BILBAOguía

greeting 3

Ibon Areso The Mayor of Bilbao

The people of Bilbao are very happy to share our city, which is a fine example of tradition and modernity. From its medieval old town to the avant-garde architecture of Foster’s Metro and the Guggenheim Museum, Bilbao receives visitors throughout the year with its broad cultural, gastronomic and leisure offer to satisfy even the most demanding of tastes. The ‘Bilbao experience’ is however above all one of excellence and hospitality. Welcome to Bilbao! We want you to feel at home.

in Bilbao's bars. This practice of poteo is still a ritual. Little wonder, then, that every member of the kuadrilla pays money into the kitty or bote for the drink, ordering the same round in every bar.

In the image, both old and new customs come together to achieve a perfect snapshot of Bilbao today. And there is no way of getting to know the Biscay capital without experiencing a tradition so deeply rooted in its people as the pintxo accompanied by a pote. The latter word refers to small glasses of beer or wine (zuritos and txikitos) that groups of friends or kuadrillas enjoy

Pintxos are the perfect accompaniment to a pote for a relaxing break, with your bike in tow, well-earned after a couple of hours pedalling around the rejuvenated urban environment. Bilbao not only boasts 27 kilometres of bidegorris (cyclepaths), but it can also be proud of the way that bicycles are becoming a part of the daily lives of its people or of the tourist circuit, even while going for a pintxo-pote (pages 28-34).

The art of our time

Franz Marc. Der Stier, 1911.

Several months ago, the Guggenheim Museum Bilbao presented a grand exhibition of the Permanent Collection, with masterpieces from the Guggenheim Museums network. Although part of the exhibition was closed on 25 January, works are still exhibited on the second floor, consisting mainly of large

pieces, such as the mural by Sol LeWitt and the group of works by Anselm Kiefer. The first floor is reserved for more recent art. The itinerary is completed by the works located outside, which enter into an intriguing dialogue with their surroundings. Until 10 May (Floors 1 and 2)

Learning through art Over one hundred students between the ages of six and twelve, from schools in the Basque Country, present the original artistic works that they have made in different workshops in the Guggenheim Museum's educational space. The 'Learning through art' programme has been running since 1998, with the participation of over 2,500 children.

guggenheim museum 9 Niki de Saint Phalle The Guggenheim Museum presents a retrospective dedicated to French-American artist Niki de Saint Phalle (1930-2000), one of the most influential creators and widely considered the first major female artist of the 20th century. The exhibition, comprising 200 works and archival documents, many of which have never been published, provides a new insight into her work. Self-taught artist, radical and political, Saint Phalle's career is linked to the New Realists of the 1960s; to public art projects, including The Tarot Garden, in Tuscany; the Stravinsky Fountain, in Paris; experimental cinema and

Jeff Koons The Guggenheim Museum hosts the biggest retrospective to date of the celebrated contemporary artist Jeff Koons. This exhibition, comprising one hundred pieces, ends up in the Biscay capital following an international tour that has taken it to the Whitney Museum in New York and the Pompidou Centre in Paris. The journey through the different creative phases of Koons allows us to find out about the trajectory and the reach of his work, which could be defined as art that is open and conceived to seduce, therefore being very attractive to the public. An example of this is one of his most emblematic works, Puppy, situated at the entrance to the Museum, which has become an icon. From 9 June.

Cycle routes There is no doubt that Bilbao is already a sustainable city, where exercise has become part of the daily lives of its inhabitants. It is also undeniable that Bilbao has been redesigned for the bicycle, with 27 kilometres of cycle paths and the aim of reaching 78 km in the coming years. Another incontrovertible fact is that Bilbao, which is part of the Cities for Bicycles Network, has managed to combine the sport of cycling with everything else, especially with architecture and family entertainment. So now the aim is to convince the public that the best way to explore Bilbao is by bike.

The company Tourné Bilbao (Villarías, 1.  94 424 94 65. www.tournebilbao.com) has been working on this since 2013. They have a fleet of over 35 bicycles of all types (urban bikes, tandems, cargo bikes, bikes for the little ones...), that they rent out by the hour or by the day. They also provide information on different routes adapted to all requirements so that the visitor can discover the city the way they want to. You can even go on a night-time tour. Back to medieval times On 9 and 10 May, Balmaseda returns to its origins with the holding of the 17th edition of the Medieval Market, which always attracts a large public. Not for nothing is this event, with over a hundred craftspeople displaying their skills in the most evocative trades, considered to be one of the best in the country. It boasts many attractions but standing out above everything else are the public participation, made up of over 400 residents of the city (the true heart and motor

of the market), the pyrotechnic shows and, above all, the uniqueness of the medieval Old Quarter where it all takes place. Over 500 period costumes and 200 metres of hand-dyed fabric are used to recreate the medieval atmosphere, along with standards, banners and flags that decorate the streets, transforming the selected area into a space lost in time. Made here Ana Taranco had spent a lot of time as an interior designer, and one day she told herself it was about time she also designed clothes, which was something she wanted to do. So in the autumn of last year Espacio Nuka was born, the shop where she sells her creations and where she also has her design studio. It also houses an art gallery, a space for record and

book presentations or for chatting about anything to do with culture, and even a small bar where you can enjoy a sandwich or a coffee at any time of day. At Espacio Nuka you can find clothes that are different, personal, and in their creator's style. The range of colours is wide and subtle; the garments are light, comfortable and monochrome; the fabrics flow and, as Taranco points out, everything is made 'here', by hand. She was clear

about this from the start, wanting to sell clothes made by hand as close as possible to the point of sale, in order to control the entire process. The trousers, dresses, coats and shirts are all made in limited numbers, and can be accompanied with accessories made along the same creative lines (from hats and handbags to legwarmers, necklaces and earrings). Despite them being handmade, the most expensive item from last

winter was a coat at 150 euros, and for this spring/summer dresses (for around 100 euros) and white thread sweatshirts are now on the hangers. This colour is also present in the cotton shirts and jerseys in soft tones. This is Espacio Nuka's offering for the summer months.

From here and there 'The world is now within everyone's reach, there are no distances'. This is how the two locations for the Taberna de los Mundos (in calle Lutxana and Simón Bolívar) are presented; the latter opened 20 years ago and the former the following year, both with the aim of bringing the flavours, aromas and textures of other cultures to the palates of Bilbao's residents.

The local anniversary of Simon Bolívar is celebrated throughout the month of May, with events, raffles and special activities. And, of course, with the fusion of cuisine that characterises it, also reflected in the decoration, based on maps and charts. In La Taberna de los Mundos you can choose from a set menu (weekdays for under 12 euros, and weekends for around 18 euros) and individual portions, salads and sandwiches, with a menu that changes each season. The idea is to provide varied cuisine that fuses

products from countries further away with local materials (they even have a 'euskolabel' section with ingredients such as farmhouse eggs, piperrada and morcilla. If you decide on individual portions and sandwiches, these can also be enjoyed in the dining area. There are even more options: for example, the generous helpings of pork knuckle, chicken burritos and selections of German sausages. To accompany the food, the bars offer a winelist which includes references from all of the Spanish regions, as well as a selection

international beers, which includes the traditional La Salve brand, brewed in Bilbao since 1886.

A renovated classic Restaurant Abando, located in the centre of Bilbao, has been open since 1983, although a couple of months ago it underwent a renovation to adapt to modern times. During this transformation none of its essence has been lost, which is none other than traditional Basque cuisine, with good meat and

fish dishes, and a special care taken over such typical things as cod in the pil pil style, txipirones (baby squid) in their ink, and the callos (tripe) and morros (pig cheeks), which can be ordered both as part of the menu and in the bar area in small dishes and portions. The aim is to satisfy every type of customer, offer alternatives for a wider variety of budgets and attract younger members of the public. In this way you can have lunch and dinner in the dining area, which

Doing it in this way will cost between 12 and 20 euros per person, sharing various portions, amongst which you can find morcilla de Burgos, oxtail, baby squid, and more. The important thing is that any of the options guarantees quality home-style cooking. Furthermore, the Abando offers a great pintxos bar, including the famous five types of tortilla, pieces of

tuna, gildas (served on a cocktail stick with peppers, anchovies and olives) and torreznos (pork scratchings), the best coffee in Bilbao and even a cocktail area, ideal for enjoying midafternoon.

The best gin and tonic The basis for a good gin and tonic is excellent gin and hundreds of possible combinations: e. g. rose cream, grapefruit and blood orange juice, egg white, Quinetum tonic water and 'Aftershave' aroma; or pure roasted coffee grains, the balsamic effect of heather honey and an organoleptic touch of mint.

Another option is to mix lavender and orange blossom seasoned with lemon, orange and grapefruit‌ Anything can go into making a good gin and tonic, providing topquality products are used, whether they are local or international. If on top of this you add an exquisite presentation, you'll have a great gin and tonic.

El Singular In Bilbao, the gin and tonic is a classical, carefully prepared drink that costs â‚Ź8-â‚Ź10. It is a point of reference that attracts people from around the globe. There is even a contest to raise the standard every year and amaze customers. A small example of Bilbao's quintessential knowledge in this field is given below.

El Singular (Lersundi, 2.  94 423 17 43. www.singularbar.com) Specialises in beer, but it is one

of the consultants for the contest that searches for the best gin and tonic in the city every year. One of their inventions, designed to infuse a sense of spring after a cold, wet winter, is called Ansia de Primavera (Longing for Spring). It is composed of Singular's own bitters made with tangerines, orange blossoms, lavender and ginger. The highly fruity result is a perfect match for Seagram's gin, which has more body because it is aged in barrels. It pairs wonderfully with all the flavours and aromas of spring.

Bar Kanpantxu

Bernardo Café Bar

Bar Kanpantxu (Egaña, 6.  94 642 35 50. www.kanpantxu.com) Here, they know so much about drinks that they make a recommendation every week. Thus, their list of preparations is extremely long and includes original gins and tonic waters from around the world to tempt their customers' taste. They offer 120 types of gin and 15 different tonic waters. They also distil some of their gin and tonics until they are reduced to their essence. Such is the case of one of their newest inventions, in which they distil two types of Bombay (Sapphire and Amber) with the botanical ingredients of

both. They reduce them with a little mineral water and mix them in a drink that also has lavender and orange tonic water, and a reduction of white vermouth. Wickedly delicious and with three flavours: dry, citric and herbal.

Bernardo Café Bar (Gran Vía, 69.  94 607 68 47. www.bernardocafebar.com) This bar is on the list of Spain's 12 'Gin and Tonic Temples'. Part of their success lies in the fact that they use top quality products to make their gin and tonics and they prepare them just before putting them in the

night 59

La Carbonería glass (for example they cut the citrus skins just before preparing the drink, to make the most of their aroma). This is evident in the Lucky Liquorice gin and tonic, which has the following ingredients: 5 cl Mombasa Gin Club (the gin the bar works with), 20 cl Schweppes Heritage Original Indian Tonic, a teaspoon of sugar and 2 gr of Japanese Sencha green tea with liquorice. Decorate with three freshly cut citrus fruits (lime, red grapefruit and orange) and a little black cat sweet liquorice. The result is a delicious, refreshing drink with plenty of flavour but not too sweet.

La Carbonería (Maria Díaz de Haro, 23.  653 81 44 65) In this local, where inventive gin and tonics are conjured up, they prefer to talk about what they all share: a good base. That is where the secret lies. Use the best ice (big, compact cubes, freshly made and not watery); good limes (which are seasonal and not always easy to find in Spain) and very cold premium tonic water. Combine all three basic ingredients with good gin and you are sure to produce an excellent drink. 'We take as much care as we do with our cuisine. That is why Bilbao is so renowned for its gin and tonics.'
