Chipolata Stroganoff Ingredients • 25 g/kg Degens Premium Mince/Sausage Mix (7036411) • 25 g/kg Degens Taste Sensation Stroganoff (7041286) • 1 kg pork mince • Sheep gut Preparation 1. Mix the mince with the Premium Mince/Sausage Mix and the Taste Sensation Stroganoff 2. Fill the sheep gut with the mixture 3. Portion the sausages to the desired weight

Barbecue Sausage Mustard Ingredients • 25 g/kg Degens Taste Sensation Mustard (7041197) • 1 kg basic barbecue sausage mix Preparation 1. Mix the basic mix with the Taste Sensation Mustard 2. Fill the required gut with the mix 3. Portion the casing into barbecue sausages

Basic Barbecue Sausage Mix Ingredients • 55 gr/kg Degens Premium Barbecue Sausage Mix (7037102) • 16 gr/kg Degens Colorozo Salt (7030108) • 45 % fatty strips • 45 % lean strips • 10 % water Preparation 1. Prepare all ingredients 2. Mince the selected meat using a 3 mm plate 3. Mix the meat with the additives and water to a homogenous mass 4. If necessary put the basic mix through the 3 mm plate 5. Stuff the desired casings with the mix 6. Let the sausages cool for 24 hours at 2°C 7. Cook the sausages at 76°C to a core temperature of 72°C 8. Chill under cold running water 9. Cool further at 2°C

Dry Glazes: Marinate without a marinade These dry powders combine with the meat juices to give the meat an attractive glazed coating. It also binds the meat juices to prevent leaky packaging. The glaze marinade is quick and simple to apply to the meat. The glaze marinade provides a coating consistency that is difficult to achieve with liquid marinades and ensures a better transfer of aromas and flavours. Our Dry Glaze range has also been expanded with 2 new tastes.

Dry Glaze Pepper (7040795) A spicy red Dry Glaze with a garnish of pepper, green chilli pepper and red bell pepper.

Dry Glaze Lemon Pepper (7039966) A yellow Dry Glaze with a lemon-pepper flavour that first gives a lemon rush followed by a pepper hit. Garnish of black and white pepper.

Pampa Burger or Meat Roll Ingredients • 50 g/kg Degens Dry Glaze Pepper (7040795) • 1 kg pork fillet • 3 pieces of smoked bacon in thick strips/Breydel bacon • Kitchen twine Preparation 1. Trim fat from pork fillet 2. Cut open pork fillet 3x along its length 3. Fill pork fillet with strips of smoked bacon 4. Carefully bind the fillet 5. Season the surface with the Dry Glaze Pepper Tip For Pampa Burgers; cut slices of ± 1 cm thick.

Tuna Spit Ingredients • 50 g/kg Degens Dry Glaze Lemon Pepper (7039966) • 1 kg fresh tuna • 1 piece of cucumber • 2 strips of yellow bell pepper Preparation 1. Cut the cucumber along its length in 4 pieces and remove the core 2. Cut cucumber into strips and leave to drain 3. Cut the tuna into blocks and marinate with the Dry Glaze Lemon Pepper 4. Place on the skewer alternated with cucumber slices and yellow bell pepper

Beef Rotisserie Ingredients • 50 g/kg Degens Dry Glaze Beef (7039965) • Meat for beef roll • Kitchen twine Preparation 1. Cut the meat for rolls of ± 500 grams 2. Marinate the inner surface of the meat ± 25 g/kg 3. Roll it up and bind it 4. Marinate the outer surface of the roll with the remaining herbs Tip Spit-roast the roll on the barbecue until pink with a core temperature of ± 43ºC. The roll can of course also be pan or oven roasted.

Degens Marinades:

Degens oil marinades free of hydrogenated fats Consumers are becoming more aware of the need for a responsible lifestyle and as a result are specifically looking for healthier products. They are increasingly demanding products with nonhydrogenated fats rather than hydrogenated ones. Hydrogenated fats occur by processing oils in a certain way, forcing them to take on different chemical structures. This gives the fats a higher melting point and a longer shelf life. For many years, consumers appeared to demand this. Today, however, people suspect that hydrogenated fats could have negative health effects, leading to greater demand for products with non-hydrogenated fats. Degens is responding to this trend with its new line of oil marinades, which only contain non-hydrogenated fats. It is not easy to replace hydrogenated fats with non-hydrogenated variants. Hydrogenated fats provide structure to a marinade, preventing the garnish and herbs from settling. However, over the last year we have managed to develop oil marinades using non-hydrogenated fats with the same qualitative properties. Non-hydrogenated fat is rich in unsaturated fatty acids and contains omega-3. Cholesterol Unsaturated fatty acids in the marinades have a positive effect on HDL cholesterol. Omega-3 fatty acids The new oil marinades also contain omega-3 fatty acids. Omega-3 fatty acids are polyunsaturated fatty acids that are essential for optimal health. In addition to the above health benefits, the new oil marinades feature a number of other benefits. The marinades are free of MSG, a flavour enhancer that is used widely in the savoury food industry. Many see this as an undesirable E-number, and it has therefore been removed from our marinades. As well as removing MSG, we have also made our marinades gluten and lactose free, resulting in products that contain far fewer allergens. We have also changed the name of some marinades, making it easier to see at a glance which taste theme each marinade features. Below you will find a list of the changes from ‘old version’ marinades to ‘updated version’ marinades. In short, Degens is working hard to respond where possible to consumer demand. So why not try our delicious new oil marinades that are free of hydrogenated fats, and contain fewer E-numbers and allergens?

Tsar Spit Ingredients • 70 g/kg Degens Marinade Stroganoff (7041314) • Beefsteak • Red bell pepper • Green bell pepper • Onion • Pins or skewers Preparation 1. Cut the beefsteak into cubes 2. Marinate with the Marinade Stroganoff 3. Cut peppers and onions into strips 4. Slide these alternately on the skewers 5. Serve as you wish

French Fish Spit with Dragon Ingredients • 70 g/kg Degens Marinade Dragon (7041212) • Cod fillet • Fresh fennel • Cherry tomatoes • Pins or skewers Preparation 1. Cut the cod into cubes 2. Seasoned Chicken on a Spit Ingredients • 70 g/kg Degens Marinade Garden Herbs (7041311) • Some chicken fillets • Strips of smoked bacon • Skewers or pins Preparation 1. Halve the chicken fillets along their length 2. Marinate with the Marinade Garden Herbs 3. Wrap them in a strip of smoked bacon 4. Serve as you wish

Greek Strips Ingredients • 70 g/kg Degens Marinade Greek Gyros (7041256) • Pork meat strips • Stir-fry vegetables Preparation 1. Marinade the strips with the Marinade Greek Gyros 2. Present the strips on a dish with the stir-fry vegetables Tip Stir-fry the strips briefly with the vegetables. Serve with fried potatoes or rice.

Smokey Barbecue Steak Ingredients • 70 g/kg Degens Marinade Smokey BBQ (7041315) • Degens Deco Lucullus (7030123) • Pork blade steaks Preparation 1. Marinate the steaks with Marinade Smokey BBQ 2. Present on a suitable dish 3. Garnish the steaks with the Deco Lucullus

Tuscan Fish in Papillote Ingredients • 70 g/kg Degens Marinade Tuscan (7041292) • Tilapia fillet • Stir-fry vegetables • Aluminium foil Preparation 1. Use the aluminium foil to create some boats (= papillote) 2. Marinate the tilapia fillet 3. Fill the boats with some stir-fry vegetables 4. Lay the marinated fillets on top (1 or 2 per boat) 5. Present on a suitable dish Tip Papillotes are very well suited for cooking fish products on the barbecue. Fold them closed prior to cooking. Cook on a cooler spot on the barbecue.

Thai Strips Ingredients • 70 g/kg Degens Marinade Thai (7041316) • Chicken strips • Eastern stir-fry vegetables Preparation 1. Marinade the chicken strips with the Marinade Thai 2. Raw Vegetable Salad with Ravigotte Ingredients • 600 g Degens Ravigotte Sauce NR (7036580) • 400 g celery • 200 g cherry tomatoes • 100 g red bell pepper cubes • 100 g green bell pepper cubes • 100 g finely chopped onion • 100 g tinned sweetcorn Preparation 1. Wash the vegetables carefully 2. Drain the sweetcorn well 3. Cut the celery in thin strips and halve the tomatoes 4. Mix the raw salad with the Ravigotte Sauce 5. Present the salad in a suitable bowl or dish 6. Garnish with ingredients from the salad

Pasta-ham Salad Ingredients • 200 g Degens Dressing French (7036826) • 500 g spirelli, boiled (in salted water) • 300 g boiled ham, in cubes • 1 red, 1 yellow and 1 green bell pepper • 100 g carrots, grated Preparation 1. Remove pips from peppers and dice 2. Weigh all the ingredients 3. Mix all the ingredients with the Dressing French 4. Present in suitable bowl or dish 5. Garnish with ingredients from the salad

White Cabbage/Carrot Raw Salad Ingredients • 350 g Degens Mustard Vinaigrette (7021449) • 500 g white cabbage, chopped fine • 250 g apple, strips • 200 g onion rings • 200 g carrots, strips Preparation 1. Weigh all the ingredients 2. Mix all ingredients and season the blend using the Mustard Vinaigrette 3. Present on a suitable dish 4. Gratin Sauce

For oven dishes and more

Degens has launched a completely new concept: Gratin Sauce. A lightly seasoned basic white sauce for the preparation of many oven dishes. Suitable for products with a preparation time of maximum 15 minutes, and a minimum preparation temperature of 175°C. The sauce runs slightly when prepared, giving a brown, slightly crunchy layer on your product. The Gratin Sauce can also be used as a filling in minced meat products, for instance in a stuffed mince roll. Endless variations are possible by adding 20 g/kg Taste Sensation (to taste).
