The Mayor of Bilbao
The people of Bilbao are very happy to share our city, which is a fine example of tradition and modernity. From its medieval old town to the avant-garde architecture of Foster’s Metro and the Guggenheim Museum, Bilbao receives visitors throughout the year with its broad cultural, gastronomic and leisure offer to satisfy even the most demanding of tastes. The ‘Bilbao experience’ is however above all one of excellence and hospitality. Welcome to Bilbao! We want you to feel at home.
The cover depicts the exterior of the Guggenheim Museum, the city’s iconic building and a definite benchmark in an unparalleled urban transformation. But the photograph also intends to highlight an anniversary: the publication of issue number 100 of Bilbao Guide,

The art of our time The Guggenheim Museum Bilbao hosts a large exhibition from the Permanent Collection, which occupies the Museum’s entire exhibition space, with masterpieces from the Museums that are a part of the Guggenheim Network. Under the title The Art of Our Time, the show covers the main artistic movements of the 20th century and includes monographic spaces dedicated to prominent artists from the museum’s Permanent Collection. The exhibition starts on the third floor, with an itinerary that commences at the turn of the 20th
century, a period marked by the triumph of historical avant-garde movements. It includes two separate monographic groups dedicated to sculptors Jorge Oteiza and Eduardo Chillida. The second floor hosts mainly large works, such as the mural by Sol LeWitt and the group of works by Anselm Kiefer. The first floor is reserved for the latest art. The itinerary is completed by the works located outside, which enter into an intriguing dialogue with their surroundings. Until 25 January (3rd floor). May (1st and 2nd floors).
guggenheim museum 9 Niki de Saint Phalle The Guggenheim Museum presents a retrospective dedicated to FrenchAmerican artist Niki de Saint Phalle (1930-2000), one of the most influential artists of the second half of the 20th century. A self-taught artist who has been described as feminist, radical and political, her career is linked to the New Realists of the 1960s; to public art projects, including ‘The Tarot Garden’, in Tuscany; the ‘Stravinsky Fountain’, in Paris; experimental cinema and ballet scenographies. However, her most renowned work are the ‘Nanas’, huge sculptures that revolutionised the representation of women in art.
Niki de Saint Phalle. Leaping Nana, 1970.
Opens on 27 February (3rd floor).

Rineke Dijkstra. The Krazyhouse (Megan, Simon, Nicky, Philip, Dee), 2009.
The Museum’s Film & Video Hall, permanently dedicated to video art and images in movement, presents Rineke Dijkstra’s video installation ‘The Krazyhouse’ In the video, five young people dance in a lonely fashion before the camera, in front of a white background and to the rhythm of music from their generation. The artist met the young people in
a nightclub in Liverpool called The Krazyhouse and filmed them in an improvised studio on the premises. Rineke Dijkstra (Sittard-The Netherlands, 1959) has worked with photography and video since the 90s, focusing mainly on the relationship between spectators and the image. Until 1 March.

Created by artists from different generations who have used a range of styles and techniques, these works are united by the fact that the artists drew inspiration from the art in the Prado Museum collection. Until 12 January.

Hyperrealism 1967-2013 The Museum of Fine Arts exhibits a retrospective featuring 66 emblematic works of hyperrealism, providing a journey from the beginning of this artistic movement to the present. The paintings are generally large format, and painted so painstakingly and precisely that the artists use photography as an instrument to produce art that appears to be photographic in quality. Mimmo Paladino The Museum of Fine Arts is presenting a wide selection of the graphic art of Mimmo Paladino (Paduli-Italy, 1948), including, amongst other elements, 194 etchings, 2 of which have been made for the exhibition. The work now being shown has been undertaken by the artist over the last twenty years in the Laboratorio d´Arte Grafica di Modena, alongside his activity as a painter and sculptor. M. Paladino. Sirens, 1994.

Equipo Crónica
This exhibition combines ten oil paintings on canvas, belonging to a private collection, from the venetian Giovanni Domenico Tiepolo (1727-1804), brother of Lorenzo Tiepolo and both sons of the painter Giovanni Battista Tiepolo. They involve fantasy portraits representing generic types - two mature men with oriental features and eight young women -, painted with a delicate and vibrant brush stroke.
The Bilbao Museum of Fine Arts presents the greatest Equipo Crónica anthology ever undertaken on the fiftieth anniversary of its creation. The exhibition takes in important works originating from international collections and distributes them across two spaces of the museum: in the BBK room 74 paintings and sculptures organised in series are exhibited, and in room 33, there are 89 drawings, engravings, posters and original documentation on Estampa Popular de Valencia, a group in which Rafael Solbes (1940-1981), Juan Antonio Toledo (1940-1995) and Manuel Valdés (1942) participated before forming Equipo Crónica.

Michelin Territory Eleven Michelin stars make Bilbao and the surrounding area the leading territory. It has never been easier to enjoy internationally recognised fine food in such a comfortable manner, with culinary satisfaction guaranteed. An interesting fact: in the area around the Guggenheim Museum alone, almost facing one another, there are three Michelin-star restaurants (Etxanobe, Nerua and Aizian). Everything else is a question of taste. The eleven stars (three of which have been awarded to Eneko Atxa’s Azurmendi) do not only afford the nine restaurants that bear them an unquestionable allure, but also turn the capital of Bizkaia into the heart of a gastronomical paradise without compare.

Opening hours: Tuesday to Thursday at lunchtime; Fridays and Saturdays, all day; and Sundays at lunchtime. Making a reservation beforehand is recommended. The restaurant offers set menus that vary over the course of the year (between 160 and 190 euros) and boasts a Bistró Prêt à Porter (fine cuisine at prices that do not reach 40 euros): This space has been recognised with the Bib Gourmand distinction by the Michelin Guide.
A visit to Azurmendi, which has become a form of tourist shrine to be included in any itinerary, evidences its various charms. The first involves its philosophy. With good reason, it is the first sustainable restaurant in Spain, as a result of water collection tanks, the solar energy captured by its glass coverings, its geothermal heating, photovoltaic installations, vegetable drainage system and, above all, the specular vegetable garden taking in more than thirty indigenous species. The chef’s cuisine is defined as ambitious and natural, bearing a clear signature, rooted in the Basque tradition, guided by skilled hands that work with ‘speed, precision and a gentle touch’,
wherein the memory of the cooking of his childhood is always present. This cuisine establishes the foundations of his culinary project involving the continuous search for the maximum enjoyment of the five senses in a permanent fusion of culture and lifestyle, an approach that is summed up in the sentence of chef Eneko Atxa welcoming us to his own personal paradise: ‘Giving pleasure to all who come inside, a pleasure bearing an identity that seeks to turn what is local into something universal’. In this context, the gastronomical offers of the ‘Adarrak’ and ‘Erroak’ menus (taking in 12 and 10 dishes, respectively, including appetizers, starters, meat and fish and desserts) are an invitation to gastronomical pleasure of the highest order.

Opening hours: Closed on Mondays; and on Tuesdays and Sundays, in the evening. Closed between 7 and 20 January each year. An à la carte menu is offered.
This restaurant is housed in an iconic building within Bizkaia’s capital: the Guggenheim Museum. It is here that Josean Martínez Alija allows himself to be influenced by the art to make one of the world’s most aesthetically attractive spaces and the finest gastronomy merge together, creating an unforgettable experience. The result is that creativity and research are put to the service of a signature cuisine that is both unique and healthy, evidencing the Basque tradition, but open to the world, artisanal, light, highly
aromatic, affording protagonism to vegetables, imbued with essences and full of nuances. In this manner form is given to dishes such as the oyster, borage, chive and lemon grass starter; haricot bean casseroles with ‘choricero’ peppers, quail and thyme; fish and meat dishes, such as the classic fried hake accompanied by a sweet pumpkin preserve and salsa verde, or the rack of lamb with quinoa, leeks and mint; and desserts that mix local ingredients with products from around the world, such as the pure chocolate with spicy marzipan ‘sand’.

Opening hours: Closed on Sundays. It offers à la carte dining and various tasting menus (between 72 and 90 euros).
Chef Fernando Canales has maintained his highly prized Michelin star for 14 consecutive years. The secret of his success is a cuisine grounded on the product wherein technique is at the service of the raw materials and the enjoyment of the diner. His proposals are grounded on a culinary principle whereby dishes are only valid if they have flavour, density, leave an after-taste that remains on the palate and, therefore, afford savoury joy. The à la carte menu includes traditional dishes, such as the
home-style ham croquettes, starters, such as the renowned cold lasagne of anchovies in a fresh tomato sauce (this dish has won over so many devotees that it even has its own fan club ad website: www. clubdefansdelalasanadeanchoas deletxanobe.com); hake fillets in a mussel and saffron sauce; creamed egg flowers with a ragout of foie gras and porcini mushrooms; or the stuffed cheeks, cooked for 12 hours at 80˚, producing extremely tender meat. In terms of desserts, attention should be drawn to the mini-eclairs, best eaten with a bib.

Zortziko restaurant is one of the shrines of Bizkaia cuisine, which has held a Michelin star for many years. Under the guidance of Daniel García, attention should be drawn to the efforts to make each dish a special creation, without ignoring traditional recipes, which are afforded an innovative touch. Within the menu, we might highlight starters such as the scallops served on liquid potato and truffle oil or the famous
crispy oysters served with crunchy orange migas and puréed potatoes. Amongst the meat dishes, mention should be made of the Bizkaia beef tripe, the five-cooked squab or the Bizkaia tripe with txistorra. Those who favour fish can choose between black cod confit with an Anima Aurea emulsion or oak-smoked roast sea bass fillet. Taking in seven, ten or fourteen dishes. This is the composition, pure and simple, of the three tasting menus available in Mina restaurant, which was awarded a Michelin star last year. The establishment, managed by chef Álvaro Garrido, offers a different set menu every day, prepared exploiting the restaurant’s fundamental advantage: Mina is located facing the Ribera Market, separated from it by the estuary. This huge pantry supplies the restaurant’s kitchen with its ingredients each morning,
giving rise to dishes such as the spicy monkfish liver served with celery and green apples; red-tea aubergines; mussels with spicy tomatoes and a coconut and lemon grass sauce; spider crab with an egg yolk, soya and passion fruit emulsion; Euskal Antzara goose egg yolk in salted saffron and white Martini; roast Cantabrian hake in crayfish sauce; and desserts such as the white miso, vanilla, hibiscus and lime sponge. All of this is served in a dining area that caters for no more than 25 people. This is another of its merits: only eight tables for such flavour!

Aizian enjoys a privileged position. It is located on the ground floor of the Melia Hotel, in the heart of Doña Casilda park, 200 metres from the Euskalduna Conference Centre and Concert Hall and the Museum of Fine Arts and 5 minutes from the Guggenheim Museum. Moreover, all the efforts that have been made since its inauguration in 2003 have been recognised via a Michelin star. This is a well-deserved award for a commitment to gastronomical quality and respect for the products of the land. With good reason, the cuisine of Aizian was the recipient of the Kilómetro Cero Slow Food award,
employing ecological products from the surrounding area. On this foundation, chef Jose Miguel Olazabalaga Legarreta and his team create dishes filled with art, such as the subtle baby squid noodles, on a bed of their ink and a pumpkin alioli; linecaught hake cooked at a low temperature with pil pil made from its stock and sea urchin emulsion; cubed cod confit; small flank steaks of Wagyu beef, cooked at a low temperature with caramelised piquillo peppers and potato and bacon millefeuille; and, for dessert, caramelised French toast with rice pudding and cinnamon ice cream.

In the Atxondo valley, amidst the beauty of Axpe and next to the slopes of Anboto (a legendary place for the inhabitants of Bizkaia), we find this establishment that offers traditional and yet innovative cuisine, employing the magic of the charcoal grill with surprising results, whilst always preserving the natural identity of the products. This modus operandi of chef Bittor Arginzoniz has been defined by a number of critics in an emphatic manner: ‘no nonsense’. This enthusiasm for the unembellished raw
material gives rise to a menu that is drawn up each day in accordance with the freshest seasonal products. The speciality is the charcoal grilled T-bone steak, a very flavoursome classic that has led the grill house to be considered the finest in the world. Authenticity does

years, creating items for collections and orders, as well as tailoring and transforming clothes. In the course of his work, he has found that leather can go beyond the classical. It is versatile enough to match any personality and situation: leather skirts, party dresses, coats with trimming, and clothes in different colours. Ezkerra also designs handbags (€120-€180) and belts. Fur-lined leather jackets are essential this season, for instance,
because they are warm and waterproof. Light leather coats with trimmings, combined with different types of leather to give the garment volume are also in fashion.

Starters include acorn-fed Iberian ham from Guijuelo and chargrilled or cooked seafood (the restaurant has its own shellfish farm). They also serve seasonal products such as elvers and mushrooms. Main courses include Bilbao-style and baked fish, as well as the typical txipirones (squid) in an ink sauce. Cod, Bilbao’s signature dish, is not to be missed. It is desalted by hand on the premises and prepared in several different ways.
The family-run restaurant and two other establishments in Bilbao (Serantes II and Serantes III) only close at Christmas, New Year and for ten days after the Aste Nagusia Festival.

Pure surprise Kokken restaurant is, first of all, an interesting collection of proposals from innovative artists, with the pieces displayed in the premises selected for entry into an annual competition. As part of the effort to convert Kokken (Norwegian for kitchen) into a multidisciplinary and multiuse location there is a clear influence from northern European countries, where the owner of Kokken worked for a time and learned the importance of pleasing the public in every sense. The gastronomic offer is clearly a continuation of this, with a menu of small dishes and tapas that not only blends Basque and Scandinavian taste but also works with simplicity from the quality provided by the seasonal produce from local surrounds. There is a fun approach, as diners are invited to choose between a tasting menu of five, seven or nine dishes, and it is explained to them that if they have completed the selected menu and they wish to go on there is no problem. Total freedom for satisfying the appetite! It is true that the content of the various dishes is only revealed at the moment they are served so that the surprise is maintained as long as possible. And with what can the customer be surprised? With small delicacies such as sautéed cuttlefish with seaweed and teriyaki, crispy horse mackerel with citrus sauce, hog jowls in oyster sauce, beef steak with peach reduction and sweetbreads with garlic praline. And the price? Equally surprising: € 13.95 for five courses; € 18.95 for seven, and € 23.95 for nine. And another detail: the kitchen is open all day.

Innovating day and night The normal has already been done, so let’s do something different. It’s the slogan of Kubrick, a place where you can have a coffee in the morning listening to vocal jazz and blues, where you can enjoy homemade, natural cuisine (there’s now a dish of the day, and even an offer including a mushroom risotto or cocido castellano, for example, and a gin
& tonic for €9.50, which at night becomes a meeting place for nibbling something, having a few cocktails and listening to music and dancing. But that’s not all. Because the dining room of Kubrick, decorated with film posters (in the washroom there are vinyl posters of the film The Shining), it transforms into a live music venue, a

cosy theatre or a stage for magic. The idea is to offer something different, with performances, micro-theatre pieces, musical duos and so on. There is also innovation when it comes to the drinks. This season they’re introducing a cocktail based on sarsaparilla, the mythical drink of the Wild West that was like Coca-Cola for our ancestors. For those feeling peckish, amongst the single-dish menu you can find sausages, black pudding, grilled
octopus and baby squid, traditional cooking to which innovating touches are added. It’s because they are adventurous both in cuisine and event organisation.
