Taste Sensations: sensational seasonings Taste Sensations are seasonings with a typical herb bouquet and taste profile. The Taste Sensations concept makes it possible to prepare 1 basic mixture to which various seasonings can be added for quick and easy variations when preparing ready-to-cook or seasoned mince products. Taste Sensations are pure seasonings without functional ingredients for binding, basic seasoning, preservation or colour extenders. The Taste Sensation range has been expanded with 4 new flavours.

Taste Sensation Asparagus (7041195) Medley of typical asparagus flavour with a garnish of parsley.

Taste Sensation Spring (7041199) A genuine spring mix of carrot, leak, onion, bay leaf and thyme.

Taste Sensation Mustard (7041197) Taste blend with a strong mustard flavour and a fine garnish of ground mustard.

Taste Sensation Stroganoff (7041286) A wonderful red taste combination, with typical Stroganoff flavour and a garnish of bell pepper and onion.

The southern flavours of Provence, captured in a single flavour mix. Includes tomato, basil, oregano, thyme and rosemary.

Red flavour mix with a delicious Mediterranean tomato & basil tang.

Taste Sensations

Asparagus Gratin envelope

Ingredients: • 10 g Degens Taste Sensation Asparagus (7041195) • 25 g/kg Degens Dry Glaze Mustard Dill (7033337) • 500 g Degens Gratin Sauce (7040062) • 10 pork fillets • 20 green asparagus shoots • 10 slices of smoked ham Preparation: 1. Blanch the green asparagus shoots al dente and leave to drain 2. Cut open the pork fillets to form an envelope 3. Mix the Gratin Sauce with the Taste Sensation Asparagus and pour into piping bag 4. Fill the fillets with 2 green asparagus shoots and a slice of ham 5. Season the outer surface with Dry Glaze Mustard Dill 6. Place the fillets in an oven dish 7. Pipe a blob of Gratin Sauce on the pork fillet

Ingredients: • 55 g/kg Degens Premium Vekamix (7036481) • 25 g/kg Degens Taste Sensation Asparagus (7041195) • Degens Crumb Mix Easy Ardennes (7030227) • 1 kg minced veal • 150 g green asparagus shoots • 12 slices of veal fricandeau

Asparagus Veal Olive

Preparation: 1. Blanch the green asparagus shoots al dente, allow to drain and cut into small pieces 2. Mix the minced veal with the Vekamix, Taste Sensation Asparagus and the green asparagus shoots 3. Portion the mix in 80 gram balls 4. Roll the balls in the slices of fricandeau to form a nice round olive 5. Garnish the surface with Crumb Mix Easy Ardennes

Caribbean Mustard Gratin

Ingredients: • 20 g/kg Degens Caribbean Grill Mix (7030103) • 20 g Degens Taste Sensation Mustard (7041197) • 500 g Degens Gratin Sauce (7030062) • 10 pork blade steaks • Oven dish Preparation: 1. Mix the gratin sauce with the Taste Sensation Mustard and pour into piping bag 2. Season the upper surface of the blade steak with Caribbean Grill Mix 3. Place steaks in an oven dish 4. Pipe steaks with a blob of Gratin Sauce

Mustard à l’Americaine

Ingredients: • 350 g Degens Fillet/Preparé Sauce Extra (7022482) • 25 g/kg Degens Taste Sensation Mustard (7041197) • 1 kg fresh ground beefsteak or steak tartar Preparation: 1. Weigh all ingredients 2. Mix everything together to one homogenous mass 3. Pour into piping bag 4. Fill containers with the Mustard à l’Americaine using piping bag 5. Decorate with a sprig of parsley and/or some mustard seeds Tip: Use 25 g Taste Sensation per kilo or ready made fillet à l’Americaine

Ingredients: • 50 g/kg Degens Dry Glaze Bistro (7034696) • 10 g Degens Taste Sensation Spring (7041199) • 500 g Degens Gratin Sauce (7040062) • 350 g salmon steak

Spring Gratin with Salmon

Preparation: 1. Mix the Gratin Sauce with the Taste Sensation Spring and pour into piping bag 2. Season the salmon lightly with Dry Glaze Bistro 3. Place salmon in an oven dish 4. Squirt the upper surface with the Gratin Sauce 5. Garnish with freshly grated cheese and spring onions Tip: Use about 500 gram Gratin Sauce to 1 kilo of meat or fish

Ingredients: • 25 g/kg Degens Taste Sensation Stroganoff (7041286) • Degens Marinade Mix Meat (7030213) • Basic mix for grilling sausage Preparation: 1. Mix the Taste Sensation Stroganoff with the Grilling Sausage basic mix 2. Cook grilling sausage as basic mix recipe. 3. Once cooled, peal the sausages 4. Season outer surface with Marinade Mix Meat 5. Preheat oven to 200ºC 6. Ovenbake sausages for ± 10–15 minutes 7. Serve as you wish
