Welcome to the village directory Hi everyone, Welcome to the October Issue and to all our new readers in Park Farm and Kingsnorth. This month the coverage of the magazine has been extended to add another 5,000 readers, all receiving the magazine via Royal Mail as per usual with The Village Directory. For now this extended coverage is a trial but if the response is positive I hope to extend the coverage regularly in the new year. For the benefit of our new readers The Village Directory began eight years ago in the surrounding villages as a local community handbook. With local events and editorial content it has become a valued part of the rural community, especially as it reaches every home due to it’s guaranteed Royal Mail deliveries. Last November I began the Ashford edition covering Kennington and Willesborough and I’m relieved to say that it has also been very well recieved, I sincerely hope you like it too. The nights will start drawing in this month, especially once the clocks go BACK on Sunday

As you’ll see from the front cover, Christmas is now on the menu, and will be more so in the coming months. I can’t believe it’s time to start planning the office party, where did the year go! October, of course, is the month for Halloween when freaky looking pumpkins aim to keep ghosts and ghouls away from our doors. This will be closely followed by Bonfire Night, and there are a couple of organised displays advertised in this issue along with other events for November. Benefits of Garlic
As the days get shorter and the weather gets cooler the focus on your vegetable plot starts to turn from growing and harvesƟng, into clearing and Ɵdying. Time spent on clearing and preparing your beds now will pay dividends next year. Make the most of the autumn sunshine to get compost dug into bare beds and you’ll have saved yourself hours of work on those chilly Spring days. Jobs for October:-

Make sure that plenty of sun can get to your pumpkins in order to get them ripe in Ɵme for Halloween. Plant garlic, shallots and Japanese onions. Leaving dead seed heads etc. on your flower borders will provide valuable food and shelter for garden wildlife over winter, as will leaving an undisturbed log or two. Build a rough shelter in a quiet corner and you might get a hedgehog move in! If you get lots of fallen leaves on your plot don’t waste them. Make a bin from chicken wire aƩached to 4 posts. Fill this with the leaves and they will rot down to give you sweetsmelling black leaf mould in one to two years Ɵme.
October is a good month for taking stock of how things have gone this year and starƟng to make plans for what you will grow in the future. Removing spent crops exposes slugs and other such pests to birds and other garden friendly wildlife. It also gives you the chance to look aŌer your soil and assess how the space will be used next. Crop rotaƟon is important so if the space is to remain bare over winter it may be wise to make notes about what grew where this season. Add maƩer from your compost heap to newly cleared areas, either digging it in, or leaving a layer on the top where the worms will gradually incorporate it into the deeper soil over winter. If the soil is heavy leaving it bare will enable frosts to help break it up. Our soil is lighter and benefits from being covered over - we use flaƩened cardboard boxes which protect from the rain and also help keep the weeds at bay. You may think that it’s all too late in the year to be planƟng, but there are some crops that definitely need to be thought of now, and others that, given an early start now, will benefit next Spring.
If you’ve not grown garlic before, then do try it - it’s easy to grow, can help protect other crops from pests, and with just a small amount of space you can grow enough to see you through the whole year! Now is definitely the Ɵme to order your garlic bulbs and they can be planted anyƟme between now and Christmas, but preferably not when the soil is too wet. Rather than planƟng all the garlic together it may pay to spread it around the plot as the strong smell can be an aid in keeping pests such as the carrot root fly away from other crops. Each garlic bulb should be separated into individual cloves and the cloves are planted with the pointed end uppermost, just below the surface, leaving about 4 inches between each one. They like well drained soil and you’ll be pleasantly surprised in the long winter days to see their green Ɵps creeping upwards. Each clove matures into a whole new bulb. The tradiƟonal Ɵme for harvesƟng garlic is in June, on the longest day of the year and if properly dried and stored it will keep right through the winter. Would you like some fresh, tender, young, peas early in the Spring next year? Look out for hardy varieƟes that can be planted now. They can be overwintered and are able to withstand the frosts, though protecƟon with a cloche will be appreciated. We will be starƟng ours in pots to keep in the polytunnel over winter ready for early planƟng next season.

For thousands of years, ancient civilizations have used celestial bodies to measure the passage of time. The Sumerians tracked the movements of planets and stars to record the seasons, and even created ancient calendars to record lunar cycles. It is believed that around 4236 BC, the Egyptians discovered the `Dog Star` rising alongside the sun every 365 days, it is believed to be “one of the earliest years recorded in history” and would later evolve into the current 365day calendar. 3500 BC Egyptians used giant obelisk shaped objects which projected shadows on the ground to track the 12 parts of the day we know them as sundials. The Greeks then invented water clocks but they had problems with erosion so they became unreliable. There was also a problem that during the winter as they would freeze up. So then along came sand clocks, we know them as an hour glass.
The first modern mechanical clock was created some time between 500-1000 AD in Europe the exact date is unknown. It used weights that moved gears which in turn moved a single hour hand. These clocks were very large and require the weights to be reset 5 times a day. It wasn’t until centuries later that the next major hurdle in clock making was reached when the clocks driving weights were replaced with the invention of the coiled spring by Peter Henlein this was around 1500. Then in 1504 he invented the first portable clock this odd looking egg shaped thing was made from iron and it only had an hour hand and no protective covering over the dial. The telling of time rapidly started to move on when in 1577 the invention of the minute hand was designed by a Danish astronomer. Then in 1600, Burgi was also responsible for the first clock featuring minutes and seconds as well. The next few centuries saw the evolution of pocket watches they became smaller, and more accurate and very ornately designed. In 1704 Facio came to London with an idea to use jewelled pivot bearings. His idea was that precious stones would not wear or erode like metal pivots would this is when the jewelled movement was invented and is still used today. Over the years watches got more and more accurate.

Investors looking for income have faced an increasing challenge ever since the financial crisis broke in 2008. Five years on and interest rates in the UK remain almost non-existent. Chilli Chicken Stew Serves 6 - 8
Ready in 1 hour 45 minutes
With Halloween at the end of the month, why not plan a ghostly gathering and serve up this hot and spicy chicken stew? Perfect for filling up hungry trick or treaters.
Ingredients: 12
• 1-2 tbsp sunflower oil • 1 large onion, peeled and cut into chunks • 2 garlic cloves, peeled and crushed • 1 small red chilli pepper, deseeded and finely chopped (optional) • 6 large skinless chicken fillets, cut into pieces • 2 x 400g can chopped tomatoes • 2 tbsp sun-dried tomato puree • 2 tsp dried oregano • 1 x 400g can kidney beans in chilli sauce • 1 red, 1 green and 1 yellow pepper, deseeded and diced • Salt and freshly ground black pepper • Warm crusty bread, to serve
Heat 1 tbsp of the oil in a large, deep flameproof casserole and fry the onion and garlic for 5 minutes until softened and golden. Add the chilli pepper (if using) and chicken pieces and cook over a medium heat, stirring all the time, until the chicken pieces are lightly browned all over, adding a little extra oil if needed. Stir in the tomatoes, tomato puree, oregano and 200ml water and bring to the boil. Season well with salt and freshly ground black pepper then reduce the heat, partially cover and simmer for 40 minutes, stirring occasionally. Add the kidney beans and diced peppers to the casserole and simmer, uncovered, for a further 20-25 mins until the peppers are tender and some of the liquid has reduced. Serve in mugs or bowls with chunks of warm crusty bread.
Tip For a hot non-alcoholic punch to serve with the stew, pour a large carton of apple juice into a saucepan. Core and slice 2 small apples and add to the pan with one thinly sliced lemon and a couple of cinnamon sticks. Heat gently for about 10 minutes, then pour in 1 litre of ginger ale. Heat through for a further minute then serve in heatproof glasses or tumblers.

If you want to live longer, eat salt! An old Latin proverb states “There is nothing more useful than the sun and salt” (Nil sole et sale utilius).

I wonder how many of you have been told to reduce your salt intake because of the detrimental effects it has on your health. This denunciation of salt seems strange since salt has always been viewed as being very valuable historically. In ancient Greece, slaves were traded for salt - hence the expression “not worth his salt.” Roman soldiers were sometimes paid in salt (salis) and their salarium is the origin of our word “salary”. “Soldier” actually comes from the Latin (sal dare), which means, “to give salt”. In Biblical times, salt was also used to seal an agreement or contract and was called “the covenant of salt”. Salt was valuable since it preserved foods and being called the “salt of the earth” meant that you were a valuable person. Though no longer common, for hundreds of years Roman Catholic priests would place a pinch of salt on a baby’s tongue during baptism and say, “Receive the salt of wisdom.” Participants at medieval feasts were seated in order of importance based on the location of the salt dishes. Distinguished guests dined at an elegant elevated banquet table “above the salt.” If salt was believed to be so valuable and useful in so many ways for so many thousands of years by so many million people from so many different cultures, why has it become so reviled. Did you know that we actually need salt in our diets to stay healthy? In fact a study reported in the ‘The Lancet’ March 14, 1998 suggests that those who eat salt live longer than those who avoid it. However, it is important to stress here that we are not talking about your bulk
standard refined table salt (sodium chloride), this stuff will destroy your kidneys and fast track you towards hypertension hell. High intakes of sodium chloride will also contribute to weight gain, unsightly ‘cellulite’, fluid retention, liver congestion, gallstones, rheumatism, arthritis, gout, muscle weakness and calcium store depletion (think osteoporosis here). Much of the table salt consumed today is either artificially manufactured or it started out as a whole food before being stripped of all its goodness during the refining process. Salt in its raw state contains up to 82 trace minerals and essential nutrients that counteract the effects of sodium chloride, but these are destroyed or removed during processing to leave just sodium chloride. Furthermore, additives such as bleach and anti-caking agents are included to give salt its whiter than white complexion and to prevent it from clumping. Natural whole unrefined sea salt or Himalayan rock salt ingested in moderation is on the other hand, a health enhancing food. These salts contain so many minerals and nutrients (that are becoming deficient in our soils), needed by our bodies to perform many biological and physiological functions. Deficiency in these important nutrients cause these functions to become compromised and consequently your health will suffer. An experiment was conducted where scientists tried to copy the chemical composition of sea water (chemically it was identical) and added fish, first to the real sea water and then into the man made ‘sea water’. The fish thrived in the real sea water and died in the manmade alternative. Nature is always better. Natural raw sea salt looks wet, clumpy and grey. If it looks any differently to that, then it is a man made copy or it has been refined in some way. The best salt is Celtic sea salt which you can buy from a good health food store or an alternative is Himalayan rock salt which is free of any toxins or impurities, but much harder to get hold of.
