   19

“So, why the trench coat?” some guy asked him as we wandered through the parking lot. “Well,” he said with a playful smirk. “Why not?” It protects him from the sun, and as he put it “those wetsuit things are too hard to get on and off.” I think most of us can agree. We mused for a while about Oceanside in the 60s. He told me fun stories of off-road Jeep races by the beach, and how the drive from his home in Montebello back in those days lasted all day because it was just a one-lane highway with stoplights all the way from LA. The way his eyes sparkled after his daily pilgrimage to the big salty blue fountain of youth is something that makes Bruce so special. That child-like excitement, and deep wisdom that the ocean stirs into the soul, is evident in this man. I wanted to know what advice Bruce had for us, so he had this to say: “Get outside more, don’t judge a book by its cover, and get off your phones!” Sometimes the simple truths are the most obvious, but a proper reminder from someone who has played the game for a while solidifies any doubts. So if you want to chat with Bruce about old coins, old cars, the secrets of life, or even offer him a job—you can find him around Tower 7 at high tide, getting his daily medicine, and enjoying the sweet bliss of our magic Mother Ocean. For as long as I can remember, I’ve been aware of the mysterious white building near the corner of Coast Highway and Vista Way and wondered what went on behind that slightly obscured side door. Like many, I assumed I’d never know about a club—possibly only patronized by an older generation of men. Well, times have changed, and a new Moose Lodge has emerged with reinvigorated community involvement and a strong sense of South O pride. The Loyal Order of Moose was originally founded in 1888 in Louisville, Kentucky as a fraternal gathering place where men could socialize. That quickly morphed into an international organization focusing on community philanthropy. Our local chapter #1325 was started in 1948, and has been restored to its original mid-century vibe in that same white building from 1933. Locals and long-time friends John Gilley and Allen Carrasco are among the members who set out to renovate the space to accommodate the younger generation, and are responsible for making it the popular local venue it’s become. The environment inside immediately welcomes you to belly up to the bar, order a drink, and listen to some epic stories about the history of our city. The O’side Moose Lodge started out sponsoring local youth sports and has grown into fundraising THEOSIDER.COM

on a much larger scale. They appreciate the generosity of local businesses that often donate services and merchandise, and they have raised tens of thousands of dollars for local schools and individuals in need. Local photographer Allen Carrasco became involved in the Moose lodge around 2015 and took on the task of renovating the dilapidated space, while John Gilley assumed the job of managing daily operations. “Preserving the charm of the structure’s roots was an important priority,” said Carrasco. “The original sign was literally dangling off the side of the building. We were able to recover and repurpose the original letters of the marquee.” A passion project of Allen’s, the second floor has been transformed into a swanky lounge with professional art lighting that doubles as a gallery and event space. The Moose welcomes artists to show their work, and the lounge can be reserved for small groups or the entire building can be rented for a larger crowd. The Lodge offers catering and staffing and can bring in gourmet food trucks to park in the outdoor area. Local bands frequent the stage in the main room, and their calendar is regularly updated with new and well-known musicians. They also host smaller gatherings, such as a weekly book club. 20

Membership does have its privileges, as you’ll have access to over 1600 lodges across North America and discounts on travel, entertainment, insurance, and healthcare. The lodge is open only to members’ weekdays from 5-9pm. Friday nights are welcome to the public and potential new members and weekends typically host private and community events. The ten board members each have deep ties to Oceanside. “We meet every week with several goals in mind. We really want to restore the heritage of the loyal order of moose and provide a unique hometown lodge for our members,” said Allen. “We are purposely setting up the next generation to continue our tradition of community outreach. Four years ago, we had twenty members—most over the age of 70. Now, we have 200 members—most under the age of 50. We encourage every one who wants good things for Oceanside to come in and check us out!”

Gilley looked for a way to use her culinary arts skills to give back to the community. She held her first benefit sit-down dinner for 100 in 2010. Partnering with musician and farmer Jason Mraz and other community members, the event raised $10,000 for Brother Benno’s Soup Kitchen. Gilley credits the event’s success to the magical combination of delicious food and great entertainment. “Food and music are common languages everyone speaks,” said Gilley. “People like to see their entertainment dollars going to something that serves a greater need.” Initial fundraising efforts were so successful Gilley instantly established the Feeding the Soul Foundation. “The Feeding the Soul Foundation

Nothing brings people together like food, and Vallie Gilley—founder and executive director of the Feeding the Soul Foundation nonprofit and owner of Jitters Coffee Pub—brings the joy of food to folks year-round by serving up healthy, delicious, eye pleasing, vegetarian dishes at her nonprofit’s fundraisers and her booming business. A self-taught chef and baker, Gilley got early hand-on training from well-known San Diego chefs and cooked for large temple crowds and weddings before opening Jitters Coffee Pub in Oceanside. “I’m well versed in cooking vegetarian, gluten-free, unprocessed foods, made with local produce,” Gilley said. Once Jitters established itself as a “go-to” hot spot, THEOSIDER.COM

brings the community together in creative generosity,” Gilley said. “We promote local artists, foundations, and businesses that make a positive difference.” Since the nonprofit was launched it has held 110 fundraisers. Events always include food and music, and range from art shows, to sit down dinners, and outdoor concerts. Musicians are paid for their performances, and often donate their payment to the foundation or the fundraiser beneficiary. In eight years, Feeding the Soul has raised over $200,000 in funds and donated goods. Beneficiaries of the fundraisers include small non-profit groups, like Mountain Shadows

Outreach Services in San Marcos, and nationally known organizations like Susan G. Komen. To give some insight into what moves Gilley to use her time and talent to orchestrate the fundraisers, Mountain Shadows Outreach Services provides adults with special needs interactive arts and music activities. “Some of these adults never leave their homes,” Gilley said. “It’s a few hours to be with other people in a fun place.” Another venture Gilley is set to launch shortly is working as the preferred operator of O’side Kitchen Collaborative at El Corazon Senior Center. The city/business partnership supports zero waste efforts by preparing healthy meals, preserves and pickled goods that utilize all parts   25

of a plant, and slightly bruised produce that might otherwise go into the landfill. “Almost everything will be vegetarian, and all food will be tasty and delicious,” explained Gilley. Operations will include foods sales, catering, and culinary arts instruction. Proceeds from the Feeding the Soul Winter SOUL-stice Celebration on December 21 will help support the kitchen collaborative and raise funds for the North County Food Bank.

HISTORIC HOMES OF OCEANSIDE

Oceanside has a variety of eclectic homes and a wide range of architectural styles. There’re hundreds of historic or unique homes in the downtown and beach neighborhoods, which all have a story to tell—if only their walls could talk. Here’s a sampling of a few of those early residences, some of which are no longer around.

Home of Andrew Jackson Myers Oceanside’s founder was Andrew Jackson Myers. He received a land grant of 160 acres in 1883, and immediately set upon establishing the town of Oceanside. Myers is credited with building the first house in Oceanside. His first house was maligned by pioneer resident Samuel Tyson and referred to it as a “shanty,” but Myers did go on to build a substantial house in 1885— more appropriate for a city’s founder. It was located near the corner of Third and Hill Street, now known as Pier View Way and Coast Highway, and was palatial by small town standards. Myers—who was known to drink, gamble, and he even raced horses on Hill Street—lost his house rather quickly, and it fell into the hands of the Couts family, who held the mortgage. The house was used as a boarding house for a number of years, and was later torn down in 1927.

Home of Colonel Daniel H. Horne Col. Horne came from Kansas and served as the President of the city trustees— Oceanside’s first Mayor—when Oceanside became incorporated. Horne Street is named for Horne, as well as Topeka Street, where he was also a pioneer and founder. He built a grand residence at Horne and Second (Mission Avenue) in 1887 at a cost of $5,000; when built, it was the most “pretentious home” in the city at the time. This two-story house was located near the corner of Mission and Horne Street (where Wendy’s now stands), and was later acquired by J.T. Needham. In the 1950s, the house was dismantled to make way for the development of the Mission Square shopping center, and a portion of it was moved to Division Street—where it remains today.

Sledge Residence This Victorian house was built in 1886 and was originally located at Topeka and Hill Street (Coast Highway) and was owned by Captain Harris A. Sledge. John Jolley—Oceanside postmaster—resided at the home from 1898

through 1908. It passed hands several times until 1942 when Ralph Tico, a cousin of Leo Carrillo, purchased the house. In 1952, it was going to be demolished to make way for the new showroom of Weseloh Chevrolet, but it was instead moved to 325 South Ditmar Street. Mildred Rost purchased the house in 1957 and retained ownership through the 1970s. This home is among the oldest still standing in Oceanside.

Aylor/Beck Residence Many new homes were being constructed during the mid 1920s, particularly in a new subdivision built by Banker Bert C. Beers called Plumosa Heights. This exclusive neighborhood includes West Street, along with Alberta and Leonard so named for Beers’ children. Aylette and Anna Aylor owned this beautiful home at 1103 Leonard Avenue in Plumosa Heights. Mr. Aylor had made his fortune in lead and zinc 32

mining in Missouri and moved to Oceanside in about 1929. The Aylors daughter Mildred would later marry Paul Beck. Paul and his brother Harold Beck were owners and publishers of the Oceanside Blade Tribune newspaper. This home is still owned by members of the Beck family.

Exton Residence Thomas C. Exton and brother-in-law William V. Nichols came to Oceanside in 1892. They purchased Stroud’s Drugstore at 310 Second Street (now Mission Avenue). Exton & Nichols Drugstore continued at that location for 40 years. A year after Nichols death in 1931, Exton relocated to 519 Second Street (Mission Avenue). Thomas Exton purchased the Lacoe home at 1015 Second Street (Mission Avenue) and shared it with his sister Mary, who never married. This beautiful house was later divided into two sections and moved to 537 Brooks Street in 1945.

Couts House/Miramar Restaurant This house was originally built in 1887, and was the home of William B. Couts. It was located on the 700 block of North Hill Street and then was moved to its location at 815 North Hill Street in about 1920. It doubled as a residence and a roadside cafe called the M&M and was operated by a couple named Mac and Maise. Oliver Morris, owner of the Carlsbad Hotel and Bel Air Hotel in Los Angeles, purchased the property in the 1940s and transformed the M&M into the MiraMar Restaurant. It was one of the most popular restaurants in its time, and was frequented by residents and tourists, along with Hollywood celebrities and politicians, such Bing Crosby, Bob Hope, Barry Goldwater, Pierre Salinger, and California Governor Ronald Reagan.

Hansen House The Hansen house was designed by the Quayle Brothers of San Diego and was built for N.F. and Ida Hansen in 1908. It was located in “Pine Heights,” an area at the northeast end of Eighth Street (Neptune Way) and afforded panoramic views of the Pacific Ocean. In 1933, William Clark Lawrence purchased the home. “Bill” Lawrence was a native of Greenville, California and helped to develop the Feather River highway. He later established a stagecoach route between Reno, Nevada and Greenville. When he retired and moved to Oceanside, Lawrence kept one of his stagecoaches and it was featured in numerous Oceanside parades, fiestas, and area rodeos. The house was moved from its original location in 1999 to North Clementine Street.

Rorick Homes Attorney David Rorick arrived in Oceanside in 1904 with wife and daughters Helen and Ruth. In 1906, he hired C.B. Bishop to build a residence at 108 South Pacific Street. He later built a similar home at 106 South Pacific, where his father resided when he arrived in 1912. These distinctive saltbox homes still stand, and are two of the most beautiful homes in Oceanside. In 1913, Mrs. Rorick gave birth to David Rorick, Jr., who’d later be the owner/founder of the Rorick Buick dealership. Mr. Rorick’s great love of wildlife began while watching birds along Oceanside’s beautiful beaches, and he was a long-time member of the Audubon Society. He was instrumental in establishing the Nature Center at the Buena Vista Lagoon. David Rorick Jr. died in 2002 in the same home where he was born. Both homes are still owned by the Rorick family.

Harrington/Anita’s This two-story Folk Victorian home was originally owned by rancher David G. Harrington. In 1908, the San Diego Union newspaper reported: “D.G. Harrington is building a house on Hill Street, costing $2,000.” Charles and Elizabeth Smith purchased the property in 1942, and it was during their ownership that the house was converted to a restaurant called Smith’s Dining Room. In the 1950s, it was the location of the Original Spaghetti & Pizza restaurant, and in the 1960s and 1970s it was Pernicano’s Pizza House. By 1981, the Harrington house was the home of Anita’s Restaurant—where it remained for over 35 years until they relocated to South Oceanside.   33

Barnard Residence Fred Gardner Barnard built his home at 1111 South Ditmar Street in 1929. Barnard “pioneered the planting of Lima beans in San Diego County” and made them a staple crop in Oceanside and the surrounding area. A native of Ventura, Barnard came to Las Flores on the Santa Margarita rancho in 1907 and was said to be the first farmer to plant a vegetable crop on the Rancho. His Lima bean crops even inspired an Oceanside festival in 1913, Bean Day, which was celebrated at the Oceanside Pier band shell. Barnard and his wife raised three children: Fred Gardner Barnard, Jr., Harriett, and Maryline. The house was originally a one-story structure with an additional level being added later. Barnard owned an additional ten acres until the property was taken for Ditmar Elementary School in the late 1940s. Fred and his wife Neta lived at the home until he died in 1953 and she passed away eight years later in 1961.

Usually, we don’t feature kids in our Homegrown column, as we reserve this section for people who’ve had enough life experience to warrant the exposure, but when it comes to young Caitlin Simmers—age is just a number. Caitlin is on the cusp of turning thirteen, but her surfing is as refined as any eighteen-year old. I guess that what happens when you grow up on the beach. Since the age of four, her parents Jesse and Ali realized early on that both Caitlin and her younger brother Timothy loved the ocean, so as any good parents would do—they immersed them both into surf culture and never looked back. Both kids started competing art a young age and did well in local contests. They attracted many sponsors, including surf industry giant O’Neill.

Caitlin was soon offered a spot on the International Surfing Association world team and went to Japan to compete in the world games. She surfed in the Women’s Open Division and worked her way up to a solid ninth place finish out of 100 participants, including beating four-time world champion Sofia Mulanovich along the way. Not bad for a twelve-year old from sleepy Oceanside, right? There’s no doubt that Caitlin will make it on the World Surfing League tour in her future, and quite possibly the Olympics. With the help of her coach John Daniels, her surfboard shaper Chris Borst, O’Neill, and her strong family support—it’s just a matter of time before she hits the big league. We salute you, Caitlin, and are very proud to call you an Osider for life.

THE PHOTO ISSUE Welcome to The Osider’s first issue dedicated to local photographers documenting the beauty and reality that is Oceanside. Our magazine has always strived to showcase photography first and foremost. Some say it could be considered the Nat Geo of North County. Photography plays such an important role in capturing our city’s essence as it changes from day-to-day that we decided to collect images from the best of the best. This is only a small selection of the photographers who are working hard in our community every day creating interesting imagery. We only wish we had more pages to showcase everyone. In this issue, you’ll see a range of work from amateurs to well-seasoned pros. Shane Hall was born and raised in Harrisburg, Pennsylvania, where he began playing music at an early age and was just twelve years old when he first picked up a guitar for the first time—a 1969 Guild G35 acoustic that he still plays 27 years later. As a youngster, he honed his singing skills at his local church, and soon after, he became fascinated with the world of music and all that it had to offer. At that point, young Shane knew he was “all in” and was hooked. Hall cites his early musical influences as R&B, 90s hip hop, R. Kelly, BoyzIIMen, and 80s hair metal bands like Def Leppard, Warrant, and Bon Jovi. Another huge influence is legendary singer/guitarist Jimi Hendrix: “I can identify with Jimi, not just because of his musical ability, but also for his style and approach to playing music. That’s what I relate to the most,” said Shane. “Blues/Soul/Americana is my genre because it has all the stuff that gives me the feels. And it’s a hybrid.” In 1999, Shane moved to Oceanside via Camp Pendleton, as he was an active Marine for fifteen years—the Corps provided him with many opportunities to see the world, more specifically Japan, as he joined his first band while stationed in Okinawa in 2009. Cut to 2013, Shane moved back to Oceanside and found himself playing some “open mic” nights at some local bars, and then went onto to play his first acoustic set at the old Hill Street Café. I work around the corner from Valerie’s, and it has been a godsend! Their food is fresh, incredibly tasty, and their customer service is outstanding. I was excited to meet with Valerie and get to know more about the woman behind the enterprise. I had never met her, but have had many interactions with her husband, Steve, as he’s the mainstay at the Ocean Ranch location. I was even happier to interview her and hear that she’s a homegrown Osider! While born in Fresno, she moved here at four years old and attended North Terrace Elementary, Jefferson Middle, and Oceanside High. That’s why it was important for her to start in Oceanside when she split off from the well-known San Diego Roberto’s chain to start her own restaurant in her hometown. We are so grateful that she did! As the mother of six children, it’s incredible that she has the time and energy to run multiple eateries. Valerie attributes her success to the support of her husband, Steve, her mother, Carmen (who first started the handmade tortilla tradition), her children, and also her employees. There’s a family atmosphere at Valerie’s, and many employees have been with them since the beginning. I think that’s the secret to their amazing customer service. They care about serving excellent food because it’s their passion! I was thrilled that they opened another location right by Target off El Camino Real. Even closer to my house, and better yet is that it isn’t the same as the other one. It’s an authentic Mexican street taco shop that serves delicious quality tacos, burritos, fries, chips, and even serves alcohol! Who doesn’t love a mouthwatering taco and cold beer? Exactly! THEOSIDER.COM

We tried a variety of their favorite things, starting with the TJ Hot Dog—a juicy, bacon wrapped wiener topped with mayo, pico de gallo, and cotija cheese. The flavors erupt in your mouth and go perfectly together. Another Mexican specialty is Elote (grilled corn on the cob) covered in mayonnaise, cheese, and chile seasoning. It’s delectable and difficult to find just anywhere. Next were the Al Pastor fries—slow cooked pork carved right from the rotisserie piled high over perfectly golden fries smothered with guacamole, sour cream, and queso fresco. Somehow the pork was crispy yet tender. Absolutely the best I’ve ever had! Then came the Surf and Turf fries. Yup! You guessed it, perfectly grilled shrimp and carne asada over fries served with cheese, guacamole, sour cream, salsa mex, and queso fresco. Both the classic Baja and Grilled Mahi Taco are stunningly good. The fish tastes fresh because they pride themselves on getting their meats daily. The Diablo taco is spectacular with its crispy cheese lining the tortilla filled with fried butterflied shrimp, topped with Diablo sauce that packs a kick, cabbage, and chipotle sauce. It’s important to note that the tacos are not tiny street tacos; these are hefty and full of meat. You’ve got to check out the salsa bar, but it’s not for the meek! They also have deliciously refreshing Aguas Naturales, natural juice drinks, made fresh such as cucumber lime, melon, Jamaica, and horchata. Valerie’s has something for everyone, and you cannot go wrong. Exciting news for The Osider readers only: They’ve acquired another site across from Oceanside High, and plan to open in early 2019. Those lucky high schoolers, and everyone in town will be stoked. We’re glad to see them continue to grow and are looking forward to enjoying another wonderful Valerie’s location. 60
