Whoever invented this magical delicacy deserves an award. With that said, in this issue we’re featuring twenty great tacos to get your mouth watering, along with a first-class ticket on the taco train departing daily here in O’side. Each and every taco on our list brings something special to the table, and we’re super excited to share some of our favorites with you. Also in this issue, we’ll be sharing our ghost hunt at Fire Station No.1 in downtown Oceanside—our findings are downright creepy. Cook one-pint quinoa with one-quart water and until quinoa is fully cooked. 3. Blend one-pint raw quinoa in blender until completely powder. 4. Peel beets once cool with rag, break up roughly onto sheet pan and roast with oil/half seasoning mix until dry on outside and slightly caramelized. 5. When roasted beets and cooked quinoa are still warm, combine all ingredients in recipe together in bowl until well mixed, and then cool. 6. Form patties into seven-ounce portions and grill.

The idea was to create a simple vegan burger. It contains beets, quinoa, and seasoning with no egg or breadcrumbs as a binder. The burger is vegan without the turmeric goat cheese spread, and gluten-free without the bun (lettuce bun). INGREDIENTS: 5 lbs. Red beets 1 quart White quinoa ½ teaspoon Turmeric ½ teaspoon Cumin ½ teaspoon Smoked paprika 1 teaspoon Onion powder 1. Submerge unpeeled raw beets in water, red wine, red wine vinegar, and aromatics in a pan. Then season liquid with salt. Cover in foil and cook in oven at 350-degrees Fahrenheit one-to-

GOT FOOD SCRAPS? DIY BACKYARD COMPOSTING Did you know that approximately 30-percent of our waste stream in California’s landfills is made of organic material—that’s yard trimmings and food waste! The majority of these materials can be composted right in your own backyard producing a rich soil amendment for your garden and veggies. Most importantly, it’s simple to do as demonstrated by an Oceanside local, Eagle Scout Steve Fetzer. Steve acted as the designer and project manager for the construction of a vermicompost bin and educational zero waste kiosk, which will serve the needs of 24 Eastside families dedicated to healthy food and a healthy planet. Feeling inspired? Want to stop sending food to the landfill? Follow Eagle Scout Steve’s instructions to build your own vermicompost bin in your backyard! THEOSIDER.COM

Composting—fun for the whole family!

MATERIALS • Two nesting rectangular plastic tubs • Drill (with ¼ inch drill bit) for air holes • Shredded coconut fiber (coir) or shredded paper • 1 pound Red Wiggler Worms • Food Waste MAKE YOUR BIN • Drill about 10 ventilation holes on each side of the bins near the top for ventilation • Drill about 20 evenly spaced holes in the bottom of the upper bin only to provide drainage MAKE YOUR WORM BED • Gather and lightly moisten shredded paper and coconut fiber (coir) to make the bedding for your worms • Add about 8 inches of bedding material to the bin and spread evenly • Place worms on top of bedding, worms will work down into bedding

FEED YOUR WORMS • Dig a small hole in bedding and add vegetable and fruit scraps (smaller pieces are easier for worms to eat) • Cover hole with bedding • Do not add meats, fish, dairy products, or excessive amounts of citrus • Do add egg shells, coffee grounds, and grains along with your fruit and veggie scraps • Each time you add food waste, cover your worm bed with a blanket of sheets of paper or cardboard

Within one month worms will move to new side Remove old compost for garden and add new bedding to empty space Repeat by alternating sides

At the age of three, Cecilia Bañez Mondero’s dad placed her in front of a piano for the first time. Shortly after gliding her fingers across the keys in easy fashion, U.S. soldiers created a makeshift stage so Cecilia could entertain the troops as they celebrated the liberation of the Philippines during World War II. The song, “Boogey Woogie Bugle Boy” began Cecilia’s lifelong music and personal journey of love, loss, and carrying on a family legacy. “Music is part of everyone’s soul,” Cecilia said. “Whether it be a classic like ‘Boogie Woogie Bugle Boy,’ a concerto by Beethoven, or inspiring lyrics—music calms the body, mind, and soul. The opportunity to share a few notes is a love and passion for music that’s indescribable.” Music has been a significant part of Cecilia’s life. Her father, a prodigy in his own right, groomed Cecilia all while working alongside Francisco Santiago, sometimes referred to as “The Father of Kundiman Art Song” (or traditional Filipino love song). In 1957, Cecilia made her father proud by winning the prestigious Young Artists Competition at the University of Redlands. While attending Holy Names University in San Francisco for her Bachelor’s Degree, Cecilia met her husband—a fellow Filipino serving in the U.S. Navy. She set out on a new journey, including the births of three sons, and moved from one military town to the next. In 1981, the family settled in Oceanside and planted forever roots. They owned several local restaurants, including the Sandpiper at Buccaneer Beach (now called Buccaneer Galley

and owned by family friend Charlie Anderson), a diner at the former Greyhound bus station in downtown Oceanside, and a food truck serving construction sites in the city. While managing restaurants and raising three teenage boys, Cecilia continued sharing her passion and love for piano and music throughout Oceanside. She was a music teacher at St. Mary Star of the Sea School and taught piano lessons in her home studio. She worked as a pianist and choir director, having played at Mission San Luis Rey, St. Mary Star of the Sea, St. Margaret’s Church, and the chapels on Camp Pendleton.

“Music is part of everyone’s soul” — Cecilia Mondero Cecilia earned a Master’s Degree in Public Performance in 1965 from the University of Redlands, a Master’s in Music Education in 1970 from the University of California and a Master’s in Music Therapy in 1980 at West Texas State University (renamed West Texas A&M University). Today at the young age of 77, Cecilia continues to teach piano in her home studio, she performs at the Oceanside Senior Citizens Center, and shares her love of music most nights at the Bread of Life Rescue Mission. “I’ve had a rich life with music, my husband, my sons, and now my granddaughters. Teaching or sharing music is just who I am and I don’t know a different way of expressing my soul.”

When the summer heat has got you beat, the perfect choice for any hot day would have to be ice cream. And Mariposa has some of the best in Oceanside. Owner Ben Magana opened Mariposa Ice Cream for business around seven years ago. “My family moved to Oceanside in 1934, explained Ben. “So I’ve been living here all my life. I love this city!” Before owning an ice cream shop, Ben worked as an IT project manager for 22 years. His cousin Anna Magana has owned the Mariposa Ice Cream parlor down in Normal Heights, San Diego (located at 3450 Adams Avenue) since 2000. north by Yosemite in Mariposa, California— hence the name “Mariposa Ice Cream.” Mariposa Ice Cream first opened up by the pier as a pop-up tent and was only open during the summer months. Today, Mariposa is neatly situated in an 8x8 hard-shell temporary structure and serves up ice cream year round with July and August being their busiest months. Popular flavors include Cookies & Cream, Mexican Chocolate, and Cookies & Mint, and the fresh waffle cones are a big hit. “We keep it simple here at Mariposa, our top sellers are fresh-made waffle cones and root beer floats,” said Ben. Compared to most commercial ice cream, Mariposa uses about one-third less sugar and half the air of regular ice cream. What you get is a rich fulfilling taste without all the sugar, and that means it’s better for you. Mariposa ice cream offers gluten-free ice cream as well. Other popular flavors include Maple Walnut, White Chocolate Raspberry, Vanilla, Strawberry, and Coffee. With top shelf homemade ingredients and a keen focus on customer service, Ben and his manager Angelica Schmidt are creating an experience at Mariposa Ice Cream that locals 24

and tourists alike will cherish for a long time. “We really strive to give our customer an experience. With that, we’ve become a destination,” said Ben. And that’s what makes this hidden gem so special.

Oceanside Breakers has scored countless goals both on and off the field. This year, The Soccer Club of Oceanside (known as the “Breakers”) has reached a major goal by celebrating 40 years on the soccer fields of Oceanside. For 40 years, Breakers have helped local youth stay physically active, and involved in their community. The mission of Oceanside Breakers is defined by the “Three C’s:” Community, Camaraderie, and Commitment. “One of our top goals is to create an environment whereby children learn not only soccer skills like passing, dribbling, and shooting, but also skills for life,” said Frank Zimmerman, Director of Coaching. “Oceanside Breakers helps accomplish its mission by keeping fees low so all kids can participate; utilizing dedicated volunteers that know the sport; and connecting with the community for sponsorships and donations to offset costs and foster partnerships.” Annually, Oceanside Breakers coaches approximately 2,000 local youth from ages fourto-eighteen that represent a cross-section of Oceanside. There are two groups—recreational and competitive. Breakers recreational soccer teaches the fundamentals of soccer, teamwork, and sportsmanship on the soccer field. The Breakers Competitive Program allows players to compete at higher levels and travel throughout Southern California. The volunteer corps that fuels the organization is unique and a huge asset to the Breakers. Many THEOSIDER.COM

volunteers are family members that are able to give their time to offset the costs of playing soccer—especially, for families with competitive players that incur travel expenses. A large part of what has made Oceanside Breakers successful for 40 years is the “family feel” of the program. Most of the leadership is from Oceanside and were once Breakers players themselves, so they consider the program an extension of their own family. Vice President of Operations, Jose Prieto, was a Breaker when it started in the 1970s and has watched the organization grow over four decades to its present-day success. Mari Camarena, soccer mom, volunteer, and Competitive Registrar has watched all four of her kids play Breakers soccer. She said, “I love it because it’s a big family environment. You get to know all of the parents on recreation and competitive. It keeps my kids busy and active and my oldest daughter was able to play and maintain a 4.0.” Oceanside Breakers offers two three-month seasons. Fall season is in full swing, but registration for Spring season begins in September/October. Congratulations Oceanside Breakers for 40 years—still growing and thriving!

In September, Surfside 4-H will begin its second year in Oceanside providing local children access to the 4-H way: A “researchbased experience that includes a mentor, a hands-on project, and a meaningful leadership opportunity.” The first general monthly meeting will be held on Tuesday, September 12, 2017, at 6pm at South Oceanside Elementary. Surfside 4-H is inclusive and welcomes all youth ages five-to-nineteen years as an excellent opportunity to be involved with America’s largest youth development organization. The classic “green and white” uniforms with the four-leaf clover patch represent more than raising farm animals. 4-H is a multifaceted organization that caters to the needs and interests of kids in each community. With a specific focus on STEM and the environment, this year Surfside 4-H will offer projects in Chess, community service, creative writing, drawing, fishing, cooking, outdoor adventure, rifle, robotics, sewing, and yoga. Surfside 4-H members nine years of age and older that are

interested in raising animals and agriculturefocused projects can crossover to sister chapter, Fallbrook 4-H. Kids aged five-to-eight years are considered primaries. Primary members are encouraged to choose one project to start their 4-H experience. Surfside 4-H found success in it’s inaugural year with 35 kids, but needs collective involvement

“4-H is a multifaceted organization that caters to the needs and interests of kids in each community” to take it to the next level. According to Community Club Leader, Lea O’Reilly, Surfside 4-H would love to offer projects in surfing and skateboarding, but need project leaders to volunteer. Also, since there’s very little zoning in Oceanside that allows livestock, one of O’Reilly’s long-term goals is to find a landowner willing to

donate property for members to raise animals such as swine, goats, cattle, and sheep. Those animals can then be shown and sold at the annual San Diego County Fair. Community service is a required component for every 4-H member. Beach and lagoon cleanups, food drives, and collecting toys for the animals at the humane society are just a few of the favorite ways Surfside 4-H members achieve their community service hours. O’Reilly wants to make sure every child is included: “We’ll figure out something that will work.” The general meetings and project meetings can be adapted for special needs. Scholarships are also offered for financial assistance to help cover the $51 annual dues and other project costs.

El Corazon (meaning “heart” in Spanish) is considered the geographical center or heart of Oceanside. The area currently consists of 465 acres, which is bounded by Mesa Drive, Rancho Del Oro Drive, Oceanside Boulevard, and El Camino Real. For thousands of years, only plants, wildlife, and the Native Americans occupied the land.

In about 1870 the land, a vastly larger area than present day El Corazon, was surveyed by the US government and made available for land grants. This expansive area was classified as “adobe soil” with “heavy growth of oats and mustard.” One of the earliest individuals to receive a land grant of 160 acres was Marcel Costan on September 20, 1882; followed by Henry Fischer, September 9, 1889; Antonio Gonzales, December 5, 1890; and Nicholas Gonzales, Jr., on February 7, 1891. Oscar Schutte purchased 320 acres in 1909 from subsequent owners for $5,900. Schutte planned to develop water on the property and grow alfalfa crops. It’s unknown if he was successful.

In 1927, silica sand was discovered on a portion of the vast acreage. The news was published in newspapers across the state. The Crystal Silica Company leased 74 acres of Schutte’s property to begin operation of a sand plant. It utilized the Escondido railroad line that ran along the property for shipping to San Diego and Los Angeles. It was the only plant of its kind in San Diego County. Silica is industrial sand or gravel, with high silicon dioxide (SiO2) content. These sands are used in glassmaking; for foundry, and other industrial uses. One other use was purely recreational—it was used in sand traps on golf courses.

Harry and Sophie Cubbison obtained land north of what is now Oceanside Boulevard near present day Rancho Del Oro Road and built a sizeable ranch. Sophie Hutching was born in 1890 in San Marcos. In 1916, she married Harry G. Cubbison and opened a bakery in Los Angeles. Her company expanded and she established Cubbison’s Melba Toast and Cracker Co. The Cubbison Ranch property was sold after Harry’s death in 1954.

In 1956, the Ottawa Silica Company acquired Crystal Silica and leased an additional 160 acres, expanding the plant’s operation to an area north of present day Oceanside Boulevard. The new owners purchased more of the surrounding acreage, which would become Rancho Del Oro. It also leased some of the Talone Ranch lands, which extended the boundaries to Mission Avenue.

In addition to sand mining, some of this property had the state’s largest lemon/lime grove. In 1967 and 1968, 200 acres were planted in lemon trees on what was termed “the Rancho Del Oro Estates.”

In 1981, the Ottawa Silica Company joined the Collins Development in a joint venture to develop 600 acres, which was touted as the “biggest thing to happen to Oceanside since the Marines landed.” That development would be named Rancho Del Oro and would later include housing developments, hotels, and commercial property, along with a new industrial park. The term Rancho Del Oro means “ranch of gold,” and it was the name given to the land by the city and the property owners twenty years before it was even developed.

The area south of Oceanside Boulevard (now used by Superior Ready Mix, Evergreen Nursery, and Orco Block) was once occupied by a silica plant.

The El Corazon property was donated to the city in 1994 by the Crystal Silica Company, and soon after, long-range use plans for the area began to develop. One of the first facilities to open on the property was Moodys El Corazon Recycling, which provides reuse of construction products, such as concrete and asphalt, in order to avoid the material ending up in landfills. In addition, AgriService provides a green waste compost facility at El Corazon.

9. SoCal Sports Complex

A beautiful new senior center was built just west of Rancho Del Oro in 2009. It’s currently the first only structure built on the El Corazon lands. The El Corazon Senior Center serves all Oceanside seniors, but is more centrally located for Oceanside’s senior living facilities, including Oceana and Peacock Hills.

The SoCal Sports Complex opened in 2014. Along with a nature trail, it features 21 soccer fields on 52 acres. The complex brings thousands of people to the heart of the city for tournaments. Future plans for El Corazon include an aquatic center. The area that includes and encompasses El Corazon has vastly changed since it was surveyed and homesteaded over 130 years ago. With future plans still to be realized, El Corazon has been transformed from sand pits to green recycling and outdoor recreation.

At night, Fire personnel still hear footsteps of the prisoners making their way up the steep stairway. Some say they sense a prisoner who’ll never leave ‌ is it Johnny?


When we envision a fire station, we typically think of a safe place where our modern-day heroes wait to respond to emergency calls. These men and women are nothing short of brave. In their line of work, they witness things that most of us cannot even imagine. But at Fire Station No. 1 there are things happening that have our first responders feeling uneasy—paranormal activity. The firehouse was built in 1929 and was designed by famed architect Irving Gill. The building had a duel purpose. It functioned as Oceanside’s fire station, as well as the police station. The living quarters for the firemen was located above the garage and had a brass pole that allowed quick access to the truck. The police station was next door (within the same building) and included an office, radio room, and booking and visiting rooms. The jail was located upstairs. “You had to drag everybody up those stairs. The drunks were the hardest to get in the jail,” said Ernest Taylor, who worked as a full time fireman and police desk sergeant in 1935. One of those drunks was named Johnny Rebovick. Within a 20-year span, Johnny had been arrested more than 56 times, mostly for public drunkenness. In 1967 Johnny was arrested one last time. He was placed inside a jail cell and given a meal. Later that night, Johnny was found sitting with his back against the wall, lifeless. The night we conducted our paranormal investigation, the firemen gave us a tour of the building and shared their paranormal experiences. Johnny’s name came up often.

“The guys get messed with all the time and a lot of the guys won’t even sleep (in the bunks). That’s where the jail cells used to be. They’ll usually stay in the front room,” said Captain Tim Scott. “Whatever is here holds you down, you can’t move, and you can’t speak. In the beginning it’s unnerving, but after awhile you get used to it.” The firemen identified three locations as THEOSIDER.COM

having the most paranormal activity—jail cell #1, the “drunk tank,” and the women’s holding cell. All three have been converted into bunks where the guys refuse to sleep. After the tour, the firemen left the area so we could secure the space and set up our monitoring equipment. Our team consisted of four other people—Zach Cordner, Pascal van den Berk, Jace Gardenier, and Mike Pittman. We came armed with eight night vision cameras, numerous digital voice recorders, multiple professional grade DSLR cameras, K2 EMF meters, and apps that allow energy to be converted into actual words. Once everything was in place, we turned off the lights, fans, air conditioning, and anything else that might provide noise pollution. Fire House No. 1 was silent. The air was balmy. We had no idea what we were about to encounter. I ended up taking cell #1. A bottle of whiskey accompanied me inside the cell in hopes of enticing the dead to interact with us. The rest of the team spread out throughout the building. As our night vision camera rolled, the cell seemed quiet and peaceful. I could see the moonlight

shining through the skylight. After several minutes, something caught my attention. At first, I thought I was just settling into place, so I stayed there and waited for it to happen again. It did, but this time was twice as strong. Something was tugging at my pants. Within seconds, there was a very distinct tapping noise on the bed frame. It seemed paced and deliberate. I called for Zach [Cordner] so he could debunk or confirm the noise. It continued and seemed to get louder and more aggressive. Lasting several minutes, we were able to confirm the noise, but could not explain its origin. Later that night, we also captured an interesting EVP (electronic voice phenomenon) inside cell #1 that was extremely loud, but at the time could not be heard within the cell. Meanwhile, Mike [Pittman] was monitoring all of our cameras and saw some unbelievable orb activity in the women’s holding cell. These orbs seemed to be moving with intent, almost as if they were interacting with the camera. We also THEOSIDER.COM

witnessed an orb “blinking,” which we’ve never witnessed in a pitch-black room. I wanted to save Johnny’s cell for last. Also known as the “drunk tank.” Jace [Gardenier] was the first inside the cell and reported activity. “It felt like something heavy was on my chest. It was hard to breathe,” Jace reported. Upon entering Johnny’s cell with the bottle of whiskey, I noticed the distinct smell of chewing tobacco. I knew someone was waiting for me and could feel him in the room. Again, as the night vision camera rolled, I began an EVP session. During this session, I learned that Johnny is not 48

the one who’s responsible for grabbing or teasing the firemen. While inside this cell, I documented something that I’ll forever point to as absolute proof of paranormal activity. It started with one simple question: “Are you European?” As an empath, I sometimes feel things I cannot explain and this was one. I had a strong sense that whoever I was sharing the cell with was not from this country. The moment I asked that question, my K2 meter spiked and I captured an EVP of a man singing. The voice is soothing, but sad. After reviewing the audio, I believe the man has an accent of some kind. During this same session, I asked, “Were you here before the 1920s?” It appears to be the singing man who responds with a clear and definite, “No.” After spending the night inside Fire Station No. 1, we know the firemen are not alone. Is Johnny Rebovick still serving his jail time in the afterlife? We can’t say for sure. But it’s clear there are multiple souls who either refuse or are unable to leave 714 Pier View Way.

Here at The Osider, we take pride in highlighting longtime residents and celebrating their personal, public, and community accomplishments. In the past, we’ve focused on locals who’ve been around a number of years and are looking back over time. But when we ran across a young lady from Oceanside already making inspiring strides during her first two decades of life, we jumped at the chance to salute her business. Chloe Stoddard was born at Tri-City Hospital to Ted and Jen Stoddard, an Oceanside couple who met at Oceanside High and have been together ever since. Chloe grew up, along with her sister and brother, admiring her mother and grandmother’s love of baking and her large family’s affection for cooking and sharing meals. Those experiences inspired her, at only nineteenyears old, to start her own successful baking venture. Butter & Crumbs was humbly started out of her parent’s kitchen and has quickly grown THEOSIDER.COM

into a popular business capable of managing all of her customer’s baking requests. “I’ve loved baking since I was very young! After Palmquist Elementary, I attended Guajome Academy in order to pursue their culinary program,” said Chloe. “I’ve always wanted to open my own business, to build something from nothing. I grew up watching family and friends taking their passions and turning them into successful companies.” Her parents have owned and operated Captain’s Grounds Coffee for the past five years and have a strong presence in the “South O” community. “I have learned everything I know from my parents, they’re my biggest inspirations! My family have always supported my decisions and encouraged me to follow my dreams. I have an amazingly strong support system,” Chloe added. Butter & Crumbs offers a delicious and decadent array of cupcakes, shortbreads, fruit 52

tarts, cinnamon rolls, and all types of cakes and cookies. She also has truly original creations, such as her heavenly take on a homemade Twix. Her website offers online ordering, photos, and pricelists, and she encourages customers to stay connected through her Instagram account, which showcases her latest mouthwatering confections. “Currently, I have some of my baked goods available at Captain’s Grounds every Saturday, but my goal is to have a physical location for Butter & Crumbs within the next two years,” said Chloe. “My dream is to be located in South Oceanside surrounded by all the people I love, who I’ve grown up with, and have been so supportive of me!”

TERI Inspired Resale is the retail extension of renowned non-profit charity organization TERI (Training-Education-Research-Innovation), Incorporated. TERI’s mission is to change the way the world views and helps children and adults touched by special needs. By offering a variety of programs to clients with special needs, TERI is able to meet each individual on a suitable developmental level. TERI Inspired Resale began in 1992 as one of TERI’s vocational programs aimed at engaging clients interests and developmental needs. Groups (or vocational students) from TERI work the store every week day. They help collect donated items, straighten up merchandise, hang clothes, sweep floors, and keep the store organized. Along with acquiring job skills, the clients enjoy the sense of responsibility and knowing they’re helping. Working at TERI Inspired Resale also meets an important immersion component by getting the clients involved with the community. “Beyond providing high-quality items and customer service that our customers come back for time after time, it’s the relationships the community is able to build that makes this store important. People have the opportunity to give back to a nonprofit as they find items they love, and connect with people with special needs. It’s THEOSIDER.COM

this connection that’ll continue to change perspectives in our society,” said Ashley Klein, Marketing & Communications Manager. TERI Inspired Resale accepts all “gently used” donations. Donations are tax-deductible and 100-percent of the profits fund TERI programs. The most desired items are household items, furniture, clothing, plates, pictures, handbags, and new items, as well. Donations can be dropped off during store hours. TERI Inspired Resale will also pick-up items by appointment on Wednesdays. Appointments for pick-up can be made by calling the store. The store is organized and clean—clothing is in size categories, which makes it easy to find appropriate sizes. There are sitting rooms, and plenty of staff and volunteers on hand to help. The customer is their number-one priority. TERI Inspired Resale (previously known as Potpourri) is in a new, bigger location now. Along with the change in location, TERI took the opportunity to update the store name to reflect the items for sale. On the corner of Vista Way and Pacific Coast Highway, you’ll find a true Oceanside gem— Don’s Country Kitchen. This is where friends and family meet religiously to enjoy some of the best food in town. With its friendly staff and generous portions, you can see why it’s been in business for over eight years. Owners Britain and Daniel Doerfler are serving up lunch and breakfast to locals and guests in what feels like their dinning room seven days a week, and there’s no stopping now! Everything is made from scratch and they support other local businesses like Red and White Market by using their fresh meat in the burgers and sausage. The large breakfast and lunch menu has everything from delicious omelettes to an amazing avocado sandwich. Most people rave about their biscuits and gravy, though. They even offer a mimosa flight to get your day going! One of the most important aspects of Don’s is the amazing staff, most of which have been there from the beginning. They always greet customers with a huge smile and are extremely patient and helpful. With the success of the restaurant, Britain and Daniel somehow find time to raise their four wonderful children: Hendrix (10), Kingston (9), Tatum (1), and Bennet (5 months) are permanent fixtures and the oldest ones can be seen lending a hand on busy weekends. The easiest way to remember our luck is to get down there and spend some time. One of the best places to enjoy the view is at the Lighthouse Oyster Bar & Grill. The Lopez family opened the Lighthouse in 2010. After 30 years of experience in the restaurant industry, Luis Sr., Linda, and Luis Jr. began looking for a location and immediately fell in love with the space with spectacular views of our harbor. Luis Jr. said, “We looked at numerous locations. I grew up in Encinitas, and aside from surfing here in Oceanside; I hadn’t spent a lot of time here. Now I’m proud to call this town home and my wife and I look forward to raising a family here.” The Lopez family started with a dream of recreating a unique dining experience. “The oyster bar and exhibition style kitchen concept was a big thing in the 70s and 80s but had faded away,” said Luis Jr. “We wanted to not only show our customers the beautiful view of the harbor, but also invite you into our family’s kitchen. The real show is inside.” With Luis Sr. as head chef and sommelier certified Luis Jr. running the front of the house, the Lopez family partnered up with Bryan Faith and in 2015 they opened a fish THEOSIDER.COM

The Lighthouse Fish & Seafood is directly under the main restaurant and offers a “fun and different take on food and beverage.” The Lighthouse offers a breakfast menu, which is welcoming for the early crowd. Their specialty is, of course, oysters, with the menu offering an array of fresh seafood, great clam chowder, unique poke tacos, an amazing ahi stack, and a large beer and wine selection. Their “happy hour” menu offers a sunset discount on not only a selection of the appetizers, but also dinner favorites like Fettuccini Alfredo, ceviche, and a NY steak sandwich. For the non-seafood eaters, they offer staples like nachos and a great burger. If you make it a last stop in your evening, you can enjoy classic desserts like tiramisu, crème brule, and bananas foster. “As a restaurant owner, I love what a tightknit community Oceanside is.
