When playing with the word luxury, a few meanings may appear in one’s mind. Something rare and extraordinary, something of a great but not necessarily a monetary value, a treat, an extravagance, a delight or a blissful moment. One phenomenon which encompasses all aspects of the definition of luxury is the experience of travel. These unforgettable moments create long-lasting memories to cherish and recall when one needs a boost when immersed within the commitments of everyday life. Travelling enables us to discover a heartfelt joy as one indulges in all that a destination has to offer for the discerning globetrotter. July’s Travel Trade Luxury invites you to pause and become inspired as to where your own perception of luxury will take you next.

INTERVIEW WITH
Hicham Hankir DIRECTOR, FOOD AND BEVERAGE, THE RITZ-CARLTON, DUBAI INTERNATIONAL FINANCIAL CENTRE (DIFC)
Hicham Hankir, director, food and beverage, The Ritz-Carlton, Dubai International Financial Centre (DIFC) explains how Dubai’s culinary scene has evolved during recent years including, the hotel’s culinary offerings which aim to satisfy even the most cultivated palate.
Travel Trade Luxury: How has the culinary scene evolved in the UAE in the last 10 years, and particularly in Dubai? Hicham Hankir: Like all major culinary destinations, the UAE is very trend led and is continually evolving. Four or five years ago, the restaurant scene was made up of big-name, global brands and internationally acclaimed chefs. Then we started to see the growth of home-grown brands, a more casual approach to dining generally and an increase in the range of cuisine on offer with the likes of Peruvian and, more recently Turkish concepts enjoying a lot of success. When you look at where the culinary scene is today, what sets it apart is its truly cosmopolitan makeup. It embraces the huge melting pot of nationalities and cultures that can be found within the UAE. Dubai alone has more than 7,000 places to eat, ranging from street cafes and fast food outlets up to fine dining and high-end restaurants, including worldwide brands and internationally-recognised chefs. All of them showcase their best creativity
26
and offer a huge diversity of cuisine. Travel Trade Luxury: What are your affluent guests’ expectations when they visit the property? Hicham Hankir: Much like Dubai itself, our guests come from all around the world and, whether they are residents living here in the city, travelling for business or visiting for pleasure, there is a common thread that ties them together in that they are well-travelled and discerning. They know what they like and, of course, this brings a certain level of expectation. This has certainly helped in shaping the culinary scene in Dubai over the past few years to a point where, whilst still relatively young when compared to New York or London, it is becoming one of the most dynamic dining destinations in the world. At the same time, and typical of a maturing market, there has been a natural adjustment, with guests increasingly looking for added value in terms of quality, consistency and overall dining experience. Being a vibrant destination for dining, DIFC is home to
many of the city’s best restaurants, including two in the world’s top 100, offering added appeal for those looking to enjoy a culinary experience when they visit. Closer to home, the hotel also offers a choice of memorable dining experiences where guests can relax in a casually elegant setting. Travel Trade Luxury: What kind of unique dining experiences do you offer? Hicham Hankir: At The Ritz-Carlton, DIFC, our portfolio of restaurants is constantly evolving to ensure we offer a unique and complete experience for our guests. When we opened Café Belge just over three years, we wanted to offer something unique, something which could not be experienced anywhere else in the city. As the region’s first Belgian grand café, it is inspired by the golden era of 1920s Belgium, a time when grand cafés were landmarks of grandeur, splendor and elegance. [...] Our newest restaurant, Le Cirque, which opened its doors on April 12, is a timeless New York classic promising French fare with an Italian twist. [...].
