Is 2020 over yet? That seems to be a question we’ve all been asking ourselves a lot lately. The answer is “not quite,” but there’s light at the end of the tunnel. It’s now November and the election has been well under way. Whichever way it all goes, we’re happy to just move forward and get back to a somewhat normal life. For us here at The Osider that means making a magazine that puts a smile on your faces every time you open up an issue. Our annual Photo issue should do just that. This edition is chock full of our amazing local photographers’ work. Seeing their perspective of our city is a great reminder of the beauty and splendor that Oceanside has to offer. And it’s not just the photography we’re proud of—it’s also the amazing writers and the positive words that we share in each feature they write. There’s so much good happening out there. We all know 2020 has been tough, but we’re a resilient community that deserves some positive vibes as we close out this crazy year and move into the next. Whether you’re “Left,” “Right,” or “Somewhere in the middle,” try to remember that we’re always at our best when we come together and focus on the good and not the bad. HOW TO MAKE ALFAJORE COOKIES WITH JOSE MENDOZA, OWNER OF SAN LUIS REY BAKERY
The Alfajore is a well-known Latin American cookie in which the actual cookie is not sweet, but it compliments well with the sweet dulce de leche filling. It’s a generous sweet to be used for a craving or as a dessert, and it won’t take long for it to become your favorite cookie—especially great to share with your loved ones this holiday season! Ingredients: 4 cups salted butter 6 cups all purpose flour 2 cups powdered sugar 2 cups Cornstarch 2 teaspoons vanilla extract ½ cup powdered sugar (for sprinkling on top)
Preparation: 1. Sift the all purpose flour and cornstarch. Set aside. 2. Combine salted butter and powdered sugar in a mixing bowl. Run mixer at medium-high speed until fluffy for a few minutes, then add vanilla and keep mixing. 3. Add flour and cornstarch and mix until doughy consistency. 4. Remove dough from mixing bowl, place on wooden cutting board, and let rest in the refrigerator for a couple of hours to let the structure set. 5. After a few hours, remove from the fridge, roll it out, and cut with your favorite cookie cutter. 6. Bake cookies for 15 minutes at 300 degrees. 7. Let cookies cool, then you can fill them with dulce de leche and top with another cookie to make a small sandwich. You can always use any other filling of your preference. 8. D ust with powdered sugar for decoration or dip (or drizzle) chocolate on top and enjoy!

Oceanside prides itself on its tight-knit communities, composed of tight-knit families, in a sports-loving city. The combination of Oceanside’s pride is the double-delight golfing twins, Jasmine and Janae Leovao. As Oceanside’s Finest, the twins are “putting” Oceanside on the map. In just five short years, the Oceanside natives picked up golf clubs, started golfing, and have made a name for themselves in the world of golfing—adding to our proud sports legacy. The youngest of five children, the “golfing twins” were born in Oceanside’s Tri-City Medical Center in 2004. The girls were truly born and raised in Oceanside, attending Foussat Elementary, and now El Camino High School. Around the age of eleven, their father Jan took the girls to a golf range to putt some balls. Jan’s always been passionate about golfing—even making a range in his yard while growing up in American Samoa. Very quickly, Jan knew his twin girls were gifted—and what a niche! A pair of fraternal twins (that look identical) and excel at golf! “After trying out different sports and nothing clicked, within just four months, they were improving, and getting really good, really fast,” explained Jan. Now, the girls golf almost every day, and love it. They’re a common sight at Goat Hill Park, where Jan (their father and coach) putts along with them, and their mother Bobbie is their #1 supporter. The twins are thankful for local organizations that have supported their golfing journey along the way. Pro Kids/First Tee of San Diego, North County Junior Golf Association (NCJGA), and the staff at Goat Hill Park Golf Course have worked diligently to help the twins both locally and nationally. But when it comes to their favorite golf course, Jasmine
explained: “Every time I go to Goat Hill, it reminds me of how much I need to practice because it’s challenging and that’s humbling. Our favorite is Goat Hill Park. It holds a special place in my heart.” Dave Emerick with North County Junior Golf Association (NCJGA) coaches the twins. “Sometimes you’re blessed with certain people that come into your life, and the twins come from a really special family. They have great parents. They’re sixteen and they wake up at 6am to golf with their dad. They continue to volunteer and teach kids to golf whenever possible. They’re Oceanside, they’re
“Sure, we get mad at each other, but we have to work it out,” they explained, “but we’re constantly pushing each other to do better” authentic and they work really hard. In turn, the Oceanside golf community supports them in any way we can.” Working as a team and competing with each other on and off the field is their best strategy. “Sure, we get mad at each other, but we have to work it out,” they explained, “but we’re constantly pushing each other to do better.” Now Juniors, the twins started high school varsity golf their freshman year at El Camino High School (ECHS) at number-one and number-two players. They both made 1st Team 2019 All CIF girls golf team, and while at CIF in 2018, Jasmine broke ECHS
s c h o o l r e c o r d w i t h a r o u n d o f 6 7. T h e i r accomplishments include: Top 2 NCJGA Players, Janae (first place) and Jasmine (second place). They’re ranked second and fourth in SDJGA. Jasmine qualified to play for the CA State title, and she was the first student in ECHS history to go state, and ranked fifteenth place. A highlight of their golfing career was when Jasmine was chosen to participate at Pebble Beach in the PURE Insurance Championship with her partner Tom Pernice Jr., and placed tenth for Team and second as an Individual. Off the golf course, they excel, as well, with both girls carrying a GPA over 4.0. The twins are also accomplished musicians. They play in El Camino High School’s Orchestra. Janae plays the cello, and Jasmine plays the viola. “Being in the orchestra helps our golf game with tempo, and understanding music is an advantage. With both golf and music, when you’re performing, you can’t show you messed up, and you have to just keep going,” said Janae. Currently, they’re preparing for the U.S. Women’s Amateur Four-Ball Championship. As the ECHS Class of 2022 golfing twins set their sights on the future, and move from their beloved home of Oceanside, they’ll surely shine bright. This past summer before their junior year, they accepted an offer to play golf for San Diego State University (SDSU). After college, Oceanside’s very own golfing twins dream of golfing professionally in the Ladies Professional Golfing Association (LPGA). With so much pride and love for Oceanside, they’ll definitely represent their favorite city as Oceanside’s Finest!

Every year during the holiday season, we seem to find ourselves with more and more leftover food, and sometimes we just aren’t sure what to do with it. Californians throw away nearly 6 million tons of food waste each year, which is sent to our landfills, destined to become toxic greenhouse gas emissions. You can dramatically reduce your food waste during the holiday season before, during, and after your holiday baking and cooking. See below for tips, tricks, and recipes to assist you every step of the way and take action against food waste. Your planet (and taste buds!) will thank you.
MEAL PLAN FOR PERFECTION Prepping for your holiday meals is all about having a plan. Determine your menus before going to the grocery store, and see where recipes use the same ingredients so you aren’t stuck with too much thyme or the scallion greens going unused. Stop food waste before it starts by shopping your pantry and freezer first to ensure you only buy what you don’t have on hand. You may just have that can of pumpkin or vegetable stock stowed away from the last holiday season! After your feast, use those recyclable takeout containers you’ve been piling up or request that guests bring their own reusable containers for their leftovers to take home. Your empty yogurt container is the perfect size and
shape for soup, green beans, or stuffing! Also invite friends and family to pack their own leftovers so they are sure to get what they want and with the correct portion size. ENJOY HOLIDAY LEFTOVERS “WITH A TWIST” Find yourself with too many rolls and cranberry sauce after the holiday feast? Make a sweet creation to extend that holiday flavor! Cranberry Sauce Bread Pudding Ingredients:

2 cups whole cranberry sauce 3 cups of cubes rolls/bread 2 cups of half and half 3 eggs 2 egg yolks 1 tsp vanilla 1 tsp cinnamon 1/4 tsp nutmeg
3-4 cups trimmings from vegetables and herbs (tops/bottoms/skins/stems) Water Salt & pepper, to taste

Heat the oven to 325 F. Put the cubes of toasted bread in an 11x8 glass dish.

Spoon the cranberry sauce in little piles over the bread.

Whisk together the eggs, egg yolks, and sugar. Whisk in the vanilla and spices, then stir in the cream. Pour over the bread and cranberries.
4.
Bake for 50-55 minutes and enjoy with a dollop whip cream or vanilla ice cream.

them in a bag or container in the freezer – they can stay frozen up to 6 months. Continue accumulating scraps until you have about 3-4 cups worth.

Dump the scraps into a pot and fill ¾ of the pot (or until scraps just start to float) with water.

Bring water to a boil and then let it simmer for at least 30 minutes. Strain the stock and compost the leftover scraps.

And for all that leftover stuffing? Turn it into a quick and tasty meal via muffin pan! Ingredients:

Heat the oven to 375 F. Add the stuffing, turkey, and spinach to a bowl, then stir lightly to combine without breaking up the stuffing too much.

Liberally coat each well in a muffin tin with non-stick spray (or butter). Divide the stuffing mixture between all 12 cups. Leave the stuffing loosely packed in the cups so that the egg mixture can fill in the empty spaces.
3.
In a medium bowl, whisk together the eggs, milk, salt, and pepper. Divide the egg mixture among the 12 cups, filling each about 1/2 to 3/4 full. The eggs and stuffing mixtures will expand during cooking, so try not to over fill.

Bake the muffins for 25-30 minutes or until lightly golden brown and crispy on the top. Allow the muffins to cool slightly, then run a knife around the edges to loosen and remove each muffin.
Utilize Those Food Scraps!
Don’t let those food scraps go to waste! Those bits and pieces from your fruits and vegetables can be turned into gold. Use skins, stems, and tops from your vegetables and herbs to create a delectable broth, and save those fruit pits and egg shells for your compost bin. 19

FOOD SCRAPS TO COMPOST GOLD Why compost? By keeping your food scraps and organic material out of the landfill, you prevent the production and release of methane, a powerful greenhouse gas. What can you compost? Any vegetative scrap that doesn’t get used in your actual recipe – a peal, a stem, a pit, etc. – and food-soiled paper items like coffee filters, napkins and tea bags if you have a backyard static compost system. Things You Didn’t Know About

Wrestling had an interesting beginning in Oceanside—and it all started with one woman. Maria Rapa was born in 1899 in Montifalcioni, Italy. She and her family arrived in the United States when she was just two years old. After her father’s death, she and her two sisters were living with their mother in Inglewood, California, where Maria worked as a cashier at the Pantages Theater. In 1931, Marie (as she was later called) went to work for James J. Jeffries, a one-time heavy weight-boxing champion, and was in charge of his box office at his Burbank arena. Marie worked for Jeffries for eighteen years and gained insight and experience in the sports and entertainment world where she’d make her mark in sports history. 21

While at a dance in Hollywood one evening, Marie met John Seymour Middlekauf, a milkman living in Pasadena. The two married in 1932. John and Marie relocated to San Diego County in about 1944 and bought a ranch in Vista. Marie wanted to pursue a career of her own in wrestling promotion and began scouting locations to hold wrestling matches in Oceanside. The population was booming because of the military base Camp Joseph H. Pendleton, and Marie knew that Marines loved rowdy contact sports.

Marie Middlekauf was the first woman in California to obtain a license from the California State Athletic Commission, and perhaps one of just two women wrestling promoters in the entire country. Her chosen profession did not come easy. She had to fight for herself and convince a maledominated business world and an all-male sport that she could hold top-notch wrestling matches. The athletic commission granted her license on the condition Marie would not use wrestlers from Los Angeles County, which of course, were some of the most popular. The implication was that few wanted a woman to succeed. Marie’s tenacity won out and she was eventually allowed to seek the best talent.

The next difficulty she faced was obtaining a location in which to put on the wrestling matches. She applied for a conditional permit with the city of Oceanside in 1944 allowing for an “amusement zone” near the M&M Restaurant on the 800-900 block of North Hill Street (Coast Highway) in order to establish a boxing arena. This area was used for traveling circuses when they came to town, as well as for organized baseball games and seemed a logical and practical location, but Marie’s permit was denied. Despite the slight, Marie would later say, “Through it all, many people of Oceanside gave me assistance. The city officials of Oceanside gave me 100 percent cooperation. I was surprised at the willingness and eagerness of many citizens to help me.”

In 1946, Marie and John purchased several lots on Seventh Street (Windward Way) between Tremont and Cleveland Streets, and applied for a building permit for an arena. The two then bought a home at 710 North Tremont Street, near the new site. Building materials were still in short supply even after the War, and the Civilian Production Administration, which had replaced the War Production Board stopped progress of Marie’s new arena altogether. 22

Despite the setbacks, Marie would eventually see the completion of her $80,000 arena. The Oceanside Athletic Club’s grand opening was July 30, 1949. The Main Event featured a heavyweight championship wrestling show. Celebrities included Jimmy Londos (a former world’s heavyweight wrestling champ), Glen Lee (the “Nebraska Wildcat” a former world’s champion boxer), and John Agar (a motion picture star). The premiere wrestler was Enriques Torres, then idolized by wrestling fans throughout the country, and touted as one of the “most versatile, powerful, and skilled men in the ranks,” and also as “one of the most handsome stars in the sports world.” Sharing the spotlight in the rink was “El Diablo,” “Little Hercules,” “Honest” Jules LaRance, Canadian heavyweight champion, and “The Masked Shadow.” (At the time, The Shadow was undefeated in more than 60 matches, and his identity was “known to no one but himself.”)

With the opening of her arena, Marie promised ardent wrestling fans that she would continue to offer “the most exciting mat shows on the Coast.” She delivered by bringing some of the most famous names in wrestling to the new stadium, including Gorgeous George, Mr. Moto and Baron Leoni. World Heavyweight Champion Boxer Joe Louis. was a celebrity official at some of the matches.

In spite of her great success (and most likely because she was a woman), Marie was criticized for the manner in which she ran her arena. She held a great respect for both the sport and the athletes and held to higher standards than others. She would not tolerate the audience throwing food items such as ice cream cones at the wrestlers, or allow women
to stick “pins into the villains” or men burning them with cigarettes! The bouts were expected to be raucous, as well as the crowds, but Marie wouldn’t allow injury to her fighters—and they loved her for it.

In addition to sporting events, Marie also brought first class musical entertainment to Oceanside. Woody Herman, renowned modern jazz musician, performed and thrilled the audience in attendance. Featured with the band were the “world’s greatest instrumentalists”—Bill Harris, Oscar Pettiford, Terry Gibbs, and vocalist Mary Ann McCall. It was an exciting time for Oceanside’s music lovers and sports enthusiasts alike—all orchestrated by the talented Marie Middlekauf. During the week, the public could roller skate when the arena was used as a skating rink.

With the coming age of television, local wrestling matches dwindled in popularity and ended their reign at the Oceanside Athletic Club by 1955. For a while, weekly amateur boxing premiered at the club, with teams from Camp Pendleton and San Diego matched together marines and sailors, but that ended as well.

Marie died in 1967. Her husband John continued operation of the building as a skating rink up until 1993. In 1999, the arena was listed on the California Register of Historical Resources. But despite its historical status, the arena was torn down just a few years later—an inglorious end to Marie Middlekauf’s legacy. Owner and founder Mike Mellano launched Coastal Wellness earlier in 2020. “We officially opened for business on February 27th of this year, and things were going really well and then COVID-19 hit. We did okay, all things considered, but we didn’t have an opportunity pre-COVID to build a base of customers,” explained Mike. “So it was a little bit of a challenge, especially with everything locked down and all the traffic in this area disappearing to nothing. But we’re still here, plugging along, and slowly growing every month—ticking up.” During the beginning of the pandemic lockdown, most all licensed dispensaries were deemed as “essential,” allowing local Cannabis businesses like Coastal Wellness to stay open under specific guidelines. “At first, we didn’t know that we were allowed to be ‘essential,’ because in the early days of the pandemic, there was a lot of confusion—no one really knew. But we did have a big surge of business for about eight to ten days of people just
stocking up, and then business dropped off. Once the federal stimulus passed, people felt a little more financially secured,” said Mike. In terms of products, Coastal Wellness carries full lines of flower, cartridges, tinctures, topical creams, CBD beauty products, edibles, and drinks, just to name a few. “We carry the full spectrum of what you’d see in a licensed medical dispensary. It’s all tested, high quality product. We tend to focus on more top-tier products here,” explained Mike. Coastal Wellness has close ties with military veterans, as Mike himself was enlisted in the Army Reserves, serving from 1988 to 1995 as an Infantry Officer. After working and dealing with the healing aspects of Cannabis for a few years, Mike saw a certain need for veterans to use it instead of VA prescribed pharmaceuticals. “Some of these vets were struggling immensely, and they were basically medicating them down to zombie level. I started to get to know people who had self-shifted from pills to cannabis products and they were getting very good results from that,” said Mike. “So that peaked my interest.” “North County has a very high veteran’s population and most of my friends are vets, and 40
so are half the people who work here, so we started working with the HVGC (Helmand Valley Growers Company)—a veteran owned company—as we sell their products here, and we work with Platinum Vape for our Compassionate Care Program. If vets and cancer patients that come in here qualify for the program, they can get product for free a couple times a month to help them,” explained Mike. “Right now, we’re working on scaling that program much larger because licensed legal cannabis is not cheap. The State of California offers the CCP, and we like to use it as it allows us to give away product from a distributor for no charge. The story of Oceanside comes alive every time a mural is painted—transforming a nondescript wall into an artistic destination. At the corner of North Horne Street and Civic Center Drive, Oceanside’s very own, Isabel Figueroa, has created a historical and visual masterpiece. It’s a mural lovingly envisioned and executed by a young woman filled with admiration for Oceanside’s past and present. “The Sacred Offering” mural by Isabel Figueroa is painted on the northern wall of the Northern Pine Brewing building (326 N. Horne Street), and part of the MainStreet Oceanside’s ongoing initiative, Art That Excites. Gumaro Escarcega, MainStreet Oceanside Program Manager boasted, “Isabel’s mural curated by Dinah Poellnitz is connecting our roots to Oceanside’s future growth. The community of East Oceanside “Pozole” responded to our mural process, and we listened by bringing a local young aspiring artist to create a mural that tells a story about our neighbor community.” Her mural is steeped in symbolism, heritage, 42
and tradition. The Sacred Offering tells the story of Anita Cruz Romero who came from Mexico to the United States around 1910. Upon her arrival to Oceanside, the young mother needed to provide for her family, so she made pozole—a traditional Mexican soup—and sold it to her neighbors. The simple act of creating comfort food to make money for her family brought the entire community together. She’d yell out, “Pozole, pozole,” and over time the name eventually stuck, and the neighborhood east of I-5 off Mission Avenue has been nicknamed “Pozole” ever since. Isabel details Cruz Romero and the relationship to posole: “Pozole is a sacred offering to the gods, a sacred spiritual dish—so close to your roots, the history still runs strong. She made the very food that had the initial power to help her and her son survive, and bring her community together. What she did was something sacred for the community.” Upon inspection of the grandiose mural, a few major symbols are mindfully painted. Quetzalcoatl pays homage to indigineous roots bringing the earth and sky together. The eagle is part of the Mexican flag representing strength and power to spread our wings to build a better life. Ometeotl is a symbol of good and bad because everywhere
has good and bad. The butterflies represent immigrants migrating to America. And, the focal point is Anita pouring the food and beginning the whole process, as she’s the beginning of it all—a symbol of creation. Dinah Poellnitz with the Hill Street Country Club empowers local ar tists and believes, “Oceanside has so many artists waiting for the opportunity to project their Oside pride as a celebration and appreciation for our city. This is why Isabel’s artwork will educate the visitor with historical memories of Oceanside. Isabel is a pozole matriarch, a smart and strong woman who’s protecting her community through positive images with art honoring the women who came before her. It’s important that we, as a city, provide opportunities for local artists to thrive here, create 43
memories, and contribute to our local economy to keep Oceanside real.” Isabel comes from an exceedingly artistic family—most still living here in Oceanside. She gives credit to her younger sister, Sofia, as a monumental help in completing The Sacred Offering. Upon delivering Oceanside a brilliant piece of art at such a young age, Isabel’s future is promising. She’s currently a student at Mira Costa College, studying entrepreneurship. Her long-term goal is to understand business in order to turn her passion into a career. Captured in posterity, Isabel’s gorgeous artwork is proudly on display for the community, including her family: “I love everything about Oceanside, especially Pozole, because that’s where my family lives.”

Ever since the COVID-19 pandemic reared its ugly head earlier this year, we’ve all have to get creative to supplement our income. Take Jason Hodges, for instance. Jason’s a lifelong Oceanside resident that grew up surfing and skating in South O. He’s now raising his beautiful family here and working for the Oceanside Unified School District in the maintenance department. The problem is that the schools are semi-closed due to lack of physical attendance. Jason’s always had a creative side and a love for the past history of our beloved city. So now in order to help support his beautiful wife, Kenthia, daughter Tegen, and son Ethan, he’s
creating custom designs and selling screen-printed t-shirts straight out of his garage. He does everything from designing the artwork, burning each screen that he designs, laying down the ink, and drying each custom t-shirt one by one. It’s a true labor of love, and the best part is that all of his artwork pays homage to the history of Oceanside. Whether it be and old bar logo, a classic character from the old 7Eleven where we all got our Slurpee fix growing up, or just a classic saying from our youth—these designs will keep the heads turning. Jason also gives a nod to the legends of his two favorite past times—surfing and skateboarding—with classic designs that poke fun at 50
the current election with statements like “Mark Gonzales For President” or “Gerry Lopez For President.” Pure genius! Oceanside native Bryce Carrier grew up surfing our beaches and is now very happy to be able to share his old favorite haunts with his family, while running a successful Real Estate business. Bryce played baseball for El Camino High School, graduated in 2000, and continued on to a degree from Cal State San Marcos. Seven years ago, he married his wife Alicia, and together they share two young daughters. Bryce began his adventure in Real Estate by chance after it was suggested to him eight years ago while he was bouncing around from construction to sales to hospitality to coaching youth sports. He had been renting out rooms in his house and had “flipped” a property in Long Beach, but wasn’t quite sure where his career path would take him, as the country was climbing out of a recession. One of the dads at a baseball game approached him about the Real Estate route—he took a leap of faith, earned his license, and never looked back. “This ‘dad’ quickly became my mentor and role model. He believed in me and continues to do so. He’s a person I now proudly consider family, and I truly love what I do,” said Bryce.
When asked about the Oceanside Real Estate market in a post coronavirus world, Bryce responded: “Business is good, but also a challenge. COVID-19 has added necessary protocols and additional documents … traditional open houses are difficult to host. There’s competition and tight inventory, however, I’ve never seen a stronger market than what we’re seeing today.” Bryce uses his “local” experience of living in Oceanside to help his clients find the right property by integrating his background in construction and hospitality. He added, “My goal is to provide honest, knowledgeable first class service that sets me apart from my competitors. Every client and real estate transaction is extremely special to me. This is how I support my family, and without them I wouldn’t be where I am today.” He enjoys all of Oceanside’s golf courses, breweries, and restaurants. When he’s not working or surfing, you can find him at local spots such as The Privateer, Anita’s, or Captain's Grounds. “I would say my absolute favorite thing to do in our town is to watch my family splash around in the low-tide with the sunset glazing over the water. THE SWITCHBOARD RESTAURANT & BAR Ohana. The literal, physical, and complete embodiment of family in the Hawaiian culture is more than just a word—it’s a deep-rooted feeling of belonging. That’s the foundational grounding of all things they represent at The Switchboard Restaurant. Ohana of Oceanside, of the military influence in our town, and the connection to our families and the love we can share through food and community. Owner Kevin Shin, Executive Chef Justin Haupt, and the crew at The Switchboard Restaurant are bringing you all the sentiments of true Ohana. Born and raised by immigrant Korean parents in South Bay LA, Shin first found his way to Oceanside back in ’97 when he joined the Marine Corps. It’s then a proper homecoming of sorts that he’s returned here to open a restaurant and name it respectfully to honor the military history in the town that he grew to love. Shin dropped some knowledge: “During World War 2, The Fin Hotel (formally known as Hotel DeWitt) was commandeered by the Southern California Telephone Company as a communications center in support of the war effort. With that in mind, we were inspired to pay homage to this historic building to honor some of the greatest generation of women that worked here.” And the Switchboard Restaurant (in the Fin Hotel) was born. History lessons aside—the food brings a story of its own. With a menu that boasts Hawaiian Plate Lunches and other variations of traditional Island fare, some Korean inspired flavors have snuck into dishes in the most subtle, creative, and mouthwatering ways. The Korean Loco Moco doesn’t miss a beat. Yes, you read correct. The menu here is Korean/Hawaiian

inspired, and is nailing it. The Loco Moco, which is served all day, brings all the feels of Hawaii, but throws in a twist by smothering the plate in the savoriest house made Gojuchang Gravy. Salmon Lomi Lomi, some dang good Korean Fried Chicken, Kahlua Pork Fries, and Garlic Li Hing Mui Shrimp also make an appearance. Head Chef Justin Haupt was trained by Hawaii’s most famous culinary influences, and brings to Oceanside flavors of the islands and masterfully harmonizes them with Kevin’s visions and offerings of his Korean roots. The menu here is a playful and a sensational marriage of some all the best styles and flavors of both Hawaiian and Korean cuisine. Another exciting thing happening at Switchboard is their soon-to-open sister store; a coffee house and roaster called North County Roastery. Some of the coffee beans are hand selected from a small coffee farm on the big island of Hawaii and will be roasted on site, offering a full coffee experience for this community! They’ll be hosting classes, workshops, and tasting events. He’s possibly even entertaining the idea of letting the locals sample varietals and choose their own seasonal house blends. Shin has garnered himself quite the resume: He’s a Culver City fire chief captain, Semper Fi alumni, restaurant owner, coffee roaster, all around good guy, and maybe most importantly—a family man. The support of his wife and kids are not something he could do this without, and his dedication to doing this for them and building strong family values, rings true to the Ohana energy he wants to share with every guest that comes through his doors! 54

Located just a few blocks from the Pacific Ocean on Mission Avenue, the newest dining hot spot Craft Coast is here to offer up some of the best hand crafted beer and Baja-style tacos in town. Three longtime friends Brian Gillen, Lars Erickson, and Blake Masoner launched Craft Coast Beer & Tacos last August during the height of the pandemic. “We were a little delayed as COVID-19 had some effect on our opening, but it was actually better for us to open a little later as it allowed us to do more detail on the inside and also to get more beer brewing. We were able to build up inventory and be ready to open versus jumping into it,” said Masoner. “Our goal is to obviously be as successful as we can but we want to also follow all the guidelines and not jeopardize ourselves and put our business at risk. We’re super excited to get our indoor dining open soon. The main thing I’m excited about is to get people sitting at the bars. We have two bars that can seat about twenty people total.” Craft Coast’s ideology is based on simplicity— only offering a few items that are done really well. “We basically took In N’ Out’s menu concept and hucked the burgers and fries out the window and plugged in tacos, nachos, and mulitas, and then paired that simple food menu with really refined and tasty craft beer,” explained Masoner. Their simplistic menu is a breath of fresh air when it comes to choosing food and drinks, and it definitely makes ordering a lot quicker and easier. The main part of the dining experience at Craft Coast is authenticity and freshness—everything on the menu is made from scratch. And it all starts with a handmade tortilla. “It’s the platform for everything,” said Masoner. The most popular taco served at Craft Coast is hands down the Birria taco, and for good reason.
“We have birria that’s been slow cooked for six to eight hours. Birria is traditionally made with goat meat in Mexico, but here in the USA it’s a slow cooked beef marinated in a really rich broth. We put a little twist on the way we do our birria tacos—the tortillas are fried in the broth. It just enhances the flavor and adding that little bit of crunch with how soft and savory the meat is—it’s like a perfect combination.” Other popular tacos include the Al Pastor, Carne Asada, Veggie, and Pollo Asado, among others. And don’t forget to try their Mulitas Al Pastor— you’ll thank me later! When it comes to their handcrafted beers, Craft Coast brews their own onsite with a ten-barrel premier stainless brewhaus, complete with two twenty-barrel fermenters and two ten barrel fermenters, as well as six serving vessels inside their coldbox. “The goal is to just brew really good, clean American style beer. We’re pretty ‘hop heavy,’ and that’s kind of the way we’re going to be. The main focus for us beer-wise is quality,” stated Masoner. On tap are Coastal Light, Pierside Pale Ale, Critical Liquid IPA, The Strand IPA, and the Beast Of The Northeast, just to name a few. Their beer list is constantly rotating and evolving. Craft Coast is open every Monday through Friday from 12pm to 10pm, and on weekends from 11am to 10pm, so stop on in for the best pairing of beer and tacos in Oceanside! 56
