WHO ARE WE?

HERE’S THE INSIDE CHEESE:

THE BIG CHEESE is a locally owned and operated food truck specializing in customizable on-the-go macaroni and cheese creation.

Every bowl starts with our silky Italian elbow macaroni or our gluten free version sourced from Japan. All bowls receive a generous helping of Mom’s cheesy sauce using Cal Poly Dairy Extra Sharp Cheddar (and other good stuff).

Each bowl is made to order and broiled to a sizzling crisp in our state-of-the-art food truck. Energy is sourced from on-board solar cells, planet-healthy flowering plants cover our water tank, and multiple hatches, openings, and windows eliminate the need for artificial cooling.
