Twenty-seven years ago, Taylor Cash didn’t set out to sell live bait. And he certainly didn’t expect to sell fine wine. When he and his late wife Gail bought a little spot north of 540 on Six Forks Road, they planned to operate a gas station and simple convenience store stocked with “all the items you’d normally find there,” he says: Nabs, trail mix, Goody’s Powders. A little of this, some of that. Turns out, the store’s location gave Cash a front-row seat to Raleigh’s growth and development, and he’s transformed his business to embrace it. It wasn’t long after he bought

the store in 1980, for instance, that Falls Lake State Recreation Area opened to the public. In came boating supplies, fishing supplies, and live bait and tackle. Then, around 2000, as Cash was closing the full-service lunch and breakfast grill he’d been operating at the store, he realized he needed another profit center. An idea sparked when a nearby big-name grocery store completed a renovation including a facelift to its wine aisle. “I thought, ‘daggone, they must sell a lot of wine,’” to warrant such a swanky setting, he says. So he talked to one of his convenience store vendors

about bringing a few bottles in to “see how it would go … It grew from there. In a matter of years, it went from selling 15 wines to over 1,000.”

Strawberry Red Wine Jelly Triangle Today We used an already opened bottle of dry wine with big fruit flavor and low tannin, plus a few grinds of fresh pepper to yield a full bodied, jewel-tone jelly made with pectin. 1 cup water Freshly ground black pepper 1 package pectin, such as Sure-Jell Classic 1/2 teaspoon butter 4 1/2 cups sugar

INSTRUCTIONS Rinse strawberries and blot dry. Trim caps and cut berries in half. Transfer to blender with wine and water; puree. Pour into saucepan. Add several grinds of black pepper and bring to a simmer over medium heat, stirring occasionally, then remove from heat. Set a jelly bag or colander lined up damp cheesecloth over a large measuring cup or bowl. Pour in warm mixture and allow to drip undisturbed 2 to 3 hours or until liquid measures 3 3/4 cups. Or refrigerate and allow to drip overnight. Resist the temptation to squeeze the bag to make the juice drip faster as it may make the jelly cloudy.

Pour 3 3/4 cups juice and butter into canning pot. Add 1 package pectin and bring to a boil over medium-high heat, stirring constantly to dissolve pectin. When mixture is at a rolling boil, add all sugar at once and stir well to combine. When mixture again reaches a rolling boil that cannot be stirred down, allow to boil 1 minute longer. Remove from heat and, if necessary, skim foam. Pour jelly into canning jars, wipe rims clean, then apply lids and screw-on bands. Process 10 minutes in a water bath according to USDA guidelines.

North Carolina’s favorite is the mimosa — a drink most commonly made with sparkling wine and orange juice (with many, many variations). It’s brunch classic usually served in a tall champagne flute. A Yelp search for the “best mimosa” in Raleigh brought up results for Humble Pie on South Harrington Street, Coquette Brasserie in North Hills and Plates Neighborhood Kitchen on Glenwood Avenue.

A downtown Raleigh wine bar is expanding to midtown. The Hargett Street wine bar Vita Vite will add a second location in North Hills soon. The new location will be called Vita Vite Midtown and will feature the same wine bar/art gallery vibe of the downtown spot. Owners are eyeing an opening in late spring. “We love being a part of the Raleigh community, and we’re thrilled to have the opportunity to expand to North Hills,” said Lindsay Rice, founder and owner of Vita Vite. “Vita Vite Midtown will be a relaxed environment that is comfortable and welcoming to everyone.” The second location looks to be sizable, moving into a 6,000-square-foot space in the new North Hills Park Central building with a mezzanine level, outdoor seating, couches and multiple fireplaces. The menu will include wines from around the world, craft beer and small plates. Rice opened Vita Vite in downtown’s Warehouse District in late 2015.
