ituated just three hours’ drive from Cape Town, the 36 000 hectare De Hoop conservation area forms part of a World Heritage site. The Marine Protected area, one of the largest in Africa, extends a further three nautical miles (5 km) out to sea. The shoreline offers some of the best whale viewing opportunities in the world, with 40 % of the global Southern Right Whale population using it as an annual breeding ground. In peak season (June to November) between 80 to 300 whales can be seen in the bay.

De Hoop Nature Reserve also forms part of the world’s smallest and most threatened plant kingdom – the Cape Floral Kingdom. The Bredasdorp/Agulhas and Infanta area, of which De Hoop forms a part, has an estimated 1500 of the approximately 9000 plant species found in the Cape Floristic Region. Of these 1500 species, 108 are rare or threatened, 34 occur only in De Hoop Nature Reserve, and 14 are recently discovered and thus still un-described. The reserve’s many terrestrial habitats support a diversity of animal groups. It is home to 86 mammal species - most notably the rare bontebok and the Cape mountain zebra, as well as eland, grey rhebuck, baboon, yellow mongoose, caracal and the occasional leopard. De Hoop is famous for its variety of resident and migratory birds, and more than 260 species have been recorded on the reserve. Among the 260 bird species are the endemic African black oystercatcher, the rare Damara and Caspian terns, the vulnerable Cape griffon vulture and Stanley’s bustard, and the globally threatened blue crane. The De Hoop Vlei, which spreads between 17 and 19 kilometres when full, is a Ramsar site of international importance, where aquatic birds such as the pelican and flamingo as well as other organisms can breed and feed

without disturbance. The reserve is also the only remaining Western Cape breeding colony of the rare Cape vulture. De Hoop Nature Reserve has great scientific value as a research centre, as it one of the country’s last remaining natural areas and serves as a benchmark for measuring environmental change elsewhere. From camping and caravanning sites and affordable self-catering chalets to more luxurious self-catering cottages and upmarket fully catered lodges, the De Hoop Collection accommodation offers something for everyone. Activities on the reserve include hiking, mountain biking, eco quad biking, land-based whale watching, bird watching and star gazing, to name a few. he latest vintage of Haute Cabrière’s Unwooded Pinot Noir, famous for its elegance and accessibility, has just been released. “We’re very excited about the 2014 vintage,” says Haute Cabrière Cellar Master Takuan von Arnim. “We’re constantly working towards perfection in everything we do, and the 2014 vintage of the Unwooded Pinot Noir is another step in the adventure.” Originally launched in 2011, the Unwooded Pinot Noir is still revolutionary in style. ur wines are the products of our unique terroirs, farmed with care and made with subtlety. This is the very DNA of the Plum Pudding Hill Syrah,” says Stellenzicht Winemaker Guy Webber. Stellenzicht is situated on the slopes of the Helderberg Mountain between Stellenbosch and Somerset West. It lies in a prime wine-growing area just a few kilometres from False Bay, at altitudes that ensure slow ripening and exposure to soils that impart complexity to the wines. The sophistication of this Syrah stems from a vintage that Webber describes as close to ideal. “Ample autumnal rainfall translated into wonderfully even ripeness of fruit, while the coolness of the ripening period resulted in this wine’s 34

balanced structure and finesse.” The wine boasts an inkish blue/garnet depth of colour, a refined mouth feel and flavours of ripe, dark fruit with hints of pepper and violets. Supple tannins and a lingering aftertaste finish on the palate. Bottled as Stellenzicht Syrah since 1994, the Plum Pudding Hill Syrah has its origins as one of only two Shiraz vineyards on the farm in those days. Its name hails from local folklore, in which a trailer-load of plums once overturned nearby, making a most memorable mess. While several new Shiraz vineyards have been planted at Stellenzicht over the years, none have shown the characteristics of Plum Pudding Hill. The 2007 vintage of the wine is the first officially registered as a single vineyard. Plum Pudding Hill Syrah 2007 is available from the wine shop at Stellenzicht, the Vinoteque at Bergkelder and selected wine boutiques and leading restaurants nationwide. ore than ever before, Chef Tanja strives to express her personality through the creations on the menu. The restaurant’s front-of-house team, managed by Dean Cole and sommelier Esmé Groenewald, continues to add personalized, informal service excellence to the dining experience, which is complemented by sophisticated interiors and an intimate ambience. Interior designer Etienne Hanekom, responsible for the interiors of the hotel and restaurant, was tasked with injecting some creativity into Makaron’s new kitchen in order to inspire culinary genius in a traditionally hardworking, utilitarian space. Most striking are the New York subway-style tiled walls in charcoal grey, olive-green and cream. A linear window between the kitchen and restaurant allows diners a glimpse into the busy pastry and cold-starter kitchen while giving chefs a perspective on the activity in the restaurant. Informal and close to the action, the Kitchen Table is literally a table for two in the kitchen – like front-row seats in a culinary theatre, where diners can take in all the action that happens during a typical dinner service. Guests at the Kitchen Table are served a five-course tasting menu by the chefs in the kitchen, and the sommelier comes into the kitchen to offer wine pairings with each course. The Kitchen Table is only available for those ordering the tasting menu, and needs to be booked in advance. Makaron’s new-season menu was inspired by Chef Tanja’s sabbatical earlier this year. Instead of cooking in

famous kitchens in Europe as she did last year, she chose to walk the full 800 kilometres of the famous Camino de Santiago pilgrimage route – and came back a changed person. “The process of persevering day after day, sometimes just putting one foot in front of the other, was physically and mentally tough. The experience has given me a sense of balance and a newfound confidence in my ability to face fear head on,” she shares. This balance and honesty is reflected in increasingly pared-down dishes, in which the provenance of the ingredients is paramount. Examples include a starter of ancient grains with miniature vegetables and a cauliflower veloute; a main course such as dry-aged ribeye and marrow with parsley crumble and onion; and a dessert of fresh fruit with passion fruit marshmallows and lemongrass. Chef Tanja’s love of Asian flavours is highlighted in dishes such as Akamiso seared tuna, dragon cracker crumble and smoked tofu; and Mauritian sea bass with laksa foam, carrots, cashew and coconut. The fun side of her personality is responsible for desserts like the decadently rich Fifty Shades of Chocolate or the clever take on salted caramel popcorn. The new menu is available for dinner only, and can be enjoyed à la carte or as a four- or six-course tasting menu, with or without wines. We are excited about the prospect of training chefs that have a huge passion for and commitment to the industry. ince most of the activities in South Africa happen outdoors, sunburn is a potential health hazard. Cover up and use sun screen lotion whenever you are outside. Malaria risk areas include Northern KZN and Zululand, the Northern Province and Mpumalanga. The risk of contraction in South Africa is minimal when the proper precautions are taken. These include taking malaria tablets, using insect repellent and mosquito coils, and wearing long sleeved clothing. Tap water in most areas is safe to drink, but be sure to double check with your hosts first. One of the biggest health risks in South Africa is HIV and Aids. Bus

Trains

If you decide to splurge, though, there are three outstanding options. The famous Blue Train (+27 12 334 8459), Rovos Rail (+27 12 315 8242) and Premier Classe (+27 86 000 8888) are luxurious liners with all the bells and whistles.

Cars

Most of the main car rental companies have outlets at the international airports and in major centres. In South Africa, we drive on the left side of the road. The general speed limits are 120 km/h on the freeways, 100 km/h on major roads outside built-up areas and 60 km/h in built-up areas. A Note for Smokers South Africa became one of the first countries in the world to ban smoking in public places in 2000 when it introduced its Tobacco Products Control Amendment Act. The Act prohibits smoking in restaurants, pubs, shopping centres and offices where there are no separate, enclosed smoking rooms. Smoking in partially enclosed public places such as covered patios, verandas, balconies, walkways and parking areas is also prohibited. Children under the age of 18 are prohibited from entering designated smoking areas and purchasing cigarettes. There are stiff penalties associated with anti-smoking legislation in South Africa, including hefty fines for both the smoker and venue operator. Be aware that smoking is banned on all domestic flights in South Africa. Keep a look out for ‘no smoking’ signs and only smoke in designated smoking areas.
