y worst nightmare involves sitting around an African bush campfire, admiring a sunset from a mountaintop after a hike or venturing onto a secluded beach for a romantic picnic… and having no corkscrew to open the wine. #HowToSwiftlyKillTheMood. If you’re shrewd enough to pack a screw cap or champagne - well done! What do you do however, if you find yourself in the middle of nowhere, with corked wine and no opener? As in any situation where I require an answer to a pressing question I, of course, consult the Great Oracle - Google. Time to pray there’s 4G signal in Tweebuffelsmeteenskootdoodgeskietfontein. Reassuringly, according to various websites there are numerous ingenious ways to open wine without a corkscrew. The most pertinent question though is which of these techniques actually work? The internet relentlessly conspires to mislead us. YouTube videos look legitimate, but

we all know you can’t trust anything on the internet. I decided that for the sake of circumventing a future catastrophe of this nature and for the benefit of my readers, I will rigorously put these methods to the test over the next few months to find the most effortless way to get to the good stuff no matter where you are in the world and what tools are at your disposal. Step aside Suzelle DIY! Obviously before trying to uncork your wine you first need to remove the foil seal to expose the cork. Foil cutters are for snobs. Also if you’re in the middle of nowhere, the chances of having a foil cutter with you are likely zero. A knife will work, but honestly I have found that the simplest way to remove the seal is to grip it firmly and give it a good tug. Nine time out of ten, the whole foil seal will just slide off.

1. SCREW AND HAMMER METHOD
The premise is simple. Push a screw into the cork’s centre with a few finger turns then use a screwdriver to screw it in until there is just enough space between the cork and the head of the screw to insert a hammer claw. Using the hammer as a lever, remove the screw, pulling the cork out with it. This sounds like a doddle. The first screw went in effortlessly, but when we attempted to pull the cork out, the screw pulled right out, leaving the cork behind. My husband reasoned the thread of the screw was too fine, so for our second attempt we employed a screw with a much thicker thread. However, we just repeated the result. The instructions on the internet claim you can even use a nail. I disagree. A nail has no thread to grip the cork. Our achievement amounted to thus: A cork with a large jagged hole, still wedged firmly in the bottle. No screw would be able to gain enough traction to pull the cork out now. This method will probably work if you had something with a very broad thread similar to a corkscrew… Kind of defeats the object, doesn’t it? Also, it’s highly unlikely you will have access to these tools while holidaying in a remote setting. That reason alone discounts this as a viable method.
2. THE RHYTHMIC WALL BASH ING METHOD
I liked the sound of this. The idea is to cushion the bottom of the bottle with a towel/item of clothing or a shoe. Then, holding the bottle horizontally, rhythmically whack the underside against the wall (or any other flattish surface - a tree trunk maybe) until the cork begins to dislodge, due to the wine sloshing up and down inside the glass. Once enough of the cork is exposed you can remove it using your fingers. We wrapped the bottle in a towel and nearly smashed it against the wall. First observation: Sound cushioning is essential to this technique. A running shoe cushioned the bottle brilliantly. After a good 20 minutes of continually bashing the bottle against the wall, that stubborn cork hadn’t budged one millimetre. I changed tack and tried the suggested variation, holding the bottle upside down between my thighs, hitting the bottom with the flat of my hand. Nothing happened. The only thing I accomplished was getting a vigorous cardio workout! Pros: No special equipment is necessary. Cons: Set aside a whole day and enlist the services of a professional drumming team. Even then success is uncertain. I’m having tons of fun with this experiment! Stay tuned for part two next month . Yours in wine, Fern

hen the Editor Keagan Lamb asked me to write the Finding Fabulous piece for the October issue I did not realise I would be driving an hour and a half to Magalieserg to have dinner. We do love a bit of adventure and I love discovering new places, new wine and new food, and taking the windy roads

This restaurant which boasts being in the top 10 in South Africa was brimming with busyness while having a peaceful ambience – a perfect setting for a romantic evening. I love romantic dinners, and to be honest there is just nothing better than the combination of sublime food, paired with equally fine wine and conversation that leads into coffee and friendships secured. The Rambling Vine proposes such an evening. to the Rambling Vine was well worth the drive. I did not have the pleasure of seeing the beautiful views promised or indulging in the floatation pool, which is apparently a treat at Mount Grace Country House and Spa, but we did enjoy being spoilt at their signature restaurant.

We were fortunate to enjoy the evening with Warwick Wines sharing and pairing the dinner, and The Three Cape Ladies promised not to disappoint. We were welcomed with the First Lady Dry rose’ and I would definitely recommend this on your summer menu. Do not let the word rose’ fool you, this is a delicious

By Justine Engelbrecht light dry wine that is definitely a welcome not to be forgotten. First Lady Sauvignon Blanc paired perfectly with the sautÊed asparagus and goats cheese starter, the fruity reduction and olive flavours blended with the wine’s aromas of passion fruit and kiwi. I have to confess that I do not have the palate for goat’s cheese, but the dish was elegantly and thoughtfully put together with each ingredient complimenting the other. I cannot fault my main course of panfried Salmon, with a gremolata coating of chives and whole grain mustard. Salmon is one of my favourites and I was not disappointed. My husband enjoyed the grilled ostrich fillet with roast aubergines, mushrooms and black cherry reduction. Both dish-
es were paired with the delicious Three Cape Ladies Trilogy, a curated French oak barrel selection of cabernet sauvignon, cabernet franc and merlot. Dessert of passion fruit parfait, pineapple and ginger compote sweetened the palate and enticed the senses and provided the perfect closure to a delicious dinner. The Rambling Vine proved to be a delectable discovery of senses and sights, perfectly plated and deliciously prepared, I would love to return during the day to indulge in the offerings of this unique destination, just far enough away to feel like you are getting out of town and just close enough to not have to travel too far. Recommend making a week-end of it though, it promises to be memorable!

A WELL PLANNED CITY IN INDIA C handigarh is bordered by the state of Punjab to the north, west and south, and to the state of Haryana to the east. It is considered to be a part of the Chandigarh capital region or Greater Chandigarh, which includes Chandigarh, and the city of Panchkula (in Haryana) and cities of Kharar, Kurali, Mohali, Zirakpur (in Punjab). It is located 260 km (162 miles) north of New Delhi, 229 km (143 miles) southeast of Amritsar and just 116 km (72 miles) southwest of Shimla.
It was one of the early planned cities in post-independent India and is internationally known for both its architecture and urban design.The master plan of the city was prepared by the Swiss-French architect Le Corbusier, which transformed from earlier plans created by the Polish architect Maciej Nowicki and the American planner Albert Mayer. Most of the government buildings and housing in the city, were designed by the Chandigarh Capital Project Team headed by Le Corbusier, Jane Drew and Maxwell Fry. In 2015, an article published by BBC named Chandigarh as one of the perfect cities of the

world in terms of architecture, cultural growth and modernisation. Chandigarh’s Capitol Complex was declared by UNESCO as World Heritage in 2016, at the 40th session of World Heritage Conference held in Istanbul. UNESCO inscription was under “The Architectural Work of Le Corbusier an outstanding contribution to the Modern Movement”. The Capitol Complex buildings include the Punjab and Haryana High Court, Punjab and Haryana Secretariat and Punjab and Haryana Assembly along with monuments Open hand, Martyrs Memorial, Geometric Hill and Tower of Shadow. The city has one of the highest per capita income in the country and is reported to be one of the cleanest in India based. The union territory also heads the list of Indian states and territories according to Human Development Index. In 2015, a survey by LG Electronics, ranked it as the happiest city in India over the happiness index. The metropolitan of Chandigarh–Mohali–Panchkula collectively forms a Tri-city, with a combined population of over two million.

ASSISI Home to St Francis, one of Italy’s most revered saints, Assisi is the historical HQ of the Franciscans, a noted Catholic order. And it has some really awe-inspiring architecture. Dominated by the outstanding Basilica, which glows with the works of Cimabue, Giotto and Lorenzetti, the hilltop town also possesses a 1st century Temple of Minerva, an amphitheatre, and lots of hermitages, which dot the slopes of Monte Subasio. CARCASSONNE Few sights are quite so striking as the double-walled fortress of Carcassonne. A citadel that looks built to withstand the Last Days, its stone ring (of 52 towers) was used to film Robin Hood Prince of Thieves. Today, the town is technically split in two. After Louis IX expelled its Cathar population, the heretics were sent to start a new town on lower ground, by the River Aude. Known as the Ville Basse, the main delights of this fairytale town are still the medieval churches up in the Cité, especially St Nazaire.

OVIEDO Built in a warm yellow stone, Oviedo’s smalltown size belies its big reputation. It was once the capital of the Spanish mountain kingdom of Asturias and there are plenty of palaces, churches and castles up for exploring. ust five weeks ahead of his first ever concert tour to South Africa, Yusuf / Cat Stevens, one of the most influential singer-songwriters of all time, is releasing his highly anticipated new album, The Laughing Apple under his Cat-O-Log Records logo exclusively through Decca Records, the same label that launched his career 50 years ago. Celebrating the 50th Anniversary of his first major hit single and debut album Matthew & Son released in 1967, the South African leg of The Peace Train Tour opens in Johannesburg with a sold out concert at the Ticketpro Dome on Wednesday, 8 November 2017, followed by a second concert on Thursday, 9 November 2017 and finishes on Wednesday 15 November 2017 at Durban’s ICC Arena. The Laughing Apple celebrates some of his earliest material, presenting the songs as he has always wished they had been recorded. “There are some I always wanted to hear differently,” he explains. “Many of my earlier recordings were overcooked with big band arrangements. They crowded the song out a lot of times.” Yusuf produced The Laughing Apple with Paul Samwell-Smith, the original producer behind Yusuf’s landmark recordings, including 1970’s Tea for the Tillerman, which contained the classics ‘Wild World’ and ‘Father and Son’. That multi-platinum album became a benchmark of the singer-songwriter movement, and the Rock and Roll Hall of Fame has named it one of the definitive albums of all time. The Laughing Apple takes listeners to that little garden where the Tillerman sat under the tree, with a charming new illustration by Yusuf. That picture harks back to Tillerman’s younger days when he worked as an apple-picker. Yusuf also has illustrated each of the 11 songs on The Laughing Apple in his naive style, resembling a storybook — for those whose hearts have never really grown old.
