PURE SOCIAL HISTORY
Sometimes one canʼt help being filled with wonder. The occasion for me was a visit to Higher Uppacott on Dartmoor, an in-tact 14th century Dartmoor Longhouse (see further in this issue). It provides a unique view of life in the mediaeval period, around the time of the Black Death, and is pure social history, graphically wrenching you back to the basic realities of life through living off the land. Itʼs currently being restored by the Dartmoor National Park. Itʼs one of Devonʼs great treasures.

Sidmouth Harbour Hotel is expanding on an ambitious refurbishment programme. Host get-together In December, Lucy, the proprietor of Barking Mad and her hosts, will be getting together to share experiences and receive awards for the many incredible things that they do. Recently, one of the hosts had looked after a dog who’d been unable to go upstairs due to a health issue. So the host set up camp downstairs and kept the dog company all night, sleeping on the sofa. It’s just the sort of story we’ve come to expect from the Barking Mad service! Lucy’s found that people are so keen to become hosts for Barking Mad that Lucy even had someone tap her on the shoulder whilst she was in her local supermarket to enquire about the logo on her jacket. Within two weeks they were signed up and hosting their first dog. You may spot Lucy at her Barking Mad stand at local shows in the New Year. Great fine dining in East Devon The Salty Monkʼs run by proprietors Annette and Andy Witheridge, both chefs by trade who are now into their 17th year of running the business, which is situated in Sidford, Sidmouth. Upon arrival, we were shown to the lounge to order drinks and view the menu. The Salty Monk is a ʻfine diningʼ establishment and this was very much reflected in the menu, which was interesting and well outside of the usual gastro pub menu. Also, theyʼre very true to the provenance mantra in that they source extensively from local growers and producers, so youʼre assured of quality cooked into your meal. Firstly, the amuse course was sampled, and yes, it
did amuse, three cheese tortellini which had a delicate sliver of grilled crunchy cheese on top great! For starters, fresh roast fig with Serrano ham proved highly flavoursome as did the duo of own smoked salmon, the attention to detail showing through in terms of carrying out their own smoking. For mains, Devon lamb cooked 3 ways was really excellent, the meat being succulent and tender, loved the lamb sausage, also the hotpot. Roast pheasant one of my favourite meats, was again beautifully cooked, again being succulent ( so easy to overcook pheasant), with a lovely accompanying jus, a top notch main alongside the fresh, roast veg.

Pudding was their signature dish of honey & yogurt baked Alaska, also dark Belgium chocolate fondant with iced raspberry parfait and griottines - all superb, light, not overly sweet and full of deep flavours - lovely! Annette and Andy really inject energy and detail at every corner. The Kings School dinner they host annually (where pupils take over the restaurant for a day, ordering provisions, cooking meals and waiting at table, all to raise money for 3 charities) is typical of the selfless generosity for which theyʼre known . I think the pictures say it all, just lovely food at a great dining venue.

part in bringing huge amounts of snow to the UK. This time round it could be the strongest in decades”. So we have been warned. But what are the chances of a White Christmas this year? Well the weather wise tell us that “somewhere in Devon” a snowflake has fallen to earth on Christmas Day 39 times since 1962which means that there is about a 5050 chance of snow this Christmas, but where that elusive snowflake might fall is anybody’s guess.
Heading into snow? IT HAPPENS EVERY TWO TO SEVEN YEARS, the Pacific current El Nino - which means ‘the boy child’ - because it was first observed at Christmas time – and it’s linked to major global climate events around the world.
If you want to talk widespread coverage - what Good King Wenceslas would have called deep and crisp and even - then Devon has only had that kind of White Christmas four times in that same period.
The last time the El Nino current behaved the way it did earlier this year it heralded the winter of 2009/10 when December temperatures plunged and we experienced the coldest Christmas in Devon for over 100 years: and according to the tv weatherman Thomas Shafernaker, “In 2010 the El Nino played a

A beautiful Victorian country house hotel set in a 125 acre estate amidst the rolling North Devon countryside. Also having an amazing TuscanRoman themed wedding facility - the Palazzo. Devon's a massive county, much of it rural and for many people it's undiscovered. The temptation, particularly if you live along the south coast of Devon is to gravitate towards the coastline, but you'd be missing out. There's a wealth of pristine countryside and history to discover in Mid and North Devon, although it can be hard to know where to make a start.
By chance I recently came across the Highbullen Hotel and promptly made a visit. Having travelled up and down the old Exeter to Barnstaple road many times (A377), it seems you drive for miles through many little villages and scenic countryside (not forgetting historic Crediton), but it appears there's not much opportunity to explore the hinterland from other than a few roadside inns. So it was great to
discover Highbullen Hotel, situated at Chittlehamholt, high up on the ridge of land between the rivers Taw and Mole. It's one of those flamboyant Victorian Gothic manor houses with verdant grounds and exceptional views. Designed and built in 1879 by prominent Exeter architect William Moore - it was their home for over 40 years. It's a fine example of what you'd call the 'Arts & Crafts' movement. Arriving and walking up to the bedrooms, you can't fail to be impressed by this stately building. The bedroom booked was the Louise Seize, a grand and spacious
room having panoramic views. The welcome was great at Highbullen, not the least thanks to the plate
of beautifully presented fruit and a bottle of Devonshire produced Pebblebed wine in the bedroom - a lovely touch.
Highbullen's facilities really are second to none - there's indoor & outdoor pools, extensive golf course (& simulator), gym, billiards room, tennis courts, spa. They also have a stretch of river Mole for game fishing and some of the best shooting in the country. 38

James (The Manager) told us that the house in days past, was visited by many famous individuals including that luminary of stage and screen, Lawrence Olivier. James also said that many romances were enjoyed away from the prying eyes of London society. I did wonder if 'Larry' had counted sheep in our room, an interesting prosect to say the least! Incidentally, getting back to the route from Exeter to Barnstaple, the A377 is infinitely nicer that going via M5 and then A361 (which is actually a dog leg and quite monotonous). Don't miss the reference to the Copplestone Cross and Chulmleigh further on. On the evening of our arrival, we dined downstairs at the Devon
View Restaurant, a lovely space that transpired to live up to its name in the morning. Dining at Highbullen's great, you know how it is before trying the food. You worry that no matter how fine the hotel, if the food's mediocre, then you're not going to enjoy your stay fully - let's face it, home cooking takes some beating. Happily, I can report that the food is

View from the ha-ha - when you're up in the bedrooms, the countryside views are vast. superb, exceeding all expectations. There were many stars over the weekend of our stay. The Steak and Ale Pie, Duo of Local Game, but the Platinum Star was awarded for the Vegetable & Parmesan Risotto - a delicate, light and highly flavoursome dish - compliments to the Chef! In terms of the Hotel's facilities, I can't remember staying anywhere with so much to do, there's an extensive golf course (and indoor golf simulator), tennis courts, gym room, indoor and outdoor pools, spa, billiards room, game fishing on the river Mole, shooting - it's all here, including peaceful walks heading out in all directions into the countryside (see walk featured overleaf ). WEDDINGS - Whilst walking round the Highbullen's grounds and facilities, we were shown their impressive Palazzo, a dedicated wedding

Devon's a big county, and for many residents, it's pretty much undiscovered. In fact there's so much pristine countryside that you have to make a serious effort to really get to grips with it, and I urge you to do so as soon as possible because if you love the English countryside, you'll be aware that things are changing. This walk took about 4 hours with no difficult bits, although I'd say that a ruck sack with provisions is fairly essential as you don't walk past anywhere with shops or pubs. Hope the ruck sack doesn't sound a bit extreme, I have to confess to smiling a bit when I see the walk

The Old Exeter to Barnstaple Road (A377) Venturing into the Mid/North Devon countryside, the A377 is a great route to take because it emphasises how much countryside there is out there to explore. And if you're travelling up from Exeter way to the north, it's a much more relaxing ride than the high speed hike up the M5 and A361. Of course the Barnstaple to Exeter road is an old one, along
the way you'll pass through Crediton, which had a bishopric long before Exeter. You'll also pass the Saxon Copplestone Cross (right). For part of the course you'll follow the mighty river Exe and further along the river Taw will appear which you'd follow to the sea if driving as far as Barnstaple.

It was certainly welcoming when I visited - the landlady was convinced she knew me, although the name Simon didn't ring any of my bells. A gentleman at the bar helpfully suggested I may have a doppleganger, but it was a nice welcome all the same, be it as myself or Simon. I confess to getting a bit worried when someone says they know me - was it from a previous life or had it been from a drunken and long forgotten evening? In my heyday thankfully there was no Instagram. Simon certainly made a welcome change from John Denver which is the usual comment received! Below - view of Chulmleigh, a remote Saxon hilltop town which is worth visiting, if just for the architecture (not forgetting the Old Court House - don't forget to mention Simon).

The Tarka Line The Tarka Line was made famous in Henry Williamson's book Tarka the Otter and takes you through some of the finest scenery in southern England. It regularly tracks the road route, although I should imaging the views are even better from the train. There's a book called "Tarka Line Walks" by Peter Craske that's produced by the Tarka Rail Association in partnership with First Great Western, published by Crimson Publishing. If you take the trail from Exeter to Barnstaple, it takes and hour and a quarter. Apparently you can take up to 2 dogs on
the train per person, and it runs nearly every hour. Also, if you're stopping at the Highbullen Hotel, they can arrange for a taxi to collect you from Umberleigh station. Place names - Nymet Rowland's a fairly unusual name which has Celtic origins, apparently meaning "Sacred Grove" and has associations with the Druids. Apparently, the river Yeo used to be called the Nymet, although during researching I also found reference to the river Mole as previously being known as the Nymet, so the verdict is out there I'm afraid.

Interior designer Susan Folwell of Devon based Artisans and Artists talks about new fabric collections, inspiration, monkeys, flamingos and why the Left Bank of Paris is home from home for the Ashburton based interior design company.

Inspired New Collections The approach of winter has seen the launch of some inspired new fabric and wallpaper collections. Nina Campbell's new Fontibre and Bargello Velvets collections feature designs, colourways and names inspired by places visited by Nina’s great uncle, the watercolourist Stratford Hely-Hutchinson Keightley. The monkey illustrated on the Barbary Toile is particularly engaging and reminds me of growing up in the Far East where monkeys, enticed by the banana trees, were regular visitors to our garden, I must confess to having something of a fascination with monkeys as a result.

Matthew Williamson, a designer known for his love of travel, presented his new Cubana Collection of fabrics and wallpapers. Colours direct from the catwalk conjure up the glamour and excitement of pre-revolutionary Cuba in the era of Hemingway. Flamingo Club depicts a nonchalant flamingo peering through exotic flora and is available in six colourways on fabric and seven on wallpaper, any one of which is sure to deter the winter blues. new Iroko wallcoverings collection of intriguing and deconstructed designs that add a contemporary twist to classic damasks. Inspiration is vital for anyone involved in a creative profession whether curating or creating - and these new collections clearly show that inspiration comes in many forms.
La Rive Gauche - A Home from Home In our studio we are inspired by our clients and the houses that they ask us to work on. The setting of a property and the dreams of its inhabitants combine to fire our imagination, we add to this our experience and technical ability and then draw further inspiration from the materials that we work with, the films, art and theatre that we see, the books that we read, the music that we hear, the changes in the seasons and nature's wonderful offerings, as well as the places that we visit at home and abroad. We cannot, however, always explain every element of the design process - there is a little bit of magic that happens along the way. We visit Paris regularly on buying trips for the showroom and projects
(it is a short and convenient hop from "La Rive Gauche" shares characteristics Exeter airport), staying on the Left with our adopted home town of Bank in the 6th arrondissement. Another key ingredient for any creative enterprise or individual is curiosity ... why that colour / will that texture make for a great result / if we combine those two materials will it work? ... endless research, questions and curiosity, to that end I decided to combine some research with errands and shopping in order to ask some of the creatives who are also lucky enough to live or work here in Ashburton what inspires them. Popping into Moorish Restaurant to buy some of their fabulous drinking chocolate I find Owen the owner / chef is busy in the open kitchen along with his sous chef, he doesn't stop preparing food as he answers my question about what inspires him. "The Mediterranean, in particularly the Eastern Mediterranean, the Levant, those flavours. Yes it is about seasonal freshness but it is also about endless research and thought about what flavours go with what, Olga (his Spanish wife who runs the restaurant with him) and I may be in London or Spain and see something that makes me consider a new recipe - ideas come from everywhere.", he tells me as he places a tray of freshly prepared large and lovely looking lamb meatballs into the oven. A few doors down Ella the Artisan Baker is busy in her open kitchen bakery as she tells me that she draws inspiration from her roots, that her parents were flour millers and had a windmill in Lincolnshire where, aged 15, Ella opened her first bakery at the mill. Nowadays people queue to purchase bread and cakes from Ella's Ashburton bakery, testament to the passion and skill that goes into the creating and baking. "Oh definitely the seasons, look the John Dory are just arriving, that will inspire us to think about what we can cook." says Nick at The Fish Deli with a smile as he gestures towards his young fishmonger who is expertly filleting a large John Dory. This award winning deli is a feast for the senses and never fails to please. We have not one but two jewellery designers in Ashburton and they can be found in their respective studio / showrooms creating unique and special designs. Yume Martin shows me her new Neptune's

Treasures collection and confirms that she continues to be inspired by nature. Kate Higham tells me that she is inspired by "the sum of all of my passions, interests and loves.". Kate's partner, Tom Wood, can be found in his antiques and curios emporium next door to Kate's studio - this is a veritable treasure trove and Tom not only finds the most amazing treasures he is also inspiring when he tells you the background story to a piece. "For me I can only see objects in terms of shape and colour, whether ancient or modern, valuable or not, if a piece appeals to me I will buy it.", Tom tells me in answer to my question as he places the most delightful small, carved monkey into my hand - he knows about the monkey fascination and knows that I am very unlikely to leave the shop without purchasing the piece.

Next stop is North Street Gallery to collect four pictures purchased at a recent exhibition. Christopher Johnson is the curator at the gallery and I ask him what inspires him to choose particular work to exhibit and the inspiration for the gallery's displays of work. "It only takes one really good piece of work to inspire a whole exhibition, whether it's a solo or group show there will usually be that killer piece that inspires how the whole exhibition will be presented, as soon as I see that piece I can see the whole show.". Different answers to the same question but essentially saying the same thing - creativity is about an innate desire and ability to create, to draw together different threads of inspiration, experience, research and thought to produce something that resonates ... and then to do it anew. www.artisansandartists.co.uk

Along my journey, I was introduced to wonderful destinations by inspiring Tour Directors and local guides, who's level of knowledge both with shore briefings, and the exclusive, immersive nature of the tours really meant the time spent ashore was incredibly enriching and fulfilling. The real joy of river cruising is passing incredible sights as you sail onto your next port, and mooring right in the heart of a town or city, which enables the culturally curious to delve deeper into that destination. Or if you prefer you can simply choose to wander off the ship at your leisure for a spot of shopping or café culture. The incredibly high standards of service, the wonderful food & wine, the unique crafted itineraries and the premium all inclusive nature of my river cruise meant that my time spent on The Danube was wonderfully care free and gave me time to enjoy all there was to offer. Three in a Bed - Oh no! My Bed and Breakfast diary is my bible, my life, my everything. It was looking a complete and utter mess and had more lines going through the pages than Clapham Junction Station. New bookings, cancelled bookings, dietary requirements, allergies, kids names, dogs names, aunties middle name, husbands inside leg measurement – too much information. I understand my scribbles, but the rest of the family need to know as well so as to avert any misunderstandings. It was a very busy weekend with all rooms booked. A newly married couple in the large double, a brand new guest in the small double, especially requested by a single lady (which always intrigues me – the mind boggles!) and in the twin room my regulars from Surrey, Angela and Geoff. They have been staying with us since the Foot and Mouth outbreak in 2001 and are part of the family – Geoff is a fantastic man who can mend and fi x anything – a dream come true. When Geoff rings to book a holiday, it is like music to my ears: “Hello Janet, shall I bring any tools down with me?” My answer is always the same “Edward continues to be excellent in the culinary department but somewhat lacking in the maintenance department, so bring every tool you possess”. He chuckles but realises his 3 night “holiday” will be very busy. To show our appreciation for his hard work we always take them out for a meal. Tonight was the night. The newly weds were arriving late and I gave them explicit directions to their room and talked them through the lights, the keys, the temperamental
shower (on Geoff ’s list), the window that sticks (on Geoff ’s list). The single lady was due anytime. As usual I was late and flew upstairs to wash and change and quickly reminded Edward that the single lady who had just arrived and was driving through the gate, was in the double room – check the diary for any oddities – bound to be an allergy or two! With instructions bellowed at the top of my voice, I disappeared. We piled in the car and I breathed a sigh of relief as I looked forward to a quiet meal and having a long chat with Geoff, checking on progress with his never ending long list of jobs. I was driving and after a couple of miles, I asked Edward what the single lady was like and was she happy with the room.
to sleep in the middle? I swung into the farm gate and to my utter relief there was only one car in the yard. I got out, rushed upstairs, took a deep breath and knocked gently on the door. After huge apologies, offers of discounts, and more apologies, I quickly moved my dear guest to her rightful room. She was still very pleased and soon I had her settled in. Meeting her for the first time, I could understand why she required a double bed – a single one might just have been a tight squeeze! A quick call to the restaurant explaining that we were unavoidably delayed and I was soon back at the wheel, driving towards a stiff G&T.
“Edward, you are driving home”. No argument there. The next morning, life was back to normal, Geoff was busy on more of his tasks, whistling away and I was having a chat to my single lady who was checking out and who, thankfully, was amused by the previous nights adventure. As I’ve said before, I do seem to attract a special type of single lady. What came next took all my will power not to collapse in a heap laughing. “Thank you so much for everything Janet - a near perfect stay” Oh no. Near perfect, but not perfect. Without further ado I enquired as I continued page 65...
“She absolutely loves the room and was surprised how big it was”. Laughing, I replied “She must be a tiny lady if she thinks the small double is large”. Edward was suddenly quiet before replying, “You said put her in the double, which I did – the large double”. I slammed on the brakes, the car came to a shuddering halt and a torrent of abuse came forth from my mouth to which there was no reply, in fact silence all round. My diary did look a mess but it clearly stated which room my single lady should occupy. I turned the car around at speed and flew back through the lanes, still shouting at anyone who was listening that the chances of 3 in a bed when we got home was a real possibility. Please do not let this nightmare happen – I had this vision in my mind of the conversation that might ensue between my guests – so who wants

The on-going magic of Christmas in the West Country The blessed Boniface later become the patron saint of brewers thereabouts which must have come as something of the icing on the Christmas cake to a nation famed, then as now, for its fondness of fermented brews.
The man was Saint Boniface of Crediton - where the church still honours his memory with a festival every December - who took an axe to a pagan oak tree in distant Bavaria some1200 years ago at the time of the Winter Solstice and felled it at a single, saint-like, swingeing swipe. Miraculously a fir tree, an evergreen symbol of everlasting love, sprang up in its place and the awe-struck pagans, suitably gob-smacked, gave up their old beliefs, embraced the Christmass, decorated the tree with offerings and danced round it, probably hand in hand. Sound familiar? 62
Another son of Devon, this time the poet Samuel Taylor Coleridge found himself close on the heels of Boniface and in the same part of the world at Christmas 1798. This is how he reported on the on-going magic of the season that Boniface had sparked, in a letter to his wife, Sarah: “On the evening before Christmas Day, one of the parlours is lighted up by the children, into which the parents must not go; a great yew bough is fastened on the table at a little distance from the wall, a multitude of little tapers are fixed in the bough ... and coloured paper etc. hangs and flutters from the twigs.
Under this bough the children lay out the presents they mean for their parents, still concealing in their pockets what they intend for each other. Then the parents are introduced, and each presents his little gift; they then bring out the remainder one by one from their pockets, and present them with kisses and embraces”.

Some 45 years later that same magic all but overwhelmed Dickens himself as he created the characters of Scrooge, Bob Cratchit and his family and the Ghosts of Christmasses Past, Present and Yet-to-Come. Dickens’s biographer, John Forster wrote how the story gripped its creator as his story unfolded:
“He wept over it, and laughed, and wept again, and excited himself to an extraordinary degree. He kept Christmas that year with an extraordinary zest; ‘such dinings, such dancings, such conjurings, such blind-man's buffings, such theatre-goings, such kissing-out of old years and kissing-in of new ones, never took place in these parts before' “. He had lived and worked in Exeter as a young man of course - and met his wife, Catherine in the city - returning in 1858 to give a public reading of his Christmas tale to a packed house. The Flying Post reported:
“Mr. Dickens possesses great dramatic ability, wonderful powers of facial expression, and a rich sonorous voice, of which he is a perfect master, changing it from the rough tones of Scrooge to the sweet and delicate key of Tiny Tim with an easy and remarkable facility." We have so many Christmas myths, legends and traditions, so here are just a few to mull over this holiday season: and what are Devon’s myths if not truths in the robes of poetry? First and foremost of course must be the tale of how the West Country saw Joseph of Arimathea cross from St. Michael’s Mount, via Yesse Tor on Dartmoor and travel to Wearyall Hill, above Glastonbury in December AD63. Here he planted his staff and there he founded the first Christian church in these islands.
The staff took root and blossomed – don’t ask us how - and a thorn blossoms each midnight still on 6th January each year, Christmas Eve in the old Julian calendar. A cutting is sent to the Queen’s Christmas table at Sandringham. It was a widely held belief – and practice – in the West Country that farm children, taken into the barn an hour before midnight on Christmas Eve might witness the oxen kneeling and turned to the east. Thomas Hardy captured the magic of that scene in a poem. Those same lucky children, wrapped in love, might also be carried to the orchard, where each beehive was bedecked with a sprig of holly, to listen to the bees who might just be humming a Christmas carol.
How many of Devon’s unwed maids we wonder will be peeling an onion and placing it beneath their pillows this St. Thomas’s Day, 21st December? Those who believe in this kind of magic may well have a sleeping vision of their future husband in this traditional pre-Christmas Special of a dream.

It is of course what Little Jack Horner stuck his thumb into whilst sitting in a corner and pulled out a plum, crying “What a good boy am I!” But dig a little deeper and we discover that the corner was the West of England and Jack was Thomas Horner, steward to the last abbot of Glastonbury before the dissolution of the monasteries.
Before Devon’s Sir Walter Raleigh introduced the turkey into England (the first flocks disembarked noisily at Dartmouth) its place was taken on the groaning board by the boar’s head, traditionally carried to the table by a servant dressed in blue with an apple in his mouth. The boar’s head that is. A number of good old fashioned pubs in Devon this Christmas will be burning ‘ye ashen faggot’ in their fireplaces - a bundle of green ash sticks bound together with nine bands of hazel. Lit on Christmas Eve and kindled from the remains of last year’s faggot it’s a harkback to pagan Devon. Each time one of the bands bursts (with a loud ‘crack!’ bumpers of cider are clunked and raised “To Christmas!” (How many of those toasters know that a ‘bumper’ is a hangover from Catholic England when we drank the health of the Good Father, the Bon Père ?)
The story goes that prior to the abbey's destruction, the abbot sent Horner to London with a huge Christmas pie that concealed the deeds to a dozen manors as a bribe to tempt Henry VIII not to confiscate church lands. Feeling peckish on the journey however Horner dipped into the pie and took out the deeds to the manor of Mells in Somerset, which he kept for himself. Believe that as you may, the rest is nursery rhyme. Cider has always flowed like, er, cider in Devon at Christmas time, traditionally on Twelfth Night when the wassailers went walk-about through dormant cider apple orchards in search of the Apple Tree Man – the most fruitful of this autumn’s trees. Once found they soaked his roots in cider and sang. The word wassail stems from the Anglo-Saxon waes haeil,
Mistletoe of course is very pagan and all about fertility and the like and was therefore embraced by the Victorians who needed any excuse they could find after Victoria came to the throne to let their hair down a little over Christmas time. But Devon folk should still beware of bringing it into the house before Christmas Eve – and then only by a man. And just make sure that every last twig of it – along with every holly leaf - is taken out before Twelfth Night else ill fortune will attend in the year ahead. Twelfth Night was the finish of the holiday and ‘the end of misrule’, when serfs and servants were indulged by their lords and masters in the spirit of goodwill which prevailed throughout this magical time of the year. So before that comes to pass there is just time – and a little space remaining - to wish a magical Christmas and a healthy and happy New Year to everyone. And remember: these are the good old days! Biting: Part 2 My last article offered some thoughts on bitting and the horse’s mouth and wow, what a response! It was shared via social media hundreds of times in just 24 hours and certainly got people talking about this very important subject. The article was intended as a starting point, to encourage people to think, research, look at every individual and not just follow fashion and it prompted a few people to ask ‘So what is a good bit’? Alas, I cannot wave a magic wand and offer solutions and an answer to this question for every horse and rider, impossible anyway, let alone in a few hundred words. However in the space I do
Firstly, a good bit is one that suits the conformation of the horse’s mouth and facilitates communication between horse and rider without causing unnecessary discomfort or pain in good hands. Just like a saddle should co nfo r m to th e individual horse’s back, a good bit will fit the individual too, therefore avoiding peaks of pressure. Generally, horses have very little space in their mouths, they have big tongues and the space available for a bit is tiny. So thinner mouthpieces are often better, as although a fatter mouthpiece might distribute pressure over a wider area, many horses simply cannot take fat mouthpieces comfortably as they don’t have enough room in their mouths. Horses that are intolerant to tongue pressure are better off in a jointed bit, as a straight bar mouthpiece will lie across the tongue and compress it more than a jointed mouthpiece. Conversely, horses that dislike contact on the bars can prefer an un-jointed bit, however these do have pitfalls, such as not conforming to the mouth shape very well and they can also press on the edges of the upper palate. A mullen or curved mouthpiece would therefore usually be preferable to one that is just straight.

With regards to jointed mouthpieces, I personally would never use a single jointed bit. Double joints enable the bit to be much more anatomically correct and therefore more comfortable. They also avoid the v shape created by the single joint when a contact is taken; this undesirable shape can pinch the tongue, create more pressure on the more sensitive outer tongue and create a single ‘sharper’ point that can easily poke the palate. In double jointed bits, lozenges are usually more comfortable than French links, as the latter are less flat and therefore the roundness of the link at each end can also create pressure points. The orientation of the joints also contributes to whether a bit is good for the horse or not. The
rounded parts of the joints should not protrude upwards as they can dig in to the palate. Many bits, even some costing over a £100 and marketed as designed for the horse, have their joints the wrong way around! One bit that has more than 2 joints is the Waterford, which while not being dressage legal, can
be successful in some sensitive horses because it wraps around the mouth and can be moved to relieve pressure, some horses are much happier for this. Whilst the design of the bit rings are not really influenced by conformation beyond aesthetics, they are still an impor tant consideration because they influence the action of the bit. For example, some horses prefer loose rings as they offer movement, enabling a horse to transfer pressure. Not many people can sit still on a soft chair, let alone a hard one for any length of time before movement is needed to transfer pressure. It is unreasonable to expect a horse to not find ways to move the bit if it is pressing somewhere in the mouth- even worse to strap the mouth shut, ignore the problem and even make it worse! I will repeat the most imp or t ant p ointbit ting, just like saddle fitting, is very individual and will be most successful when the horse is considered above all else. Just because sk inny jeans are fashionable, doesn’t make them suitable for everyone- nor that they will be liked by everyone! Some people like going naked and so yes, bitless may be better for some horses too! The bit has considerable potential to cause damage and discomfort, so research first then make a choice, then most importantly - LISTEN TO YOUR HORSE! Happy Riding

Cops but no Robbers
P
lymouth was home to the three services, who all employed dogs, but these were dwarfed in terms of veterinary work by the Police Dogs. Part of the cultural shock of moving from Sidmouth to Plymouth was the constant wailing, night and day, of police sirens.
The reason for much of the work with Police dogs was that the handler, all PC’s with a sergeant in charge, identified and bonded with his dog. They had many reasons for keeping their dogs healthy. In fact they were all paranoid about it. A sick dog could not work and the handlers took it personally. They were all German Shepherds who devote their affection and loyalty to one person, their handler. If a dog could not work, then the PC was put back on the beat, a demotion. Unfortunately German Shepherds were very prone to hip and spinal weakness and their working life often ended at 7 or 8 years. I have known handlers go to great lengths to disguise their dog’s weakness. When searching old building they often have to climb up steep stairs or ladders. More than one copper, after a discrete look around, has lifted his dogs up the steps. After all that training it must be daunting to think of taking on a new dog. If he could get one! There were no breeding centres and they were dependent upon the public donating unwanted young dogs. I was often instrumental in finding them. The Plymouth squad once put on a publicity stunt by marching around the streets with their dogs,
but one who could not find a dog, walking with an empty collar and lead, stiffened with wire, held before him. Another PC had the misfortune to have two trainee dogs in succession develop fits. He was in such a state about this that I was moved to write to his superiors to emphasise that it was not his fault. But through all this the dogs were a delight and loved their work. There was the problem of what to do when the dog was retired. They had all lived with their handler’s family and the mutual bond was so close that it was often difficult to separate them on admission for some surgical procedure, let alone a permanent retirement separation. Happily many PC’s were able to keep their dog but this could cause difficulties when the new trainee came along. Out of all this maelstrom of dogbonding, male machismo and old wives tales about treatment, I was supposed to extract payment for all this work. I can only say that dealing with the policed financial department was a nightmare, only beaten by MAAF where you were lucky if you were paid inside 6 months. Yet I enjoyed it because I loved working with German Shepherds, that most lovable, albeit temperamental, breed of canines. The Police always insisted on priority attention and the sergeant would telephone me to say he was sending a dog for treatment. I would watch

Thus she was able, with a twinkle in her eye, to tell everybody, “Oh Mr Watson and I have been meeting behind the cycle sheds for years”. - K. Watson

DEVON'S GEMS - Devonshire mag's series bringing you historic treasures from across the county
Higher Uppacott ~ Historic Dartmoor Longhouse Perched high up on Dartmoor, near Poundsgate, is another of Devon s gems - Higher Uppacott, an extremely rare and in-tact example of the classic Dartmoor Longhouse that s of national importance and under the protection of the Dartmoor National Park Authority. We take a look at the form and purpose of the medieval longhouse type dwelling that s been in use for centuries and can be seen across Dartmoor. It's worth pointing out that the Dartmoor Longhouse is a variant of the Devon Longhouse. The original construction
of Higher Uppacott has been dated to the early 14th century, in the decades leading up to the Black Death. A Dartmoor longhouse was built with the purpose of housing both humans and animals together under one roof. When I say together, the livestock would be

Literally hewn from the ground, all built from local materials
to produce and preserve what you ate directly where you lived. If any of your animals died, life would suddenly get much harder. Being able to keep a watchful eye on your livestock and give them warm shelter in harsh weather was a major advantage. Wolves still roamed England, as well as bands of villains, and the remoteness would compound the sense of isolation and vulnerability. So the shippon (cattle shed ) was incorporated into the design of the longhouse - what s unique about Higher Uppacott is that the shippon still survives intact ( probably out of the 125 longhouses on
the photo of the shippon ( overleaf ), you can see the original stone floor complete with central drain. Animals were tethered to posts running along the inside of the wall in the shippon end. The animal s rear end would lie over the central drain and in the photos it s evident why the house was built on a slope, giving natural drainage. Directly above the shippon, horizontal beams are set with flooring running across that would enable the storage of fodder directly overhead, keeping it dry, but also convenient in terms of being able to push the fodder down into the feeding trough (see fig 1 further on). Lighting was poor as the holes for ventilation were small to eliminate

Old lamps and bottles heat loss. Glass windows were totally out of the question, although you could stretch a pigs bladder over a frame in the aperture (providing you had a pig available). In the photos you can see various holes in the wall at the shippon end providing the only source of illumination. In the 14th century, chimneys weren t really mainstream, you ve probably seen chimneys in Norman castles, highly necessary as a result of having to channel smoke from fi res on different levels, but much was invested
Well sheltered from the prevailing winds in castle technology and cost was no object. An open hearth in the halls was normal practice in domestic dwellings of the time, being centrally placed on the ground with smoke expected to escape through the thatch. This is evidenced at Higher Uppacott by remaining and very rare smoke-blackened thatch visible inside the roof of the building. Currently, this building has an upstairs floor and bedroom, as well as a centrally located wall with chimney built in - this is all due to later modification. Originally the building

had no upper floors or chimney, and was fully open end to end. You can imagine what a smoky environment it would have been and the risk from a spark taking light in the thatch (or fodder) would have been worrying. Smoke would have helped with preservation of hams hanging from the roof beams and probably helped lower the levels of biting insects. In terms of preserving and storing food, options were limited. In the 14th century salt would have been expensive, especially being so far from the sea. Your

other options were smoking, pickling or drying. Some foods naturally produced gelatine which when cooked, could form a protective barrier, providing a suitable container was on hand.
CONSTRUCTION
Housing for people dependent on the land and surviving with limited resources was very much determined by the availability of free or affordable local materials. As
a result, many longhouses across Devon were built using cob or, as in the case of Higher Uppacott, stone, which on Dartmoor would have been fairly abundant. Where ground has been improved and cleared over generations, much of this granite has gone to make walling to contain livestock and to provide boundaries, so I should imagine sourcing enough for building wouldn t have been difficult. The walling stones at HU ( Higher Uppacott ) were bedded on Growan , this is decomposed granite that can be found

by digging down into the ground. You can also add lime putty into the growan but in this instance, only growan was used. In terms of the roofi ng, the structure was generally cruck construction using curved timbers - these would have been cut from trees exhibiting natural curves. The feet of the crucks would either be bedded on the ground or shorter types could be used as in HU, which were bedded part way up the wall. The cruck frame forms an inward

Above right - it's reckoned that the roof structure was replaced in 18th century. It's interesting to note that there's no jointing of the tie beams, they all appear nailed. It's quite a crude structure with very little work done on the basic timbers in terms of reducing them from trees/branches.

One consideration to bear in mind was that cattle were much smaller in the 14th century. Quite luxurious for livestock really, much better than been left out on the moor. The stone floor may have had bedding laid on it, perhaps straw, rushes, bracken? There would probably have been a low level wooden screen separating the human residents from the animals along the line of the cross-passage through the middle of the building running side to side.

Shippon end where you can see the really small ventilation and light holes, you can't really call them windows as such curving A shape which is secured from deformation with tie collars running horizontally. The frame would have been hewn from
green oak/chestnut, that is from trees freshly cut down and not allowed to become seasoned, this ensured that working the wood
was relatively easy. Joints were pegged with tree nails (wooden pegs) as iron nails were extremely expensive and would have to be hand-made by the blacksmith. Incidentally, the term cruck' is derived from Middle English crok, and Old Norse krāka, meaning hook ( also the origin of crooked ). A cheap and abundantly available roofing material was thatch, although not being as durable as slate ( and nowhere near as expensive ), it could be grown locally and harvested for use. The earliest thatch found at HC is Rye which is smoke-blackened.

The Dartmoor National Park Authority are now carrying out restoration work which includes HLF funding at HU and currently it s open by arrangement for guided tours. In future, once restoration is complete, they will be more widely open to the public.
