offers more than just first-rate sushi Greg Cox for Triangle Today As you approach Fusion Fish from the parking lot, a catering van parked near the entrance catches your eye. Particularly striking is the paint job: a largerthan-life full color photographic rendering of an elaborate sushi display. As it happens, that’s your first clue as to what’s in store inside. The van belongs to Yung Nay, the restaurant’s owner. Fusion Fish is Nay’s first restaurant, but he has operated a successful catering business for the past decade and counts some of the area’s top research firms among his corporate clients. He honed his skills at Sono (under sushi chef Mike Lee, who went on to open M Sushi in Durham), and briefly worked front of house at An Cuisines in Cary to broaden his understanding of how a restaurant works. Nay calls his catering specialty “live sushi stations” — and if that conjures up images of the still-living fish you may have seen being filleted on a Food Network special on Tokyo, you can rest easy. He means “live” as in made to order. It should come as no surprise, then, that sushi is a featured attraction at Fusion Fish. Or that the restaurant already had a strong following the day it opened in March.
Nay’s fanbase is sure to grow as others discover the first-rate sushi that he and his team are serving up. Those who find the typical everything-but-the-kitchen-sink list of house specialty rolls overwhelming will appreciate the concise, thoughtfully chosen selection at Fusion Fish. The list is divided into four categories — Raw, Cooked, Fried and Vegetarian — with just a handful of options in each.

Apparently there are only three states in the U.S. that appreciate the importance of mac and cheese on the Thanksgiving table. Those are North Carolina and South Carolina – of course – and Delaware, based on Google data of the most-searched recipes in each state during the month of November. SatelliteInternet.com compiled a map of each of the most-Googled recipes for each state based on 2017 search data. The Carolinas and Delaware were the only states searching for macaroni and cheese recipes. Many states, including California, Nevada, Arizona and New York were searching for turkey or turkey brine recipes. Copy-cat Popeye’s Cajun turkey how-tos were the most-searched for Thanksgiving recipe in Illinois, Mississippi and Virginia. Parts of the South, including Tennessee, Kentucky and Alabama, wanted sweet potato recipes, along with one neighbor to the west – New Mexico. Utah and Idaho favor Jell-O recipes. Other states that favored dessert recipes more than any other food included Arkansas and Oklahoma, where pecan pie was the most-searched recipe; Washington, which chose pumpkin pie; and Alaska, where they like their pumpkin in cheesecake.

COPA menu serves distinctive takes on Cuban classics while drawing on heritage Greg Cox for Triangle Today
Roberto Copa Matos and Elizabeth Turnbull opened Old Havana Sandwich Shop in January 2011 with a modest menu and limited hours, at a location three blocks off the beaten path of eating and drinking establishments in downtown Durham. They made a mean Cuban sandwich, though, and in no time, their little shop was benefiting from the best kind of marketing: word of mouth. Seven years later, the place was still thriving. The husband-and-wife owners easily could have rested on their laurels. Lucky for us, they didn’t. Over the years, they expanded the menu, adding small plates and a handful of entrees. Weekend brunch followed, and a bar. A couple of years ago, the restaurant began hosting a “Lost Dishes of Cuba” dinner series. Inspired by a 19th century cookbook that Copa Matos had discovered, the recipes drew on cultural influences of Africa, Asia, and especially Spain, and featured a surprising variety of ingredients such as celery and cauliflower, crops that had been casualties of the Cuban revolution. Looking back, it’s easy to see the trajectory that led to the couple’s inevitable next step: a bigger, more ambitious restaurant. They closed Old Havana Sandwich Shop in February, and opened COPA a few blocks away — this time in the thick of the action — in March. Taking over the address that previously had been home to Revolution, they

transformed the sleek modern space they inherited into a dining room with a casual, convivial vibe accented by the warm colors of Spanish tile floors, vintage-looking chandeliers, and a series of ink drawings by a Cuban artist celebrating the growing, preparation and enjoyment of food.
