TRY THESE TASTY BEER CAN CHICKEN

TENDER & SPICY RACK OF LAMB

1 whole chicken, approx. 4lb

2 racks of lamb

1 large can of beer

1⁄2 cup plain Greek yoghurt

2 tbsp salt

1⁄4 cup cilantro leaves, chopped shallot minced

1 tsp black pepper

2 cloves garlic, minced

3 tbsp of your favorite dry spice rub

1 tablespoon kosher salt

2 tbsp vegetable oil

1 tablespoon paprika 1⁄2 teaspoon cayenne pepper, or more to taste

Directions

1 teaspoon freshly ground black pepper

Remove neck and giblets. Discard. Rinse chicken inside and out; pat dry with paper towels. Rub chicken lightly with oil then rub inside and out with salt, pepper and dry rub. Set aside.

1 teaspoon ground cardamom

Pre-heat barbecue on HIGH. Open beer can and pour off half of the beer. Place beer can on a solid surface. Grabbing a chicken leg in each hand, plunk the bird cavity over the beer can. Turn one side of the burner completely off and the other side to MEDIUM. Place the bird-on-a-can on the side that is turned off to use the indirect cooking method. Balance the bird on it’s two legs and the can like a tripod. Make sure it is well balanced before closing the lid. Cook the bird over MEDIUM indirect heat for aproximately 1 1/4 hours or until the internal temperature reads 170°F in the breast area and 180°F in the thickest part of the thigh. Carefully remove from grill using oven mitts. Let rest for 10 minutes before removing can. Be careful not to spill, contents will be hot. Carve chicken and serve immediately.

Directions In a small mixing bowl, combine Greek yoghurt and remaining ingredients. Set the racks of lamb in a shallow glass dish, and paint enerously on all sides with the mixture. Cover and refrigerate for 4-6 hours. Meanwhile, light the BBQ and set the temperature to 200°F (94°C). Place the racks of lamb on the grids and smoke forabout 3 hours. Let rest for 10 minutes before slicing.

BURGER WITH BACON JAM

4 Baby back rib racks (membrane removed)

750 grams Bacon

6-7 shallots

3-4 cloves of garlic

125 ml balsamic vinegar

For the Sauce

125 ml maple syrup

200 grams brown sugar

½ cup of BBQ Spice Rub

1 tsp cayenne pepper

2 tsp paprika powder

1 cup of BBQ Sauce

BBQ sauce

180 gr. ground beef

Cheddar cheese

For the Smoke

1. Roast the bacon in a pan

Ensure that the rib membrane is removed before proceeding; wash them in a bath of 50 / 50 vinegar and water. Pat dry, then generously dust each rack of ribs with BBQ spice rub. Place ribs in the rib rack. Place the rib rack directly on the cooking grate surface and close the lid. Set the timer on the Pellet for 1 hour.After 1 hour turn the temperature up to 375°F (190°C), allow the grill to preheat with the ribs on, roughly 15 minutes.

2. If the bacon is drained of most of its fat, separate bacon and fat

Prep the rib roaster by generously oiling the inside, this will prevent the ribs from sticking to the sides and help when it comes to clean up later. Roast directly for 2 hours at 375°F (190°C).The rib meat should now easily tear when you pick up each rack. Baste sauce onto one side of the ribs, close the lid and let stand for 10 minutes. Flip the ribs then apply sauce to the other side, let stand 5 minutes. Remove and serve.

3. In a pan, sauté the shallots with the garlic and deglaze with the vinegar 4. Add maple syrup and brown sugar; simmer for about 10 minutes 5. Add the cooked bacon, cayenne pepper and paprika powder. 6. Mix all after 10 minutes in a blender until the bacon jam has the desired consistency. 7. Mix the beef with salt and pepper, form into a patty and grill 4 minutes from each side 8. Serve the grilled burger with cheese, lettuce and tomato, a dash of BBQ sauce and one tablespoon of bacon jam.
