UPDATES AND LIFE STUFF Hello friends! Welcome to the sixth issue of “Calvin’s Corner”! Yes, the term is almost over. It’s kinda unreal how on one hand it feels like just yesterday I was applying for appointed board and on the other it feels like an eternity. Whether your year went by slow or fast, or some kind of mix of the two like me, I hope it was an overall good one. Let’s end the term strong <3

and touches on Elections. I hope this issue is informative to y’all and youn find something you can keep <3 Okay so if you wanna know about what’s happening in my life, I have two midterms this week and a paper! WOO! Ah yes, the invetiable overwhelming feelings of stress are starting to come on, but Circle K is what keeps me sane <3

WHY DID YOU JOIN CIRCLE K part one

UCBCKI Publications Committee is back at it again with the fresh content, this time being YouTube videos! The first video series is “Why CKI?� in which members from the club draw their stories on the chalkboard and narrate their personal stories of why and how they joined Circle K.

Part One details the stories of Java Villano, Andrea Seet, and Manny Ilasco. (PS, Click on the video screencaps to watch the video live!)

BAKED GOODS


POLVORONES STEPHANIE CHU

Chill dough if it seems too soft.

INGREDIENTS:

-1 cup butter, softened -1⁄2 cup powdered sugar -1 teaspoon vanilla -2 1⁄4 cups sifted flour -1⁄4 teaspoon salt -3⁄4 cup chopped walnuts -powdered sugar (for rolling baked cookies in)

DIRECTIONS: Cream together butter and powdered sugar until light and fluffy; stir in vanilla. Whisk together flour and salt; add gradually to butter mixture; stir in chopped nuts.

Form dough into 1 1/4” balls and place onto parchment-lined or ungreased baking sheets. Bake at 400° for 10-12 minutes or just until the cookies start to turn light golden-brown; remove from oven and allow to cool slightly; while cookies are still warm (but NOT hot) remove them from baking sheets and roll, a few at a time, in powdered sugar until evenly coated; cool cookies completely on wire racks. Cookies may (optionally) be rolled in powdered sugar a second time once cooled to room temperature. NOTE: Forming dough into 1” balls will increase yield to 48 cookies.


CEREAL AND INGREDIENTS: -3 Cups Cornflakes -2 Cups milk -1 Cup cream -¼ Cup sweetened condensed milk -2 Tbsp brown sugar -1/8 Tsp salt -1 Cup Fruit Loops

DIRECTIONS: Turn the oven to 300 degrees. Spread the cornflakes onto a baking sheet and bake in the oven for about 12 minutes. The cereal will be toasted and fragrant. Remove and let cool for a few minutes. In a bowl, combine the cornflakes, milk and cream. Stir slightly and let steep for 20 minutes. Strain out the cornflakes with

a fine sieve. Discard ANDREA the cornflakes (or eat SEET them, but it’s weird). In a glass measuring cup combine the liquid with sweetened condensed milk, brown sugar, and salt. Heat for 1 minute and stir until sugar is dissolved. Cool in the fridge for at least 1 hour. Get out the Zoku mold and put about 10 fruit loops at the bottom of each popsicle mold. Put the popsicle stick in, crushing the fruit loops slightly as you make sure it is firmly in the mold. Pour in some of the cereal milk, add some more fruit loops, and then fill up with more cereal milk. Stuff a couple more fruit loops at the top. The fruit loops will probably get a bit crushed in some spots, but that’s ok. Repeat and let freeze for about 5-7 minutes. Remove the popsicles and eat immediately.


CHEESE

CUPCAKES ANDREA SEET

INGREDIENTS:

-1-3/4 cups flour, sifted -2 teaspoons baking powder -¼ teaspoon salt -½ cup butter, softened -½ cup sugar -2 eggs -1 can (14 ounces) sweetened condensed milk -½ cup quick-melt cheese, shredded -½ cup cheddar cheese, shredded

DIRECTIONS: In a large bowl, combine flour, baking powder and salt.

In a medium bowl, beat butter, sugar and eggs. Beginning and ending with flour mixture, add flour mixture in thirds and ½ of sweetened condensed milk in between (1/3 flour mixture, ½ condensed milk, 1/3 flour mixture, ½ condensed milk and 1/3 flour mixture) to egg mixture. Beat at low speed with every addition. Add quick-melt cheese and stir to combine. Using a scoop or spoon, fill paper-lined muffin cups to ¾ full. Top with cheddar cheese and bake in a 350 F oven for about 20-25 minutes or until toothpick inserted comes out clean and top is golden. Allow to cool.


MUSHROOM PUFF PASTRY INGREDIENTS: -2.5 cups flour -1 cup water, or as needed -1 cup solid butter -1.5 teaspoons salt

DIRECTIONS: Cut cold butter into half-inch cubes. Mix flour and salt together, and slowly add water and butter chunks. You may not need all the water. Do not overmix. The butter should not be evenly distributed in the dough. Stir until just incorporated, and the

dough is no longer sticky. Preheat the oven to 400 degrees Fahrenheit.

TARTS STEPHANIE CHU

Lay out the dough on a piece of saran wrap, and roll it to about ¼” thickness. Lift up one side of the saran wrap, folding the dough onto itself. Repeat ~5 times until the dough has formed thin layers. Grease a 9” pan and line with dough. Using a fork, poke holes throughout the bottom of the dough. Bake the crust for about 10-15 minutes, until light golden brown. Remove from oven and let cool.


MUSHROOM

FILLING INGREDIENTS:

-8 oz mushrooms of your choice -1 can condensed cream of mushroom -1 small/medium onion -Spinach­ -Grated Swiss/Gruyere cheese (or cheese of your choice)

DIRECTIONS: Slice or dice about 10-15 mushrooms and onion. In a pan, sauté the mushrooms

and onion with oil, (optional) garlic, and choice of herbs. When the onions are softened/caramelized and the mushrooms are cooked, add the condensed cream of mushroom. Bring to a boil while stirring, and slightly reduce the mixture. Pour half of the filling into the crust. Spread a layer of grated cheese and a layer of spinach on top. Pour the rest of the filling on top and grate more cheese over the top of the tart. Bake for 20 minutes at 400 degrees Fahrenheit, or until crust is golden brown and cheese is sizzling.

NO BAKE

CHEESECAKE REMY D’AGNILLO

INGREDIENTS:

-2 packages (20 sheets) graham crackers -11 tbsp (1 3/8 sticks unsalted butter, melted -2 tbsp sugar -2 8-oz packages cream cheese, room temperature -1 14-oz can (1 1/4 cups) sweetened condensed milk -1/4 cup fresh lemon juice -1 tspn vanilla extract

DIRECTIONS:

Pour crumbs into a medium bowl; stir in sugar. Add butter, and stir until well combined. Press the crumb mixture into a 9-inch springform pan, spreading it 1 1/2 to 2 inches up the side; press flat. Chill crust in freezer at least 10 minutes. Meanwhile, make the filling: Using an electric mixer set at medium-high speed, beat the cream cheese in a large bowl until smooth. Beat in the condensed milk a little at a time, scraping the sides of the bowl as necessary. Beat in the lemon juice and vanilla. Pour the filling into the crust; smooth the top with a rubber spatula. Cover with plastic wrap, and refrigerate until firm, 2 1/2 to 3 hours.

Put graham crackers in a large resealable plastic bag, and crush them with a rolling pin until Unclasp sides of pan, and very fine crumbs form. remove cheesecake.

ELECTION SEASON


With the upcoming election, candidates will focus on their speeches and literatures while voters anticipate what they will see and hear. Some may come with their preconceived notions of the candidates. Although it makes sense to cast your vote with that logic, all members should keep an open mind when deciding on the best candidate.

their speeches over and over again, and have it in the bag once they go up on stage. Of course, anxiety is unavoidable for most people, but once you’re well-prepared, then what is there to worry about, right? As we view things objectively, presenting a good speech tells us that the candidates really want it and that they are well-prepared. But, some people are just much better at public speaking than others, so those candidates can often just wing it, and sometimes, we can’t really tell the difference. So, how can we move on from here? Duh, the Q&A section.

From my experiences as a past executive officer, an experienced interviewee, and an employer, I am a huge fan of challenging questions during the Q&A section. In my opinion, although presenting a good speech is important, it should not be the main factor to determine who would be the best fit for a position. Speeches often include the candidates’ visions, goals, and past experiences, even perhaps something cheesy. Thus, they should know those things by heart, practice

I’ve been to four elections, of which I’ve participated in one, and the most annoying questions I’ve ever received include: “What are your duties? Can you name all the positions on board? What are your accomplishments in the past?” Those questions are just way too general and how the heck


can you benefit from it? Before asking questions, tell yourself: “How can I validate their credibility? How can I ensure that they will follow up with their goals and visions stated in their speech? How can I make sure this person is not BS-ing?” Therefore, I encourage questions that ask for the validity of a candidate and their goals. But even then, the candidates can still expect those questions. So, give them one of those ‘Oh ’ moments. I love scenario questions. In other words, I love questions that require the candidates to think really hard on their feet. Why? They test their abilities to think critically, problem solve, and make decisions. The executive board is the main brain of the club. Without you, the club will not move forward. The answers to these questions will

also validate their CHAD experiences in the VO past. For example: “What would you do if you got into an argument with an appointed board member in the middle of a general meeting announcement?” This question will be perceived and answered differently, but we can definitely learn a lot from their answers. Voters should view the answers objectively based on their thinking process; their answers could reflect on their personalities and make sense or sound argue against it but this is how indecisive and disingenuous. I decide whom to vote for.
