Travel has long been back on, as evidenced by the return of global travel trade exhibitions such as ITB Berlin, which took place in Germany at the top of March, Africa Travel Week and the International Luxury Travel Market in Cape Town, South Africa at the end of the same month; and now the Dubai’s Arabian Travel Market this May. I am grateful to

have had the opportunity to head into Southern Africa again in recent weeks, first into Mozambique, where I spent a few days watching Cyclone Freddy roll in from the ultra luxurious Kisawa Sanctuary, before later experiencing safari-fused excellence at Singita Boulders Lodge on the banks of the Sands River in South Africa’s Sabi Sands Game Reserve. My trip closed in with a whirlwind, super-packed itinerary in Cape Town City and across the Western Cape Winelands, for an experience unlike any other. Doing so with a group of luxury travel journalists and influencers from Africa, Europe and the America’s, carried with it an exciting opportunity to not only connect with individuals with a passion for documenting Africa’s distinctive travel experiences, but also for me; I got to learn more about what’s hot on the travel scene from their individual perspectives.

It won’t be too long before lodges are fully booked again, and for those of us in the Middle East, we begin carving out what our summer itineraries will look like, especially how quickly in the year the Ramadan and Eid Holidays came about. What we can all attest to is the growing desire to pack a few bags and take our friends and family along for a little rest-infused retreat, adrenaline packed adventure, cultural exploration, or some version that combines all three.

It is always my pleasure to present yet another Issue of Travel Essence Magazine, one that gives a glimpse of some of the experiences our team has had the privilege of enjoying, courtesy of the epic, boutique hospitality players that open their doors to local and international travellers year on year. As you turn each of the following pages, may be you inspired by new possibilities, adding more destinations we have featured onto your bucket lists.

TAKING TASHAS GROUP TO EPIC HEIGHTS IN INSPIRED HOSPITALITY

Anchored by three guiding principles: “Beautiful food, Stunning environments and Engaging Service” – Tasha’s Group is a South African success story, embarking on its journey to inspired hospitality with a singular café location in Johannesburg in 2005, to now boasting 24 restaurants and counting in South Africa and the United Arab Emirates.

Six distinctive concepts make up the Tashas Group: tashas, Flamingo Room by tashas, Avli by tashas, GALAXY BAR, and Bungalo34. Travel Essence Magazine recently enjoyed the opportunity of celebrating the opening of the newest, Greek inspired Bungalo34 sitting down for a delightful chat with the woman behind the brand, and in every sense the heartbeat of Tashas Group’s soul – Natasha Sideris. The conversation went a little something like this…

1. NATASHA SIDERIS. CULINARY GENIUS WITH A HEART FOR PEOPLE AND ECLECTIC DINING EXPERIENCES IN UNIQUELY DESIGNED SPACES. TAKE US THROUGH HOW TASHAS GROUP CAME TO BE. AS A LITTLE GIRL, DID YOU EVER ENVISION YOURSELF RUNNING A SUCCESSFUL COMPANY WITH OPERATIONS IN SOUTH AFRICA AND NOW IN THE UAE?

I never thought I'd be involved in restaurants because my dad was a restauranteur, and he was hardly ever at home. He worked really hard; his days were made up of long working hours and in fact in those days, that’s how restauranteurs used to work. Nowadays our managers are lucky in that they don't have to pull the 14 to 18-hour shifts. In my dad’s days, he would work 18 to 20 hours, sometimes only getting four hours of sleep. So, I told myself that I would never get involved in this type of business.

What I was going to do was study and I studied psychology. I completed my BA degree and decided not to carry on with an Honours or Masters’ Degree. I instead went to the help my father at one of his restaurants, and the restauranteur bug bit me. If you work in a busy restaurant and it bites, it catches your heart.

A little about me as a young girl? I was always very hard on myself, always highly competitive. I used to be victrix ludorum at my school and I swam for my province. I was Athletics Captain, the Head Girl at my school, and very academically inclined. I think one of the things that I often forget to do is to stop and smell the roses, and in fact, when I went back to South Africa recently, I opened one of my old school books where my aunt had written a letter to me to say, “You know, when we see you swimming and you knit your eyebrows together and you're so

determined, you do all your work, and you're so determined - don't forget to stop a little bit and enjoy it.”

SO, GROWING UP IN SOUTH AFRICA, WHERE? AND HOW DID YOU MAKE YOUR WAY TO DUBAI?

Johannesburg. Joburg in its heyday. Things have obviously changed a lot, but South Africans are innovative and resilient. Growing up, we used to run around a lot outside. I grew up in Highlands North where my grandparents lived, and they often used to take us after school. In fact, my other grandmother was from Yeoville, and so I had an amazing childhood and carry very fond memories of growing up in Johannesburg.

I moved to Dubai seven years ago. The business is nine years old in Dubai, as I was commuting for the first two years and then moved permanently. I have lived here for the last seven.

3. YOU COULD HAVE STARTED THIS BUSINESS OR EXPANDED FROM SOUTH AFRICA INTO ANY MARKET IN THE WORLD. WHAT WAS IT ABOUT UAE? WHY UAE FOR YOU?

I get asked that a lot. I had been approached for a couple of different markets, one of them being London, and nine years ago or 10 years ago, to go from South Africa to a market like London, that's highly competitive, extremely high rentals, very hectic barriers to entry, I felt for my first my first foray, I didn't want to go into London. I was then also approached to look into Australia and the United States, which for me where completely different time zones. The whole thing - it being completely different time zones and me being a bit of a control freak in that I want to be on the pulse of the entire operational spectrum by seeing and touching everything and making sure all is okay; the time difference wasn’t something I was comfortable with. I thought to myself that I couldn’t go to a place where I can't

have first-hand visibility of what’s going on within an eight-hour period.

It wasn’t too long before we were also approached to venture into Dubai. I remember boarding my flight and realizing that Dubai and South Africa’s time difference was only two hours. A second draw upon arriving and experiencing Dubai was observing that it’s very similar to South Africa in terms of lifestyle. It’s an innovative society with a driving culture, and so when I got here, I felt quite comfortable with the space. And of course, I've got a fantastic local partner, which made things a lot easier, as he took a lot of administrative stuff away from me. Fast forward to today, where it gives me such pleasure to share how UAE has been unbelievable for me, for all the right reasons.

Allow me to also mention the fact that I am Greek, and the Arabic culture is quite similar in terms of the warmth and the spirit of sharing and togetherness. Hospitality is inbred in us and so there are many similarities between both cultures.

4. WHAT HAS GROWTH LOOKED LIKE FOR YOU IN THIS MARKET? WHEN YOU WAKE UP EACH DAY AND SAY “I AM GOING TO WORK, AND THIS IS WHAT I DO, AND I LOVE IT - WHAT DOES THAT LOOK LIKE FOR YOU?

in every single aspect of the business. From interior design, food preparation, operations, and to a large degree, the finances. Of course, I've got individuals who are controlling those departments, but I do get my hands and ears across everything.

I'd say a typical day for me - I wake up in the morning, check my emails and answer a couple. Then I spend a lot of time in the chosen restaurant of the day, and it could look like working with my chefs or interior designer for most of the day. I’m extremely hands on. I don't believe in managing from a distance. If you want to start to do well, you've got to show that you're prepared to work and be present. One of the most amazing books and podcasts I've read and listened to are by Simon Sinek. He talks about leaders eating last. Leaders eat last, and I always say the same to my team –from the GM to the managers. We are to lead by example and eat last. Being hands on is important. For example, at the recently opened Bungalo34, I was here for the first two months, open to close every single day.

5. “INSPIRED

HOSPITALITY.” TALK TO US ABOUT HOW YOU CAME ABOUT THAT TAGLINE FOR TASHAS GROUP.

Naturally, we looked at a host of different taglines. First of all, we weren't sure we were even going to call the organisation Tashas Group. We had a whole lot of other names that had thought of and did go back and forth. We wondered whether it was going to be confusing for people to call the Group Tashas, as the brand is also called Tashas. We eventually landed on Tashas Group.

When we talk about hospitality, I think hospitality is not only about restaurants. I have aspirations to one day run a boutique hotel. But for now, we have a confectionery line called 1701. So, everything to do with hospitality, I just love the word “inspired”. People get up in the morning, and they have to be inspired, and you’ve got to inspire.

6. WHAT DO YOU THINK IT TAKES TO SUCCEED AS A RESTAURANT IN A PLACE AS DYNAMIC AND COMPETITIVE AS DUBAI?

I think the key word for Dubai is competitive. It is one of the most competitive markets and is becoming increasingly competitive with each year. What used to happen to happen was all brands used to get imported into Dubai. Today,

you have a combination of imported brands, and a lot of local talent. It really is quite amazing to see. I'm talking about homegrown brands created by entrepreneurs who were born here, and they are really developing some impeccable brands.

So, what do I think it takes to succeed? A high level of detail. Restaurants aren't just about food anymore. They are about food, interiors, the smell, visual appeal. It's got to touch all your senses. Then it takes a lot of grit and determination. And then the most important thing – consistency. A lot of people can open a restaurant and it can be successful for the first month or two, but then you have to show consistency and deliver consistently day after day. You will make mistakes, things aren’t always going to go well, but it’s how you address the challenges as they arise.

7. WHAT DOES NATASHA DO FOR FUN? I take mini breaks. I'll typically work for a three-month stretch, then I'll think of a destination to go to, so I take a mini break. But in my day-to-day, if I can be quite honest, I don't live a very balanced life. I don't want to lie to anyone reading this article by saying my life it balanced. My life is focused on work. I eat, sleep and rise again to work, but absolutely love what I do. What’s life without enjoying what you do, right?

Kenya is absolute beautiful, incredible. The people are amazing. The warmth of the people is really quite stand out. I was in Lamu, and it was gorgeous.

9. WHAT OTHER AFRICAN COUNTRIES DO YOU ABSOLUTELY LOVE? BESIDES YOUR HOME COUNTRY OF SOUTH AFRICA, WHERE ELSE HAS BEEN A HUGE HIT FOR YOU?

Rwanda. I have never in my life seen a more pristine place. Listen, I go to Monaco often, and Rwanda to me is cleaner than Monaco. It is spotless, it's efficient, it’s run well, when you go into rural areas, it is incredibly beautiful, and you stay connected! WiFi access in the winding hills of rural

But really, what I loved most about it was the spirit of community. I love that Rwandans get together once a week and everyone stops work at a certain time and comes out to clean their communities or area around their homes. I think it’s cool that they also have to do physical activities. It is really unbelievably clean, organised and safe.

And then of course, Mozambique. My dad was born in Mozambique so there’s a little Mozambique and Greek in me, notwithstanding having grown up in South Africa. We had restaurants in Mozambique. My great grandparents had a bakery, and my grandfather was a fisherman in Mozambique. Mozambique’s remarkably soulful hey,

and I love that my entire family also speaks Portuguese apart from Greek. I've never been but would love to go to Namibia as well as Zanzibar and do hope to make that happen sooner rather than later.

10. WHEN YOU BUILD A BUSINESS

THAT IS AS MULTIFACETED AND MULTIDIMENSIONAL AS TASHAS GROUP, YOU CAN'T POSSIBLY HAVE A FAVOURITE RESTAURANT BECAUSE EACH ONE HAS SOMETHING SPECIAL THAT SPEAKS TO YOU. WHICH ONE OF YOUR RESTAURANTS HOLDS A SOFT SPOT ON YOUR HEART AND WHY?

Avli by tashas, because it was the most difficult opening I've ever had. It's completely different to all other Greek restaurants in that it's not typical blue and white. It's an ode to Athens and the Athenian spirit and culture and not an ode to the Greek Islands. People were taking bets that the restaurant would close because we had taken over a previous restaurant that was struggling, and so we too struggled in the beginning. And then after about a year and a half, it just clicked and took off. The energy on Thursday, Friday, Saturday night is super-electric! It’s an amazing restaurant. And of course, Bungalo34 is my latest baby, so it really is a blessing to see it so well received. Going back to Avli, I worked from there for nearly a year. I was determined to see it work, and so to see it doing well is truly rewarding.

11. LASTLY, LET’S TALK LEGACY. WHAT DOES THE WORD “LEGACY” MEAN TO YOU?

Creating opportunities for other people. I feel like I have a responsibility to leave opportunities for people who have helped me get this far. Legacy is what you can do for other people, and I would like to be remembered for the difference I made in other people’s lives.

The invitation to spend four nights in the throngs of nature at Singita Boulders came in, and it was an opportunity I simply couldn’t resist. Why would one ever? After an awe-inspiring week-long stay at Singita Faru Faru in the Serengeti with my family last Spring, I couldn’t have been more ready to partake of the life-changing experience that comes with a stay at any one of Singita’s luxury lodges, but this time – in South Africa!

Off to a compelling start

A red-eye flight from Dubai International Airport had me land in Johannesburg just before noon. Travel is back on as evidenced by the jam-packed arrivals terminal at OR Tambo, where a concierge member from Federal Airlines awaited my arrival, ahead of my being ferried off to another section of the airport for my private charter into Sabi Sands Game Reserve. We soared over the striking white clouds in no time, descending at an airstrip that was also home to a thatched pavilion, reminiscent of the same sort of welcoming station we had arrived at in the Serengeti a year ago. One thing about a stay with Singita is that you feel the brand’s strong hospitality ethos, first at the point of your first interaction with the team regarding your bookings, then on with your interactions with each colleague tasked to ensure that your planning and subsequent travel to your destination is as seamless as it is filled with anticipation. Exceptional, personalised service is their forte, driven by the quest to create perfect harmony and balance between all the aspects of the guest experience. Golden, who would be my Field Guide during my stay, was on hand to welcome me and whisk me off to Singita Boulders, my sanctuary for the few days ahead.

It’s a call to mentally and physically immerse yourself in the tranquillity of nature, tapping into the sounds of the wind rustling through the surrounding tree cover above, and the waters flowing from the water feature at the entrance, which seemingly give the illusion of a floating lobby area.

I was welcomed by the ever so delightful Jordi and her team, who were on hand to take me through the signa-

ture handwashing ritual, inclusive of a soap and scrub made from naturally sourced ingredients like the sand from the river banks on which Singita Boulders sits. This was quickly followed by the blessing of being handed a refreshing mocktail to sip on as my senses captured the moment. Hello Singita Boulders. I was here and ready to truly disconnect to reconnect with my surroundings and self for the few nights ahead.

After the lodge orientation, which literally allows guests to detail their wakeup call time preferences, menu and ingredient choices, activities on the cards to try, and a tour of the available amenities, I was off to my suite – the pristine Suite No. 8, set at the end of a winding wooden yet elevated walkway. But reaching my suite was not without the pleasant surprise of witnessing a family of nyala, casually grazing through the grass along the walkways and unperturbed by the nearby human chatter.

Echoing Africa’s raw natural beauty within elegant spaces

Boulders Lodge truly awards you the opportunity to find yourself, or rediscover your loved-ones in the untapped essence of nature. Each of this contemporary retreat’s 12 ceiling to floor glass-fronted suites offers the utmost privacy, ultra-spacious interiors and heated pools, with handmade furnishings and soft, natural fabrics mirroring the breath-taking scenery outside.

Upon walking in, my attention was immediately drawn to the stone flooring, perfected in design by patterns made from intricate stonework. A fully

stocked station at my lobby area, came complete with an array of wines, cordials, soft drinks, gin and vodka for those with a penchant for stronger beverages. Snacks in cute jam jars were on hand for me to enjoy with my morning coffee or afternoon teas, if in fact I opted to stay in my private space and not venture out to the main lodge for the same.

A few steps into my suite would unveil a beyond aesthetically pleasing space, where the living room flows into the palatial bedroom and bathroom; all rooms in full view of the infinity pool on the wooden deck outside. A stone fireplace separating the lounge area from the bedroom invoked romanticism, a stellar accompaniment to my outstanding natural – and manmade surroundings. A promise I made to myself, which I often encourage travellers experiencing luxury lodges, is to truly carve out time to enjoy your space, for it is here where you find the value in having set out on your much needed retreat. In the words of Singita Group Creative Direction Manager Georgina Pennington, “Inspired by the ancient wisdom of the continent and celebrating the profound sense of place of each of our unique lodges and camps, Singita’s Wholeness journey is about grounding guests in their preferred level of mental, emotional and physical calm," and for me, enjoying every opportunity to enjoy moments of nothingness in the comfort of pristine surrounding, forms a big part of a grounding experience while in Africa’s savannah-scapes.

With every game drive I have enjoyed, I’ve been left spellbound by the sheer majesty of Africa’s most iconic wildlife – from stripped dazzles of zebra to towering giraffe and buffalo herds, which in the case of Singita, flourish through the tireless efforts of their non-profit conservation Funds & Trusts.

Our Field Guide and Tracker Duo Golden and Mark took us across the vast plains, sharing informative nuggets on the wildlife we spotted along the way, before setting up a much appreciated “watering hole” for us to indulge in cocktails made from gin and vodka, glasses of wine for the father-daughter pair, biltong and other nibbles. Watching the African skies transition from bright blue onto orange to varied hues of purple is as magical as it is embracing hearty conversations between strangers, or the silence of the late afternoon turning to night. African sunsets are a feeling, an opportunity to connect with the heart and soul of creation and to still time with each breath; and that feeling, is one I yearn for ahead of each looming safari experience.

Journeying through wine and nurturing a new generation of sommeliers

Singita is recognised as one of Africa’s most influential collectors of wine, with an extensive cellar showcasing a premium selection of wines, including some of the continent’s most sought-after private reserves, exclusive release, limited single vineyard and rare auction wines. It’s safe to say that wine is a key ingredient of the unique Singita experience, and the offering from resident sommeliers is as special as the fine cuisine that accompanies each glass.

I was to learn at dinner that personalised wine tastings within the unique ambience of Singita Boulders’ temperature-controlled cellar are a true guest favourite, for connoisseurs and casual tasters alike. Singita’s experienced sommeliers were on hand to guide guests through a variety of wine styles, years and cultivars to find the wines most suited to their individual tastes and meal choices, be it over vegetarian or meat dishes.

Also interesting to note is that, with all that Singita does, community upliftment is central to the Singita wine programme as well. Retail therapy that supports local artisans

Time spent at Singita’s Boutique & Gallery, located a mere 5 minutes’ drive away from Boulders Lodge was like navigating a treasure trove of arts and crafts that pay homage to the spirit if African artisanal excellence. The ever so spirited Boutique Manager, Phumzile Mgiba, was so gracious in taking me through the uniqueness of Singita’s B&G concept, citing “We want to celebrate Africa’s rich cultural heritage, its unique places and people, and the beautiful stories and experiences that have shaped who they are.”

Guest with a penchant for compelling décor pieces, would be inspired to learn that in addition to the art pieces for sale in the galleries and boutiques, most of what you see and use in the guest suites is available to order, from exquisite textiles, to decorative objects and small furniture items. While my suite didn’t come with clothing items, I went ahead and treated myself to two beautifully stitched dresses in olive and navy blue, motivated by the knowledge that my purchases would in some way contribute to the success of the designers and artists who’ve created them.

A SUSTAINABLE WINE ESTATE MARRIES HISTORY AND MODERN DAY WINEMAKING

Less than an hour’s drive from Cape Town and extending over 3000 hectares in Somerset West between the Helderberg and Hottentots Holland mountains, Vergelegen is a multi-layered destination that is ideal for overseas guests and locals eager to sample the best of South Africa’s beautiful Western Cape in one easy trip.

Established in 1700, Vergelegen is a treasure trove of wine, heritage, hospitality and environmental sustainability. This glorious estate offers something for all visitors, whether you are a wine lover, gourmet, gardening enthusiast or history buff. The estate is also a provincial heritage site, ensuring its priceless history is secure for future generations.

Going back in history

Farm founder Willem Adriaan van der Stel planted the first vines at Vergelegen in 1700. These included varieties such as ‘blue muscadel’, ‘steendruif’ (Chenin Blanc), white muscadel and frontignan. Vineyards also flourished under the Theunissen family’s tenure between 1798 and 1899. In the 20th century, there were sporadic plantings by various owners, with the last of these vines removed in 1962.

The soils of Vergelegen lay fallow until 1987 when the estate came under new ownership and was extensively restored in an ongoing programme as a showcase of the best of South African hospitality and sustainability. A detailed master plan was drawn up for the development of the vineyards and, after intensive climatic and soil analysis conducted over two years, the first new vines were planted in 1989.

An evolving wine story in the Heart of the Helderberg

The estate is planted with vines ideally suited to its climate and soils, producing classically styled wine that is nature-driven, understated, elegant and well balanced. Current plantings cover around 117 hectares comprising cabernet sauvignon, merlot, cabernet franc, malbec, Shiraz, sauvignon Blanc, chardonnay and Semillon. Mild temperatures due to the estate’s close proximity to the Atlantic Ocean at False Bay some six kilometres away, places the farm within the lower Region 3 according to the ‘degree days’

temperature classification. Vergelegen’s vineyard sites range in altitude between 140m and 310m above sea level, with slopes facing north to north-west, and south to south-east.

Luke O'Cuinneagain was appointed the Estate’s General Manager in 2022, following a rigorous recruitment process over several months, undertaken by an independent panel of wine experts. Luke holds a B.Sc. Agric. (Viticulture and Oenology) Honours from Stellenbosch University, having initially gained experience at Rustenburg Estate for five years. He also learnt from international winemakers at Château de Fieuzal and Château Angelus in Bordeaux, Caves Robert Dietrich in Alsace, and Screaming Eagle in California, before joining Glenelly Estate in Stellenbosch where, from 2008, he produced wines recognised for their power, elegance and balance.

The estate’s wine cellar is situated high on a hilltop, with only the top level of the multi-levelled structure is visible. With its octagonal shape mirroring the design of the historic homestead’s walled garden, originally laid out by 18th-century founder WA van der Stel, the visitor’s viewing deck and roof garden offer a 360º view of the estate: the towering Hottentots Holland mountain peaks behind, the town of Somerset West below, the Atlantic Ocean beyond and, in the distance, Table Mountain.

Commitment to biodiversity protection and sustainability

Vergelegen was declared the first Biodiversity and Wine Initiative Champion in 2005 and guests revel in it's natural beauty. A guided environmental tour reveals tracts of the vast 3000-hectare estate that were previously closed to the public. Visitors can also view rare bontebok, indigenous Nguni cattle, swathes of endangered fynbos and, if they are lucky, eland and quagga. The drive also includes an overview of an arboretum (currently in progress) that incorporates extensive plantings of trees and three kilometres of walkways. It will also allow visitors a glimpse of numerous hives established

for honeybees in the fynbos.

Combatting the spread of lead roll virus

Vergelegen is also renowned for its project, started in 1999, to eradicate leaf roll virus. Spread by mealybugs, this disease affects production and economic viability of red grapes in particular, both in South Africa and beyond its borders. Vergelegen has shared its learnings as far afield as New Zealand, Israel and the Napa Valley.

Alien vegetation clearing

In a programme believed to be the largest privately funded conservation project in

South Africa, 2200 hectares of non-arable farmland have been restored to their natural state. Of this, 1900 have been declared a private nature reserve with the same status as the world-famous Kruger National Park. As the indigenous fynbos has returned, it has attracted increasing numbers of birds and insects. Amongst them is an abundance of ladybirds, one of the most effective predators of mealybugs. Birds and other predatory insects also eat other pests that prey on the vines. In attracting these predators, the fynbos and buchu growing near the vineyards act as a form of natural pesticide, limiting the need to use chemical applications for

mealybug control. Future winemakers should be able to make wine from vineyards that are 40-60 years old, ensuring that Vergelegen will still be producing quality wines well into the future.

Impact through learning at Vergelegen

A state-of-the art eLearning Hub has given learners, who live on the estate, a new source of support and inspiration with their studies. During 2022, a cottage at Harmony Village (a workers’ village on the estate) was refurbished to incorporate 10 learning stations, seven of which have computers. Additional facilities include a printer, stationery, a small kitchen to prepare hot drinks, toilets, and a small library. Teacher Kathryn Couzens is on hand every afternoon to offer support and guidance. The Hub is currently available to grade eight to 12 learners. Eighteen of the 24 eligible learners have used the facilities to date, with eight learners visiting regularly.

Marketplace recognition for winemaking and sustainable practices

Among its numerous accolades, Vergelegen was the first South African wine farm to receive championship status in the Biodiversity and Wine Initiative (2005). It also acquired a Mail & Guardian Greening the Future award, and has received the International Best of Wine Tourism, Cape Winelands accolade five times. In the prestigious World’s Best Vineyard 2019 competition, a voting panel from around the globe analysed 1500 wineries from 17 countries. Vergelegen was named the best winery in Africa, and number 34 overall.

As recently as 2022, the farm clinched the Great Wine Capitals Best of Wine Tourism Awards, taking top marks for its landscape and architecture, and sustainable wine tourism experiences. The estate also won the Eco-Hospitality and Tourism category in the 2022 Eco-Logic Awards.

CHEF TRONETTE DIPPENAAR ON ‘RUNNING THE PASS’ AT THE CELLARSHOHENORT’S RESTAURANT, THE CONSERVATORY

Over the past 14 years, she has come up through the ranks, having worked at each of the three sister-hotels. After taking up her second position within the Collection, she was promoted to Head Chef at The Plettenberg. This was followed by her first stint at The Cellars-Hohenort, where she assisted the Head Chef for a few months before The Liz McGrath Collection took on the management contract of the historic Lord Milner Hotel in Matjiesfontein. Tronette and her husband Johan Dippenaar worked closely with the late Mrs McGrath to fine-tune the Matjiesfontein product, managing a soft refurbishment and re-organising the kitchen, as well as creating new menus as the appointed Head Chef. At the conclusion of the three-year management contract, Dippenaar returned to The Marine in Hermanus as Head Chef, a position she held for the past five years, until she took up the reins at the Cellars-Hohenort.

Situated between two national parks, the 50,000-ha Mababe Concession sits in a privileged position, on the eastern fringe of the Okavango Delta and the famed Moremi Game Reserve, to the south of Chobe National Park. Here nutrient-rich grasses are fed with a constant supply of water thanks to the Mababe River, which started flowing again in 2007, and the waters of the Okavango, which drain into the Mababe wetland. This supports an amazing and unique ecosystem of great herds, an abundance of predators and a plethora of birdlife.

Every year the waters of the 2,600-hectare permanent marsh are reinvigorated with the seasonal inflow, welcoming wildlife from all directions of the dry hinterland, in search of this precious life source. “It’s this exclusive position and rich ecosystem, combined with the privacy of the concession, that will make this experience utterly special”, added Kim.

Embracing that Matetsi Victoria Falls Magic

The final leg of my Victoria Falls trip; last but definitely not least! Feeling refreshed, revitalised and ready to embark on the last leg of the trip Yvonne, my friend who had curated this trip for us from Dubai to Zimbabwe’s Victoria Falls and Hwange National Park’s environs, coyly uttered: “I have strategically planned this trip, and have saved something extremely special till the end!”

In my humble opinion the trip had already surpassed any expectations I may have had, so I simply couldn’t fathom what anything more than what I had already experienced could be. But before I fully experienced what was in store at our last stop during our whirlwind, just over a weeklong trip, we headed off to our pre-arranged guided tour of Victoria Falls, which we hadn’t done just yet, since arriving at this tourist city. To have seen it from an aerial perspective via helicopter a few days before was one thing, but to now see

the sheer scale of the breath-taking beauty of the Falls from the various viewpoints, one of the Seven Natural Wonders of the world also named by the locals “Mosi-oa-tunya” for “the smoke that thunders” - was certainly special.

A 30-minute drive on Kazungula Road towards the Zimbabwe-Botswana border post, took us to Matetsi Victoria Falls, and yes – Yvonne was right! This stunning riverside, all-inclusive ultra-luxury lodge, prides itself on promoting conservation and community, whilst creating an incredible guest experience that perfectly balances your taste of safari, river views and excursions, superior dining, and all the trimmings that come with luxuriating on the shores of the majestic Zambezi River.

Experiencing that Matetsi Magic

My Matetsi experience was nothing short of magical, from the moment we disembarked the transfer shuttle, and our exceptional, personalised service began! I truly felt like royalty! From having our very own butler, to the attentive management and guide and tracker duo who were on hand to do their absolute best with ensuring we saw as much wildlife, enjoyed ice-cream stops in the bush ahead of venturing out onto the Zambezi on board a luxury cruise boat, there were so moments that accentuated our stay, making it as humanely magical as possible. I was truly blown away.

After being served a delectable wholesome personalised lunch upon arrival, which might I add was specially curated for me and took all my dietary needs into consideration, I was then escorted along the short walk to my suite, where I had the pleasure of staying for two days! The door opened and left me awestruck, first by just how beautiful my view of the Zambezi River was, where I could see through the ceiling to floor glass doors that wrapped around most of the front of my stand alone river front suite. I felt like I had stepped into a high-quality magazine image, as everything was just perfection. So cosy and luxurious my space was, coupled with my own private pool and patio, where I could watch small wildlife casually saunter across the grass that rose from the soil onto the river banks a few steps below. I couldn’t find a reason why I would consider actually leaving my space, but because we had some activities scheduled for our leisurely indulgence, I had to oblige. Later running and soaking in that gorgeous, distinctively round, freestanding bath tub that night after our sunset cruise and dinner under the starry sky, was truly a fitting way to end my first day, and the one that followed.

Knowing that we wanted our last day at Matetsi to truly be about capturing the magic of relaxation, we

enjoyed a beautiful prosecco filled breakfast at the main lodge, before spending a few minutes with the chef and learning a little bit about Matetsi’s menu curation.

After taking a tour of the vast property, a few hours were carved out to enjoy some individual personal time, ahead of a photo-shoot, also arranged for us by the wonderful team. One thing Yvonne and I had talked about, was really capturing the magic of our surroundings on camera, and so knowing that this was in fact arranged by the team, complete with a delectable lunch spread on my patio, added to the a truly tailored experience. With bubbles in hand, it was off for some fun in front of the camera, first over lunch, then on to a game drive with a sunset pit stop for drinks and snacks later. Did I mention too, that our afternoon was also made up of us tracking a sighting of two lionesses and their cubs! While we didn’t get to see them, we did still manage to see other wildlife, including impala and elephant, enjoying an exciting yet information and laughter packed excursion with our guide, tracker and photography duo who were along for

My time spent in Victoria Falls was truly one of embracing nature and relaxation, swaddled in affable Zimbabwean hospitality. To be able to experience Matetsi Magic from the beautiful sunrise safaris to sunset boat cruises, to the plethora of tailored activities available within Matetsi Private Game Reserve and lessons on the brand’s conservation efforts, this trip, and this stay in particular, is one memories were made that I will long remember.

From HR Leader to Travel Entrepreneur: A journey of self-discovery and transformation

As I sat down to write my travel articles for Travel Essence magazine back in 2020 during the initial throes of the global pandemic, little did I know the incredible journey that awaited me. As the world grappled with the impact of COVID, I found myself reflecting on my career and life choices. At the time, I was working as a HR leader at New York University in Abu Dhabi, having worked in HR for over two decades.

During the pandemic, I found myself in solitude while working from home. However, amidst the chaos and uncertainty, I discovered something beautiful. I had more space and time to reflect, journal, and meditate, which allowed me to tap into a new and deeper sense of inner peace. As I embarked on this journey of self-discovery, I realized that I was craving a new way of life and living.

My passion for my day job had slowly dwindled, and I felt stuck. But as I connected virtually with entrepreneurial women and their stories, I knew deep down it was time for me to take a leap of faith and start my own journey as an entrepreneur.

With my love of travel and people, a life-changing opportunity had now presented itself, one that would allow me to step out of my comfort zone and into my soul’s purpose. There was an overwhelming sense of fear as I thought about embarking on a new journey.

However, what I quickly realized is that during my travels, I had challenged myself by climbing volcanoes, trekking mountains, and exploring the limits of my own perceptions. These experiences had pushed me way outside of my comfort zone, forcing me to confront my fears and make tough decisions about whether to push forward or turn back. And that through these choices I would also unearth a sense of courage I never knew I had, recognizing that I had everything within me to succeed. I just needed to trust myself, believe in myself, and dispel any self-doubt.

Along the way I’ve had the opportunity to meet people from diverse cultures and backgrounds, also learning from the wisdom of indigenous peoples and remote communities. One particularly life changing encounter was in the Asante region of Ghana, where a village chief gave me the honorary name Akua Boahemaa, which means helper and leader.

These experiences have taught me resilience, courage, compassion, integrity, responsibility, and adaptability; qualities that are valuable in all areas of life. Leaning into these qualities has been instrumental in creating the life I always dreamed of. Moreover, it’s these experiences that ignited my passion for helping women transform their lives through travel. They also revealed to me that I could create opportunities for other women that are stuck, unable to remember what their dreams were, and give them the chance to experience adventures that would make them think, “Wow, if I can do this, I can do anything!

From corporate leadership to travel-preneur at Dream Catcher Global In January 2022, I took that leap of faith into the unknown, quit my job and took some time off to recharge and reflect in Sri Lanka. It was exactly what I needed to reset and transition from being an employee to becoming an entrepreneur. After that, as always, I couldn't resist the pull of travel with this newfound freedom and found myself hopping from one country to another.

Next stop was Malawi, where I found joy in the simplicity of life without electricity or running water on an eco-island. Followed by my third time visit to Ethiopia, this time exploring the Northern Region, Lalibela, famous for its rock-hewn churches. This experience gave me a deep sense of perspective.

As I journeyed on to countries such as Jordan, Peru, Morocco, Bolivia, and Syria, I found myself fully immersed in diverse cultures, embarking on new adventures along the way. But it

I visit Volta Region, not only because this is where I hail from, but also because it carries many interesting attractions which growing up as a little boy, I did not have the chance to explore during the vacation opportunities that came about. Today, we are witnessing an emergence of unique food and cultural experiences that pay homage to our heritage and have been upheld for decades, giving visitors to this region a glimpse into an evolving presentation and expression of our cultures and way of life.

It is awesome experiencing the place, and especially spending time with the older generation as they have a way of enriching your memory bank with distinctively authentic journeys through chronicling history and storytelling. Also, it is important to highlight that the majority of people in the Volta Region in fact live in rural areas and are mostly farmers, sadly with limited access to safe drinking water, healthcare, education or modern farming practices or technology. Tourism however, is carving out new opportunities for the locals, while giving travelers into this part of Ghana an opportunity to explore and discover.

Tourism is evolving as a new industry to Ghanaians across the country, with more citizens thinking through it in the sense of how they can make some form of returns. This reflection has emerged since 2019 was coined “The Year of the Return”; a government led initiative created to attract foreigners to the rich culture, history and opportunities for trade, investment and tourism for guests. Now we are “beyond the return”, and though increased visitation has opened up business across most of the country, for Volta Region, most people domiciled locally are taking on an active role in promoting their businesses, looking for wider opportunities to showcase the region’s offering, and looking at ways that tourism in particular, can help with boosting the economy. To support this notion, government has also started profiling tourism as a socio-economic pillar that can improve the livelihood and infrastructure that benefits the people of Volta Region.

Culture, dance and historical walls in Ghana’s Volta Region

Make no mistake; one of the Ghana’s appeal to foreigners is how vibrant the culture is. Traditional festivals in the Volta Region are an integral part of the culture. Embarking on a trip to the Volta region is awe-inspiring, and comes with a multitude of curiosities including the food and cultural expressions. The Borborbor Dance for example, is fascinating to watch, the Ghanaian and Togolese traditional dance of which is performed by the Ewe people, who come from Ghana’s mid-Volta region and Southern Togo including. What is stand out is how dancers perform by bending their bodies at angles ranging between 75 and 90 degrees, a true spectacle when seen at local community festivals.

For the longest time the Elmina and Cape Coast Castle have been the eye of pre-colonial history and a point of significant interest for many in the African diaspora especially. Ruins of forts such as Fort Prinzenstein in Keta and Cape Coast Castle are stark reminders of Ghana’s gut-wrenching history of pre-colonial and colonial Transatlantic Slave trade.

Today, though many of these forts and castles are widely viewed as iconic historical landmarks, they present an opportunity for tourists to absorb the intersection between the Ghana of yesterday year, its story of liberation, independence from European rule and national pride the world now views today.

White sandy beaches, without the extreme commercial activity that comes with most coastal attractions, have long been destinations for local and international tourist exploration. drivers are still farming, fishing, animal rearing and small-scale businesses, the continued push towards developing tourism infrastructure, lends itself to improved accommodations and ancillary services, coupled with an active promotion of the region’s natural attractions. Repub Lounge, affectionately known as Repub in Kigali, is a captivating destination that offers an incredible din-

I had my first taste of Sambaza, a small sardine-like fish, after years of claiming I do not eat them. Funny enough, I now go back to Repub Lounge and then for this, which is how good it is.

Apart from their food, their ambience is equally impressive, with Afro-chic interior decor that creates an inviting and relaxing atmosphere. In addition to the restaurant, Repub Lounge has a well-curated curio shop called Chanzo that features beautiful accessories, books, and clothes, making it a great place to find unique gifts and souvenirs. Whether you're looking to enjoy a tasty meal, shop for African-inspired goods, or simply relax in a beautiful setting, Repub Lounge is worth a visit when in Kigali.

I was invited to an event at Wood Habitat client to capture the event for social media. It was my first time intersecting with the space, and I was gobsmacked. It is a furniture manufacturing company with an exquisite showroom, which exudes an exceptional transformation in the space. Their timeless and luxurious furniture pieces are of the highest quality, making them ideal for creating dream spaces that are both elegant and functional. The showroom is stunning, with a premium and luxurious aesthetic showcasing furniture pieces in the best possible light. Their imaginative spaces are warm and welcoming, focusing on comfort and abundance. Although not an eatery, Wood Habitat is a great place to witness space transformation through luxurious furniture. Wood Habitat is an excellent destination for creating a beautiful, sophisticated space that reflects their style and taste.

Laini Studio

And then there's Laini Studio. As a crafty person, I have a soft spot for curation spaces, and Laini Studio is one such place that truly spoke to my soul. The cute and unique ceramic pieces were out of this world, and the designs and shapes were mesmerising. The space was beautifully designed, with a wholesome and relaxing ambience, making it the perfect place to unwind and enjoy a peaceful environment. What's more, Laini Studio offers custom-made pieces that can be tailored to meet their client's unique needs and preferences. In addition, for those looking to explore their creative side or learn new skills, the pottery and ceramic painting lessons are well structured and engaging. Laini Studio is a gem for anyone seeking an artistic and serene space.
