Welcome Hi everyone, Welcome to the July Issue, back in July 2005 the very first issue of The Village Directory was published. It is now nine years since that first edition, and I remember so clearly those nervous days after having sent the magazine to print, waiting to see how it would be received once it started to land on door mats. My little magazine was about to go into three thousand homes and I had no idea how it would be received - scary! Now, nine years on there are eight versions of the magazine going into a total of 60,000 homes. If someone had told me how many people it would eventually be delivered to it would have frightened the living daylights out of me, I wouldn’t have thought I could do it. A very big thank you to everyone for your continued support, it’s great to know that you are mentioning the magazine when responding to advertisers, this helps so much. I would also like to say a big thank you to the businesses that support the magazine with their advertising. As I write we have just celebrated our 20th wedding anniversary, I say celebrate, we just about found time for a quick drink down our local. Our social life tends to be put on hold for the magazines around this time of each month. It seems that every social event in our family occurs during the first two weeks of the month i.e. deadline time. Thank goodness I have an understanding and supportive husband! Mediterranean Magic by Pippa Greenwood

If you can’t get away this year, how about creating your own Mediterranean hotspot in your garden? Even if you do manage to escape to the sun for a week or two this year, you’ll still have the rest of the summer at home and a little slice of Italy, France or Greece outside your back door will bring happy memories flooding back. The first thing to do is to choose the sunniest spot available – it’ll not only make sitting out there more enjoyable, but will also mean that you can install some serious sun-loving plants too. Painting the nearby house, shed or garage wall with white masonry paint will help to create the right atmosphere and look. At the same time it will help to reflect our sunlight – often a bit washed out compared to more southern climes - so providing a stronger light for the type of plants that appreciate it. Mediterranean gardens often make full use of the walls and any other vertical surfaces, so put up hanging baskets, pots and wall baskets and cram them full of plants. Plants in pots are a must and if possible choose stone or terracotta containers. If you want to make brand new pots look more weathered try painting them

with a solution of plain yoghurt as this will help to encourage rapid colonisation by mosses, algae and lichens. Any new hard landscaping such as wall, paths or patios and terraced surfaces will look best in natural stone and there are now also terracotta tiles available that are suitable for use in the garden. Terracotta tiles can also have a storage-heater effect too – after a long, hot day they will have absorbed a good deal of heat and this will then be released gradually in the evening. Add interest to a vertical surface by planting a vine. They have attractive leaves and there are plenty to choose from that will fruit well in our climate. You may not be able to create your own vintage but the vines will look particularly authentic when draped with a few bunches of grapes. Glazed tiles, wall-hangings and even the odd ornament or two can also add to the Mediterranean look, but make sure you choose items that won’t be instantly bleached by the sun. Try growing your own oranges or lemons. With our generally milder winters some gardeners are even managing to keep these plants outside all year round with only the minimum of protection.

Growing your citrus tree in a good-sized terracotta pot means that you can move it into a more protected spot if necessary. With their wonderful silvery grey leaves and their often rather untidy or gnarled shape, olives too are a plant well worth considering. Olives are best grown in a large container unless you have a warm garden and a very well-drained soil as they hate winter wet. Some plants just spell out Mediterranean Magic – try geraniums and pelargoniums, aeoniums and sempervivums, rosemary, thyme, oregano and pretty well anything with silvery foliage. Go for the brightest coloured flowers and your new holiday destination will also benefit from a subtle Mediterranean aroma too. New Pet Grooming Service Launches in Westwell Leacon Dogs and cats can expect a warm welcome at Groomingdales, a new pet parlour near Ashford. Qualified pet groomer Jo Smith has opened the business at her home in Westwell Leacon, where the emphasis is on every individual animal’s wellbeing. From the moment the pet and their owner arrive, right through to the finishing touches, Jo makes everyone feel a part of the family at Groomingdales. After completing her training, Jo created a stylish and fully equipped facility in her garden, where pets can be treated in a quiet and tranquil environment. Every dog comes in through the front door of Jo’s cottage, where they have the chance to meet the two small family dogs, Jack and Lily, before heading out to the parlour for their unhurried treatment.

“When I’ve taken my own dogs to groomers, I’ve often found the environment to be very sterile and there has been a ‘quick in and out’ approach,” Jo says. “But my approach is very individual – I like the animals to be completely relaxed and stress-free. There aren’t crates full of dogs waiting to be treated; I deal with one dog or cat at a time and I’ll take breaks in the treatment to let them relax if need be. Also, while some groomers will do whatever the owner has asked in terms of cutting or colouring, I’ll only do what’s right for the pet – if they become too stressed, I won’t continue.” Services on offer at Groomingdales include a bath and blow dry, creative grooming such as colouring, nail trimming and a full groom. Jo also offers a new specialist paw treatment, during which paws are massaged with a moisturising butter cream. “People don’t realise how dry and damaged paws can become whilst walking through mud and water,” Jo says. “This treatment leaves paws really soft and nourished.” Jo also offers free puppy socialisation – any puppy under six months old can be brought along to Groomingdales to ‘sit in’ on a treatment session, even if the owner has not brought another dog for grooming. “The puppies can be brushed, to get them used to grooming or simply play in the room while I’m treating someone else’s dog,” Jo says. “It helps them to get used to the environment and being around other dogs.” To celebrate the launch of Groomingdales, Jo is offering a 10% discount on the first treatment for new customers – simply quote ‘Village Directory’ when booking. H

ello Everyone, Mowgli here. We are

getting to the time of year when everyone seems to take a holiday. Ebony and I think that it is madness ourselves- why go away just at the time that we have the best weather at home? Ebony and I of course never get a holiday. We hear that some cats do- they get to pack a little bag with their favourite blanket and a few toys and go and stay at what sounds to us like a luxury cat spa- food brought to your room every day, heated beds, outside rooms with a view of the garden and birds. Also an opportunity to spy on the cats in neighbouring rooms and exchange a few stories through the walls! It all sounds rather pleasant to us, although we both actually admit that we prefer our own arrangements when Clive and Jane go away. Our best friends from down the road come and look after us. They come and feed us at least twice a day and we are really lucky that they come and spend time with us too- play with us and watch TV so we can curl up on their laps and stroke us all the time. We purr for them non-¬stop. There are other advantages to the folks being away- we get the whole bed to ourselves and have none of this being squashed in the night business. We also don ‘t have anyone moaning at us that we have taken too much duvet! We actually find it a bit like a holiday for us too, although there is of course the responsibility of looking after the whole house and those stupid goats. Ebony and I do checks in the morning and the evening and I have to say it is quite tiring. We make sure that Clive knows this when they come back- it might have been a holiday for him, but we have had to look after everything whilst he has been away. I forget all this quickly though as long as I get a ride around the house on the wheeled suitcases. I cannot resist a wheeled suitcase and love nothing more than a white knuckle ride on one. I also need to update you all on our mouse situation. It got worse- the mouse in the kitchen came back and started eating our cat food! We were so outraged that we decided to ignore the mouse and the whole situation and pretend that it just wasn’t happening. Jane couldn’t understand this of course- humans are so dim sometimes- and kept asking me where the mouse was, where it had been and just why

I was letting it eat my food. Anyway, it seems to have left the kitchen and moved to the attic so Ebony and I at least are happy!

Challenging times J

amie Emberson is a man who enjoys a challenge; he’s not one to sit on his laurels, either privately or professionally. He chose a demanding and difficult career for himself and perhaps predictably when the moment was right to get pigs, he settled on a breed with a reputation for being a bit of a handful. But a successful health-related business career, serious injury while 5,000m up a remote, Himalayan mountain and, at a more domestic level, a string of 10 house renovation projects, have fashioned a man who appreciates the hurdles that life throws up. Jamie Emberson is a self-confessed ‘doer’; a character who thrives on getting things done, and doing them well. Chance encounter But his passion for pigs is a relatively new one, which grew out of a work related association

rather than a childhood peppered with summer jobs on farms, in fact, having grown up in London, the countryside was something of a novelty for Jamie during his early years. It wasn’t until much later, when qualified as a behaviour nurse therapist that he moved to Kent and started working with conservation organisations on projects to help those with learning disabilities. Jamie was renting a farm at the time - providing residential support as part of an eductional scheme - and rescued a pair of Vietnamese potbellied pigs. Thiswas back in the early 1990s when these animals were all the rage; their owners hadn’t expected them to grow as big as they had! But, as Jamie points out, these animals weren’t taken on with any serious farming intentions in mind. “We took them in purely to provide positive activities for people to get involved with, and they were my first experience with pigs of any sort.”


However, it wasn’t until 2001 that another house move brought with it the land needed to feed Jamie’s rapidly developing interest in keeping livestock. “I set out with the aim of providing the family with meat that we could eat with confidence, and so I wanted to start keeping sheep, chickens and pigs.

“I signed up for a weekend course at Pig Paradise, where I found Tony York a mine of useful, practical information about the fundamentals of pig management. But he didn’t have to convince me to start keeping pigs because I’d already made that decision. The enclosure was fenced and ready and the ark was waiting. In fact, I came back from Tony’s with three Oxford Sandy & Black weaners in the back of the Land Rover and one of my enduring memories is having to transfer the squealing bundles of joy from the car to their new home at 1.30 in the morning!” Realistic approach Jamie is nothing if not realistic about anything and everything he does. “One of the biggest lessons I’ve learned over the years is to confirm my own fallibility and this applies to keeping pigs as much as to anything else. Accepting that you are going to make mistakes but being willing to learn from them are both important requirements when keeping livestock. Having a sense of humour is essential too!” Slaughter time was difficult for the family and Jamie admits that there were a few tears shed

as they’d all become attached to the trio. However, he felt then - and still does now - tht one of the most important things when home-rearing livestock for the table, is to take full responsibility for the animals involved from start to finish. He went on to explain:”Although this certainly isn’t the easiest approach, it’s a very honest one. I think it’s essential to respect the animals involved and to ensure they have a good quality of life and then to appreciate what you finish up with on the plate.” All three pigs ended up in the freezer as planned but, nevertheless, Jamie was left feeling slightly lukewarm towards the breed. While he certainly has nothing against Oxford Sandy & Black, or the quality of the meat produced, the rearing experience didn’t leave him with any real affinity for the breed. “I just felt something was missing and that I wanted more from the whole process,” he recalls. Then fate took a turn in the events that followed. Out of the blue Jamie was asked if he’d ‘adopt’ a Large White boar and a Tamworth sow, which he agreed to do. This was about 10 years ago and the pair produced several litters. As time passed he began to feel a growing attachment to the sow - the family had named her Iggy - even though he didn’t think that she was a pure Tamworth. Nevertheless, her character struck a chord with him; so-much-so; in fact, that she’s still alive and well today, at the grand old age of 12. Reproduced by kind permission of Practical Pigs Magazine.

Cake and Bake Peach Gallette This divine summer dessert just couldn’t be easier to make – no flan tin and no baking blind! Make sure you have a good solid baking sheet to bake the galette on as this will ensure a crisp pastry base. You can replace the fresh peaches with drained canned peaches, if liked. 14

225g plain flour, plus extra for dusting 150g unsalted butter, diced 100g ground almonds 4 tbsp caster sugar, plus extra for sprinkling 2 large egg yolks blended with 2 tbsp ice cold water 6 large fresh, ripe peaches, skinned, stoned and sliced Beaten egg, to glaze 1 tbsp pistachio nuts, chopped Vanilla ice cream, to serve

TIP To skin peaches, score a cross in the skin with the tip of a knife then cover with boiling water for 1-2 minutes. Drain and cover with cold water for a further minute – the skins should peel off easily.

Serves 6 - Ready in 50 minutes plus chilling

To make the pastry, sift the flour into a large bowl. Add the butter and using your fingertips rub it into the flour until the mixture resembles fine breadcrumbs. Stir in half the ground almonds and half the sugar. Make a well in the centre and add the egg yolks and water. Stir with a round-bladed knife to form a crumbly dough (add a little extra cold water if the mix is too dry). Gather the mixture together with your hands and knead gently until just smooth. Wrap the pastry in cling film and chill in the fridge for about 40 minutes. Preheat the oven to 200C/400F/Gas mark 6. Lightly grease a large baking sheet. Roll the pastry out on a lightly floured surface to a rough circle about 30cm in diameter. Transfer to the baking sheet. Sprinkle the rest of the ground almonds in the centre of the pastry circle, leaving a 7cm border. Arrange the peach slices on top of the almonds. Fold the pastry border inwards – just over the edges of the peach slices. Brush the pastry edge with beaten egg and sprinkle over the chopped pistachios. Bake in the preheated oven for 25-30 minutes, or until the pastry is crisp and golden. Sprinkle over the rest of the sugar and serve warm or cold with scoops of vanilla ice cream.

Ashford’s New Farmers’ Market Launches This Month Ashford’s brand new monthly farmers’ market launches in the town centre on Sunday 6th July. Ashford Borough Council is working alongside Kent Farmers Market Association to launch an exciting farmers’ market in the Lower High Street on the first Sunday of every month, from 10am to 2pm. Ashford’s Town Team is inviting local traders to join the stalls, which will offer a diverse range of food, drink and culinary related products to take home or to enjoy on the day, and create a new buzz in the lower high street at weekends. The markets will have a seasonal theme each month, with chef demonstrations and street food. There will also be FREE parking for customers for the first two market days. The Ashford Farmers’ Market is part of Ashford’s drive to increase footfall in the town centre, particular on Sundays, and to support local businesses. It is funded through the town’s Portas Pilot budget. Ashford’s newly appointed part-time farmers’ market manager Rachel Heather said: “I am so pleased to be involved in delivering this new town centre farmers’ market and I cannot wait to see the array of local producers and eager foodies at the first market day! “Farmers’ markets are an excellent way of raising awareness about local producers and allowing them to showcase their products to shoppers. 9 Answers: Tinkaboo’s favourite food is biscuits. There are 5 jugs in Dolly’s kitchen.

1. Mix in all of the fluid ingredients, oil, water,eggs and honey, with the rolled oats. 2. Mash the bananas with a fork, then add to the mix. 3. Add 2 cups of flour, mix with a spoon then slowly add the rest of the flour (you may need more if it’s too wet and sloppy) 4. Once you are happy with the mix, tip it onto a floured surface and roll until 1/4 of an inch thick, thicker if you want a softer centre. 5. Cut out in your favourite shapes, put onto trays lined with greese proof paper. 6. Bake at a low to medium temperature, no higher, until golden. (Approx an hour) 7. Allow to cool, if you want to decorate, buy yogurt drops (available online or hobby craft stores), melt in a bain-marie and dip or drizzle over the squiss-kits. 8. Allow to set, they do not need to go in the fridge. Store in a cake tin or cookie jar.

When you have run out of space and it’s not possible to extend, the time has come to think creatively. With the right approach, you may even be able to make two rooms out of one.

Had a new baby? Children growing up? Started working from home? Every year it seems like there’s more pressure on our living space. And while it’s not always possible to move up the property ladder to a ten-bedroom mansion, there is always a way to make your current property work better for you. It’s called doubling-up – and it’s all about giving your home a new lease of life with some thoughtful rearrangements and careful additions, resulting in multifunctional rooms that are entirely practical and yet also utterly stylish. Take a long, hard look at every room in your home and, even in the smallest of apartments, it will soon be possible to see which spaces can be modified so as to serve more than one purpose. We’re not talking about expensive extensions or complex loft conversions, but simply about making the most of what you’ve already got. Like adding a dining area to a kitchen, a home office in a bedroom or a hideaway guest bed in a living room. The trick is to forget your preconceptions about where you live and be creative with the space. To get the most out of every inch (vital when you need to double up on what you have), foldaway furniture is a great option to start with, whether it’s a bed, a desk or a dining table and chairs. Next, make the most of any free wall. Peg rails and hanging rails, hooks and shelves – from high above your head to fitted across an alcove, this can be incredibly useful storage. Think high: a raised child’s bed with space beneath for a desk, sofa or play area, for example. Or could you even build a mezzanine sleeping or working space? And think low: slide a truckle bed under a permanent one, or tuck stools under a small table and magically create an intimate dining area. It’s a lateral-thinking approach that’s quick, easy and inexpensive, and that will make your home as functional and as good-looking as you could ever want, no matter what changes come your way in the future.

Choose well-cooked, freshly prepared food and avoid salads, shellfish, unpeeled fruit and icecream (unless it’s a major brand). Health precautions If there’s a malaria risk don’t take it lightly. Use repellents on exposed skin and repellents and/or insecticides around your room and on mosquito screens and clothing (mosquitoes may bite through it). Wear long trousers and long-sleeved tops, particularly after dark. Anti-malarial tablets must be started before you go and continued after you return. Take a supply of diarrhoea medication so it’s close by if needed. Vaccinations Again, requirements depend on destination – check specific guidelines at http://www. fitfortravel.nhs.uk at least 8 weeks before travel as some vaccinations are in several doses. Carry proof of vaccinations; some countries require an International Certificate of Vaccination or Prophylaxis (ICVP). Life Begins My VCR Moment by Kate McLelland

I remember the 1980s as a time

of tremendous change, when the growth of technology resulted in revolutionary gadgets such as the Polaroid camera, the Boombox, the Sony Walkman and the video cassette recorder.

As a teenager I constantly nagged, begged and pleaded with my parents to buy a VCR. I was tired of hearing our neighbours boast about watching repeats of Dallas and longed to be able to record all the “juvenile and mindless” comedy programmes my parents refused to watch, so I could play them on an endless loop as soon as I got home from school. My father loved his television, so I naturally assumed he would be eager to own a VCR, but he remained strangely reluctant to buy one. The day he finally gave in and came home with a brand new recorder, my brother and I nearly exploded with excitement. However, as soon as he unpacked the box and began to read the instructions, we realised something was wrong. I remember watching with fascination as my normally capable father hesitated, fumbled and cursed under

his breath, trying to get to grips with this alien piece of technology. After a long struggle with the cables he gave up and decamped to the kitchen for a cup of tea, leaving my brother and I twitching with impatience. Before he’d drained his cup and returned to the lounge, we had set up the VCR and made a test recording. That was the first time I had ever questioned my parents’ ability to do anything, and I recall feeling slightly smug about our success with the VCR. In future years as televisions, radios and other items of household equipment became more complex and technically challenging, we were simply given the manual and left to get on with it. It’s not unusual for patterns to repeat themselves over successive generations, and I’m a little ashamed to admit that instead of continuing to embrace the new, I simply sat back and let my own children take on the role of “expert”. I therefore managed to sidestep the IT revolution completely. Knowing next to nothing about computers never really bothered me until recently, when I agreed to babysit one of my grandchildren. He

turned up clutching a brand new tablet computer and inevitably - asked me for help. It was then that I found myself in exactly the same position as my poor father, confounded by the VCR all those years ago. It hurt my pride to realise that I am no longer able to keep up with new technology, and my experience made me think of all those other people of my age who haven’t yet picked up the basic principles of operating a computer. These people now have a precious window of opportunity to gain IT skills before their ability to learn is compromised by old age. I might have been embarrassed to admit I couldn’t use my grandson’s tablet computer, but I’m eternally grateful to him for making me aware of the yawning gap in my knowledge … a gap I’ve allowed to become wider and wider over the years. I may have let things slip, but I don’t intend to waste any more time: this week I’ve signed up for a computer course at my local library.

The Children Who Lost Their Schooling to Help on the Farms in World War 1

“I left school when I was thirteen, in the First World War. I never went back.... I always say I done wrong, lost the last year of my schooling, ‘cos you didn’t get nothing else in those days.” Bill Chapman, whose words these were, was a former pupil at Charing Heath School in Kent. Like many of his contemporaries he was allowed to leave school early to work on a farm and help in the struggle to maintain and increase farm output in the First World War. With many of their workers having enlisted or being called up, and increasing pressure on them to produce more food, farmers were desperate to find labour. Older workers, troops not actively engaged in fighting and later those enlisted but deemed not fit enough for the front were all part of the solution. So were women. But while the role played by women, and the Women’s Land Army, in the First World War is well known, the role played by children is less so. It was common at the time for children to work on farms during their holidays and in Charing, as elsewhere in rural areas, the school year was organised so that the main holiday coincided with harvest time. But working during term time was another matter. Yet the need for farm labour was so great that in early 1915 suggestions were made that children of 12 and over should be exempted from school in order to help out on farms at key times. This was

highly controversial and in Kent the Education Committee was divided. Some argued that everything should be sacrificed to the needs of the war; others that to cut education short could be disastrous for those affected. But in March 1915 the UK Board of Education explicitly authorised the employment of youngsters as an exceptional measure for limited periods. Kent then agreed to allow children of 12 and over to work from Easter to 11th October providing certain conditions were met. School log books record the absentees. “Several of the older boys are leaving just now, some under the new bye law which is intended to release boys for agricultural work during the war” wrote the Headmaster of Charing School in May 1915, while his colleague at Charing Heath School noted that “Three children over twelve have been granted a licence to work during the half year ending October 11th”. As the war progressed so numbers being exempted increased. By 1918 it was reported that over 3,000 boys and nearly 900 girls were exempted in Kent alone and it was thought that more were working unofficially. Many of the children may have felt a sense of pride in working and helping the war effort. But


life was not always easy for them nor for those slightly older who had passed the official school leaving age of 14. John (Jack) Hills had hoped to stay on at school in Ashford and eventually train to be a teacher. But the death of his father in 1917 meant he had to leave school at 14 and for two years he worked on a farm in Charing. He was not paid for most of this period, working only for his keep and the food was meagre. He lost weight and during the cold winter of 1917 suffered badly from chilblains. He finally asked for money after his second harvest in 1918 and eventually was given just one pound. Luckily he found better employment after the war ended. Charing is a village in Kent a few miles north of Ashford. Charing and District Local History Society have gathered together this and other information about agriculture and children’s lives as part of their research into the parish during the First World War.
