Gourmet at its Best Luxury culinary vacations in Greece, accompanied with traditional food and wine will invariably provide some of the most memorable experiences to the discerning traveller. With this in mind, travel and tourism professionals have begun to promote Greek gastronomy as a feature to attract visitors during on and off seasons.

STELLA ALEXANDROU WRITES

T

he role of gastronomy in the Greek tourism sector is extremely significant as history reveals. “Greek gastronomy has a history of around 4,000 years, with special characteristics based on pure and unique quality goods produced on Greek land,” emphasised Daphne Zagoreou, management secretary, Grand Resort Lagonissi. Moreover, it is a real motivation for visitors to choose Greece as their next

holiday destination as Elsa Soimiri, communications manager, Myconian Collection Hotels & Resorts, highlighted,“The role of gastronomy remains critical in Greek tourism as shown by the latest survey conducted by the Greek National Tourism Organisation in which nine out of 10 foreign visitors to Greece say they are pleased with their stay in the country and six out of 10 cite gastronomy as one their main reasons for picking Greece.” It is a known fact that Greece’s economy is based on tourism, and as Zagoreou stated, “According to The Organisation for Economic Co-operation and

being the support of the tourism sector to the local suppliers. “We strongly support local Greek producers with high quality standards and certain hygiene certifications,” said Yiannis Adamantopoulos, general manager, The Athens Gate Hotel. Hotels and restaurants show their preference to Greek products preferably straight from the producer not only to support the economy but also to promote the tradition of using only fresh ingredients in their recipes as Soimiri stressed, “Food connoisseurs from all around the world know well that there is no haute cuisine unless there are unsurpassed raw materials at the chefs’ disposal. This is why we aim high when it comes to the meticulous selection of raw materials, such as fish, meat, poultry, vegetables and herbs in all of our hotels. All of them are either produced in our private farm entirely under our supervision or locally and exclusively for us, by well-trusted professionals collaborating with us for many years.” By using only raw materials, luxury hotels and restaurants aim to offer a complete culinary experience to visitors as cooking only with fresh ingredients is a major characteristic of Greek gastronomy as Mia Kolia, press and communication, Basegrill agreed, “[…] We offer the possibility for foreigners to experience the Greek meat production which is not adapted to modern animal husbandry, thus enjoying animals reared in the traditional manner, keeping the character and flavour[…].” GASTRONOMY THE TRADITIONAL STYLE “People who travel discover a place through its gastronomy,” highlights Adamantopoulos, stressing out the role that gastronomy plays in any destination especially in the Mediterranean. Greece’s long history is revealed through gastronomy and is significant for any visitor. “Geographical location, geophysical characteristics, weather conditions, soil morphology, cultivations, natural resources as well as contacts with other cultures […] all play a part in forming the gastronomic identity of any given place,” said Zagoreou. Therefore, discerning visitors expect to taste and smell Greek authenticity though their culinary experience. Soimiri elaborated by adding, “Our guests recognise and appreciate greatly our traditional Greek cooking techniques and ingredients and encourage enthusiastically with every opportunity to continue offering these unique culinary experiences.” Most luxury dining offerings in the country are made through a traditional cooking process as Adamantopoulos mentioned, “We only use 100 percent traditional cooking methods,” adding that the gourmet twist of the traditional Greek gastronomy is now getting the leading role in the Greek culinary scene and is expected. Zagoreou further indicated that, “[Visitors] expect to try Greek cuisine in an exquisite blend of tradition with a twist.”

Development on Tourism Trends and Policies 2010, the contribution of tourism -direct and indirect impact- to the Greek economy represents 18 percent of GDP.” Zagoreou also emphasied that according to the abovementioned report, the hotel and restaurant sector represents half of the tourism activities and according to the available data, gastronomy, once even further included into the Greek tourism offer, could increase the GDP by EUR1 million. This will instigate attracting 500,000 more visitors and create 50,000 new jobs. On the other hand, indirect benefits are enjoyed by the economy, one of them

The main aim, is to translate the traditional Greek gastronomic experience to a gourmet offering without losing the main and most attractive characteristics, as Faye Petrova, director of sales, St. George Lycabettus Hotel agreed, “One of the hotels main aims is to portray and combine Greek culture and gastronomy. The restaurant offers its guest a creative Greek modern cuisine and a wide range of thematic menus from artsy dinners in its in-house art gallery, to gourmet dining experiences with local fresh products and handpicked fresh herbs & spices from its very own chefs.” Petrova further added that their most affluent customers are from Europe and the US, both of which have eclectic taste and are in search for Greek dishes with a modern touch. Adamantopoulos concluded, “We welcome guests from all around the world but mainly from the UK, US, Australia, Canada and France. The majority of guests coming from these countries are well educated in high quality culinary experiences and are expecting to taste Greek traditional recipes and raw materials produced from Greek mainland. This is exactly what we try and propose.” 

INTERVIEW WITH

Mark Wheeler REGIONAL MANAGING DIRECTOR, EAST AFRICA, SOUTH ASIA AND SOUTH AMERICA, &BEYOND

With numerous high-end offerings and outstanding natural beauty, Mark Wheeler, regional managing director, East Africa, South Asia and South America, &Beyond, describes what makes Kenya unique.

TRAVEL TRADE LUXURY: In terms of bookings and new developments, how was 2016 for &Beyond? MARK WHEELER: [There was] a return to form [in 2016] after some recent challenges, with our Kenya bookings up 25 percent [between January and October] and forecasted to be up by 31 percent by the end of our financial year in June. Our customers are in the upper end of the market and from all over the world. This is reflected by the level of our preferred product and wholly owned camp and lodge portfolio. They are deeply interested in authentic local experiences and giving back while seeing the best that a destination has to offer. There has been further investment by &Beyond in Kenya in recent years with the upgrade of &Beyond Kichwa Tembo Tented Camp in 2014, changing the model of the product offering for the larger and medium sized camps. There is also the prospect of an extensive upgrade to &Beyond Bateleur Camp. TRAVEL TRADE LUXURY: What makes Kenya so special? MARK WHEELER: Kenya is the top safari destination in the region, if not the continent. [It

30

is] one of the most exciting wildlife destinations in the world. The key aspects which make it so are the high game counts, high visibility across the savannah, the diversity of the animals, including the lesser known species and sub species such as gerenuk, reticulated giraffe, grevy’s zebra; the volume of animals, including the great migration around 1.5 million wildebeest, zebra and antelopes which visit the Masaai Mara from July to October; the private conservancies offering a more flexible game viewing experience, and other wildlife interaction opportunities such as the Giraffe Center and The David Sheldrick Wildlife Trust, as well of course as the cultural interaction with all the tribes of Kenya, the best known of whom are probably the Masaai and Samburu people. The fact that Kenya can be easily combined with Tanzania for year round migration and further wildlife and culture, as well as the unique mountain gorillas in Rwanda and Uganda add to the appeal. We always feel we should thrill our guests by day and spoil our guests by night. In essence, however, affluent safari goers are interested in seeing the best destinations in the most exclusive way possible and receiving the best service throughout their stay. TRAVEL TRADE LUXURY: In terms of unique

experiences, what can discerning visitors find in Kenya? MARK WHEELER: The outstanding wildlife, the warmth of the hospitality, the captivating cultures and outstanding natural scenery [makes Kenya stand out]. The unique products include the wildlife interaction, walking safaris, riding safaris, camel safaris, helicopter rides over Mount Kenya or stopping off for a champagne surprise at Lake Rutundu [...] as well as ballooning over the Mara. New levels of comfort and service are now expected, but that is treated as a given at a certain level of the market. It is experiential travel which really differentiates for the affluent traveller. Personalisation in terms of service and travel is much more experiential and less about where you stay. Now it is a given that it should be comfortable, but how you experience the destination, the memories you take away, and the people you come into contact with along the way are much more important today, particularly with the affluent millennial traveller. Beautiful rooms in beautiful places no longer cuts it. The affluent traveller wants to get under the skin of the destination, experience it in a unique way, and understand it like never before.
