Eight years ago, when I started my first magazine, my niece Sophie used to create “Kid’s Corner” for me, she was just 13 at the time and did a fantastic job. Now, having just celebrated her 21st birthday and about to graduate from University, she’s helping me out yet again. late to sow some of the early crops, and those that need a long time to grow and then ripen, but you can catch up by buying plug plants from the garden centre (or even the supermarket). Most now offer quite a good range – you’ll certainly find tomatoes, aubergines, peppers, leeks and some brassicas. It’s definitely not too late to sow peas, beetroot, carrots and salad leaves. And it’s just the right time to sow tender beans, courgettes, sweetcorn, pumpkins and squash. Be careful not to sow these tender crops directly into the soil until the danger of frost has passed, as they’ll need protection if the nights are cold. I normally sow these crops under cover to plant out towards the end of the month.

The Garden Shed May by Jo Arnell, Woodchurch If you missed the first half of the vegetable growing season due to the weather and the ground being far to cold to work, sow or plant in, don’t worry. May is a great month to get cracking in the vegetable garden. The soil is warm, rain is still plentiful (in theory) and the sun’s climbing higher in the sky. It’s a little too

If you want some flowers (unfortunately for next year), then this is also a good month for sowing biennials. Biennials are like annuals, but they spread their life over two seasons instead of one, putting on leafy growth in the first year and then flowering the following spring. This means that they flower early in the season when not much else has got going (they make good accompaniments to spring bulbs). Many, like Foxgloves, Forget-me-nots and Honesty are shade tolerant, and most have a (mostly) welcome habit of self-seeding, so you should only need to sow them once. were looking forward to a great bucket of warm macaroni. Clive was less pleased about this we think as it was meant to be going into macaroni cheese for his lunches!

Mowgli Hello Everyone, Mowgli here. How are all of you? Well we all hope.

This month I am going to share an adventure we all had in that silly snow in March. Ebony and I couldn’t believe it when we started to see the snowflakes fall. We thought that there had been quite enough snow for one winter already! We went to our radiator beds and snuggled up in the warm. Jane wasn’t as sensible and she and Josh set off to visit a friend in the car. They didn’t get far as the roads were very slippery so they were soon back. This pleased us as Jane built a huge fire and we were all very warm. The adventures and problems came later in the afternoon when the snow started to drift. Clive and Rosemary were both working at the clinic that day. It took Rosemary 2 hours to get from the Clinic into Sellindge on the A20 and she eventually parked the car in a lay-by and rang us to say she was walking to our house. We were a bit worried about this as she is still recovering from a broken leg! Shortly after that Clive rang to say he was going to try and get home but he had heard that Lympne was cut off due to the snow and a lot of stuck lorries....After a very long time the doorbell rang and Rosemary had arrived. We sat on her to help warm her up by by the fire (coffee and whisky also helped we think....). After a while we heard from Clive- he couldn’t get to the village either and had parked his car and was walking. He managed to get home looking like a snowman and went straight to check on our silly old goats. They were quite pleased with the situation in their nice warm shed. When it snows they know they get extra food (on account of Dennis’s great age and the fact he has got pneumonia twice) and they

Anyway, the snow kept coming and there was no way that Rosemary was going to get home so she stayed the night (I visited her at intervals through the night just to wake her up and check she didn’t need anything....)and the next morning she and Clive got up very early to walk back to their cars, dug them out and get back to the Clinic. The patients that came to the Clinic during the snow were all very brave about the weather. One dog even arrived on a sledge! If only I was allowed to go on a sledge- I would promise to be good! Other news is that two very naughty herring gulls have taken at residence on our roof and it is almost a full time job to keep them under control by staring at them and miaowing from the window sill in the bedroom. It is quite exhausting as you all know it is already a full time job for me to run this house!

WYE From the outside the Kings Head appears like any other quaint, village pub, however upon entering, the pub’s unique charm soon becomes apparent. This beautiful old Victorian coaching house is almost unrecognisable following its recent, tasteful refurbishment. Despite its contemporary new look the pub still feels instantly homely and welcoming, boasting the traditional features desired of a cosy Kent pub, such as roaring open fires, comfy armchairs and cosy nooks hidden throughout. The inviting atmosphere was matched by the warm welcome we received from the pub’s landlords who proudly told us all about their plans for the pub. They expressed their passion and enthusiasm to create a vibrant, sociable environment which it is hoped will bring the community together. They are keen to involve as many local suppliers and businesses as possible in a bid to support the local community, further enhancing this sense of community spirit. Local people and businesses are celebrated in a collection of artistic photographs capturing the true essence of the Kent countryside, and taken personally by one of the pub’s landlords.

We were presented with an enticing menu which offers a quirky twist on traditional ‘pub grub’ classics. You’ll find something for everyone here, from a delicious cheese fondue, served with glazed ham and sourdough, a great dish for sharing, to Hot Chocolate with a twist, served in the form of a lollipop which is slowly disolved in a tall glass of warm milk. A diverse specials board is regularly updated to keep the menu fresh and exciting. We were lucky enough to sample this month’s featured dish, a mouth-watering beef-wellington which is the exclusive recipe of none other than Celebrity Master-Chef Winner and Atomic Kitten member Liz McClarnon. We even had the pleasure of meeting Liz, the pub’s proud food ambassador, who admitted to enjoying regular retreats to the Kent countryside to visit her close friends at the Kings Head. Liz’s passion for cooking was clear as she flitted in and out of kitchen to check the food was being prepared to her high standards. Having sampled her food Liz joined us for a chat. We ask her about her love of cooking and she shared her dream of one day having a restaurant of her own in a rural area much like Kent. The next day she was rushing back to London in preparation for Ant & Dec’s Saturday Night Takeaway

Seasonal Delights Liz McClarnon–Simple Beef Wellington Serves 2 Ready in 30 mins “I Absolutely love red meat.This is a more simple version of my usual Beef Wellington, so you can easily cook it at home” Liz

Ingredients 2-3 tablespoons olive oil 2 cloves garlic finely chopped 1 shallot finely chopped 1 tablespoon fresh parsley chopped 125ml port 1 beef stock cube 150g puff pastry sheets (pre-rolled) 125g button mushrooms finely sliced 2 x 175g medallions of beef fillet Fewsprigs thyme and rosemary Freshly ground salt and pepper A dash of Truffle Oil (optional

Heat 1tbsp of olive oil in a small pan on a 5 medium heat, add the garlic and shallot then cook for 1-2 minutes until soft and golden.

Heat the butter in a small frying pan until just melted, add the mushrooms, season with salt and pepper. Then cook gently until slightly soft in texture.

Add half of the parsley and port and boil 6 until the liquid has reduced by half (this will look a little syrupy). 7 Use a saucer to cut out two circles of pastry and lay on a non-stick tray. Bake in the oven for 12 minutes.

Once cooked add a drizzle of truffle or other flavoured oil and keep warm.

Season with salt and pepper, then turn the fillet over using a pair of tongs. Sear again for 1-2 minutes and season. Add

Remove from the oven and allow to rest for 5-10 minutes in a warm place. To Serve – Place the cooked pastry circles on two warm plates. Poke a hole in the centre and fill the pastry with the warm mushroom mixture. Place the steak on the pastry and pour over the sauce. Serve with seasonal vegetables

Finance Ignorance is No Defence Taking professional financial advice is advisable, but your own education is essential

In my parents’ day, money was a simpler matter. In many families they went to work, earned their money, paid their taxes and saved what they could. When it came time to buy a house, they approached the bank manager to see if he would be kind enough to lend them three times the husband’s salary (the wife stayed at home looking after the children) for a repayment mortgage which was paid off over 20 or 25 years before he got his final salary scheme pension.

The common thing throughout all these generations, my parents, myself, our children, is that none of us have ever had any financial education. Not one single lesson in the classroom at my school was ever devoted to personal financial matters. The financial company employees are taught how to sell to us, but we have little idea of how to make a judgement on what they tell us.

By the time I started earning money, it had become much more complicated. We were two people paying the mortgage needing much higher salary multiples to afford rising house prices. Then came the ending of MIRAS, the emergence of interest only mortgages and endowment policies to pay them off (or not as it turned out in some cases). Pensions became more complex too, with choices for opting out of SERPS, private pension schemes, money purchase schemes and final salary scheme pensions became a distant memory for most.

In 2011, 118,000 people signed an e-petition via the MoneySavingExpert.com website to force the issue of Financial Education in Schools to be debated in Parliament.

Throw in the scandals of misselling of endowments and PPI to name just two, and it’s clear even for my generation the financial world has become a confusing place. Hedge funds, derivatives, swaps – even the so-called experts struggle to make sense of it.

At last, this should be about to change.

Draft proposals have been published recently and are still under consultation into April, but it is expected that from September 2014, financial education will form part of the national curriculum in England, with 11-16 year olds receiving it as part of their compulsory citizenship education. Plans are that pupils in Key Stage 3 (ages 11 to 14) will be taught the function and use of money, personal budgeting, money management and a range of financial products and services. From 14 to 16 in Key Stage 4, they will be taught about wages, taxes, debt, credit, financial risk

plus more sophisticated financial services and products. The Government wants students to have “the financial skills to enable them to manage their money on a day-to-day basis as well as to plan for future financial needs.” It is clear that the lessons are long overdue. You only have to look at how much the financial world has changed in the last 40 years to see that what is needed (and will hopefully be taught in schools) is a good grounding in the ‘basics’ of understanding personal finance. It is to be hoped that the generation that receive this education realise that their learning will need to continue long after they leave the classroom as the financial world continues to evolve. If knowledge is power, having the right financial knowledge will help our children avoid the mistakes with money we may have made along the way, and that can only be a good thing. You can’t beat the feeling when you leave the hairdressers with a perfectly blow-dried mane that’s glossy,

bouncy and completely glamorous. There’s no doubt that when your hair looks great you feel fantastic, but as we’re all trying to cut down on our monthly spend these days, it can be hard to justify visits to your stylist in between your regular cut and colour. So, because we don’t want you to compromise on looking and feeling good, we’ve compiled a guide that will help you to achieve a professional-looking blow-dry at home - saving you a trip to the hairdressers and some extra cash.

Wash and Go It’s really important to think carefully before buying shampoo and conditioner. You need to assess your hair’s needs and select products that will work with your hair to achieve the look you want. If your hair is dry, brittle and straw-like, you’ll need a

shampoo and conditioner that will add much-needed moisture to your locks, leaving them manageable and supple when you come to style your hair. Coloured hair - particularly red shades, as they fade so fast requires a specialist shampoo and conditioner that won’t strip away your hue, but will instead pamper it and prolong the time between colours. It is worth investing in quality products for your hair, because cheap shampoos tend to contain harsh ingredients that strip the natural oils and remove your artificial colour in no time. Although you pay a lot more at the time of purchase, you’ll find that good shampoos and conditioners last a lot longer, because you don’t need to use so much of them. Be prepared not to see much lather when you wash though; professional products don’t behave the

same way as cheaper versions, because their ingredients are better. Always ask your stylist for advice - they know the products they sell well. Because they use them every day, on all different hair types, they’ll know what will work best for yours.

Ready to Blow Once you’ve washed your hair, wrap it in a towel and leave it for a short time, so that it’s damp rather than dripping wet when you start to dry it. Don’t be tempted to rub your hair with the towel, as this encourages frizz and can cause damage; instead, gently squeeze out the moisture. Next, lightly brush through your hair using a good brush - natural bristles are best. Keep an eye on plastic varieties, because over time plastic bristles tend to break and can snag and pull at


your hair, resulting in split ends and damage. Remember that your tresses are at their weakest when wet, so take time to detangle the lengths and don’t be tempted to pull. If you find that your locks are prone to knotting, use a detangling spray to make the process easier. Section your hair using clips, even if it’s relatively short. This allows you to move systematically through your lengths. Start at the bottom of your hair first, moving to the top of your head last. Whilst your hair is damp apply a little oil or serum to the lengths and ends of each section to lock in moisture and add much-needed shine.

Dry Like a Professional Using a round barrel brush this helps to create volume

and lift - start drying the first section, roots first. Keep your dryer about six inches away from your scalp, so that the heat isn’t too intense. Use your brush to grip and pull hair taut in the direction you want it to go. If your hair is very fine or weak, use a cooler setting on your dryer so that you minimise the damage caused by the heat. A thermal protecting spray will help to safeguard your locks too. Whatever your hair type, always remember to use a good quality heat protecting product when straightening or curling your tresses. Direct the air from your dryer downwards - the nozzle will help with this - to create a smooth, sleek finish. Don’t move on to the next section of your hair until each is completely dry - your stylist

would never let you leave the salon with even a slightly damp mane. Be sure to keep moving your dryer, as leaving heat concentrated on one area for too long will frazzle your locks. Set and add shine to your blow-dry by finishing off with a cool blast of air from your dryer. And, if you want your tresses to look even shinier, add a little more serum or oil to your finished style. Hairspray will keep your blowdry in place all day long, but use it sparingly for a modern look. Helen Taylor
