Welcome to the village directory Hi everyone, It’s Chocolate time! Just as I’ve managed to knock off a few of the pounds I gained at Christmas, Easter arrives with all the temptation of chocolate. When I was young I was fussy about the flavours and types I enjoyed but these days, in my more mature years, my taste has broadened to the point where any chocolate is a delight, whether it’s milk or plain, with almost anything in the centre (not Turkish Delight!) I will put my feet up and enjoy a moment or two in that world where the Cadbury’s Flake girl used to stroll (now I’m showing my age!). Anyway enough of that, there’s far more to Easter than chocolate, it’s the begining of spring and hopefully the weather will reflect that. It’s time to clear out those cupboards, spring clean, decorate or, weather permitting, begin to tackle the garden. I’m sure we will all be busy bees in one way or another, whether your focus is on social or domestic activities you’ll find ideas and help within these page. Do you remember last April? The month they

forecasted the drought that turned into a deluge? Humans (and that includes gardeners) find unexpected weather difficult, to say the least, and if we find it hard to cope with, think about the plants. That poor Lavender; basking in the early spring sunshine, happily anticipating a long hot dry summer, only to be drowned out for months. Or what about Hostas? They must have been relieved that the drought that never happened didn’t happen until the slugs and snails came back. Light and temperature levels were so low last year that many crops refused to ripen, and weeds were left to romp about unchecked, because it was too cold and wet to do much gardening. We must be more ready this year. But for what? Drought? Floods? Hurricanes? Yes probably. Unpredictable weather is hard to prepare for, but there are a few things we can do to lessen the damage:

While the soil is still damp it’s a good idea to mulch the borders to prevent excess moisture loss and help stop the weeds. Stake plants against stormy, windy weather and do it early, before they put on too much top growth. That way they’ll hide the supports as they grow up through them.

Grow Mediterranean plants in pots so that they don’t get waterlogged and perhaps make a water retaining bog garden for all those that like to have their feet in damp soil.

Step up the slug patrol. Last year’s excessive rain made manna for molluscs - they will have multiplied and massed their ranks, so prepare for battle. Grow more annuals, as they only have to last a season and don’t have to try and eke it out through a hard winter. Use hardy old favourite plants more creatively, rather than gambling with more tender, fussy perennials.

Seasonal Delights

Spiced Rack of Lamb with Fragrant Rice

Serves 4

Ready in 1 hour Perfect for a spring Sunday lunch or stylish supper this quick and easy lamb dish is full of flavor. Choose a couple of meaty racks of lamb from a good butcher and score the layers of fat before spreading with the harissa paste. Serve with a cooling garlic and mint yoghurt sauce.

Ingredients: • 1 tbsp harissa paste (see Tip) • 2 trimmed racks of lamb, each with 6 bones • 2 red onions, peeled and cut into slim wedges • 50g butter • 225g basmati rice, rinsed and drained • 1 garlic clove, peeled and crushed • 750ml vegetable stock • Generous pinch saffron strands • 50g sultanas • 40g flaked almonds, lightly toasted • 2 tbsp pomegranate seeds

Tip: Harissa paste is a fiery hot North African blend of red chilli peppers and spices – just a little goes a long way so use sparingly. You’ll find it in small jars near the dried herb and spice sections in most large supermarkets.

Preheat the oven to 200C, 400F, Gas 6. Spread the harissa paste over the lamb racks. Place the racks in an oiled roasting tin and add the onion wedges. Roast in the preheated oven for 25-35 minutes depending on how pink you like your lamb. Remove from the oven. Cover with foil and leave to rest for 10 minutes – the lamb will be juicier and easier to carve. Meanwhile, heat the butter in a heavy-based pan until melted and foaming. Add the rice and garlic. Fry gently for 1-2 minutes, stirring until the rice is translucent. Pour in the stock. Add the saffron and bring to the boil, stirring. Cover the pan with a tight fitting lid. Reduce the heat to the lowest setting and cook for 15-20 minutes without removing the lid until the rice is tender and all the liquid is absorbed. Remove from the heat. Fork through to separate the grains. Add the sultanas, flaked almonds and pomegranate seeds. Carve the lamb racks into individual cutlets and serve immediately with the fragrant rice and roast onion wedges.

Simple Joys The Art of Crochet

hours of concentration have resulted in severe arthritis in her neck. I asked her if she had ever tried crochet and she replied that she hadn’t because she had no desire to wear the end result. I introduced her to crocheting flowers and she was hooked (!!!) Now she has resumed her knitting in small doses just so that she can make tea cosies on which to arrange her crocheted flowers! I learnt to crochet when I was about 8 or 9 years old. I was taught by an elderly neighbour www.simplejoys.co.uk 07792 622339 one glorious, long-ago summer. We used to sit info@simplejoys.co.uk together on her swinging garden seat under a beautiful, scented white rose intertwined with honeysuckle. She patiently taught me the intricacies of winding the wool around the hook and pulling it through to create the stitches. We crocheted squares in a multitude of colours with her left-over scraps of real wool.

As the years have gone by, crochet has been something I’ve dipped in and out of. A shawl made whilst I was a student nurse in quiet moments on night duty, pram blankets for the babies and dolls blankets for my daughter. I even crocheted a tiny shawl with sewing cotton and a fishing bait hook to drape across the bed in the doll’s house, as though its wearer had just tossed it aside and moved out of sight. Recently however, I have begun to experiment more. The beauty of crochet is that, basically, you work with only one stitch: if you drop it, it is not the disaster that it is in knitting because it is instantly picked up again and, if you don’t like what you’ve done, it is so very easy to just undo it and try it again another way. I have also learnt more about how to follow patterns – again, there is an advantage over knitting because crochet patterns are often given in both written and chart form. If you can’t understand one, you can usually work out the meaning from the other. I have an older friend who has spent many hours knitting the most beautiful jumpers and cardigans. Zombie Nation New research for Acupuncture Awareness Week shows sleep deprived Brits need to get to the point Recent research has revealed that we’re a nation of zombies with 1 in 5 of us claiming to feel like one after a disturbed night’s sleep. Results show that over two thirds of people in the UK are getting less than the recommended eight hours of sleep a night with money worries (53%), work (35%) and needing the toilet (30%) causing the most unrest. Acupuncture Awareness Week (25th February to 3rd March 2013) aimed to educate people about how traditional acupuncture can help improve sleep and aid relaxation. Among the 82% of us who admit to sleeping troubles or insomnia, many of us are missing the point when it comes to this ancient Chinese medicine.

With 2.3 million acupuncture treatments carried out each year, traditional acupuncture is one of the most popular complementary therapies practised in the UK today. Yet statistics show that 1 in 5 of us would only consider acupuncture for sleep as a last resort. Almost a quarter of people admit they didn’t realise acupuncture could benefit them despite its widely recognised health benefits. Stephen Bayliss, Acupuncturist, a member of the British Acupuncture Council and with practices in Folkestone and Hythe comments: “Traditional acupuncture is known to be enormously beneficial for helping to correct sleep problems. Most people find treatment wonderfully relaxing, as acupuncture is known to calm the nervous system and also increase endorphin production.” Traditional acupuncture is a natural system of healing that has been practised for over 2,500 years. It is a safe and effective treatment that involves inserting sterile needles, no bigger than a human hair, painlessly at specific points on the body. In addition, the research revealed that many people are still resorting to medication with 1 in 10 admitting to taking sleeping pills to help them sleep. Statistics also show that when having trouble sleeping, many of us engage in activities that actually make it harder for the brain to switch

off. Nearly a third of us admit to reading a book while almost 1 in 5 say they watch TV or a film. Stephen Bayliss continues: “At some point in our lives, we all experience periods of disturbed sleep and even insomnia. Many patients find a course of traditional acupuncture can be extremely beneficial to ease them through these times, helping to identify the root cause of the sleeping problem. This is a practical and comfortable car and as you can see from the pictures the body work is in good condition with just a couple of minor age related marks here and there.
